A really hearty soup that makes a great lunch on a cold day. Add a tablespoon of half fat crème fraiche and a sprinkling of paprika for a delicious garnish and only 24 calories more per serving. SERVES 6 Prep time: 15 minutes Cook time: 30 minutes Calories per serving: 157 calories 1 tbsp sunflower oil 1 medium onion, peeled and finely sliced 3 garlic cloves, peeled and finely sliced 3 medium carrots 150g green beans 75g chorizo (we like picante), skinned and cut into 1cm slices 1 tsp hot smoked paprika _ tsp flaked sea salt, plus extra to season 400g can chopped tomatoes 1.5 litres stock, fresh or made with 1 chicken stock cube 1 tsp caster sugar 400g can cannelini beans, rinsed and drained 150g curly kale, thickly shredded freshly ground black pepper
Heat the oil in a large non-stick saucepan or large flame proof casserole and fry the onion and garlic gently for 5 minutes until softened but not coloured, stirring often. While the onion is frying, peel the carrots and cut into roughly 1.5cm chunks. Trim the green beans and cut into roughly 3cm lengths Add the chorizo, paprika and carrots to the pan with the onion and cook over a low heat for 2 minutes, stirring until the chorizo begins to release its fat. Season with salt and lots of freshly ground black pepper. Flop the tomatoes into the same pan and add the stock and sugar. Increase the heat to medium. Bring the liquid to the boil. Reduce the heat slightly and leave the soup to simmer for 12 minutes. Add the canned and fresh beans and kale and return to a gentle simmer. Cook for 10 minutes until all the vegetables are just tender. Add a little extra water if the soup is looking too thick. Season the soup with salt and black pepper. Serve in deep bowls.
