Confidence and Curves I recently saw a sign that said “Don’t be jealous because I can still fit into the same size earrings as I wore in high school.” It was the perfect little jab at all those women who brag about how their sizes haven’t changed. Confidence comes from knowing that change is as good as you feel about it. My reality is that I have gone up ten sizes, and proportionately increased my social IQ, so it’s definitely a win-win. Especially since plus size swimwear is where all the action and attraction is…just check this issue for the best tummy taming, hip hiding, bust boosting and gorgeously styled swimsuits that have ever been coveted by curves! As for the real-life stuff, this issue addresses how we can raise confident girls who become empowered women, as well as how to have a productive argument with our spouses, family and friends. Night

FULLBEAUTY Brands celebrated women in a spectacular evening in New York City on April 2nd. It was the launch of fullbeauty.com as well as the launch of fullbeauty magazine. It was easy to get in a celebratory mood with pop superstar Meghan Trainor performing and the leading curvey models and bloggers in the fashion world strutting their stuff in a runway show. WHY WE LOVE HER Let’s start with her genius parents who knew to name her Rebel! Really, her name is Rebel Melanie Elizabeth Wilson! Another ‘overnight success’ who’s been working for over 10 years, Rebel has been referred to as having a “post-fat state of mind”…huh? Rebel views her shape as an asset… “I took something that was seen as a disadvantage—no one thinks, if you’re fat, that you’re going to be an actress and everyone’s going to love you—and I turned it into a positive,” she told Australia’s Daily Life. She’s an Aussie chick with major attitude, and just when you think she is making fun of herself, she’s really just putting you in your place. It’s like her character said in Pitch Perfect when asked her name: Aubrey: What’s your name? Fat Amy: Fat Amy. Aubrey: You call yourself Fat Amy? Fat Amy: Yeah, so twig bitches like you don’t do it behind my back. That irreverence is in everything this very smart chick does, both professionally and personally. She has a law degree and at only 29 has carved a niche resulting in great film roles like her breakout Bridesmaids, her own TV show, “Super Fun Night”, and last year’s, Night at the Museum with Ben Stiller and Robin Williams. This year, it’s all about her performance with Anna Kendrick in Pitch Perfect 2. Next year, watch for her in three films including Grimsby with Sasha Cohen and Penelope Cruz. Even hyper-critical Simon Cowell calls Rebel “a total star” and she counts Sam Smith and Ellen Degeneres as major fans.

Everybody’s WHY WE LOVE HER Regardless of your size, shape, age or ethnicity, everybody loves Jennifer Lopez. It could simply be that she rocks the world…or maybe it’s that she’s been the ‘comeback kid’ more than any other female star. You just have to love the staying power of this girl. Her rollercoaster career and personal rides make it clear that the butt-kicking girl in Enough has nothing on JLo. After a modest upbringing in the Bronx, Jenny from the block became the first Latina actress to earn over $1 million for a film role and was the first person to have a number one album (JLo) and film (The Wedding Planner) in the same week. She is regarded as the most powerful Hispanic performer in the United States with a net worth of 400 million.

Her charmed life hasn’t always been that charming, especially living her successes and failures in the public eye. Now, JLo can finally appreciate and accept herself and her good fortune.

“I don’t regret what I’ve been through. I’ve had ups and downs, super highs and some really low lows. I’ve been so blessed that I could never say, I wish this didn’t happen. It’s part of who I am. There’s nothing in my life that’s so ugh.”

Yet, she has also been in some of the biggest ‘bombs’ in film history and who could forget Ben Affleck cancelling their wedding 4 days before the ceremony…or the tell-alls by dumped exes. Besides her entertainment triple threat (actress, singer, producer), she has clothing lines, accessories, fragrances and now has a line of breakfast shakes… who wouldn’t girl crush on her? She originally played by the rules, but now she makes her own rules. And she’s back with a vengeance, great on “American Idol”, credible in Boy Next Door, and impressive opposite the fabulous Viola Davis (every smart girl’s girl-crush) in Lila and Eve.

JLo also invented the fashion-for-publicity approach, starting with the down-to-the-naval dress she wore to the Grammy Awards in 2000. She has (almost) never disappointed us with provocative and incredible clothes.

STEAL HER STYLE That’s an impossible task, since JLo has as many styles as she does hair extensions….and that’s a lot! There are 3 hints to getting it. 1. Focus on one body part, not all of them. Early in her career, it was all about her butt. When recently asked how she has always embraced her body, JLo said, “My mom had a big butt and my dad loved it. So I just grew up thinking this was a good thing.” The body parts she likes to bare now? Showing off her age-defying midriff. 2. Her favorite colors are white and red, because both complement her skintone, but she is now venturing into pastels. 3. Hair is her most important accessory, often pulled back tight to show off her face, retro-waved or sexy tousled.


The Queen’s Game! “Living Single”, “Fresh Prince” and “Hangin’ with Mr. Cooper”. This was while she continued to be a very successful rapper. Then it was big time, starring in The Bone Collector with Denzel and Angelina (hey, who needs last names). After an Academy Award nod for best supporting actress in Chicago, she starred in one of my favorite movies, Bringing Down the House with Steve Martin. There are certain movies that I watch when I just want (or need) to laugh, and that’s one of them. Since then, she has had both leading and supporting roles in Scary Movie 3, Taxi, Hairspray, Last Holiday, Stranger Than Fiction, Mad Money, and Joyful Noise, among others. With her distinctive voice, Queen was also the voice of Ellie in Ice Age: The Meltdown.

WHY WE LOVE HER Dana Elaine Owens, better known as Queen Latifah, is a rapper, songwriter, soul and jazz singer, actress, model, television producer, record producer, comedienne, author and talk show host. Oh, she also has a Golden Globe Award, two Screen Actors Guild Awards, two Image Awards, a Grammy Award and both Emmy and Oscar nominations. And that’s only in her first 45 years! Back in high school, she was a power forward (of course she was) on her high school’s basketball team and acted in school plays. Overachiever is an understatement. Queen Latifah has tried to go back to her real name, but somehow everyone just refuses to let her abdicate the throne. For us, Dana will always be royalty. She broke through the hip hop boys’ club in 1988 by rapping about issues of black women, and has continued that social consciousness throughout her career…just ask Dolly Parton, one of her many fans and co-star of the film Joyful Noise! For those with really good memories, Queen Latifah was on dozens of hit shows in the 90’s, including

Queen Latifah has been referred to as “a mix of earthiness and effervescent”, as was consistently evident when she was hosting her TV talk show. True to herself and her fans, Dana’s book, Ladies First, is the ‘real’ story of her tough decisions and her mistakes, tragic deaths in her life and her coming out of the other side of depression with a sustaining love in God. It’s about “Being confident and sensual in a big, strong body and about blocking out the junk to let in the good. It is about how anyone— whether from the poorest means or the richest— can hold her head high in a world full of attitude.” There’s something about Queen Latifah, not unlike Oprah, that instills self esteem, respect, and courage in others, because that is how she lives her own life. Her combination of peace and independence, of writing her own rules while still being able to play the game. It’s that power forward in high school all over again…powerful, always in motion and moving forward. All hail the Queen.

STEAL HER STYLE If there was one word to describe her style, it would be eclectic. She can rock a baseball cap and jersey just as easily as she can strut her glamour in an all-out stunning and curve-hugging red gown with sheer feminine details. Her one must-have accessory is always confidence!

Fighting Fair 1 LIKE ANY OTHER FIGHT (oops, discussion), an emotional conflict works best when you know what you’re each capable of and there are a set of ‘rules’. UNLIKE OTHER FIGHTS where you generally go for the other person’s weakness, the goal here is to really have a fair fight, meaning you try to build the person up instead of tearing them down. We’ve incorporated some information from a great study by The University of Texas at Austin for the how-to’s to get to a fair and hopefully productive fight.

BE AWARE OF YOUR FIGHT STYLE.

Do you… Avoid conflict at all costs? Feel that any criticism or disagreement is an attack on you? Hit “below the belt” and regret it later? Feel out of control when conflict arises? Withdraw and become silent when you’re angry? Store up complaints from the distant past? Most of us have done one or more of these things, but it’s time to be as productive in your discussions as you are in everything else you do. If handled appropriately, conflict can actually strengthen relationships and improve our understanding of each other and of ourselves.

THE GROUND RULES Remember the expression “choose your battles carefully”? If this is something that’s worth the ‘battle’, keep in mind that the goal is discussion, not argument.

Choosing when to have the discussion is the most important determinant to success, so choose a time that’s good for both of you. You want to both be a little relaxed, but not tired. Remain calm and try not to overreact to difficult situations. Speak, don’t Act. You want to express your feelings in words, not actions, so when you start feeling too angry or upset, take a “time out” and do something to help yourself feel calm: a walk, deep breathing, play with the dog— whatever works for you. Try to be clear and concise. Being specific and brief about what’s bothering you will keep him listening. Think short attention span and avoid the long version. Only one issue at a time. Don’t introduce other topics until each one is fully discussed. No hitting below the belt. Attacking areas of personal sensitivity creates an atmosphere of distrust, anger, and vulnerability. Avoid accusations. Accusations cause others to focus on defending themselves rather than on understanding you. Instead, talk about how someone’s actions made you feel.

THE FIGHT Think win-win, not just win. The idea is to come to a resolution that you’re both happy with...(Note: great makeup sex comes from win-win)!

Hardest part is figuring out what’s really bothering you. Don’t accept the ‘obvious’…it could be something your brother did when you were eight. What result would make you happy? Assuming you’re not getting the diamond necklace, is it an apology, a promise to not do it again, or something else? Try “I” instead of “you”…”I feel badly when” works much better than “you hurt my feelings”. Finish your point and ask the other person to share his or her opinion. DO NOT INTERRUPT. Try to see the problem through his or her eyes so that the viewpoint makes sense to you even if you can’t agree with it.

Try not to generalize. Avoid words like “never” or “always.” Such generalizations are usually inaccurate and will heighten tensions.

Each of you should suggest possible solutions and then discuss the advantages and disadvantages of each proposal.

Don’t store up issues. Storing up lots of hurt feelings over time is not productive. Try to deal with problems as they arise.

Be ready to compromise. Having only one option will make it difficult to resolve the concern. When you reach an agreement you can both be okay with, celebrate! If you can’t come to a solution, decide to both think about it some more and revisit at a later time.

Don’t turn off. When one person stops responding, the other becomes frustrated and angry. If either of you starts shutting down, suggest a break.

WHEN NOTHING SEEMS TO WORK You’ve tried fighting fair, but it’s just not working. Communication has broken down, but you still really want to get back on the right track. It might be time to talk to a professional. Go to couple’s counseling with

a marriage counselor or trained mediator. Have a spouse who won’t go? Go by yourself and see if you’re looking at the situation correctly. Just speaking to someone can work wonders to getting to a better place in your relationship.

Time to Raise Confident

Girls who will become Empowered Women content in their lives. But how do we stop our own tough self-judgments, especially when it comes to our bodies? If we don’t, we will subtly pass on those judgments to our daughters, even if we think we are being really careful. And it’s never too late…the ways to empower our daughters (our friends and ourselves) never stop being effective.

“HOW TO” EMPOWER AND SUPPORT YOUR DAUGHTER Start by understanding that your daughter will probably not want to discuss body image and other issues with you, so get a little creative. Suggest that the ‘moms’ were talking and really need some help understanding what their kids are thinking. Mention how middle and high school were for you and don’t make it seem oh-so-fabulous, because it probably wasn’t all that perfect.

Model Behavior

T

his is our chance as mothers, grandmothers and influencers to help empower our daughters, friends, and all girls and women. A recent study by P&G confirmed that, “An estimated 50 million girls enter puberty every year and this is a critical life stage where girls develop self-esteem and build up confidence”. When I taught sixth grade, I started every year with strong and confident young girls, then slowly saw the socialization impact that either boosted or eroded that confidence based on peer acceptance. Three facts are clear: 1. Girls starting puberty (4th-8th grade) are at higher risk for: Low Self-Esteem and Poor Body Image 2. Factors contributing to low self-esteem are: Obesity, Peer Perceptions, The Media 3. Low self-esteem is related to: Depression, Poor Academic Achievement, Negative Body Image

Mothers are the greatest influence in building confidence and empowerment that will make our daughters both happy and

Avoid the catwalk and catty talk. In my house, ‘fat’ was the other “f ” word that my daughter wasn’t allowed to say. Stay away from discussing your own or anyone else’s weight in a negative way, and avoid saying you need to go on a diet. Our daughters are smart and if you criticize yourself, they infer you are critical of the same thing in them.

Get Real Talk about how the media perpetuates the ridiculous ‘perfection’ in body type, the clear lack of diversity, and discuss how this makes your daughter feel. Victoria’s Secret had to change its ad campaign entitled “The Perfect Body” after a backlash by people in Britain...yay!

Don’t Underestimate You might be really surprised at how your daughter comprehends more abstract concepts. For example, bullying can be blatant or subtle, and you should be discussing both concepts. Discuss friends who seem fine but can be subtley bullying, especially online. And look at your own friends… are they supportive or toxic?

Can We Talk? Talk about what a role-model is to your daughter: Who is her role model? Why? What characteristics are important? Discuss having Facebook pages, who their friends are, what information they share. Talk about diverse body types, and how weight alone isn’t a valid indicator of health. Promote size acceptance, talk about judgments and stigma placed on people based only on their “looks”. And be honest…what struggles did you have when you were young? Still have? If you’re self-critical about appearance related issues, ask your daughter’s help in ‘editing’ you. Educate yourself while you’re educating her.

Make sure your daughter’s teams celebrate inspirational as well as performance awards. In academics, going from a “C” to a “B-” is huge. It’s all about the performance so cheer your daughter on! Communicate love, acceptance and support for all she will go through in the coming years. Please don’t say ‘this should be the best time in your life’. It isn’t and you will make your daughter feel alone if you don’t acknowledge that. Middle school and high school can be truly torturous!

Take the Emotional Training Wheels Off Not My Daughter Most of us can’t process that our little darling could have mental health issues like eating disorders, mood disorders or self-harm. Start discussing these issues and you’ll be surprised how much your daughter will learn about these from school. Reach out for information, resources, and signs sooner, rather than later. What’s called ‘disordered eating’ is prevalent in our society, so don’t assume anorexia and bulimia are the only ones. Often girls will be in “normal” weight range, and will be able to hide all behaviors including only eating a narrow group of foods, another common behavior. Check out The National Eating Disorder Association website for an enlightening list.

Compliments Everybody not only likes them, we all really need them. Compliment your daughter’s strengths, especially those unrelated to body image, but be realistic. My daughter 72 FULLBEAUTY I SUMMER 2015

Our natural inclination is to try to ‘fix’ things…the helicopter parent who’s always hovering to make things better. It’s like the old fishing adage, so give your daughter the fishing pole instead of the fish. Empower your daughter to discuss struggles, and problem solve; show her you believe she has the ability to handle her life; discuss ways to approach struggles, and ask what you can do to help support her through the process. This is especially important if there is something distinctive about your daughter that will draw attention. Early developers are particularly prone. It’s much easier to recognize than you might think. Is your daughter acting withdrawn, having dramatic mood changes, changing her eating habits, how she dresses, changing friends etc. Remember that all of the above are normal to a degree…it’s when it seems extreme that you should start having a conversation and work on how to express, process, and move through such feelings and changes.


THINK BMS INSTEAD OF BMI Society is obsessed with weight, but we should be focusing on health that includes Body, Mind and Spirit. Discuss fitness and exercise as an element of feeling good about ourselves. Help your daughter try different sports and activities and then support her choices. It might be hip hop classes or maybe one of the 10 following activities:

1. There are so many opportunities for young girls to better their communities and it’s a great mother/daughter time. Be ready to help put in the work, from yard sales to raising money, driving your kids to joining in and volunteering too.

2. As an added benefit, young girls, especially in high school, are building their resumes for college and volunteer activities are invaluable. Homeless Shelters and Food Banks welcome volunteers and have programs including preparing or distributing meals (especially around the holidays) or helping organize a food drive to stock the pantry.

3. The Guideposts Sweater Project can be done at home, even while your daughter is glued to the TV. They knit sweaters that are then sent to needy children around the world.

4. Ronald McDonald Houses provide a low-cost “home-away-fromhome” for parents and children to stay during medical treatment. Volunteers help prepare meals and talk to families.

5. Special Olympics International has a wide variety of volunteer activities, including sports training, fund raising, administrative help, competition planning and staffing, etc.

6. Habitat for Humanity builds houses in local communities. Volunteers not only help others, but can learn a great deal about building houses by getting involved. Kids as young as 5 can help.

7. Literacy volunteers act as tutors who help illiterate children and adults learn how to read.

8. Senior Citizens Centers offer volunteer programs to provide friendship and community activities to senior citizens.

9. Animal Shelters usually need volunteers to help take care of animals, keep facilities clean and work with the public.

10. American Red Cross helps people in emergencies, especially in disasters like Katrina. After the tsunami, my daughter and a few friends held a yard sale and raised thousands of dollars for ARC – they even ended up in the local paper. NOTE: Most cities and towns offer a wide range of volunteer opportunities so call around to see what might be available, and don’t be discouraged if it takes awhile to break through the bureaucracy.

GIRLS, INC. Watch for the great commercials from these pros in the confidence building business. Girls Inc. is a nonprofit organization which serves 140,000 girls ages 6-18 annually, inspiring all girls to be strong and smart with life-changing experiences and real solutions to the unique issues girls face. Major programs address math and science education, pregnancy and drug abuse prevention, media literacy, economic literacy, adolescent health, violence prevention, and sports participation, providing a weekly average of 30 hours of after-school, weekend and summer activities. Programs can be offered anywhere girls are found, including Girls Inc. centers, schools, churches, community centers and housing projects. They also have a “Girls Bill of Rights” which really says it all.

bragging rites Every state claims it has the best barbecue, but we’ve narrowed it to 10 states that really have a right to brag.

People can’t even agree how BBQ started, with some saying Caribbean, others, Mongolian, Southern, Japanese, and the list goes on. The biggest debate you will find among BBQ purists is if you make the mistake of bringing together a Texan and a Southerner. In Texas, Barbecue means Beef, particularly Brisket. In the South, Barbecue means Pork (typically shoulder roasts and Boston butts). Everyone’s got a favorite BBQ place and even if you try to go by the ratings, you’ll end up with over 100 BBQ restaurants in America that are voted as someone’s top 10. Let’s just say it’s easier to pick the top 10 BBQ states, and even that will get pretty ‘sticky’ if you talk to the locals.

Alabama Alabamans are almost as passionate about their barbecue as they are about their football teams, and let’s just say that’s just short of maniacal. Big Bob Gibson BBQ in Decatur gets the highest points, followed by Big D’s Butts ‘N Stuff in Monroeville.

California It’s not all salads and sunshine, there’s some real cowboy-style slow cooking out west. Beachwood BBQ & Brewing in Long Beach, Everett & Jones BBQ in Oakland, and Bludso’s BBQ in Compton are all worth a detour from the fusion fare.

Georgia This is pit cooking with a uniquely Georgian twist by the use of pecan fruitwood in the prep. Fox Bros BBQ in Atlanta and Wiley’s in Savannah.

Illinois With its past as a meatpacking capital, Chicago has seen something of a barbecue boom. No, it doesn’t have that cool Southern thing, but a few places are really attracting BBQ street cred. Chicago Q, Honky Tonk and Smoque BBQ are winners.

Missouri Known for thick, sweet sauce with lots of molasses and mahogany in color. Arthur Bryant’s BBQ in Kansas City is the definite ‘winner’, called “the best restaurant in the world” by The New Yorker (not known as a BBQ crowd). Yet, there are those who swear Bogart’s Smokehouse and Pappy’s Smokehouse in St. Louis are the official Missouri BBQ haunts.

New York Ask a Southerner and they’ll say NYC is all high falutin’ sushi bars, but probably thanks in part to the faddish paleo diet, there’s some serious BBQ happening there. Fette Sau (ok, fancy for ‘fat pig’) is smokin’, Danny Meyer’s Blue Smoke (yes, of course NY has a celeb chef of BBQ) is considered true south, and Mighty Quinn’s really gets the juices flowing.

North Carolina Vinegar-based sauces are big, and pork is cooked low and slow—for 16 hours or more. Allen & Son in Chapel Hill has large brick pits out back and Skylight Inn in Ayden earns Southern Living’s high praises for its whole-hog approach.

South Carolina Mustard-based barbecue sauces are popular but, then again, there’s the pitmasters who swear by tomato and vinegar. For the mustard-based, Hite’s Bar-B-Que in West Columbia and Melvin’s Charleston are definite destinations. Go red, go to Sweatman’s in Holly Hill.

Tennessee Memphis’s claim to fame (other than Elvis) is its ribs, which you get “wet,” (lots of sauce) or “dry,” (spicy salt rub). Nashville is now a major challenger for BBQ bragging rights, so the fight just got local! The Rendezvous in Memphis boasts, “Not since Adam has a rib been this famous.” Go to Nashville and you’ll smell the hickory smoke at Hog Heaven from blocks away.

Texas Hands down, Franklin BBQ Austin Tx has been called “barbecue nirvana” by Serious Eats for its famously tender brisket piled high on wax paper, and Gayot rates it in the top 10 in the country. If you saw the movie “Chef”, this is where they went for BBQ. If you’re in Austin, want great bbq, but don’t want to wait in line at Franklin’s, John Mueller Meat Co. and Stubb’s, are great.

Emeril saluted Nashville with this 5-star Smoked BBQ Ribs Recipe. Total Time: 2 hr 11 min Prep: 20 min Inactive: 6 min Cook: 1 hr 45 min Yield: 4 servings

INGREDIENTS 3 tbsp dark brown sugar 2 tbsp Essence* (see recipe below) 1 tbsp each of salt, cumin, paprika, cayenne pepper, fresh black pepper 2 racks pork spare ribs, about 3 pounds each, trimmed of fat, membranes removed from underside *Essence (Emeril’s Creole Seasoning): 2 1/2 tbsp paprika 2 tbsp salt 2 tbsp garlic powder 1 tbsp each of black pepper, onion powder, cayenne pepper, dried leaf oregano, dried thyme Emeril’s Barbecue Sauce: 4 cups ketchup 1 cup finely chopped yellow onion 1/2 cup cane syrup 1/2 cup dry red wine 2 tbsp fresh lemon juice 2 tbsp Creole or other whole grain mustard 2 tbsp dark brown sugar 1 tbsp minced garlic 1 tbsp minced jalapeno 1 tbsp Worcestershire sauce 1 teaspoon hot red pepper sauce 1 teaspoon salt 1/2 teaspoon cayenne

DIRECTIONS In a bowl, make a dry rub by combining the sugar, Essence, salt, cumin, paprika, black pepper, and cayenne, and mixing well. Rub the ribs evenly on both sides and wrap in plastic wrap. Place on a baking sheet and refrigerate at least 6 hours. Soak wood chips of choice in a bucket of water for 2 to 3 hours, then drain. Prepare a smoker according to the manufacturer’s instructions. Remove the ribs and unwrap. Place on the grill of the smoker and cook for 1 1/2 hours, replenishing the coals as needed during the cooking time. Remove the ribs from the grill and remove the smoker pan or box. Return the ribs to the grill and baste with the Barbecue Sauce. Cook, turning and basting once, until cooked through, 10 to 15 minutes. Remove from the grill and serve with additional sauce on the side. Essence (Emeril’s Creole Seasoning): Combine all ingredients thoroughly and store in an airtight jar or container. Yield: about 2/3 cup Emeril’s Barbecue Sauce: In a large mixing bowl combine the ketchup, onion, cane syrup, wine, lemon juice, mustard, dark brown sugar, garlic, jalapeno, Worcestershire, hot sauce, salt, and cayenne, mixing well. Place in an airtight container and refrigerate for up to 3 days, until ready to use.

Cruise Control IT’S NOT YOUR MOTHER’S CRUISE Okay, here’s the truth. I didn’t like cruises. I went on two different cruises almost twenty years ago and I just wasn’t a fan of what I felt was a confined space and too many people. My sister-in-law (also a close friend) talked me into going on a Celebrity Cruise where the winners of previous seasons of the show “Top Chef” give cooking classes and demonstrations on-board. Since I love to learn new things about cooking and my sister-in-law swore I would have fun, I gave it a shot. I was so pleasantly surprised that I am planning another cruise! No more crowding, no more tight spaces. No more waiting on long buffet lines… there were 8 restaurants on board and the food was spectacular. I even had a room with a little patio, not just a porthole. And yes, I got to meet so many great people and took several cooking classes with the TV chefs…I had a blast! I got off the boat in Puerto Rico, St. Martin, and St. Thomas and went to incredible small, local restaurants and great shopping at street fairs.

There was even a Canyon Ranch spa on board (it’s a famous spa in Tucson AZ and Lenox MA) and I had a massage (discounted rates if the boat is in port). I felt like a celebrity on a Celebrity Cruise. HIGHLIGHTS: The week was non-stop action but my favorite off-ship trips were: ST. MARTIN: On the French side, a restaurant called Belle Epoque, where I had the best escargot…still obsessing over but couldn’t get the recipe. I also bought gorgeous French table linens at a street fair at about ½ of US prices. PUERTO RICO: Cutest bar and restaurant with great fish tacos and this drink called “Parrot Passion”, made with frozen citrus mix of rum, triple sec, passion fruit and orange! Let’s say I was really happy I could just walk back to the boat!


CULINARY CUES The ship had a restaurant called “Qsine”, where everything was served with innovative drama. Since I am a far better table setter/ server than I am a cook, I tried these ideas as soon as I got home.

THE “TOP CHEF” We had several Top Chef contestants on board, including fan favorites Tiffany “Don’’t Mess With Texas” Derry and Casey Thompson. We spent the most time with Hosea Rosenberg, winner of Season 5, and he won everyone’s hearts both on the show and on the cruise with his nononsense and approachable cooking style. As he said, he spends a lot of time ‘winging it’, and he’s not talking about chicken. Not only did he give us the scoop on lots of the backstage Top Chef drama and the realities of owning a restaurant, he was just so funny and easy going about cooking that even the novices weren’t intimidated. He now lives in Boulder, Colorado and has a spectacular new restaurant called Blackbelly, after a type of pig in the region. He also opened an affordable market for sandwiches next door, so everyone can taste his genius. We took a cooking class and Hosea taught us to make tomato soup with cilantro oil on top. It doesn’t sound that exciting, but it’s a great year round soup and the cilantro oil can be frozen and used on lots of dishes. Recipe on Top Chef’s website.

SIMPLE STARTER Buy inexpensive test tubes and stand. Serve soup in the test tubes…tomato or butternut squash look prettiest. You can also serve the soup in little expresso cups. Looks and tastes delicious, but isn’t too filling. ELEGANT ENDINGS Two great ideas…small silver martini shakers filled with sorbet topped with berries. Serve them with tops on and you take the top off to a gorgeous orange, raspberry, or lemon sorbet! Use a box with real grass or just buy a box with plastic grass (HomeGoods has them). Buy long wooden sticks (in supermarket) and chocolate covered marshmallows to put on ends of sticks, sticking up from the grass. You can also do it with strawberries or blueberries and it looks like flowers in a garden. Kids just love this!
