flask, recovered from the site of the Battle of Jarnac in 1569. Each requires the patient dedication and synchronization of 11 master craftsman to produce this work of art. What you are drinking is history. It takes at least 4 generations of Cellar Masters to create each blend, made up of an incredible 1,200 different eau-devie. These are all sourced 100% from Grand Champagne, the finest cru in the heart of the area and aged for over a century in extremely fragile 100-150-year Tierçons. They are thin walled casks of French Limousin Oak, originally designed to carry Cognac on horse drawn carts, three at a time, hence the name. Louis XIII does not impress with its richness or power, but rather its incredible balance, finesse, and complexity. It delivers an unbelievable range of flavours with precision and elegance. For me this is the embodiment of liquid perfection. Any spirit lover needs to try this once in their life.

The ultimate way to finish a wintery evening of fine wine and good company, is with a glass of Cognac. One of the most refined of all spirits, Cognac has seen a huge resurgence over recent years, especially at the top end. At $5,000 a bottle, the LOUIS XIII de Rémy Martin towers above all others. This is the original luxury Cognac that other houses still hold up as the pinnacle, one of the finest spirits ever made. The name is a tribute to the French monarch who reigned when the Rémy Martin family first settled in the region in the 1620s. LOUIS XIII has been the world’s greatest Cognac since its first shipment in 1874. The decanter itself has remained unchanged over that time. A mouth-blown crystal recreation of a small metal
If that isn’t expensive enough, we just sold the only two New Zealand bottles of the special edition LOUIS XIII Black Pearl AHD, for $22,000 each. Current Cellar Master Baptiste Loiseau discovered a unique single 576L Tierçon, N°C100_139, hidden deep in the family reserve, inside the André Hériard Dubreuil cellar. The cellar and the Cognac itself are both named in honour of the former chairman of Remy Martin, who was born 100 years ago. This area is cooler, darker, and damper than the other cellars. This venerable old barrel was so good, Baptiste felt it deserved to be bottled separately. Each of the 1498 bespoke Baccarat decanters only contain 350ml and are coated in precious and luminous palladium. - R.M

FOR WINTER Where to now cried the summer gin drinker?? Lots of places… Gin does lend itself to citrus very well, hence it goes down a treat in summer. But the same white spirit, like a chameleon, adapts very well to a richer, earthier and spicy flavour profile. Sloe Gin is another gin that I think is suited to winter cocktails. Sloe is a cousin of a plum, so you get the richness but with a bit more spice. We have several Sloes in stock, but my tried and true is the Hayman’s. Plummy and a secondary flavour of almonds…very delicious. Darnley’s have produced a spiced gin. The flavour leads in to cinnamon and nutmeg, with support from juniper and cumin. It is recommended to mix with ginger ale to get even more spice.
From the original trailblazing efforts of Meriwether and his Discovery Corps in 1804, the Oregon Trail was used by hundreds of thousands of settlers and travellers before finally being mostly usurped by safer and faster means of travel. From Missouri in the east, the historic road winds its way some two thousand miles before ending in Oregon in the west. It is in homage to this that Hood River Distiller’s “Trail’s End” bourbon is named, but the dedication is far more than just in name. Premium barrels of seven to eight-year-old Kentucky straight bourbon are selected and make that same long journey west to Oregon.
And wouldn’t you know it, the Aussies always take it to the extreme and Four Pillars have come up with a Bloody Shiraz Gin. What began as a bit of an experiment five years ago now has a loyal following. The Shiraz grapes, destemmed and kept as full berries, are steeped in the gin for eight weeks. The resulting drink is full bodied with spice and red and darker fruit berry characters. It is like the Sloe but with more tang.
Rather than just bottling it as it arrives however, the west coast locals go to great effort to imprint their own stamp of flavour and character on the bourbon. The typical addition of water is given an artisan twist - coming from glacier fed springs on the slopes of the volcano Mount Hood.
Everyone’s new favourite, Blush Gin, have launched a “Hot Toddy” and it perfectly balances Christmas spices and hints of Rhubarb. This warmed us up right down to our toes on a bleak winter’s day.
What really sets the Trail’s End apart though is the use of oak involved in finishing. Transferred out of the usual new oak casks used for bourbon, the Trail’s End ends it’s life in barrel in Oregon oak. With a chemical fingerprint similar to French oak these barrels are highly in vogue with local wineries, and more recently have become an attractive option for whiskey and bourbon distillers.
There is another very exciting project, that is from the NZ gin producers Scapegrace, and it is a Black Gin! This is completely off the wall, but the botanicals make sense and it is the combination that causes the colour and the tropical earthy flavours. They have used Aronia, Sweet Potato, Saffron, Pineapple and Butterfly Pea - these all combined make up a full-bodied, luxurious gin. The Butterfly Pea, which brings the dark colour, turns pink with the addition of Tonic Water. A rather magical touch!
This bourbon itself is delicious! Nutty spice comes through clearly on the nose. This carries clearly through to the palette with notes of walnut and hazelnut in particular complementing rich smooth toffee. Medium bodied but lusciously soft, I really enjoyed the Trail’s End both on ice and neat, though the finishing notes of vanilla and caramel were more easily appreciated neat. With the addition of a sugar cube, bitters, ice and orange though you will have an Old Fashioned that will live long in both the memory and on the tastebuds!
