Few champagne houses remain in family hands. The impressively-pedigreed Pol Roger is one of them. Residing in the heart of Epernay with cellars running immediately below the Avenue de Champagne for over seven kilometres, they are highly-skilled vinous alchemists in possession of an exquisite collection of wines. Not one of the region’s show ponies, Pol nonetheless lead the charge from the front. The English obviously love them, with Pol Roger one of only eight houses to bear the English Royal Seal and the late Winston Churchill clutching Pol to his steely heart as a personal favourite. They gained what many would regard as the ultimate royal approval when handed the prized task of providing the wedding champagne for the wee shindig recently held by the Duke and Duchess of Cambridge.

INGREDIENTS 180g salmon fillet with the skin on 50g freshly-shelled peas 1 50g GRANA PADANO PARMESAN 50mL canola oil 2 cloves of garlic HALF A HANDFUL OF FRESH MINT zest of half a lemon 00g baby carrots, peeled 1 50g snowpeas Season salmon fillet on both sides with salt. Heat a pan to medium temp and place the fillet in the pan skin-side up. Cook for 2 mins on that side then turn over and cook for another 2 mins until crispy.

While cooking the salmon, blanch and refresh the peas (reserving some for the vegetable medley), then blend them in a food processor with grated parmesan, mint, lemon zest, oil and garlic until a chunky pesto is achieved. Ép o is s es A traditional Burgundian cheese, its pungent aroma not for the faint-hearted. A washed rind cheese, the exterior is distinctly orange, the interior a light yellow and somewhat creamy. As it ripens, the centre goes all gooey and almost runs off the plate. It can be consumed young, while the centre is still firm (at this point it is mild and creamy, not unlike Port Salut) or when ripe, when it is runny and quite strong. Once again, the hand harvesting of fruit reflects Gibbston Valley’s deep-seated respect for the traditional approach. Ambrosial aromas of lemon peel and rose petal are edged by mineral notes, the palate itself keenly focused, off-dry, with the intense stonefruit flavours nuanced by a bracing lime-accented character. Works beautifully as an aperitif, equally well paired with food.
While the company’s main focus is undoubtedly Pinot Noir, it also boasts a collection of other varietals, all crafted with the same meticulous attention to detail that is the defining signature of this Central Otago institution.

A blend of hand-harvested, estate-grown fruit, it wraps its aromas of cherry, cassis and spicy oak around a richly flavoured palate. Fragrant, elegant, complex, earthy, softly intense. It’s good to go, but if you have the patience, it’ll sleep nicely in the cellar for 8-10.

FR ANCE’S unforget table vintage It’s rare to hear such unanimous praise for a vintage; when it came to 2009, winemakers, merchants and the wine press seemed to speak with one voice, with the word of the moment being ‘outstanding.’ So what’s all the fuss about? Almost perfect growing conditions produced some amazingly bold, fruit-driven wines. Combine that with the pedigree of perhaps the world’s greatest terroir, and these wines are going to last a very long time – we’re talking 40–60 years. The unfortunate news in a vintage like this is that many of the top wines have already been sold. We did offer them at the time via our en primeur website, and congratulate our customers that took advantage of the opportunity to purchase early at a reduced price (to be part of the action next year visit www.enprimeur.co.nz). All is not lost, however; some stocks of the top wines have just landed and are listed here. The great news, of course, is that it’s not just the top classified wines that excelled in 2009, the ‘second’ wines of the classifieds are knock-outs too, as are the petits châteaux, entrylevel wines that over-deliver in the quality stakes. Here’s an idea: purchase some 2009 wines for the cellar, then forget about them for a while and enjoy the rewards of your wisdom in the years to come.

The ‘château-on-the-side’ of Christian Moueix, the owner of Pomerol’s dazzling Château Petrus, PuyBlanquet is located within Pomerol’s neighbouring appellation, Saint-Émilion. The Merlot dominated Puy-Blanquet wines benefit from amazing vine age, with the 2009 exhibiting all the hallmarks of this great vintage, i.e. super-ripe fruit, bold tannins and the class that is encountered in all Moueix wines. With a portion of the wine aged in new oak, it is still quite young; if you are going to try it now, give it some time in a decanter (May we suggest a Riedel one?). Will benefit from 5–10 years tucked away in the cellar. Go for a case; you won’t regret it.
