One of the great things about Nga Waka is that they’ve been around a while, originally getting the ball rolling back in 1988, Roger Parkinson and his team able to carve a distinct niche as winemakers of quality and individuality, drawing upon what is now some serious vine age. Named after Nga Waka a Kupe, the three hills that form the distinctive backdrop to Martinborough, the concept for the winery had its genesis in Paris in the 1970s, where career diplomat Gordon Parkinson developed a fascination for wine that rubbed off on his 14-year-old son, Roger. When the family purchased their first vineyard block and founded the Nga Waka Winery in the mid-1980s, there were only four wineries and vineyards in Martinborough. Today, Nga Waka control six individual vineyards, with each one offering its own distinctive characteristics. ‘I saw the difference on our Home Block vines at about fifteen years,’ says Roger, ‘where the varietal character of the fruit starts to become somewhat less important, but more interesting because of richness, balance and texture, all the things that are critical for food wines.’ Nga Waka’s Three Paddles wines deliver great value, approachable, fruit-forward styles. The Nga Waka range undergo longer maturation and have excellent cellaring potential, while the single vineyard, terroir-driven wines are produced exclusively from older vineyard blocks. Cognac? It’s the Bugatti of brandy, basically. This subtle and complex, somewhat magical elixir is produced under very strict regulation in the French region of Cognac, double-distilled using copper pot stills prior to aging in French oak from Limousin or Tronçais. The approved list of grapes (primarily Ungi Blanc) are grown in the six demarcated zones surrounding the town of Cognac. During maturation (which is often longer than the prescribed minimum of two years), the brandy absorbs tannin and vanilla from the oak and, as it matures, some of the alcohol slowly evaporates. This is often referred to as the angels’ share. The final stage that establishes the style and quality of the cognac consists of blending spirits from different-aged casks and different vintages and zones. The various categories reflect the time each cognac has spent in barrel. VS (Very Special) cognacs are aged for two years. VSOP (Very Special Old Pale) for at least four years. XO cognacs must be at least six years old, but the finest contain much older cask-aged spirits. The best are incomparable; no other grape-based spirit has the subtlety of bouquet, depth, fruitiness and complexity of flavours.

Located within the Margaux appellation, Château Kirwan was accorded the first of the Third Growth titles in the famed classification of the Médoc in 1855. Now over 400 years old, the property was acquired in 1751 by Irishman Mark Kirwan, who renamed it, naturally enough, Château Kirwan, and set about elevating its standards to good effect. The château has been owned since 1904 by prominent Bordeaux merchants, the Schyler family, with members of successive generations overseeing its management.
