Specializing in Girlfriend Getaways By the Decade From 20-Something to the “Don’t Ask Decade” By Samantha Cook
Us girls need to getaway, we just do— whether it’s because we’re busy moms, business owners, keeping our households together, or all the above. Research shows females crave the endorphins produced from talking with their friends. Really, we could just sit around a table and talk, and be much more healthy! The launch of Archer Austin’s Girlfriend Getaways: By Ages and Stages brings Texas-sized good times to the table for gal pals at one of the area’s top boutique hotels where the concierge maps out maximum fun from hot spots to dance the night away, sip wine, bar hop or whatever strikes your fancy. They can reserve Archer’s poolside cabanas, schedule spa treatments, and create a shopping tour of stores surrounding Archer in the Domain and Domain NORTHSIDE. Girlfriend getaways can vary depending on our ages. In your 20s, you probably want to drink non-stop and go out dancing until the sun comes up. In your 30s, a girlfriend escape probably would include a little partying, lots of shopping, but some sleep/relaxation because you might have young kids at home. Luxe accommodations with five-star bedding on Archer’s double queen beds allow for the ultimate sleepover! The hotel will surprise you with a few glam goodies, too. You’ll enjoy the Texas-inspired art throughout the hotel, but the lobby chandelier is the most

impressive decoration. Make sure to allow for plenty of pool time with your gals at the hotel’s second floor outdoor pool with big screen TV. In the afternoon, you can enjoy poolside drinks during happy hour, but isn’t every hour happy with your gal pals? Food options are key for any vacay or staycay. They abound around Archer Austin and Domain NORTHSIDE. Here are a few of our faves: »» Second Bar + Kitchen, inside Archer Austin, is a nonstop winner! (Check out a review of this restaurant in our online magazine’s Foodie Friday.) The menus are constantly changing based on seasonality. Start with the unique chicken-fried olives and the tasty avocado fundido (mix it well to combine the chorizo, cheese and avocado), or the pork belly adobo, a combo of poached egg, jasmine rice, basil and shiso. Move on to entrees and don’t miss their sbk street taco pizza—the most glorious combo of pulled chicken, asadero and cojita cheese on a thin crust pizza. The garlic and chive gnocchi is also a crowdpleaser. Their able staff will make sure you’re pairing these delightful dishes with the ideal wine or cocktail. Finish with their assorted dessert bites: salted caramel fudge, blueberry tart, dark chocolate bar and macaroons.
»» Culinary Dropout (who doesn’t love the name?) is around the corner from Archer and a superb spot for your girlfriend lunch. Their scratch kitchen (which you can see from your table) will please the palette of your foodiest friend. Share some apps like prosciutto deviled eggs, bacon and Parmesan grissini (Italian breadsticks), and crusty bread with garlic oil and balsamic vinegar. They pair nicely with a chilled chardonnay. For entrees, if you don’t want the soft pretzel and provolone fondue (one of their most popular items) or “yesterday’s soup,” get a load of the BBQ pork belly nachos (piled high), the garden kale salad with grilled chicken, or the surprisingly flavorful fried chicken (with an unforgettable sauce). »» Another choice for lunch is Thai-Kun. Share the boat noodles in broth with liver meatballs. Then try the pad thai, Chinese broccoli (more like spinach than broccoli), or beef salad. Use promo code GIRLFRIEND on the hotel’s Facebook page to start planning your own Archer Austin’s Girlfriend Getaway. 3121 PALM WAY | AUSTIN ARCHERHOTEL.COM

In Pursuit of
Pollination Preservation The Golden Ticket to Sustainability is the Bees' Knees Hundreds of people cross the Austin city limits each day to absorb live music, sample restaurants, and chill out in one of the capitol city's many iconic outdoor spaces, such as Zilker Park or Lady Bird Lake. Yet, few realize that their migration is being duplicated by an even more important visitor: the honeybee. For years, this crucial pollinator has been flying under the radar, but thanks to the folks at the Austin Honey Company, the importance of this tiny insect is becoming recognized. A soft hum reverberates through the air. It’s a white noise you can feel almost as much as you can hear. Magnetized by the drone, a dozen white-suited apiary enthusiasts peer through thin mesh veils into the heart of the honeybees’ home. The gentle, softly-accented voice of Austin Honey Company co-owner Raul Vergara drifts through the humming to guide the spacesuit-clad trainees through the removal and inspection of a honey frame. During this intricate interaction between bee and man, coowner Mark Bradley explains why the Austin Honey Company chose to locate their hives on urban farms. “Unfortunately, as our country’s been developed, there hasn’t been a sensitivity
All Abuzz?
By Jessica Devenyns
to our natural environment,” explains Bradley. “So it requires more managed pollinators.”
Springdale, Tecalote, Green Gate, Sunrise, Millberg, Bernhart, and Yaegwa Creek Farm.
These pollinators are responsible for the propagation of 115 different species of flora according to the USDA, many of which are pollinated exclusively by the bees.
Each farm benefits from the consistent pollination that the bees offer their wide range of crops. The variety, in turn, produces a distinct honey that is mixed into the unique blend that the Austin Honey Company offers every season. According to Bradley, although there are differences season to season, the bees accumulate most pollen from three blooms— the bluebonnet, the Indian blanket and the horsemint—making for a relatively consistent taste in the honey.
Alarmingly, the bee population is rapidly declining. It was in response to this decimation that the Austin Honey Company found their niche. “We want to promulgate more of that [local pollination], and that’s why we chose to do bees here in Texas,” Bradley says. Plus, in Austin, “bees thrive year-round.” However, the story of these bee saviors didn’t start as an ecological warrior mission. Ten years ago, “Vanessa, my youngest daughter, had allergies,” explains Vergara. Despite its humble beginnings, Vergara's backyard hobby quickly exploded into a business when his son-in-law, Bradley, decided to switch from commercial landscaping to beekeeping. It was only a short while before the pair decided to leave Chicago for the warm, open spaces of Central Texas. Today, you will find the honey company’s hives at seven different farms in the Austin area:
For Vergara and Bradley, it is the ecological symbiosis that gives their work value. However, a life with bees for this father- and son-in-law is more than that. “It helps you become more aware about how to be a better human and maybe make better decisions about what you consume,” says Vergara. If we don’t all adopt this attitude and lose bees, “we lose most of the delicious things we love to eat and we’re left with a bland, tasteless world. A cruel diet of rice and corn.” A sour prediction indeed. AUSTINHONEYCO.COM
Are you interested in learning more about beekeeping or honey harvesting? Austin Honey Company periodically offers full spectrum introduction classes to help you manage honey bees throughout the seasons, as well as teach you how to harvest your own honey. Check the website for updates. The classes are oriented towards enthusiasts who are interested in learning how to effectively prepare their hives for the winter or who are interested in purchasing their first hives in the upcoming spring.

LIVING TEXAS | DALLAS
A Culinary Blowout in Dallas NOVEMBER 2-5, 2017 By Eve Richter Dinnan
In Texas, we take great pride in everything we do. To us, great food and wine tastes even better if it's local, and so much the better if we can put a face and name to the person who grew, delivered, cooked and served up the artisan arugula or grass-fed beef that we love to enjoy.
"Know Thy Farmer," hosted by Whole Foods Market. Victory Park will host the returning Street Food Night Market on November 4th. Other highlights include BITE Night, with a showdown among alum of Bravo’s Top Chef Charleston and Main Event, a “culinary treasure map” served at Lee Park.
The folks at Chefs For Farmers get that. And now their food and wine festival celebrating the entire local ecosystem from farm-to-fork is in its fifth year. In fact, this self-described "down-home, no-fuss festival," is looking forward to its biggest event yet, with more than 150 combined chefs, food artisans, bartenders, breweries, wineries, and distillers.
“Chefs For Farmers began as an intimate dinner on a farm, and it is exciting to see how it has evolved into an event that attracts thousands of food lovers, positioning itself alongside well-established national festivals,” said Iris McCallister, cofounder of Chefs For Farmers. “We know that without our fabulous local farmers, menus wouldn’t have the same soul and finesse. The local bounty is the star of the show!”
More than 30 nationally acclaimed chefs, most of whom are James Beard nominees or winners (a James Beard award is the foodie equivalent of an Oscar), will be joining local chefs and farmers. Over the course of the November 2-5 weekend, attendees can celebrate the vibrant Dallas culinary scene with pop-up dinners, tastings, and parties. Notable participants include Top Chef Season 14 winner Brooke Williamson. All participants consistently support local farmers. Events will be held at several of Dallas' top venues including the iconic landmark hotel The Adolphus, which will also serve as the host hotel, and the emerging Victory Park district. The Adolphus will feature intimate chef-led events and education programming, as well as the Friday Night Welcome Dinner,
True to its stated mission of supporting local farmers, all proceeds from the four-day festival will benefit Texas ranchers and farmers. Participating chefs and farms receive stipends to create locally sourced dishes for the festival and start sustainable relationships. An auction at the “Know Thy Farmer” dinner will directly benefit the farming community. The event will also help VNA Meals on Wheels to help raise funds for its annual Power of Pie campaign. (Guests pay $25 and receive a Thanksgiving pecan or pumpkin pie prepared by top local chefs.) If you’re looking for a fun way to blow your diet, support a good cause, and get a fun start on the holiday eating and drinking season, check out Chefs For Farmers! CHEFSFORFARMERS.COM

Street Art Changing Houston One Wall at a time By Gabi De la Rosa
Houston has a little bit of everything: fine dining and casual eateries, high-end shopping and flea markets, open green spaces and a 10lane freeway. But many don’t realize that, in addition to galleries and museums, street art is a burgeoning way for artists to express themselves in the fourth largest city in the country. What was once considered vandalism has grown to an accepted art form, and something that makes the visual landscape of the city unique. Leading the charge, and arguably one of the best-known street artists in Houston, is Mario Figueroa Jr., known as Gonzo247, a native Houstonian who has not only become an accomplished artist, but also a cultural ambassador for the city. “There has always been a negative connotation with graffiti; and people always assumed I was either affiliated with gangs or up to no-good, but neither was true,” said Gonzo247. “I believe there was a turning point in 2013 when Houston First commissioned the first large-scale street art installation in downtown." He created the “Houston is Inspired” mural which has become a landmark. "I never expected people to actually go and visit, or even take pictures, but they did. That was a turning point, not only for me, but also for the city of Houston and street art.” Street art superstars travel from all over the world to turn the walls and buildings in Houston into canvases. What used to be created under the cover of night or on old dilapidated buildings has become something to be celebrated.

art in the city. Street art superstar Hilton Alves came to downtown Houston (Commerce Street) from Brazil to create his 13th of 101 perfect waves all over the world as part of his goal to bring greater awareness to street art, oceans and environmental preservation. “I’ve lived here all my life and I have never seen this much street art in Houston,” said Gonzo247. “You can travel from one end of the city to the other and you will see art everywhere.” The Graffiti and Street Art Museum of Texas, the country’s first museum dedicated to street art, is a great place to both see street art and also learn about its history. Downtown, the East End, EADO and Northside areas, Houston Heights neighborhood, St. Arnold’s Brewery, Canal Street, Talento Bilingue Houston Building, Leeland Graffiti Park, Lee and Joe Jamail Skatepark, and Sawyer Yards are great places to start; but if you pay close attention - you will see art everywhere. The Houston Urban Experience (HUE) Festival, October 14-21, is a weeklong celebration of street art in Houston. Gonzo247 founded the festival in 2015 and both local and international street artists flock to Houston to be part of the festivities. Guided and self-guided tours are available and festivalgoers are encouraged to experience art as it is being created. HueFest is free and open to the public.

While Houston’s museum district is a large area with 19 museums and four walkable zones, people often only know the larger institutions. Yet, there are many smaller museums that are free and packed with information, culture and community outreach. Asia Society Texas Center The Asia Society is an educational institution that strives to promote understanding and partnerships between Asia and the west. Museum entrance is free, and visitors are treated to both permanent and traveling exhibits such as bamboo art and paintings. Don’t forget to visit the outdoor exhibit by contemporary artist Lee Ufan, have a wonderful meal at the Jade Café, and learn about the museum’s numerous community events throughout the year.

Buffalo Soldiers National Museum Celebrating the African Americans who served in American wars, this museum displays artifacts and memorabilia of those brave soldiers. Starting with the Civil War and covering everything from the World Wars to Vietnam, this museum also has videos and reenactments. Contemporary Arts Museum Houston This free museum is a treat for the eyes. Brightly colored largescale sculptures and exhibits capture the attention of visitors no matter their age. The museum also has an open studio with hands-on activities that tie into the exhibitions on view.

The Menil Collection and Rothko Chapel The Menil Collection opened in 1987 and houses the private art collection of John and Dominique de Menil. This museum, which always has free entrance, strives to bring visitors as close as possible to art and history with over 17,000 items in its collection. Within walking distance of the museum is the Rothko Chapel, created in 1971 by John and Dominique Menil. The beautiful contemporary building is a tranquil place to reflect or meditate and is free and open to the public every day of the year. The Health Museum This museum is an interactive exploration of science and the human body. Giant teeth, life size organs and interactive exhibits are just the tip of the iceberg at this literally largerthan-life space. Explore DNA in the Genome exhibit, see the connection between humans and engineering in the Human + exhibit, and visit Houston’s first 4-D theater. The museum also offers many classes, camps and field trips. HOUMUSE.ORG
Keep your eyes out for Houston Museum District’s Museum Experience events. Periodically throughout the year, different zones will host an experience that includes hands-on activities, speakers, or different exhibits. The zones are broken up into walkable areas so visitors can experience several different museums in one day.

College Station More Than Just a College Town By Samantha Cook (Texas A&M Class of ‘97) and Kate Ferris (Texas A&M Class of 2018)
The Stella's Campfire restaurant offers high quality "farmto-fork" food and a warm atmosphere.
Home to Texas A&M University, College Station is one of the fastest growing cities in Texas. In 2016, U.S. Census Bureau population estimates showed that the city was the 18th fastest-growing in the country. Whether you’re looking for the new hip spots or the classics, we’ve got you covered. A few decades ago, when there was a big weekend at A&M, it was tough for families to find a hotel room. In the past year, several new hotels have popped up in College Station. The new boutique Stella Hotel opened its doors in April 2017, just down the road from University Avenue, past Research Park and adjacent to Easterwood Airport. With its sophisticated style and luxurious amenities, the hotel is more upscale than the typical college student would need but it’s ideal for parents. The lobby is full of eclectic art, with the lit STELLA sign the highlight. As Aggies, we also love their maroon wooden bathroom doors. The Stella’s restaurant, Campfire, specializes in top-notch farm-to-table food, buying the majority of their produce and meats from within a 60-mile radius. It’s a great option for breakfast, due to convenience and selection. They have a typical breakfast menu from pancakes and French toast to eggs Benedict. You’ll also find craft cocktails at Hershel’s (uber cool setting with shabby chic interior), brews and munchies at P.O.V. (near the front door to the hotel) or at The Watershed - The Stella’s pool bar. And, across the front parking lot, you can enjoy Atlas Park with its small lake and nighttime colored water fountains. Food Fix One foodie fave not far from campus is Mad Taco, where you’ll find trendy tacos and Mexican pizza. Owner Peter Madden (who attended Texas A&M) has a brilliant mind that is always at work. Since 2015, Mad Taco has truly made a name for itself with Aggies. (A sign above the cash register reads: “Taco Up, Ags!”) Madden grew up in the Rio Grande Valley and served as a chef at Cafe Eccell (the nicest place to dine in the ‘90s in College Station when I was a student). He opened Madden’s in Bryan in 2004, which he later sold. He’s opening a second Mad Taco in College Station and plans to expand around Texas.
Stylish guest rooms at the Stella have gorgeous College Station views and cozy Frette linens.
The tacos are mouth-watering (the fried shrimp, their #1 seller, and the beef short rib are my faves) and priced to fit into a college student’s budget. But don’t miss the CQ appetizer, a hearty queso with a “truffle” of guacamole in the center (served with chips) or the corn and avocado pizza. It’s not just about the food, ‘tho. Mad Taco rotates local charities each month. (They recently donated $50,000 to Habitat for Humanity.) We also love their creative marketing, like the “black wall” and that they drop off gift cards at local businesses to “pay it forward.” Obviously, we’re MAD about Mad Taco! If you’re looking for homestyle Italian, stop in at Cenare, just down University Drive from campus. Family-owned, this is a great spot for some fried mozzarella sticks, caprese salad drizzled in balsamic, followed by pastas like pesto gnocchi and paired with a bold cabernet. Cenare has been in business for over 35 years in the same location. Italianowned, the food is authentic. Their top selling dishes are the classics such as lasagna, chicken parmigiana and veal piccata and Marsala.
One of College Station’s newest boutique hotels, The Stella creates an authentic Texas experience with its art, design and service.
“We cook with love,” says owner Houda Cerone. “Everything is homemade, from the bread to the sauces to the desserts.” Cibo delizioso!

Tips for fall camping in Texas By Julie Tereshchuk
Fall in Texas is a fabulous time to enjoy the outdoor spaces this great state is so blessed with. Whether you’re a first-timer, or an old-hand; a camping singleton or planning a sprawling family reunion, these tips are sure to help you make the most of your trip. Photography courtesy Kammok
Keep warm after the sun goes down with a cozy sleeping bag.
tips Find a camp spot near water. Even in the fall, Texas is always prime for a sunset rope swing, midnight dip, or morning paddle. Check out Inks Lake or Guadalupe State Park. To keep away from critters that crawl and slither, sleep off the ground. Try hammock camping between two trees, or two weight bearing poles. Looking for the perfect hammock? We recommend the Roo Camping Hammock from Kammok, an Austin-based outdoor gear company specializing in high performance elevated camp gear. Use it for camping, at home on the porch, track meets—wherever you want to hang loose. We guarantee the kids will love it.
Photography courtesy Kammok
Keep warm after the sun goes down with a cozy sleeping bag.
Get out west and lay under the stars. When they say the stars at night are big and bright… they aren’t kidding. Big Bend is one of the darkest places in the nation, giving you a front row seat at the milky way in all of its glory. Keep warm. Once the sun dips beneath the horizon, Texas is surprisingly chilly. Check out the award-winning Thylacine Sleep System from Kammok, winner of Outside Magazine’s Gear of the Year Award in the sleeping bag category. With a sleeping bag and liner, this sleeping bag adjusts to your weather conditions, keeping you toasty all night long. Don’t settle for hot dogs. Pre-cut your veggies, marinate your meat, bring a camp stove, and have fajitas around a campfire. Sleeping in the wilderness should come at no sacrifice to a proper camp meal!
Don’t sacrifice tasty food while you’re camping. Plan ahead and you could easily be eating delicious fajitas.

TEXAS LIFESTYLE | STYLE
By Daniel Ramirez
ina Chavez was, by all accounts, a successful fashion designer. A University of Texas graduate with a laundry list of clients and fashion shows that included New York’s coveted Fashion Week, styling a star for the Grammys, a Project Runway Rio Grande Valley win and a direct affiliation with Fashion X, which started in Austin but soon grew to be statewide, her pedigree was more than impressive under her label, SixChel. The brand grew in strength and notoriety, as New York to Austin was and remains a strong pipeline for bold ideas, breathtaking styles and the laid-back air of coolness that pervades from Brooklyn to the East Side. Chavez saw the link between the two, admitting, “As a whole, the idea of fashion in New York is city chic, modern and simplistic whereas the style of Austin is laid back, relaxed and ready for the heat. However, when one actually visits both cities, there are several similarities, depending on where in the city you will be or what events you are attending.” In Chavez’s estimation, the link has only strengthened over time, thanks to innovation. “Technology, smart phones and social media have bridged the gap between who is wearing what right now and the consumer at home looking for that next “it” item to purchase and wear,” she observes. Still, there is the occasional foundational difference that won’t be changed – that thing that stands, resolute. “Austin is still Austin and it is more acceptable and common to wear flip-flops with anything, whereas in New York, you better be a tourist,” she adds.

In 2011, her sister was diagnosed with uterine cancer. Heartbroken two years later, when her sister died, Dina re-dedicated herself to a new way of thinking, one that is somewhat antithetical to the fashion industry. “As her primary caregiver, I spent a lot of time researching the environmental causes of cancer,” Chavez explains, “and it led me to see a whole new world of information on how chemicals and toxins in our environment and products we buy and wear, can lead to potential health problems.” Chavez analyzed her industry and practices and changed everything about her involvement. “I wanted to make sure that SixChel would not be a contributing factor in creating more toxins by using non-sustainable fabrics. Fabrics such as hemp, organic cotton, bamboo and Tencel are made from natural and sustainable resources, leaving out the chemicals and toxins used to make common man-made fabrics such as rayon, polyester, nylon, etcetera.” They sound like simple replacements, but, over decades, synthetics have been widely accepted as the norm, as they hold color and shape more readily than natural fabrics. The bright neons and deeper hues reflected in modern fashion design are difficult to replicate, using natural materials, to say nothing of the cutting edge
shapes and angles promoted by the likes of Lady Gaga, Nicki Minaj and other celebrities that push the industry leaders to imagine further. It is a revolutionary impetus in an industry that reveres rebels. Photo by Lori Garza
Fashion is as an unforgiving mistress as that and, regardless of the source, the pressure always mounts to deliver faster, edgier and, most importantly, more affordable designs to market. And in a world that clamors for more, more, more at cheaper and cheaper prices, something happened early in her career that turned Dina Chavez in a much different direction.
TEXAS LIFESTYLE | STYLE
Dina Chavez, at home in Austin, NYC and in your wardrobe.
Still, with the increased visibility of sustainable sourcing, thanks to brands like TOMS and campaigns like Trade As One, Chavez has found people to follow where she leads. “Brands are definitely following the lead of SixChel and other sustainable fashion brands,” she explains. “The phenomenon has been rapidly growing and we are seeing more independent fashion labels that are dedicated to making sustainable fashion. We are seeing more mainstream brands such as Stella McCartney, New Balance, H&M (they are trying) to name a few, that are making more or all of their products sustainable. In Austin alone, there are a number of local designers who are ethical and sustainable fashion brands and the number seems to keep growing.”
It makes these sustainable brands easy to find, and increasingly easier as the demand from consumers, now conscious about their fashion choices, increases. Chavez’s advice is to be conscious and look for brands that ascribe to a more sustainable ethos. But, there is a byproduct to such choices that she recognizes will increase the momentum even more. “Most importantly,” she focuses in, “as consumers, we must stop buying fast fashion. These products create a high level of toxins that are released into our water systems.” Ultimately, the increased price is offset in different ways. “In the end, you are not saving money from fast fashion products, you actually end up spending more or the same amount as you would if purchasing a well-made, sustainable garment that will last longer than the fast fashion product,” she adds. It might cost a little more to the consumer, but haute couture always commands a premium, and the one thing that Chavez’s designs do not sacrifice is in their innovative and eyecatching design is their devotion to the evolution of fashion, itself. One need only look at the provocative angles and playful use of draping fabrics to showcase the feminine form in order to know that SixChel’s designs sacrifice nothing for their sustainable ethic. And that, more than anything else, is the ultimate tribute to her sister – resigning from the faster, better and more mentality to remove harmful processes from the production of very high fashion that’s at home on New York runways, seen at Austin nightlife spots and at the ready in your closet. Tilman Fertitta Landry's Owner, a Man For All Houston (and Beyond) By Shelley Seale
Tilman Fertitta has been a busy man lately. The Houston business mogul, billionaire and television personality was dealing with hurricanes and rockets in the same week. As the chairman, CEO and sole owner of Landry’s, Inc. — one of the largest hospitality corporations in the country — Fertitta was quick to respond when Hurricane Harvey struck Texas on August 25, causing massive flooding and untold destruction across Houston, the coastline and beyond. With more than 10,000 employees in Houston, Galveston, Corpus Christi and surrounding areas, Fertitta set up a relief fund for his team and their families, that he personally seeded with $1 million. He also set about coordinating food drops for area residents affected by the hurricane, and first responders. A week later, it was announced that Fertitta reached an agreement to buy his hometown basketball team, the Houston Rockets. The $2.2 billion sale price broke the NBA record sale of $2 billion from when the Clippers were sold to Steve Ballmer, according to the Houston Chronicle. The sports fan said it has always been a dream of his to own an NBA team. "I am truly honored to have been chosen as the next owner of the Houston Rockets," Fertitta said of the deal. "This is a lifelong dream come true. Leslie Alexander has been one of the best owners in all of sports, and I thank him immensely for this opportunity. He has the heart of a champion. ...I am

overwhelmed with emotion to have this opportunity in my beloved city of Houston.” Texan by birth, hailing from Galveston, the 60-year-old Fertitta is part of an Italian family whose ancestors emigrated from Sicily a few generations back. He got his start in the restaurant business at an early age; his father owned a seafood restaurant on Galveston Island, and it was young Fertitta’s after-school job to peel shrimp. He studied business administration and hospitality management at Texas Tech University and the University of Houston. His first major project was the Key Largo Hotel in Galveston, and in 1980 he opened the first Landry’s Seafood restaurant, with a partner, in Katy. A year later, the partners opened the more upscale Willie G’s Seafood & Steaks in Houston. By 1986, Fertitta had gained controlling interests of both restaurants and became their sole owner in 1988. The Landry’s Inc. empire was born when he took the company public in 1993 and began growing quickly, adding concept after concept. Twenty years later, Fertitta Entertainment, Inc. owned and operated more than 500 restaurant, entertainment and hospitality locations in 34 states. Its hotels include the Golden

Nugget Casinos, The Westin Houston Downtown, Holiday Inn On the Beach, Hilton Galveston Island Resort and San Luis Resort, Spa & Conference Center in Galveston; while the well-known restaurant chains include McCormick & Schmick’s, Rainforest Cafe, Saltgrass Steak House and Bubba Gump Shrimp Company.

They are also a big player in the entertainment and gaming destination business, operating such iconic venues as the Historic Pleasure Pier in Galveston, The Kemah Boardwalk, Downtown Aquarium Denver and Houston, and the Tower of Americas in San Antonio — all of which regularly show up on the Forbes, Travel Channel or USA Today’s top five lists of attractions.
"Numbers don't lie,” Fertitta said of his decisions. “I don't have fear if I have looked at my numbers. There is capital out there, but be smart enough to realize you’ve got to have something special."
Under Fertitta’s leadership, the company is recognized as a world leader in the dining, hospitality, entertainment and gaming industries with revenues and assets of over $3.4 billion. Landry’s is one of the country’s largest employers, with more than 60,000 employees; and uniquely, with such a large model, it operates all of its locations and doesn’t license or franchise any of its domestic units. Fertitta is so passionate about what he does that he created a television show to share his insights — “Billion Dollar Buyer.” The show is set to launch its third season on CNBC in 2018 (filming was underway during the writing of this article), with the premise of introducing promising companies around the country to one of its most successful entrepreneurs.
"I know that I can't play a musical instrument. I know that I can't change an oil filter on a car,” he told CNBC’s Marguerite Ward. “But you can bring me any kind of business issue or problem, and I will detect it and tell you what the problem is and the solution within a few minutes.” Fertitta’s newest venture is perhaps one of the most ambitious: the first mixed-use high-rise tower in Houston.
As Chairman, CEO and sole owner of Landry's, Inc., Tilman Fertitta's newest venture is perhaps one of his most ambitious: The Post Oak at Uptown Houston, the first mixed-use high-rise tower in the Bayou City.
With more than 10,000 employees in Houston, Galveston, Corpus Christi and surrounding areas, Fertitta set up a relief fund for his team and their families, that he personally seeded with $1 million.
In each episode, Fertitta spends time with two different small businesses, getting to know the owners and their products. After sharing his expertise and suggestions for improvements, Fertitta decides whether to do business with one of the companies, both, or neither. When one of these company contestants is chosen, it can transform not only the business, but also the owners' lives.
The Post Oak at Uptown Houston is nearing completion at 1600 West Loop South, and will feature a 700,000 square-foot, 38-floor tower situated on 10 acres. The elite high-rise will feature two fine dining restaurants, including the Landry’s brands Mastro’s and Willie G’s, five luxury retail stores and a private Bentley and Rolls Royce showroom.
The sophisticated residential space at The Post Oak will consist of 20 residential units of one to two thousand square feet each, and 250 hotel guest rooms and suites — including a 1,500 square-foot Post Oak Suite and the ultimate 5,000 square-foot Presidential Suite, that comes with its own private elevator. Workspace will also be part of the development, with 11 floors of boutique office space, and 35,000 square feet of event space with several ballrooms and conference rooms. Of course, the amenities list is just what would be expected to go along with such a groundbreaking concept: a helicopter pad, two-story spa and salon, state-of-the-art workout facility, Continued on page 34

fabulously landscaped pool and outdoor spaces with private cabanas and a fire pit, and a members-only VIP lounge. And everywhere, stunning views of the Houston skyline. "The Post Oak will serve as a luxury destination for guests, businesses, and residents," Fertitta said. "I am excited about creating Houston's finest hotel, most unique service-oriented office space, exclusive luxury residential apartments, and once again, some of Houston's best restaurants.” The Post Oak's proximity to his corporate office has allowed Fertitta and his executive team to be intimately involved in the planning and development of the 10-acre site. The Post Oak is scheduled to open this fall, when the striking entry plaza will greet guests with a grand chandelier, extravagant artwork and a plush living area with exquisite custom furnishings. The entire complex was designed to be awash in greenery, mature oak trees and tranquil water fountains; all of which can be enjoyed while walking through the many thoroughfares through the trees, or dining al fresco at one of the many outdoor patios.
The Post Oak’s retail space will include a private Bentley and Rolls Royce showroom.
Gensler Design was responsible for the master planning, architecture and interior design of the project. The firm is known for working with clients to create more livable cities, smarter workplaces and more engaging leisure destinations. Lisa PopeWesterman, Gensler Design Director and Principal, shared her thoughts on what makes The Post Oak spaces so extraordinary.

"The design has timeless, classic features accented with modern furnishings, finishes and lighting that will make it really special. From the moment people enter the space, everything will be focused on providing an exceptional experience,” explained Pope-Westerman. “A dramatic, two-story chandelier cascades down and provides views of the pool. The Post Oak will be a treat for the eyes and a full immersion into luxury and comfort." Jorge Gonzalez has been named General Manager for The Post Oak, and the seasoned veteran — bringing more than 30 years of experience, including opening the first luxury hotel in Miami — should bring a dynamic that will serve the development well. “Jorge is a proven leader, delivering high standards of excellence and expertise in the hospitality industry, which are important attributes,” Fertitta said. “I am confident he is the perfect fit for this position and know that he will maximize the property’s potential for success.”
There is an enviable list of amenities at the Post Oak tower, including a helicopter pad and a two-story spa and salon.

The Suite Life: LIVING AT THE
W AUSTIN By Julie Tereshchuk
An Austin family of four left their large suburban home for life in the beating heart of the Capitol City’s buzzing downtown scene, taking over a 3,150 square foot condo space at the Residences at the W Austin. Next door to the famed Austin City Limits venue in the Second Street District, they are at the epicenter of modern Austin living. Creating a family home in this iconic neighborhood made for intriguing challenges. When architect Christopher Sanders walked through the space with the family, they were clear they wanted to embrace the different materials and construction aesthetic of downtown commercial and residential architecture while also creating a dynamic space for living and entertaining.
1.
With remodelling constrained by the high-rise’s existing infrastructure, Sanders and interior designer Mark Cravotta had the benefit of clients willing to explore “creative, quirky solutions” to design problems, explains Sanders. Charged with leveraging the condo’s natural light and sweeping views while bringing urban edge to the residence, the process became a series of—sometimes drastic-sounding—design experiments. “We found a nice balance when we pulled back some layers of the existing building to expose concrete and steel of the base building, and then layered-in crisp modern materials and finishes,” says Sanders. Taking on a high-rise project may bring limitations. However, concludes Sanders, “It’s fun to accept the challenge and maybe even integrate them into the design solution.” SANDERS-ARCHITECTURE.COM CRAVOTTAINTERIORS.COM

Located in what was an inefficient use of space in the previous floor plan, the interior office and its high wall shelving exemplify how Sanders and Cravotta carefully worked to maximize space throughout. The top shelf is below 7 feet, and reachable without a step stool. 2. Carefully selected by Mark Cravotta, the long drop bedside lighting fixtures emerge from the master ceiling cove and hover, without touching the beautiful fabric wall covering behind the head of the bed. 3. A whimsical design solution celebrating the challenge of incorporating two cast-iron plumbing pipes discovered when opening up a wall to expand the kitchen. Moving them was not an option. The steel armature, with brass fasteners, accommodates spice shelves on one side and glasses on the other side of the baseball-stitched, leatherwrapped pipes. 4. UTAH MOUNTAIN BI THE GREATEST DIRT ON EARTH As the first of still only four International Mountain Bike Association-designated gold Ride Centers™ in the United States, Park City, Utah is the ideal location to learn to mountain bike, hone your skill or experience the mountain as an expert rider. With over 400 miles of public access trails at your disposal in Park City, and the great trails at Deer Valley, you’ll have to come back year after year to see all the beautiful terrain the Wasatch region has to offer. Many experienced riders will go mountain biking with just their gear, GPS and research (using sites like singletracks.com and mtbproject.com). However, even if you are an intermediate rider, it’s always a good idea to use local guides that know the terrain, trails and weather. The locals at White Pine Touring take the time to set you up with the right equipment and get you on the trails that fit your skill level and interest. If you’re looking for a more customized rental bike, try Park City Bike Demos. A well-equipped full-suspension bike runs about $100/day and they have all the top brands, including Devinci, BMC and Felt.
40 Texas Lifestyle Magazine | Fall/Holiday 2017
Any mountain bike trip to Park City has to include at least a day at Deer Valley. This past summer, lift hours were extended to 8 p.m. and White Pine Touring now offers a Night Riding Tour. (They provide helmets and bike LED lights.) Deer Valley has several flow trails, created by Gravity Logic, the world’s leading bike trail design company. (Flow trails allow the rider to pump and flow down a trail with very little pedaling and often have bermed turns, rollers and jumps. It’s an exciting ride but important to ride within your ability and speed.) The three main flow trails are Holy Roller (classified easy), Tidal Wave (intermediate) and the recently completed Tsunami (experts only). Another must is the new Wasatch Over Wasatch (WOW) trail. Take a shuttle to the top of the trail, near the Midway Reservoir. The start of the ride is through a gorgeous aspen grove followed by 500 to 600 feet of climbing. Then the real fun begins, with a 3,500 foot descent into the Heber Valley. The trail is well designed and mostly keeps to the valley floor with few technical stretches.
GEARING UP
For any outdoor activity, having the right gear is critical. Spending over four hours a day in the saddle puts good rear protection at the top of the list. GORE Bike Wear’s power trail short is durable enough to last for years. You’ll want a jersey that is loose fitting and three-quarter length, and you’ll find some cool designs at MtnRanks.com. And, as mountain weather can be unpredictable, a GORE Windstopper jacket works great on crisp morning rides.
BEDDING (& CHOWING) DOWN
Park City’s one-stop shop for finding accommodations is Park City Lodging. Their easy-to-navigate website has options from Deer Valley to Park City Mountain and Prospector. Whether you’re looking for a one-bedroom loft for a weekend getaway or a five-bedroom house for a family vacation, you’ll find it here. Hours of riding definitely builds the appetite. Luckily there are plenty of spots around Park City to replenish those calories. The Silver

A culinary must at Deer Valley is the lunch buffet at the Stein Eriksen Lodge. Over indulgence at it’s best, it’s loaded with salmon, steak Benedict, corn chowder and includes a bananas Foster station. Perhaps the best item on their menu is the BLT bloody mary.

Deer Valley Grocery is the ideal spot to load up on a hearty Southwestern breakfast wrap each morning, while Legends Bar & Grill has a variety of pub grub options at the base of the mountain, great for after the ride. If you’re looking for healthy fare, check out Vessel Kitchen’s fine casual dining.
TRAILS FOR ALL
With over 40 million Americans now mountain biking, the sport has been one of the fastest growing of the past 10 years. Yet, there are still many people who love the mountains, but are intimidated at the thought of rushing down a single track trail at 30 mph. That’s why the International Mountain Bike Association created the Ride Center™ designation for large-scale mountain bike facilities that offer something for every rider. The designation is split into gold, silver and bronze, with only four gold level facilities in the United States. Park City, Utah was the first mountain to earn the prestigious gold level designation.

When was the last time you pushed yourself to the absolute limit? Do we really know what we are capable of ? Physical limits are what we immediately think of, but what about our capacity to impact the world? Erik Weihenmayer lost his sight at the age of 13. Despite that, he has spent his life shattering barriers and inspiring others to do the same through his organization, No Barriers USA. He is best known for being the first blind man to summit Mt. Everest. I had the opportunity to hike with Weihenmayer and his guide Skylar Williams this past summer as No Barriers USA has partnered with Coors Light’s Climb On campaign. No Barriers USA helps individuals conquer both the visible and invisible challenges that so many face in today’s world. We hiked the Rock of Ages trail on our way up to the summit of Wilson Peak, rising 14,017 feet in the heart of the San Juan Mountains in Telluride, Colorado. Watching Weihenmayer and his guide make their way through the scree and boulders was like watching a beautiful partnership built over hundreds of miles—and I’m sure a few scraped shins. If you are looking for an opportunity to push your limits in the great outdoors, The Hotel Telluride gives you the perfect opportunity with their ‘Crack a Coors on Wilson Peak’ package that includes a three-night stay, breakfast daily, two 60-minute spa services and a private, guided tour by San Juan Outdoor Adventures to the summit of Wilson Peak. The Hotel Telluride is a great place to bring your pet with you on vacation, as well. Fido is welcomed with treats and a water bowl; pets are considered guests of the hotel. There’s a nightly $25 pet charge, but 10% of all pet fees is donated to the Second Chance Humane Society. Get out and climb your own mountain and break through the barriers that hold you back to make an impact on your family, community and world.

Vermont is ringed by mountains, creating a beautiful setting for this year-round resort town.

The (von) Trapp Family Lodge is only one of many jewels you’ll uncover in this mountain town.
S
towe, Vermont has been on my radar for over a decade because of its reputation as a great winter ski town, and because it is leaf-peeping central during the Northeast's magnificent fall foliage season.
Although we actually visited in June, we discovered that any time of year is the right time to go to Stowe. June is great (with or without kids) because while it’s summer in Texas, school isn't out in Vermont, so it’s shoulder season; therefore, less crowded. What delighted me about Stowe (a town with around 4,000 permanent residents) was the simplicity of an inn that has been run by the same family for generations, the beauty of a ski resort that’s been placed on the national stage, the craft beer scene that can be explored on a cruiser bike and the discovery of a mountainside lodge where the family that inspired “The Sound of Music” has built a destination property where you can “climb every mountain.”
STOWE MOUNTAIN LODGE
For an upscale resort experience, just a few miles outside of town, this is the spot. Part of Destination Hotels, Stowe Mountain Lodge (SML) features spacious rooms in a beautiful setting (including a junior suite option with a kitchen/living room/ separate bedroom). At SML, you’ll luxuriate in a world-class spa, a premium golf course and sundry dining options. Because Stowe Mountain Resort was recently purchased by Vail Resorts, it’s now included in the Epic Pass. (Great news for skiers!) »» Start your day with breakfast at The Beanery in the village just behind SML. After a loaded croissant sandwich and a latte, you’ll be ready for an active day; until it’s time to have lunch at Kirkwoods (in town, near Stowe Country Club), where you can enjoy the view of the course while munching on a light Caesar salad with chicken kebab, a brisket panini or a Carolina pulled-pork grilled cheese. »» Plan a treatment at The Spa at SML for a soothing day during any season. You might have had a facial but I bet you haven’t had an Ultimate Hydrafacial; my skin was buffed, vacuumed and blown to perfection! Have you ever had a hair conditioning treatment with beer included in the hair solution and to drink while being pampered? Choose one of their “Live Like a Local” experiences like the Rock Art Sacred Brew-ty for the softest, shiniest locks while hydrating with local suds. After your treatment, spend some time in the Healing Lodge with a Jacuzzi tub, dry sauna, steam room and Himalayan sea salt scrub shower. »» If you haven’t had enough Vermont beer, have fun with a tasting at the Hourglass lounge in SML. This casual setting is ideal for a flight of local brews. Line up a Green State lager from Zero Gravity Brewery, a Switchback amber ale brewed in Burlington, a Fiddlehead single IPA and a double IPA from Rock Art in Morrisville, Vermont. OUTDOORS & MORE
Hit the links on the stunning Stowe Mountain Club golf course, which will challenge your game. Holes 13-16 on the back nine are particularly challenging. After a round, enjoy lunch at The Cottage. Stowe is riddled with streams and rivers loaded with trout. Novices and experts alike can maximize this unforgettable fly-fishing experience with an experienced guide from Catamount Fishing Adventures. Solstice at SML offers dinner with premium cuisine and innovative flavor profiles. The Chef ’s Table is a great way to kick off or wrap up a memorable trip. —Pete Frank Continued on page 46

STOWEFLAKE MOUNTAIN RESORT & SPA
Stay close to town at this AAA Four-Diamond two-story inn, where the focus is on relaxing; read a book by the pool, walk the fitness course, play their 9-hole chip-and-putt course or Stowe's only squash court, and enjoy the sculpture fountain and origami gardens in the courtyard. Founded by Stuart and Beatrice Baraw, the resort is currently run by their sons, who live on the property. You’ll notice the warmth of the hotel upon arrival (even if you’re not there in winter when the fireplace is lit). They have 15 one-bedroom suites, and the regular guest rooms are sizable. Spend at least a half-day at the Spa at Stoweflake, the crown jewel of the property. Ranked as one of Condé Nast Traveler’s “Top Spas,” the aqua solarium features the Bingham Hydrotherapy waterfall tub at 97 F next to the Hungarian mineral soaking tub at 101 F. The steam room, dry sauna and indoor hot tub are all worth a visit. With over 30 treatment rooms, you can choose from a wide variety of services, such as an après-ski massage (even if you haven’t been skiing) or an ashiatsu massage with the therapist hanging from the ceiling. At the property's restaurant, Charlie B’s, the atmosphere is Irish pub but the food far surpasses the scene. Their house-made kale hummus comes with an array of veggies and pita bread and you’ll want to begin every dinner with this treat. You might also choose to enjoy a bowl of New England clam chowder or Vermont Cheddar cheese curd poutine. I recommend pairing any of their meals with a crisp chardonnay or bold cabernet. STOWEFLAKE.COM
CAPTION??
Vermont is known as the Green Mountain State. No matter the season, coming from Texas, you’ll likely want to spend most of your time outdoors.
GET OUT! (Don't forget the bug spray.)
While staying in town at Stoweflake, use their complimentary bikes and enjoy the beautiful Stowe Recreation Path, a paved path that runs the length of town, through parks, over streams and provides easy access to pubs offering Vermont craft beers like Idletyme Brewing Company, with a shaded back patio, and Tap 25, one of the new kids on the beer block. From Stowe Mountain Lodge, drive up the road and hike Sterling Pond Trail. The trail is a little over a mile up, for a total of 2.25 miles, with a fairly steep incline of steps; as the bellman at Stowe Mountain Lodge said, “About a mile on the StairMaster.” Sterling Pond at the top of the trail is definitely worth the hike.

Spend at least a half-day at the Spa at Stoweflake, the crown jewel of the property.
Trapp Family Lodge sits on 2,500 acres primed for mountain biking for every level and hours of hiking through forests and meadows. The von Trapp family found this spot in Stowe after moving from Austria and purchased it because it reminded them of their homeland. After touring the U.S. as the von Trapp Family Singers, they settled here. The lodge and surrounding property is still run by the youngest son of the von Trapp family (Johannes) and his kids. I enjoyed the serenity and, for the full effect, listened to “The Sound of Music” station on Spotify as I hiked the trails. If you’re mountain biking, you don’t have to worry about mixing in with hikers because there are so many trails on property. Ask the Outdoor Center experts about trails not on the printed map, like Growler, which was the most fun. After a day of hiking or mountain biking, stop at the new Trapp Family Lodge Bierhall for a meal paired with their craft pilsner beer. One of their many winning combos is the Johannesburger sausage with their helles (from the German word “bright”) golden lager. TRAPPFAMILY.COM

The well-appointed rooms at The Sherry-Netherland are individually designed, and provide a welcome sanctuary after a full day’s adventures in New York.
The historic architecture of the boutique hotel is exemplified in the exquisite painted ceilings in The Sherry-Netherland’s lobby.
Located at 59th and Fifth Avenue, The Sherry-Netherland’s elegant tower graces the southeast corner of New York’s Central Park.
We’re at The Sherry Experience Luxury Near New York’s Central Park By Samantha Cook
Being able to say, “We’re at The Sherry” has long been an expression of privilege. The Sherry-Netherland hotel celebrates 90 years of sitting majestically on the southeast corner of New York’s Central Park; one of the hottest pieces of real estate. The original 1920s art deco vibe still pervades the hotel (The posh lobby's painted ceilings are so very Insta-worthy!) As there are (permanent) residents in the building, there are old-fashioned mail chutes on each floor; however, everything about The Sherry-Netherland is consistent with an upscale hotel. From the well-appointed rooms, each designed uniquely, to the luxury services offered by the concierge, to the views of nearby Central Park (literally right across the street), every amenity is on point. Located at the corner of Fifth Avenue and 59th, the Sherry-Netherland is right in the
heart of New York City’s Manhattan. Dine at upscale Harry Cipriani next door, shop on Madison Avenue or the famed Fifth Avenue, and see a Broadway show. When you return from your adventure, indulge in the historyfilled elegance of The Sherry-Netherland.
of high-class hotels. There are only three hotels in New York that still offer this vintage touch of class. (A piece of trivia: the adorned wooden walls in the elevators are said to have come from a Vanderbilt mansion older than the hotel itself.)
My room had plush carpeting, top-notch linens, ample space (a luxury for NYC), a leather-trimmed desk and a marble shower (the nicest I’ve seen in Manhattan). What I enjoyed the most were the fresh flowers, truly a treat in today’s hospitality. They were placed not only in the room, but also in the bathroom. A delightful touch!
The Sherry is a pet-friendly hotel. If you book a “Lap of Luxury Pooch Package,” your room will be dog-ready when you arrive, complete with food and water bowls, a dog bed, and natural canine treats. Your furry friend will be treated to a BarkBox, and a certificate for a month's subscription. Dog-walking services are also available.
Each room comes with a complimentary box of Louis Sherry chocolates, L’Occitane bath products, and a medicine cabinet full of toiletries (not to mention there’s actually cabinet space in the bathroom and a highquality hair dryer). There is also complimentary Wi-Fi, sparkling water and sodas.
I highly recommend you take advantage of strolling or jogging through Central Park; grab lunch at The Plaza Hotel's food court, accessible from 59th Street (catty corner from The Sherry), and dine at Rue 57 for breakfast and Serafina’s for dinner. Those, plus a visit to The Sherry-Netherland, will create an unforgettable trip to New York City.
But all of this fades in comparison to the fact that The Sherry-Netherland still has elevator operators; a throwback to the Golden Age

Kauai
The Unadventurous Need Not Apply
By Susie Oszustowicz
While it could bear many beautiful associations, Kauai is known as the Rejuvenating Island.
The island doesn’t have a single building higher than a coconut tree can grow, which means it’s the perfect place to relax. Leave the problems from your job on the 19th floor of a nondescript office building in some city somewhere behind … at least for a few days. The island’s merits seem endless. We’ll admit, all Hawaiian islands are amazing, but, even as Hawaiian islands go, Kauai has a charm all its own. Thanks to its fifty miles of white sand beaches, canyons, Hawaii’s only navigable rivers, and more adventures that you can tackle in a week, it will keep you on your toes. (Or on your back, if you are a beach bum.) The adventures found on Kauai can occupy even the thirstiest of adventure seekers. From leisurely snorkel trips to a 4,000-foot zip line, there’s truly something for everyone within the shores of Kauai.
Zipline with Outfitters Kauai
Boasting the longest zip line on the island, this tour gives you the chance to fly over plunging valleys and dive into jungle watering holes. This is not an experience for the weak of heart, but it is for the weak of logic. (Because hurling your body 4,000 feet down a mountain takes at least a little craziness.) Countless movies shot on Kauai were filmed on Kipū Ranch, and they’re eager to show you all the locations. You’ll have the chance to swing on the rope that helped Dr. Jones escape from the natives in “Indiana Jones and the Temple of Doom,” see the sacred, private beaches fought over in “The Descendants,” and drive an ATV across the field where dinosaurs stampeded in multiple “Jurassic Park” movies. That’s not to mention stunning views of the island and the thrill of powering around in an ATV. Ages 7-17, $89; 18+, $135. KIPUTOURS.COM

While there’s plenty to get your adrenaline pumping, Kauai also offers incredible cuisine, relaxing beaches, luxurious resorts, and healing spas. But, the tables have turned in Los Cabos. Since the Corridor, the 18-mile highway connecting Cabo San Lucas and San Juan del Cabo, was completed, grand resorts have shown up to beckon more than wild coeds. Westin Grand Cayman Seven Mile Beach Resort sparkles with glitter and glam Grand Cayman and its Seven Mile Beach has long been a Caribbean destination with name recognition, and thankfully has been spared the 2017 hurricane season (as of writing this article). The Cayman Islands consist of Cayman Brac, Little Cayman and Grand Cayman (the locals pronounce it Cay-man). The islands sit almost directly below Havana, Cuba, in the gloriously blue Caribbean Ocean, and to the east of Belize (also featured in this issue). Grand Cayman has the most beautiful water I’ve laid eyes on, every color of blue in the Crayola crayon box. It is what brings tourists to the island, hence the popularity of water sports. The first time I swam in the ocean there, in one glance I saw folks doing eight different water sports: hydro flying (a hoverboard with water propulsion behind a boat), jet skiing, boating, fishing, canoeing, tubing behind a boat, parasailing, and a group going out to snorkel. Scuba diving is also popular. It’s the deepest water in the Caribbean, with depths over 25,000 feet offshore; and with 365 dive sites among the islands, you could dive in a different location every day of the year! Put yourself in airplane mode and spoil yourself with several days of sand, surf and sun on the number one-rated beach in the world (and a favorite of celebs like Justin Bieber and Taylor Swift). The island is only 22 miles long, with a population around 60,000 (approximately half are expats). They strive to keep this island experience intimate and special, not aiming to attract hoards of tourists, but to welcome the ones who really want to appreciate what this stunning island has to offer year-round.

Grand Cayman holds something for every kind of traveler:
For the Lady of Leisure
Stay at the Westin Grand Cayman Seven Mile Beach Resort, which boasts the only view of the ocean from the main street (through the lobby). At this five-story resort, built on the most attractive section of the beach (Seven Mile Beach is only about 5 1/2 miles long), you’ll live in the lap of luxury. The resort just completed a $50 million renovation, taken all the way down to the concrete and built up to its current brilliance. The crisp white (beach) motif of the rooms and the famous Westin heavenly bedding make for a lovely setting. (Not to mention the nightly rum cake left by your bed.) No vacation is complete without a spa day. The resort’s Hibiscus Spa offers typical amenities of steam room, sauna, hot tub and relaxation lounge (all of which are complimentary to guests). Their Herbal Therapeutic Massage Ritual is “just what the doctor ordered.” The therapist uses a winning combination of gentle stretching, deep tissue massage and heat therapy provided by large cotton netting balls, filled with herbs like lemongrass, turmeric, galangal, ginger and camphor. I found this 90-minute massage to be meditative medicine. (Pro tip: Don’t get sunburned beforehand; the combo of heat and firm pressure would be tough to take with a burned body.)

Stingray City is a popular tourist outing where boaters walk into the water, filled with stingrays.

For the Water Worshipper
Because the ocean is the highlight of Grand Cayman, make sure you spend as much time as possible doing water sports and aqua tourism. Westin Grand Cayman has a Red Sail Sports on property, making it uber-easy to rent equipment and book tours. You can take out a stand-up paddleboard or Hobie Cat sailboat, or try one of these sun salutations: Waverunner Snorkeling Safari Mix two of the most fun water sports in this excursion: jet skis and snorkeling. Hop on your Waverunner and ride over to the first snorkel spot, many of which are fairly shallow and full of coral reef brimming with brightly colored fish. After about 20 minutes of snorkeling, you hop back on your WaveRunner to ride over to the second spot. Ours was called Cheeseburger. Why, you ask? Because there’s a Burger King on the shore nearby. ($140/person) Perfect for an afternoon in the sun, a catamaran boat ride called the Stingray Sandbar and Reef Sail also combines two water sports, with a bonus: boating, snorkeling and a stop at the famed Stingray City where you can hold a soft, slippery stingray. Don’t worry, they provide plenty of direction and the stingrays are not harmful. Believe it or not, cradling one is a calming experience. You’ll also stop to snorkel near a coral reef with a mini shipwreck and the most colorful fish. ($95/ adult)
For the Foodie Fanatic
At Westin Grand Cayman you don’t need to go offsite for delicious dining. Start your day with breakfast at Ferdinand’s, which fea-
tures a superfoods menu of healthy items or you can help yourself to the morning buffet. I highly recommend the Green Breakfast Burrito, a spinach tortilla filled with eggs, turkey sausage, black beans and cheese. Pair with a cappuccino. Dinner at the resort’s Beach House is a treat! The executive chef is from the Philippines and has a kitchen full of artisans from other countries, which makes the Beach House a virtual melting pot of culinary culture. Start with the East End Garden Kale Salad (takes kale salad to a whole new level) or a savory jumbo lump crab cake, paired with a chardonnay. Then move on to Tandoori Caribbean Snapper or the Organic Farro Risotto, a creamy creation. If you’re at the resort on a Friday night, you’ll feast at the weekly beachside BBQ , a buffet with an array of salads, local seafood, stir fry, and fan favorites like mac-n-cheese.
For the Beach Bum
Westin Grand Cayman, a premiere resort owned by Dallas-based Fortress, was erected by 90,000 square feet of beachfront sand, a prime location for their “bird nest” loungers facing the ocean, swinging chairs, beach cabanas (love the tubs of water to clean off sandy feet), and bright yellow floats you can rent for US$10/day. And, if you want to start out your day with a little light activity, try the 8 am beach yoga or a brisk walk down Seven Mile Beach. (If you head left, it’s approximately 30 minutes to the turnaround point.) Continued on page 56

If you’ve had your fill of the sand, I recommend grabbing a shady spot by the pool, reading a novel while in the water and ordering lunch from poolside Tortuga’s. Enjoy a Caybrew or White Tip local beer paired with a West Indies jerk chicken wrap or Caesar salad topped with fresh shrimp. Book + beer + basking in the sun = bliss.
For the Local (Culture) Lover
Camana Bay, a new-ish upscale shopping and dining destination, is a short ride from the resort. It’s definitely worth a visit for two very important reasons. First, to enjoy wine and tapas at West Indies Wine Company. They have 80 wines in a vending machine style (Napa Technology’s state-of-the-art wine machine stations). You can

choose from three different sizes from a variety of prices. (A 5 oz. pour ranges from $4 to $46 a glass!) Next, have dinner at Mizu, an Asian bistro that sits waterfront. Dine inside in their stunning dining room or on the waterfront where you can have a front row seat to the Teppanyaki hibachi-style grill, where a chef will toss and turn your selections in front of you. I enjoyed the best grilled chicken and vegetable stir-fry to date, with fried rice on the side. Pair this with a local beer, bold cabernet, crisp chardonnay or fruity cocktail. Dinner and a show! Pro Tip:
When you leave Grand Cayman to fly home, be aware of their specific international TSA restriction when it comes to liquids. You’ll be required to take all liquids (even less than 3 oz. bottles) out of your carry-on. All of these must fit into one Ziploc bag. You won’t be allowed to take any more than that with you. It includes sunscreen, perfume, facial lotions, toothpaste, lip gloss, and any other form of toiletry.
May through September is low season, when you’ll avoid the crowds of snowbirds who flock to this tropical paradise. (October—April is high season, with December and January the busiest months.)

The Emerald Isle: Ireland Lives Up to its Reputation By Marika Flatt

When I imagined a trip to Ireland (to trace my Irish roots from my namesake paternal grandmother), visions of pubs filled with Gaelic music and fun-loving pint-drinking folks, green grassy hills and fluffy sheep crossing the lane filled my head. The Emerald Isle really does offer all that, and more, for Texans looking for a friendly, peaceful European vacation. You might not think of Ireland being an island; but it surely is (I’ll never forget the sunrise over the Atlantic Ocean as we flew over the water to land in Dublin. The Irish say, “It’s a small island; you can get around pretty easily.” However, I recommend focusing your time in a few areas versus trying to see too much in one visit. You’ll get more immersed in the local culture and not feel like you’re spending your whole holiday in the car. You’ll want plenty of time for craic (pronounced “crack” and meaning fun and good times in Irish.)
Dublin Most international flights go into Dublin, so it’s a great place to start your visit. It’s one of the most literary cities in the world (where many of the greats like James Joyce, William Butler Yeats and Oscar Wilde lived when they wrote their classics) and listed by TotallyMoney.com as the second most cultural city in the world. Get ready for a “lay in” (sleeping late) where celebrities—like Bill Clinton, who was there the week before us—stay while in Dublin, at the five-star Merrion Hotel. You can’t beat the location or their lovely customer service, fit for a Texas duchess. Built in 1761, The Merrion sits across the street from the Parliament building and was the childhood home of Arthur Wellesley, the first Duke of Wellington. Its four Georgian-style homes combine into one fine hotel, boasting large rooms with crackling fireplaces, the Tethra Spa (complimentary to guests) and a fascinating Cellar Bar downstairs with exposed brick walls.
Works of art from The Merrion’s private collection hang throughout the hotel, which occupies four lovingly restored Georgian buildings in Dublin’s city center.

The Merrion’s secluded, intimate No 23 cocktail bar has the feel of a private club.

Make sure to experience their afternoon Art Tea, where you’ll be treated to two courses of masterpiece proportions, first savory with tea sandwiches, then sweet, with desserts fashioned after actual art on the hotel’s walls, paired with various teas and coffees of your choice; a meal unto itself. Delicious Dublin Dining
Historically, this spot was popular with writers, poets and musicians.
THE PEPPER POT
The menu pairs one, two or three courses with a glass of wine for a reasonable price. You can’t go wrong with dishes like wild garlic and roasted almond potato cake, smoked drumlin (a dense cheese), oyster mushroom, shallots, spinach and warm cherry tomato chutney. Have a decadent lunch and then go downstairs and peruse a book to buy while your food digests.

With a view of Ha’penny Bridge and a charming old bookshop on the first floor, take the winding staircase to the second floor for handcrafted artisanal meals paired with craft ales and wines listed on a blackboard.
Sister restaurant to The Winding Stair, next-door and equally literary in its history (James Joyce worked here), The Woolen Mills is known as “an eating house.” Sitting at a corner table, enjoying a starter of avocado hummus with blue chips and then a pan-fried hake (flaky fish) with saffron aioli, paired with the perfect chardonnay, I felt I was soaking up Irish history and culture at its best. Start here with a delicious and hearty breakfast for your busy day. Owner Marian has created a charming café in the bustling Powerscourt Centre, a shopping area in the heart of Dublin that houses boutiques, restaurants and bars. The Pepper Pot is part of the indoor atrium of the restored building. For a lighter breakfast, try a scone and cappuccino. For a more filling feast, order the fresh-baked bagel with hummus, red pepper and cream cheese.
The Wooley Wings were a hit, as was the pork belly mac ‘n cheese with bacon marmalade. You’ll want to enjoy being in the moment at this lovely eatery right on the River Liffey. After dinner, head upstairs for a cocktail at The Yarn with hip, knowledgeable and friendly wait staff.
COPPINGER ROW
Don’t leave Dublin without dinner at this adorable Mediterranean/ Italian café. Near Powerscourt Centre, the street is abuzz, so dine outdoors if possible. Start with a cocktail or a glass of bold cabernet and fall in love with the spinach and ricotta gnocchi and burrata (like a creamier mozzarella) with rocket pesto. Then, savor the wild mushroom in filo pastry with asparagus and pecorino or their meatball linguine. End with gingerbread crumble with banana gelato. This is a meal you will not soon forget.
Don’t leave Dublin without enjoying dinner at the adorable Coppinger Row.
Soak up Irish history and culture at its best during a meal at The Woolen Mills restaurant.

The Guinness Storehouse is Ireland's most popular tourist attraction.
Doing Dublin »» Take a walking tour to learn the capital’s rich history, including the 1916 rebellion, where St. Valentine’s remains are kept, about Bram Stoker, author of “Dracula,” who worked in Dublin Castle for 11 years, and about the spire monument. »» Soak in a tour of the Guinness Storehouse, where they signed the lease in 1759. Tour Dublin either by foot or on a distinctive Hop-On, Hop-Off bus to learn the city’s rich history.
Ashford Castle sits on the shores of Lough Corrib, west of Dublin, and is one of Ireland’s most romantic castle hotels.
Ashford Castle Typically on Top 10 lists of best hotels to visit worldwide, Ashford Castle is on-point in every way, from its colossal stone beauty to its antique interiors. Each of the 83 guest rooms is uniquely decorated, reminding guests that this castle has had a total of 10 owners in its history. Built in 1228, with Lough (lake) Corrib behind and a river moat in front, today Ashford Castle is the backdrop for a myriad of estate activities, such as golf (overnight guests play free at the nine-hole course), archery, horseback riding, tree climbing, cycling, a falconry program and a host of water activities. And, kids have access to Lego room service from the Lego Butler. From the grand Oak Hall (which houses the impressive library), to the drawing room for afternoon tea, to the Prince of Wales Bar, each room is exquisite. Lush carpeting, tapestry walls, solid wood antique furniture and elaborate chandeliers await in each room.
In our brief (less than 24-hour) stay, we had the pleasure of sampling the complimentary bikes during a flurry of sunshine while touring the estate and its gardens, relaxed in the mesmerizing spa (the Tree of Life mural along the relaxation pool has to be seen), watched a movie in the 32-seat cinema (loved the complimentary candy bar), and enjoyed breakfast in the George V dining room. A highlight of our regal stay was dinner at Cullen’s at the Cottage, a charming thatched cottage across the fairytale bridge. One of the best cocktails in Ireland is poured here, the Salted Caramel Crush (salted caramel vodka, apple juice and ginger ale). They also feature an extensive selection of regional taps and exceptional wines. With its casual setting and relaxed dress code, you can enjoy traditional fish and chips or the signature chicken Peri-Peri, that sends its mouthwatering aroma wafting throughout the dining area. Their shuttle will drop you off on beautiful Achill Island and you’ll ride the Great Western Greenway (formerly a train track that was turned into a bike path seven years ago for ages "6-60") sans traffic and with wide Irish views. The shuttle can pick you up at various stops along the Greenway, back towards Westport.
Just outside Westport, a town that is 250 years old, you'll find Croque Patrick in Murrisk. The mountain is said to be where Saint Patrick exiled the snakes from Ireland, and devout Catholics make an annual pilgrimage there. It's also open to day hikers. Right across the street, find a moment for the heart-wrenching monument to the Irish famine.

Galway Make time to visit the cultural college town of Galway on your way back to Dublin, where you’ll be entertained by buskers in The Latin Quarter district. We devoured fish and chips with a pint at The King’s Head Bistro, after warming up with a bowl of chowder and plate of risotto.
Dunboyne Castle Take the motorway towards Dublin the day before you fly out and stay just outside the city at Dunboyne Castle, a refurbished castle in the lovely countryside of County Meath. FLlano J Lodi N Exploring a Driving Force of the American Wine Industry By Melissa D. Corbin
The High Plains are responsible for more than 80% of Texan wine grapes, and the Hill Country American Viticultural Area (AVA) is the largest Texan appellation. By comparison, Napa and Sonoma (combined) could comfortably fit in Central California’s Lodi AVA. Elevations range anywhere from 600 to 3,000 feet above sea level in the High Plains AVA, with Lodi's falling just under 50 feet. It’s the hot summers and mild winters, low precipitation and welldrained soil these viticultural wonders share in common. Little wonder that winemakers like Fredericksburg’s Narrow Path Winery source from both the Texan High Plains and Lodi, California. More than 750 growers and 100,000 acres of vineyards in production make Lodi, just under an hour’s drive from the Sacramento International Airport, one of California’s largest appellations, where more than 80 boutique wineries hang their hats. Like the High Plains, Lodi is a workhorse of the industry. And, while Texan pioneers such as Dr. Clinton “Doc” McPherson revived post-prohibition wine making, Lodi contemporaries painted with similar shades of red. In the early days, Llano Estacado Winery came onto the scene as a true “Lone Star.” Co-founder and viticulturist David Lucas of Lucas

Winery specializes in estate chardonnay and zinfandel wines that have been organically grown and hand-harvested. Lucas cherishes the educational perspective his vineyards offer. Whereas Doc was the first Texan to grow sangiovese, Mettler Family Vineyards were one of the first to produce French clones in Lodi. These days, the 800-acre vineyard produces organic, estate-grown cabernets, zinfandels and petite sirahs. Cousins of the Mettlers and just up the road, Jorja Lerner says that “in stubborn German fashion, it took us 99 years to start making wine” at Harney Lane Winery. She insists that love, laughter and family are the three most important ingredients in their 100% estate-grown wines. Even though sangiovese may have been Doc’s first love, he also once tried to grow Spanish varietals smuggled from Spain in the wheel of a student’s Volkswagen. The folks at Bokisch Vineyards probably could share similar tales. Sustainable, organically grown Spanish varietals are their specialty. Pack a picnic, grab your favorite Bokisch bottle, and sit under one of the beautiful old oak trees on property. If picnicking isn’t your speed, head on over to Michael David Winery for their green chile chicken enchiladas at the winery’s on-site restaurant, The Farm Cafe. You’ll swear you’re back in Texas.

Las Terrazas on Ambergris Caye is
Unbelizable
Until 1981, Belize was a British colony of
scattered fishing villages dubbed “The Mosquito Coast” by long-gone pirates. Things changed after independence, and locals quickly realized the potential of this Caribbean jewel. There’s even a local story that Madonna wrote her hit song “La Isla Bonita” on Ambergris Caye. Noticing its recent increased popularity, I needed to see it to “belize it.” The five-star Las Terrazas Resort (LTR) came to life nine years ago on the island of Ambergris Caye (pronounced “key” in Belizean Creole). With up to half of their customers coming from Texas, and owned by Houstonians, this Central American resort needs to be on every Texan’s travel list. General Manager Julian Burton says they are “in the business of delivering dreams.” In high season (mid-November to mid-June), the guest to employee ratio is 2:1 and in low season 1:1. Most staff are Belizeans, ready to greet you with a smile and tips on local culture. Arriving at the LTR dock, you’re greeted with a cold cloth and rum punch as they whisk your baggage away. Something I’ve not seen before, the outdoor check-in includes a neck and shoulder massage. I immediately loved the laid-back style of the resort (the dressiest you should pack is shorts and flip-flops). »» There are 35 units on the boutique property, ranging from 1 to 3 bedrooms. The “sea houses” range from oceanview 3 bedroom/3 bath for up to $800/night to junior suites for as little as $199/night. The units are fabulously spacious, causing some guests to just enjoy their time in their own villa. Bedrooms are en-suite and each unit has a washer/dryer, which can come in handy with the Caribbean humidity.

Enjoy a power bowl topped with grilled chicken or a club sandwich and pair with a tea or a glass of wine. This is Texas Y'All: The Lone Star State from
x A to Z x Misha Maynerick Blaise’s new book bursts with Texan pride
D
By Judy McDonough
ecidedly and terrifically quirky, This is Texas Y’All by Misha Maynerick Blaise celebrates Texana but is not afraid to laugh a little, too. The delightful book offers a whimsical trip through Texas culture and history.
Austin author Blaise’s entry for "B” includes “breakfast taco” (dubbed “the most critical taco of the day”), “Blue Lacy” (state dog breed), “Bluebonnet” and “Buckyball Molecule” – the state molecule—really. (A buckyball – to save you a trip to Wikipedia – is a form of carbon that is made up of 60 atoms, and shaped rather like a hollow soccer ball.) That’s just one of the cool little facts contained in the pages, complete with colorful illustrations. Blaise is a rising star in the art world; her work has been featured in The New York Times Style Magazine and at such places as Urban Outfitters, West Elm and Hyatt House Dallas. Bor n in Canada and raised in the Colorado Rockies – and with a degree in Middle Eastern Studies - Blaise brings a global, whimsical touch to her work. Earlier this year, Blaise’s This Phenomenal Life earned high praise from Publishers Weekly, where they declared, “…older children as well as grown-ups may enjoy this lovely graphic book, which offers a sweet-spirited reminder that all human beings are more alike than different, and that the entire cosmos is interconnected in ways we’re only beginning to comprehend.”

The same spirit of inclusiveness permeates This is Texas, Y’all. Blaise notes that while researching the book, “I discovered an incredible side of Texas history that has been largely obscured by Hollywood narratives of the ‘Old West’ that dominate the American land the world’s imagination.” She points out that “Texas is a place of beauty and tragedy and a site of complex overlapping histories. Black, Asian, Hispanic, European and Native people of many tribes clashed in countless invasions and bloody battles, but they also forged intimate allegiances. The unique and cherished elements of all things Texan emerged from the cultural convergences of these many people.” That’s why, under “C,” the author reminds you that while the Chuck Wagon is the official state vehicle of the state, you should also know that El Paso – where the first Chinatown in Texas was established – was once known as “the Chinese mecca of the Southwest,” and that, in 1731, 56 residents of the Canary Islands settled in what would later become known as San Antonio. Their descendants live on in the River City today. This is Texas Y'All: The Lone Star State from A to Z gives the reader unusual ways of looking at Texas history and culture, and is bursting with Texas pride. It’s Misha Maynerick Blaise’s love letter to Texas. MISHABLAISE.COM

THE 50 GREATEST PLAYERS IN DALLAS COWBOY HISTORY New book aims to end the debate — or at least make it more interesting By Judy McDonough
There are some debates that Texans may never settle: UT or A&M, Salt Lick vs Franklin’s, where traffic is the most heinous... So, it’s a brave man that will wade into any topic dealing with the Dallas Cowboys – and that man is author Robert W. Cohen, with his new book, The 50 Greatest Players In Dallas Cowboy History (Lone Star Books, Sept ’17). Cohen, a sports historian, is indeed a fearless writer, having already released “50 Greatest” books on such iconic sports teams as the St. Louis Cardinals, the New York Yankees, the New England Patriots and others. Cohen starts his book by admitting the obvious: that selecting the 50 greatest players ever to perform for a team with the rich history of the Cowboys presented quite a challenge. “Even after narrowing the field down to a mere 50 men, I still needed to devise a method of ranking the elite players that remained,” he points out. But then he gets into the real questions: “How does one compare players who lined up on opposite sides of the ball with any degree of certainty? Furthermore, how does one differentiate between the passrushing and run-stopping skills of players such as Bob Lilly, Randy White, and DeMarcus Ware and the ball-hawking and punt return abilities of a Mel Renfro or Deion Sanders? And, on the offensive end, how can a direct correlation be made between the contributions made by Hall of Fame lineman Larry Allen and skill position players such as Roger Staubach and Drew Pearson?” Indeed.
rules that have allowed offensive stats to explode, while limiting the defense. Add to that the contributions each player made to their respective team, and the fact that Cohen only considered a player’s performance while wearing a Cowboy’s uniform (sorry, Drew Bledsoe) – and, well – you’ve got yourself a Top 50. So while many of the names in that hallowed list - Emmitt Smith, Tony Dorsett, DeMarcus Ware, Ed “Too Tall” Jones - won’t be a surprise, perhaps their ranking will be. Rich with commentary, biographical details, quotes, highlights and achievements, each legendary player ranked in The 50 Greatest Players In Dallas Cowboy History is thoroughly given his due. Cohen even provides a healthy list of “Honorable Mentions” at the end of the book – so, more than likely, your favorite player is noted somewhere in this must-have book for Cowboy fans. So will Robert W. Cohen’s The 50 Greatest Players In Dallas Cowboy History end the debate surrounding the best players to ever don a Cowboy’s uniform? Not at all – but it sure makes the discussion a lot more fun. GLOBEPEQUOT.COM
The author tirelessly digs through stats, MVP honors and Pro Bowl selections amongst all players, as well as each player’s ranking among other Cowboys – all the while keeping in mind the changes in NFL
