incorporate this style into our line-up!” Alli said. “All the looks created for our menu can be interpreted many different ways, and are classics that never go out of style. I believe the same is true of the Dirty Martini. There is definitely a time for a perfectly polished blowout, but I think we all have a little Dirty Martini in us, too!”

“Highland Park has been a very special shop for us,” says Operation Partner of Drybar Dallas Sharon Williams. “Not only is it a wonderful location (plenty of parking in front and back of the shop and a convenient distance from downtown) but with Highland Park’s small town feel, a lot of our clients know each other because they are either neighbors, work together or have been in PTA together, so there’s a great sense of community here, too.”

Take the shop home with you! Not only is Drybar the blowout chateau, it’s a haven for hair care products like the Three Day Bender (curling iron), Happy Hour Blowout Shampoo and the Show Cap for the morning after (to keep those locks intact one extra day).

Drybar’s style list reads like your favorite cocktail menu: the Cosmopolitan (lots of loose curls), the Straight Up (simple and straight), the Southern Comfort (big hair with volume), the Mai Tai (messy and beachy), the Manhattan (sleek and smooth) and for the little ladies, the Shirley Temple. Just in time for the holidays, Drybar is launching a new style: the Dirty Martini.

“We find that most of our clients love us for not only the beautiful blowouts, but also for the convenience,” Shannon said. “Most of our regulars - or barflys, as we like to call them - book appointments using our iPhone app. They love that we are open seven days a week and offer appointments early in the morning and late in the evening (when traditional salons are closed). A client once told me that our Highland Park staff are Dallas celebrities - she was at a dinner party and the women were discussing which stylists they see at Drybar!”

“Messy, tousled ‘undone’ hair has become such a requested look (and one of my personal favorites!), so I was anxious to

DALLAS MUSEUM ART OF

Biker Style By Mike Kordell

Continues to Impress Visitors By Kayla Elliott

Bicycles are both practical and recreational; and while style may be a secondary, if not tertiary, consideration for most bike manufacturers, rarely has it been a point of focus - until now. Mozie Bicycles, founded in 2011, with initial product lines launching just this year, designs and builds chic, top-of-line bicycles inspired by vintage and European styles. Mozie has created an impressive union between form and function, which embodies the idea that it’s the journey, not the destination, that matters most.

While their collections consistently expand and change, the DMA presents patrons with over 22,000 pieces. From paintings to sculptures to tapestries, from world-famous artists to pieces by unknowns, DMA has a collection that sparks interest across the board. Running through February 8, Bouquets: French Still-Life Painting from Chardin to Matisse will showcase floral still-life painters like Paul Cezanne, Gustave Courbert and Edouard Manet. This will be the first major American exhibition to consider the French floral still-life across the 19th century. For a taste of a different texture, Modern Opulence in Vienna: The Wittgenstein Vitrine explores the conservation effort, context and history of this masterwork’s design and fabrication, iconography and provenance. The exhibition also presents new perspectives on Carl Otto Czeschka and the important patronage of the Wittgenstein family. This exhibition opens runs through October 2015. Whether you want a tour with a docent, a self-guided exploration or a walk through with their smart-phone app, the DMA should be on your list of places to visit. Spend a couple of hours or a whole day taking in all the amazing pieces in the collections and the special exhibits. General admission is free every day and includes viewing the museum’s collection galleries and most exhibitions. Visit DMA in person at 1717 North Harwood or online at dma.org.

One look at a Mozie bike and it’s clear that no detail has been overlooked and quality is paramount. From the classic steel frame and Australian leather grips on the “Marc” to the chrome wheel-powered headlamp and oversized wicker basket on the “Carolina,” whatever your individual taste, there’s a modish and sophisticated option that’s sure to strike your fancy. With a product of this caliber, you’d expect nothing less than a courier service that delivers your chic new ride direct to your doorstep. Upon purchase, Mozie contacts the customer to schedule a delivery time, typically within two to seven days of order placement. You can almost imagine the courier donning white gloves and a flatcap, echoing the vintage class of the bike itself. If you’re looking for a stylish new mode of transport, look no further - Mozie Bicycles delivers sophistication on two wheels. Visit online at moziebicycles.com

The Dallas Museum of Art has continued to be a staple in the Dallas art community since the early 1900s. The DMA exposes visitors to cultural heritage through art both locally and around the globe. Their mission is to “reveal the insights of artists from every continent over the last 5,000 years.”

Mozie’s founder Darren Buck is an international businessman who has traveled the world over. His preferred method of transportation when exploring new places has always been the bicycle, as he believes that it’s the best way possible to become truly immersed in one’s surroundings. Alleyways, backstreets and neighborhoods all offer experiences that can’t be found on a guided tour or a double decker bus.

Maria & Kyndal’s Boutique

aria & Kyndal’s Boutique began in Austin five years ago. After successfully reaching the Texas clientele at the Westlake store, the boutique added a Lakeway location. As of this year, The Duchess (its sister store) launched to cater to their customers with the same great customer service and products at a lower price point. Maria & Kyndal’s Boutique offers a range of items from low to high end and is able to serve young teenagers to grown women, truly making it a generation affair. The boutique is a mother-daughter collaboration, providing women of all ages a place to shop this holiday season. Maria Harrington has been in the fashion industry her entire life. As a teenager, she started sewing and designing, transitioning into a job with a couture fashion designer while in college. She began personal shopping 16 years ago in Memphis, Tennessee, creating outfits for celebrity clientele along the way. It only made sense for her to progress to boutique owner after a background in the industry from designing to buying. At the boutiques, you’ll see framed photos of some of the names she has worked beside. In 2009, after overseeing a successful Memphis boutique, Maria relocated to Texas with her husband, son and daughter. When the family came to Austin, Maria & Kyndal’s Boutique opened its doors. With a long history of personal shopping, Maria decided to scale back and instead focus on boutique shops. Kyndal is her daughter, who was introduced to the fashion world at the ripe age of six. Together, the two run the boutiques with the goal to serve three generations of women: daughters, mothers and grandmothers.

Maria has enjoyed shopping for the unique Austin customer base. Her staff is committed to growing the business here in Texas. As a result, one location has multiplied into three boutiques in Austin: two Maria & Kyndal’s Boutiques and the newest venture, The Duchess. The mother-daughter duo work together as family and as close friends. As a result of their relationship, they both are excited when other mothers and daughters come to shop together as a family. Maria & Kyndal’s Boutique prides itself on outstanding customer service and the ability to serve each and every woman. All stylists are trained under Maria’s wing to have the ability to guide your shopping experience. The team has the same personal shopping skill when serving clients that Maria has used for over a decade. Staffers will help you select the right items and pairings for whatever event or trip is on your itinerary. More than just a place to shop, Maria & Kyndal’s provides a full service boutique experience. Maria spends a lot of her time in New York City and Los Angeles, buying and working on collections for her Austin stores. Occasionally, she’ll trek to Paris. She has her own clothing line with the boutique’s names on the label, too. Browse handselected products from designers like Ella Moss, Chan Luu or Michael Stars. For cooler weather, shop Maria & Kyndal’s extensive collection of Frye boots. Maria advises that kimonos are a big style for this season. It’s been said that a well-tailored suit is to a woman what lingerie is to a man, and if that’s the case it would be wise for more men to invest in well-tailored suits! Luckily for the men of Dallas, and most recently Austin, it’s just gotten a lot easier to get their hands on that eye-catching menswear that so intrigues the ladies. And for those dudes who don’t live in Austin or Dallas but still want to get dapper? Don’t fret you’re covered as well.

Opened in September, GARMENT brings one-of-a-kind designs to consumers in Austin. From designers like YSL and Moschino to new, independent designers like Thierry Lasry and LD Tuttle, GARMENT owner Masha Poloskova brings everyday vintage and contemporary fashion to the forefront. By selecting both timeless vintage pieces and new, contemporary designers, you can find anything to fit your style at GARMENT. The store showcases designers who produce small collections that have a point of view. Clothes aren’t the only thing GARMENT offers, however. The jewelry collection has bold statement pieces all the way to delicate fine jewelry. GARMENT pride themselves on being a mix of high-end vintage and new independent designers in apparel, jewelry and accessories. Because only about half the store is vintage, they have plenty of room for new designers that only showcase at GARMENT. Go experience a unique shopping experience, browsing the racks of new and vintage with GARMENT. GARMENT buys vintage apparel and accessories daily through the store with no appointment necessary. Find them in person at 701-F South Lamar Blvd or online at shopgarment.com.

Knot Standard is a bespoke menswear retailer that provides both in-person and online custom-tailored suits. If you can make it in to a showroom, which are currently located in NYC, Dallas, Austin, Washington, DC, Dubai and LA, you can meet with a personal style advisor that will take your full measurements and work with you to customize your garments. Located near a showroom but too busy to make it in? They’ll come to you. Not near a showroom? You can have your measurements taken elsewhere and customize your own bespoke suit through their website. Out of excuses yet? The styles are seasonal, contemporary and cool, and most importantly, the bespoke experience ensures that the end result is a suit that was literally created for your body. Now you’re out of excuses. I had a chance to visit the Austin showroom, which opened in September, and experience ‘bespoke’ firsthand. Upon arrival, I got a brief tour of the space, which was welcoming, open and much homier than your typical menswear store. It is, in fact, not a store at all; it’s a showroom and shop. After being offered a drink--thank you very much--it was on to the fitting. No less than 20 separate measurements would ensure that the final product fit like a glove. Then, customizing the suit itself: fabric, color, thread count, button type, liner, pockets and just about any other customizable element of a suit you could imagine - all to personal taste. After about 45 minutes with my personal style advisor, I was on my way, headed home in anxious anticipation of my finished piece. So, gents, if your wardrobe lacks that critical well-tailored suit, wait no longer. Knot Standard makes suits that come in only one size: yours. Visit them at 706 Rio Grande St. or online at knotstandard.com.

Too Cool for School

M

en’s fashion has come a long way over the last decade or two and it’s evident pretty much everywhere you look. It used to be that guys were only exposed to trends and ideas via print catalogs or in “trendy” showrooms, the latter of which really existed only in larger metros or more progressive areas, and only having access to the former left the rest of us (myself included) looking like we were straight out of a JC Penney catalog. Well, the times they have a-changed. As things like fashion blogs, Facebook, Instagram, and Pinterest - yes, real men Pinterest have led to greater exposure to men’s fashion, more men have, in turn, adopted more fashionable lifestyles.

Enter: The Class Room. The Class Room is a specialty men’s clothing store located in Houston’s Rice Village. Founded in 2011 by fashionable friends Jon Caballero, Paolo Sagullo, Justin Mody, Asif Razvi, and Alan Javillonar, the store’s goal is really to help men be individuals that lead meaningful lives and focus on the things that make them unique. Their self-stated style, “bridges the gap between ‘street wear and menswear’”. “Style can evolve alongside fashion, but style is more personal. Our goal is to help a guy define and evolve his own style based on what he likes and is comfortable with,” said co-owner Jon Caballero. While Jovillanar is the Style Director and Head Buyer, all members of the team are actively involved in the operation. You can always find a fashion consultant to help provide guidance on an individual’s style and preferences. And, to the extent that you’re comfortable, they may help to push those preferences a bit to be even more fashion forward.

14 Texas Lifestyle Magazine

By Mike Kordell

Their target demographic is really the 21-35 age group, but ultimately they’d like to expand enough to help men of all ages have a more defined and pronounced style. And, what better way to do that than broaden your market focus? The Class Room is larger than just the square footage of it’s brick and mortar: they also have a growing online presence. Fashion forward men outside the Houston metro can look over the virtual shelves of the online store, browsing some of the hottest new items from brands like 3Sixteen, Norse Projects, Shwood, and Rogue Territory. And while the online store might not provide the same type of individual consultation as the Rice Village location, rest assured that it’s stocked with the same great gear. And while they’ve been involved in a couple of collaborative ventures with some of the brands they carry (their custom “H” hats by Ebbets Field Flannels, for example), their goal isn’t to become a design company, manufacturer, or distributer. These guys really want their focus to remain on helping others find and highlight their style identities. As style and fashion are, without question, influenced by a wide range of mediums, The Class Room seeks to broaden their own circle to maximize exposure. Twitter, Facebook, and Tumblr all serve as interactive virtual communities with a simple goal: to, “connect with like-minded men to exchange ideas, experiences, and knowledge on a wide range of subjects such as music, art, food, cocktails, sports, travel, and other things that make life interesting.” So if you’re in the area, or you’re not but need some direction toward dapper, stop by The Class Room. Have a drink, shoot the breeze for a while, and walk out looking - and feeling - like a brand new man. Visit The Class Room at 2534 Amherst St or online at theclassroomshop.com.

By Jessica Newman

Among many of Houston’s theaters receiving a refresh, Main Street Theater is purchasing and renovating its 1939 Rice Village storefront to keep pace with a growing Houston arts landscape. Working with Studio Red Architects, Executive Artistic Director Rebecca Greene Udden’s goals for the renovation are greater patron comfort, a classroom, better-organized backstage space and a more flexible stage. Udden co-founded Main Street Theater along with some friends in 1975. In 1982, Udden worked with a group of dedicated volunteers to build out the Rice Village location. “Back then, we did everything ourselves – the dry walling, the painting and the father of one of our actors did air conditioning repair, so he helped us install our units. It was definitely a ‘family affair!’” Udden laughs. To keep with Main Street Theater’s trademark of intimacy, the chance to “intimate productions,” the renovated theater will include the same amount of seating. Moveable seats and risers will allow seating to be configured a number of ways depending on the needs of a particular script. Two structural columns over the stage will be removed, improving sightlines. In addition, a higher roof will be implemented to create a second floor. Here, a stage manager’s booth can overlook the play area and a multi-purpose classroom can serve as a dressing room or be incorporated into sets requiring two levels. The lobby will be more spacious with extra seating, a larger concessions counter and all-new restrooms. A highlight will be the “Extraordinary Givers” wall display, a dramatically backlit tribute to early donors who gave $5,000 to $25,000. Main Street reopens for its 40th anniversary season in the fall of 2015. As Udden states: “It really is an unprecedented time of growth for Houston theater and, as one of Houston’s oldest theater companies, we want to be part of it.” To help support Main Street Theater’s Capital Campaign, visit MainStreetTheater.com.

Houston’s food scene is turning up the sweet. Hugs & Donuts will fill the void for a gourmet donut and kolache shop in Htown. With an XOXO symbol featuring donuts as the “hugs” with heart shaped holes and the motto, “hole lotta heartisan love,” Hugs & Donuts will please food lovers with quality and creativity. Owners Jason Hill and Matt Opaleski previously owned H-town StrEATs, serving any and all kinds of munch food from a truck for almost four years. As the predecessors to Houston’s growing food truck movement, Jason and Matt are also setting the stage for the well-loved and classic Texas breakfast items, the donut and kolache. One peek at the menu and you’re guaranteed to start salivating. For kolaches, chow on Boudin stuffed with pork and rice, spinach artichoke dip (in a kolache!) and Gatlin’s BBQ Brisket. If you’re feeling mellow, the never-fail flavors ham and cheese or sausage and cheese are just as satisfying. Hugs & Donuts offers a unique lemon meringue filled donut and devils food cake featuring all chocolate topped with a pretzel crunch. Other eye-catchers (and mouth-waterers) are the crème brulee and birthday cake donuts. In addition to the food, appreciate the donut spot’s wit. Jason and Matt don’t chastise for sticking to the classics among the confusion of choices. As the menu states, a glazed donut is “the old stand by - like your favorite pair of jeans, it just feels right.” Visit Hugs & Donuts at 19th and Shepherd or online at hugsanddonuts.com

he District in San Antonio isn’t a gym. It’s a “movement about movement.” They believe everyone is capable of growing themselves and making themselves better. They think of themselves as a “training ground where teacher and student meet to exchange knowledge.” What’s more, they believe they are a family of imperfect people who push each other to be better. Members can find something to excite them at The District. Rock climbing, yoga, CrossFit and Circus Arts are the four core activities The District offers, allowing people the chance to find something just right for them. Open gym also allows members to work out outside the confines of a class.

The most exciting addition is an American Ninja Warrior-type obstacle course that opened in October. It has over half of the challenges you would find on the popular TV show. Packages offer access to the open gym as well as classes, but specific classes can be dropped in on or bought by the month. The gym is also open 24 hours to give anytime access to members. fter coming off an off season as NBA Champions, the San Antonio Spurs are back on the court at the AT&T Center. Fans can expect the return of last year’s roster with favorites Tim Duncan, Manu Ginobli and Finals MVP Kawhi Leonard.

“Well, we had a pretty good year so I didn’t see any reason to kick them out of town or make trades and change them,” San Antonio Spurs Head Coach Gregg Poppovich said. “It’s a pretty good crew and they’ll come back and, as usual, do their best.” Practice for the team began on September 27. One highlight of preseason was the free open scrimmage on October 1, a unique opportunity for fans to see the team in action before the first home preseason game on October 18 against the Miami Heat. “We want to be the best team we can be at playoff time and that starts with the very first practice,” Poppovich said. “It’s a building block sort of thing and we hope that we can be healthy and fresh at playoff time. Those are the only goals we’ve had every single year, including last year and it will be no different this year.” It’s time to put those summer colors away and break out the black, white and silver. On Tuesday, October 28, The Spurs opened up the official season in a home game against the Dallas Mavericks. Visit nba.com/spurs for ticket information.

icrobreweries have seen almost Malthusian g r o w t h ove r t h e l a s t d e c a d e w i t h microdistilleries seemingly just a few steps behind. And, it stands to reason that if two things are good on their own, then they’ve got to be great together, right? Ok, maybe not everything, but you’d be hard pressed to argue that microbrew and small batch whiskey aren’t a solid combination - and that’s exactly what the good folks at Ranger Creek in San Antonio are up to: They’ve created their very own “brewstillery.” Ranger Creek founders TJ, Dennis and Mark were all fresh out of business school when they met. The three had quickly grown disillusioned with their “daily grind” corporate lives and, after getting together over some beers (and undoubtedly some whiskey), tossing around business ideas, decided they’d like to try their hands at homebrewing. One thing led to another and a business plan for a microbrewery morphed into the business plan that is today: Ranger Creek. Producing both beer and whiskey gives Ranger Creek the ability to spotlight elements of the relationship that those who only brew or distill can’t, like aging their beers in their own bourbon barrels and distilling their beers down into whiskeys, both of which give very distinct characteristics to their products. Their special feature, Green Tea Oatmeal Pale Ale (or OPA) is a very drinkable, mellow pale ale that almost finished more like an amber than a pale ale. It was supremely palatable, but for a guy who loves his hops, it left me wanting more. The Small Batch Series No. 9, a blackberry sour, was something else. The fruit was front and center, almost like a cider, and it was sour enough to leave you puckered. For more information, check them out at drinkrangercreek.com.

f you live in Texas – and if you’re reading this, odds are that you probably do – you need to own at least one pair of cowboy boots. Many of us own a few more pairs than that, to be candid. It has essentially become a right of passage for Texans, both old and new, to pick out their signature pair of boots. Located in Bastrop, The Texas Boot Company is a draw for those interested in Texas tradition and quality craftsmanship in boots. Nestled in a small strip center off of Highway 71, this unassuming store beckons with billboards that herald your arrival. Far beyond the standard fare presented by most boot retailers, the Texas Boot Company can have even the most casual shopper feeling like a kid in a candy store. Every shopper can find the pair they never knew they needed, just as I encountered a gorgeous pair of Old Gringos that now call my closet home.

The Texas Boot Company is not your typical boot outfitter. They have a boot museum which features a pair of Ray Benson’s size 16 boots, the pair of boots Jack Ingram found in a thrift store and a pair of boots from The Civil War. They design one out of every three boots in the store so there’s truly a boot for every taste. They carry boots made from elephant, ostrich, crocodile, hippo, bison and even stingray, for the appreciator of the exotic in us all. Bastrop is easy to get to from wherever you are in the great state of Texas. If you’re searching for that next perfect pair of boots, make a trip to The Texas Boot Company 733 Old Austin Hwy or online at texasbootcompany.com.

T

he holiday season in Texas allows for a bit more fashion freedom. Being on trend yet staying true to who you are is the key to developing your own personal style! Why not try layering fall pieces (those favorite jeans and accessories) to build your holiday ensembles. When attending holiday events this year, why not dress with the flavor of the event at hand without being so “expected!” Plaid to a fall BBQ? Yes, of course, but pairing with boots that aren’t cowboy boots adds a chic, unexpected, yet appropriate touch. Attend a holiday work party in ensembles that can go to work during the day and embody the festive spirit of the season with the addition of sparkly accessories. There are so many trends to choose from that will help you to be current, appropriate, yet remain you for any event this fall and holiday season! EMBRACE them!

The holidays are here, and that means social calendars are filling up with Christmas parties, New Year’s gatherings and ornament and cookie exchanges. This time of year gives us the perfect excuse to get glammed up with fresh holiday looks. Jose Luis Salon has put together some festive make-up looks to make sure you’re fabulous for all of your holiday events this season. Look 1: This holiday season is all about bold lips. This look is simple, yet classic, and can be worn for events as casual as a Christmas sweater party. For a more formal evening, glam up a fancy cocktail dress with bold, vivid colors. Pair bright red lips with a neutral shimmer blush like one from Jose Luis Salon’s makup line in “Paparazzi,” and add a light shimmery eye shadow. By using neutral eye shadow and blush tones, a thick bold liner makes the eyes pop.

TEXAS LIFESTYLE | STYLE Look 2: Take it to the dark side this holiday season with deep plum tone lipsticks like Jose Luis Salon’s “Luvena Matte” shade. Pair lipstick with a simple black winged liner and you will have a vampy look that will turn heads all night long.

Look 3: Crank up your holiday look with some bold brows, contoured cheeks and a merlot lip. This look screams sexy, yet sophisticated. Brows frame the eyes, so make sure you get regular eyebrow waxes in order to keep a clean shape. Fill in brows with a brow powder in your appropriate shade and make sure you work with your natural brow shape--that always looks best. For the contoured cheek, apply a matte bronzer along the cheekbone down towards the lip. The key for this is to apply a little bronzer, blend and repeat to create the contour. Add a wine toned lipstick such as Jose Luis Salon’s “Vino Matte” to complete this sexy chic look.

4

Look 4: This look is soft and elegant and transitions from day to evening by adding a bright red lip. The daytime look is all about the eyes-- implementing neutral tones such as Jose Luis Salon’s “Soft Yet Sexy Palette.” The key to creating this look is blend, blend, blend using an eye shadow blending brush in order to keep the eyes soft. For the eyeliner, use a brown pencil liner and refrain from winging out the line. Take a blending blush after you are done to soften the line. This soft yet sexy look is perfect for anyone, day or night!

Historical Society

On November 20, The Dallas Historical Society celebrated the 2014 recipients of its prestigious Awards for Excellence in Community Service. Established in 1981, the Awards recognize community leaders whose spirit of generosity and civic contributions have positively impacted their chosen professions as well as the quality of life for the citizens of Dallas. The Dallas Historical Society, which was founded nearly 100 years ago, is the longest-running historical organization in Dallas County committed to preserving the area’s entire history. Established on behalf of the Trustees of the Dallas Historical Society, this year’s awards honor individuals in eight categories, including Arts Leadership, Business, Creative Arts, Education, Health Sciences, Humanities/History, Philanthropy and Volunteer Leadership. “It is a tribute to what the Dallas Historical Society stands for that we are celebrating this year’s recipients and the contributions they have made to each of their chosen fields,” said Lynn and Allen McBee, co-chairs of the Dallas Historical Society. “This group of leaders truly reflects the wide range of contributions and talent that Dallas’ citizens have made to this community.” Founding chairman of firm Estrada Hinojosa, Bob Estrada, was recognized with the business award for his national expertise in tax-exempt securities and investment banking. Mike and Mary Terry received the education award for their longtime philanthropy to the field and their focus on providing equal opportunities for children and ensuring a haven for those in need.

For their commitment to the health sciences, the Dallas Historical Society awarded Claude Prestidge, MD, founder of the Cystic Fibrosis Clinic at Children’s Medical Center, in the area of medicine; and Bruce Beutler, MD and Johann Deisenhofe, PhD, both Nobel Laureates, were recognized for their many breakthroughs in medical research. President and CEO S.M. Wright II and Chairman of the Board J.H. Cullum Clark accepted the humanities award on behalf of the S.M. Wright Foundation, which focuses on serving the people of South Dallas and Fair Park. Natalie “Schatzie” Lee received the Jubilee History Maker Award, a special award presented to an individual, group or organization whose achievements extend into more than one of the award categories. Lee is a longtime active volunteer and supporter of the Dallas arts community and also recently authored The Hockaday School: An Anthology of Voices and Views 1913-2013, for her alma mater.

In the Dallas arts community, Kevin Moriarty, director of the Dallas Theater Center, was recognized for arts leadership for his collaborative initiatives between the Theater Center and other nonprofit groups to foster community engagement. Judy and Patrick Kelly, co-founders of the drama department at University of Dallas, was awarded in the creative arts category, for their work as conduits on behalf of Dallas influencing the national art scene.

The annual luncheon at the Fairmont Dallas Hotel was chaired by Glenn and Margaret Solomon. Glenn is a former trustee of the Dallas Historical Society and led efforts for the creation of the Society’s Texas Treasures project. Honorary chairs for the event were Lee Cullum and Laura Wilson, former Awards for Excellence recipients, who both represent cultural excellence in their respective fields of journalism, photography and writing.

Attorney Stuart Bumpas was honored for his generous donation of professional services to dozens of organizations throughout his career, and Judy Rorrie, the unpaid head of North Dallas Shared Ministries, was recognized for philanthropy and volunteer community leadership, respectively.

Award recipients are chosen from nominations received from the Dallas community and reviewed by a Dallas Historical Society awards selection committee, also led this year by Glenn and Margaret Solomon. For more information, visit dallashistory.org.

What’s the biggest change you’ve seen this year? This year, I’ve grown to appreciate how meaningful giving of yourself can be. Giving time and talents to a cause that I believe in provides a feeling of purpose that cannot be matched by a donation.

How do you give back to the community? HAAM has always been a great organization and I try to support as much as I can. We’ve helped with the HAAM Days and volunteering with them always provides a great show or group of folks to meet. Growing up in an academic family, I like to support elementary school reading programs like the Texas Bluebonnet Reading program and BookSpring. Also, I adopted my dog, Daffodil, from Austin Pets Alive! and will shout their great deeds from the mountains!

Why do you choose to give back? I am thoroughly confident in the impact that we as individuals can have; ranging from small deeds to large contribution efforts and I’ve seen it though my own personal initiatives, in addition to the work we do as a team at KAKW Univision 62. I want to lead by example showing my kids, family, peers and the community that when each of us makes an outwardly focused effort, the world around us truly sees growth. Specifically, I have felt extremely devoted when demonstrating and actively showing our community’s youth how to progress and better their lives.

Hill “Country Club” Living By Doug Flatt and Art Faccone

TEXAS LIFESTYLE | FEATURE

T

ucked back north of Highway 46 in Boerne, you’ll discover Texas luxury with an understated elegance and beauty at Cordillera Ranch. As you are welcomed through their unassuming private gate and wind through the hills toward this gem of the Hill Country, there is no way to anticipate the unique and wonderful lifestyle you are about to experience. This is not your typical country club. There is nothing pretentious or overdone; from the Colorado-inspired, rustic architecture of the buildings to the fire pit overlooking the hills to Wilson, the dog, who paid us a visit over lunch. The result is a warm, active, welcoming community that provides all of the benefits of a typical country club wrapped comfortably within a dialed-down, Hill Country vibe.

A little something for everyone Cordillera Ranch boasts a staggering seven clubs, making it feel like you are living in a resort rather than a typical community. Accessibility to so many activities sets them apart from every other club community in Texas. A leisurely stroll around their grounds showcases the junior Olympic-sized pool at the swim club, exercise facilities at the athletic club, and massage rooms and sauna at the spa club, making it clear that their clubs are second to none. The dining room has been elegantly set in preparation for a social club wine event that evening. But, this is not your ordinary wine tasting – a Napa Valley winery representative has flown in from California to pair wines for this evening’s occasion. While these clubs are spectacular, they are not what make Cordillera Ranch uniquely Texan in both style and culture. Encompassing almost 8,700 majestic acres of Hill Country with five miles of access to the Guadalupe River, Cordillera Ranch members enjoy the added benefits of their own equestrian club, river club and rod and gun club. In the summer, Cordillera Ranch becomes a playground for children, as well. All club activities are extended to the children of members through summer camps. The golf practice facility offers the perfect opportunity to introduce the game to youngsters. If golf isn’t their thing, they can always try fishing, shooting, kayaking or equestrian activities. With countless opportunities for both activity and leisure, the clubs enable members to take their lifestyle to a whole new level. However, no club community would be complete without golf, and, in this respect, Cordillera Ranch is unrivaled.

Hill country golf at its best Cordillera Ranch is home to a beautifully-sculpted Jack Nicklaus signature golf course. Nicklaus and his team took the raw Hill Country and carved out a masterpiece that is challenging, yet fun to play. The back tees measure 7,464 yards, but offer two other tees, blue at 6,186 and silver at 6,197. The course grabs your attention from the very first hole as you tee off from an elevated tee into a generous fairway for this 439 par 4. The zoysia grass fairways are some of the most luxurious fairways you will find. The bentgrass greens are fast, but hold Texas Lifestyle Magazine 47

shots that are hit well. Like a lot of courses, the bunkers vary in size from greenside pot bunkers to huge finger-shaped behemoths that hug fairways. The signature hole at Cordillera Ranch is the 16th hole, a stunning layout that encapsulates the raw beauty of the land. With a canyon featuring small waterfalls in front and on the right side, your tee shot must be precise into this petite green with only a small area to the left to bail out. The golf club has an impressive practice facility that includes putting greens, chipping greens and an expansive range. The range features two practice holes, a par 4 and a par 3. Most country clubs feature their club champions on nice cherrywood plaques through the halls of the clubhouse for all to see. Cordillera Ranch brings a Texas flair even to the way they showcase their club tournament champions. In the back of the clubhouse by the men’s locker room, there is a collection of limestone boulders with the club tournament champions etched in stone. They even have a special stone for PGA tour member Jimmy Walker who makes his home at Cordillera Ranch. Walker has enjoyed a banner year on the tour winning three times and earning a first-time berth to the U.S. Ryder Cup team.

Land with a story to tell Every piece of land in the Hill Country has a story to tell and Cordillera Ranch is no different. In the early 1900s, the property was purchased by a family for recreational use and became known as the Rainbow Rest Home. The property switched hands several more times until it was purchased by Mr. and Mrs. Ralph Thomas “J. Ray” McDermott in 1942. Mr. McDermott renamed the Rainbow Rest Home to the Elmax Ranch, which was the namesake of his wife, Ethel and his daughter, Maxine. During this time, it became an actual working ranch. The land was home to Santa Gertrudis cattle, sheep and short-haired Mexican goats. Mr. McDermott passed away in 1971, but before he died, he conveyed the land to his grandchildren, Carla Hull Northington and Ralph T. Hull. Carla and her husband Mac chose to have the land developed with all the activities that they loved to do with their own families and friends. With the help of David Hill, one of their friends, they created a development company to craft Cordillera Ranch.

Stake your claim If you enjoy the finer things in life and embrace an active lifestyle tinged with Texas charm, Cordillera Ranch is the perfect place to hang your hat. The beauty of Cordillera Ranch’s private, gated community isn’t limited to its people, amenities, clubs and golf course. The Hill Country elegance and thoughtful planning that make Cordillera Ranch so special extends seamlessly to their inclusive real estate development strategy since they began in 1997. This primarily residential community is only 35 minutes from downtown San Antonio, 15 minutes from the Shops at La Cantera and truly has something for everyone. Cordillera Ranch boasts over 1,100 developed lots spanning a variety of neighborhoods with distinctly different features. Whether you are looking for a 1/4 acre villa lot with a spectacular Hill Country view, a 1+ acre lot fronting the Nicklaus signature golf course, a 2+ acre waterfront lot on Swede Creek Lake or a sprawling 12+ acre ranch estate, Cordillera Ranch can make your vision a reality. The Mayan Dude Ranch:

LIVING TEXAS | HOUSTON

A leader in “Horsepitality” By Marika Flatt

Photos by Kelly Orion

W

e invite you to let your inner cowpoke out and road trip with us to Bandera to visit the acclaimed Mayan Dude Ranch – the ranch that brought international tourism to Texas dude ranches decades ago. The fourth-generation guest ranch is run by the Hicks family – one of the friendliest and most charismatic of Texas families. Don and Judy Hicks, the second generation, raised 12 kids, all of whom have helped run this popular ranch over the years. Now, those kids have kids who are working at the ranch— a dozen of them are currently employed, to be exact. The Hicks family, who have declined multiple approaches for national reality shows, welcome you into their expansive family when you are a guest on their ranch. They keep the capacity low (only 115 guests) so that you feel the intimacy of the experience. That equates to no long lines for the food buffet and no problem getting a horse for the ride.

52 Texas Lifestyle Magazine

Most of the time, they are hosting guests from other countries (those guests love the bang for their international buck). Depending on the time of year, the daily rate ranges from $125$165 for adults, teens are $100 and kids 3-12 are $80. This allinclusive rate covers delicious meals and all activities, too. “Our guests never pull out their wallets unless they want mixed drinks in the saloon,” explains owner and Director of Sales and Entertainment Kelly (Hicks) Orion, who has welcomed guests at the front desk with her dazzling smile for 31 years. “We want our guests to experience a taste of the West with nice amenities.” The ranch has 60 cabins and for summer stays (typically at least 4 days), you should reserve at least six months in advance. During this high-demand season, they pack the experience with two trail rides per day, a myriad of Western activities, hayrides, petting zoo visits and (their most popular draw) nightly entertainment, typically brought to you by the family themselves.

TEXAS LIFESTYLE | ROAD TRIP

When asked what makes The Mayan Dude Ranch different from any other Texas dude ranches, Hicks undoubtedly says: “The family. After 64 years, we are still providing this unique getaway. In the business world today, only three percent of fourth-generation businesses survive. We are honored to be in that small percentage!” The Mayan has kept the dirt roads, the saloon with swinging doors and the ghost town, but they also provide free wi-fi and an up-to-date conference room to keep their facilities modern and competitive. The ranch is open year-round and offers different schedules and activities, depending on the season. For instance, they’ll have caroling, bonfires and a cowboy Santa in December. In the spring, the ranch is a bit quieter for getaways (although Spring Break is busy) and summer is uber-popular with ongoing kids’

activities and babysitting offered. Other big summer draws are swimming in the Medina River, the resort-style pool and evening dances with a DJ. Recently inducted into the Texas Hall of Heroes, Don and Judy Hicks are still involved with the ranch and are proud of the family-friendly destination their gang has built. W

ashington state, where many Texans love to escape to, is home to a collection of four Destination Hotels & Resorts properties that cover a wide range of travel preferences. Here’s a quick guide to picking which DHR is right for you.

For the nautical traveler

The Woodmark Hotel, celebrating 25 years, is the only hotel located on expansive Lake Washington in Kirkland, just 15 minutes from bustling Seattle. This property is for the traveler who loves to be in and near the water. The Woodmark features 100 nautical-themed rooms, which are one of the best uses of hotel room space I’ve seen. More than a single room, guests walk into a foyer with a bathroom to the right and a small living room in front of them, leading to a separate bedroom. The Woodmark features Beach Café, ideal for breakfast and on the first floor with indoor and patio seating. Bin on the lake, overlooking the 200-slip marina, offers fine-dining and houses a robust selection of local wines by the glass. Bin’s enomatic system allows them to feature the best wines and give the guest access to individual pours. Also in the hotel is Still Spa for your relaxing pleasure. Something unique to The Woodmark is “Raid the Pantry” where guests can visit the kitchen from 11 pm to 1 am for complimentary snacks and drinks.

Woodmark Waterfront Adventures has jet skis, paddleboards and kayaks for rent, which is the best way to pass a day on the lake. The hotel offers pump dispensers for their high-end bathroom products. This is great for reducing waste, but keeping the quality for this amenity. The hotel’s complimentary cruiser bikes are perfect for enjoying the casual and adorable town of Kirkland.

For the urban traveler Motif Hotel, right in the heart of downtown Seattle, is famous for its location, location, location – right on Fifth Avenue. Formerly a Red Lion hotel, the newly-renovated boutique property has a focus on art and design (motif means: a constant pattern). From the colorful lobby that serves as an art gallery, to the carpet that represents the style of Seattle, to the pop of color in the rooms, Motif is all about design. Frolik Kitchen + Cocktails, located on the fifth floor of Motif, is led by Executive Chef Charlotte Glaves who wows guests with unique combinations of fresh food from breakfast through dinner. Frolik’s mixologists make sure diners have the opportunity to pair their meal with cocktails, wine or draft beers of their liking. For breakfast at Frolik, try the omelet of the day or their white cheddar breakfast grits. A buffet is also offered.

Motif’s “front porch” is a classy and comfortable spot to while away the afternoon or people-watch in downtown Seattle. Motif is within walking distance of the beautiful Chihuly Garden & Glass exhibit at Seattle Center, the famous Seattle Space Needle, the Experience Music Project, the Aquarium and the fabled Pikes Place Market. Motif boasts the largest rooftop bar in the city. With its hip vibe and fire features, the bar at Frolik is perfect to enjoy any time of day.

For the mountain traveler Suncadia Resort, approximately 1.5 hours from Seattle and sitting on over 6,000 acres, is the perfect escape out of the city to experience the beauty of the Pacific Northwest’s mountains. The upscale resort community offers a mountain lodge, an inn and homes for rent. The lodge offers suites that feature a small kitchen, living room, large bathroom and spacious bedroom. Also, the lodge’s back patio overlooks an amazing view of the river and with a mountain backdrop. Behind the lodge is the notable trail of 1,000 Steps—a pathway down to the river that offers not only a view, but a built-in workout facility. You will feel like you want to get lost in this mountain retreat.

You can go river rafting with Troutwater Sports and have a fun and relaxing day in the outdoors. The guys from Troutwater take care of you from start to finish. They handle the paddling while you relax in the boat. They also provide a gourmet lunch like salmon grilled on the riverbank paired with Washington wines. The Glade Springs Spa is one that you will want to spend at least half a day enjoying. After your deluxe treatment, you can relax in three hot-salt soak mineral baths outside (all of varying temperatures), then detox in the dry cedar sauna. In addition, there are wet and dry saunas and a hot tub inside. Also, leave time for its sanctuary, which features fabulous best bean bags. Swiftwater Cellars Winery is located on the resort and features pristine views while you sip their delightful No. 9 wines and enjoy their restaurant, perfect for appetizers or dinner.

For the outdoor traveler Skamania Lodge sits on 175 wooded acres next to the Columbia River Gorge National Scenic Area, just on the Washington side of the river. The lodge’s rustic appeal offers a comforting setting to enjoy the beauty of the area. The view from the backside of the lodge is truly breathtaking. The lodge is not upscale, but has empowered their entire staff to meet your every need. Skamania’s Waterleaf Spa offers signature facials, massages and body wraps, followed by time to enjoy an indoor sauna or one of several Jacuzzi hot tubs, an indoor pool and small fitness center.

The recently added Skamania Lodge Zipline Tour is a fun way to enjoy the outdoors. For $99, you can participate in seven lines, three sky bridges and even an exciting belay challenge. The guides are top-notch, making you feel extremely safe and providing an entertaining afternoon. The lines range from 100 to 800 feet in length, so you get to build up to the more challenging ones. Executive Chef Mark Henry is a culinary icon and takes great pride in his masterpieces. At the River Rock Lounge, we were treated to an eggs benedict breakfast bar that offered the most delicious start to the day. And, at dinner in the Cascade Dining Room, we were impressed by a specially-crafted dinner that included: sautéed head-on prawn & duck confit cheesy grits, roasted chateaubriand with banana potatoes and finished off with a strawberry napoleon phyllo dessert. Other opportunities to get outside include relaxing on the massive back porch, cycling, hiking around the property or playing golf. You can also get some local flavor at Walking Man Brewing, a short walk into Stevenson, where you can choose from a spectacular selection of craft beers.

It’s no wonder why Texans flock to the Pacific Northwest. The cooler weather in the summer months, outdoor adventure, and a superb culinary/ wine/ craft beer scene all create a spectacular vacation with memories that linger while you plan your next adventure.

Bringing the Thunder Austin City Limits Music Festival 2014 Rolls Through, Loud And Large by Daniel Ramirez

“Into every life, a little rain must fall,” the old adage goes; and for regular patrons of the Austin City Limits Music Festival, the saying couldn’t ring more true. For many of the 11 years the festival has graced Austin, rain has made its way into the schedule, as regular as Asleep At The Wheel scheduled as the festival opener. In 2013, however, in the inaugural year of ACL Fest becoming a two-weekend affair, rain did more than grab a time slot on the schedule. On the second Sunday, torrential downpours grabbed all of the time slots, as the festival was forced to cancel the final day with most of Zilker Park under more than a few inches of water. But, with a second chance to make a first impression, ACL Fest 2014 gave Austin a double bill for the ages. Of course, after over a decade of lineups, the headliners were expected. A litany of the summer’s best acts converged on Zilker, complete with the incomparable performances of Eminem, Pearl Jam, Outkast and Beck, each who delivered powerful displays and countless sing-alongs to a willing and very dense crowd of fans. Every one of these acts delivered, satisfying a hungry crowd with no shame about performing their hits. And while the enthusiasm for Eminem clung to his performances of “Lose Yourself” and “Stan,” fervor for Pearl Jam was loudest for “Jeremy” and “Daughter,” coming to a fever pitch as they turned the volume to its loudest for “Alive.” Front man, Eddie Vedder sent a wine-soaked apology to the noise ordinance followers and made certain that fans would not soon forget his set.

For both weekends, the headliners garnered the lion’s share of attention, albeit with a measurable shift in the overall genre of the festival, which slanted more toward hip-hop and European dance beats. The larger crowds flocked to DJ sets by masters of the craft; and they were drawn to rap and electronic dance music acts –such as the visual phenomenon that is Skrillex on stage – like ants to sugar, with only Pearl Jam as the rock stalwart. Iggy Azalea, Chromeo, Calvin Harris and the like performed danceworthy sets, although it tended to exhaust the ears, come the final day. Luckily, ACL Fest shone in the way it has always known how. The fest showcased the middle lineup, giving countless bands an opportunity to shine. This isn’t to mention veteran acts, such as Avett Brothers, The Head And The Heart, or Spoon. And, even Beck get Jamestown Revival, a band with deep roots in Texas, found a following amid the techno-centric by performing counter-programmed genuine folk, which livened up the Sculpture/Zilker tent stage and left everyone feeling as though they had discovered a precious gem.

62 Texas Lifestyle Magazine

And, they were far from alone amid the jewels to be found at smaller stages or during sets outside of prime time. Paolo Nutini brought his new funk-driven sound to Austin, much to the delight of those who witnessed his smoldering new identity. From Jenny Lewis’ psychedelic-dressed upbeat anthems to newcomers, Johnnyswim, who turned all who saw the married duo into fans – if they weren’t already. The undercard of the lineup was undoubtedly one of the high points of both weekends. But, as with any ACL Fest, rain dotted the schedule, forcing a delayed opening on the second Saturday that many believed would dampen or threaten the rest of the festival. They needn’t have feared. Not only were the crowds and the bands ready to soldier through the weather, the biggest surprise for Austin City Limits was yet to come. Despite the muddy conditions and despite the curious stage placement, the largest sound and the biggest spectacle arrived in the diminutive form of a solitary young woman who nearly dwarfed the festival itself. Hair like a mane and voice like thunder, Lorde took unquestionable command of the RetailMeNot stage, Zilker Park and the entire attention of nearly all attendees with an indelible performance that most will remember for years to come. Crowded tighter than the majority of Austin concertgoers can fathom, the 17-year-old displayed a refined stage presence that spoke well beyond her years and she validated every degree of her popularity. Young and old, the crowd watched or listened, depending on one’s position in the sea of people, as she featured her hits, “Tennis Court,” “Team” and, of course, the ubiquitous, “Royals.” But it was the effortless cover of Kanye West’s “Flashing Lights,” along with a sneak preview of her Hunger Games soundtrack contribution, “Yellow Flicker Beat,” that utterly stole the weekend and the festival, in general. If this is what Austin can expect of its now two-weekend musical overdose, in exchange for a little rain, it seems clear that the crowds have spoken. When considering the headliners, the up-and-coming bands and the incredulous surprises, the festival and its attendees are calling down the thunder and already preparing for next year.

Austin City Limits Music Festival returns in 2015, set for October 2-4 and October 9-11. Tickets go on sale again in the spring and can be purchased at aclfest.com.

A New Habit

Why You Should Be Addicted To Tove Lo by Daniel Ramirez

I

t’s stuck in your head and it won’t let go. You are thinking about it again and again, replaying every moment, every feeling associated with it. And the truth is, you cannot wait until the moment comes again. And you listen to Tove Lo again.

When we first encountered the 20-something songstress, it was a scene pulled right from a film or a children’s book. Walking the streets of Austin during SXSW is a cacophony, assaulting one’s ears with every genre all at once. So, when a lone voice slices through the static, it is hard not to investigate. Drawn in by lush vocals that had minimal processing and maximum strength, the origin for this pied-piper’s song was a petite, tattooed young lady belting out from within the ND studio, filling the space and the street outside with an unforgettable sound. There she stood – all five feet, six inches of arresting beauty and irrepressible stage charm – checking sound for one of the many showcases that she and her band were to rush through during Austin’s toobusy SXSW Music Conference. Tove Lo was making sure that the city, as well as the state of Texas and the union to which it belongs, remembered her name. When asked about the breakneck schedule, she simply explains, “I figured, it’s my first time here, I have to do it properly. And there’s just so much happening all the time.” Playing so many shows and following the sets by exploring the city and the other visiting artists takes a toll on anyone, but if it has worn her down, it never shows. Considering where her career has taken her since that time, it might have been preparation. Since releasing her album, “Queen of the Clouds,” in September of 2014, Tove Lo has appeared on the late night bills of Conan O’Brien, Jimmy Fallon, Seth Meyers and Jimmy Kimmel, all while touring

and promoting an album that reached the top 20 on the U.S. charts, strengthened by the single, “Habits (Stay High),” which climbed to the number three position.

“I want to be out on the road with my band, that’s the dream – sold out shows!”

get really stressed,” she apologetically explains. “But as for my dreams, I want to go on a world tour. I want to see, ‘Tove Lo World Tour.’ I want to go on a tour bus around America. I want to be out on the road with my band, that’s the dream – sold out shows!” It is as difficult to resist her enthusiasm as it is to get the tunes out of one’s head, which, coincidentally, is where her lyrics start. Most of her songs involve relationship issues that everyone contends with, making the expressed emotions relevant to all ears.

This not-so-overnight success comes on the heels of a Swedish invasion that even the artist herself recognizes. “I think you just like us!” she exclaims. “It’s a lot of great music coming out of there. I’m impressed by a lot of people I have around me, close, and everyone is so talented.”

“My songs come mostly from my relationships and the people around me and what I experience,” she says. But, rather than be a writer or share those specific details in a public interview, she channels them. “It’s mostly the things that I wouldn’t say, that I don’t want to talk about them, but I can sing about them – I don’t need to filter anything that I want to say in a song.” Thankfully, she is endearingly transparent in her music and pairs that honesty with infectious beats, which allowing both singer and listener the same freedom of expression.

But, even with regard to her success, she considers her meteoric rise as just the beginning. That is, of course, when she stops to consider it or when pesky interviewers ask about it. “I try not to think too much about it like a career, because then I

“I can admit to my mistakes and my flaws in my music,” she continues, “which I probably wouldn’t here.” It is inspiring in the best way, making it more understandable and even welcome when more people develop a Tove Lo addiction.

Pork sausage & lentils Chef matt mcCallister of ft33 in dallas

Pork Sausage 38 oz. of ground pork 5 ½ tsp of salt 2 tsp of sugar 7 1/2 tsp of paprika 1 tsp of white pepper 1/4 tsp of garlic powder

matt created a holiday recipe to pair with taylor fladgate 20-year old tawny port, a high end aged tawny that is perfect for the holidays. his pork sausage with red wine & braised bacon Lentils are surprisingly easy to make and can be a great holiday treat for those looking to entertain with food and beverage pairings. 1. peel the carrot and garlic cloves and chop fi nely with the celery, onion, and bacon. heat the oil in a large pan and add the chopped vegetables and bacon. Cook them over gentle heat until soft, which will take about 10 minutes. 2. tip the lentils into the pan and stir them around to get slicked with oil. then add the bay leaves and dijon mustard. 3. pour in the red wine, water, and soy sauce. bring to a boil and cover and simmer for about 30 minutes or until just tender. one of the good things about beluga lentils is that they tend not to turn mushy, so there’s less of a concern about overcooking. 4. when the lentils are cooked, check the seasoning and add salt if necessary, and dress with a little olive oil as you serve them. Garnish with parsley.

Butternut Squash Hash i like any kind of hash, and this one is no exception. you can add vegetables like onion, bell pepper, mushroom, or anything, really. finish the hash by browning it in a skillet with butter or olive oil, and it makes a savory side for chicken or steak. Serves 6-8 ingredients • 2 medium butternut squash, peeled, seeded, and chopped in 1/4inch dice • 4 red potatoes, chopped in 1/4-inch dice • 1 medium red onion, chopped in 1/4-inch dice • 2 garlic cloves • 1 tablespoon rosemary, chopped • 1 tablespoon thyme, chopped • 1 tablespoon sage, chopped • salt and pepper, to taste • 1/4 cup plus 2 tablespoons olive oil 1. preheat oven to 400 degrees. 2. in mixing bowl, combine all ingredients, except 2 tablespoons olive oil, to coat well. 3. place on sheet pan in oven, and stir occasionally until almost done, approximately 30 minutes. 4. Allow to cool and refrigerate; can prepare up to 2 days in advance of use. 5. when ready to use hash, in cast-iron skillet heat 2 tablespoons olive oil and brown hash, stirring every few minutes, for approximately 20 minutes.

Cauliflower Couscous this is a lot simpler than it sounds. Anytime you chop caulifl ower, you end up with all these tiny little bits left behind. to me, it looks like couscous. so we decided to just shave the whole thing, add some olive oil, salt, and pepper and serve it as a side like couscous. we don’t even cook it but just let it marinate for a few hours to meld the fl avors. it’s delicious and really healthy for you. serves 6-8 ingredients • 1 head caulifl ower, shaved to the same size as uncooked rice • 3/4 cup olive oil • 1/4 cup sherry vinegar • 1/2 cup green onion, chopped (use green and white part) • 3/4 cup black olives, chopped • 1/4 cup capers • 1/2 cup roasted red pepper, chopped (store bought pimento is fi ne) • 1 cup feta cheese crumbles • salt and pepper to taste 1. mix all ingredients and let stand at least 5 hours.
