I just came back from Thailand recently, touched down and straight into the January sub-zero climate.

When it’s so cold nothing fits the bill more than a spicy, crunchy, hot and sour dish that will sent you dreaming away to a sunny beach town by the gulf of Thailand!

“Yum” or Thai salad defines a good cook. The ability to balance and contrast different tastes and textures has to be spot on. The basic palate is hot, sour, salty, sweet and sometimes, bitter. The main ingredient is often freshly cooked and therefore warm, but it is tempered - in both temperature and flavour - by the fresh herbs and dressing that season it. Yum are best eaten just above room temperature when the aromatic shallots, mint and coriander leaves will not soften, wilt or lose their vibrancy, and the dressing will retain its sharp spiciness,

Yum has its own version in every region of Thailand that showcases the best of the seasonal produce. My version of the rustic salad is inspired from the south/ southeast of Thailand’s provinces, where the fresh seafood and fishes are abundant. In addition, their hilly landscape also houses the orchards, many of them grow sweet and sharp-tasting tropical fruits, like mango, starfruit, pineapple, snake fruit (SALA). The original recipe would have use the fried whole fish such as grouper, sea bass or tilapia. This is my take using local cod fish. Why not try this on Friday night instead of your usual Fish n Chips? If you haven’t planned your holiday to Thailand anytime soon, I’m sure this will certainly warm you up a notch!

Ingredients

DRESSING:

30g palm sugar

30g fish sauce

30g tamarind juice

50g dried chilli powder

50g fried shallot (I used shop-bought)

Blend everything together in a blender until the palm sugar dissolves. Set aside.

SALAD:

100 - 150g cod loin

20g plain flour

40 g green mango, thinly sliced 20 g lemongrass, white part only, thinly sliced 10 g coriander sprigs

10 g red and green bird eye chilli, chopped

10 g of each, mint leaves and Thai sweet basil leaves salt and pepper to taste vegetable oil for frying (or use air-fryer for the healthier option)

METHOD:

• Cut the cod loin into thin pieces, season with salt and pepper, coat with flour. Fry in hot oil until golden brown. Set aside.

• In a mixing bowl, toss together all ingredients and dressing. Serve immediately.
