Welcome to That’s Nice magazine, your

monthly guide to the Riviera! As our front cover suggests, Spring is in full swing and what an exciting season lies ahead. Sun, sea and fun await us, and we’ll be right here to guide you through it all! So what do we have for you this month? Well, now the sun is out and the chill has left the air, we head into the hills and take a journey back through time at some of the perched villages surrounding the city. I encourage you to hit the road, be it by car, train or bus, and discover the rich history that is right on our doorstep! As we are now officially in the season of indulgence, we also bring you a jam-packed Food Guide, brimming with restaurant reviews and recommendations. And on the subject of indulgence, what better way to welcome in the season than with a Spring luncheon, complete with Martinis – to really get the party started! To balance things up, our Lifestyle page looks at the importance of antioxidants in our diet, and we also take a look at the ancient art of Shiatsu. There’s a full agenda throughout the Riviera this month, so be sure to read our Riviera Events guide for a lowdown on what’s happening and when. e see them there, perched high in the hills; gallantly watching over the valleys below, these determined figures of millennia past. Their stone buildings and ruins whisper voices of a life long-gone, but far from forgotten.

Perched Villages Journey into the past... Capable of attracting the world’s most artistic and creative minds including Van Gogh, Cezanne, Renoir and Nietzche, these eagles’nest enclaves sit high above the world, bestowing breathtaking panorama and unforgettable medieval charm. While some villages are on every tourist’s list, there are many others that offer the same medieval charm without busloads of tourists. And they are so close to Nice, you can see a handful in just one day! This trip takes us to the towering hills behind Nice, accessible by train, bus and car. We start at Saint-Jeannet and travel east towards the smaller villages of Colomars and Aspremont, taking in TourretteLevens and finishing at the most well-known village, Eze.

SAINT JEANNET

The village of Saint Jeannet sits quite famously beneath the towering Baou St. Jeannet – a large verticle cliff treasured by climbing enthusiasts. It is a very authentic, quiet village that is not swarming with tourists and affords spectacular views and ancient arched passageways. Saint Jeannet was ruled by the Villeneuves from the 13th century until the Revolution. It lured artists and poets alike, including Dufy, Trachel, Poussin and Prévert. The enchanting village is made up of 17th Century houses and its gate is hollowed out of what remains of the ancient defensive walls. As you wander through the maze of shady alleyways, you arrive at the church square, with its dominating square bell-tower, dedicated to Saint John the Baptist. Further you’ll discover a wonderful panorama terrace after going through a beautiful low arched passage. There’s also a 19th century laundry and the 15th century Saracen tower, located at the west end of the village. As Saint Jeannet is one of very few villages to have its water supplied from a Boau, there are also many fountains dotted throughout the village. For the adventurous, there are numerous climbing routes on the Baou. Nearly 10,000 people flock here every year to reach the summit. There is a climbing school in the village for novices, and several caves in the Baou including one that is 350 metres long. Hikers can enjoy several walks in the area, from 45mins to 2 hours. There is also paragliding and one of the oldest oak trees in France said to be around 700 years old with a circumference of 7 metres. The adventurous may choose to spend an entire day in Saint Jeannet. The non-adventurous should schedule in around an hour for this village.

COLOMARS

Colomars was founded in 1070 by the monastery of Saint-Pons, but is now a small recently built residential village whose attraction lies in its mediterranean vegetation of olive trees, vines and carnations. You can see the olive trees as you approach the village. The ‘cailletier’ trees produce olives known for their flavour, with hints of lemon and anise, yielding golden oil coveted by true gourmets. The oil of Colomars has won many awards and, together with its tapenade, enjoys the AOC Olive de Nice label that places the village among the best olive oil producers. It is also a village of art, and offers visitors a new exhibition each month in the Salle des Arts at the Mairie. This stop is really just for the olive oil. It is en-route to Aspremont, so if you are running low on time do not set aside much time for Colomars.

ASPREMONT

Aspremont boasts a rare religious heritage. At the village central square, visitors can admire the votive chapel dedicated to Saint Claudius, built in 1632 to stave off the plague. Climb the flower adorned steps to the parish church of Saint-Jaques le Majeur (again 16th century), characterised by its windowless Gothic nave. Nearby is the former White Penitents’ Chapel (18th century) which has been fully renovated. And finally the chapel of Notre Dame des Salettes, built in the 13th and 18th centuries. Aspremont is unusual in the fact that its houses are built in a spiral around its gothic church. Further north of the village at the top of Mont Cima are ruins of the original village. Schedule about an hour or so for Aspremont.

Expect to spend a little more time in this village, perhaps around 2 hours. If you really want to immerse yourself in the medieval history of this area, then join in the festivities on Sunday April 18th when the village hosts its annual Medieval Festival. Music, street fighting, magicians, storytellers, acrobats, fire eaters and people in costume will fill the streets. You can even hire your own costume in the village! And it is all for free.

EZE

One of the most popular of the perched villages, Eze is known for its gastronomy, exotic garden and spectacular views of the Mediterannean sea. Like all perched villages, there’s an enchanting maze of stone alleyways with many art galleries, souvenir shops and restaurants scattered throughout. The garden itself offers areas of relaxation, art, history and over four hundred succulents. Jean-Phillipe Richard’s sculptures are dotted throughout, and at its peak are the ruins of the former château. Unique to Eze are the story boards that feature prominently throughout the village, written in both English and French. It’s history is therefore laid out before you, helping to picture this village as it was in its glory days. Eating in Eze can be quite expensive, particularly on the panoramic terraces (as breathtakingly beautiful as they are). TOURRETTES-LEVENS

Here you will also find a number of interesting museums. The tower itself holds an impressive collection of 4,500 butterflies and insects from all over the world. There’s a natural history museum and a few metres farther, a ‘rampart house’ filled with treasures from trades of the past. About 2km out in the hills to the east, the Grotte du Merle also has prehistoric engravings.

La Casa della Piadina

Some days, you simply can’t face the idea of another panini or baguette for lunch. But finding a similar priced alternative in Nice, that’s tasty and filling, can prove very difficult. Enter the ‘Piadina’ – Italy’s version of the French crepe. And the best part – there’s not a soggy slice of tomato or wilted piece of lettuce in sight! La Casa della Piadina, on rue Gioffredo, is a small and friendly ‘snack-shop’, completely dedicated to the flat, circular bread known as piadina. It is similar to Lebanese flat bread, and is quite dense and heavy compared to its French crepe counterpart. Not surprisingly, the highlight of the piadina is its ingredients. La Casa della Piadina offers an impressive 25 filling combinations, mixing different types of authentic Italian meats and cheeses. Vegetarians (an often forgotten sector of the population) even get 5 choices! To give you an idea, there’s ham, gorgonzola and grilled vegetables; coppa ham, edam, parmesan and rocket; or one of my favourites – chorizo, soft (and bitey) Italian cheese, mushrooms and rocket. Prices range from 4.50€ to 4.90€ and, given the density of the bread, are more filling than they first appear. But if you are feeling particularly hungry, you should opt for the menu, which includes a sweet piadina and a drink for around 7.50€. The service here is welcoming and English-friendly. The food, including the bread, is prepared and cooked before your eyes (a big point-scorer with me) and if you are lucky you can get the table out the front in the sun. I was also informed there will be another La Casa della Piadina opening in Nice old town soon. So, the next time you are looking for a quick and easy lunch-time snack, try a piadina. Apparently, its even found its way into space, eaten by Russian cosmonauts as part of a Mediterranean diet experiment on the International Space Station! La Casa della Piadina is open Monday to Friday, 11am to 4.30pm. And Saturday, 11am to 6pm. Find them at 52 rue Gioffredo, Nice.

All aboard the Sushi train! If you are prone to disappointment when a dish you order simply doesn’t match the image in your head, then you’ll love Sushi Kan in Cannes. Here, chefs prepare the dishes right before your eyes, place it on a conveyer belt and - voila – fresh and ready sushi to be seized at will!

The ‘sushi-train’, as we like to call it in Australia, is one of my favourite ways of eating out. At this kind of restaurant, even the most timid patrons find their fascination aroused by the brightly coloured sculptures passing by. Of course, a certain knowledge of the cuisine helps when identifying the plates paraded before you – but I’d like to think most of us could distinguish between salmon, tuna and scallops! And if not, then just ask.

The sushi train is a great way to try new ingredients that you would not necessarily order from a menu. But beware, plucking raw delicacies from a conveyer belt can be costly, and before you know it you’ve spent your weekly food budget in one sitting! At the helm of Sushi Kan are actually two Brazilian chefs, and they’ve created a menu with over seventy varieties of sushi including sea bream and flying fish eggs!

This restaurant may not be in Nice, but whose to say you can’t feast on sushi and sake until your heart’s content, waddle to the train station, and simply grab your ride home! Sushi Kan - 5 rue Florian, Cannes. Telephone 04 93 39 86 13.

Past Reviews Chez Giorgio

Just two months in, and word is spreading quickly about this new restaurant at Nice Port, with its lively Latino ambiance and killer caipirinhas. Chez Giorgio adds a bit of variety to a predominantly French port restaurant scene, uniting Italian and Brazilian cuisine with the excitement of south-American entertainment.

The French-Brazilian owners have created a friendly and downto-earth restaurant, with warm service and cosy décor. Italian cuisine dominates the menu, but the selection of Brazilian dishes appears authentic and covers the main food groups. An entrée of tapas delivers a healthy portion of acarajé (similar to croquets) filled with a selection of shredded chicken, cheese and meat served with a refreshing salsa (10€). There are traditional meat dishes, all marinated in herbs and spices and rotated on a grill – tender and full of flavour. You can choose between chicken and spicy sausage (12€), or opt for the mixed plate, which includes beef (18€). The Brazil/Argentina-sourced beef, prepared and cooked in the traditional manner, is so good that it is capable of converting a non-beef eater such as me! These are served with a mayonnaise-based salad, rice and farofa. If you have not tried farofa before, prepare to be surprised. This toasted manioc flour is a staple food in the northern regions of Brazil, and is cooked slowly with onions and bacon. It resembles breadcrumbs and has a very smoky and slightly salty taste, and is used to accentuate the taste of meat. Fish dishes are well priced at 15€ and include a Brazilian bouillabaisse and Langouste (similar to lobster). Complimenting the menu are reasonably priced daily specials, such as seafood spaghetti for 9.50€ and prawn salad for 12€. The wine list covers the appropriate regions of Italy and Brazil and is very well priced. A carafe of house wine will set you back just 7€. Try and schedule in a Sunday evening here, when downstairs comes alive with a Brazilian band and dancing. Even the timid will be persuaded to grab a cocktail and shake their hips to the rhythmic beats. There are also international artists every Thursday evening, and jazz on Wednesdays. But you can catch live music or DJ’s every night of the week. Chez Georgio is open for lunch and dinner every day except Mondays.

Papayou

Papayou has all the right ingredients - a great people-watching terrace, quality service, a nice wine list and skillfully executed dishes. If you’re eating in the old town then this restaurant definitely deserves a diversion from the tourist trapping Cours Saleya. Delivering a relatively small and uncomplicated menu, the restaurant offers some typical Niçois classics like beef steak and goats cheese salad. But there is a clear Asian influence here, and the coconut and lemongrass chicken or prawn dish is a testament to the chef’s oriental talents. In fact, it is hard to fault any dish that I have tried at this restaurant. The wild mushroom risotto is presented beautifully and delivers a nice balance of creaminess and earthy mushroom flavour. Meanwhile, the seared tuna steak is cooked to perfection, as are the seasonal vegetables upon which it is elevated. All dishes are appropriately seasoned and presented with flair. Papayou is run by a lovely couple that, despite a full terrace, maintain a high level of service and friendliness. The menu is tempting and the chef is clearly skilled. This is actually one of very few places where, at the end of the meal, I find myself scouring the chalkboard for the next dish I will choose upon my return! Shiatsu is a deeply relaxing, traditional, hands-on Japanese healing therapy, effective for stress, locomotive and internal disorders. How does it work? What’s with the antioxidants craze? To answer this question, we must first understand how antioxidants work in the body. Goal Setting - Part 2 Last month we looked at the principles of goal setting & highlighted the importance of thinking in the positive rather than the negative. This month, we unravel the first principle: ‘what do I want to have, do or be?’ Now, ask yourself this: do I have a clear picture of my long-term life objectives of 6 months and more? If not then, let your mind roam free and ask yourself: What new skills or trade would I like to learn? What income would I like to earn? What character traits would I like to develop? How would I like to think, feel or be? Now, choose your top 3 goals and prioritize them. Allow yourself to imagine having achieved your goals - see, hear, feel and smell it. See yourself achieving your target and feel the triumph! Why? Because you are now training your mind for success.

The paintings and drawings of Robert De Niro, Sr. are focussed on the figurative, a more sensitive representation of the world. However, the American artist preserved his own mode of expression, tied to the abstract, which came from his training under American masters like Joseph Albers, founder of optical art, and Hans Hofmann, a follower of Bauhaus. This exhibition begins with the presentation of photographs of Robert De Niro, Sr. in his New York studio. Figurative paintings are organized according to thematic characteristics of the art of Matisse, such as female models, interiors, still lifes, landscapes, ending with a series of black and white drawings.

Book Reviews The exhibition runs until the end of May 2010.

MUSEUMS

The Matisse Museum is displaying the works of American painter Robert De Niro, Senior (19221993), who drew inspiration from Matisse and the great European artists.

Linda THE WHITE QUEEN by Philippa Gregory The White Queen by Philippa Gregory Philippa Gregory has quite a following for her historical novels, notably the Other Boleyn Girl that was made into a major film. Her novels are characterized by a new look at women in history, filling gaps and putting to rights the secondary or villainous roles they are often given by traditional (male) historians. Also, the way she tells the story using the first person present tense, so the reader sees history unfolding day by day. The White Queen, which she thinks is her best novel to date, is about Elizabeth Woodville, traditionally portrayed as an ambitious and greedy go-getter. Yet Philippa Gregory sees her as an extraordinary rich character who married Edward IV for love, the first commoner to do so, and also mother of one of the unsolved mysteries of the Wars of the Roses: the princes in the tower. This may be popular history but it’s well researched and is a great read.

Parisians: an adventure history of paris by Graham Robb As the title says, the book - like Paris is an adventure; part history, part travel guide. It takes us from 1750 to the present, looking at the personal history of Paris’ inhabitants: spies, soldiers, scientists and alchemists; police commissioners, photographers and philosophers; adulterers, murderers, prisoners and prostitutes. We encounter political and sexual intrigues; witness real and would-be revolutions, assassination attempts and several all too successful executions; we visit underground caverns and catacombs; enjoy the view from the top of the Eiffel Tower; are there for the opening of the Metro; and joining Hitler on a flying visit to the French capital. It is a book to lose yourself in. To dip in and out of as you please.

EMOTIONS AND COMMOTIONS Release date: April 12 Fresh off a Grammy award and Les Paul tribute that was one of the highlights of the 2010 ceremony, guitar legend Jeff Beck will be releasing a new album of classic pop standards with the backing of a 64 piece orchestra. Emotion and Commotion will include everything from “Somewhere Over The Rainbow” to “Superstition” to “I Put A Spell On You.” The project was inspired after Beck contributed guitars to a Mahler performance a few years back, and will inevitably draw comparisons to the Ray Davies’ Kinks Choral Collection project. Joss Stone, Imelda May, and Olivia Safe will contribute vocals.

The new line-up has spent the last few months in a studio in Fremantle, recording the band’s fifth studio album, which will be released in March 2010. The album will be called April Uprising, named after Butler’s voyage to find his ancestors on SBS Television’s genealogy series, Who Do You Think You Are?. The recording process for the new album has been shared with fans via a special studio sessions page on the band’s website. The first single from the album, “One Way Road”, was released on 4 December 2009.

David Byrne and Fatboy Slim have united to create a 22-track opus entitled Here Lies Love, sketching the life of former First Lady of the Philippines, Imelda Marcos, and her childhood servant Estrella Cumpas. When conceptualizing the album Byrne set out to emulate a night club setting. In the album’s introduction Byrne stated: “The story I am interested in is about asking what drives a powerful person—what makes them tick? How do they make and then remake themselves? I thought to myself, wouldn’t it be great if—as this piece would be principally composed of clubby dance music—one could experience it in a club setting? Could one bring a ‘story’ and a kind of theatre to the disco? Was that possible? If so, wouldn’t that be amazing!”

What better way to celebrate Spring and the beginning of a wonderful season here in the south of France, than with a Spring luncheon! Kick-off the party with tempting Martini’s then wow your guests with an array of easy-to-make finger foods, all using fresh, seasonal produce! Serves 8.

Spring Lamb & Rocket on Toasted Ciabatta Bread with Garlic Aioli 2 lamb fillets Small bag of rocket 1 large or 2 small ciabatta loafs 1 head of garlic Large jar of mayonnaise Olive oil

Aioli: Pre-heat oven to 200°C. Peel away the outer layers of the garlic bulb, leaving the skins of the individual cloves intact. Cut off a ½ inch of the top of the cloves. Drizzle with olive oil, cover with foil and roast for 30 minutes or until soft. When cool, remove the bulbs and enough garlic to taste, approximately 2-3 cloves. Season the lamb and fry in a hot pan. Cooking time for rare is approximately 5 minutes each side. Let the meat rest for a few minutes. Meanwhile, cut the bread in about 1-inch slices, brush with olive oil and toast in the oven. Slice the lamb thinly. To assemble: on top of the warm bread, place a nice heap of rocket. Follow with a few slices of lamb, season and top with a dollop of aioli.

Chilli, Banana and Orange Salad 6 bananas 6 oranges, segmented 4 green chillies 2 red chillies ½ cup olive oil Fresh flat-leaf parsley Juice of 2 lemons Mixed salad leaves/Mesculin

1 packet of cherry tomatoes 1 cucumber 2 yellow peppers (can substitute red peppers) 6 tbs white vinegar

Slice the chillies (de-seed if you do not want the salad too hot) and marinate in the lemon, olive oil and vinegar. To assemble: finely slice all ingredients and toss with the mixed salad leaves. Drizzle with the chilli dressing and sprinkle with the fresh parsley.

Blanch the asparagus until just tender, then run under cold water. Finely chop the dill and mix it into the mayonnaise with the lemon juice. Season to taste. To assemble: spread a small amount of dill mayonnaise onto warmed blinis (in the oven), top with a few slices of salmon, an asparagus spear and finish with another dollop of dill mayonnaise and a small sprig of dill to garnish.

Crab & Broccoli Lettuce Cups

1 large tin of crab 1 bunch broccoli 2 cloves garlic Olive oil Juice of 2 lemons 1 iceberg lettuce Parsley

First, separate the lettuce leaves to make the cups. Clean and cut the broccoli into small pieces and finely chop the garlic and parsley. Fry the broccoli and garlic in a little olive oil for about 4 minutes. Add the lemon juice and crab and warm through (do not overcook). Finish with the parsley and spoon into the lettuce cups.

Kiwifruit Bavarois 2 cups milk ½ vanilla pod, split lengthways 3 egg yolks 1/3 cup caster (superfine) sugar 4 sheets leaf gelatine or 15g sachet powdered gelatine 140ml heavy cream 150g greek yogurt 6 kiwifruits, chopped finely Juice and zest of 1 lemon

Place the milk in a saucepan with the vanilla pod, almost bring to the boil then remove from the heat and leave to stand for 15 minutes. Remove vanilla pod, scrape out seeds and return them to the milk. Whisk together the egg yolks and sugar, than whisk in the milk and return to the saucepan. Slowly bring to the boil, stirring continually until thickened slightly. Remove from the heat, pour into a bowl and cool slightly. Dissolve the gelatine in cold water and stir into mixture. Cool completely, and when almost set, stir in the cream, yogurt, kiwi fruit and lemon juice and zest. Divide the mixture between individual moulds or one large mould and chill until set. To serve: immerse the outside of the mould(s) briefly in hot water and turn out onto a serving plate. Garnish with extra slices of kiwifruit.

1 shot vodka 1 shot apple-flavoured liqueur 1 shot triple sec Splash sweet & sour mix* Maraschino cherry

1.5 shots vodka ½ shot triple sec Passionfruit purée Sugar syrup Strawberry for garnish

1.5 shot vodka 1.5 shot triple sec Splash sweet & sour mix* Kiwi fruit

Pour all the ingredients and ice into a shaker and shake well. Strain into a Martini glass. Remove cherry stem and drop into a martini glass so it sinks to the bottom.

Fill a shaker with ice. Add the vodka, triple sec and a splash of the purée. Sweeten with the sugar syrup and shake. Strain into a chilled martini glass and garnish with a sliced strawberry.

Add all the ingrediants to a shaker filled with ice, shake well and serve with a circle of kiwi fruit on the rim of the Martini glass.

*To make Sweet & Sour mix: dissolve 1 cup sugar with 1 cup water in a saucepan over low heat. Add 1 cup fresh lemon juice and 1 cup fresh lime juice, and refrigerate.
