Wow, is it that time of year already? 2009 seems to have

December 5th marks the beginning of the ski season, so we head to Auron for our ‘Travel Hotspot’ – a great ski resort just an hour and a half from Nice.

flown by, but what a fantastic year it has been. That’s Nice magazine exploded onto the scene in May and since then we have had eight very successful magazines. And 2010 is going to be even bigger and better!

Also, our favourite bars are hosting some fantastic New Year’s Eve parties, so be sure to read our ‘Pub Guide’ for a low-down on THE places to be. Plus, we have all the usual favourites including some highly anticipated CD and film releases.

But we have one more month of the year to go, and it is a wonderful time to be in the French Riviera. Christmas activities are taking place throughout the entire region, and Nice is offering a jam-packed schedule of entertainment. Everything you need to know is in our ‘Day in Nice’ and ‘Christmas in the Riviera’ sections, so you won’t miss a thing! We even have a special page dedicated to Christmas gifts in case you’re a little stuck for ideas this year.

Finally, I hope you have enjoyed reading the magazine this year as much as I have enjoyed bringing it to you. Of course, this would not have been possible without the help of some very close friends … especially Nico, David, Lucy and Tania! Also a big thank-you to all those who took part in the front cover shoots … they are always a highlight of the month.

A day in Nice Christmas in Nice is a magical time of year: a Christmas Village surrounded by palm trees, a live nativity scene with real animals, christmas carols in century old churches ... the list goes on! So throw on the winter wooleys ... it’s time to get into the Christmas spirit!

Just because there’s palm trees doesn’t’t mean we can’t have a white Christmas! Nice’s Place Massena is now hosting the virtual ‘Christmas world’ complete with fake snow and gift-filled chalets!

Each year the regatta welcomes 30-40 crews from all over the world with the finest Olympiclevel athletes competing. The regatta is free to watch along the Baie des Anges, and runs from December 28th-30th.

65th annual Christmas Swim Wandering around the Christmas village is a great way to get into the Christmas spirit. There’s a ‘forest’ of Christmas trees and 60 chalets filled with traditional handicrafts and gifts including Provençal specialities such as honey, lavender and traditional Santons figurines. If you’re looking for a unique gift, perhaps you’ll find one here! Food also features heavily, with local meats, wines and bread available for tasting and purchase.

If a December dip in the Mediterranean is your idea of fun, then join the foolhardy swimmers at Nice’s annual Bain de Noel on Sunday 20th. Average water temperatures hit goose-bumpinducing 15 degrees Celsius in December, so a wetsuit is highly encouraged! The swim departs from the Ruhl Beach at 12pm, and there are activities and animations for the kids between 8.30am and 12.30pm.

The skating rink is always a hit, no matter what your age. Even if you can’t muster the confidence to throw on a pair of skates, it is always amusing to stand on the side-lines and watch everyone else attempt to be graceful.

This year’s theme is ‘The Magic of Russian Christmas’, so you can also see entertainment based on Russian folklore and 3 chalets dedicated to a Russian Christmas. The Christmas Village is open from Saturday December 5th and runs until January 6th. Entrance is free!

Live Nativity Scene Place Rossetti is transformed into a living nativity scene from the the 21st - 27th of December, and is a wonderful reminder of what Christmas is truly about. The display features live animals, figurines, songs, wool spinning, stories and workshops for the kids!

After a hugely successful premier last year, Nice is once again hosting a special Christmas lights competition, and the public are invited to wander around Nice and choose the 3 of the best balcony lighting displays! Last year there were 133 entries in eight areas of the city. Registration closes on December 7th, and the contest will run from the 10th to the 19th of December. Of course it wouldn’t be a competition without prizes, and those who take part in the display are in the running for a gourmet meal, ski holiday package and a podium place at the Nice Carnival 2010! Place Garibaldi and Notre Dame will also be illuminated with energy efficient lights - great for the environment and certainly a sight to behold!

If you are not afraid of heights, then hop on the big wheel for a breathtaking 360-degree view of Nice. Don’t forget to pack a camera, and hold on … the gondolas are not enclosed! As with all good Christmas Villages, there is a bouncy castle for the kids. Adults, unfortunately, are not allowed to join in … I have tried. But there’s plenty of other entertainment for the big kids.

MOSCOW CIRCUS ON ICE Founded in 1962, the “Moscow Circus on Ice” fascinates with its exceptional performance by acrobats, jugglers, high wire artists, figure skaters and clowns … all flying through a sparkling ice arena. It is a breathtaking show for all ages, uniquely combining the art of skating with the multi-faceted tradition of great Russian circus. You can see the show on Saturday the 5th of December and Sunday 6th of December at the Acropolis. Shows are at 2pm and 5pm.

main ski area), 9 chair lifts, 7 button lifts and 1 rope lift. There is occasional night skiing available on one slope. Scattered throughout the resort are 11 restaurants serving everything from typical French food to hot dogs. Eating and drinking in Auron is generally well priced, making this resort affordable for pretty much every skier and boarder. Speaking of boarders, while Auron is not known for being a snowboarding mecca, it does offer much for them to enjoy. There is a relatively new snowboard park with a half pipe, together with a network of motorway-like runs which are perfect for fast (and not so fast) carving. The steep descents from the Col du Bouchiet and the Secteur las Donnas will be tough enough to thrill most boarders.

Just 90 kilometres north of Nice lies Auron, the skiing capital of the Maritime Alps. With 135 kilometres of pistes, and excellent off-piste skiing, Auron has established itself as a fun and easy getaway among skiing and boarding enthusiasts in the Riviera. Auron is one of the sunniest and most popular ski resorts of the region, together with neighbouring resort Isola 2000. The slopes of Auron have a north/north-westerly aspect, ensuring a good and generally reliable snow coverage from early December to mid May. There are 16 blue runs, 15 reds, 9 blacks and 2 green. The resort is divided into 4 areas: Las Donnas, Sauma-Longue, Demandols and Lieuson. On clear days, Demandols is the epitome of beauty – it covers an isolated valley and is the sunniest area of the resort.

Of course, it wouldn’t be skiing without après ski, and Auron offers some fun options. Much of the informal nightlife happens in and around the many bars and restaurants, including piano and cocktail bars and two nightclubs. For families, there is often free entertainment, with concerts, circus acts and magicians making regular appearances. If you need to brush up on your French skills, then you’ll be happy to learn that Auron is very French, and it is a favourite winter getaway among Riviera locals. For that reason, it is highly recommended that weekend visits should be avoided in favour of midweek trips, that is if you want to steer clear of those annoying lift queues. Overall, Auron is not your largest or most glamorous resort, but its close proximity to Nice makes it perfect for day trips.

For beginners, the two best areas are at the middle station of the Chastellares and at the foot of the Secteur Colombier. It is highly recommended that novices take advantage of the affordable ski schools, before progressing to the pleasant, cruising runs that wind all over the mountain. There are many wide, open runs for intermediates to enjoy, regardless of ability. In fact, Auron is probably most suited to the intermediate, offering 31 blue and red runs in total. Meanwhile, the more skilled will appreciate the more challenging slopes around the tiny, high altitude village of Demandols. Auron is also popular for it’s off-piste skiing, especially in the early months of the season. The resort of Auron is well catered for, with 21 lifts including 3 cable cars (one which brings skiers up from St Etienne de Tinee to the

Leaving Nice and heading to the airport, take the D6202 route direction Digne-les-Bains. At the junction with the Tinée Valley, go north on the D2205 past Tournefort, La Condamine, Clans, Marie and Bolinette. Keep left staying on the D2205 and the road to Auron is to the left just before the village of Saint Etienne-de-Tinée.

Restaurant Reviews

Gastronomic pubs can be found in almost every major city across the globe. After all, there is something special about enjoying a pint and a meal in a cosy pub atmosphere, without compromising flavour and quality. Finally, the Snug has brought this worldfamous concept to Nice. Complimenting a hugely successful Tapas menu is now an à la carte menu that is simply sublime. English Chef Charlie and Australian Chef Tiernnan have proven their skills once more, producing a variety of dishes that are worthy of applause. And please don’t be disappointed when you don’t find fish n’ chips or burgers on the menu. Snug’s English/Irish persona has fused with the goodness of local French cuisine, offering entrée’s such as whole baked Camembert with a garlic, rosemary and honey confit and crudités (7.50€), confit of duck leg (9.50€), soup of the day and their famous Snug anti-pasti plate delivered with freshly marinated vegetables and quality parma ham (7.50€). The main dishes have been carefully thoughtthrough and are well priced, given their freshness and size (there is no freezer in the Snug kitchen so all produce is delivered daily). The hand-carved sirloin steak comes in two sizes – a 10oz or 6.5oz – and is topped with sautéed mushrooms, honey glazed baby vegetables, hand-cut chips and a red wine jus. The steaks are priced at 17.50€ and 14.50€ respectively. And it is nice to see a steak that is affordable and priced under 20€.

of braised cabbage, delivered with crunchy snap-peas and green beans and a side of minted baby potatoes (16.50€). The lamb was deliciously tender and cooked to perfection. Personally, when eating out I choose dishes that I cannot make at home. Lamb is ridiculously priced in France therefore it’s inclusion on the Snug menu is greatly appreciated. The same goes for duck, the final meat option on the menu. The pan-fried duck breast is served with chorizo dauphinoise, fresh asparagus and a red wine jus (16.50€). The fish changes daily and is priced according to the market. On this day, we tried the whole baked Dorade, oozing with a citrus and pepper butter, served with boiled baby potatoes and fresh greens. Simply delightful. Vegetarians can expect to be greeted by the chef, informed of the days fresh produce and asked what their likes and dislikes are, before the chef returns to the kitchen to create a unique and specialised dish. It is an attention to detail that I imagine vegetarians rarely receive.

The chef’s signature dish is the Bouillabaisse – a traditional Provençal meal that originated from Marseille as far back as 600BC! The Snug’s Bouillabaisse consists of a tomato, Pernod and saffron soup with a selection of shellfish and fresh sea bass (17.50€). This dish I can highly recommend and I congratulate a non-French chef for perfecting this ancient dish of the Phoenicians.

For dessert, the Snug offers a cheese plate with regional cheeses, grapes, apple, croutons and a courgette chutney (7€); a different flavoured Crème Brulee each day (5.50€); and a double chocolate mousse, made with dark chocolate and Guinness, topped with white chocolate and baileys and served in a Guinness glass (5.50€).

Overall, the Snug’s à la carte menu is not extensive but it is designed to satisfy most taste

buds. And as mentioned earlier, there is also the Tapas menu to choose from. Teriyaki tuna on a bed of pak choy and spring onions; roasted sea scallops and tiger prawns with a citrus and herb butter; char-grilled chicken and chorizo on a rocket and cherry tomato salad; steamed won tons – these are just a sample of what’s on offer. Choose one dish for 5.90€, 2 dishes for 9.90€, 3 for 13.90€, or 4 for 16.90€. With red meat, I would recommend the house red – Lazy Lizard Shiraz – which is well priced and very tasty. For an aperitif, the cocktails are hard to pass up and a steady flow of customers ensures the Guinness is always good. It was not surprising to learn that the chef’s at Snug have trained in some of England’s most prized restaurants, including Claridges. Restaurant Reviews L’Univers Le Locale

… plump kalamata olives, marinated mushrooms, buffalo mozzarella at its best with a soft gooey centre, and marinated aubergine just like my mum used to make. It is a plate that should be chosen as a main or shared for entrée, because at 13€ this is certainly value for money.

Hearing great things about a restaurant is like hearing great things about a movie … you never know if it will live up to all the hype. Luckily, Le Locale exceeded all expectations, and while this popular restaurant certainly doesn’t need the advertising, it truly deserves to be shared!

For mains, we chose the fusilli pasta with a ricotta and aubergine sauce. Ricotta is known for its subtle flavour, so the characteristics of the aubergine and fresh tomato sauce reined through perfectly. The pasta itself was also too good to be overpowered by a strong sauce. Next we tried the truffle risotto with chunks of pork dotted throughout. Clearly, risottos are the chef’s forte, because this was simply amazing. It is important to note that only those who love and appreciate truffles should order this dish, as it very dominating ingredient.

Le Locale is an intimate Italian restaurant at Nice Port. But this is not simply a French restaurant adopting the category of “Italian” because it sells pizza and pasta. Le Locale actually epitomises all that Italian food is famous for … fresh pasta, todie-for risottos and THE best anti-pasti selection this side of the border! Le Locale also doubles as a deli. Every inch of wall is filled with tempting Italian produce and wines. The front of the restaurant has large glass cabinets brimming with marinated vegetables and cured meats. It is great for those who want to recreate at home the meals they have eaten here.

We chose a nice Chianti for 19€ a bottle, which was a very easy to drink wine with enough oomph to compliment our meals. Unfortunately, there was no room for dessert, but we’ll make sure we leave room next time. And there will be a next time … as I have now become one of those people who rave about that restaurant at the port called ‘Le Locale’. Cassandra Tanti

The somewhat narrow restaurant takes on three different characters - the deli with tables at the front affords a very informal and cozy ambiance; the middle room has a large table that is perfect for parties and is illuminated with fairy lights and strategically lit produce; and the rear of the restaurant offers full view of the open kitchen with it’s sparkling stainless steel benches and clearly hygienic practises.

The menu is largely in Italian, which is initially quite difficult to understand. But the menu is not extensive and it is categorised into anti-pasti plates, pastas and risotto’s (thankfully, there is not a pizza in sight!). For entrée we chose a mixed anti-pasti plate, and as it was laid before us I instantly understood why Le Locale has the reputation that it has. The plate was piled high with freshly cut meats including the most delectable shaved ham I have ever tasted. This plate could not be faulted

Take the stress out of buying Christmas presents this year by following these few simple rules: Just like Santa, make a list and check it twice. Write down everyone who needs a gift this year and have an idea or two listed of what they might like. Shop early. It is a more enjoyable and relaxed experience when you do your shopping a few weeks before Christmas. Easier said than done? Make a date, put it in your calendar … and stick to it! Do little shops at a time. Buy local! There are some fantastic small and independent stores that offer unique and interesting gifts. You won’t have to fight through the crowds at the large shopping centres, and your friends and relatives back home will appreciate something unique from Nice. Set a budget and stick to it! Save receipts, especially for clothes and electrical goods. Finally, reward yourself. Treat yourself to a special lunch for a job well done!

Feature Article What you should know ... about that other kind of snow. It is now as commonplace to have a line of coke for “dessert” at a dinner party, as it is to sneak in a line at a nightclub toilet. Cocaine is no longer reserved for the rich and famous, it is affordable and it is the most popular drug of choice only after cannabis. It is also at the heart of Europe’s drug problem.

THE FACTS 4 million Europeans have used cocaine in the last year. 1.5 million have used it in the past month. Offences related to cocaine have increased by about 59% between 2002-07. The purity of cocaine averages around15% France is one of 7 main transit countries for cocaine shipments in Europe Only a small proportion of those who have used cocaine at least once in their life appear to develop intensive patterns of use. Men are twice as more likely to use cocaine as women. A quarter of all heart -related deaths in person’s aged 18-45 are attributable to ‘frequent cocaine use’. Cocaine was involved in 6 out of every 10 drug-related emergency visits in 2006. In 2007, around 500 deaths related to cocaine were reported in 12 Member States.

While statistics show men are still twice as likely to use cocaine, there is growing evidence that women are catching up. Chasing a cocktail with a line is considered the ultimate ‘hit’ of dopamine, as cocaine mixes with alcohol in the liver to form a chemical reaction called coca ethylene. And after all, surely a little line never hurt anyone? Well read on. THE PHYSICAL EFFECTS While the use of cocaine remains strong, the purity of the drug at street level is falling. And the scariest part is what they are now mixing it with. According to reports, at least 40% of cocaine seized at UK borders is laced with a chemical that can cause seizures, unconsciousness and death. Previous cutting agents like brick dust or talcum powder have been replaced with anaesthetics and analgesics, which numb the gums in the way a user would expect with cocaine. Drug dealers are now mixing pure cocaine with tetramisole - a white powder used for worming animals. Large doses can poison humans, causing fever, difficulty breathing due to swelling of the lips and throat, loss of consciousness, numbness and seizures. Tetramisole also weakens the immune system, making cocaine users more susceptible to infections. In addition, it was reported in 2008 that 70% of the cocaine seized in London also contained a painkiller that is no longer licensed to be used in the UK, after tests on animals suggested it may cause cancer. And that cocktail with a cheeky line chaser ... could actually kill you. When alcohol is absorbed into the bloodstream it works as a central nervous depressant. Add cocaine - a stimulant - and the body struggles to handle both effects. The result can be lethal, especially to the liver. Even without alcohol, cocaine can cause a sud-

den rise in blood pressure and heart rate, contractions of the left ventricle of the heart, and constricts the coronary arteries that feed blood to the heart. If the artery constricts, blood flow to the heart and brain can be obstructed causing a heart attack or stroke. According the European Monitoring Centre for Drugs and Drug Addiction (EMCDDA), cocaine was involved in 6 out of every 10 drug-related emergency visits in Europe in 2006. Meanwhile, the number of drug-induced deaths in France rose to 305 in 2006. Opiods remain the main cause of death, however cocaine comes a close second. The non-lethal effects of cocaine include twitchiness, bloatedness, paranoia and schizophrenia. Here’s a run-through of the possibilities: After a big night on cocaine, it’s not unusual for people to feel like they’ve got the flu. Some people are over-confident on it and so may take very careless risks. The hit from coke doesn’t last long and when the effects start to wear off, there can be a very strong temptation to take more, particularly with the long ‘come down’- the crash period can happen days later. Cocaine powder users have died from overdoses. Risk increases if crack is mixed with heroin, barbiturates (sedatives) or alcohol. Cocaine is highly risky for anybody with high blood pressure or a heart condition. You may not know you’ve got a pre-existing heart condition. Those who get into cocaine very often find they begin to crave it more. And because the effects wear off so quickly, cocaine can become an expensive habit to keep.


Using cocaine a lot makes people feel depressed and run down. Regular users often develop serious problems with anxiety and paranoia. It’s a known cause of panic attacks. Large or frequent use of coke tends to knock sexual desire on the head. Cocaine can bring previous mental health problems to the surface.

THE ENVIRONMENTAL EFFECTS

We need to tell Europeans that every ounce of cocaine they snort is tainted in blood.

That statement comes from the Vice President of Colombia - where 80% of the world’s cocaine is produced. Farmers in Colombia grow coca plants - cocaine is obtained from its leaves. Vice President Fransisco Santos explains that the money from cocaine is used to finance land mines (used in the coca fields), destruction of environment, terrorism, kidnappings and displacement. Some 2.2 million hectares of rainforest has been lost to cocaine production over the last 20 years. And drug barons are devastating the country’s soils and water sources by using harmful or banned pesticides. HOW DOES IT GET HERE? Spain, particularly Calica in the northwest, has a long history of being used as an entry point to Europe for drug traffickers. Customs officials in Montpellier seized the largest land haul of cocaine in France in May this year. Two British men were arrested after 684kgs of cocaine, estimated to be worth approximately 25 million pounds, was found stashed inside sealed plastic tubs in a lorry. Meanwhile 60 people were arrested in the same month after 2kgs of cocaine were seized in St-Tropez. DRUG LAWS In France, the law does not distinguish between possession for personal use or for trafficking, nor by type of substance. It is up to the prosecutors to decide what the charge will be based on the quantity and context of the case. In the worst

case scenario, if someone is charged with personal use they face a maximum prison sentence of one year and a fine of up to 3750€. A nonaddicted offender may have to pay up to 450€ for a compulsory drug awareness course. Drug trafficking is punishable with imprisonment of up to 10 years. A VACCINE? It was announced last month that an experimental anti-cocaine vaccine was successful in reducing cocaine use in 38% of vaccinated patients, in a clinical trial supported by the National Institute on Drug Abuse. It is the first successful, placebocontrolled demonstration of a vaccine against an illicit drug of abuse. Like vaccines against infectious diseases such as influenza, the anti-cocaine vaccine stimulates the immune system to produce antibodies. The antibodies neutralize the cocaine and make it vulnerable to an enzyme that will then break it down. The cocaine therefore doesn’t affect the brain, the heart or any other organ. Most people will need 2 years of treatment with the vaccine, and vaccinations for other drug addictions are likely to be developed from this research.

Hepatitis C attacks the liver. Early symptoms are normally mild, like tiredness and feeling low. Long term effects include cancer, organ failure and even death. People with liver disease only tend to get the bad obvious symptoms when it is too late. Health experts warn that if you’ve ever snorted drugs, go get a test. A study by the Medical College of Wisconsin in 2000 found that 33% of 147 particpants tested positive for hepatitis C. HOW LONG DOES IT STAY IN THE SYSTEM? Cocaine can be present in the body for 72 hours after intake. For habitual users, it can be detected in urine for up to 12 weeks.

The metabolites the body produces from cocaine will remain for up to several weeks. If you’re a habitual cocaine user, though, all bets are off. The cocaine has metabolized itself into your blood, urine, internal organs and even your hair. It takes much, much longer for all the metabolites to leave your system, and the drug tests test for not only the drug itself, but the metabolites.

Like anything in life, it is always important to make an informed decision. Will knowing the facts help curb Europe’s love affair with cocaine? According to anti-drug campaigners, apparently not, until cocaine attracts the same ‘taboo’ status of other hard drugs such as heroin. As the executive director of the United Nations Office on Drugs and Crime, Antonio Maria Costa, puts it … “either Europe snaps out of its state of denial, or it should brace itself for the consequences.”

Once you stop taking cocaine, there are a few things you can do to help speed up the process of getting the drug and it’s residual effects out of your system. The biggest one is drinking lots of water. This will help “flush” the drug from your system, including some of the metabolites. Exercising will help as well, since this will increase your metabolism and move that water through your body a little faster.

HEPATITIS C People who share a rolled up note or straw for snorting drugs risk exposing themselves and others to hepatitis C. This is especially true if someone’s nose is bleeding. Cocaine in particular is very alkaline and corrosive to the thin membranes in the nose. If even tiny drops of blood, too small to see, get onto the straw or note and someone else then uses it, it is quite possible for them to

It’s not uncommon for habitual users to fail drug tests 4-6 weeks after they last used; the metabolites are still stored in their bodies, and the drug tests pick that up. Recipes from the Riviera Christmas Menu Sauteed Foie Gras INGREDIENTS 1 lobe of quality foie gras sea salt and cracked black pepper 2-4 slices of whole grain bread, toasted and cut into quarters 2 tsp oil 2 tbsp balsamic vinegar 1 tbsp butter

De-vein the foie gras and cut into 1/2 inch thick pieces, then season with salt and pepper. Heat 1 tsp of oil in a heavy pan over a moderately high heat until hot but not smoking. Sauté half the foie gras until golden, 45 to 60 seconds each side (it will be pink inside). Quickly transfer to a paper towel to drain and discard fat. Sauté the remaining foie gras, then discard all but 1 tbsp of the remaining fat. Add 2 tbsp balsamic vinegar and bring to the boil, then add the butter and melt into the sauce. Serve with the foie gras.

Roast Turkey with Sage & Onion Stuffing served with Homemade Cranberry Jelly INGREDIENTS Stuffing: 3 large onions, diced 3 cloves garlic, chopped 100g butter 4 tbsp oil 300g fresh breadcrumbs (use stale bread & rub in hands until a breadcrumb consistency) 100g breadcrumbs, pre-purchased 1 bunch fresh sage, chopped Cranberry Jelly: 1 cup sugar 1 cup water 4 cups fresh or frozen cranberries

Stuffing: Fry the onions and garlic in butter and oil until tender. Stir in all the breadcrumbs and the sage, season with salt and pepper, and mix thoroughly. Let it cool and remove the innards of the turkey. Stuff the carcass loosely with the mixture – the stuffing should be able to cook through easily. Baste the turkey with a mixture of oil and melted butter, and cook in a preheated oven according to size. Remove the bird from the oven a few degrees shy of the desired temperature, as it will keep cooking as it rests. Leave the turkey for 20 minutes to redistribute juices before carving.

Cranberry Jelly: Bring water and sugar to the boil, stirring constantly to dissolve the sugar. Add the cranberries, return to the boil and simmer for 15-20 minutes until the cranberries burst. Remove from the heat and cool. Serve with the stuffed turkey and a rich gravy! Cooking the perfect turkey:

Pre-heat oven to 220°C. Cook for 35 minutes, then reduce temp to 170°C and cook a further: 2 ½-3 hrs for a 3.5-4.5kg turkey 3-3 ½ hrs for a 5.5-6.5kg turkey 4-5 hrs for a 6.75-9kg turkey Give it a final 30 minutes at 200°C.

Quick & Easy Christmas Cake INGREDIENTS 500g mixed dried fruits 150g dried apricots, diced 150g glace cherries 225ml stout (i.e Guinness) 100ml whiskey 75ml orange juice 1 orange zest 200g butter 200g soft brown sugar 250g plain flour 2 heaped teaspoons baking powder 5 eggs, lightly beaten 1 ½ tsp mixed spice 75g chopped nuts (i.e almonds, pecans) METHOD Pre-heat oven to 140°C and lightly grease a large round cake tin. Place the fruits, stout, whiskey, zest and 50g of brown sugar into a large pot and bring to the boil, stirring occasionally. Simmer gently for 10 minutes then remove from heat and allow it to cool completely. Place all remaining ingredients in a large bowl and mix thoroughly until smooth. Fold in the fruit mix and nuts. Spoon mixture into the prepared tin and bake for 3 hours. You can tell the cake is ready by piercing the centre with a kebab skewer and if it comes out clean, the cake is ready. Serve warm with hot custard and cream.

EGGNOG 4 eggs 1/2 cup sugar 1/2 cup white rum ground nutmeg

1 1/2 cups milk 1 1/2 cups whiskey 1 cup heavy cream

Separate eggs into yolks & whites. Beat egg yolks with half the sugar, set aside. Beat the whites until stiff, then mix in the remaining sugar. Pour the yolks into the whites & mix together slowly. Gently stir in white rum, milk & whiksey. Finally stir in half the cream. Whip the rest of the cream and fold in carefully. Serve at room temperature, ladling into cups and sprinkling with nutmeg.
