elcome to the new-look That’s Nice magazine! After nine very busy and successful months, we thought it was time for a makeover, so we hope you like it! But don’t worry, the magazine still contains all the goodies you expect to have the most amount of fun possible in the Riviera. So, what an action-packed month we have. The spectacular Nice Carnival hits the streets for 10 days from February 12th bringing an eco-friendly message with it. Do you see the cute green frog on our front cover? Well, he is the mascot for this year’s carnival and a reminder of why we need to look after our planet. Carnival organisers have gone to great lengths to make this year’s event as environmentally friendly as possible, setting a precedent for the rest of the world. A big thumbs up to them, I say.

And gentlemen, don’t forget that February 14th is Valentine’s Day! Don’t be fooled by women’s exclamations that it is simply another over-commercialised day … they are secretly expecting a rose and dinner. Luckily, we’ve got some of the city’s best restaurants listed right here in the magazine! It’s not just Nice that erupts into a flurry of festivity this February. In Menton, they are celebrating all things citrus with the Fête du Citron, while in Mandelieu there’s an entire festival dedicated a fluffily yellow flower – the mimosa. If those are not to your liking then I know this will be … a whole trade fair dedicated to chocolate, bread and love, in Antibes. There you go, something for everyone this month! You can find information on all these events in this edition of That’s Nice, PLUS all your favourites – recipes, cinema releases, live music guide – even some advice on how to get through the cold and flu season. Menton Fête du Citron 12th February to 3rd March
A unique event on the French Riviera, featuring a fortnight of fun based on the theme “Menton, the star of cinema”. The festival includes an exhibition of fine orchid specimens at Palais de l’Europe; an Arts & Crafts Show inspired by citrus fruit, with jam, honey, liqueur, soap and perfume, wood carving and ceramics; and guided tours discovering the citrus fruit of Menton. Highlights include: Thursday 18th & 25th at 8.30pm – Parade of lights and fireworks at 10pm. Exhibition of giant motifs made with citrus fruit – travel around the world with splendid compositions made with lemons and oranges. Opens 9am at the Biovès Garden. Mimosa Festival - Mandelieu 12th – 21st February The city of Mandelieu celebrates its emblematic flower, the mimosa, with a festival centred on the theme of “Myth & Legend”. Nice Carnival
The biggest and most spectacular carnival in the country and one of the top three carnivals in the world! For ten days, the city of Nice erupts into an extravagant party with huge papier-mâché puppets, exquisitely decorated floats, parades by day and an illuminated fairytale world by night. The carnival is a spectacular display of modernity blending with tradition. This year’s theme, ‘The King of the Blue Planet’, traces mankind’s wandering’s and mistakes throughout time. It combines modern ideas of ecology with traditional symbols linked to the history of Nice Carnival. Carnival organisers have taken the radical step of making the event as eco-friendly as possible. LED’s, frescoes on recyclable tarpaulins, low-consumption big screens, doing away with power generators, recyclable badges, and a carbon tax for floats and vehicles used in the flower battles. It really is a world-first.
Where did it all begin?
The carnival is an ancient tradition of overindulgence, the last opportunity for people to eat rich and fatty foods before the forty-day feast of Lent. It became a period in which the Catholic Church relaxed its restrictions and, disguised behind their masks, the people of Nice indulged in activity forbidden at other times of the year. But it was not to last long. The excesses and frivolousness was soon controlled by the “Abbés des Fous” (Fools’ abbots), and under the influence of the Carnival of Venice, private masked balls developed in the course of the 18th century at the expense of the attractions in the street. The carnival was suspended during the French Revolution, but was born again in 1830, as some thirty carriages were paraded in front of King CharlesFelix and Queen Marie-Christine. Until 1872, the carnival was shaped by the people, with crowds wearing disguises and throwing confetti, flour and eggs at each other.
The carnival soon evolved to include elaborate floats designed by prestigious press cartoonists, and great care was given to the choice of themes and creation of the floats. Being a “Carnavalier” (creator of floats) became a fully-fledged profession.
The Carnival today
The Carnival parade is made up of some 20 floats with 30 big heads and 200 associated elements. The flower parade (a 130 year-old tradition integrated with the Carnival in 2005) is the most unique in the world and is an elaborate display of local flora. In fact, 90% of flowers used are produced locally. On each float, extravagantly dressed characters throw 80-100,000 flowers to an enthusiastic audience: gladioli, tokyos, mimosa, gerberas, daisies, roses and carnations.
Entertainment
Entertainment is made up of one third professionals, one third amateurs and one third locals. This year there are special performances by the Flying Artists, the Varnishers and the Elephant from the Planète Vapeur troupe. There’s a Fun Corner on Square Yitzhak Rabin near the Théâtre de Verdure, open daily from 11am-5pm. It hosts a jumble of free green shows and workshops for the kids.

On the final night, the papier-mâché giants dance their last dance as their Carnival King is lead to the beach on his throne and ceremonially set alight, bringing the event to a close among a flurry of fireworks.

Courchevel Courchevel is arguably France’s most exclusive resort - the Monaco of the slopes; a winter getaway for the likes of Danish and Spanish royalty, presidents and film producers. It is the place “to see and be seen”. Yet beneath all that glitz and glamour is the largest inter-connected resort in the world, renowned for its black runs and on/off-piste infrastructure. And, as we discovered, you don’t just have to be royalty to be welcomed in Courchevel. In fact, it is possible to holiday here on a budget!
Courchevel is located at the eastern end of the Trois Vallées. It has some of the most specatcular scenery in the world and over 150 kilometres of skiable terrain. The infrastructure alone in Courchevel and the Three Vallees is phenomenal - close to 200 lifts and over 2000 snow cannons. The resort is made up five different base stations and self-contained villages, all well connected and all known by their altitudes: Courchevel 1850 is the biggest village and the jewel in Courchevel’s crown. Expensive boutiques, gastronomic restaurants, shopping malls and bars are conveniently located throughout the village, while the secluded Jardin Alpin sector is a cluster of extravagant chalets and ridiculously expensive hotels. Dali at 2700 metres anyone? For the 20th anniversary of the death of Salvador Dali, Courchevel 1850 has become a virtual open-air museum, showcasing 7 original “monumental” works (up to 7 metres high) and 7 original “museum” works. They are among the best known of the Dali creations from the 1980’s. Two of the sculptures can be admired on the slopes as high as 2659 metres with the spectacular panorama of the “3 Valées” in the background. The rest can be found at the heart of 1850. Sculptures, prints and paintings are presented at the “Galerie de l’Alpage III”. If 1850 is where you
want to be, then don’t be put off by its reputation; it is still possible to find affordable accommodation, restaurants and entertainment. For example, the Courcheneige Hotel has a double room with free buffet breakfast and 3 course evening meal for around 150€ per person, per night. Slide in off the slopes for a lunch in the sun at the Courcheneige Brasserie, and enjoy a full buffet, soup, burgers or omelettes for all under 15€ - a steal in resort standards. In the village, there’s the “Refuge” restaurant offering meals for around 10€ cheaper than average, and drinks are all pretty much comparable to Niçois prices. While 1850 is certainly not cheap, it can be enjoyed on a relative budget. Your best bet is to ask the ski rental staff where they go in 1850. Courchevel 1650 is fast becoming the affordable alternative to 1850. It offers an old village centre, chalets and accommodation, together with fairly priced restaurants and bars (The Bubble is said to be the best bar here). The pistes of 1650 are less busy (particularly during the French holidays) with cruisey red (Chapelets & Rochers) and blue runs, with scope for off-piste diversions. For more serious off-piste skiers and boarders, there’s the area near Chanrossa lift. Courchevel 1550 is the most quiet of the villages, with just a handful of chalets, hotels and apartments. But once again, access to 1850 is fast and convenient with a highspeed 6-person chairlift and a bubble lift. Courchevel 1300 (Le Praz) is a cosy, Savoie working village with a very authentic feel, offering everything from a butcher and post office, to quality restaurants and ski shops. It also has hassle-free access to Courchevel 1850 via two bubble lifts – a quick and easy eight-minute journey. The trip back to 1300 takes you on two of the greatest runs in skiing … the Jean Blanc and Jockeys black runs.
DALI Open-air exhibition
Courchevel 1350 (La Tania) was established to accommodate the 1992 Winter Olympics, and is now a small village offering a handul of restaurants, bars and shops. It is, however, perfecting for skiing in and out of and is great for families, self-catering and budget holidays..

Other Activities: Ice skating, bowling, tobogganing, skidooing, ice climbing, hand-gliding, snow rafting, cinema, arts galleries, fitness centres, squash. Après Ski: The nightlife in Courchevel is most lively in 1850. For a taste of the glitz and glamour, head to Les Caves (table booking is recommended). Less flashy is the Kaliko, Piggy’s, Milk and The Grange. As mentioned, The Bubble is the best bar in 1650. Getting there: The resort is situated in the Les Allues valley and the nearest town is Moutiers (15 miles/24km), which has a train station and regular buses to the resort. The resort can be easily accessed from the airport of Geneva (3 hours, 93 miles/149 km), Lyon (3 hours, 116 miles/187 km) and Chambéry (2 hours, 68 miles/110km). A train from Nice requires 2-3 changeovers, takes approximately 8 hours and costs around 90€.

Café del Mare
You would expect to stumble upon a restaurant like Café del Mare in a major metropolitan city such as London or Melbourne, certainly not in the beautiful yet inconspicuous port of Beaulieu sur Mer. Yet it was here that we discovered a menu dominated by the delectable influences of Asia, dished up in an atmosphere of class, unpretentiousness and charm. Café del Mare is not exactly cheap, but if you’d prefer your money be spent on satisfaction, then you’ll appreciate every cent. Café del Mare is a quite a large but cosy restaurant decked out in warm tones, with cream-colored linen drapes and dark chocolate floors, wooden centrepieces filled with metre-high cane, and bonsai trees dotted throughout. The artistic value of Café del Mare extends to the menu, which is presented in a hardbound photo album brimming with Asian, French and Mediterranean dishes. The menu is both in French and English. Entrées cover everything from house foie gras (19€) to mesculun salad drizzled with truffle oil (12€). And for the mains, it is hard to pass-up the Asian plate - piled high with tempura prawns and vegetables, spring rolls, steamed prawn dumplings, and three different dipping sauces – the perfect choice for that oriental craving. Given its size, the dish is well priced at 23€. Similarly, the seared tuna with sesame seeds and scallops presented on a bed of stir-fry vegetables was faultless (23€). If Asian isn’t your thing, there are fancy burgers, topped with foie gras (for the French) parma ham (for the Italians) or double everything (for the Americans and the super hungry). And the list goes on: pasta, fish and meat. It is the kind of menu that keeps you choosing long after you have left the restaurant. The wine list is also well priced and covers the classics - Minuty (19€ bottle/4.50€ glass), Pomerol (68€) and Bandol (48€). We had the Chateau St Pierre red, as suggested by our waiter- a lovely drop at just 25€ a bottle. Café del Mare is a leisurely 15-minute drive from Nice, along the stunning cliffs to Monaco. If the aim of your evening is to dine in style, where the quality of the food matches the decor, then this is your place.

Journey into a veritable cave of fondue, with irresistible melting pots of gooey, creamy cheese and neat little morsels of prime meat cooked in lava-like liquids. While fondue is clearly a cuisine suited to the metabolisms of the French, sometimes, just sometimes, we can indulge in their guilty pleasures. Le Choucas is a buzzing fondue restaurant in the heart of the old town of Nice. The intimate, cave interior doesn’t leave much elbowroom, but it all works towards the authentic, rustic ambiance of this hearty, mountain cuisine. What’s not so traditional is the welcome white wine sangria you receive as you are seated at comfy lounges while your table is being prepared. It’s affords a unique lounge-bar vibe, and is a great opportunity to catch up with friends before food becomes your main priority. Salads and bruschettas feature on the menu, together with traditional meat and pasta dishes – all reasonably priced. The fondue menu includes beef, chicken, lamb and cheese, and to cover all bases I recommend the mixed meat plate and the Savoyarde (cheese). The fondue comes with a very large portion of house-made fries and sliced courgette, although I think steamed potatoes and vegetables would be a more suitable alternative to the richness of the fondue. Now if you are not a fondue-regular, it can take a few attempts to perfect cooking times. So, here are some tips: 1) Don’t overcrowd the fondue pot, it will lower the temperature of the oil. 2)Stir cheese fondue constantly to keep the gooey consistency. 3) Cooking times: Beef rare 15-20 sec., med. 25-30 sec., wd 40-45 sec.; Lamb 1 minute; Chicken 2 minutes. Note that throughout the course of your meal, you may have to increase your cooking times, as the juices of the meat will lower the temperature of the oil. 4) Don’t drink water with cheese fondue. The cheese congeals into a ball in your stomach. Stick to wine!

The end result is a full stomach, a night of laughter as you fight to remember which fork is yours, and a reasonable bill - around 20€ per person including wine. To top it all off, you also receive a nice fruity digestive on the house!

Upon arrival, diners receive a welcome plate of papadums and dips – mint, plum and the most divine ginger/lime chutney. It serves well to wet the appetite and prepare the taste buds for what’s to come. Be prepared to set aside at least 15 minutes to get through the menu, it is extensive and varied. For around 4.50€, you can get a nice entrée of vegetable or meat samossa, onion pakoras or Indian salad.

Main dishes are priced between about 7.50€ and 12€. On this night, my friends and I indulged in the lamb biryani – a north Indian classic combining the fragrance of basmati rice with garam masala and tender pieces of lamb; the ever popular butter chicken – a perfect choice for those seeking a mildly spiced dish; chicken saag – a tasty, nutritious dish made with pureed spinach; chicken tandoori –simply executed yet always satisfying; samosas and marinated lamb kebabs.

The appropriate groans of delight echoed throughout the meal with the ever-present question: do we need more naan? In fact, naan lovers will be delighted with the somewhat rare inclusion of chilli naan on the menu. And beware the cheese naan – it is far too good to share! There is also naan stuffed with coriander and onion, garlic, or nuts and dry fruits. So, a portion of rice, about 7 naan breads, 6 dishes and two bottles of house wine later, our bill came to just 20€ each. The lunch menu is also very cheap at 9.90€ for entrée, main and dessert. And an evening menu is available for 16.50€.

Leaving the World by Douglas Kennedy
February sees the paperback edition of Douglas Kennedy’s latest novel, “Another classy page-turner” as The Independent puts it. Kennedy almost invariably has women for his central characters, something that he pulls off with remarkable insight. Jane Howard made a vow as a child never to get married or to have children – a reaction to her parent’s unhappy relationship. But life never turns out exactly as one expects and years later, comfortably installed in life she finds herself (yes) pregnant. Motherhood turns out to be a welcome surprise however, a series of events puts existence as she knows it into jeopardy leaving her to navigate her way as best she can through the dilemmas she faces. Put like that you might wonder what makes the book un-put-downable and worthwhile of all the other superlatives being bandied around. Try it – and you’ll find out!

How to get through the cold & flu season February – the heart of winter and the dreaded cold and flu season. Icy temperatures are sending us indoors to a veritable breeding ground of contagious germs and viruses. But there are ways to safeguard yourself against those unwanted germs and help your body achieve a speedy recovery. And best of all, it doesn’t involve a trip to the pharmacy! The key to a healthy body is a strong immune system. And it’s easy with these few simple steps. Even if you choose three or more of these suggestions, you will substantially improve your immune strength, and increase your ability to stay mentally and physically healthy through the dreaded cold and flu season. Stock up on lemons This is a very simple yet effective technique to help stave off colds and flu. Lemons restore the acid-alkali balance in the body, and drinking freshly squeezed lemon juice in water, or adding it to tea, salad dressings and cooking can help maintain the body’s internal “climate” at a pH which supports healthy bacteria instead of the viruses and harmful bacteria which thrive in more acidic environments.
Drink plenty of water We all know that we should drink more water, but the idea of consuming litres of the stuff every day is somewhat daunting. So rather than picturing a 2-litre bottle of water which you must consume by the end of the day, break it down like this: two glasses of water when you wake up in the morning, 2 glasses at lunch, 2 glasses with dinner and 2 glasses before bed. And remember, every system in your body depends on water: it flushes toxins out of vital organs, carries nutrients to your cells and provides a moist environment for ear, nose and throat issues. Even mild dehydration can drain your energy and make you tired. Get into the habit and you’ll be downing your daily intake of water in no time!
Get a full night’s sleep A good sleep doesn’t simply equate to a clear head in the morning. Researchers believe that lack of good quality sleep disturbs regulation of key chemicals produced by the immune system to fight infection. If you are not getting enough sleep, assess your lifestyle and sleeping environment and make the necessary adjustments!
Give your body a herbal boost Fresh herbs: Garlic is one of the best herbal antibiotics available, so it is great in treating ear, nose and throat infections. Ginger fights colds by relieving congestion, soothing sinus pain and sore throats. Parsley outstrips almost all other vegetables in its ability to raise the levels of antioxidants in your body. Coriander has the potential to reduce blood sugar levels, lower cholesterol, kill dangerous bacteria and promote detoxification. These are four of the most common herbs in cooking and look at their health benefits! Add them to your favourite dishes such as soups, salads, pizzas, pastas – the possibilities are endless. Herbal supplements: Echinacea is widely available and is one of the best-known methods for reducing flu and cold symptoms. Vitamin C is best taken in its natural form, but you simply can’t go wrong with this supplement.

Essential oils: These are an easy and effective source of immune-stimulating compounds, and are the rawest and most natural form of any medicinal plant. Thyme and eucalyptus oils are perfect for clearing the airways and loosening mucus. Add a few drops to hot water and inhale the steam for 15 minutes three times a day to help the bronchial passages heal.
Boost protein levels Protein is a building block for a healthy body, mind and immune system. Eat plenty of fish, especially those high in Omega-3 fatty acids including salmon, sardines, trout and tuna. Beans and legumes are also a great source of protein and have the added benefit of fibre.
Reduce your coffee intake Sorry, I know this is a hard one. But coffee is one of the worst things for the immune system. Caffeine dehydrates and robs the body of minerals and vitamins. For every coffee you drink, add an additional two glasses to your water intake per day.
Drastically reduce your sugar intake This is considered one of the major steps towards boosting the immune system. Why? Because white sugar especially has been shown to decrease the vitality and number of white blood cells, the body’s immune response to invaders. Sugar also depresses the body’s energy field and makes your blood more acidic, which results in vulnerability to toxins, bacteria and viruses. The normal sugar level in the bloodstream is approximately one teaspoon. A single can of soda or bowl of ice cream has 12 teaspoons of sugar. The digestive system is simply overtaxed trying to prevent all that sugar from entering the bloodstream all at once.

Three generations of rock guitarists come together for It Might Get Loud, a 2009 documentary directed by Davis Guggenheim (An Inconvenient Truth). These are not just your garden-variety guitar gods: Jimmy Page, in his mid’60s at the time of the film, founded Led Zeppelin, who dominated the 1970s following the breakup of the Beatles. As a member of U2, 48-year-old David Evans, better known as the Edge, created one of the most distinctive and influential sounds of the past quarter century. And 34-year-old Jack White (of the White Stripes, the Raconteurs, and the Dead Weather) was described by one music publication as “the most significant rock ‘n’ roll figure of the past ten years.” Guggenheim, who followed the three around for the better part of a year, takes us into their individual lives, past and present. There are shots of Page as a young London session musician, with the Yardbirds and Zeppelin, at Headley Grange (the estate where much of the fourth Zep album was made), and at home with his record collection. The Edge takes us to the Dublin classroom where U2 first rehearsed, as well as to the practice room he uses now (never a
virtuoso soloist, he developed a style based on texture and a mind-boggling array of effects); and White, whose insistence on authenticity is admirable but perhaps a tad self-conscious, constructs a “guitar” from a plank of wood, a piece of wire, and a Coke bottle (he also plays a recording by the primitive bluesman Son House, featuring just voice and handclaps, that White says is still his biggest inspiration). The three also converge on a Hollywood sound stage, where they chat and a do a little jamming on Zep’s “In My Time of Dying” (with all three playing slide guitar) and the Band’s “The Weight.” It’s hard to say if the film’s appeal will extend beyond guitar freaks and fans of these particular bands, but at the very least, It Might Get Loud offers some interesting insight into the soul and inspiration behind some of pop’s best and most popular music. --Sam Graham It Might Get Loud (DVD). Massive Attack/Heligoland, February 8. On February 8th 2010, Massive Attack will release their new album Heligoland, the first since 100th Window in 2003. According to a message posted on their website, the album will feature guests Damon Albarn, Hope Sandoval, TV On The Radio’s Tunde Adebimpe, Martina Topley-Bird, Elbow singer Gus Garvey, and regular collaborator Horace Andy.Tracks featuring Mike Patton, Beth Orton, and Elizabeth Fraser, formally of Cocteau Twins, were recorded but will not be included on the album.

Peter Gabriel/Scratch my back, February 15. Peter Gabriel’s first album in seven years is a Bob Ezrin-produced orchestral covers collection called Scratch My Back. It reportedly features re-interpretations of the folks mentioned above along with Elbow, the Kinks, Talking Heads, Lou Reed, David Bowie, and Neil Young. It’s being called a “song swap,” which implies some artists will also cover Gabriel, or each other, though we don’t have all the details just yet. Ocean Color Scene/Saturday, February 1. The album marks the 21st anniversary of their formation. After touring with Oasis in 1995 and chart success with Moseley Shoals, Ocean Colour Scene continued to release new material as well as a stem of successful live albums. Saturday continues with the band’s brand of retro orientated Rock and was recorded at the iconic Rockfield Studios. 14 tracks including the single ‘Magic Carpet Days’. Cold War Kids/Behave yourself (EP), Released. The four friends built their reputation by performing live and the release of three EPs (Mulberry Street Up in Rags and With our Wallets Full) cemented their fan-base as did their increasing profile amongst the blogging community. To date they have released one album, 2006’s Robbers & Cowards which reached No.35 in the UK album charts and squeaked into the US Billboard charts at No.173. It reprises several of the tracks from their earlier EPs and has been well received by the critics.

A documentary film about Blur, accompanied by a live recording of their performance at Hyde Park is due for release on DVD, through Parlophone Records on February 15, 2010. The film finds Graham Coxon, Damon Albarn, Alex James and Dave Rowntree set to perform together for the first time in nine years. Intimate new interviews recount the highs and lows of Blur: from Colchester to Goldsmiths, throughout the heady Britpop years and the band’s headline return at Glastonbury and Hyde Park. The live DVD concert film was filmed over two nights at Hyde Park in July 2009. The multi-camera edit was filmed in HD by Giorgio Testi for Pulse Films and features stereo and surround sound options. The first disc features the film, which directed by Will Lovelace and Dylan Southern. It was filmed around last year’s reformation shows, including Glastonbury and London’s Hyde Park, and also tells the full band’s history with early home videos, rare backstage access and interviews. The second disc is a full performance from one of Blur’s brace of Hyde Park shows last summer.

Fresh Tomato Tart
Perfect for an entrée or light lunch 1 packet ready-pastry dough (brisée) 2 small packets Mozzarella cheese, thinly sliced 4-6 roma tomatoes, sliced Basil Dijon mustard Salt and freshly cracked pepper
Line a tart pan with the dough and cook for 9 minutes or until lightly browned. Set cool. Spread a light layer of mustard over the pastry, cover with the mozzarella and tomato slices. Drizzle with olive oil and season with salt and pepper and bake at 180 degrees Celsius for about 30 minutes or until the tart is lightly browned. Garnish with chopped basil and serve!
Spinach & Ricotta Lasagne
This dish is a guaranteed hit, even with meat-lovers! 850ml milk 50g butter 1 bay leaf 60g Parmesan cheese (fresh), grated Salt and cracked black pepper 1 packet of frozen spinach 12 fresh lasagne sheets 50g pine nuts (toasted) 1 tbls butter 1/2 tsp ground nutmeg 200g Gorgonzola, crumbled 200g Mozzarella, cut into small pieces
To make the sauce: melt the butter in a saucepan and add the flour. Cook for a few seconds, then add the milk gradually, whisking constantly. When thickened, reduce the heat to the lowest possible, add the bay leaf and cook gently for 5 minutes. Then, stir in 50g of the Parmesan, remove from heat and discard the bay leaf. Defrost the spinach in a microwave and squeeze out all the water. Put the spinach in a bowl with the ricotta and half a cup of the white sauce. Season with salt, pepper and nutmeg. Mix thoroughly; fold in the Gorgonzola and the pine nuts. Assemble the lasagne by spreading a quarter of the sauce in the bottom of a large baking dish that has been buttered. Cover with a layer of spinach and a sprinkle of pine nuts and top with lasagne sheets. Repeat the process, adding the mozzarella cheese to the middle layer. Repeat again, finishing with a layer of pasta, the rest of the sauce and cheeses. Place in a preheated, 180 degree Celsius oven and bake for approximately 1 hour, until the top is golden and bubbling. Serve with a side green salad.

Champagne Cocktails Pear & Cranberry Bellini In a small jug, combine 1 cup of pear nectar and 1 cup of cranberry juice. Pour ¼ cup of the juice into each champagne glass and top with sparkling wine! Serves 8.

French 75 In a shaker, combine 1 shot of gin, the juice of half a lemon and ½ tsp powdered sugar. Shake well. Pour into a glass over ice cubes, fill with chilled champagne or sparkling wine. Add a twist of lemon peel for garnish.
Poinsettia Into a champagne flute, stir together 1 shot of Grand Marnier or Cointreau, 1 shot of cranberry juice, lime juice and fill with champagne or sparking wine.
Limbo Dip the rim of a chilled wine glass in lime juice then salt. Pour in half a shot of Tequilla and half a shot of Triple Sec, fill with champagne or sparkling wine and stir gently.
Blushing Bride Pour 1 shot of peach schnapps and ½ shot grenadine syrup into a champagne flute. Fill with champagne or sparkling wine.
