oodbye winter, hello Spring! We bid farewell to a fairly eventful season, what with all the snow and associated drama. Now, I think we are all ready for some warmer temperatures! Well, March promises to be an exciting month. To celebrate Ireland’s national day of pride on the 17th (and one of the best party days of the year) we have an Irish inspired dinner party menu, whiskey cocktails and a Saint Patrick’s Day quiz! Plus we have a Pub Guide for all the places you need to be this Paddy’s Day.

We also have some new and interesting additions to the magazine this month. We welcome Tris to the team, with his music expertise and complete knowledge of the local DJ scene. is a time to celebrate all things Irish, regardless of which country you are from! It is that one time of year when Anglo-saxons (particularly Australians, New Zealanders, Americans and of course Irish) are impelled to dress up in green attire, drink copious amounts of Guinness and whiskey, and sing Irish songs. It’s hard to believe this is actually a Christian celebration and Ireland wasn’t even the first country to hold a Paddy’s Day parade! In fact, pubs were actually ordered to close on the 17th March in Ireland. The ban was lifted only in the 1970’s!

Now, the Irish government markets it’s national day of pride across the globe, this year going so far as turning the world’s most popular monuments green – the Sydney Opera House, the London Eye and the Empire State Building! But it wouldn’t be Saint Patrick’s Day without the man himself, so who is he? Well, the legend of Saint Patrick is more of an inspirational story about a man who returned to the country where he had been enslaved for six years, to convert the population to Christianity. The reference to Saint Patrick “driving the snakes out of Ireland” is not a literal historical account, but rather the snake may refer to the

serpent - a symbol of evil - and Patrick’s mission was to rid Ireland of pagan influence. And it’s said that St. Pat used the shamrock to explain the Holy Trinity. So, get into the Irish spirit this March. Raise your glasses and recite the following: “Health and long life to you Land without rent to you The partner of your heart to you And when you die, may your bones rest in Ireland!”

The Great French Love Affair with Food But who is destined to win?

“Excuse me sir, would you like the kebab stuffed with fries served with a sugar-filled coca cola, or a duck confit elevated on a bed of potato purée with a berry jus and a glass of Provencal red wine?” Apparently, the kebab is the winner! Recent data released by consumer group NPD found that almost three-quarters of restaurant visits in France in 2009 were to fast-food outlets selling sandwiches, kebabs or burgers. Connect this with other figures that show an estimated 3,000 restaurants close every year in France, while McDonalds, for example, opens between 70-80 new outlets per annum, and the inevitable questions arise – is fast food destined to make the French palate less sophisticated? And why are the French going against centuries of entrenched culinary tradition? Well, the French government introduced new measures in July last year to counteract this apparent shift in French dining habits. It slashed the amount of TVA tax restaurants must pay from 19.6% to 5.5%, to “preserve and improve the country’s culinary reputation”, according to French Finance Minister Christine Lagarde, and “revitalise the restaurant sector”. It’s costing the French state a staggering €2.3 billion a year in lost tax revenues, and it should be luring people back to the dining table. But figures so far say it’s not. The NDP group found that the foodservice industry as a whole suffered a 1.2% drop in attendance last year, and the decline was much greater in restaurants (-4.2%) than in fast food outlets (-0.1%). Furthermore, people are spending less – around 4.40€ on fast food and 11.70€ at a restaurant. However, people aren’t skimping on their meal sizes - the average person is still buying 2.8 products at fast food outlets. So, they are not just dropping in for a quick snack but fulfilling their desire for a complete meal. It’s just at a different kind of restaurant. As with everything in life, cuisine in France

has evolved and changed. In the 1920’s, Auguste Escoffier boldly reinterpreted classic cuisine, trends which lasted until 1972. Then, two French food critics - Henri Gault and Christian Millau - created a “new” cuisine model, rejecting rich complex sauces, reducing cooking times and encouraging healthy eating. At about the same time, the term le fast-food entered the French language as American and British hamburger chains started popping up every where. Their success was partly due to the low prices they charged and their link with a foreign culture that was then in vogue. Still, fast food chains represented all that the French were opposed to – dietically, culturally, even politically. So what’s changed? Well, McDonald’s has worked very hard to make it appear as French as possible. You can see this in the menu … the most obvious being the Croque McDo, and the Royal with cheese, made famous by John Travolta in the cult classic Pulp Fiction. Also, studies suggest that it is the “selfservice” feature that attracts people to fast food joints. Being able to choose where to sit rather than waiting to be served, and individual payment over splitting of the bill were two very common reasons why young people choose fast-food over restaurant food. But what effect is this having on the French palate? According to renowned chef Alain Ducasse, who earned six Michelin stars for two different restaurants, taste relies on memory. He’s concerned about the French palate of the future as people are eating faster and faster. He says there is no time to develop memories of the tastes and flavours in the mouth. So, is it simply a matter of tradition and change finding new ways to coexist? France’s second-biggest chain – La Boîte à Pizza – is putting this theory to the test. It recently enrolled four Michelin-starred chefs to produce some of its new recipes. Michelin-star

fast food! Meanwhile, the Belgian fast-food chain Quick has turned eight of its restaurants in France into halal-only stores, serving only products that comply with the Islamic food requirements. Is this a sign that the barrier between la grande gastronomie and la restauration rapide is slowly being decayed? Perhaps, if consumers saw more of this taxbreak at restaurants, the trend could be reversed. The National Institute of Statistics and Economic Studies says that since July 1st 2009, the price cuts were only 1.41% for restaurants and 0.95% for cafés, instead of the overall 3% promised by the lobby groups for these two sectors. Meanwhile, the volume of customers in les fast-foods grew by 0.1% in the second half of 2009 (a sector that did not reduce its prices because it was already afforded a 5.5% TVA). And, in exchange for the VAT drop, restaurant and café owners signed a contract d’avenir (contract for the future) with the French state, pledging to create an additional 40,000 jobs in two years. Researchers agree that we will better understand the impact of the tax reform after this summer. Finally, one cannot argue with the fact that for the French, food is an intricate part of who they are as a people and as a culture. We can’t forget the story of renowned chef Bernard Loiseau, who committed suicide after he was downgraded in the GaultMillau guide from 19/20 to 17/20. At the time of his death, he was the only French chef traded on the stock exchange. He also helped form the plot of the Pixar film Ratatouille. And perhaps, only in France, could an animation about food draw a block-buster attendance on opening day – the fourth-highest in French movie history. So, I wonder what the future holds. Is France set to lose it’s position at the height of culinary expertise? Or will the restaurant industry adapt and create a detour? Let’s see what next year’s figures say.

La Mama

This time of year still brings with it the frustration of finding a good restaurant open on a Sunday evening. And perhaps I wouldn’t have visited La Mama had my friends and I not be wandering aimlessly around the old town on a recent Sunday desperately searching for a meal. But sometimes, that’s exactly when you find yourself pleasantly surprised. It’s a typical Niçois menu at La Mama … entrées of petit farcis and fish soup; main dishes of mussels, daube, beef steak and pasta. And indeed it is all very tempting, particularly the prices. But what drew everyone’s attention at the table this cold Sunday eve was the pasta gratins. In fact, three servings of the Gnocchi Mama were ordered – a heart-warming dish of little potato dumplings coated in a ham, mushroom, Gorgonzola and cantal sauce with a bubbling crust. It was as scrumptious as we had envisaged. So much so, I vowed to recreate this dish at home! Our order of Italian Mussels also went down a treat; the traditional tomato sauce had the added touch of chilli that spiced the dish up nicely.

As this was a designated “budget” dining night, the carafe of house red (at 11.50€ for 100cl) was requested, and again, we were pleasantly surprised. Coupled with our mains, averaging 12€, and we were all quite content with the experience. The menu and staff at La Mama are English-friendly, and the atmosphere is very laid back and comfortable. It is one of those rare places that satisfies both the stomach and the wallet. And, they’re open Sundays!

Emilie’s Cookies

We are always on the hunt here at That’s Nice magazine for the best bagels in town. I think we are not alone in our love of those delectable circular sandwiches smothered with cream cheese. So we checked out the latest addition to the old town, Emilie’s Cookies, with its promise of tasty New York bagels and a tempting array of sweet treats. Emilie’s Cookies recently opened its second café on rue de la Prefecture, following the success of its sister café on rue Alberti. It is run by two young and energetic ladies who were inspired by the American coffee shops they saw on visits to the US. The dining concept at the old town café is that of a student fast-food genre – you order at the counter with the attractive young staff, they give you your meal on plastic trays which you then carry to your table. Convenient for those seeking a quick lunch break rather than a typically long, service-filled dining experience. The décor is fun and lively. The dining area consists of a mixture of tables and chairs, old-English sofas and coffee tables, and retro light stands. There’s not much elbowroom, but its suits the social, “school canteen” atmosphere. On offer are of course bagels, with the classic chicken, bacon, ham and salmon choices, together with the not-so-traditional jambon cru and goats cheese. Prices range from about 4.90-5.90€. These are not the biggest sandwiches around, so I suggest opting for a menu, which includes a soft drink and dessert for 6.90-9.90€. They also have a nice selection of salads, and the Nikos pasta salad with olives, sundried tomatoes, pesto and feta cheese was a hit with my lunch date. The salads cost between 6.50€ and 7.50€. The cheesecake was not so much a hit, but my nutella muffin was as good as I had heard. There’s a great selection of cookies, muffins, brownies and pancakes to satisfy a sugar craving. And they have a large coffee and hot chocolate menu, together with smoothies and milk shakes. In the end, I didn’t find my best bagel in town, but I did find one of the best selections of muffins and cookies available in Nice. And I can see why the laid-back and fun atmosphere of les Cookies d’Emilie keeps the place filled with eager sweet tooth’s.

Rossetisserie

Rossetisserie has an unmistakable charm to it. From the outside, it feels as though you are peering into someone else’s dining room – the country-kitchen décor, the jovial laughter emanating from a contented crowd, and the aroma of slowly roasted meats. Then you see the price board and think, “could it really be true?” Thankfully for us, it is. Rossetisserie hit the Nice restaurant scene in May 2009. And the premise is simple ... a selection of roasted meats (chicken, veal, beef, pork or lamb) served with mashed potato, roasted potatoes and/or ratatouille. With a price tag of just 11€, the addition of a complimentary salad for entrée is simply a steal. Take-aways are even cheaper at 9€. There is no real creativity to the dish’s execution at Rossetisserie. But as you would expect from a restaurant such as this, the value lies in the quality of the meat and the flavour of the accompaniments. And they don’t disappoint. The meat is juicy and tender, the mash fluffy and seasoned to perfection, and the ratatouille is traditional and delicious. Even the entrée salad is lifted by its red wine and herb vinaigrette. There is a plat du jour for variety, desserts for 4€, and a small but equally affordable wine list. We had the merlot - a subtle and appetizing table wine for 15€. The service at Rossetisserie was also unforgettable. Our English-speaking waitress was constantly at our attention brandishing a large smile, and I always appreciate the chef bringing his dishes to the table. There is a sincerity here that is uplifting and quite unique. Seating is limited to six small tables (two of which are outside) and one large group table. Yet at no point in the evening were we made to feel hurried so the restaurant could achieve a quick turnover. The owners are expecting to open downstairs in March though, doubling the seating capacity. Reservations are recommended, especially on the weekend. While the Rossetisserie is young and fresh, the aged boulangerie sign above its doors points to a much longer past. At over 200 years old, it is one of oldest boulangeries in Nice, and still brandishes the 25m2 wood fired oven! The Rossetisserie has taken a simple idea and executed it wonderfully. It bodes well for those seeking an uncomplicated and inexpensive meal. Lifestyle: Living the Dream

Steps to a healthier, happier life

We all have dreams and desires of what we’d like to have, do or be. And it’s who we become on the way to reaching that goal that’s perhaps the most important. This is the first in a series of articles on goal setting with tips on how to achieve your dreams.

What do you want that you

don’t already have? Or, what do you want more of? It’s much easier for people to know what they don’t want in life. For example, “I don’t want to be fat” or “I don’t want to be poor”. And while these are valid points, they are also flooding the receptive mind with negative imagery. To live our dream we must create positive ideas for the mind/ body to respond to by thinking “What DO I want?” In doing this we reframe our thought patterns from negative into positive. We are now using our imagination to re-create our reality. As Mahatma Ghandi said, “we must become the changes we want to see happening”. If you want to make positive & permanent life changes you must first change your thoughts.

1. What do I want? 2. Imagine what it would be like to have it now. 3. Is it ok to have it? 4. Think about how it will come about. 5. Visualize & focus your mind upon your goal regularly. Next month, we will look at step one in detail. And remember, if you are serious about setting goals and achieving them, it is important to have an open mind.

Hatha Yoga

Gymnastics for the soul. Yoga is much more than a form of gymnastics. Sure, it is a physically challenging exercise (hatha means force), but it is also a gentle spiritual path in itself. Hatha Yoga is a discipline of harmonization and development of psychological abilities (concentration and serenity) and assets (power and flexibility) driven to perfection. If you’re ready to explore yoga, Nice is overflowing with varying styles. But be patient in finding the one that suits you best, both physically and mentally. If you’re a beginner, do not raise the bar too high - you might get discouraged. Go for a beginner’s class that offers gentle postures and allows time to become familiar with how to place your breath. Remember, what you like or dislike most in a course is usually the opposite of what you really need. You might be attracted to very dynamic classes with an emphasis on the physical, when what you need is to work on the interior, breathing and observation of the mind. Similarly, you might sink into a very meditative and slow movement’s class, when what you need is a more dynamic and toning muscles postures class. So, when you start a course, stay observant of the effects the postures have on your mind and body, and to how you feel at the end of the session. If you feel good or very good and you have the intuition that something is starting to change deeply inside, then you can be sure you have found the right course!

Initially, I set out to do a review of a history book, a thriller, plus a kid’s book. No Turning Back by Paul Addison Since the end of the Second World War, Britain and British society has changed beyond recognition and Paul Addison looks at the transformations from a personal point of view, having seen the Britain of his youth turn into a very different country. At the end of the war the welfare state was unheard of, the economy was largely based on manufacturing, society was white and predominantly working class, women’s career chances were limited, and the “permissive society” was unimaginable. Underlying much of this change was mass prosperity which opened up a new, undreamed of world which is largely one in which the gains come to mind. While Paul Addison prefers the present to the past, there is one loss that stands out, that of a sense of the ties that used to bind people together.

THE WHITE STRIPES UNDER GREAT WHITE NORTHERN LIGHTS chronicles the Stripes’ Canadian tour that took place over two years ago. Jack and Meg did it up right – they played every province and territory in the country, and not just in traditional venues. They played on a boat, on a bus, in a park! The results were all captured by a film crew for the documentary.

The Stripes are now issuing a massive box set to be released on March 16. The limited edition set will include UNDER GREAT WHITE NORTHERN LIGHTS on DVD, along with a DVD of the Stripes’ 10th anniversary show in Nova Scotia, a 16-track live album from one of the dates on the Canadian tour (in both vinyl and on CD), a live 7”, a tour book clocking in at over 200 pages (with photos by Autumn de Wilde and a foreword by the incomparable Jim Jarmusch), and a silk screen print. The DVD will also be available separately on March 16. Plastic Beach is the upcoming third studio album by the virtual band Gorillaz. It will be released on 3 March 2010 in Japan, 5 March 2010 in Australia, 8 March 2010 in Europe and 9 March 2010 in the United States. ANVIL DVD/ DOCUMENTARY: At 14, Toronto school friends Steve “Lips” Kudlow and Robb Reiner made a pact to rock together forever. Their band, Anvil, went on to become the “demigods of Canadian metal,” releasing one of the heaviest albums in metal history, 1982’s “Metal on Metal.” It went on to sell millions of records, but Anvil’s career didn’t flourish afterwards. Instead, they went straight to obscurity.

Irish Dinner Party Menu

Chicken, Ham, Avocado and Cheddar Parcels Delicious filled pastries

Entrée

2 chicken breasts 2 avocados, sliced 4 slices leg ham 4 slices good English cheddar cheese 4 sheets puff pastry 1 egg, beaten

Slice each chicken beast into half lengthways. Season and pan fry until golden brown on both sides and cooked through. Set aside. Cut each pastry sheet into a large circle, approximately the size of an entree plate. Place the chicken in the middle, top with sliced avocado, ham and a thick slice of cheese. Fold the edges of the pastry inwards to make a parcel. Brush with egg wash and bake in a heated oven at 180 degrees celcius for 20-30 minutes or until golden brown.

Irish Stew

A classic Irish dish using lamb or beef

Main 600g diced beef (rump is good) or lamb 4 medium carrots, diced 3 large brown onions, diced 3 cloves garlic, diced 5 stalks celery, diced 1x1cm 1 pint Guinness Fresh thyme 4 bay leaves 100g plain flour 1 litre beef or lamb stock 4 tbs olive oil 4 potatoes, peeled and cut into quarters freshly chopped parsley to garnish

Heat the oil in a deep, large pan/pot and lightly fry the onions and garlic. Add the meat and brown on all sides. Add the diced carrot, celery and flour and cook on a low heat for a further three minutes. Add the stock, Guinness, potatoes, thyme, bay leaves and season with salt and pepper. Bring to the boil and simmer for an hour or until the meat is tender and the sauce has reduced and thickened. (To include dumplings in the stew, follow the Golden Syrup Dumplings recipe, add an extra 350mls of stock, and add in the last half hour of cooking). Serve hot with fresh parsley and crusty bread.

Far too good for just one serving

100g unsalted softened butter 250g flour 5 tbs milk 1 tsp baking powder (levure chemique) 1 egg 10 tbs golden syrup 1 litre water

Rub together the butter and flour until it resembles fine bread crumbs. Add enough milk to form a thick dough. In a pot, bring the golden syrup and water to the boil. Reduce to a simmer. Roll the dough into small balls (approx. 6x6 cms) and drop into the sauce. Bring back to the boil and cook for 15-20 minutes until dumplings double in size and are light and fluffy. Serve with whipped cream.
