And the Salvation Army’s Red Kettle Campaign will kick off shortly although they accept donations all year round. Home economics education group continues annual craft and arts event in Carter County By Ari James ajames@ardmoreite.com
T
his fall marks the 47th iteration of the annual Carter County Arts and Crafts festival and food fair at the Hardy Murphy Coliseum. Kaye Seeliger, publicity coordinator of the event, said it all began with a group of homemakers who started making “too many arts and crafts,” and the idea to create a space in which to sell them. “Now it’s the kick off for Christmas shopping,” Seeliger said. In November 1972, there were 23 spaces in the Coliseum’s south wing, headed up by Clara Kelley, home economist. By 1976, the event had grown so much that all three wings were full — with a waiting list of people who wanted to participate. For the fourteenth festival in 1985, the arena was opened to spaces as well, with capacity being 200-225 spaces for vendors throughout the facility. Still sponsored by the same group —with a few younger additions — the festival is going strong, and still has a waiting list. “We have about 65 to 70 percent of each year’s vendors sign up for the following year at the end of the festival,” Seeliger said. “Some have been there 20 or more years.” Like many other community organizations, the Triangle Club has another purpose outside sharing their myriad talents and bringing together the community. “Our group puts the profits toward a community project each year,” Seeliger said. “We’ve had several, but one we’re doing currently is for the Ardmore Village.” Seeliger said the group puts their profits 6 Southern Oklahoma Living u Holiday 2018
toward helping several Village residents in need with utility bills. Admission to the Festival is free. Parking, however, is $4 — with local 4H kids teaming up to help craft enthusiasts find parking spaces at the jampacked event. Those funds, Seeliger said, help local organizations fund their projects each year. While there are more than 200 arts and crafts vendors, it wouldn’t be a ‘craft fair’ without food. Seeliger said there will be several food trucks, and Turner and Schofield will be inside the Coliseum with soup and pies. “We have quite a history,” Seeliger said. “The festival has quite a following.”

In reality, cigarette butts are a serious threat to the environment. The main causes of littering are: laziness, ignorance, people don’t realize the effects of littering, the bins are dirty and not big enough, there are enough bins and moreover those bins aren’t emptied often enough, poor parenting and education, there is no fine for littering, one person can’t make a difference, no sense of pride, not bothered about effects of littering. A very large majority of Americans have admitted to littering in their lifetimes. The average American only walks a few steps before dumping their trash on the ground without even searching for a garbage can. Billions of tons of litter are dumped into the oceans each year. When you toss your garbage on the sidewalk, on the street, or on the highway, you are in reality throwing it into the drainage system. Household waste, industrial waste, construction waste and others, like packaging waste are most common types of sources of litter. It’s illegal. Though the fines vary by state and by city and county, you will be charged if you are caught littering. It doesn’t look nice. Places with large amounts of littering are also often riddled with crime, lower property values and are more likely to be the site of fires. It’s expensive…very expensive. Ever year millions upon millions of dollars are spent cleaning up litter. This money should be going to more productive things, but instead, people don’t realize that something as small as littering done on a mass scale does indeed affect them. hocolate chip cookies have long been an American classic and a favorite snack among cookie aficionados. With the Christmas holiday on the horizon, Southern Oklahoma Living Magazine teamed up with Nance Home Furnishing to recreate the fan favorite and to provide a new twist on the holiday classic (one we hope Santa Claus will enjoy). With the help of our judges, Chloe Thompson from the United Way, Kim Holland from Ardmore City Schools, JD Spohn from the City of Ardmore and Kim Benedict and Kathy Worley from The Ardmoreite, Southern Oklahoma Living Magazine was able to narrow down the list of submissions to determine the Most Amazing Chocolate Chip Cookie. The winning cookie, the Okie Dokie Chocolate Chip and Chunks cookie included nearly every ingredient, sans the kitchen sink. The loaded cookie was the brainchild of Mary Shivers. Shivers, a retired elementary teacher from Latta Schools near Ada, has been cooking and baking most of her life. “I come from a very large family, grew up on a farm,” Shivers said. “Part of our

It is possible that when I sit down to raisin sauce on Thanksgiving Day, I am not merely tasting raisins slowly-simmered in brown sugar and butter. It is possible that my perception is being enhanced by the history behind the recipe. For decades, the Pierce family battled poverty. Despite this, my grandparents raised a son who could paint beautiful pictures and play the piano masterfully. My father grew up the kind of poor that means eating nothing but pinto beans for days on end. But when he tasted something special at a fancy restaurant, he recreated it the best he could for his own family’s table. As strange as this might sound, raisin sauce is more than a

Eleven years ago at my first Thanksgiving with in-laws, my mother-in-law kindly asked me if there was anything special we could cook that would help me feel more at home. egan and vegetarian cooking isn’t exactly synonymous with the holidays, but there’s no reason it can’t be. Margaret Brown, a vegan chef who’s been teaching vegan and vegetarian cooking classes in Davis for years, has built up an arsenal of vegan holiday fare over time. Brown said she’s been a vegetarian her whole life and became vegan as an adult in 2006. She said in that time, the variety and quality of vegan food has come a long way. “Every year it gets a little easier,” Brown said. “When I was a kid, being a vegetarian was a big deal, and maybe a grilled cheese was all we could find. But it’s gotten better.” Brown said it’s easy enough to make most side dishes vegan, but it’s not easy to achieve that ‘I need to take a nap’ feeling with sides alone. As far as meat
substitutes go, frozen Quorn and Tofurkey products are readily available, but making, stuffing, basting and baking a tofu “turkey” at home is an option for hosts who have a larger group to feed. “Some people laugh at it, but it’s delicious,” Brown said. “A very simple way to deal with it, if it’s only for one person, is to buy tempeh… Just slicing it and marinating it in a mixture of orange juice concentrate, maple syrup and olive oil, maybe a little salt and baking it.” That could pose a problem for people with food allergies or gluten intolerance, but there are more vegan options than ever. “With veganism there’s a lot of use of gluten and soy for protein,” Brown said. “There’s also a lot more wisdom about how to use nuts and grains and legumes to make novel things.” For a centerpiece that can sidestep most dietary restrictions, Brown recommends
roasting a large pumpkin or kabocha squash and filling it with rice pilaf or another stuffing. “You can make stuffings that aren’t just bread, celery and onion,” Brown said. “You have so many options, whether it’s a bread based stuffing or a quinoa based stuffing. Almost any
grain can be used in a stuffing.” Just swapping obligatory peas for roasted vegetables can make a big difference. “A lot of it is in presentation,” Brown said. “You could make mini-squashes, stuff them with your choice of things. Stuffed Portobello mushrooms are another option.”

Ilimpa’chi’ took home the award for design and illustration in the 23rd annual Oklahoma Book Awards, while Ilittibaaimpa’ was a winner in the illustration and photography category in the 27th Annual Oklahoma Book Awards. Recipes are accompanied by scenes from their lives spent cooking, eating and growing up around foods prepared in Chickasaw kitchens and over outdoor cooking fires. Their stories reveal the organic connections between food, family and Chickasaw Nation history. Presenting traditional recipes as well as recipes inspired by Chickasaw culture, they describe and celebrate the roles of these dishes in the feasts of Chickasaw culture. Stories by Native speakers and stunning photos help bring the recipes to life. Ilimpa’chi’ includes a glossary of Chickasaw cooking terms and phrases. It also features excerpts of poems and prayers about food and family traditions written by Chickasaw fluent speakers. Ilittiibaaimpa’, the second cookbook published by the Chickasaw Press, brings together recipes and slices of life from the kitchens of five modern Chickasaw Nation families as they share favorite dishes for those special times when gathering to enjoy good food and good times. Author JoAnn Ellis is a fluent speaker of the Chickasaw language and works
as specialist in the Chickasaw Language department. She is an instructor for its Master and Apprentice programs. She also works as an adjunct professor for Chickasaw language studies at East Central University in Ada, Okla. Chickasaw and Cherokee Vicki May Penner, the second author, is retail manager at the Chickasaw Cultural Center in Sulphur. She holds a master’s degree in education from East Central University and spent 25 years in education before joining the Chickasaw Nation. There are many wonderful Hanukkah and Kwanzaa children’s books, as well as others written about various religious traditions and celebrations that occur before and during the end of the year. Let’s not forget about all the children’s books sharing tales of the winter season. Just as vividly as I remember my mother reading “The Bernstein Bears’ Christmas Tree,” I too can recall following along to “The Jacket I Wear in the Snow,” “Frosty the Snowman,” and “The Mitten” during our Christmas bedtime stories. If you want to take the holiday bedtime story ritual to the next level, consider the tradition practiced by David McCullough’s family. McCullough, a two-time winner of the Pulitzer Prize and the National Book Award who is best known for his books “Truman” and “John Adams,” once told a reporter that every Christmas morning during his childhood, he and his siblings awoke to the gift of a wrapped book on their beds. The night before, as they slept, Santa Claus delivered the books. For the McCullough children, including David, Santa’s gift of a book far outlasted any toy under the tree. Those of us who are readers will surely agree. Here are four books to read this holiday season, and all are
available at the Ardmore Public Library. 1. “Santa Is Coming to Oklahoma” by Steve Smallman When Santa Claus makes his way into Oklahoma, his reindeers make sure to go by all the sights, like a Route 66 sign, the Oklahoma State Capitol, and much more, as they deliver presents to the state’s children. 2. “A Great Miracle Happened There: A Chanukah Story” by Karla Kuskin When a Christian boy sleeps over at his Jewish friend’s house on the first night of Chanukah, he hears about the Jewish peoples’ fight for religious liberty. 3. “The Polar Express” by Chris Van Allsburg A boy boards a magical train on Christmas Eve that takes him to the North Pole where he receives a special gift from Santa Claus. the wilderness, “Prepare the way for the coming of the Lord.” Granted, without the baby in a manger, you don’t have Advent, but without Advent, you may not appreciate how much of a gift that baby is. Advent, then, is a season for longing. Advent gives us permission to acknowledge that life isn’t always the way it should be, that it is, in fact, far from what we wish it was. Black Friday, Cyber Monday, every bargain bin (virtual or tangible), they’re appreciated, but they don’t take away the heaviness of a hospital room, the absence of a loved one, the gnawing pain of illness, or the disappointment of yet another job opportunity pass-
ing us by. Jumping to Christmas may whitewash such pain. Jumping to Christmas may give us a reprieve, but isn’t it better to be able to honor our disappointments, to give voice to our loss and longing, and to let them carry the significance they truly deserve? Pain and longing certainly aren’t as flashy a gift as gold, frankincense, myrrh, but isn’t it good to know that those parts of our lives are welcome at the manger too? Advent, quietly coming before Christmas, says “Yes, every part of your life is welcome here.” It’s easy to forget that a common refrain among God’s people is, “How long, O Lord, how long?”
But God is a god who hears and responds. God heard the Israelites in Egypt and freed them. God heard the hungry in the wilderness and fed them. God heard the weeping of Lazarus’ family and raised him. Christmas does come. God does act, but not on a timetable that makes sense to us. There’s a lot of meaning packed into the four weeks
of Advent. The presents and meals and Christmas carols are all good things, but they’re a thin soup without Advent. And I wonder, if we participated in Advent, would that practice allow us to enter into painful situations with others so that they were not alone in their own waiting? With Advent, would we be less tempted to proclaim Christmas as an emo-

n 1 cup unsalted butter n 1 & ½ cups granulated sugar n ¾ cup packed brown sugar n 2 large eggs n 1 (3.4 oz.) box instant vanilla pudding & pie filling mix n 2 & ½ cups all purpose flour n 1 & ½ tsp baking soda n ½ tsp kosher salt n 1 (12 oz.) bag semi-
sweet chocolate chips n 2 (1.55 oz.) milk chocolate candy bars, roughly cut into ¼ - ½ inch chunks n 1 (4 oz.) semi-sweet chocolate baking bar, roughly cut into ¼ - ½ inch chunks n 1 cup chopped pecans (optional) Place butter in a small microwave safe bowl and microwave on high for 3045 seconds just until butter is melted. Remove and pour into a large mixing bowl. Add granulated sugar and brown sugar. Beat on medium speed for 1
minute. Add eggs. Beat on medium speed for 2 minutes more. Add extract and pie filling mix. Beat on low speed for 1 minute. In a large bowl, sift flour, soda and salt together. With mixer on low, gradually beat into first mixture. With a wooden spoon, stir in chocolate chips, candy bar chunks, baking bar chunks and pecans until evenly combined. Cover with plastic wrap and chill for 1-2 hours. Remove dough from refrigerator 20 minutes before baking. When ready to bake, heat oven to 350 degrees.

Line a large baking sheet with parchment paper. Use hands to shape dough into walnut size balls. Place 2-inches apart on parchment-lined baking sheet. Flatten slightly. Bake for 12-14 minutes just until edges and tops are light golden brown. Remove and cool for 5 minutes before moving to a wire rack to cool completely. Makes 5 & ½ dozen. Serves 20-30
