This month, Washington State University Extension nutrition educators celebrate the 50th anniversary of a national program that helps Northwest families improve nutrition and health: The Expanded Food and Nutrition Education Program, or EFNEP. Launched in 1969 by the U.S. Department of Agriculture, EFNEP began as a pilot project responding to the link between poverty and poor nutrition. Today, the program is delivered with help from community partners and is focused on solving the epidemic of obesity and food insecurity. WSU Extension marked the program’s 50th year on Tuesday, January 15. Nationally and locally, agencies will celebrate the occasion throughout 2019 by sharing accomplishments with community partners and compiling healthy recipes from every state and territory. “As we celebrate our 50th anniversary, we’re most proud of the changes that our participants make in their lives and families after taking our classes,” said M. Catalina Aragon, Extension’s Interim State EFNEP Lead. Responding to a need In Washington state, half of residents report low levels of physical activity. About 30 percent of Washington adults are obese, 16 percent have Type 2 diabetes or are prediabetic, and 16 percent of families with children are food-insecure. Last year in Washington, EFNEP directly reached more than a thousand adults and 2,000 children, and more 4,400 family members indirectly. More than 95 percent of adults and 80 percent of children who graduate from
WSU Extension’s EFNEP classes saw improved diet quality, 63 percent of adults were able to improve food security, and more than 80 percent of adults improved their activity levels and food safety practices. The nine-week course is delivered by peer educators who are part of the communities they serve, “which makes our program very powerful,” Aragon said. “Our EFNEP graduates improve their diets and nutrition practices, stretch their food dollars farther, handle food more safely, and increase their physical activity levels,” she added. Graduates cook more meals at home, eat proper portion sizes, boost health and self-esteem, and raise families with healthier behaviors. These results show why EFNEP remains at the forefront of education efforts to improve healthy behaviors and reduce nutrition insecurity for all Americans, Aragon said. Blueprint For Plant Immune Response Found, Unlocking Potential for Increased Disease Resistance in Crops Washington State University researchers have discovered the way plants respond to disease-causing organisms, and how they protect themselves, leading the way to potential breakthroughs in breeding resistance to diseases or pests. The results were published in the journal Plant Physiology and describe how plants respond to a molecule released during damage caused by infection or outside entities. The paper shows how adenosine 5-triphospate (ATP), a part of DNA and energy production in cells, becomes a signal for injury or infection when outside cells. That signal triggers defense responses in plants. “We found the pathways that connect ATP to plant cell responses protecting the plant,” said David Gang, WSU professor in the Institute of Biological Chemistry. The science behind this is exciting, but the major impact on society will come from the future use of this information, said WSU Plant Pathology assistant professor Kiwamu Tanaka. “This is a blueprint for how a plant’s immune system works,” Tanaka said. “In some respects, even the most innovative breeding programs are still groping around in the dark to build resistance. But if you have the blueprint, you can reach the goal much faster.” Gang compared it to a common experience people have with automobiles. “If your car isn’t working right, you often have to take it to a mechanic because cars are so complex now,” he said. “They plug the car into a sensor and can see the problem quickly. If I did it, I’d have to guess and hope I get it right. That’s how traditional breeding is, much of their work is challenging because they have to work with so many complex potential solutions. Now they’ll have a schematic to eliminate a lot of that extensive effort.” Doing the science To find the correct pathways, the research team used wild plants as well as plants changed in the major pathways of plant defense. But ATP fundamentally changes when it is outside a cell in an organism. “Extra-cellular ATP is a damage signal to the surrounding cells,” Tanaka said. “ATP is only outside a cell when something is damaged, so it’s a perfect trigger for immune responses.” The receptor that receives the damage signal ATP was found in 2014, but until now scientists didn’t know how this signal caused an immune response in plants. “Future plant breeding can now increase plant defense or resistance based on knowing these pathways,” Gang said. “They can be bred to respond faster, or to not waste energy by turning on the entire immune system if only a specific defense is required. Top 10 Things To Consider When Buying A Tractor Looking for new equipment? Here’s your guide to getting the most bang and power for your buck. By Oscar H. Will III Question 1: How much acreage will you work, and in what types of operations will you need a tractor? These can include yard and/or field mowing, garden tilling, material moving, haying, snow removal, grading, etc. Question 2: What is the priority of the tasks in which you wish to engage? For instance, is road grading more important than field mowing? Determining priorities will help whittle down your initial implement purchase list. It will also help your dealer make recommendations on horsepower range, hydraulic capacity and lift capacity to suit your needs. Question 3: What is your financial comfort zone? Or, perhaps, another way of looking at this question is to consider what you’re willing to pay as a monthly note. Overall, expect to spend more than $20,000. Question 4: Do you anticipate needing the diverse functionality of a loader mounted to the front of your tractor? This will help determine whether you need 4-wheel drive and the hydraulic capacity you require. Question 5: What is the smallest area through which you’ll need to navigate your tractor? You might not want to rebuild fences or move buildings to get a larger machine where it needs to go.
Question 6: Do you need an automatic-like transmission, or are you fine with clutching and shifting? The dealer will take this into consideration when making a recommendation. A Brief History of Future Farmers of America Founded in 1928, the Future Farmers of America brought together students, teachers and agribusiness to solidify support for agricultural education. In Kansas City’s Baltimore Hotel, 33 young farmboys charted a course for the future. They could not have foreseen how the organization would grow and thrive. Since 1928, millions of agriculture students - no one knows exactly how many - have donned the official FFA jacket and championed the FFA creed. FFA has opened its doors and its arms to minorities and women, ensuring that all students can reap the benefits of agricultural education. Today, the National FFA Organization remains committed to the individual student, providing a path to achievement in premier leadership, personal growth and career success through agricultural education. 1-Pot Everyday Lentil Soup Recipe from: Minimalist Baker When you think about Washington state one of the first things to pop to mind is probably apples. Or evergreen trees. Or quite possibly one of our landmark like the Spokane Falls or the Space Needle. Where do lentils fall on that list? Would it surprise you that 18% of the nation’s lentils are grown on the Palouse? Or that ever year since 1989 there is a National Lentil Festival in Pullman that draws 1000s of visitors each year. When you think of Washington you should definitely think about lentils. Not only are they locally grown, they are delicious and can add texture and flavor to hearty soups all winter long. Here’s an easy, everyday recipe for lentil soup with potatoes, carrots, kale, and simple herbs and seasonings. The perfect plant-based main or side that requires just 10 ingredients, 1 pot, and about 30 minutes to make. Prep Time: 5 minutes Cook Time: 30 minutes Servings: 4 Ingredients: • 2 Tbsp water (or substitute oil of choice // such as avocado or coconut) • 2 cloves garlic minced (or sub 2 Tbsp garlic-infused oil*) • 2 small shallots (optional // or 1/2 white onion as recipe is written // diced) • 4 large carrots (thinly sliced) • 4 stalks celery (thinly sliced) • 1/4 tsp each sea salt and black pepper (divided // plus more to taste) • 3 cups yellow or red baby potatoes (roughly chopped into bite-size pieces*)

Instructions Heat a large pot over medium heat. Once hot, add water (or oil), garlic, shallots/onion (optional), carrots, and celery. Season with a bit of salt and pepper and stir. Saute for 4-5 minutes or until slightly tender and golden brown. Be careful not to burn the garlic (turn heat down if it’s cooking too quickly.) Add potatoes and season with a bit more salt and pepper. Stir and cook for 2 minutes more. Add vegetable broth and rosemary or thyme and increase heat to medium high. Bring to a rolling simmer. Then add lentils and stir. Once simmering again, reduce heat to low and simmer uncovered for 15-20 minutes or until lentils and potatoes are tender. Add your greens, stir, and cover. Cook for 3-4 minutes more to wilt. Then taste and adjust flavor as needed, adding more salt and pepper for overall flavor, vegetable broth if it’s become too thick, or herbs for earthy flavor. Enjoy as is or serve with rice, cauliflower rice, or a side of flatbread or rolls. I love garnishing mine with a little fresh parsley for a pop of color and freshness (optional). Store leftovers covered in the refrigerator up to 5 days or in the freezer up to 1 month. Reheat on the stovetop and add more vegetable broth to rehydrate as needed. Notes • If subbing garlic-infused oil, add in the last few minutes of cooking. • In place of potatoes, you can also substitute butternut squash, sweet potato, or other squash or root vegetable of choice. • Nutrition information is a rough estimate calculated without oil or additional garnishes or sides. Since 4-H began more than 100 years ago, it has become the nation’s largest youth development organization. The 4-H idea is simple: help young people and their families gain the skills needed to be proactive forces in their communities and develop ideas for a more innovative economy.
