Some of the participating vendors include Snake Dancer Excursions, Rocky Mountain Elk Foundation, Costco, The General Store, Chase Honey Company, Garlic Gourmet and many more! Once you’ve shopped til you’ve just about dropped take a break in the beer garden where there will be wine from Latah Creek available for purchase! Venison Backstrap Bites Located in Post Falls, ID

Specializing in BirdS & game HeadS See Us in 68 Booth #3

Lets taLk!

510-501-5863 • TaffKim@sbcglobal.net www.FavoriteFeathersTaxidermy.com

Alright, this is an easy one! It’s a great party starter and introduction to venison for the uninitiated, or a nice change-up for breakfast or dinner. Super simple to prepare, this recipe results in mouthwatering bites of heaven. Everything’s better with bacon, right? Guten Appetit! Ingredients • Boneless venison chops (1 pound total), 1” thick (Backstrap is perfect) • 1 package of bacon • Seasoned salt (Lawrey’s or just plain salt) • Freshly ground black pepper • Garlic powder

4. In another shallow plate, roll the bacon edges through the black pepper. 5. Place the cubes with the bacon edge down in a hot pan. Remember to place the doubled up bacon edge down first to ensure a good bacon-weld. 6. Cook each bacon wrapped side until the bacon is fully cooked. The venison should be medium rare on the inside, just the way you want it. If you like your meat medium or well done, tip the cubes venison side down and cook until you’re happy.

Directions 1. Slice the backstrap lengthwise, then crosswise to end up with 1” cubes. 2. Wrap a piece of bacon around a venison cube, overlapping the ends of the bacon on one side. Overlapping the bacon will allow it to weld itself together, eliminating the need for toothpicks. 3. In a shallow plate, combine the seasoned salt and garlic powder. Dip the exposed venison edges in the seasoning mix.

New Nordic Area Signs From Chris M. Currie, President of The Friends of Mt. Spokane Last summer, the Friends Group also organized a project to erect 162 new trail signs in the Nordic ski area, replacing all of the old signs, and marking all of the previously unmarked junctions. The new aluminum signs are essentially the same as the old ones except that they are now color coded to trail difficulty and most are accompanied by directional arrows. The Spokane Nordic Ski Association split the cost with the Friends Group and also helped put them up. The project was organized by Cris Currie, with Steve Christensen, Sam Schlieder, Tim Ray, Scott Redman, Brad Thiessen, and Randy Greyerbiehl helping with the installation. The new

signs should help both winter and summer users of the area to avoid getting lost or coming back on an unplanned route. More information available at www.MountSpokane.org

sures that foods will cook quickly and as evenly as possible. Otherwise, meats can lose moisture and even stick to cooler grates. Reader’s Digest suggests preheating to between 350 F and 450 F depending on the food. 4. Overreliance on lighter fluid: The chemical taste of lighter fluid can transfer to foods even when the fluid is used sparingly. Consider using a chimney starter when grilling with charcoal. Grilling Mistakes Continued... fluctuate. Use a thermometer to determine when food is done. And don’t forget that meat will still cook a bit after it’s taken off the grill. 7. Improper seasoning: Basting food with sugarladen sauces and marinades too early can cause flare-ups and burning. Quick rubs can help lock in flavor, and then reserve the sauce for the last few minutes of grilling, says cookbook author Dave Martin. 8. Digging in too soon: Give meats a chance to rest for between five and 10 minutes to allow the juices to redistribute through the food. This improves flavor and tenderness.
