Women in Agriculture Conference Making Sense of Marketing so you can put your Best Boot Forward!
Y
ou can now register for the 4th Annual Women in Agriculture Conference which offers women in Washington, Oregon, Idaho and Alaska a unique opportunity to gather in 28 locations for a 1-day event featuring knowledgeable speakers, inspiring stories, practical advice for improving farm management skills and networking with other women producers. This inspiring event will be held Saturday, February 21. In Washington, you can attend in Bremerton, Cathlamet, Chehalis, Colville, Everett, Goldendale, Montesano, Mount Vernon, Nespelem, Olympia, Pullman, Puyallup, Republic, Sequim, Spokane, Vancouver, Walla Walla, Wenatchee and Yakima. In Idaho, you can attend in Caldwell, Idaho Falls, Pocatello, Salmon, Sandpoint and Twin Falls. In Oregon, you can attend in La Grande and Salem. Have you been asked, “Tell me about your farm?” It’s more important than ever to be able to talk about it positively and with passion, no matter what you grow or how you sell it. Join other women for an engaging, interactive day and learn who your audience is, what they want to know about your farm and what tools are best for you. Be inspired by the following speakers:
Emily Asmus from Welcome Table Farms in Walla Walla, WA A successful and consistent marketing plan is essential to being profitable. Emily will showcase how Welcome Table Farms keeps their “brand” fresh to build interest and loyalty. Learn what tools and techniques are critical to their marketing plan. Erica Mills from Claxon Marketing in Seattle, WA Every woman can, and should have, a consistently compelling way to describe her farm business. Erica knows this isn’t easy and will help farms of all shapes and sizes tackle this tough challenge. Using proven tools that have been pressure-tested by thousands of users, you’ll learn a simple, 3-step marketing method and create a Marketing Action Plan that gets you results. Mark your calendar and join other women (men are also
welcome!) to learn, network and be ready to take action. This conference is designed for women who have been farming for years, as well as for new and aspiring farmers. Here’s what women are saying about the Women in Agriculture Conference: “The conference inspired us to take our farm to the next level. We upgraded our bookkeeping methods and now know what areas of our farm make money and the enterprises we either need to improve or quit doing.” “I went to the conference to support my young student and I realized I gained so much for me.” Registration is $30 and includes a light breakfast, lunch, handouts and tools you can use. To learn more about the event and to register visit www.WomeninAg.wsu.edu Partial scholarships are available for aspiring farmers, college ag students and 4-H and FFA members. Contact Margaret at viebrok@wsu.edu for an application.

Help Dump Hunger While holidays are known for giving, the New Year presents the biggest challenge to food banks and the families they serve as January donations drop off by more than a third. To help local food banks when they need it most, Western States CAT will launch the seventh Dump Hunger food drive at communities across the Intermountain West. Within this area there are nearly 505,000 people with lack of access to enough food which equates to nearly $220 Million needed to fulfill this demand. CAT is partnering up with Albertsons and different food banks including 2nd Harvest. The goal of this year's Dump Hunger is to raise nearly 525,000 pounds of food for those in need. Items of greatest need include boxed meals, peanut butter, canned fruit, canned meals, canned vegetables, cereal, dried beans, pasta, rice, stuffing mix and pasta sauce. Plants of the Wild is Growing Native Roots
S
eeds, Inc. and Plants of the Wild are excited to introduce a new line of plants selected from wildflowers native to the western United States. The “Native Roots” line was developed through research by Stephen Love at University of Idaho who sought and acquired seeds from exceptional plants native to the Western US. Through years of selection and seed increase, a variety of drought tolerant, cold hardy plants have been released. These
plants perform more uniformly to provide a more predictable performance in home and urban landscapes. Native Roots selections are incredibly beautiful, combining the consistent appearance of an ornamental with the beauty of a native. Thirty different varieties will be available from Plants of the Wild this spring. Stop by booth 14 at the Spokane Ag Expo and get a sneak peek at some of the stunning species we have to offer or visit our website at www.PlantsOfTheWild.com for full details. Latin Name

2. Remove all noticeable fat. Fat causes the jerky to spoil much faster. Slice your meat into very thin strips less than 1/20” thick (sometimes a butcher will do this for you for an extra fee if you ask). To make it easier to slice, freeze it for about 5 hours before slicing. You can cut with or against the grain; some find that strips cut against the grain are easier to chew. Trim the fat as you go along, since fat does not dry. 3. Marinate the meat. Use a solution of olive oil and vinegar sea salt, or a recipe of your preference. Place in the refrigerator for 10-24 hours to allow the meat absorb the flavor. This step is optional as the additional moisture can make dehydration take longer and the resulting jerky may be stickier. 4. Coat the meat in the seasonings of your choice. Don’t be afraid to use salt. Salt will aid in dehydrating. Try dusting your marinated jerky with a little bit of salt, pepper, cinnamon and chipotle pepper. Cooking and Storing Jerky 1. Dehydrate the meat. Now comes the rewarding part- removing all moisture from your jerky. Using a dehydrator is the standard way of cooking jerky, although you can use an oven. Leave enough room between pieces to allow air to flow around the meat. Avoid letting the meat separate if possible. In a dehydrator, spray the racks with nonstick cooking spray and place your prepared meat on the racks. 2. Wait and watch. Making jerky is a quick process. Since temperatures, humidity levels, and slice thickness will vary, there can be no set time for the process to complete. Usually, the process takes between 2-6 hours. Check the consistency of the jerky regularly after 2 hours, and every 30 minutes thereafter, until it meets your satisfaction. Cut into the jerky to ensure that it is not raw inside. Jerky should turn a deep brown or burgundy color. 3. Alternately, use an oven if you don’t have a dehydrator. Set the temperature to 165° F, any less may cause early spoilage as it’s not hot enough to kill bacteria in the meat, and will only incubate the bacteria already present in the meat, and allow it to preheat. Place your prepared meat directly on a wire rack, with a saucepan or catch underneath to catch the marinade dripping from the jerky. Cook for 1-3 hours, depending on the cut of meat. Check the jerky after 90 minutes and every 30 minutes thereafter. 4. Place the fresh jerky somewhere dry to store. Mason jars work great. Place jerky in the refrigerator or freezer until ready to eat. Enjoy the homemade jerky within 2 weeks of its preparation. Ideally, the jerky should be vacuum sealed in plastic with a pouch of oxygen absorber in order to retard spoilage, although this is not practical in most home situations.

More Lentils, Please!
A
s many know, the Palouse Region in Eastern Washington and Northern Idaho grows a quarter of the lentils in the United States. That’s a lot of lentils. What better way to celebrate this versatile crop than with a lentil festival? The National Lentil Festival, held in Pullman, WA is nothing short of fantastic. The festival focuses on local community, local volunteers and all that makes up the Palouse. This year’s event takes place August 2122. That may seem far away, but it’s never too soon to get excited about this legume. Mark your calendars now. This 2 day event features lentil chili with a beer and wine garden, lots of entertainment and music, panel discussions about lentils, a co-ed softball tournament, 5k fun run, grand parade, cooking demos, 3-on-3 hoop classic, a kids area and so much more! A major highlight of the Lentil Fest is the Lentil Family of the Year. 2015’s event will honor the Gary and Salli Heaton Family of Tekoa, WA. Gary Heaton served the
pulse industry for 40 years, working at Wallace Grain & Pea Co., Pulse Department for Northwest Pea & Grain & Bean Co. and more. Heaton graduated from Tekoa High School then earned a degree in math education from the University of Washington. He spent time teaching for a couple of years before returning to Tekoa to manage Stateline Processors Inc. Gary Heaton has been a board member of the Trade Association and the USA Dry Pea & Lentil Council for the last 14 years; he also served as Chairman of the US Pea & Lentil Trade Association for three terms out of his 40 years of service. Gary and Salli have two daughters and a son, as well as a new grandchild. The Heatons continue to live in Tekoa where Gary has served as Municipal Judge, a volunteer fireman, on the Chamber of Commerce, and as a Tekoa School Board member for 20 years. This hearty lentil soup, known as Fakes (pronounced “Fah-kehs”) is a staple in the Greek kitchen and an especially filling meal. It is traditionally served with a drizzle of olive oil and lots of vinegar. Though the vinegar is of course optional, give it a try. It lifts the lentils and adds another dimension of flavor! Ingredients • 8oz brown lentils • 1/2 cup olive oil • 1 Tbsp minced garlic • 1 onion, minced • 1 large carrot, chopped • 1 quart water • 1 pinch dried oregano • 1 pinch crushed dried rosemary • 2 bay leaves • 1 Tbsp tomato paste • Salt and pepper to taste • 1 tsp olive oil, or to taste • Red wine vinegar Directions 1. Place lentils in a large saucepan; add enough water to cover by 1 inch. Bring water to a boil and cook until tender, about 10 minutes; drain. 2. Heat olive oil in a saucepan over medium heat. Add garlic, onion, and carrot; cook and stir until the onion has softened and turned translucent, about 5 minutes. Pour in lentils, 1 quart water, oregano, rosemary, and bay leaves. Bring to a boil. Reduce heat to medium-low, cover, and simmer for 10 minutes. 3. Stir in tomato paste and season with salt and pepper. Cover and simmer until the lentils have softened, 30 to 40 minutes, stirring occasionally. Add additional water if the soup becomes too thick. Drizzle with 1 teaspoon olive oil and red wine vinegar to taste.

Share your Green Thumb: Becoming a WSU Master Gardener
H
ave you thought about becoming a Master Gardener, but didn’t know where to begin? Don’t worry; it’s much more approachable than you think! Master Gardener Volunteers serve as human links between WSU research-based horticulture information and the general public. Volunteers answer questions about a wide variety of horticulture issues, including plant selection, installation and maintenance; plant problem diagnosis and treatment, environmentally sound gardening practices, pest identification and management, and effective landscaping practices. Volunteer work includes helping residents in the Master Gardener Plant Clinic and Resource Center, teaching youth, adults and seniors about gardening, researching and writing educational information, staffing information booths at community events, and other activities. Becoming a Master Gardener in Spokane County involves completing an application packet, being accepted for tra ining, completing an extensive horticulture training program - which includes online training and completing weekly quizzes and a final exam, and volunteering 40 hours or more each year. They train a class of new Master Gardeners in even-numbered years and there are usually limited spaces available. MGs also enhance communities through demonstration gardens and donation of produce to local food banks. Low-income citizens learn to grow their own food and become more self-sufficient with the help of Master Gardeners. Whatever the priority need may be, if it can be addressed through gardening, WSU Extension Master Gardener volunteers are there to serve as part of the solution. The WSU Extension Master Gardener Program is open to everyone with an interest in gardening and a willingness to use their knowledge, experience and enthusiasm to make a positive impact on their local community. Master Gardener Volunteers make significant contributions to furthering safe and sustainable gardening practices. If you are an experienced gardener in Spokane County, want to increase and share your knowledge, and are available to volunteer during weekday hours, think about applying to be a WSU master Gardener. Do you want to apply? 1. Contact the WSU Extension office in your county. 2. Request and complete an application form. Some counties offer online application forms on their web site. Because WSU Extension Master Gardener volunteers work with children and the elderly, a criminal background check is required for all our volunteers. 3. If selected as a potential Master Gardener volunteer, you will be contacted with additional instructions. Those selected to enter the program will be asked to review and sign the enrollment documents and pay training fees. Ask about the availability of scholarships for training.

Do you Need Help from a Master Gardener? Master Gardener Volunteers engage in numerous educational services throughout the community. Major projects must be scheduled a year in advance. If you or your organization would like assistance in one of the following areas, call 509-477-2181. Master Gardeners staff booths at a variety of locations such as community events, parks, school fairs, and garden stores to answer questions, hand out free fact sheets, and sell County publications. Organizations may request specialized information such as gardening for the disabled or sustainable gardening. Don’t know what’s bugging your plants? Bring insects and sick plants into the Master Gardener Plant Clinic and Resource Center. Master Gardeners can identify insects and insect damage, diagnose various types of plant disease, and suggest pest management solutions ranging from cultural to organic to WSU-approved chemical treatments. Avoid pesticide misuse and overuse. MasterGardener.wdu.edu or www. Spokane-County.wsu.edu or call 509-477-2181
