Cayman Islands boasts political stability, excellent transportation and communications and the highest per capita income and standard of living in the Caribbean region. On the financial side, Cayman Islands has the 10th most valued currency in the world, its own stock exchange, no taxes on profits, capital gains or income and no withholding taxes. Together, it spells an attractive return on investment. Let’s take a more in-depth look into what makes Cayman Islands such an interesting option for those searching for the next property investment.

Strong, tourism-driven economy Cayman Islands has enjoyed stable economic prosperity for many years, with steady GDP growth fuelled by tourists who are attracted to its clean, friendly and safe ambiance. The islands’ vast, unspoilt beaches, crystal-clear waters, wonderful reefs, duty-free shopping, scuba diving and deep-sea fishing attracted more than 1.9 million visitors in 2008. Grand Cayman is one of the world’s most revered scuba diving destinations, with more than 130 dive sites surrounding the island. Here, you will also find one of the Caribbean’s best sandy beaches, Seven Mile Beach. Tourism accounts for about 70 percent of GDP and 75 percent of foreign currency earnings.

Thriving offshore financial centre The Cayman Islands is the 5th largest financial centre in the world, after New York, London, Tokyo and Hong Kong, with $1.5 trillion in banking liabilities. It is also home to over 40% of all hedge funds. More than 93,000 companies were registered in the Cayman Islands as of 2008, including almost 300 banks, 800 insurance companies and 10,000 mutual funds. The country has more registered businesses than it has people and 45 of the world’s 50 largest banks have subsidiaries or branches in the Cayman Islands. Since 1997, The Cayman Islands has had its own stock exchange — the CSX — with more than 1,450 listings and a market capitalization in excess of $123 billion. The Cayman Islands Stock Exchange is one of the world’s fastest growing international exchanges. Caymans is home to the 10th highest valued currency in the world. The official currency is the Cayman Islands dollar (CI$), which is permanently fixed at an exchange rate of CI$0.80 to US$1.

Political and legal stability In 1962, Cayman Islands elected to remain a British colony, a decision that was seen as aimed at maintaining its reputation for political stability. It is one of 14 British Overseas Territories. The country has a long history of parliamentary-style government, with legislators elected every four years. It is still subject to Britain in matters of foreign policy and defence. The legal system is based on

English Common Law and is complemented by local laws. The courts operate under the English system, and the highest appeal is to the Privy Council in London.

Strong economy and attractive business environment When it comes to doing business there, the stable economic and political climate, absence of exchange controls, modern infrastructure and state-of-the-art communication systems put the Cayman Islands on par with the best economies in the world. Add a lucrative banking environment, sound legal framework and responsive government to the equation, and it’s not difficult to understand why so many companies choose to make the Caymans their address. The government has also established the Department of Commerce and Investment (formerly CIIB), an investment agency with a mandate to facilitate and stimulate long-term investment in all sectors of the economy. With low inflation and just 4% unemployment, the fundamental strength of the economy is evident.

Growing population With a current population of 49,035, the CIA World Factbook lists the Cayman Islands as the 35th fastest growing population in the world, at an annual rate of 2.39%. The Cayman Islands boasts a highly educated workforce, with over 82% of the labour force having completed at least a high school degree, and 26% having completed a postsecondary degree from a local or overseas institution. English is the official language, but there are over 100 nationalities residing on the three islands, making the country one of the most cosmopolitan work environments in the region.

High standard of living With an average income of around $42,000, Caymanians’ standard of living is not only the highest in the Caribbean, it’s one of the highest in the world.

Zero Taxation The absence of any direct taxation makes the Cayman Islands stand apart. It has no local income tax for individuals or incorporated companies. There is no property tax, no capital gains tax, no inheritance tax, no sales tax and no tax on non-residents. Instead, the government derives its revenue from company registration fees, stamp taxes, import duties and other non-income orientated taxes.

Location & Accessibility The Cayman Islands is made up of three islands - Grand Cayman, Cayman Brac and Little Cayman. Miami is only an hour away by plane and eight major international airlines make more than 55 weekly flights into Cayman direct from the United States, Canada and Britain. The Caymans’ national carrier serves its own three islands, plus the United States with flights to Miami, Houston, Tampa, Orlando, Fort Lauderdale, Boston and Chicago; Jamaica to Kingston and Montego Bay; as well as Havana. U.S. carriers offer direct links from such cities as Atlanta, Miami, New York and Charlotte. Regular, direct scheduled flights departing from London Heathrow to Grand Cayman’s Robert Owen International Airport are available through British Airways. Plans are to triple the Cayman airport’s terminal capacity and add routes into the islands from northeastern locations such as Chicago, traditionally considered one of the top five sources of U.S. visitors.

No restrictions on property ownership There are no legal restrictions on foreign ownership of property when the property is for the personal use of the owner, making Cayman very attractive to overseas investors. Most properties in the Cayman Islands are freehold, although there are a few leasehold properties. Title to Cayman Islands property can be held by individuals, either alone, jointly, or in the name of a company. To protect ownership and rights to property, the government has set up an efficient system of land registration under the Registered Land Law. The title to property in Cayman is ”absolute” (fee simple). Based on the Torrens System, each property has a property register. Buyers may examine the records for any property to check whether there are any liens, charges or restrictions on it. Title is guaranteed through the government, making title searches unnecessary.

Residency Anyone wishing to live in the Cayman Islands without any kind of employment may apply to the Chief Immigration Officer for consideration. There are two stages to the procedure; initial residency and permanent residency and initial residency will be granted only if it appears that the applicant will qualify for permanent residency. Initial Residency: Applications are granted for a six-month period but can be renewed providing the Authorities are satisfied that an application for permanent residency has been made or is about to be made. The prospective resident must show that he/she does not need to work in the Cayman Islands to support himself or his dependants, and that he/she

is of sound mind and in good health. At this stage, there is no need to acquire or prove ownership of real estate. Permanent Residency: The second step is to apply for making the initial residency permanent. At this stage, the applicant is expected to have met the necessary property purchase or investment requirement. Once a person has been granted permanent residency, no further permission is necessary to enter or remain in the Cayman Islands. Permanent Resident Permitted To Work: A permanent resident may, after two years of continuous residence, apply for a work permit. The Immigration Board will take into consideration the applicant’s standing in the community, as well as any contributions he/ she has made to the community. Permission is usually restricted to a specific occupation and there is a required annual fee.

Buying a French Leaseback Property What is it, how does it work, is it something for you? Investors around the world are looking to French leaseback properties, or, as they are known in France, ‘Residences de Tourisme’. Leaseback properties offer a hands-off, stable investment with tax benefits and guaranteed rent, while providing the opportunity for personal use, too. Leaseback is extremely popular with French investors who account for the majority of all purchasers of leaseback properties in France. French residents benefit from a range of tax advantages beyond the VAT rebate, hence the reason for their popularity but there are reasons why leaseback are increasingly popular among international investors as well as lifestyle buyers. The most obvious perk for leaseback property investors is that VAT is rebated to the buyer. The other main bonus is that buyers are handed a contractual rental guarantee, which is calculated as an annual percentage of the purchase price (excl. VAT). The level of return will vary according to the management company and the proportion of time the apartment is allocated for personal use.

French Leaseback Property Scheme what is it? The concept of leaseback property purchase is simple: A purchaser buys the freehold of a 82

property outright and then leases it back to a management company for renewable periods of up to 11 years. In return, the French government allows property owners to benefit from a 100% VAT concession, giving a saving of 19.6% (the current VAT rate on new-builds in France) on the initial property price. Property owners also receive a guaranteed rental return, irrespective of occupancy, at a fixed annual amount, which often offsets the cost of their mortgage payments. The rental return is net of all community fees and operating costs, which are covered by the management company. Under a leaseback arrangement, all operating costs - such as utility bills, repairs and maintenance - are covered by the management company on the property owner’s behalf. Contracts between apartment owners and their management companies must run for a minimum of nine years. After they expire, the contracts are rewritten on newly agreed terms.

An attraction of leaseback purchase to many investors is the ability to buy a dream holiday home within a development they could otherwise not afford. It is a freehold investment, while most or all associated costs are covered by the guaranteed rental income. Most leaseback properties are found in the best tourist locations, with pools, gyms and other facilities included.

Investors get the title deed for a property even before it is built. If the developer is unable to meet his obligations, the bank will take over to make sure construction is completed.

Investors need not worry about occupancy and are not exposed to short-term fluctuations in the tourist market. Nor do they need to worry about day-to-day management responsibilities. It is the management company’s responsibility to care of expenses, including insurance, maintenance fees, water, electricity, rubbish removal, etc. Investors are comforted to know they have a hands-off investment and can sit back and wait for their capital investment to increase over the years, with few additional out-ofpocket expenses. Leaseback schemes are ideal for Second-home owners who want a holiday home for occasional use, as well as a guaranteed rental income Long-term Investors who want to buy properties that produce a steady rental return and potential capital appreciation, with minimal hassle.

A long-term investment Leaseback properties are a good fit for investors who are willing and able to make a longterm investment commitment. A leaseback is not a quick-profit investment. Investors should not expect to sell after only a few years of ownership. But given that the investment is long-term, leaseback investors should be protected from a drop in real estate values during the course of the investment.

How it works

Modest, stable, hands-off returns The Leaseback Agreement provides peace of mind for investors who are used to guaranteed annual returns of at least 2% after taxes. While such returns are not as spectacular as some higher-risk investment markets, investors can take comfort in a certain level of stability.

The percentage of guaranteed rent is agreed upon in the lease contract, and that percentage is revised regularly, based on a national index. Some properties will be indexed annually, while others will be indexed every three years. The more often the property is indexed, the more the rental income will

increase over the years. Traditionally, the rental income is capped so it can’t increase dramatically and will instead move in line with the national index. In return for agreeing to the leaseback scheme, the investor receives a reimbursement from the government of the 19.6% VAT on any newbuild property. Some developers advance the VAT refund to you and then receive the funds directly from the government. This would represent a 16.4% discount from the market price. In other instances, the VAT is repaid by the government within four to six months of the purchase of the property.

The income that you receive from your leaseback property is entirely tax-free. A leaseback property is governed by commercial law and a different type of a tax regime, whereby you can deduct all your expenses - including the interest that you pay on your mortgage - from your rental income, so you are not left with paying any tax on your rental income. Thanks to a double taxation treaty between France and other European countries and the United States, investors would not pay any income tax at home on the income from his leaseback property, either. the period that the property is let out. This is on an understanding that the property will be let out to tourists for a period of 20 years. If the lease contract is terminated, or the property sold before this time, a part of the VAT would have to be repaid the French authorities on a pro-rata basis. This works out to 1/20th per year. As of January 2008, however, if you choose to sell your property with a renewed lease contract you will no longer be obligated to pay this. On refurbished or renovated properties, the 19.6% VAT rebate is not normally applicable and the VAT that will be reimbursed, if any, varies according to the development. This should be established before purchasing. Hassle-free Leaseback Period When leaseback schemes are sold, there is a pre-selected property management company to which the owner leases back the property for a period normally ranging from 9 and 12 years (it can be longer). Remember: the VAT rebate is based on a 20-year leaseback period. During this period, investors have the peace of mind of owning the property and benefiting from a guaranteed income, without the hassle of letting out and maintaining the property themselves. Personal use Depending on the development, investors can usually use their property for a certain number of weeks per year. Personal use of the property is limited, because the property must be available to rent, As the management company has an obligation to pay a guaranteed return, it is in everybody’s interest to maximise yields.

INGREDIENTS Asparagus: 225g green asparagus, peeled 225g white asparagus, peeled

Vinaigrette: 30-60 g black truffle, shaved (plus more for garnish if desired) 1 small clove garlic, minced 1 small shallot, minced 50ml olive oil 50ml truffle oil 1tsp Dijon mustard 40ml sherry vinegar salt to taste pepper to taste

For herb salad: 85g micro or baby greens such as baby mizuna, mash, baby beet greens

METHOD Blanche white and green asparagus. Set aside. Emulsify all vinaigrette ingredients in blender and refrigerate.(Keeps 3 days.)

PRESENTATION Toss asparagus spears with vinaigrette. Place dressed asparagus on each plate, alternating green and white. Garnish with herb salad and thinly shaved black truffles. Serves 4

INGREDIENTS For the tartare: 360g sashimi quality bluefin tuna (bigeye), preferably the loin 8 tbsp extra virgin olive oil 4 tbsp diced cucumber 4 tbsp chives, finely diced 40g 4 1 tsp 4

caviar quail eggs soy sauce (to taste) caperberries juice of 4/6 lemon cracked black pepper (to taste)

For the dill oil: 1 bunch dill 360 ml cold grape seed oil

METHOD

For each portion, slice the tuna into two 30g cubes, about 2.4cm around. Place two pieces of parchment paper on the counter and baste each with 1 tsp extra virgin olive oil. Put the two cubes of tuna between the paper and, using a mallet, pound the tuna as evenly as possible. Then use a bowl about the size of the tuna and cut around it with a paring knife so it’s a perfect circle. Repeat with the other tuna loins. Peel one piece of paper off and put the tuna in the centre of a plate, then remove the other piece of paper. Toss 2 tbsp chives and cucumber with 4 tbsp extra virgin olive oil. Coat the pounded tuna with the oil. Blanch the dill in salted water for 20 seconds. Shock in ice water and dry. Place the dill in a blender and puree. Strain through a tea strainer and set aside. Dice the remaining 30g of tuna finely. Toss the diced tuna in 4 tbsp olive oil, adding 2 tbsp chives and soy sauce to taste.

PRESENTATION Form the diced tuna into a quenelle and place it on top of the flat tuna at 12 o’clock. Spoon the caviar next to the quenelle (at 4’o clock). Using the tip of your finger, make an indentation in the caviar and place the quail egg. At 7 o’clock, place the caperberrry. Drizzle the dill oil and lemon over the dish and crack black pepper to taste. Serves 4 104

INGREDIENTS 4 black bream fillets (or any white fish), pin-boned 1 tbsp vegetable or corn oil roasted aubergine, tomato and potato crush

For the kachumber: ¼ ½ 1 ½ tsp 1 tsp

small cucumber, deseeded and cut into 3mm dice carrot, cut into 3mm dice tomato, deseeded and cut into 3mm dice salt sugar juice of 1 lemon 2 tbsp olive oil 1 tbsp finely chopped fresh coriander

For the marinade: 1 tsp ½ tsp ½ tsp ½ tsp

salt fennel seeds black onion seeds red chilli flakes

METHOD

First make the kachumber. Place the diced cucumber, carrot and tomato in a mixing bowl. Whisk together the salt, sugar, lemon juice, olive oil and coriander to make a dressing and mix it with the diced vegetables. Check the seasoning. Mix together all the ingredients for the marinade, rub them over the fish and set aside for 10 minutes. Heat the oil in a large, non-stick frying pan, add the black bream fillets, skin-side down, and sear for 3–4 minutes, until well coloured underneath. Turn and cook for another 2 minutes or until just cooked through. To serve, place the Roasted Aubergine, Tomato and Potato Crush in the centre of each plate and put the fish on top, then drizzle the kachumber around the plate.

ROAST SADDLE OF RED DEER WITH PICKLING SAUCE Courtesy of Vivek Singh, The Cinnamon Club, London

INGREDIENTS 1 kg meat from saddle of deer, trimmed and cut into 4 steaks 1 tbsp Rajasthani spice paste 1 tbsp Greek yoghurt For the sauce: 3 tbsp oil, preferably mustard oil 1 tsp pickling spice mix (1 part mustard seeds, 1 part black onion seeds, 1 part cumin seeds, ½ part fenugreek seeds, 2 parts fennel seeds) 1 white onion, finely chopped ½ tsp ground turmeric 200g boiled cashew paste 3 tbsp Greek yoghurt 4 green chillies slit lengthways 240 ml lamb stock or water 1 tsp salt 1 tbsp jaggery or molasses sugar 1 tbsp chopped green coriander

METHOD Rub the marinade over the steaks and set aside for 30 minutes. Mix the Rajasthani spice paste and yoghurt together and keep aside. Meanwhile, prepare the sauce. Heat the oil in a heavy-based frying pan and add all the seeds. When they begin to crackle add the onions and sauté until golden brown. Add the turmeric followed by the cashew nut paste and cook for 5 minutes. Now whisk in the yogurt and stir for another 5 minutes taking care that the yoghurt does not split. Add the stock, green chillies, salt and simmer for about 10 minutes until the sauce thickens and gets a glaze. Add molasses and chopped coriander and mix well. Remove and keep warm while you cook the deer steaks. Heat the oil in a large ovenproof frying pan, add the meat and sear over medium heat for 2-3 minutes, until browned all over. Transfer to an oven preheated to 200C/400F and roast for 6-8 minutes, if you like your meat pink. Longer if you like it cooked more. Remove from the oven; spread the Rajasthani spice paste and yoghurt mix on top and place under a hot grill (or return to the oven) for 1-2 minutes, until the top is lightly browned. Divide the sauce between 4 serving plates and place the red deer on top. You may serve the meat sliced or as steaks depending upon what you prefer. Serve with pilau rice or a potato dish on the side as accompaniment.

Salt:

the essential flavour of the infinite

Table salt or iodized salt (refined) This is the most readily available and cheapest form of salt, made all over the world. It is obtained either by mining or driving water into an underground salt deposit, formed by seawater millions of years ago. This process forms a brine which is then evaporated leaving dried salt crystals. The salt consists of about 99% sodium chloride and is then refined to make it very fine-grained and pure white. Anti-caking agents and iodine are added - the iodine is added to prevent goitre (swelling of the thyroid) which may be a problem in areas where the soil is deficient in iodine. This type of salt often has a bitter, acrid aftertaste and may smell “chemically”.

Kosher salt (refined, not iodized) This has nothing to do with the salt actually conforming to the Kashrut Jewish dietary laws. However, kosher meat needs to have the blood drained from it and as kosher salt has larger crystals than table salt which remain on the surface rather than dissolving, it is ideal for coating the meat in order to draw out the moisture. Kosher salt is made as described above, but the brine is continually raked, resulting in larger crystals. It can be used for most of the same applications as ordinary table salt, but is not recommended in baking or recipes where there will not be enough moisture to dissolve the large granules. Chefs often prefer to use kosher salt as its larger crystals are easier to handle for even sprinkling on food.

Salt has been a part of man’s life for millennia. This is because over half our body consists of fluids which contain appreciable amounts of salt. Each day the body loses a quantity of salt which must be replaced in order to maintain the balance. The human body cannot manufacture salt and therefore salt forms an essential daily part of a healthy balanced diet. What a bonus, then, that it also improves the taste of most food! For centuries, salt was difficult to obtain and therefore highly prized and as with any other highly prized substance, salt attracted the attention of the governments of the day as a source of revenue. Salt taxes were levied in countries such as France, England, China and India. In fact, the British salt tax in India led to one of Mohandas Mahatma Gandhi’s most famous campaigns of civil disobedience. Today, there is a bewildering array of salt available at both supermarkets and speciality stores. The finished product may be fine crystals, larger crystals, or flakes; and the processes to obtain it varies according to whether it is rock salt or sea salt. Some salts are suitable for cooking, but others are classified as “finishing salts” which should only be used on prepared food lest the subtleties of their texture and flavour be lost. Confused? Let’s take an armchair journey to discover some of the better-known and the more unusual salts from around the world.

Rock salt (refined/unrefined) Rock salt is mined from large underground deposits called beds or domes, as opposed to being extracted by evaporation. It is crushed into manageable chunks and hauled to the surface, where it is screened, bagged, and shipped for further processing. Much rock salt ends up as non-edible large crystals used in applications like de-icing roads and to soften hard water (e.g. in dishwashers). But some particularly fine examples are broken into manageable-sized crystals to be used as table salt, including: Himalayan rock salt, said to come originally from Alexander the Great’s salt mine in Kashmir, Pakistan, is mined by hand and sold as large pinkish crystals about the size of golf balls. The crystals have to be freshly grated for use, resulting in very fine powdery salt which retains a pink tinge. This salt is said to contain an almost identical set of elements to those found inside the human body: 84 of the possible 92 trace minerals, in the same proportion as naturally exists in our blood. Bad Ischler Kristallsalz is an iodized rock salt from the town of Bad Ischl near Salzburg (literally “salt town”) in Austria. Bad Ischl is in the Salzkammergut which literally means “Estate of the Imperial Salt Chamber”, referring to the authority charged with running the Hapsburg empire’s salt mines. A noniodized version is only available on request in Austria, where legislation requires iodization of table salt.

Sea salt (refined/unrefined - finegrained varieties may be iodized) Some table salt is derived from seawater which is heated in order to evaporate the water and leave the salt. Because this process is more expensive than salt produced from mines, you will usually pay a premium for sea salt. Sea salt can either be sold as a fine-grained product, as larger crystals, or as flakes. 112

The most famous English example is Maldon Sea Salt which is made along the east coast of England. Water is drawn from the ocean during twice-monthly spring tides (when the salinity is at its peak) and pumped into stainless steel tanks. From there it is pumped as needed into shallow stainless steel evaporating pans constructed over an intricate system of brick flues which contain heating ducts. The temperature is carefully regulated in order to encourage evaporation and the formation of salt crystals. These crystals eventually sink to the bottom of the evaporating pans and from there they are “drawn” - raked out by hand using traditional wooden rakes. The resulting salt consists of flaky, pyramid-shaped crystals and is ideal as a finishing salt.

Fleur de Sel - literally “flower of salt” (unrefined) This premium salt is regarded as a finishing salt - once it has dissolved and mixed with other ingredients much of its characteristic crunchiness and subtle marine flavour will have been lost. Fleur de Sel from Brittany in France is the best known, but versions are also produced in the Camargue region of France, along the Algarve coast of Portugal (where it is called Flor de Sal) and St Helena Bay in South Africa. Obtaining Fleur de Sel is a complicated and labour-intensive business. Seawater is guided from the ocean along a system of channels where natural evaporation increases the salt concentration in the water from 27g/l to 300g/l. This concentrated brine is flooded into shallow coastal pools where it is left to evaporate naturally. During the process of evaporation, salt crystals slowly form in a thin layer on the surface, particularly on windless days. The task of harvesting this delicate layer of salt is done entirely by hand using traditional wooden rakes called lousses à de fleur. The rakes are delicately wielded by specialists known as paludiers who know how to rake only the fine layer of salt off the surface of the pond, producing flaky, off-white and slightly

moist salt. No mechanical machinery is ever used and no metal ever touches the salt; nothing is added and nothing is removed. Because conditions must be just right for Fleur de Sel to form (it can only be harvested from May to September, on windless days), the yield is only about one pound for every 80 pounds of Sel Gris (see below), making this an expensive but worthwhile commodity.

Sel Gris - literally “grey salt” (unrefined) This salt is moist and unrefined and is closely related to, but more robust than, Fleur de Sel. It is produced in the same shallow coastal pools as Fleur de Sel (described above), but is raked up from the bottom of the pool rather than skimmed off the top. This salt is also not collected by machine but by hand using traditional methods - although the paludiers rake the bottom rather more vigorously than when harvesting Fleur de Sel! The salt flakes have a very definite green/purple/grey colour and distinct flavour, both obtained from its contact with the minerals in the pool’s clay bottom. Like Fleur de Sel, Sel Gris is only harvested between May and September, making it expensive but less so than Fleur de Sel.

Hawaiian Alaea Red Salt (unrefined) This salt is produced from Hawaiian waters. A natural mineral called Alaea (a red clay from Kauai of volcanic origins, rich in iron oxide) is mixed in with the salt crystals during evaporation under the sun, which imparts the red colour. The salt is said to have a pleasant taste of toasted hazelnuts and it is exceptionally high in iron, because of the presence of iron oxide in the Alaea clay. It is used by Hawaiians in traditional ceremonies to cleanse, purify and bless tools and boats.

Hawaiian Black Lava Salt (refined) This sea salt is evaporated in pools above ground that formed naturally from old lava flows. The colour is not natural but created by

bonding high quality, activated charcoal to pure Pacific Ocean sea salt. Hawaiian Black Salt excels as a finishing salt and has a spectacular deep black colour. Its charcoal content is also said to give it detoxifying properties.

Indian Black Salt (unrefined) Nirav Black Salt (also known as Sanchal or Kala Namak) is not a sea salt but a volcanic rock salt or saindhav and is mined in central India. This salt is not really black at all but rather a very deep burgundy-pink, as a result of the presence of trace minerals and iron. The salt has a distinctive sulphur taste and smell that somewhat dissipates upon cooking. It is also used in Ayurvedic medicine as a digestive aid.

Australian Murray River Pink Salt (unrefined) Australia’s Murray-Darling Basin was once the bed of a shallow sea which eventually disappeared, leaving behind its salt in the soil. Low rainfall and high evaporation have combined to concentrate salt in the groundwater. This pink salt is produced by evaporating briny water from Lake Mourquong, into which saline groundwater is pumped to alleviate the salinity problem. The brine contains sodium, potassium, calcium, magnesium and iron, resulting in a colour that varies from deep pink to light apricot.

The essential flavour of the infinite Although salt is no longer the precious commodity it once was, it seems likely that we will continue our love affair with salt in all its various forms. Perhaps it is because of the flavour it imparts to food.
