OUT TO SEA
PACK ONCE, HOP ABOARD, AND SET OUT FOR ONE OF THESE FAR-FLUNG DESTINATIONS ON A PRIVATE YACHT JOURNEY.
By Heidi Mitchell1
Megayachting in the Med on Wanderlust
Step into the future of charter yachts on the newly constructed, 280-foot sports activity vessel Wanderlust The yacht’s winter garden is wrapped in retractable glass for breezy, shaded meals, while the aft has been extended with a deck that’s larger than a tennis court, perfect for disco parties, movie nights, or just hanging out before and after rides on the kayaks, SUPs, Jet Skis, and tenders. Zero-speed stabilizers make this 12-passenger behemoth ideal for multifamily excursions, especially since the eight oversized guest rooms and glass-fronted Jacuzzi on the sundeck leave plenty of options on board for the less adventurous of the group. Expect heads to turn when you pull up to Porto Cervo. Seven-night itineraries from $956,000, burgessyachts.com
A private journey to the Galápagos on Evolve by Ecoventura
The only Relais & Châteaux boats to cruise the waters that surround the Galápagos Islands added a third member to the fleet this past January. Ecoventura’s 10-room expedition vessels are frequently chartered privately, allowing guests to roam the wildlife-rich waters and islands at their own pace. Expert guides can lead passengers on nature walks along empty beaches, snorkeling excursions with sea lions, swimming sessions alongside penguins, and birding outings to see blue-footed boobies as they perform their intricate mating dances. Seven-night itineraries from $9,450 per cabin, ecoventura.com
Exploring Indonesia on Amandira
If exploring the 18,110 islands that make up the Indonesian archipelago seems daunting—but thrilling—then board the twin-masted Amandira and let the experienced crew of 14 guide you through this under-touristed destination that’s accessible only by ship. Aman’s 52-foot phinisi yacht draws inspiration from ancient spice ships and allows guests to visit Komodo dragons on their namesake island, climb the volcanic rocks rising out of the remote Banda Sea, and swim with pygmy seahorses and giant whale sharks near West Papua. Five-night itineraries from $10,800 per cabin, per night for up to 10 guests, aman.com
Cruising on a catamaran through the British Virgin Islands on Nomada at Sea
The California-based hotel group Nomada has set its sights on the Caribbean, taking command of a 62-foot catamaran with five guest rooms that can sleep up to 10 guests as it wends through the BVIs for a week. Favorite activities of Captain Thomas Beesley are night snorkeling off Peter Island or in Kelly’s Cove on Norman Island, especially when the moon is full, but he’s got a few more tricks up his sleeve, including surfing in Josiah’s Bay on Tortola. Six-night itineraries from $43,000 for up to six guests, nomadahotelgroup.com
New yacht, vintage feels through the Med on Satori
Pack those headscarves and double-breasted jackets—this wooden yacht is throwing it back to the 1920s, when sailing the high seas was a pastime reserved solely for the landed gentry. Commissioned in 2017 by the owners of Tuscany’s beloved Borgo Santo Pietro, this 136-foot schooner comes with grown-up toys like Seabobs, Jet Skis, and paddleboards, and can set sail for the shores of Italy, Corsica, Greece, and Turkey. But you’ll probably want to spend most of your time aboard the vessel—all wrapped in mahogany, teak, and walnut—where a chef from Borgo’s Michelin-starred restaurant prepares fish that was still living earlier that day, and a massage therapist (who can take over one of the five cabins) will iron out any kinks that daily dunks in the sea have yet to smooth over. Be sure to save one evening for movie night; a pop-up screen and some Champagne by moonlight is the stuff of dreams. Seven-night itineraries from $12,000 per night for up to 10 guests, borgosantopietro.com
Aviator NATION
Oftentimes, short-distance travel between urban hubs and low-density resort towns comes down to boutique, budget airlines or private charters. But in a post-9/11 world, Eric and David Zipkin, the co-founders of Tradewind Aviation, saw a better way.
In the months following the tragic day, the brothers—both private pilots and eventual entrepreneurs—would dream up the idea for a next-gen private airline inspired by the halcyon days of aviation, when flying was a heartening journey rather than a harrowing slog. Two decades later, with major U.S. airlines still struggling to deliver a seamless product amid unprecedented demand, it’s clear that the Zipkins were onto something brilliant.
Tradewind Aviation went wheels up for the first time in November 2001. The innovative enterprise commenced operations with charter flights that catered to Wall Streeters making regular weekend jaunts to Nantucket from White Plains, NY. While the route wasn’t revolutionary, the bevy of perks— swift boarding, consistent top-notch service, and plush seats on pristine jets—was. The airline’s coterie of frequent flyers was delighted (if not wholly relieved) to pay a little extra and recoup precious hours otherwise squandered in a car or cramped commercial flight. With the Zipkins’ strategy of serving up
jetliner-caliber service with private-charter intimacy, they set their sights on expansion.
As the Oxford, CT-based company grew, so did its list of signature customer-centric offerings, such as interchangeable tickets, private airport entrances, and a 15-minute boarding process. Tradewind also amassed a fleet of luxurious eight-seater Pilatus PC-12 and Cessna Citation CJ3 jets that, like commercial aircraft, would always be manned by two pilots. Naturally, new destinations were steadily drawn onto Tradewind’s route map, extending the airline’s reach to the most coveted hotspots across the Eastern Seaboard, including Martha’s Vineyard and Newport, RI, as well as exclusive seasonal service to Stowe, VT.
Come winter, Tradewind ramps up its coverage in the Caribbean with daily scheduled flights from its hub in San Juan, Puerto Rico, to Antigua, St. Barts, and Anguilla. Around 70 percent are shared flights, while the remainder are private—and all guarantee personalized service and stress-free “wing-to-wing” transfers to your final destination. On St. Barts, the Tradewind experience doesn’t end at touchdown. The operator has teamed up with the island’s most sybaritic retreats to provide exclusive concierge packages with benefits like complimentary roundtrip ground transportation and a 10 percent discount on future trips. flytradewind.com

Lucid makes a clear case for plug-in driving.
By Geoff Nudelmanou’d be forgiven for not having heard of Lucid. The California-based, Arizona-built electric vehicle maker has only a handful of its flagship Air models on the road—4,300 delivered in 2022—and they are largely only available by online request. However, Lucid’s glory is soon to blossom. Those lucky enough to have an Air are in possession of what’s likely the most driver-focused EV available today. The Lucid Air Grand Touring is an 819-horsepower marvel of engineering wrapped in a sleek, curvaceous nouveau-sedan body with an estimated range of up to 516 miles on a single charge (the Tesla Model S claims 405 miles). That power goes to good use with an eye-popping 885 lb-ft of torque with a 0–60 mph time of 3 seconds. That’s approaching supercar territory for an otherwise unassuming electricity-powered four-door. Lucid offers four versions of the Air, with a fifth Air Sapphire “super-sports sedan” with more than 1,200 horsepower coming later this year. The company will launch an SUV sometime in 2024 as well. Interested buyers can check out Lucid at an ever-expanding network of studios and service centers across the U.S. and Canada, including its newest location in Montreal, which opened in January. BUBBLE WRAP
The newest addition to Belmond’s fleet of river barges swathes guests in style while cruising through France’s Champagne region.
By Heidi MitchellOriginally constructed in 1928 as a cargo vessel, the Hirondelle barge was transformed in 1992 into one of the few fully outfitted floating hotels to ply the waters of the Marne River and the Canal Latéral à la Marne, wending through striped landscapes, ancient stone villages, and formerly blood-soaked battlefields. Belmond recently breathed new life into this three-cabin luxury boat, now answering to Coquelicot and awash in earth tones, shiny woods, and river breeziness thanks to the uber-luxe touch of French architects Humbert & Poyet. Because Coquelicot makes up part of Belmond’s larger fleet (which includes Alouette, Pivoine, Napoléon, Amaryllis, Fleur de Lys, and Lilas), the boat and its passengers enjoy exclusive access to priceless experiences.
Included in a six-night itinerary is an exceedingly private romp through the circa-1729 Maison Ruinart, along with guided tours of the historic Taissy vineyard, and a “four-hand,” five-course tasting lunch back on board with Ruinart’s chef in residence, Valérie Radou. After enjoying her immersive pairing menu, you’ll be grateful you can easily retreat to your Euro-coastal-chic cabin and let the current twisting beneath you lull you to sleep as riverside towns unfurl across your window. The next day, a new adventure awaits, granting fresh excuses to raise a glass again. Six-night itineraries from $89,000 for up to six guests, belmond.com

If it’s an aesthetically pleasing, culturally rich itinerary you’re after, read on to discover the musthit spots.
Located in the heart of Old Montreal, next to Place Jean-Paul-Riopelle, Humaniti (humanitimontreal.com) is one of the city’s chicest resting spots. Designed by Canadian architects Lemay, Humaniti features works like Marc Séguin’s pink tree-like sculpture Hanima, which takes pride of place in the lobby, and a hot-pink neon display near the elevators with the words “OVER YOU” upside down that was created by artist Mark Clintberg. A total of 193 guest rooms and suites all have a contemporary vibe, while the rooftop pool is a great way to take in city views.
Quebec’s Plural Contemporary Art Fair (plural.art; previously Papier)—the largest of its kind—is held by the Contemporary Art Galleries Association (AGAC) and takes place in April at the Grand Quai of the Port of Montreal. The must-see event celebrates the best of contemporary art in Canada.
Be sure to check out the Ssense flagship (ssense.com) in Montreal’s Old Port. Designed by David Chipperfield Architects, the space is a harmonious balance of form and function. Surprisingly easy to get to (United Airlines offers direct daily flights from Newark, and the Palma airport reaches 139 European cities), Mallorca carries all of the appeal of an independent out-of-the way island, but with none of the aggravations that typically come with such destinations. Safe, easy to navigate, and stunning at every corner, Mallorca makes it easy to enjoy every minute on the island.
Most of the island’s top hotels are from independent brands. Choose any city hotel from the IT Mallorca group (itmallorcauniquespaces.com), such as Can Cera, within a 17thcentury Mallorcan house in the center of Palma, or any of the resorts from the Torre de Canyamel Group (torredecanyamel.com), such as Pleta

The just re-opened Son Net (sonnet.es) has been fully renovated by Lorenzo Castillo to feel like a decadent country house. Book a few hotels around the island for a couple days each, or make one your home base as you explore.
The island has 11 Michelin stars across 10 of its top restaurants. Standouts include the chef’s table at Dins (dinssantitaura.com), where chef Santi Taura serves a “blind” menu on ceramics he’s made by hand, and Es Fum (restaurant-esfum.com), where chef Miguel Navarro and sommelier Julianna Gonzalez make even a butter course (with wine paring) feel completely inventive. For something off
the beaten path, head to Ca Na Toneta (canatoneta.com) for a farm-to-table experience in the countryside, and don’t miss its gift shop selling locally made ceramics and textiles.
The sparkling coastline is best explored by boat, so avoid the crowds on land and have your hotel book you a private charter. Take a break from the sun and visit the Miró Mallorca Foundation (miromallorca.com), Museo Sa Bassa Blanca (msbb.org), and the Catedral de Mallorca (catedraldemallorca.org), the only cathedral in the world that faces the sea. Or, experience a traditional hammam in the heart of Palma at Hammam Al Andalus (hammamalandalus.com), which will impress even the most experienced spa goer.

Alchemy creates custom bikes in a trekker’s haven.
By Geoff Nudelmant the footsteps of the Front Range in Golden, CO, the Alchemy Bikes showroom is a glistening example of modern bike production. Debuted last summer, the company’s headquarters and showroom are part of a new progressive development, which includes a food hall and coworking space, and is steps from another two-wheeled destination—a Harley-Davidson dealership. Here, Alchemy makes its stock and custom-fitted titanium and carbon-framed road and gravel bikes and assembles mountain rigs, the latter of which are produced in Taiwan. Perfectionism and care are taken in every detail at every step. In one example, the company’s dedication to an intense refinement of the traditional carbon-fiber frame results in a strong, lightweight option that reduces vibration to create a seamless, almost-whisper-quiet riding experience. Additionally, there are an estimated 250,000 paint combinations for true customization. Complete bikes start well above $5,000 and tend to go much higher based on a client’s specific desires. Since 2008, Alchemy has always focused on the right numbers: less about how many bikes they build (now around 150 each year) and more about the finer points that deliver a truly special ride. alchemybikes.com ■

My Routine
Two executives share how they stay in shape mentally and physically while working in the demanding 24/7 hospitality industry.
As co-owner of Kanava Hotels & Resorts’ six properties, including the new Cosme in Paros, Konstantinidou introduces guests to an authentic luxury Hellenic experience, but all that island-hopping can take its toll if she doesn’t take time to recharge.
MOVE: “I stretch when I first wake up, take a Pilates reformer class two days a week, and work with my personal trainer twice a week doing functional fitness training and cardio. I also swim in the open sea and walk to work whenever I can.”
REST: “An eight-hour night’s sleep helps my stress levels and mood in general, so I try to go to bed before midnight and wake up at 8 in the morning. After 2 p.m., I replace coffee with Greek herbal tea and use the Opo meditation app to help me relax at night.”
NOURISH: “I drink espresso with a dash of almond milk, 500 mL of water, and take my vitamin C, D, and omega-3 supplements every morning. I also fast for 16 hours, then consume all my calories in an eight-hour period and avoid dairy milk, gluten, and sugar.”
Shuttling between the Four Seasons’ properties around the world to meet with investors and international sales brokerages is all in a day’s work for White, who’s on the road three out of four weeks a month. Here’s how he keeps it together.
MOVE: “Celebrity trainer and nutrition expert Harley Pasternak is one of my close friends and has taught me to train smart, which includes going to the gym five to six days a week. I try to get in 14,000 steps a day and walk whenever I can, whether it’s on a flight, during conference calls, or while playing golf.”
REST: “My sleep number is seven hours. I like the room dark, ear plugs, and am convinced a lavender pillow spray helps me fall asleep faster. I charge my phone in another room and try to stop looking at it at least an hour before bed.”
NOURISH: “I spend the first hour of my day in prayer and reading my Bible. It’s the source of my strength and perspective throughout the day. I take a multivitamin and amino acid supplements, which make me feel like I get better workouts. I mainly eat fish and chicken with vegetables or salads. Sugar is the enemy. I love chocolate, but I have an ‘all or nothing’ personality—if I taste it, I will eat all of it—so I just have to stay away.”

A Cut Above
A er 20 years in his Brighton Way boutique, Beverly Hills jeweler Martin Katz is quite literally taking his stunning jewels to new heights. Now, his one-of-a-kind pieces—beloved and worn by A-listers like Salma Hayek, Zoë Kravitz, and Nicole Kidman both on and o the red carpet— glimmer in the Penthouse Suite of the landmark yellow Fred Hayman building at 190 North Canon Drive. e move is a full-circle moment for Katz, who launched his career as a private jeweler in the early 1990s from a penthouse apartment on Wilshire Boulevard. It was during this time that he famously loaned Sharon Stone a diamond choker and earrings for the 1992 premiere of Basic Instinct, igniting his three-decade presence on the red carpet and a Rolodex of over 500 celebrity clients.
“Fred Hayman and his relationship with Beverly Hills, Hollywood, and fashion spoke to me, and I knew it was the right place for my next chapter,” says Katz. e 1,500-square-foot atelier has been realized by Dion Mial Design and mirrors Katz’s signature style with subtle art deco in uences and pared-back elegance. High-gloss lacquered sycamore nishes out t everything from stylish vignettes to his granite-topped Jewel Bar, which will feature some of the world’s most coveted no-oil emeralds—or as he dubs them, “the holy grail of emeralds.” To mark the occasion, the designer is exploring a new direction with the debut Penthouse Collection, designing around geometric gemstones and creating whimsically unique rings and earrings. An outdoor terrace invites a more intimate, lounge-like experience where you can sip on a co ee or cocktail while taking in views of Beverly Hills. “My hope is that the Penthouse will not just be a place to shop, but also become a social destination in itself,” says Katz. martinkatz.com

NATURAL BEAUTY
CODY PRUITT’S NEW FRENCH BISTRO IN NEW YORK’S WEST VILLAGE EMBRACES THE UNTOUCHED. By
Natural wine is not just a fashionable term but a way of life for restaurateur and sommelier Cody Pruitt. The New York City native currently operates as general manager and beverage director at Anfora in the West Village, a bar that pioneered a natural wine–centric menu when it opened in 2010 and which Pruitt has now converted to exclusively carrying natural wines. For his next venture, Pruitt and executive chef Max Mackinnon—who also shares a passion for the grape and was the wine director at Roberta’s—have been creating buzz with a series of popups before the official summer opening of their first venture together. Libertine (libertinenyc.com), also in the West Village, is inspired by the cuisine du marché found in bistros across the French countryside and will feature an all-natural, entirely French wine list.
For Pruitt, his definition of natural wine goes beyond the process. “It’s wine that has not been touched, over manipulated, or handled. For me, it is delicious wine that is literally just grapes and time without any additives, and the fermentation is derived completely from yeasts that are
Carole Dixonnative to the land—from the skins of grapes to the hands of the winemaker.”
To put this in perspective, “conventional, or industrial wine,” as Pruitt calls it, is made with cultivated or modified, chemically derived yeast and can include hundreds of additives without even listing them on the label, so he has dubbed these bottles “the fast food of wine.”
Natural wine is also not filtered and can be a little cloudier, but for Pruitt that just adds more flavor and life. “We are dealing with a living, breathing thing with active yeast in it, and it is much more dynamic and tastes of the terroir where it came from,” he says. “There are no stabilizers, thickeners, thinners, coloring, or flavoring agents.” If you are just starting out on this imbibing path, Pruitt recommends simply going to a local wine bar that is natural wine–centric and the staff should be able to guide you. Or, check out his recommendations for these natural wineries around the world.
PRUITT Recommends
RUTH LEWANDOWSKI (California) While I specialize nearly exclusively in Old World (aka European) wine, there are a few producers in the USA and other parts of the “New World” that I look for when dining out or buying bottles for myself. One of the most consistently excellent and exciting winemakers I can think of is [proprietor] Evan Lewandowski, who uses grapes that are less standard by California wine convention (I often see sangiovese, friulano, riesling, among many others in his wines).
CLAIRE NAUDIN (France) Burgundy, a region often thought of as expensive, a little “gatekeeperish,” and unapproachable by younger wine drinkers, is thankfully also home to some of the greatest natural wine producers in the world. While all of Claire’s wines are quite magical, I’d highly recommend finding Le Clou 34, her signature white wine made from the lesser-known grape aligoté.
GUT OGGAU (Austria) Husband-and-wife team Eduard and Stephanie Tscheppe design their wines around fictional personalities and portraits, intended to describe and evoke the identity and flavor of the wines as if they were people.
AUVERGNE (France) A stunning, postvolcanic time capsule of sorts, this is the birthplace of French bistro cooking, and the region has captured my heart as the source of some of the most vibrant wines and winemakers anywhere in the world. Producers to look for from Auvergne are Patrick Bouju, domaine No Control, and Marie and Vincent Tricot.

The French Ouai
ince its founding in 1986 with just 35 seats, Manhattan’s Le Bilboquet (lebilboquetny.com) has amassed a cult following. Fans have followed founder Philippe Delgrange as he expanded to 100 seats at his East 60th Street location and opened additional outposts in Denver, Palm Beach, Sag Harbor, Dallas, and Atlanta. In the decades since, he’s entrusted his famed flagship to only a handful of proteges. Among them, chef Camille Martin.
After arriving in New York City from France in 2017, Martin opened a wine bar in SoHo before joining the Upper East Side French institution where she is currently the executive chef, overseeing the flawless execution of fan favorites, from Le Poulet Cajun and La Crab & Avocado salad to La Tarte Tatin.
We spoke to chef Martin about what is exciting and inspiring her on the culinary scene today.
What made you want to become a chef? That’s a big question! But, in short, I grew up in a family where everyone cooks and talks about food, so it was hard to think about doing something different. My father is a very good cook, and he knows a lot about ingredients. He and my mother make an adventure out of going to the market, and they also have a garden, so our dishes would always be about whatever was in season, but we cooked all the French classics.
Most high-end restaurant kitchens have historically been run by men. What is it like to be a woman leading a top-tier restaurant these days? Actually, I probably have a lot of the same challenges that a man has these days. What’s hard is that there are a lot of parameters to control, and when your job is your passion, it’s even harder to disconnect from it. That’s the hardest part for me now. In New York City especially, you have the possibility to work beyond your age or what you look like—it’s all about results and achievements.
How has it evolved for you over the years? The new “no screaming in the kitchen” era is for sure an evolution, and it’s great to see that. But I’m also nostalgic for the old-school training, where classical methods and technique were emphasized over trends and new technologies.
How do you preserve French tradition during a time when there’s been an influx of new-wave modern French restaurants? There is a return to the elegance of tradition— the products and the classic recipes and sauces. I have traveled and gathered influence from this, combined with ingredients or techniques seen in places like South America or Asia, which always interest me.
Let’s talk about butter—what is your favorite? Is there anything you don’t put butter in? My favorite is Isigny butter. But I am from Normandy and was raised in the
South of France, so there are a ton of things I don’t put butter on, such as anything with olive oil—except for bouillabaisse, which I love with a touch of butter.
What other restaurants or cuisine are exciting to you in the U.S. right now?
I love Japanese and South American cuisines, and more and more chefs in NYC are creating their own takes on those with local products. Also, Greg Baxtrom’s restaurant Olmsted in Brooklyn and chef Markus Glocker’s French-Viennese restaurant Koloman in the NoMad area are both very impressive.

STAYING INSPIRED
With galleries in New York, Los Angeles, Miami, and London, Ralph Pucci (ralphpucci.com) has become one of the foremost dealers of art and design. Here, he shares the places and people who inspire him. By Jorge S. Arango
What’s the most provocative show you’ve seen lately? The current show [on view through Nov. 12] at the Rubell Museum, “Alexandre Diop: Jooba Jubba, l’Art du Defi, the Art of Challenge.” He’s a Franco Senegalese artist who lives in Vienna. I think you’re going to see a lot of artists going in that direction, using found materials in a figurative way. Where do you refresh your visual palette? Last summer I went to Palermo and then to Noto in Sicily. I found the streets, colors, smells, and restaurants fascinating. They’re rundown, with a sense of faded grandeur, but modern too. If you cleaned them up—but not too much—they could be something magical. I also love the Margulies Collection at the Warehouse. It’s 50,000 square feet of sculpture, art, and design—very raw but with lots of soul. And I listen to a lot of 1950s jazz records—Charlie Parker, Thelonious Monk—mostly from the Blue Note record label. I always imagine what that music would look like visually.
What’s the most unusual place you’ve found something interesting? I was vacationing in Barbados and reading a British magazine article on
an artist named Sheena Rose. I saw she lived on the island about 45 minutes away, so I visited her. It wasn’t the sort of work I’m normally attracted to, but I am attracted to not always being in my comfort zone. She worked in a little shack where she painted Black athletes with giant, giant afros in vibrant colors. I think her work is very now.
What are your top art fairs? I’m so busy that I hardly get to them. But I think Art Basel Miami Beach and Frieze Los Angeles have really brought a lot of energy to those cities. I also really want to get to Mexico City when I can [for Zona Maco].
What about furniture? What’s new there?
Sculptural furniture is very big. We have our own sculpture studio, where we’ve been using a material I call plaster glass, which is a plaster mixed with resin. It’s usually white, black, or gray, but we’ve been experimenting with colors.
Any designers who are due for a reevaluation? Andrée Putman would have been 100 in a couple years, and they just came out with a great documentary about her in Paris. She’s a giant of design and will not be forgotten. n

MEZCAL’S MOMENT
ONCE THE PROVENANCE OF CRAFT MIXOLOGISTS, MEZCAL HAS QUICKLY ENTERED THE MAINSTREAM AND IS EVOLVING FOR THE FUTURE WHILE HONORING ITS PAST.
ME ZC AL
Around the globe, few drinks are as culturally expressive as mezcal. Known for being bolder and smokier than tequila, this agave-based spirit has gone from being a traditional Mexican beverage to a fashionable drink, with a growing following among both connoisseurs and casual bar goers. While farmers in the Mexican state of Oaxaca—an arid, mountainous landscape in the southern part of the country—have distilled mezcal for centuries, it has recently experienced a meteoric rise, with spirit connoisseurs widely celebrating its nuanced flavors and complexities. Data shows the North American mezcal market is projected to rise to $2.5 billion by 2029, amounting to an annual growth rate of almost 23 percent. With a satisfying smoky sip and as a smooth conversation starter, mezcal has a rich story to tell.
BY LAURA CORRIGAN O’CONNELLaxaca is the true locus of mezcal. Its capital city of the same name boasts vibrant architecture, markets, and enchanting hillsides. It’s also home to some of Mexico’s most incredible cuisine, boasting 26 Michelin-starred restaurants. The city is a feast for the senses and makes for a memorable trip, and those searching for the heart of mezcal, both geographically and spiritually, have found its home.
Tequila and mezcal are both made from the agave plant, but mezcal has historically been made primarily in and around Oaxaca (most tequila comes from the Mexican state of Jalisco). Native to this region, mezcal can be made from any of 11 varieties of agave. Locals began distilling mezcal in the 16th century when they applied distillation techniques learned from Spanish conquistadors to ingredients available in their environment. Today, mezcal must be produced under the country’s denomination of origin (DO), which, like DOC and DOCG for wine, aims to preserve traditional methods and protect mezcal’s unique flavor and reputation.
Oaxaca, Durango, Guerrero, Guanajuato, Michoacán, Puebla, San Luis Potosi, Tamaulipas, and Zacatecas are legally allowed to produce mezcal from maguey, or the numerous agave species growing in these Mexican states.
To this day, many of Oaxaca’s villages have maintained their original dialects and traditions—and their own mezcals. The mezcal-production process in Oaxaca involves several stages. It begins with harvesting the mature agave plant, then removing its leaves to expose the piña, the heart of the plant. The piñas are then cooked in underground pits lined with stones and wood, giving the mezcal its smoky flavor. Once cooked, they are crushed and the resulting juice is fermented before being distilled in copper or clay stills. The final product is a clear or amber-colored spirit with a distinct flavor that reflects the unique characteristics of the agave plant and production process.
While mezcal has a storied history and celebrated culture, one group of visionaries has gained significant recognition in recent years in Mexico and worldwide. Mezcal Amarás (mezcalamaras.com), one of Mexico’s most notable producers of artisanal mezcal and the first carbon-neutral mezcal company in the world, is paying homage to the sacred traditions while paving the way for future generations. Founded in 2011 by a group of friends who were passionate about mezcal and its role in Mexican culture, Mezcal Amarás sought to create a product of the highest quality that would also reflect the culture and traditions of Mexico.
“Ten years ago, we embarked on this project with great hope but not knowing or understanding the complexity that producing a single drop of mezcal would entail,” says Santiago Suarez, chairman and founder of Mezcal Amarás. “We were overwhelmed, but we continued, and thank goodness we did.”
Mezcal Amarás has become known for its commitment to sustainability, using only organic agave plants and traditional production methods, ensuring that every bottle is of the highest quality. One focus is supporting the maestros mezcaleros, the mezcal masters who carry on the long-standing tradition of mezcal production. Behind each bottle is a maestro mezcalero who has empirical knowledge that transcends generations, with rituals and ancestral methods that help create a one-of-a-kind elixir. To honor mezcal’s legacy and respect the artisanal, ancestral methods, Mezcal Amarás collaborates with more than 18 hand-selected maestros mezcaleros to develop long-term, honest relationships and support them with industry, business training, zero-interest micro-loans, and fair prices on agave and mezcal. Paying a fair price for the agave means Mezcal Amarás has more support in its conservation efforts. Well-paid artisans and farmers are more incentivized to protect land and promote biodiversity, which plays a part in a healthy ecosystem where agave thrives.
Another pillar for the mezcal industry’s future is caring for the earth. Since its founding, Mezcal Amarás has intended to create a sustainable balance through the sowing of agave, and the rescue of wild agaves has been a driving force behind the collection. On average, Mezcal Amarás has planted seven agaves for every agave harvested since 2014, of 10 different species in previously deforested land using organic compost from its distillery. It also is focused on maintaining the biodiversity of wild agaves by handpicking and selecting the strongest and healthiest mother agaves, waiting for them to reproduce in a life cycle of 7 to 35 years, and selecting the best seeds. It also works with groups like the World Wildlife Fund to develop initiatives in favor of forests, soil conservation, and water care.
“Our greatest strength is our philosophy,” Suarez says. “We are committed to continuously learning from our mezcalproducing communities and preserving our trusted relationships with them.”
The success of brands like Mezcal Amarás reflects the growing popularity of mezcal worldwide. And its founders hope other brands also committed to sustainability and honoring the past will join the movement. n

DINING delights
The compelling food destinations that are defining the global culinary scene.
BY KAREN PALMERThe world has no shortage of delicious places to explore. Here are seven destinations to consider for your next food adventure— from a picturesque region on California’s Central Coast to the shores of Portugal to the Yucatán Peninsula.
PORTUGAL Lisbon has become more than a vacation destination for many Americans. Thanks to its breathtaking seaside location and relative affordability, Americans are moving there in droves. But food-focused travelers have known for some time about its culinary charms, which transcend the country’s traditional offerings like port wine and salt cod.
That said, classic dishes that every visitor should try include amêijoas à bulhão pato (clams with coriander and garlic) and perennial favorite bacalhau à brás, which seasoned food writer and co-author of Portugal: The Cookbook Miguel Andrade describes as “a magical combination of shreds of salted cod, caramelized onions, and crisp potatoes, finished with creamy egg.”
Dining options range from Michelin-starred restaurants to lively wine bars. Andrade points to Cacué, where 30-year-old chef Zé Saudade E Silva is preserving a local cooking style called tascas. At O Churrasco, order “chicken piri-piri done correctly in a restaurant that maintains a 1960s interior.” And O Frade, Andrade says, serves modern interpretations of storied Portuguese dishes like arroz de polvo (octopus rice) and coelho de coentrada (rabbit with cilantro sauce), which earned it a Michelin Bib Gourmand designation.
LISBON SANTA YNEZ VALLEY
NASHVILLE
TENNESSEE Once mainly known for boisterous honky-tonks and country music institutions like the Grand Ole Opry, Nashville has risen through the ranks of the top food cities in the U.S. Yes, you can still find the city’s signature dishes like mouth-scorching hot chicken and enjoy a classic Southern meat-and-three, but in the past decade or so, a new wave of chefs, restaurateurs, and hoteliers has ushered the city into a new era.
Michael Shemtov, the owner of the Mediterranean-influenced Butcher & Bee and casual Tex-Mex joint Redheaded Stranger, points to the city’s overall energy as one of the reasons for its rapid expansion. “You might have a big concert, a Predators game, and a convention on a Tuesday night; there’s just a lot of opportunity for restaurants and operators here.”
Now-standards like the tasting menu–only The Catbird Seat and prolific chef Philip Krajeck’s Rolf and Daughters are always solid choices, but Shemtov also recommends looking to East Nashville for dining inspiration, pointing to restaurants like the Spanish- and Portuguese-inflected Peninsula and casual sandwich shop East Side Banh Mi as two of his favorites. (Both Shemtov and Krajeck are slated to open new East Nashville spots in the near future.) And don’t miss a glass of natural wine at Lou, a favorite for brunch and dinnertime grazing among food-industry types.
ALL IN GOOD TASTE
CALIFORNIA Santa Barbara County’s wine region has long been home to world-class vineyards. But the Santa Ynez Valley, nestled between the Santa Ynez and San Rafael mountains, has only more recently taken off since husband-and-wife team Greg and Daisy Ryan opened Bell’s in minuscule Los Alamos, just one of many charming small towns dotting the area, in 2018. The French-inflected restaurant earned a Michelin star in 2021, instantly turning the area from a those-who-know getaway to a bona fide spot on any food-lover’s map.
“We love this part of California because it feels like it’s both of the state and far from it. Parts of it feel like Texas; others remind me of where I grew up in Oregon,” Greg says. “And, you’re close enough to Los Angeles and San Francisco that you don’t feel like you’re in the middle of nowhere.”
Classics in the region include beloved bakery Bob’s Well Bread, with locations in Los Alamos and Ballard, as well as the Italian-leaning S.Y. Kitchen in Santa Ynez. A brand-new draw? The upscale Auberge Resorts Collection property The Inn at Mattei’s Tavern and its restaurant, The Tavern, opened this spring on a historical site in tasting room–dotted Los Olivos, where the Ryans also opened their seafood stunner Bar Le Côte in 2021. Peasants Feast in nearby Solvang is also worth a visit for its inspired sandwiches, salads, and tacos made with über-fresh local ingredients.
We asked a few of our favorite top chefs where in the world they like to go for culinary inspiration—and great food. Compiled by Bruce Wallin
“I have friends in San Diego, and we love to drive down to Ensenada. We go through TJ for some street food, and then there’s always a cool Mexican winery with a really great restaurant. And then we just drive down the coast tasting aguachiles. That coast will always remind me of being in Sweden. It’s just something around the cold waters coming up against the cliffs.” —MARCUS
“I’ve been to Japan 10 times, and what I love is that there is seasonality. There is a fall, a winter, a spring, a summer, and this is also the cycle of Japanese cuisine. And it’s like with French cuisine, if you take French cuisine in North Africa, it will change everything because we will lose the season, we will lose all this regional and micro-regional cuisine.”
—DANIEL BOULUD SAMUELSSON“I went to Trentino-Alto Adige … Umbria … Tuscany. And then I went to Sicily—a whole different thing, one that really defined, ‘if it grows together, it goes together ....’ It’s all under the umbrella of Italy, but it’s so different everywhere you go—a different pasta shape, different sauce, different meat, different fish, more cream, more cheese, no cream, no cheese.” —AMANDA
FREITAG“I have to say Haiti, because growing up all we ate was Haitian food. But I also truly love Thai food. Thailand is one of those places I was able to travel by myself for a few weeks. I went from south to north and just ate my way through to see the regional differences in the cuisine. I love big, bold, spicy, dynamic food with lots of herbs and lots of seafood, and the food of Thailand has that all for me.” —GREGORY
GOURDET BUTCHER & BEEMÉRIDA
MEXICO Although the country’s capital, Mexico City, has been considered a must-visit food destination for years, Mérida, located on the Gulf of Mexico–flanked Yucatán Peninsula, is starting to catch up in popularity. Known for its Mayan heritage and stunning architecture (think gorgeous cathedrals, spectacular plazas, art nouveau mansions, buildings painted in rich pastels), Mérida has the largest historical quarter outside of Mexico City.
“It’s a laid-back mix of a Mexican city and a Caribbean city,” says director, food photographer, and frequent visitor Kort Havens. “Every region of the country has such a distinct take on food. The Yucatán has roots with indigenous cooking methods, and there’s also access to the ocean for seafood. There’s a citrus, lima, that’s only available there, so the flavors are different from others you’ll find in Mexico.”
Signature dishes of the region include cochinita pibil (pork that’s marinated with achiote and Seville oranges, then slow-cooked until it’s fall-apart tender) and sopa de lima, a citrusy chicken soup topped with cilantro and tortilla chips (which Havens recommends trying at the casual La Poderosa). Also worth a visit: Ramiro Cocina, where one can sample a variety of family-recipe moles as well as Mexican wines in a modern setting; and the wine bar, gallery, and cinema Salón Gallos for a dose of food and culture.
ISRAEL A world-renowned nightlife scene. Breezy beachfront boardwalks. Open-air markets that stock some of the freshest, most pristine produce in the world. Global culinary influences that intermingle beautifully. The bustling Mediterranean city of Tel Aviv has it all, and then some.
“It’s hard to have a bad meal here. You can go to a place that looks like it’s falling apart and have the best fried chicken pita of your life,” says Ross Belfer, founder of the hyper-local travel agency Eager Tourist, and an American expat who’s lived in Tel Aviv for 12 years. “Street food and home-cooked food is really the foundation of the fabric here, even in the high-end restaurants.”
In addition to wandering through the famed Carmel and Levinsky shuks (markets), Belfer recommends stopping at Bastia, a laid-back wine bar with market-driven fare that blurs the line between Spanish, French, Italian, and Middle Eastern influences. Those looking for a French-Vietnamese vibe should swing by the Hotel Montefiore for a cocktail. Refined dining options around town include getting exceptional local seafood and lamb at North Abraxas from famed chef Eyal Shani (of the global chain Miznon), as well as George & John, which earned a number six spot on the Middle East & North Africa’s 50 Best Restaurants list.
TEL AVIV SARDINIA
ITALY Sardinia’s sister Italian island Sicily may have recently gotten all the media attention with its starring role in HBO’s The White Lotus, but in recent years, despite already having a rich history, Sardinia has come into its own as a destination for its gorgeous beaches and rustic cuisine that, in many ways, defies definition.
Italian food authority Katie Parla, author of the new cookbook Food of the Italian Islands, says, “Sardinia is one of Europe’s most ancient civilizations and over the millennia has absorbed the ingredients and customs of seafaring merchants, invaders, and foreign rulers, all while fiercely defending a local identity defined by indigenous ingredients and historic recipes.”
On the island, you’ll find everything from sparkling seafood to handmade pasta dishes like filled, braided culurgiones and roasted suckling pig—with dining options ranging from high-end resorts to farms with restaurants. Parla recommends getting a taste of the island at the Su Gologone Experience Hotel. “Each of the hotel restaurant’s rooms and terraces overflows with arts and crafts from Sardinian ceramicists, painters, textile makers, and basket weavers,” she says. “The menu features pan-Sardinian classics like pane carasau and malloreddus (gnocchetti sardi), and specialties from Su Gologone’s subregion, Barbagia—most notably, layered, hand-pulled pasta strands called su filindeu served in a mutton broth.” Other must-try spots include Sabores Bottega e Aperitivi for natural wines and snacks (and its corresponding market for take-home treats), the decades-old Il Rifugio for traditional dishes, and the casual beachside stall Chiosco di Ponente for local oysters and fresh-out-of-the-water seafood. n

THESE STUNNING OUTDOOR DINING AND ENTERTAINING SPACES ARE A LESSON IN MAKING THE MOST OUT OF WARMER CLIMES.
BY SARAH JANSEN-MOUNT KUA BAY, HAWAIISome of the most beautiful moments of summer often take place right at home, in special alfresco spaces that capture the spirit of the season. The warm breeze against your face as you flip a steak on the grill; kids jumping out of the pool and running straight to the dinner table; a margarita in hand at sunset with the symphony of the ocean in the background. These are the experiences we long to live on repeat. Here, we share four remarkable settings—from a modern Hawaii retreat to an enchanting East Village terrace—that serve as stunning backdrops for these times and help bring indoor comforts to the outside world.
La Vida Aloha
LOCATION: Kua Bay, The Big Island of Hawaii
DESIGNER: Nicole Hollis, nicolehollis.com
Always on a mission to conceive timeless interiors that elevate the human spirit, San Francisco–based designer and creative director Nicole Hollis certainly accomplished her goal in this Kua Bay project that brings the outside and inside together in a poetic way. This artfully crafted 13,000-square-foot home was designed for a California-based family with three children, integrating elegant outdoor spaces that also serve as primary living and lounging areas.
The overall home exudes relaxed luxury. At the center, a free-flowing kitchen, dining, and family room area can be enclosed by two walls of sliding glass doors. However, when open, the space feels like a grand outdoor living area, with the swimming pool and ocean views on one side, and a grassy lawn on the other.
“The connection between the indoor and outdoor is what makes this space so special, and the spaces flow seamlessly into one another,” notes Hollis, who used appliances from Wolf, Gaggenau, and Sub-Zero. “The landscape and view are incredibly striking, and the outdoor living and entertaining area presents a perfect platform to experience them uninterrupted.”
Bluff-Top Bliss
LOCATION: Cabo San Lucas, Mexico
DESIGNER: Martyn Lawrence Bullard, martynlawrencebullard.com
Los Angeles–based designer Martyn Lawrence Bullard’s thoughtful indoor-outdoor living experience within this magnificent home puts gorgeous ocean views on display, inside and out. “The entire property is very special due to its position over the Sea of Cortez,” says Bullard. “Sweeping views open all around the house and glass walls disappear on three sides, allowing the entire residence to appear as one blended indoor-outdoor space.”
Curated for a successful entrepreneur duo, the design prioritizes relaxation and rejuvenation throughout. Multiple bars, food stations, and fire elements combine for impressive entertaining, while family fun abounds with a rooftop golf-putting lawn and a waterslide that flows into the pool, where swim-up stools are ideal for sipping drinks.
Limestone, encaustic tile, Brazilian marble, lava stone, and plaster create a minimalist elegance, and a selection of indigenous Mexican marble roots the home in its unique place. Most of the furnishings for the house were custom-made by the Martyn Lawrence Bullard atelier along with Mexican master designers represented by Luteca in Mexico City. Top-of-the-line appliances were used throughout, including Miele, Dornbracht, Gaggenau, and Kalamazoo.
“The decor is modern but nods toward the Mexican master designers of the midcentury era with many iconic pieces incorporated into the design,” Bullard notes. “It’s a home filled with joy and fantasy, where a sense of place is evident while all the luxuries of the 21st century are at hand.”
Force of Nature
LOCATION: Mineola, Texas
ARCHITECTURE: Lake Flato Architects, lakeflato.com
A picturesque escape from the noise and distractions of city life, this East Texas home was designed by Vicki Yuan of Lake Flato Architects to be a place to slow down and connect with nature and each other.
“We wanted to create a destination that was all about a shared outdoor experience very different than their urban lifestyle,” says Yuan, whose clients were a young family with two children. “So, we designed the living room and kitchen to be fully outdoors as a large, covered porch.”
The building structure and finishes are all wood to honor the Piney Woods of East Texas, where the home is located. For durability and low maintenance, smooth concrete floors and a board-formed concrete kitchen island were chosen. The outdoor custom cabinetry features a metal laminate finish by Wilsonart. For the kitchen, outdoor-rated appliances and fixtures by Perlick and Lynx were installed, and the grill is a Big Green Egg. The concrete outdoor dining table doubles as a ping-pong table, designed by James De Wulf.
“I love how this tiny house exemplifies the power of small buildings to maximize experience and minimize disruption to the natural environment and its resources,” says Yuan, who also notes that the family’s two daughters completely unplug from technology and spend their weekends playing outside and reading. “Even as a small building, the home has generous outdoor living spaces paired with intimate interior spaces as a way to focus on the outdoors.”

Terrace Treasure
LOCATION: East Village, New York City
DESIGNER: Alfredo Paredes, alfredoparedesstudio.com
A terrace in New York City becomes a world all its own—especially when it’s imagined by design veteran Alfredo Paredes. Dreamed up for his own family—his husband and their two children—this East Village space is nothing short of magical.
The home sits atop a large school building, and transportive interiors are extended by a secret garden terrace. The space is versatile and dynamic, perfect for a moment of quiet reflection, time with the family, intimate gatherings, or even grand parties. Expansive windows and glass doors open out onto the terrace, so come wintertime, the snowy ambiance is pulled into the living room with a fire aglow.
The terrace, which also features landscaping by Brooklyn firm Harrison Green (harrisongreen.com), includes French limestone flooring from Montpellier, furniture by Los Angeles creators Lucca Antiques and Blackman Cruz, and additional vintage pieces found in Paris flea markets. The handsome pottery is from Mercury & Shepherd.
“We are so fortunate to have a space that we can regularly enjoy—one that also has enough room to entertain our family and friends,” says Paredes. “I love the large doors that open right onto the patio and, of course, the flower-lined perimeter. It’s our own oasis in the city.” n
Advice on how to have a great summer from the people and brands profiled on our pages.
BEST FINAL
“I live in Los Angeles, but I’m French. Every August—like the French—I still take three weeks of vacation for some much-needed rest, relaxation, and recalibration—we call it les grandes vacances. As the whole country takes a deep breath and a moment of pause, it’s a great reminder to slow down, step away from the screens, and spend meaningful time with yourself and your family.”
“The best summer weather and best deals are generally in June almost everywhere. My family and I prefer to beat the July/August crowds and extreme summer heat if we can. Another nice reward is that most hotels are usually in their finest condition with a fresh coat of paint ready for the season!”
—KEVIN WENDLE,
“When I think of summer, I think of driving down the Pacific Coast Highway with windows down and music blaring, stopping at iconic beaches along the way. All you need is a surfboard, a good playlist, and a beautiful car that goes as far as it does fast.”
—DEREK JENKINS, senior vice president of design and brand, Lucid Motors
“Some of the best places to go in the summer are the ones you spent time in as a kid. San Onofre will always hold a special place in my heart, as it’s where I spent my childhood days surfing. As an adult, I love it there even more because it’s like coming home.”
—OLEEMA MILLER, co-founder, Mikoh
—VALÉRIE GRANDURY, founder and CEO, Odacité
