IneverdreamedthatIcouldcontinuetodo theworkthatIenjoysomuch!

Asaretiredcarpenterbytrade,thereare manyopportunitiestousemyskills,suchas helpingpeoplefortheirhouserepairs,making woodprojectsinmyworkshop,beingatrustee atourchurch,andmakingmaplesyrupwithmyson everyyear.

InlateFebruary,wetappedabout100mapletreesinthe 3-acrebushbehindourhouse.Itwasamonth-longcollectionof approximate250litresofmaplesap,emptyingthepailsthrough thebush,andcarryingitin20-litrepailstothe sugarshackforboiling.Ittookatleasttwodays, 10hourseachdaytoboileachbatchofthesap downtoabout10%concentrate.Toprepare forthissubstantial boiling,wecutand gatheredahuge amountofwoodbefore theproduction.The concentratewasthen transferredtomyhouse

wherefurtherboilingwasdone forthefinishedproduct.Ittakes alotofworktomakeonegallon ofmaplesyrup.(Note:40gallons (182litres)ofsapmakeonegallon (4.55litres)ofsyrup.)

Thereweredayswhennosaprandueto freezingtemperaturesorthesapspoiledwhentheweather wastoowarm.Inaddition,thebottlingofsyrup,pullingout thetapsfromtrees,fillingholes,washingallthepails,large potsandutensils(mywife,Muriel,isthemainhelphere!) werequitealabourintensivejob.
