DANCE ASPEN SANTA FE Ballet is
winding down its summer season with a guest performance from a local favorite and a final bow from a beloved dancer who has helped define the Aspen company. Paul Taylor Dance Company, led by the legendary modern dance choreographer Paul Taylor, returns to the Aspen District Theatre on Saturday, Aug. 13. The company has made frequent appearanes in Aspen over the years, growing a loyal local fanbase for the company and the greatest living American choreographer. They’ll be performing three works spanning more than two decades: Taylor’s “Spindrift” from 1993 and his “Promethean Fire” from 2002, alongside “Rush Hour,” a new commissioned ballet by Larry Keigwin. Aspen Santa Fe Ballet will perform Tuesday, Aug. 16 at the District Theatre in its second program of the summer. The evening will include Jiri Kylian’s “Sleepless,” Alejandro Cerrudo’s “Silent Ghost” and Cayetano Soto’s “Huma Rojo.” An encore performance is scheduled for Aug. 27. The program marks the final performance by Samantha Klanac Campanile, who has been dancing with Aspen Santa Fe for 15 years and will retire at the end of the summer. “She had some input in what she wanted to do for the last time,” says Aspen Santa Fe executive director JeanPhilippe Malaty. “She danced everything by Cayetano, so that made sense, and even though she’s not featured more than others she wanted to do this for her last performance.” Both performances are scheduled to begin at 8 p.m. Tickets run from $25 to $94 and are available at the Wheeler Opera House box office and www.aspenshowtix.com.

The unlikely pair — friends since childhood — are presenting a program including Mills’ Concerto for Violin, Rock Band and String Orchestra in one of the most anticipated concerts of the summer. The performance will feature Mills on bass and piano, with a four-member rock band, McDuffie on violin and a string orchestra. “MR. AND MRS. HERBERT BAYER ARRIVED IN ASPEN last week from New York to make their home here,” announced The Aspen Times on April 18, 1946. “They have purchased the old Governor Waite Home at the corner of Second and Francis Streets and expect to restore and remodel enough to make it a very livable home during their stay here. Mr. Bayer is an artist and designer, internationally known, and he will be busy with his varied talents on several interesting projects. At present time he is doing the typography on two books. Besides the determining type face, page size, and illustrations he will design the cover and cover jacket. Mr. Bayer will specify the color schemes of the Hotel Jerome and other buildings and guest houses of the Aspen Corporation. Mr. Bayer has kindly consented to make his judgment and recommendations available to Aspen citizens who are considering redecorating their homes. He is preparing color samples that may be used when buying paints to assure householders colors and tints that will harmonize effectively. Mr. and Mrs. Bayer are welcome additions to the citizenry of Aspen. FIRE IT UP: VOLCANO GRILL FLAMES BURST from the heart of the grill, a funnel of heat rising off just-lit charcoal bricks. The grill is ready to cook. The Volcano Grill is a versatile option for cooking outdoors at home or at the campsite. It can burn wood, charcoal and propane (with an optional 19,500 BTU burner), and it is super portable. The collapsible unit is dotted with vent holes to move air and provoke flame. Its crater-shape design triples as a traditional grill, a propane burner or, with wood thrown inside, a portable fire pit. This month, I cooked burgers and a wood-fired pizza on the Volcano Grill. We roasted marshmallows then stared at dying flames in the base of the unit as the summer night fell. Sold as an adaptable kit, the Volcano Grill ($110 base price) has accessories to barbecue, fry, smoke, griddle and bake your food. A heat-resistant fabric “lid” fits over the top to trap hot temps and create an oven. Or buy the company’s 8-quart cast iron vessel, made to fit inside the grill, and go all out with Dutch oven recipes at the campsite or in the backyard. The whole unit collapses small. Pull the main handle once you’re done grilling and the body folds up, its support legs sliding inside,
and the entire kit is now a 5-inch-tall disc that fits inside a carrying case. I cooked at a campsite and at home. In my testing I used charcoal and wood as fuel, though I plugged the propane in for a test, too. Burning over-the-shelf charcoal, the grill heated up fast. The flames seemed to leap to life, encouraged by the “volcano” shape of the body, which, with the vents, creates optimal airflow. There is an air-control vent on the base of the unit, providing some control, but mostly you’re at the whim of the fire as far as temperature management. (This changes with the propane option, which can be turned up and down.) The grill’s off-theground design and insulated bottom is great for patio use; relatively little heat is transferred from the underside, minimizing
the chance of surface damage or errant debris starting on fire. A double-wall design lessens heat transfer to the outside of the body, too, making me not as nervous grilling around kids and pets. It still gets hot, though, so be careful. The many air vents and a patented heat-chamber shape simply work — the fire inside a Volcano Grill burns hot and efficiently, with less smoke and a more concentrated flame than the traditional firepit grill I’ve owned for years.
There’s not a massive amount of grilling space. But I was able to fit a medium-size pizza on top or barbecue for my family. The sleek Volcano, made of steel, looks good in the backyard, and it’s a convenient way to prep food if you can fit it in the trunk for a camping trip. IS IT A TAWNY? PORT’S PERFECT PAIRING
IT BEGAN WITH A PLATE of figs and cheese offered at the end of the meal. My gracious and ohso culinary-capable hostess stood in front her wine closet and made a few suggestions for things she could open with the delectable offerings. “I also have this Grahams 20 Year Old Tawny Port,” she said. It was a good decision. KELLY J. While my friend, HAYES always in search of something just a bit better than the blessings bestowed at a given moment, noted that she wished she had some good chocolate, the Grahams was great with the fruit and cheese. Darkly amber in the glass with a slightly syrupy viscosity, there was sweetness and a smoky caramel taste. I thought it was great. Port, or Porto, as it is called when it hails from Portugal, is a fortified wine. That is to say, it is made from the juice of wine grapes that has been mixed or fortified with a dose of grape spirit or brandy. Its origins date to the 1600s when the English squabbles with the French halted trade between the two monarchies. A new source of wines for England’s ever-thirsty consumers was required and merchants quickly seized upon the opportunity in Portugal. In the northern corner of country they found a fertile Valley called the Duoro where hearty vines on steep hillsides produced dark grapes capable of producing big wines appropriate for the palates of the English consumer. But the task of exploiting the region was formidable. First, the grapes had to be plucked from vineyards that are literally steeper than the Highlands Bowl. Then, because of the oppressive heat in the Valley (this was before cooling came to the modern world), the grapes had to be transported to the milder climate of the coast

to be made into wines. This required that the harvested grapes be shipped down the dangerous Duoro River in flat bottom boats called “Rabelos.” Once they made it to the coastal town of Oporto, the birthplace and still the home of Porto, the wines were processed and aged prior to being shipped north across the Atlantic back home to London. To keep these wines from spoiling, a small amount of brandy was added to the barrels of wine, which stopped the fermentation while also increasing the wine’s strength. To this day, English merchants like Warre, Taylor-Fladgate, Graham, Croft and Sandeman still dominate the Port business, and the banks of the river that flows through Oporto are lined with the “Port Lodges” as the wineries and tasting rooms are called. Also to this day, the wines of the region are fortified, not to protect them from spoilage during transit, but rather to give them that special flavor that has come to be identified with Porto and to help them age with stability. There are a number of different styles of Port ranging from light White Port, made with white grapes, to the dark red, tannic, Vintage Ports which designates those wines produced from grapes grown in a single year. A Tawny port is a port that has been aged in oak barrels for an extended period of time. It is the oak that makes it a Tawny and separates it from Ruby Ports, those that spend a minimal amount of time in oak and are then placed in bottle for consumption at a young age, and Vintage Ports that are aged for an extended time in bottles. Tawny Port, aged in oak, comes in contact with oxygen while in the barrels which has the effect of changing the color of the wine to the brownish, orangish, amber color that we saw in the glass of Grahams. Tawny will spend at least two years in barrel, but there also are aged Tawny Ports. There are, officially, 10-, 20-, 30- and 40-year Tawny Ports which refers to the age the wines spent “in wood,” not the year of the vintage. In other words, several different vintages have been combined to make a Port, and the “target age” for the time they have spent in oak is displayed on the label. There are, in fact, singlevintage Tawny Ports as well. These are called “Colheitas” and, while they may have been aged for 20 years or
more, display the year of the vintage on the label rather than the time in oak. In Portugal and the Duero there is a strong movement towards the production of still wines as well. In fact the production of still wines is larger than the production of port. But Port is making a comeback as a younger generation of drinkers are coming back to the joy of the after-dinner drink. May I suggest figs and cheese as an accompaniment?
UNDER THE INFLUENCE GRAHAMS 20 YEAR OLD TAWNY PORT And about that Tawny I had with the figs and cheese. The Master Blender (I love that title) at the House of Graham attempts to achieve a perfect balance with this blend of wines that are both aged and relatively young. It is a brownish, well, tawny actually in color and it not only works well with cheese and figs, but also with vanilla ice cream. I suggest McConnells Vanilla Bean. Yum.

HOW DO YOU DESCRIBE DELICIOUS? MY MOTHER LOOKED at me as if she’d just cursed, loudly, in the restaurant. She hadn’t, but I was shocked by what she said, too. What did she think of the steaming Korean bibimbap with Asian vegetables, crispy rice, and poached egg?, I’d asked. “Tasty!” she blurted out. Her eyes flashed wide in horror. This word — on par with “delicious” or AMANDA “wonderful” in how RAE much it describes a dish — has become something of an inside joke between us. My dear father, a businessman running a small manufacturing company, uses this term virtually anytime we ask how his food is (assuming he likes it). Clam chowder at the country club’s annual lobster bake? Tasty! Hamburger at the cool downtown bistro before a movie? Tasty! Graham crackers with a tall glass of milk before bed? Tasty! My dad equates eating to fueling up. He’s not into anything fancy, and avoids standard meal rituals — sharing appetizers, lingering over coffee and dessert — at all costs. Attempting to encourage my father to go out to eat must be approached strategically: An early reservation at a restaurant close to home and an understanding that the meal won’t drag on longer than two hours. Dining out, to him, chews up a lot of time better spent on other activities — practicing his golf game, mowing my mom’s garden, getting in a bike ride before sunset. Verbally dissecting a meal is out of the question. Food isn’t for analyzing, according to my father. It’s for eating, to acquire energy, plain and simple. My mother is the opposite. A lifelong home cook who makes everything from scratch, even grinding meat for hamburgers and drying herbs from her backyard gardens, she’ll detail the nuances of a dish with the same vigor with which she cultivates asparagus and crimps homemade pie crust. Like me, she’s keen to try new dishes when they hit a restaurant menu and always on the hunt for her next great kitchen

project. To talk about food in concrete terms — briny cheese flecked with crunchy tyrosine crystals; smoky roasted eggplant brightened with lemon juice and with earthy undertones of tahini paste — is to show enjoyment and appreciation. Which is why she was appalled by that “tasty” moment at the restaurant table. Much to her dismay, she had absorbed my father’s habit. I guess that’s what happens when you’ve been married for 30-plus years. My parents’ drastically different approaches to describing food got me thinking about how each of us is equipped with a different set of language tools — not to mention the ways that we all perceive food differently, anyway. Eating is a wholly subjective activity: Some palates may be more sensitive to certain tastes (seven, according to scientists: sweet, sour, salty, bitter, pungent, astringent, umami) than others, and individuals use varied vocabularies to describe them. If words like “tasty” and “delicious” are simply positive affirmations without describing flavor character, what about interpretations of other, more vivid, adjectives? Is there some sort of flavor-descriptor hierarchy? Might “briny” imply a pleasant salinity whereas “salty” conjures a careless hand with the shaker? Maybe. This is the challenge of talking (and writing) about food: According to most dictionaries, those two words are straightforward synonyms. Despite this gray area, long, detailed descriptions on restaurant menus entice diners to order up to 30 percent more food than they would otherwise, according to research conducted through Cornell University. Labels such as “locally sourced” or “farm-raised” help to increase the perception of quality, too. Not only do vivid descriptions encourage people to order certain dishes, but diners also rate the food as tasting better. Language is so effective that many U.S. states have “Truth in Menu” laws — enacted beginning in the 1920s — aimed at preventing restaurants from making fraudulent claims on food origins, ingredients, and cooking methods. Still, menu
wording is often vague — does “fresh-squeezed” mean the juice was extracted in-house or by the distributor who delivered it? — and food fraud remains hard to detect and combat as such laws are difficult to enforce. Yet the power of vocabulary cannot be underestimated. Knowing how to describe taste and flavor is crucial in writing materials for culinary clients, explains Sheryl Barto, principal of O Communications in Carbondale. “I listen very, very carefully to the chef so I can bring his passion and descriptions for his creations to life,” she says. “Describing food is not as easy as it might seem. I want (press) releases to read as if (the chef) were talking. We try to involve all the senses as we describe food and create a mental image that folks can’t resist — smell the aroma as you bring the food to mouth, sense the texture as you bite. The right adjectives are almost as powerful as eating the food itself.” A recent missive, introducing chef Eddy Chima’s 11 new menu items at Venga Venga in Snowmass Village, describes a novel sweetand-sour starter: “This guacamole presentation and flavor profile screams summer,” it reads, before listing ingredients: “fresh cut
mango, caramelized pineapple, dried apricot, blood orange, and the authentic Mexican flavors of tamarind and piloncillo, topped with fried plantain chips.” Many factors affect our sense of taste and how we describe food later, too. Research suggests that loud noises may alter the way we perceive flavor, as do ambient lighting, music, and atmosphere of a restaurant; colors and the arrangement of food on a plate; even a diner’s DNA. Sense of taste weakens with age, thanks to disappearing taste buds and a decreased ability to smell, the latter of which strongly affects taste perception. In fact, elderly folks might require two to nine times as much of a condiment such as salt to experience the same taste. Though rapping about a great meal might make us reflect on it more positively, there’s something to be said about finding pleasure in simplicity. At 64, a nonsmoker and crazy active, my dad has taste buds that are probably mostly intact. He enjoys food just fine — though it’s not a passion or a priority or even worth chatting about. A rainbow shines bright over Telluride, a mountain town both like and unlike Aspen.
THE DEATH OF A TRADITIONAL MOUNTAIN TOWN ASPEN HAS LOST ITS WILD WEST PERSONA, BUT MAYBE THAT’S NOT ALL BAD
ASPEN, as an old school western mountain town, is dead. I’m not sure when this became official. I don’t know if there was a proper memorial conducted or if everyone was able to offer their condolences. And I’m not even sure if, for everyone, this is a sad affair, one to spend time grieving about. I spent the past weekend in Telluride with a couple of good friends. In all my time BARBARA PLATTS in this state, I had never set foot in this mountain town, which is known for its challenging skiing, famous summer festivals, rich mining history and charming scenery. I’d heard so many comparisons between Aspen and Telluride over the years. Similar to Vail and Aspen, the conversations always revolved around a game of oneupmanship. This community is more authentic, that mountain has better steeps, your town has sold out. The claims go on and on. There are many physical similarities between Telluride and Aspen. A roundabout acts as a gateway into town. Clark’s
Market has a presence. Victorian houses are sprinkled throughout the neighborhoods surrounding the core. Telluride and Aspen were founded as mining towns, one for silver, the other for gold. Both have parking issues and lack of affordable housing. Plus, second homeowners and a great deal of money are injected into them in the winter and summer seasons. The outline is the same in both towns, but the meat of each story is quite different. In the shoulder season, Aspen touts a population just over 6,000; its counterpart has slightly more than 2,000. Aspen/Pitkin County Airport currently flies commercial jets to six destinations. Telluride Regional Airport has not even seen a plane with a United Airlines logo on it for two years (however, that will change this winter when they reinstate a flight to Denver). Aspen’s downtown is stuffed full of designer stores, fur coats and overpriced restaurants. Telluride has a few expensive stores, but it also has a free box right off of the main street where people can drop off and/or pick up belongings. There are puppyparking areas next to bars and
restaurants. And the town’s bars and restaurants (at least a large majority of them) are somewhat affordable. Glamour isn’t necessarily strived for in Telluride but authenticity is. The town feels like the wild, Wild West in modern day. Aspen is more like a mini Rodeo Drive in Los Angeles. These side-by-side comparisons are meant to paint a picture, but what I’m really trying to get at is that, on the surface, these two towns seem similar, but from my experience, they actually feel like polar opposites. That doesn’t mean that one is better than the other. It simply means they are different. And while Telluride may become more like Aspen as the years go by, I think it’s time to face the fact that Aspen will never again be like Telluride. I don’t claim to be an expert on Telluride after spending 36 hours in the town. But, when it comes to Aspen, I’m pretty well educated. I’ve watched, since a very young age, as we have lost bits and pieces of our grit, trading it in for luxury. From Bad Billy’s to Brunello Cucinelli, Gap to Dolce & Gabbana and Andre’s to Prada. The list goes on. But with these
changes (as disheartening as some of them are) comes a great deal of growth. We are like a miniature New York or L.A. in the middle of the country. Just in the past week I’ve gotten to meet actress Elizabeth Banks, hear one of my journalism idols Marty Baron discuss the future of media, see Bernie Taupin’s paintings and listen to two incredibly inspiring conversations with Shahbaz Taseer, who was recently released from the Taliban’s captivity after five years. That doesn’t just happen in any mountain town. So, Aspen or Telluride? To each their own, but for me personally? I would choose Aspen. Sure, it’s lost a great deal of its small town charm, but for better and for worse it’s become home, and it’s opened up opportunities for me that I would never have gotten in Telluride…or L.A., for that matter. WITH THE DONALD IN MEXICO ALTHOUGH DONALD TRUMP made a “border trip” to Laredo, Texas, in July 2015, saying, “Well, they say it’s a great danger, but I have to do it,” he hasn’t actually been to Mexico to give Mexicans a chance to respond to his ugly comments. However, I have been doing the next best thing — taking border tours to Juárez and Palomas, Mexico, with two Donald Trump piñatas I purchased at El Paisano in Santa Fe, New Mexico. Here are desciptions of some photos and the reactions of the many people I spoke with. First, we (The Donald and I) entered Mexico at the Santa
Teresa border crossing just west of Juárez and immediately met with a group of Mixteca Indians who have migrated up from the state of Oaxaca to seek a “better life” in Juárez. To survive, they try to sell souvenirs to disinterested travelers who are waiting in line on the Mexican side in order to cross through US customs. It’s a brutal struggle in Juárez and makes you wonder how life could be any worse in Oaxaca. Like so many people on the border who have similar struggles, they have little access to the news and no knowledge of or interest in U.S. politics. All they wanted me to give them a
piñata for their children to play with. It was a very different story 10 miles to the south at the shack where Elvira Romero and her grandchildren live. These very bright kids — Hector, Yeira and Amy — know all about Trump and were furious at the way he has characterized them. Next was a small group of Tarahumara children outside their school. (Their teacher said she wasn’t allowed be photographed in any type of a political setting.) Like the Mixtecas, they know nothing of U.S. politics. We then visited a nearby mental asylum called Visión en Acción that I have been assisting and documenting for about

five years. “Es un Hitler,” its founder, José Luis Galván, says. He sees Trump as a monster who would create havoc for Hispanics. His patients grab a crude looking bat and pretend to pummel Trump. Then we take the narrow back road from Juárez to Palomas. I meet a group of Mexican cowboys on fine looking horses. They know everything about Trump and one of them cinches his rope around the neck of the piñata and holds it high. In Palomas (Pop. 4,800) itself, I stopped to visit with a real political leader, Maria Lopez who had once been the Mayor and had been kidnapped and almost killed for her refusal to reinstate several corrupt police officers. If it weren’t for health issues, she would be running for office again. I was initially surprised at how few Mexicans even knew who Trump was. It’s a function of their poverty, the ongoing struggle to simply survive and the lack of access to news. Now that Trump has won the Republican nomination, these piñatas will be going back to Mexico again. Maybe there will be more of a reaction then. GRACE OF ASPEN’S HEART GRACE POTTER has brought her wild, crowd-pleasing shows to just about every major venue in Aspen. SkiCo Hi-Fi Concert outside in Snowmass, check. A rain-drenched Jazz Aspen Snowmass Labor Day in 2013, check. Last-minute fill-in headliner the following year, check. Regular gigs at Belly Up Aspen, of course. Potter loves Aspen and the feeling is mutual. The energetic Vermont signerguitarist returns to Belly Up on Wednesday, Aug. 17. She’s touring in support of “Midnight,” her most recent album and her first without longtime backing band the Nocturnals. She spoke to The Aspen Times in February before a sold-out two-night run at Belly Up with a new sevenpiece band. These are excerpts of that conversation.
to make this a Nocturnals record - I really wanted to fit it together and fit this masterful cohesive plan. But then the record ended sounding totally different. The live show is never going to change much because it’s me, I’m me, and that’s what you get whether you take the Nocturnals name on it or not — I’m a f-ing Tasmanian devil. It was a huge shift creatively. It opened up everything, and in many ways you’re seeing someone who is feeling very exposed, and in that vulnerability and openness has revealed things about myself to fans that they’ve always wanted to see from me. And I didn’t know that. There’s a lot more raw emotion. I’m feeling more comfortable sharing my true feelings and breaking down the sort of Sasha Fierce wall. I’m not in character. This is really me.
ANDREW TRAVERS: You’ve been through Aspen a lot over the years. What do you make of this place?
AT: You’ve got this reputation for epic, energetic live shows. Do you write songs with the live performance in mind? Or do you craft things in the studio like a studio rat? “Midnight” feels more like a studio record.
GRACE POTTER: I grew up in a ski town, so I get it. It’s weird to live in a place where people are constantly in transit, but I feel like that doesn’t pertain to Aspen because Aspen is so comfortable in its own skin. It doesn’t change or cater to anybody else. So one of the things is just the people — my memories are of Aspen, are the friends I’ve made there. And, of course, the skiing is f-ing awesome. One particularly memorable night was at [Belly Up owner] Michael Goldberg’s house. It was really early on, maybe our first gig at Belly Up because we were dirt poor and didn’t have the money to stay at a hotel. So he invited us to stay at his house and we had an epic, epic night.

AT: What has it opened up for you creatively to work with musicians outside of the Nocturnals? GP: Like anything, you get comfortable in what you do. ‘BEHIND CLOSED DOORS’ THE DOMESTIC THRILLER genre is based on a simple theme — sometimes the worst terror comes not from strangers but from those closest to us. That premise receives a gripping workout in B.A. Paris’ terrifying and often realistic debut. “Behind Closed Doors,” a best-seller last year in the U.K., is now receiving its U.S. launch. Grace Harrington expected a happily-ever-after ending when she married successful, charming and handsome Jack Angel after a whirlwind romance. Besides, they aren’t the only couple who decided to wed a few months after they met, nor are they the only ones who married without having first slept together. Jack seems perfect, especially
because he genuinely seems to care about Grace’s 17-year-old sister, Millie, who has Down’s syndrome. But Grace discovers on their wedding night that Jack is only interested in the facade of perfection that his new wife brings to the marriage. By day, she is a virtual prisoner in her bedroom in the couple’s pristine mansion in Spring Eaton, England. Grace knows she has to obey Jack’s every demand and keep up appearances, especially when they have guests for dinner. “Behind Closed Doors” alternates between the couple’s past and present, showing how relentless intimidation has affected Grace. Once a bright, independent executive whose job took her around

the world, she is soon reduced to timidity. Jack has made it clear that he will hunt her down and harm Millie if Grace leaves him. Jack’s constant haranguing sometimes makes him resemble a villain from a melodrama who has come looking for the rent. One expects the cape and moustache to appear at any moment. Still, the sense of believably and terror that engulfs “Behind Closed Doors” doesn’t waver.
