CURRENTEVENTS FESTIVAL SPRINGTIME IN THE ROCKY MOUNTAINS heralds the arrival of an annual tradition: festival season, and the Blitzenbanger Winter Brew-Au at Aspen Highlands leads the line-up on Saturday. KSPN’s annual birthday bash gets bigger and better for 2014, featuring fan favorites from past years — like the onmountain scavenger hunt starting at 9 a.m.— plus a new beer festival with a springA reinvented Bliztenbanger promises inspired Hawaiian luau theme and free a party of new proportions at Aspen live music from 1 to 6 p.m. Highlands on Saturday. This year’s Blitzenbanger 2.0 features an unlimited-tasting beer festival highlighting 10 to 15 local and regional brewers, including Aspen Brewing Company, Deschutes Brewery, Oskar Blues Brewery and more. The steady stream of suds is accompanied by free live music from Eminence Ensemble, The Starletts and others. The 2014 Blitzenbanger Winter Brew-Au takes place at the Aspen Highlands Base Area and Prospector Village Plaza, where Highlands Ale House will feature a pig roast and BBQ on their deck. Aloha Mountain Cyclery will be showcasing fat bike demos with an on-snow course for guests to ride. Guests can also “get lei’d” at the It’s My Party booth throughout the day. Brew-Au tickets for unlimited beer tasting can be purchased the day of the event for $20. All beer tasting tickets pre-purchased by March 7 include a complimentary Blitzenbanger T-shirt. A portion of the proceeds from the Blitzenbanger Brew-Au will be donated to the United Way of Garfield and Pitkin County.

Ladysmith Black Mambazo will once again engage and entertain audience members at the Wheeler Opera House on Tuesday, March 11.

MUSIC IN 1964, Ladysmith Black Mambazo’s music came to Joseph Shabala in a dream, one in which he heard traditional isicathamiya harmonies altered slightly by his own fantastic imagination. Singing in churches and schools, the choral group rose to fame in South Africa, not knowing that by the 1980s, their unique style would change the lives of world-famous American folk singer Paul Simon, South Africa’s first black president Nelson Mandela and millions of fellow countrymen. On Tuesday, the four-time-Grammy winners, who appeared on Simon’s “Graceland,” an album that inspired Mandela during his 27 years in prison, perform at the Wheeler Opera House.

Is this 17th-century Europe, or modern America? IT’S DYNASTY TIME in America, again. Following eight years of outgoing President Barack Obama’s rather tepid populism, we are once again poised to face a choice between a Clinton and a Bush, just as in 1992 when then-President George Herbert Walker Bush was knocked out of the saddle by then-Arkansas Gov. William Jefferson Clinton. This time, the pairing seems destined to be a battle between Hillary Rodham Clinton, wife of the former president, and Jeb Bush, who has the dubious distinction of being the only Republican ever to serve two consecutive terms as governor of Florida (1999 - 2007), as well as being the son of former President George H.W. Bush (1988 - 1992) and the brother of former President George W. Bush (2000 - 2008), otherwise known as The Shrub (thanks to the late, great political gadfly Molly Ivins). Hence, my use of the term “dynasty.” How else can you describe this phenomenon, where two political families have been at the pinnacle of national politics since the late 1970s, and appear more than ready to hang onto power well into the next century? As columnist Maureen Dowd noted in the March 2 New York Times, “Before these two families release their death grip on the American electoral system, we’re going to have to watch Chelsea’s (that’s Chelsea Clinton, daughter of Bill and Hill) granddaughter try to knock off George P.’s (that’s George P. Bush, eldest son of Jeb) grandson, Prescott Walker Bush II.” Do the generational math, following Dowd’s lead, and you begin to suspect that the Bush-Clinton blood feud could go on for another century, at least. If that’s not a portrait of dynastic competition, in red-white-and-blue American terms, I don’t know what is. The fact that this match-up has been talked about since the 2012 election went to Obama, instead of that silverspoon munching paragon of elitism, Mitt Romney, does not make it any more palatable. Actually, the staying power of the Hillary-Jeb prospect is right up there

with other indications that American electoral politics is in deep, deep ca-ca. If we haven’t been able to come up with better candidates in the intervening two years, I guess we deserve what we get? I realize that Hillary is viewed by many as having earned the right to make another run at the presidential ring, if only because she did a pretty good job as U.S. Secretary of State. And I realize that I will be receiving hate mail by the bushel if I dare to say anything against her candidacy. But the plain, unvarnished truth of my political nature is, I do not like dynasties. And I do not believe that anyone who has ever come close to winning the White House automatically deserves a second swing at the ball. There are a couple of realities I should address, such as my belief that Hillary is a very smart woman, is possessed of some admirable ideas and might make a very good president. The fact is, if the choice is as I have outlined it, I likely will vote for her. I also should note that she at one time tried to steer this country down the road to single-payer health care, using the bully pulpit of the First Ladyship in her hubby’s first term in the White House. Had she succeeded, we wouldn’t be in the mess we are in now, with a health care system that is part public mandate, part private-insurance hucksterism, and all screwed up. No, by now we would have joined the family of nations who have realized the health care is one of the policy areas that must not be left in the hands of the private sector, must not be viewed as a for-profit piggybank for the insurance industry, which some say is the largest industry in the entire world. But, in my eyes, Hillary is too hooked into the power politics that have brought us to the brink of fiscal and social ruin, and would not be my choice for a leader able to think outside the established framework and come up with radical new proposals. That’s my story, and I’m sticking to it.

ASPEN SKIING IN CONTEXT Aspen’s interpretation of itself, already insular, grows more

so with hindsight; our ski resort’s fame is viewed as a manifest destiny. We rarely remember that other ski areas struggled to compete with Aspen and they continue to labor to gain the favor of the small population of Americans who ski. I learned a lesson in ski town humility several years ago from Andrea Mead Lawrence, one-time Aspen resident and the first American alpine skier to strike Olympic gold twice. Sharing my interest in ski history, Andrea and a friend of hers from Vermont came to my house for dinner and a slideshow I had assembled about my aunt and the development of skiing in Aspen. As I waxed poetic about Aspen’s efforts to establish one of America’s first ski resorts during the late 1930s, Andrea and her friend politely let me know that Aspen had been late coming to the table. Andrea’s parents established Pico Mountain in 1934. Out of nearly 350 contemporary ski resorts listed by the National Ski Association, 47 registered their beginnings between 1934 and 1940. Twenty-four, including Aspen, competed for business in the western states. Many of the ski areas that built the first chairlifts got started during this period, including Sugar Bowl in California, Sun Valley in Idaho, and

Alta in Utah. It was not by mere coincidence that many resorts were established at the same time. Skiing had recently elevated from an obscure practice of Scandinavian immigrants to a

(CCC) played a role in building the underpinnings of Aspen’s ski industry. The CCC built a ski jump that qualified it to host major ski races. They also built a warming shack at Midway. Similarly, at Snow King in Jackson,

Of equal importance the Roosevelt Administration, seeking Federal assets that might be leveraged to produce Depression-era jobs, identified an opportunity in many states: the forest service opened lands to ski resort development. In addition, Work Projects Administration funding and the Civilian Conservation Corps

Wyoming the CCC forged a route, part of their first “ski trail,” to the top of their ski jump and built a warming shack at the top of the mountain. Aspen does not appear until 1947 on The National Ski Association list, which tracks the start dates of existing companies only. If the association were to include the predecessors of current operations, their list of 1930s ski resorts would expand significantly. And if they included the communities

whose resorts ultimately closed, the list would become more historically interesting, yet perhaps too unwieldy for its intended purposes. A generation later, the baby boomers of the 1960s revived interest in the sport and expanded participation beyond the diehard outdoor enthusiasts of the 1930s. Despite that growth, today’s ski resort accommodations outnumber occupancy. Resort location remains as important as ever, with proximity to a large city providing access to more customers. Ski resorts of Vermont and New Hampshire, most of them small family operations similar to Pico Mountain, tap the population of the eastern seaboard states. Loveland (started in 1937) serves Denver, Alta (1938) Salt Lake City, and Sandia Peak (1937) Albuquerque. Aspen and Sun Valley, distant from population centers, relied on romantic train travel to bring in business. Although other resorts with lower occupancy rates and fewer ski days may boast of a longer run on The National Ski Association List, on my list of favorites Aspen remains first, foremost and inimitably Aspen. Tim Willoughby’s family story parallels Aspen’s. He began sharing folklore while teaching for Aspen Country Day School and Colorado Mountain College. ON JUNE 19, 1941, The Aspen Times featured a story titled “Women Learn how to Cook in Modern Way.” According to the article, “The first cooking school to be held in Aspen for the purpose of demonstrating the miracles of modern electric cooking, baking, roasting, frying, broiling and stewing was held at Fraternal Hall last Thursday afternoon.” During the presentation, Eleanor Bonner of Denver “cooked many types of dishes and roasts, baked cakes and prepared several complete meals demonstrating each step carefully and pointing out the convenience of the electric cooking. Although the ‘students’ at the cooking school were mostly women, there were a few men present to see what it was all about.” This photo and more can be found in the Aspen Historical Society archives at aspenhistory.org.

In the world of action sports cameras it’s rapidly become GoPro and the other guys. But there’s one other guy out there looking to put up a fight, even if it appears to be a David vs. Goliath matchup. That underdog status seems to be just fine with iON Worldwide CEO and founder Giovanni Tomaselli, because he believes strongly that his line of cameras delivers

THE FIX: iON’s latest camera, the AirPro 3 Wi-Fi

WHY IT WORKS: The AirPro 3’s strongest feature would have to be the waterproof case. Unlike the GoPro, there’s no plastic shell. Its metal casing is already waterproof. (Note: We haven’t had a chance to take it to whitewater yet, but it’s been solid in snow.) Not having a case yields quick assess to functions and doesn’t muffle the sound when used with the built-in microphone. The mic quality is excellent in certain situations, but limited in others (see dislikes). For optimal audio it also has a microphone jack under its Wi-Fi backing. The next big sell is the AirPro 3’s wireless app functions — similar to the Hero’s. iON’s smartphone app lets you sync the camera to a mobile phone, allowing for direct viewing of recently shot video along with remote start and viewing functions from the phone it’s linked to. The wireless feature also makes it possible to quickly share video in social media and connect to a laptop. Its one-click filming switch lets you turn the camera on and film in a single motion. Or, it can be turned without starting filming, using a separate power button. The camera’s vibrating signal is a handy feature to indicate if it’s filming or has stopped — especially convenient when it’s mounted on a helmet. An area where the AirPro 3 clearly surpasses its Hero counterpart is with mounting options. Unlike GoPro’s company-specific mounts, the AirPro has a standard tripod thread, making it possible to use with any third-party camera mount.

As for video quality, it offers a wide range of HD options up to 1080p, with a customizable switch to alternate between two resolutions. It also has 12 megapixel photo capabilities. There were a few flaws, though. While the AirPro is a well-rounded versatile camera, there are a few shortcomings, though they might not really matter to most of its potential users. Chief among the flaws is the noisereduction setting, intended to minimize wind or extraneous noise. When on, it muffles audio substantially with slight distortion. When off, the audio is excellent, but the internal microphone placement makes it highly susceptible to wind noise while skiing. Still, in trees

without wind the audio was OK. For someone looking to overlay music to accompany a video, this wouldn’t be a factor. A user could also plug in an external mic, but the camera will no longer be fully waterproof while the backing is removed. Battery power was strong — iON advertises a 2.5-hour shooting time — but the battery is not removable, should the user desire to operate it for longer lengths of time. There is also no indicator on the camera showing remaining battery life. Amount of charge can be determined when the camera is connected to a smart phone via Wi-Fi.

BONUS: As a whole, the iON AirPro 3 is a neat little alternative to the GoPro Hero series. And with Tomaselli looking to constantly improve his cameras’ capabilities with new models, it’s entirely possible that the company will gain ground on its largest competitor. With its lower asking price and its intended market being the more casual videographer, iON likely has plenty of customers to appeal to. It certainly offers a user-friendly feel with a quick learning curve.

THE WONDERS OF WINE IT WAS COLD. Below zero. And the pavement on West Bleeker Street was covered by an uneven layer of inches-thick ice that made walking the road treacherous. Seeing movement ahead, I realized there was a woman coming my direction carrying a heavy sack that obscured the upper half of her body and surely prevented her from seeing the icy KELLY J. ground she was gingerly HAYES traversing. Quickening my pace, I ran to help with her bag and, though I slipped just as I reached her, I realized quickly that this wisp of a lady was Mary Eshbaugh Hayes, our Aspen Times social photographer and the first lady of Aspen journalism. Now I am always so happy to see Mary, but I was concerned to see her walking on the ice with such a large bag. Taking it from her, I could feel that the contents included a bottle of wine. That made me smile. On this cold January morning, Mary had been having some back pain, likely from carrying too many bags and magazines and newspapers and periodicals up from Puppy Smith Road and the Post Office to her home. She instinctively knew that a glass of wine, along with a Bissinger’s caramel or two, would comfort her as much as the Salon Pas patch that was also in the bag. “Don’t tell anybody,” she intoned conspiratorially as I helped her with the bag and expressed my approval for her self-diagnosis and

subsequent treatment. The fact is that buying a bottle of red wine, a nice 2011 Kenwood Pinot Noir from Sonoma County, was the perfect medication for what ailed her. Now I am not suggesting that there have been any serious studies done to test the effects of Sonoma County Pinot Noir on a stiff back. But I do know that the act of enjoying a glass of red wine can help reduce tension, put one at ease and provide a feeling of mild euphoria, all of which can make one feel better overall. And that in itself is a form of medication. Since Hippocrates, the father of medicine, began to study wine’s effect on health in about 310 BC or so, it has been widely postulated that the juice of fermented grapes — aka, wine — has a positive impact on any number of medical maladies. Religious figures and healers, and writings through the centuries ranging from the Apostle Paul to the Talamud to the Islamist physician Avicenna, have all suggested that the ingestion of wine could be good for both digestion and a healthy gut, amongst other things. Then there is a plethora of studies conducted by modern physicians in a plethora (yes, I like that word) of countries that have all specified ways that moderate ingestion of wine can actually improve health. Go to the Mayo Clinic’s website and there will be guarded suggestions that an average of two drinks a day for men and one for women (a drink is generally defined as 5 ounces) may have positive health benefits. And as early as 1992, researchers

at Harvard concurred with earlier studies and stated that moderate consumption of wine was one of “eight proven ways to reduce coronary heart disease risk.” Scientists have cited the antioxidants, flavonoids, which are abundant in the skins of red grapes, as being beneficial in reducing the production of LDL cholesterol (the bad stuff), boosting HDL (the good stuff), and limiting clotting in blood. The most universally accepted benefit found by most researchers is that moderate daily consumption of alcohol can be a factor in improving cardiovascular health. But there are other benefits as well. A Spanish study of more than 5,000 men and women over a period of seven years pointed out that moderate consumption can reduce depression. At England’s University of Leicester, a correlation between the consumption of red wine and a reduction in the rate of bowel tumors was shown. Harvard studies led by investigator David Sinclair led to the issuing of a statement that said: “Resveratrol improves the health of mice on a high-fat diet and increases life span.” London researchers found a link between healthy blood vessels and wine consumption. And let’s not forget the famed French Paradox studies. Whether you believe the scientific efficacy of Serge Renaud’s review or not, there are clearly major differences between the rate of heart disease in France, where consumption of red wine is high, and in America, where it is not. Valentine’s Day, Italian researchers in Florence reported an increase in libido amongst women wine drinkers. All good, right? But back aches? I could not find a single reference that specifically linked a glass of wine to healing a bad back. And yet, I still believe that on this cold January day the very best prescription for Mary and her back was for her to settle in before a raging fire, unwrap a caramel, and pour herself a glass of Pinot. FINDING UNEXPECTED COMFORT IN A NEIGHBORHOOD PASTRY CAFÉ

I AWOKE LAST SATURDAY morning to discover that, once again, Mother Nature was determined to crush my weekend plans. Wet snow and icy temps had made victims of motorists atop Vail Pass, closing I-70 eastbound indefinitely. A 24-hour AspenDenver-Aspen shuffle was out of the question. There would be no rendezvous with my AMANDA favorite Massachusetts RAE babes, no voodoo masquerading in face paint and sparkly frocks, no ogling taut bodies of burlesque dancers, trapeze artists, and aerial acrobats nor gawking at flame-eaters, stiltwalkers, and the miscellaneous freaks who gravitate to the dark, poetic energy of an underground circus. There would be no Bellini-soaked brunch on Sunday over which we’d recap the weirdness, either. As a girl who attended circus camp long ago — true story — and who’s always been obsessed with food, I wasn’t sure which was worse: missing the fantastic spectacle or losing an opportunity to investigate another kind of drama, at one of three newly opened Trader Joe’s in the Mile High City — the first outlets of the chain in Colorado. “It’s absolute bedlam,” my journalist friend Carrie confirmed via phone. Her apartment sits just three blocks away from the flagship TJ’s on Colorado Avenue, and she corroborated news reports of parking-lot madness, shifty citizen behavior, and stocking crises. Meanwhile, I had this deadline. So I bid Carrie adieu and did what I often do when the blank page is taunting me: I went to lunch. I trudged the narrow, slushy streets of my neighborhood in the North 40 all the way to the industrial armpit of the Aspen Business Center (ABC), near the main entrance off Highway 82. It was noon as I approached the brown storefront decorated with

simple block lettering: FRENCH PASTRY CAFÉ & CATERING. I spied a light inside and sighed with relief. Pastry Chef Franck Thirion’s sit-down spot (his other, more upscale shop on Hopkins Avenue serves just pastries, chocolates, and coffee for takeaway) was open, which meant that a bowl of steaming chicken tortilla soup was about to be mine. This is the kind of small comfort that can turn a day around. It’s one of life’s little ironies that my favorite Mexican cure-all is made by a French pastry chef who specializes in butter croissants, cakes, tarts, and chocolates. Classically trained, Lorraine-native Franck Thirion inherited the original recipe from previous tenant, Wild Rose Café, when he opened his combined production kitchen and restaurant here in February 2007 with his wife, Marilyn. “We had to keep it,” says Marilyn, who runs the front of house. “People would be really upset (if we took it off the menu). If we had five soups, they’d go to tortilla soup or French onion soup, for sure.” I first ate Thirion’s chicken tortilla soup two years ago, during a weeklong bout with a nasty cold, and I’m convinced it contains some magic ingredient that soothes sickness, headache, heartache— even cold, dreary days clouded by broken dreams. The broth is deep gold, flecked with spices and poured over shredded chicken, mirepoix, diced potatoes, and a handful of tortilla crisps. The dish is finished with avocado slices, fresh cilantro, and a shower of shredded cheese, which melts into decadent strings that resurface with each bite. The seasonings tend to fall to the bottom of the bowl along with tortilla crumbs to create a savory, salty, zingy final slurp. In seven years, the soup’s cult-like following has only grown. Since Franck Thirion French Pastry & Café in the ABC is one of very few — or the only? — sit-down restaurants in the business complex, worker bees flock for breakfast and

lunch. The place reminds me of the patisserie on my bike route to university abroad in Strasbourg: a quintessential neighborhood café. It’s small, just 18 seats inside, another dozen on patio furniture outside in warmer months, and largely undecorated, boasting the same brand of indifference to interior design found in mom-and-pop haunts across France. A stack of daily newspapers sits on the table closest to the door; to the back, baskets tipped atop a petit-fours display case showcase giant almond croissants and glossy pain au chocolat made fresh that morning. (True to tradition, everything is made from scratch daily, so cakes, chocolates, and other confections for catering must be ordered at least a day ahead.) Those who work and live in the social Siberia known as the ABC gather here to focus on each other and on the food, and those things alone. Chicken tortilla soup is the sole menu anomaly. (And a favorite among Crossfitters: “Tortilla soup, hold the tortilla!”) Otherwise, items are standard French: sweet and savory pastries made with flaky, buttery crust; croissant egg sandwiches, open-faced omelets served with dressed greens, and really popular breakfast burritos.

For lunch, there are six kinds of salads, Panini sandwiches stuffed with prosciutto, chèvre, smoked salmon, or veggies, and caprese, chicken Milanese, roast beef, fish, and BLT sandwiches. A few varieties of quiche tartlets are always on hand, and croque-monsiuer sells out regularly. Thirion bakes the bread every morning from dough imported from France. “We’d like to do more specials, like the coulibiac,” Marilyn says, noting a current favorite: brioche pie filled with salmon, rice, vegetables, and egg, reportedly brought to France from Russia by trailblazing chef Auguste Escoffier. “Once you get rid of one sandwich, you have people who will be mad. They’re all popular, so it’s tough.” As I’m slurping the last zesty drops of broth from my bowl, a woman enters the café. “Salut, Marilyn!” she says cheerfully, removing her snow-soaked coat and laying it over a chair. The women exchange a few words. Then my ears perk up. “Yes,” Thirion says. “We just have the tortilla soup left.” Amanda Rae shredded pow this weekend instead. Denver can wait ’til spring. To drink or not to drink? The question is a good one to ask now and again.

HITTING THE ASPEN SCENE SOBER ALCOHOL IS A social lubricant. But since when did we all need so much help getting wet? That was the question I asked myself repeatedly last week at Takah Tuesday. I had just seen an amazing jazz band at the Belly Up with some friends and we continued our night by dancing to live music at the sushi restaurant. The evening was a typical one in BARBARA Aspen with one large PLATTS difference: I wasn’t drinking. Let me first get one thing straight, I adore libations and the indulgent culture that typically surrounds them. I get giddy at the expectation of a mimosa with my roommate before a day of skiing, I find that nothing tastes better than a beer at lunch and/or après, and splitting a bottle of red wine with a good friend over dinner ranks near first as one of my absolute favorite activities. But there was a point (probably about a month ago) when it became blatantly clear that I didn’t just participate in the drinking culture in Aspen, I engrossed myself in it; to the point where I felt ignorant to what else the town had to offer. I understood an alcoholic beverage to be a necessary accessory with most of my leisurely activities. This

is not to say I go out every night and drink myself to a silly slur. It’s to say I’m a girl living the post-college life in a town that enjoys a thorough buzz. It’s to say I’m roughly the same as many other people here (in their 20s or not). But I couldn’t look at what I was doing properly because I was stuck in it constantly. So I pulled back and observed. I took a 10-day break from the bottle, a stint that probably hasn’t happened since before I started college. I continued life as usual, going out in the evenings with friends and working and skiing during the day, just without the ethanol buzz. In my sober excursions people looked at me like I was a foreigner

experiencing the American bar scene for the first time. Friends were confused by my sobriety, and as they got drunker they became slightly frustrated by it. Perhaps they thought I was judging them, but truth be told, I felt like the one being judged. I was blowing triple zeros and everyone else around me was somewhere in the 10th decimal region. My gaze was critical and maybe slightly harsh while everyone else’s was glazedover and uninhibited. I danced like a white girl and everyone else…well… danced like drunken white girls. Being sober while everyone else around is intoxicated made me realize how incredibly stupid we can all be after one too many drinks. They also speak at intensely high

decibel levels and generally have no sense of space. I was tempted to drink just so I could be stupid, loud, and incredibly uncoordinated like everyone else. My 10 days sober did not leave me with any sweeping epiphanies about the drinking scene in Aspen or my liking for alcohol. However, it did make me think about our reliance on libations. We depend on them so thoroughly to ensure a good time. Perhaps it keeps us feeling young. Perhaps we enjoy the silliness it brings and the ability it has to help us lose ourselves in a night. But fun times need not always include a hefty amount of booze to be considered fun times. I’m certainly not saying we should all give up drinking (heavens no). But taking a break or lessening the intake does offer a different perspective on just how much we indulge here in Aspen. While I can’t say that I will always take my own advice, my sober experiment did remind me that moderation is generally a good route to take. Though, now that it’s close to the end of the workweek, a glass of Pinot Noir would certainly hit the spot. Cheers! Barbara Platts is back to drinking but in lesser amounts than before. T’S A FAMILIAR SCENARIO, played out over and over again on hit shows like Top Chef, Chopped and The Taste, which, appearing nonstop on the Cooking Channel, The Food Network, Bravo and the like, have fueled the current cooking competition craze and caused ratings to soar. But this time, it’s not a vetted group of professional chefs competing for a title that might land them a little (or a lot) more celebrity, perhaps via a best-selling cookbook or a cooking show of their own, or even (gasp) the chance PHOTOS BY AUBREE DALLAS

to show off their skills during the Food & Wine Classic in Aspen in June (Top Chef winners routinely make an appearance, including at the popular Classic Cook-off ). And we’re not even touching on the potential for financial gains here, although there may be some scholarship money involved. This time, it’s a group of Roaring Fork Valley high school students who, as participants in Carbondale-based ProStart at YouthEntity, are practicing for the highlight of their academic year, the 15th Annual ProStart Invitational, Sysco Denver Hospitality Cup Competition, which will be held on March 21 at Johnson & Wales University in Denver. A LITTLE BACK-STORY

ProStart is a national, two-year culinary arts and business entrepreneurship program for high school students interested in the hotel and hospitality field. Students fulfilling 400 hours of mentored work experience and passing a pair of national exams receive the ProStart National Certificate of Achievement. With it comes eligibility for scholarships, as well as course credits at more than 75 of the country’s leading hospitality and culinary arts colleges and universities. With support from industry members, educators, the National Restaurant Association Educational Foundation (NRAEF) and state restaurant association partners, the program has reached more than 95,000 students in 1,900 high schools across 48 states, Guam and U.S. military bases. In Colorado, the ProStart curriculum is being implemented in more than 30 high schools thanks to a partnership of the Colorado Restaurant Association and the Colorado Hotel & Lodging Association. Last year, Colorado ProStart graduates received more than $7.5 million in scholarships. OK, so that was a mouthful. But it’s that significant potential which, in 2012, inspired Kirsten Petre McDaniel to launch ProStart at YouthEntity, the nonprofit youth development initiative she’s championed since its beginning as the Computers For Kids Foundation in 2001 (she is now president and executive director).

“YouthEntity is about providing experiential learning for students,” Petre McDaniel said about the concept, which also includes intensive business, finance and technology programs, as well as a baking and pastry arts program called YouthChefs. “There is such a wealth of diverse opportunities for young people in the restaurant and food service industry today. ProStart at YouthEntity gives local high school students a platform to discover new interests, and offers reallife, hands-on experience by bringing together the industry and the classroom. It’s empowering.”

COMPETITION NOTES In its 15th year, the ProStart Invitational showcases ProStart students from 39 Colorado high schools. The teams will compete for more than $750,000 in scholarships. The competition consists of both a Culinary Competition and Hospitality Management Competition. The school that accumulates the most points on a 100-point scale will take home the Sysco Denver Hospitality Cup. Winning teams will represent Colorado ProStart at the National ProStart Invitational in Minneapolis from May 3-5, 2014. Last year, the ProStart team placed 1st in the Management Competition and 2nd overall, Culinary & Management. The Management Team received a combined total of over $180,000 in scholarships. GO TEAM!

THE KITCHEN AS CLASSROOM The setting for the aforementioned culinary competition practice is the 1,000-square-foot commercial teaching kitchen in YouthEntity’s home base within the former Carbondale Middle School. “When we moved into the space, we put together a fundraising party to connect with donors, and got grants, to refurbish the old cafeteria kitchen,” said Petre McDaniel. “We collected all the gadgets first, then outfitted the pantry and brought in ovens and work tables.” Walk-in refrigerators were already in place, as were stoves, which, while old, would have been expensive to replace. “They’re hanging in for the time being,” McDaniel noted, fingers crossed. With the help of Aspenbased Charles Cunniffe architects, the school’s former gymnasium was also re-concepted and designed as open-plan work and meeting space according to the students’ needs. Taking place after regular school hours, as does all of ProStart’s program time, the practice precisely mimics the official competition set-up, as well as its mind-bendingly detailed rules and regulations. “Two burners, no ovens, no power tools,” ProStart chef-instructor Matthew Maier stated with a mix of humor and chagrin. “During the competition, the time starts when (the team) walks in and they bring every single thing they need to work with. There’s fifteen minutes for set-up, then one hour for cooking — with no TV time-

outs.” On the clock, the team — Flora Fischbacher of Glenwood Springs High School, Cynthia Ayala of Roaring Fork High School, Daniela Chissum and Karla Enrique, both of Basalt High School — arrives at their workstations, each outfitted in a white ProStart chef jacket and weighed down with ingredients and gear. With focused precision, they set up a make-shift kitchen, complete with everything from propane-fired burners to a contained water source, arrange a mise en place of ingredients at a pair of stainless steel work tables and begin preparing three dishes — appetizer, entrée and dessert — that they have researched and developed. “It’s all choreographed, like a dance,” commented Petre McDaniel, watching from the sidelines. Later, that meal, along with every aspect and detail of its preparation, including the cleanliness of work stations, culinary etiquette, knife skills, proper handling of ingredients, cooking techniques, cost (there is a limit to the amount of money that may be spent to produce the meal) and then some, will be scrutinized and judged on a 100-point system. This time, it’s by Maier, and his review is mixed. “You did a good job with the timing, and the set-up and teamwork was good,” he told the group. “But you murdered the protein.” Scallops, charred on too-high heat in too much butter. To remedy, or better yet, avoid, the situation in the future, Maier suggested paying closer attention to the pan. “If it’s smoking, it’s too hot, so take it off the heat and cool it down,” he said. “If there’s too much butter, get rid of some.” Every comment was accepted as it was meant, as constructive criticism, with a respectful “Yes, chef.” “My role is more steward or shepherd,” explained Maier, who, as a graduate of the Culinary Institute of America, CMC chef-instructor and long-time private chef in Aspen, has significant culinary chops. “The kids come to me for

advice and I help them along. (ProStart) gives them a chance to figure out that, ‘yes, this is something I want to do,’ or ‘no, I hate this.’ It’s high school. There’s nothing on the line, but they come out way more invested in their future.” Fischbacher and Ayala, both seniors, concur. “It’s not very common to have an opportunity like this,” said Ayala, who, before ProStart, had always enjoyed cooking with her grandma and aunts at home, and plans to attend Johnson & Wales, in either Denver or Providence, R.I., this fall. Fischbacher, who also works for her dad, well-known local chef and ProStart proponent-volunteer Andreas Fischbacher, at his Allegria restaurant in Carbondale, added: “Chef Matt has shown us so many techniques. It’s real-world experience here. We learn about the front and back of the house, and know our strengths and weaknesses.” Fischbacher will head off to culinary school in Vienna in September.

THE FRONT OF THE HOUSE

On the same day the culinary team competes in Denver, the business management team — Cristian Mendez, Naomi Peters and Shion Reilly — will be involved in a business management competition as well. Describing the project on which their team will be judged, Mendez explained: “We designed a concept for an entire restaurant, from top to bottom, the name, what the interior design and layout will look like, a description of the menu, marketing tactics, costing, and develop a PowerPoint presentation. My parents always told me to look for a major that offered a good career or job. I joined ProStart to learn how to cook, but I love the business side. This project is my portfolio.” Mendez has been accepted to Denver University and hopes to attend school there in the fall. In turn, Reilly hopes to further his business studies at either Lewis & Clark or CU Boulder, and Peters will likely attend Colorado Mountain College locally for two years before applying to a four-year university to study restaurant hospitality and management. For now, though, the focus is on the upcoming competition. With just a couple of weeks to go, Reilly sums up the ProStart team’s sentiments: “It gets nerve-wracking,” he said. “But once you get up there, you’re ready. You know your part.”

YouthEntity’s ProStart program isn’t the only one cooking with gas this winter. At Aspen High School, the program — which is offered as an elective cooking class — is making its own impact on students there. “These kids have really taken their passion for cooking to a whole new level,” said ProStart teacher Morgan Henschke, who has helped guide students for the past two years. “This is more than a class for them; it was a sport.” According to Henschke, not only do the students attend class as part of their school curriculum, but they meet outside of class to create meals, test recipes, learn about the restaurant business and more. In fact, the class received Honorable Mention at the Response Chocolate Classic on Feb. 13 with

their New Orleans Style Turtles. At the Western Slope Competition on Feb. 22, both the Management Team, which included students Matt Sovich, Elizabeth Nemerovski, Kayla Soufer, Emery Major, and Amber Wright, and the Culinary Team, which included Gigi Mottier, Nicole Zell, Jenn Coombe, Chris McNamara and Hallie Stuart, placed third. The Management Team created a restaurant concept called N.S.W. Modern Italian. The Culinary Team created a three-course meal (two of each — for tasting and visual judges) comprising a seared scallop appetizer, lamb entrée, and chocolate ravioli dessert — all housemade. “It was definitely about more than cooking; we learned so much — but also had a great time,” said Coombe. “It has been amazing.” — Jeanne McGovern

CIMARRON MOUNTAIN CLUB: UNLIMITED POW — AND A WHOLE LOT MORE THERE IS a video on the Internet called “Hitler Wants to Ski Pow at Vail.” It’s a comical look at how Front Rangers, and Vail skiers in general, are vying for just a taste of powder at one of America’s biggest resorts. It’s a race up I-70 to park and get to the Back Bowls, before finding out they are closed due to high winds — and Hitler is melting down over the fact he will have to ski with everyone else as the AMIEE WHITE powder disappears in BEAZLEY seconds. The funniest part of this video is that it’s dead-on accurate. Vail is notorious for long lift lines, longer rides to where the skiing is really good only to have to compete with the hordes to find actual stellar conditions and terrain. On these days, people like Jim Aronstein dream of their own private ski area where the powder is always fresh, cat skiing is unlimited and the crowds, well, they just don’t exist. Now, Aronstein is making his dream take shape at Cimarron Mountain Club. A private ski area community located between Crested Butte and Telluride, CMC’s 1,490 acres of skiable

terrain (compared to 675 skiable acres on Aspen Mountain) are spread over 2.5 miles of Cimarron Ridge — and all start zones are well above 11,000 feet. There are only 20 homesites at CMC. He has set the expectations of this quiet and strikingly beautiful pocket of Colorado to be the only private ski community of its kind. The idea for Cimarron Mountain Club is a place for people who truly love the West, who love skiing and want to spend time with their families. There has never been a mountain club like this, Aronstein notes, because of the exclusive access to unlimited cat skiing for the entire family, and intimacy of the development. CMC

has cut 40 runs, so far, a portion which will be perfectly groomed for beginner skiers and the rest ungroomed steeps and long running glades for the more advanced skier. Cimarron, he notes, means “wild and rugged” in Spanish; plans for the land will retain all of its natural beauty. While homes will be on the grid, at 50-75 acres each they will be enveloped in nature, while having access to a slew of amenities including a 9,000-squarefoot mountain contemporary main lodge with a restaurant, spa, viewing and exterior heated pool, hot tub and pond ice rink. Located 45 minutes from the airport at Montrose, residents of CMC have the option to drive to the club, where they can park their cars and be transported to their homes in this car-free community, or be taken via helicopter from the airport to the helipad that is located next to the main lodge. And for those who just can’t wait, a chartered helicopter can fly residents and guests from the airport to the top of Cimarron Ridge at 11,450 feet in 10 minutes. From there, there is no one to fight with

NO RUSH INTO ‘LA FUTURA’ FOR ZZ TOP IT WOULD APPEAR that one word Billy Gibbons of ZZ Top learned when it came to working on the long-awaited current CD, “La Futura,” by the band is patience. The project took several years to complete, and plenty of fans were eager to hear what the “Li’l Ol’ Band from Texas” had been up to in the studio all this time. Finally, in September 2012, they got that chance with the release of “La Futura.” But Gibbons was fully on board with the album’s producer, Rick Rubin, whose exacting standards meant the album wouldn’t be rushed. “Rick is in no hurry to allow any recorded work that he’s associated with to hit the streets prematurely,” Gibbons said in a phone interview. “I think that there have been a couple of artists that got a little too impatient and left the fold. They said ‘Gee whiz, this takes too long.’ What can’t be overlooked is the intensity that hides behind Rick’s casual appearance. He doesn’t get flustered. He doesn’t allow these things to ruffle his feathers. “That’s what I like and it’s also what a lot of people find kind of aggravating,” he said. “(Bands say) ‘Gee whiz, we’ve already finished this.’ And he says well, ‘Maybe.’ Then you stop and think about it for a second, and you say maybe is the word. So with that in mind, I enjoy the process and I particularly, I just treasure the moments that Rick and I get to hang out together. We’ve been pals for 25 years.” As Gibbons sees it, Rubin’s approach is for the artist’s own good. “He’s providing a really great service to the artist,” Gibbons said. “It is tempting to want to rush right out and show the world what you’ve got. But it’s also a great value to have another opinion in the mix.” With the opinion sharing and analyzing of the tracks recorded for the CD having concluded, ZZ Top has

spent much of the past 18 months on tour; they make a stop at Belly Up on Friday, March 7 (the show is sold out). ZZ Top’s show will feature plenty of fan favorites, and the band may dust off a couple of older tunes that haven’t

been performed on recent tours. Recent shows have included “Vincent Price Blues” off of the 1996 CD, “Rhythmeen,” and “Heaven, Hell Or Houston,” the ninth track on “El Loco,” the 1981 album by the band, which includes singer/

guitarist Gibbons, bassist Dusty Hill and drummer Frank Beard. The group, of course, also plans to play a few songs off of “La Futura” during its live set. The process of making the new album began roughly five years ago when Rubin, engineer Dave Sardy, and the band went into the studio for some initial recording. “We assembled about 20 rough song ideas from those sessions,” Gibbons said. “We (the band) pulled stakes to hit the touring trail, and I was able to drag those rough ideas along as we made our way through Europe. When I returned, I met Rick in Santa Monica, and we were enjoying an evening walk down on the Santa Monica Pier, and he encouraged me to take the rough ideas and reassemble the band and he wanted me to go ahead and produce whatever we could sift out of the original song ideas.” So Gibbons took the band into the studio and produced another session in which the song ideas were developed further and recorded with ZZ Top’s long-time engineering team of Joe Hardy and G.L. Moon. “So I produced 18 tracks and from those 18, I went back in the studio with Rick,” Gibbons said. “I think we’ve gotten it down to a more manageable number. I think there are 12 tracks that have risen to the top out of 20.”

Stylistically, “La Futura” is more rooted in the bluesy boogie of ZZ Top’s early albums than in the more pop inflected albums of the ’80s. There’s even a song, “Chartreuse,” that borrows the guitar riff from the band’s mid’70s hit, “Tush.” Between touring and other promotional duties, Gibbons’ services may also be required for further appearances on the Fox television series “Bones,” in which he plays the very cool, but intimidating father of Angela Montenegro. “The creator, Hart Hanson, is a genuine music fan,” Gibbons said. “He has managed to enjoy platforming his TV show with various cameo appearances on occasion. I think he thought it would be novel just to have me show up, shake a hand, and that was seven years ago, if you can believe that. And he says, ‘Gee whiz, the guy can act. We’ve got to get this guy back.’ So once a season I’m the bad dad. But we’ve all gotten along famously, and everyone seems to enjoy the day when the bearded boy shows up. It’s pretty funny.”

HE DOESN’T ALLOW THESE THINGS TO RUFFLE HIS FEATHERS.” – BILLY GIBBONS, ZZ TOP “The scariest part is when you completely tear a song down and are nearly starting it over,” Gibbons said. “We had done some rewriting. A lot of the lyrics were massaged into place. Even some of the guitar tracks enjoyed getting a chance to try a different direction. So it’s been a real labor of love with — and I like that word – a dedicated focus. It can be challenging to sit and listen to a song, the same song, for two hours and then you say, ‘Gee whiz, let me sing that top to bottom. I want to go sing it again.’ Then you do that and then you say, ‘Gee whiz, would this word be better here? Let me sing it again.’ After a full day, you’re just toast.” Gibbons didn’t offer much in the way of his thoughts on how he thinks “La Futura” compares to other ZZ Top CDs. The band’s catalog numbers 14 studio albums and features such hit

sounds with its patented blues rock sound; as well as becoming one of the world’s biggest bands behind hits like “Legs,” “Sharp Dressed Man” and “Gimme All Your Lovin’” and the sly and sexy videos that accompanied those songs. But his general description of the music being raw and down and dirty — but with some modern touches — sounds right on point. “La Futura” is very much a guitar album, and it’s also striking that live drums — not programmed rhythms — primarily power the songs. And yes, the album does sound raw and gritty. Gibbons’ guitars have a sting to them, with songs like “Heartache in Blue,” “I Gotsta Get Paid” and “Lose Lose You.”

‘HIGH AND INSIDE’ EX-RED SOX PITCHER Pete Hurley comes to Bozeman to start a new life after a series of tragic mishaps that left him publicly shamed in Massachusetts. “Just as I was about to get over the incident that ended my baseball career,” he explains, “a drunken accident left this young girl paralyzed, and I was in the news again.” He moves to Montana to live near his sister, Danielle, the only surviving member of his immediate family, and to learn how to build a house. The gradual cracking of Pete’s limited awareness is the primary thrust of “High and Inside,” Russell Rowland’s new novel. Pete, who narrates the story, thinks he suffers from bad luck, but his friends know better, and the reader realizes it as well in the first chapter, when Danielle tells him, “Please try not to drink too much

while you’re here.” But Pete can’t stay out of trouble. On his first day in Bozeman, he goes to a sports bar with his brother-inlaw, Barry, guzzles beer and gets into a brawl with Clint, an aggressive, alcoholic behemoth. Unfortunately, Clint is also the president of the local chapter of the American Society of Construction Engineers, and after the confrontation he’s determined to create permit problems for Pete’s house-building project. Each chapter opens with a quote from a fictional source, either a baseball blog or a new-agey homebuilding guide called Your House, Your Self. These epigraphs help reveal the details and repercussions of the infamous pitch that ended both Hurley’s baseball career and that of the promising batter he hit. But “High and Inside” is less about baseball than

it is about how fame turned Pete into someone who may never have had to pay his own bar bill or go home alone, yet could never hide from the enemies he recklessly made. For a novel that evokes the wideopen spaces — both baseball and Montana — “High and Inside” is a largely interior book, focused on the relationships that Pete must analyze, repair, or relinquish entirely as he gradually comes to acknowledge his alcoholism. Perhaps the most touching relationship is that between Pete and his three-legged female dog, Dave, whom he loves but cannot care for properly as his drinking intensifies. “High and Inside” is a contemplative look at what happens to one of the boys of summer when autumn comes at last.
