WELL, NOW we have the answer to how to deal with Edward Snowden, the “traitor” who let the cat out of the bag on our government’s massive surveillance program against its own citizens — kill him. That’s according to Lt. Col. Ralph Peters, a former spy himself, who now acts as a talking head for Fox News. Personally, the idea of people like Peters making decisions about whom we spy on and whom we don’t gives me the willies. If it were up to me, we’d be giving ticker-tape parades for Snowden, Bradley Manning and every other whistleblower going back to Daniel Ellsberg and the Pentagon Papers in 1971 (Ellsberg, by the way, has called Snowden “a hero”). These are the people who, upon seeing up close and personal how our own government breaks the laws it is supposed to enforce, decide they can’t in good conscience keep their mouths shut. I salute them for that attitude, and for their acts of courage in the face of almost certain prosecution, because without them we would sink ever more rapidly into the kind of police-state excesses that we once cited in our condemnation of the Soviet Union. Peters calls the acts of Snowden, Manning and others “treason,” and probably would have been calling for jail sentences and the most extreme punishment for the protesters who rallied in the streets of this country against the war in Vietnam, the bombing of Cambodia and the lies about the Tonkin Gulf incident that gave our generals the excuse to broaden and deepen the Vietnam mess. And what about the lies that got us into the Iraq War, a useless exercise of military adventurism that not only drained our national economy to the point of anemia, but did absolutely nothing to make us any safer from terrorist acts? Remember the “Weapons of Mass Destruction” that didn’t exist? Remember the ties between former Iraq dictator Saddam Hussein and al-Qaida that also did not exist? The Republican Party and its

satanic offspring, the Tea Party, are of course leading the charge against this domestic spying program, conveniently forgetting that it all started under their own demented darling, George W. Bush. President Obama, unfortunately, seems to be caught up in the same kind of knee-jerk polemics, ranting against Snowden not very long after he stood before a microphone and declared his undying support for freedom of the press. Freedom of the press, our current president seems to have forgotten, stems from the same Constitutional well, the First Amendment, as the idea of freedom of speech. Snowden and his cohort were most certainly exercising their right to free speech in a timehonored tradition, this one based on the idea that if you see something rotten, you holler to high heaven about it until someone hears you and joins you. The very fact that Americans are rising in protest to this domestic spying program is what should be occupying the hearts and minds of our elected and hired representatives, rather than a rush to warped judgment about the best way to silence the whistleblowers and all who would follow them and support them. This is not the first time our government has waged war, whether overt or covert, against its citizens. The so-called War on Drugs has been under way for nearly a century, with no better purpose or justification than the vapid excuses being babbled about concerning the NSA domestic spying program. The apologists like to say that no Americans have been injured by this massive spy program, but how in the hell are we to believe them? And how can they ignore the simple fact that a program such as this can, and typically does ultimately become a dark force for evil gnawing away at the heart of our “free society?” Nope. Snowden should be receiving a huge vote of thanks rather than being chased into hiding.

THE WEEKLY CONVERSATION POPULAR MUSIC IN THE LATE ’70s, roots music was pretty thoroughly shoved aside by New Wave and punk. But in Austin, Texas, there were still some people singing the blues, including the guitar-slinging Vaughan brothers. While Stevie Ray was taking blues guitar to the next level of mind-blowing virtuosity, Jimmie was teaming with singer and harmonic player Kim Wilson to create a more accessible version of the blues. As leaders of the Fabulous Thunderbirds, the two put blues on the radio, with hit songs “Wrap It Up” and “Tuff Enuff.” Vaughan left the group long ago, and the band’s hits dried up not long after, but the Thunderbirds left an impact on the music landscape and Wilson is still at it. He brings the band to the Wheeler Opera House on Thursday, June 13.

Texas blues band the Fabulous Thunderbirds play Thursday, June 13 at the Wheeler Opera House.

CURRENTEVENTS GASTRONOMY AS FAR AS CULINARY CONCERNS go, 1989 might as well have been the Dark Ages, a time before local sourcing, celebrity chefs and pairing braised pork belly with Dogfish Head Indian Brown Ale. It’s been a revolution since then and the ones brandishing the sharpest knives have been the young ’uns, the generation that has refused to accept the orthodoxy about ingredients, preparations and service. So the real heart of the Food & Wine Classic in Aspen (Friday through Sunday, June 14-16) is the introduction of the Best New Chefs, a tradition that began 25 years ago. Following the 10 young chefs has been an ideal way to keep tabs on emerging movements in food and drink; this year’s class includes the chef of a sustainable-seafood restaurant and the owner of a New York taqueria. The 25th anniversary of the Best New Chefs program is celebrated with conversations between Food & Wine editor Dana Cowin and former honorees Thomas Keller and Eric Ripert, and a Saturday night party on top of Aspen Mountain. The Food & Wine Classic in Aspen, including the 25th annual Best New Chefs segment, is set for Friday through Sunday, June 14-16.

WRITTEN WORD THE NOTION THAT all Americans should be brushing up on their Mandarin is good advice, no doubt, though impractical. But even if we can’t take immersive classes in the language, it doesn’t mean we Chinese-born writer Yiyun Li is can’t familiarize featured in the Aspen Writers’ Foundation’s Aspen Summer Words ourselves with Literary Festival, Sunday through what’s going on in Friday, June 16-21. — and what is being written about — China. The Aspen Writers’ Foundation’s Aspen Summer Words Literary Festival (Sunday through Friday, June 16-21, at the Aspen Institute’s Doerr-Hosier Center) focuses on China, with appearances by Chinese-born writers (Yiyun Li, a MacArthur “Genius” award recipient), ChineseAmericans who have focused on China (Lisa See, Sandra Tsing Loh), and Americans who have spent significant time living in and commenting on China (James Fallows, whose 2012 book “China Airborne” looks at the country through the aviation industry, and Deborah Fallows, whose “Dreaming in Chinese” uses the lens of language). Also worth keeping an eye on is Tom Barbash, who doesn’t write about China, but whose upcoming short story collection, “Stay Up With Me,” is earning much advance buzz.

LEGENDS & LEGACIES

by TIM WILLOUGHBY

FROM the VAULT

No traffic interruptions: a picnic alongside Castle Creek Road in the 1950s.

CASTLE CREEK: THE ROAD LESS TRAVELED construction on Castle Creek Road this summer may slow your

journey, but the extra time taken could be spent envisioning past paths. THERE WAS NO Castle Creek Road during the early years of Aspen’s settlement. After ascending Taylor Pass on one side, or Aspen Mountain on the other, travelers navigated Gold Hill Road along the top of the ridge between Aspen and Ashcroft rather than along a roadless valley. A road was later forged on the valley bottom, upon which daily stages traveled the distance between towns in about three hours. The old Ashcroft road entered Aspen along the east side of the valley; the train spur using the west side followed the current right-ofway below the Aspen Music School campus. Most of the rest of the road follows the same path now as it did a century ago, accessing mines along the valley while avoiding narrow sections cut by river gorge. As automobiles came to rule the roads, nearly all traffic on Castle Creek Road headed toward the Midnight Mine until its closure in 1953. Although some prospecting took place in the upper valley, and

12

locals and tourists occasionally traveled to the Elk Mountain cabins for fishing, hiking and a night away from home, Castle Creek Road was plowed in winter only as far as the Midnight Mine Road turnoff. In the late ’50s the narrow road’s “pavement” was either dusty dirt or

Fritz and Millie Kaeser constructed a vacation cabin at the turnoff to Conundrum. The Mace family established Toklat at Ashcroft. It was a long drive to Ashcroft back then, but Stuart Mace hauled his children to town each day for school. Mace assumed, correctly,

HONKING AT CORNERS WAS NOT NECESSARY BECAUSE THE DUST THAT CARS RAISED COULD BE SEEN FROM FAR ENOUGH AWAY TO PREVENT AN ACCIDENT. mud; despite annual grading, most of the time the surface eroded to a jarring washboard suitable only for slow travel. Few residents persevered time-consuming valley trips to town. The architect Rob Roy built a home in the meadow just upstream from what is now the music campus. The Feinsinger family created a summer home not far above the Roy’s, and not visible from the road;

Jun e 13- 19 , 2013

that he was the only one on the road and pushed his VW bus to its limits using all of the one-anda-half “lanes.” Honking at corners was not necessary because the dust cloud that cars raised could be seen from far enough away to prevent an accident. It is hard to imagine today, but until the 1960s you could picnic along the road nearly anywhere

without a car going by for a whole afternoon. My parents and their friends had favorite spots close to good fishing that we frequented during summer weekends. The road to Ashcroft was paved when Pitkin Iron began its operations below Taylor Peak. The summer operation moved tons of ore daily down the valley to a train siding in Woody Creek. The road was widened and, over several summers, pavement crept up the valley road all the way to the section above Ashcroft near the Pine Creek Cookhouse that had been a muddy swamp. Producing the greater portion of county taxes for years, Pitkin Iron’s traffic justified the paving that opened the valley to hordes of bicyclists and drivers (much to the distaste of some locals, and much to the delight of others) who would never venture beyond the pavement’s edge. Tim Willoughby’s family story parallels Aspen’s. He began sharing folklore while teaching for Aspen Country Day School and Colorado Mountain College. Now a tourist in his native town, he views it with historical perspective. Reach him at redmtn@schat.net.

IT ’S A CLASSIC

1984 F O OD & W I N E

PHOTO COURTESY OF THE ASPEN HISTORICAL SOCIETY

ACCORDING TO THE ASPEN TIMES on June 21, 1984, that year’s Wine Classic “was attended by twice as many oenophiles as came to drink wine at last year’s premiere event. So it was a case of double vision for the organizers of the classic, who agreed that they had an excellent turnout — and that equally important, the vintners were pleased with the weekend. More than 250 wine connoisseurs paid to attend, and helping to drain the bottles were 67 vintners, their associates and more than 100 Aspen volunteer workers and tasters. Seasoned oenophiles and novitiates alike may look forward to next year’s classic late in June.”

WINEINK

WORDS to DRINK BY

SAKE SUMMER SCHOOL AT O YA ON A RECENT June evening in Manhattan, 75 guests arrived at the James Beard House. They came to indulge in an izakaya-style meal prepared by Tim Cushman, named 2012’s James Beard “Best Chef Northeast” for his work at o ya, the mind-blowing Japanese restaurant in downtown Boston. But the sweetener in this 12-course extravaganza, titled “Spring Sake, Global Flavor,” was a special appearance by Tim’s wife, Nancy Cushman, one of fewer than 100 people KELLY J. HAYES globally to be certified as advanced sake professional. While Urchin, Hamachi and Salmon were on the menu as expected, it was the Crispy Carnitas Tacos and Eggplant Involtini, paired respectively and respectfully with “Fukucho Moon on the Water Junmai Ginjo” sake and the “Shichi Hon Yari Junmai” sake, that brought the diners to their knees. “We love to have people try sake with other types of cuisines,” says Nancy. “That night we also served a Thai Spicy Tom Gar Soup. People are just beginning to understand sake with fish, but if they branch out a bit they’ll see that it is a perfect pairing with other flavors.” She continued: “Sake blends and meshes without overpowering a meal. I like to say ‘sake marries well’ with all kinds of foods.” Nancy is a “sake-evangelist” obsessed with a desire to introduce American palates to the delights of the subtle yet complementary flavors that the rice-brewed elixir can bring to a meal. This summer, along with o ya sake sommelier Alyssa DiPasquale, she is leading classes at o ya in what they call Sake Summer School. Kind of like a summer program at Harvard for those who prefer to study with amazing food and sake in front of them. Her “Sake 101”class focuses on the basics. “The first thing that we try and teach people is to understand the three main types of sake. Sake is made from rice, water, yeast and koji, a mold that is used in the fermentation process.” Nancy explained. “The key

to sake is that the rice is polished to get to the middle of the rice kernels where the starch is. The more you polish the rice the more delicate and floral the flavors are.” There are three basic levels of sake. Junmai (pronounced Joon-my) is the first and the rice is polished or milled to 30 percent, leaving 70 percent of the kernel behind. Next is Kinjo (pronounced “Gin-joe” with a hard

Burgundies, both red and white; and rotating brews from Boston’s Harpoon Brewery, which is just down the street Tim and Nancy’s o ya adventure has roots to their first date back in 1995 at the Sai Café in Chicago’s Lincoln Park. “I remember I had a glass of sake, it was probably warm and not great, but it made a strong impression on me.” The date, and the sake, changed

Syrah, your palate may gravitate to bold flavors and you may prefer the Junmai sakes. If you like Rieslings or Gruners (Veltliner), you may prefer the more delicate and floral hints in a Daiginjoe sake.” While sake may still be a little intimidating for those who are unfamiliar with the various levels of the drink and their pronunciations, Nancy says that is changing for

“G”), which is polished to 50 percent of volume. Finally at the top of the spectrum is Daiginjo (pronounced DIE-Gin-joe). “With sake, the prices go up depending upon the amount of work that goes into the bottle. Daiginjo is the most expensive because it requires the most labor and technique to make,” Nancy points out. Nancy first went to Japan to study under sake guru John Gauntner in 2005, two years before o ya opened. She returned this year to work with the Sake Education Council to achieve her advanced certification. Today, in addition to offering classes at the restaurant in sake appreciation, she runs the front of the house and the beverage program at o ya, which includes, among other treats: a selection of great Alsatian wines;

the course of both of their lives. Just more than a decade later, the pair, now married, opened o ya on a nondescript (some would say hidden) corner near Boston’s Financial District in 2007. It was an instant hit; Frank Bruni of The New York Times called it “America’s Best New Restaurant” in March 2008, and not long after, Cushman was named a Food & Wine Magazine Best New Chef. Since that time, despite an economy that turned a bit fishy, o ya has continued to draw people from all over the world for not just its cuisine, but for its well-tended beverage program. So what kind of sake is right for you? “Well, like wine it comes down to personal taste,” Nancy notes. “But as a general rule, if you like hearty and big red wines like Bordeaux or

many drinkers. “With the changes and introductions of new beers and cocktails and whiskies, people are becoming more sophisticated and adventurous. Sake can be versatile and so good with different kinds of foods that if people experiment a little they generally really like it.” To prove her point, Nancy created a unique pairing for a significant sake brewer who visited Boston from Japan recently. “We got a pepperoni pizza from Regina’s (a Boston institution) and poured a bold Junmai with it,” she laughed. “He loved it.” Kelly J. Hayes lives in the soonto-be-designated appellation of Old Snowmass with his wife, Linda, and a black Lab named Vino. He can be reached at malibukj@aol.com.

FROM ASPEN, WITH LOVE

FOOD MATTERS

TICKET TO PARADISE: YOUR FOOD & WINE WEEKEND PLANNING STARTS HERE THERE ARE TWO types of people in town during the run up to the annual Food & Wine Classic in Aspen: Those who have a golden ticket and those who do not. This have and have-not scenario often comes with a sense of superiority for passholders who have either shelled out the $1,250 each for a full pass, are working at the event or scored AMIEE WHITE a coveted volunteer BEAZLEY position. On the other side of this plate are those who are without said pass and are abhorrently jealous, angry and left with feelings of inadequacy and desperation. Beyond that is the very small, almost nonexistent fraction of Aspenites who claim not to care about Food & Wine at all, and pick up and go camping somewhere far, far, away to avoid all the smiling faces around town. Why are so many people smiling? For many of us, this is the most exciting weekend of the entire year. Not only has the sun and warm weather arrived, Food & Wine is always ripe with the best chefs from around the country, access to food and cooking techniques that we’ve yet to experience, and parties of every sort featuring delicacies from cocktails to pork and mocktails to port. Everywhere during Food & Wine weekend, Aspen is alive and kickin’. In preparation for this year’s event I’ve created a cheat sheet. Actually I’ve prepared two cheat sheets: What to do during Food & Wine for Passholders, and What To Do During Food & Wine for NonPassholders. IF YOU HAVE A PASS • Have a Grand Tasting Plan: Public drunkenness and skinned knees from falling off the curbs on Durant Avenue is hardly OK even for a kid,

20

A S P E N T I M E S W E E K LY

F

Jun e 13- 19 , 2013

so seeing adults stumbling down the Hyman Avenue mall during daylight hours is all the worse. Trust-youme, there is nothing wrong with imbibing, but neither is there any fault in using the spittoon! Have a plan when you go into the Grand Tasting tent. Accept the free Fiji water. Eat the food — it’s delicious and will save you when the intense Aspen sun burns off your otherwise good judgment and you have that last Patron cocktail in the courtyard before being ushered out of the white tents. For me the plan is this: Every year, I go left. I circle the entire tent once, drinking my recommended water. I scope the wines that I have heard a buzz on. I eat a bite or two. Then I head back to what is newsworthy and drink the stuff that is really worth tasting. (Note: All bets are off at the Saturday afternoon tasting; If I see you, chances are I’ve ignored my own good advice.) • Choose Your Seminars Wisely: Everyone has their pants charmed off by the enormous cocktail party that is the Grand Tasting. But the real learning, if you want to walk away with any kind of gained knowledge, is found at the seminars. This year my top seminar picks are “Riesling Report” with the fun and gregarious Paul Greico, owner of Terroir Wine Bar in NYC. He’s a great presenter and Riesling is my wine of summer, so it’s a homerun. On the food end, I am such a sucker for shellfish that “Oysters 10 Ways” with Jose

Andreas is a close winner over “Global Vegetarian” with Susan Feniger, because vegetarian is the new pork, haven’t you heard? IF YOU DON’T HAVE A PASS • My Goodness, Stop the Whining: If you look hard enough, you can find someone that is willing to give up their pass on Sunday morning for the only tasting left on Father’s Day. Start some good vibes now, be nice, look both ways before you cross in front of my car on Main Street and maybe you’ll end up with a little something special by the time 10 a.m. rolls around on the 17th. • Cochon! Cochon! While vegetarianism might be the new pork, pork still makes us sometimesvegetarians happy, and there is no more good lookin’ pork in one room than at Grand Cochon. The King

or Queen of Porc is crowned at this annual event at the Hotel Jerome. Held on Sunday afternoon, it is a fabulous event that attracts the same food enthusiasts as Food & Wine— and many more — who are happy to try food from the best up-andcoming chefs and sip on craft beer and spirits from around the country. • Hit the After-Party Circuit: From magazine fetes to special a la carte Food & Wine events, there are so many parties to choose from that most locals will be able to enjoy themselves without ever having gone near Wagner Park. Sure, you might need an invitation to get in, but we are a tiny town of 5,000 residents. Surely you know someone? If not, or if you just don’t care, perhaps camping alone during this weekend — away from town and all those damn happy people — is a better choice.

THIS PAGE: Cooking seminars (left) should be on passholders’ agendas, and specialty events like the Last Bite Dessert Bash should be on non-passholders’ agendas at the Food & Wine Classic. OPPOSITE PAGE: While wine seminars (top) are a must-do for passholders; nonpassholders can participate in the charity 5K run alongside celebrity chefs (left), as well as Reserve Wine Tastings.

BEYOND THE TENT THERE ARE SOME GREAT events beyond the Grand Tastings and seminars, and tickets are available for purchase by the general public. “A La Carte” Food & Wine Classic events can be purchased separately by calling 1-877-900-WINE: • Reserve Wine Tastings: These feature rare wines and expert winemakers and sommeliers from around the world. Moderated and hosted by Food & Wine’s wine editor Ray Isle, the Reserve Tastings at the Food& Wine Classic in Aspen offer guests a once-in-a-lifetime wine tasting experience. • Last Bite Dessert Bash: Hosted by Food & Wine’s own Gail Simmons, judge of Bravo’s Top Chef, and featuring Johnny Iuzzini, this showstopping party will be a celebration of decadence, featuring a never-ending spread of desserts, including buttercream-frosted cakes, pastries, meringues, parfaits, petit fours, tarts and galettes. • 5K Charity Run: Run with celebrity chefs and wine experts through the city streets and parks of Aspen, while raising money for Wholesome Wave at the Celebrity Chef 5K Charity Run. I ran this last year and it was amazing to witness how many people that drink for a living — like Bobby Stuckey and Richard Betts — are also hard-core athletes. It’s also fun to watch lots of New Yorkers suck wind at altitude and them trying to shake it off, like it doesn’t really bother them. Take that center-of-thefood-world inhabitants!

Shake and strain over ice and top with soda water.

WATERMELON RICKEY WELL, MY RECENT BREAK from drinking was nice, but it just didn’t fit my personality. So while I have taken it down about 20 notches, I am back in the game and was enticed by the Watermelon Rickey that they are making at the Hotel Jerome. Greg whipped it up for me, and I was in heaven. It’s also an easy drink for me to make at home for friends. I highly recommend it for summer sipping. Gunilla Asher is publisher of The Aspen Times. WHAT DO YOU PAIR WITH 1,200 POUNDS OF PORK? Grand Cochon will have it covered with ample samplings of wines from Simi Winery, Jordan Winery, Robert Kacher Selections, Sandhi Wines, Wind Gap Wines, McCrea Cellars and Arcadia Winery. You can also belly up to the “Perfect Manhattan” Bourbon Bar, where classic Manhattans will be shaken to order with Eagle Rare, High West Whiskey, Breckenridge Bourbon Whiskey, Buffalo Trace, Hudson Whiskey, or Four Roses Bourbon and served up in Mason jars with Luxardo cherries. The Chupito Bar will offer a taste of cuatro mescals — Mezcales de Leyenda, Pierde Almas, Ilegal and Fidencio. If that’s not enough, you can seek out Anchor Brewing, Crispin Ciders (the official cider of Cochon 555) and Fredrick Wildman’s Pig’s Nose Scotch. To top things off, Josh Goldman, the winner of the Breckenridge Bourbon “Punch Kings” cocktail competition, presented by Breckenridge Distillery and held in Denver last month, will be pouring craft libations as well. (See story on page 31)

pig’s head curry. Pork liver parfait. Ham hock consommé. Bacon oyster shooters. Porked Alaska. Bite for bite, tasty dishes like these are a pork-lover’s dream. BUT TO THE 10 valiant chefs A Little Piggy competing for the title “King or Queen of Porc” in this Sunday’s Grand Cochon Backstory at Hotel Jerome, they’re fighting words. “It’s a notch on your belt to win, a real career-maker,” says last year’s “King of Porc,” Jason Vincent, executive chef of Nightwood in Chicago. “We were competing against really well-known chefs. My sous chef and I brainstormed and came up with 25 or 30 dishes. We put our heads down and won.” This year, Vincent was named one of Food & Wine magazine’s 10 Best New Chefs, an honor for which he credits, in part, the notoriety he received post-Cochon.

A PIG-ALICIOUS EVENT in its own right, Grand Cochon is the culmination of the fifth annual Cochon 555 culinary tour, a series of 10 competitions that took place over the past year, in cities from San Francisco to New York, with the goal of educating consumers about heritage breed pigs. “People were seeing breed names and farm names on menus, but they were confused about what it meant and why (those dishes) were more expensive,” explains Brady Lowe, of Atlanta-based

Taste Network, creator of the Cochon concept. “Cochon 555 provides the missing information by educating people about breeds and promoting both chefs and family farms.” Each competition featured five top U.S. chefs, five pigs and five winemakers. (Cochon 555, get it?). Chefs, selected based on their support of local agriculture and heritage pigs, were challenged to create dishes utilizing an entire pig, from snout to tail. Pigs were sourced from ranches devoted to sustaining various heritage breeds. In addition to earning the title of regional “Prince or Princess of Porc,” and invited to Aspen to compete in Grand Cochon, the winning chefs of each Cochon 555 event got a boost of recognition from their peers and for their restaurants. “The national chef community watches each year to follow

PIGGED OUT? New to Grand Cochon this year will be a special TarTare Bar, presented by Simi Winery and featuring chefs Jamie Bissonnette of Capa and TORO in Boston, Phil Tanaka of Matsuhisa Aspen and Brian Busker of Matsuhisa Vail. Piles of Rappahannock River Oysters will be freshly shucked as well. And the infamous Cheese Bar returns, with selections from Cypress Grove Chevre, Vermont Butter & Cheese and Spring Brook Farm, plus an exclusive tasting of blues from Rogue Creamery. For anyone interested in the behind-thescenes process of “snout to tail” preparation, there will also be a whole pig butcher demonstration presented by Miyabi/Zwilling USA and featuring chef Bill Greenwood of Beano’s Cabin in Beaver Creek. The butchered meat will be raffled off to benefit the students of Johnson & Wales.

PIGS & THEIR PRODUCERS For the Grand Cochon competition, each chef is provided with a whole heritage pig, bred for flavor on grass and grain and sourced from farms around the country. The idea? To use as many piggy parts in their dishes as they possibly can and let nothing go to waste. Here are some of the representing pigs:

BERKSHIRE Jubilee Family Farm, ReRide Ranch, Vermont Heritage Grazers

Known as “Kurobuta” in Japan, Berkshire is the most popular of the heritage breeds and a favorite with chefs because of its distinctive marbling. The meat is sweet and creamy with hints of nuttiness.

LARGE BLACK Spring House Farm

Perfected by farmers for more than a century, Large Black are bred for taste and hardiness. Due to the breed’s short muscle fibers, the lean, micro-marbled meat is extra tender and moist, and has a distinct taste.

ASPEN

RED WATTLE Brambly Farms

Originating from Caledonia, this extremely rare breed gets its name from its red color and the fleshy skin that hangs under its jowls. Lean and juicy with a rich, beef-like taste and texture, it’s prized for tender meat and splendid hams.

OSSABAW Autumn Olive Farms

Originating from Spain, this feral breed of extremely rare, small-range pigs is popular with chefs for its high percentage of healthy mono-unsaturated fat, which makes for great charcuterie.

the competition and winner,” relates Lowe. “Their credibility gets nudged up a notch.” Since its inception, the Cochon 555 tour has donated more than $300,000 to charities and directly paid more than $520,000 to farmers across the country. “Cochon has played a large role in the national education of heritage breed pigs and the importance of supporting local food,” says Lowe. “One whole pig at a time.”

Pig and Circumstance

ON SUNDAY, Hotel Jerome, which has recently been spiffed up in a major way, will become pig central. With the bulk of the prep being done back in the hotel’s kitchen, each of the 10 competing chefs will stage a themed presentation station in the ballroom, or on the terrace. Each will present three dishes, first to a group of 20 professional judges, and then to the several hundred festive pork fans clamoring for a taste. “The chefs bring an amazing level of energy to the event,” says Lowe. “Every single bite is the best bite they can produce.” Judges this year will include “Bizarre Foods” chef Andrew Zimmern, celebrated chef Claudine Pepin, 2012 “King of Porc” Jason Vincent, 2011 “Queen of Porc” Duskie Estes, cheese expert Laura Werlin, sake sommelier

Drinks are poured, pork dishes are served and whole pigs are butchered at the Grand Cochon, which takes place Sunday of Food & Wine weekend at Hotel Jerome.

Nancy Cushman and James Beard Award-winning chef Tim Cushman of o ya in Boston, regional manager Todd Clark of Matsuhisa Aspen/Vail, and executive chef Sheamus Feeley of The White House Tavern in Aspen. Once everyone has, well, porked out is the only way to put it, judges and attendees will vote for a winner, basing their call on utilization of the pig, presentation of the dishes and overall best flavor. Votes will be tallied and the official 2013 “King or Queen of Porc” will be crowned with much to-do and toasted by all with glasses of newly bottled Cochon Rosé. Two years ago, husband-wife team John Stewart and Duskie Estes, chefs and co-owners of Zazu Restaurant & Farm, and Black Pig Meat Co., in Santa Rosa, Calif., earned a pair of crowns. “It was a total shock,” recalls Estes, the only “Queen of Porc” to date. “It was a rockin’ event and a good cause. We were a small team that included our plumber and an 18-year-old high school kid we call our ‘bacon bitch.’ Everyone else was in chef coats and we were in our ‘Black Pig’ T-shirts. We thought no way we’d ever win. But we had a great Red Wattle pig, our food was good and people liked it. That’s what mattered.” Estes’ and Stewart’s new restaurant, Zazu Kitchen & Farm, will open this summer in Sebastopol, Calif.

PACKING A POWERFUL PUNCH As if Grand Cochon didn’t already pack enough punch, this year Brady Lowe, the sweetbreads (uh, that would be brains) behind Cochon unveiled a new program to honor some of his favorite people: Bartenders. “With 50 events around the country celebrating heritage breed pigs under our belts, we wanted to create an event within Cochon 555 to celebrate the barkeeps that create the damn fine drinks that capture the flavor of Cochon,” said Lowe. To do so he launched Punch Kings, a competition for bartenders to craft the very best in Bourbon Punch. Earlier this month, Josh Goldman, of Los Angeles’ The Soigné Group, came to Denver, where he wowed the crowd at ACE in the Highlands neighborhood with a punch that included Breckenridge Bourbon, Lustau East Indian Sherry, Grilled Peach Nectar, fresh blackberries…you get the picture. This was a punch worthy of a crown. For his creativity — and tasty punch — he was named Punch King, which gave him the opportunity to come to Aspen where he will be pouring drinks and making cocktails Sunday at the Grand Cochon finals at Hotel Jerome. Punch Kings played out across the nation at the various Cochon 555 regional events. At the 10 events, bartenders were invited to a competition that gave each one 30 minutes, a large punch bowl and a bottle of Breckenridge Bourbon. The rest was up to them. Winners of the regionals were invited to ACE for the finals and Josh took home the prize — a pair of specialty boxing gloves along with the invitation to Aspen. Lowe conceived the event, but it was Bryan Nolt, founder of the Breckenridge Distillery, who embraced the concept. Bourbon of the year winner at the 2012 International Whisky Competition, Breckenridge Bourbon will flow in the ballroom at Grand Cochon, as well as be the base for the punch served.

ARTS&ENTERTAINMENT

MUSIC/ART/FILM/LITERATURE

by STEWART OKSENHORN

ARTISTIC DIRECTOR: NANCY WILHELMS AT ANDERSON RANCH IN THE EARLY ’70S, Nancy Wilhelms came to the Roaring Fork Valley to attend the Center of the Eye, which drew internationally prominent photographers to its workshops. Wilhelms’ existence in Aspen that summer wasn’t much different from college life at CU, Boulder, from which she had just graduated. She lived in a house up Independence Pass with nine other photographers and a vegetarian chef. Classes, held in the basement of the Hotel Jerome, stimulated her creativity. “I loved it, loved the whole workshop environment,” she said. “We had the best, most innovative photographers coming through. It was all about dialog, talking about ideas, being playful about art and being serious about art. Being exposed to new ways of thinking and being adventurous about the outdoors. I left knowing I could always come back to Aspen.” As it happened, Wilhelms’ time at the Center of the Eye was short-lived, just that one summer. And it would be decades before she returned to the Aspen area. Wilhelms now finds herself back in the Roaring Fork Valley, but she is no longer a student. In May, after serving as director of marketing and communications for the Anderson Ranch Arts Center in Snowmass Village for nearly two years, Wilhelms was named executive director of the 47-year-old organization. She replaces Barbara Bloemink, who left the director’s position after a three-year tenure. Wilhelms brings with her an extensive resume on the business side. She headed employee communications for the massive Harnischfeger Industries, based in her hometown of Milwaukee. In Las Vegas, she handled marketing for a hotel and casino chain, and later became press secretary for the governor of Nevada. In 1982, she founded a Fort Collins-based marketing and communications company that would grow to employ 13 people and represent clients including Hewlett-Packard and the Colorado Lottery. (She has

32

sold the company, now known as WestGroup One.) But Wilhelms has kept close ties to the arts. Early in her working life, she quit her job at an ad agency. Instead of clocking in to a Milwaukee office, she traveled the rodeo circuit around the West, doing freelance photography (while also doing contract work for R.J. Reynolds). “I needed to exercise my photography gene,” she said. While working for Harnischfeger, she gave herself the assignment of doing the photography for the company’s weekly newsletter. While living on the Front Range, she served on the board of the Power Plant Visual Arts Center. A few years ago, Wilhelms attended a seminar on personal creativity. If the purpose of the event was to engage people with their artistic outlets, it did its job. “I realized I’d been working with technical companies, but that I really loved art,” said Wilhelms, who has a wide-eyed enthusiasm more associated with an artist than a CEO. “I came home to Basalt” — where her husband was working on a development project in Rifle — “and here was an ad in The Aspen Times for director of marketing at Anderson Ranch. I had spent decades running my own company, and now here I was applying for a job just because it sang to me. I was getting back in touch with who I really am.” In her time as the Ranch’s marketing director, Wilhelms displayed an obvious affection for the institution. “An old ranch house with aspen trees outside — that’s pretty hard to beat,” she said. “And the people — the staff here is a group of creative, dedicated individuals — most of whom are artists. And the job we do — we enrich people’s lives.” Her own life is being enriched as well. Wilhelms has shown her rodeo photographs in exhibitions by Ranch staff members, and last summer she took a painting-on-ceramics workshop, following the Anderson Ranch tradition of artists stepping out of their usual modes of operation. “I wanted to get away from computers,” she said of the workshop.

Jun e 13- 19 , 2013

Nancy Wilhelms is the new executive director of the Anderson Ranch Arts Center in Snowmass Village.

“I wanted to use another side of the brain. That’s what the Ranch offers to so many people. I’ll walk into a furniture design workshop, see someone with a beautiful piece, and ask them what they do for a living. This one guy said he was a gynecologist. The workshop was his treat.” Probably the most successful director of Anderson Ranch in recent years was another photographerturned-executive, Jim Baker, whose tenure lasted 11 years, concluding in 2006. And Anderson Ranch was founded by artists, including the late Paul Soldner, an internationally prominent ceramist. Wilhelms believes that having a background as a working artist is an asset for the director’s position. “It adds empathy and understanding. You understand the student experience,” she said. But Wilhelms understands that she’ll be drawing on skills other than photography in her new job. Fundraising, a big part of the job, is not unlike launching a start-up company; besides, she looks forward to sharpening her fundraising skills. “It means meeting people, making new contacts, I embrace all those things,” she said. In managing a staff, she thinks that having come from within the staff gives her a leg up; her fellow employees seem thrilled that the board didn’t search outside the Ranch grounds for its new director.

“That’s the comment I continue to receive — how great that Anderson Ranch looked inside and found the person they wanted,” Wilhelms said. “I think I had the perfect mix of experience — majored in fine arts, went to Rhode Island School of Design and CU, Boulder, the good qualifications in management.” “As a board, when you find an insider who fits so well it’s a home run,” said Ann Korologos, the Ranch board chairman and the owner of a gallery in Basalt, in a written statement. “She has vision yet provides continuity for our programs. She was a clear choice.” In certain ways, Wilhelms believes the new job is easy. The summer workshops, the heart of the Ranch’s work, were already set for the year. The organization, she says, is in solid shape financially. The Featured Artist Lecture Series, instituted by Bloemink, brings in big-name artists and has helped raise the Ranch’s profile. Wilhelms’ focus for now is on making sure the summer goes according to plan; beyond that, there is the Ranch’s 50th anniversary in 2016 to ponder, and a possible capital campaign to improve the facilities. Not that Wilhelms can find much room for improvement. From her new perspective, she likes what she sees. “I think the Ranch is perfect,” she said. “My job is to make it more perfect.”

MORE STUDIO TOUR IT WAS THE 10th annual Roaring Fork Studio Tour, where people spent all day touring the studios of artists throughout the valley. The day ended with a gala celebration at the Carbondale Community School, because the tour is a fundraiser for the school. It truly is amazing how many MARY artists live in this ESHBAUGH valley! HAYES The June-July issue of Santa Fean magazine includes an article with several photos of chef Charles Dale in his new restaurant called Bouche Bistro in Santa Fe. Although Santa Feans love their fiery chile dishes, they have been flocking to Bouche Bistro for Charles’ fantastic French fare. We all remember Charles from his Aspen restaurants — Renaissance and Rustique — and his cooking demonstrations at the Food & Wine Classic every June. Charles most recently put Terra Restaurant at Encantado outside Santa Fe on the map. Undercurrent...The snow is off of Bell Mountain so I guess it’s safe to start gardening. BOOK REVIEW

‘100 TRICKS EVERY BOY CAN DO: HOW MY BROTHER DISAPPEARED’ ONE OF THE happy consequences of reading Kim Stafford is that he makes you want to become a better person. The Portland-based author of 12 books of poetry and prose writes with a quiet gentleness, intimacy and kindness. “100 Tricks Every Boy Can Do: How My Brother Disappeared” is a personal and introspective memoir chronicling Stafford’s relationship with his older brother, Bret, who took his own life at the age of 40, with very little warning. In 82 chapters, some only a few paragraphs in length — “sippings,” as Stafford has called them elsewhere — the writer searches his “tunnel of memory” for clues to the painful mystery that still haunts him. “For the work of memoir,” Stafford writes, “is to put personal memory in a form that may serve the memories of others.” For Stafford, by ELIZABETH C. GORSKI | edited by WILL SHORTZ

also has a history of offering wisdom with Zen-like simplicity and “100 Tricks” does not disappoint: “Happiness is born in struggle and even in failure,” and “Each story will seek the right listener.” Ultimately, many of Stafford’s questions remain unanswerable. Though “100 Tricks” centers on his brother’s suicide, it is neither glum nor depressing. Instead, it’s a heartwarming and touching investigation into family and memory — a book about love and living well above all else.

most memories are consoling, and “100 Tricks” shows us a man — who just happens to be a gifted writer — looking back, struggling to make sense of tragedy. “I have written in this book what the philosopher José Ortega y Gassett called “salvations” — short narratives that seek to apprehend and save essential stories and discoveries: a moment, a fleeting glimpse, any episodic evidence toward understanding.” Stafford’s economic and deft use of language is one of the book’s strengths. This comes as no surprise: Like his famous father, former U.S. Poet Laureate William Stafford, Kim Stafford is first and foremost a poet. “My soul has pockets,” the younger Stafford writes, “and into these pockets gather the places and moments that mutter my brother’s life.” Stafford
