POPULAR MUSIC THE JAS CAFÉ debuts
a new venue with a local favorite on stage this weekend, hosting four performances by Latin jazz legend Poncho Sanchez in the Cooking School of Aspen on Friday, July 22 and Saturday, July 23. Sanchez plays shows that typically offer a healthy dose of Latin jazz and dance-friendly salsa music along with the self-styled Latin soul that’s been one of Sanchez’s signatures for decades. A Poncho Sanchez set might include his take on soul classics by the likes of James Brown, Otis Redding and Wilson Pickett. “I try to mix all of those things together, and usually by the end of the set people are having a pretty good time and looking for a dance floor somewhere,” Sanchez told the Aspen Times last year. The foundations of Sanchez’s sound can be found in Los Angeles in the 1960s, where Latin jazz mixed easily with the Motown and soul sounds of the day. Because the Cooking School has a full kitchen, Jazz Aspen is offering a more robust dining menu during the early shows with full three-course options on the menu. Seatings for the dinner shows are at 6 p.m. and cost $100 (dinner included). The 9:15 p.m. performance is $45 and doesn’t include dinner. Filmmakers Bob Hercules and Rita Coburn-Whack have combined Angelou’s words with archival photographs and videos to craft an indelible portrait in “Maya Angelou and Still I Rise,” chronicling her life from the Depression-era south to the civil rights movement to speaking at the inauguration of President Bill Clinton. The film screens Monday, July 25 at Paepcke Auditorium as part of the Aspen Institute and Aspen Film’s New Views film series. Coburn-Whack and Hercules will take part in a post-screening discussion. 1893 EL JEBEL
ON MAY 11, 1893, the Aspen Evening Chronicle presented an optimistic outlook on the future of agriculture in the midvalley. According to the paper, “H.B. Gillespie, the proprietor of El Jebel ranch, was in the city yesterday and spoke very encouragingly of the prospects for successful fruit culture in the Roaring Fork Valley. Mr. Gillespie has such confidence in this industry that he will soon have an orchard of 160 acres in apples and pears. Mr. Gillespie says that the pears produced on his ranch last year were the best he has ever seen anywhere.” The photograph above shows Gillespie’s ranch, which he named El Jebel, circa 1900. This image was taken from what is now Upper Cattle Creek Road in El Jebel, heading towards Missouri Heights, looking up the valley. WE BOUGHT 10 POUNDS OF ICE and dumped it in, the cubes overflowing, bouncing off beverage cans and pinging on cement where they puddled quickly in the summer sun. The occasion was (very simply) a July weekend day, and the conveyance for our drinks was a zipper-equipped cube, a soft-sidevessel, rugged and light, made from a material similar to what’s used on a whitewater raft. The YETI Hopper Flip 12 is a new addition coming next month from the Texas-based brand. It adds a day-use design to the company’s line of tough but so-called “soft” coolers, which are made to be portable and lightweight. It measures about 12.5 x 10 x 11.5 inches and has solid but flexible walls. Thermal regulation comes
from slabs of insulation up to an inch thick. An EVA foam bottom gives it a sturdy base. The cooler opens wide, a bigtooth zipper offering full access to what’s inside. A rubbery interior is an anti-microbial, food-grade lining. With 3.2 gallons of capacity, it’s large enough to stash a day’s worth of sustenance for a family, or, depending on how much ice you add, up to a dozen beverage cans. Instead of stitching, the cooler has RF-welded seams (stands for radio frequency). This effectively melds the cooler parts together and aids in both durability and the marketed leak-proof characteristics. A beefy zipper completes the package, giving it an airtight and waterproof seal, pulling closed with a tactile tick-tick and docking at one end.
Like most products from the brand, the Hopper coolers are not inexpensive, at $279, and the company told me the fancy zipper is a big part of that cost. The zip works as both a part of the insulating buffer system, as well as in keeping the liquid contents inside (I saw nary a drip come through, even when tipping over a fully melted cooler of used-to-be ice). After a field test, where the Hopper was easy to tote with a shoulder strap, I loaded the boxy cooler with ice and beverages. It was a hot night, and once zipped, I stashed the cooler on a shelf. After 24 hours I took a peek. Some water was on the bottom, but there was still copious ice and cold cans to grab. YETI does not give exact iceretention figures because so many
variables come into play, from temperature to ice quantity added. But with the Hopper Flip the company states the cooler is “tested to ensure ice will last for days” in the proper conditions. Overall, I was impressed with the cooler, both in function and form. In addition to handles and the removable shoulder strap, the company includes MOLLEcompatible webbing to let you attach accessories or gear. Put the ice inside and head outdoors. Or strap this box-shape cooler in the back of a truck. It’s an investment, but it’s built to last. THE OTHER TUSCANY: MAREMMA ON THE SEA MENTION TUSCANY, and visions of the quaint hilltop towns, the Black Rooster that signifies the classic wines of Chianti, and perhaps Montalcino, the quintessential wine town, come to mind. Here, ancient vineyards are planted almost exclusively to the sangiovese (the grape name translates to “blood of Jove”) that has long KELLY J. been the identity of HAYES this extraordinarily beautiful wine region. But a couple of hours drive to the west, in Maremma, where the coastal region of Tuscany borders the Mediterranean Sea, the wines are markedly different. Maremma is home to a relatively new wave of wines, many produced by old wave Italian families. They’re thriving under cloudless skies where the sun shines, well, nearly all the time. In Maremma there is sangiovese, but the focus is on the “international” varieties. That is the word the winemakers in the region use to signify the Bordeaux grapes — cabernet sauvignon, merlot and cabernet franc — that thrive in the sunshine and soils of Maremma. It is here that the famed “Super Tuscan” wines, blends of international grapes that flaunted the then-standing Italian wine laws, were originally conceived.
GAJA IN MAREMMA I visited Ca’Marcanda, the Maremma outpost of Piedmonte’s Angelo Gaja, whose family has been making wines in Piedmonte since the 1850s and is revered as one of the Italy’s most renowned and meticulous producers. In 1996, Gaja came to Bolgheri and began a search for the perfect plot to place a new winery. Doing his due diligence, Gaja went to the regional hall in Bolgheri, where he was shown a map that organized the soils of the region based on color. There were splotches of yellow and green and blue. One yellow portion on the map was overlaid on the land that hosted the vineyards of Sassicaia, the original Maremma producer

of international varietals. “The yellow stain on the map. That is what I want,” Gaja said. With that he set out to find land that met those specifications and complete the arduous process of purchasing nearly 300 acres to try his hand at the new varieties. Eighteen meetings followed before he was able to purchase the property he dubbed Ca’Marcanda, or “house of endless negotiations.” Gaja planted 150 acres with cabernet sauvignon, merlot, cabernet franc and syrah vines. He then built a winery that set an example for those who would follow to respect the region and the land. Other than a stone façade, which stands behind a row of olive trees (Gaja does not make olive oil, as he wants total focus on his wines, and gives the fruit of the trees to others), the winery is invisible. That is because Piedmont-based architect Giovanni Po submerged the entire structure under the earth. It is a brilliantly efficient and beautiful winery that allows the harvest to flow with gravity from the crush pad into the steel fermentation tanks that are set below the earth. There are various sizes and sources of wood for aging the wines and a recent experiment sees a few large concrete tanks as well. Other than select pieces of art, all of which compliment the design perfectly, the winery is spare, clean and structured.
AS FOR THE WINES… Only four wines are made at Ca’Marcanda. A white, monikered, appropriately VistaMare, or “sea-view,” is a rich, fish-friendly blend of vermentino and viognier. The three red wines, Promis, Magari and the flagship wine Ca’Marcanda, are all led by merlot and feature varying percentages of the other three international varieties and a small bit of sangiovese also is in the Promis. For me, the revelation is the Ca’Marcanda. Sourced from a vineyard above the winery, where the soils are marked by white rock that is an indication of the mineral and iron rich earth that hosts the vines, this wine is peppery, spicy
and rich. It does not taste like a Bordeaux or a Napa wine but has the sensibility and the flavors of this region of Maremma. I see that Gaja has a vision that, in generations to come, the Maremma will produce the age-worthy wines that he came for.
BOLGHERI Bolgheri, a village close to Ca’Marcanda, has become a wine destination for producers and dreamers from other regions and is now itself a legendary wine town, surrounded by Sassicaia, Ornellaia, Le Macchiole and a growing number of newcomers. These blends are magnificent and the region is not dissimilar to Napa Valley of California, another region that is dedicated to and predicated on, the production of Cabernet Sauvignon. Both are influenced by strong coastal winds. In Maremma, the breezes blow off of the Med all day long and are a distinguishing feature. And, like Napa, the region is worthy of a journey. Kelly J. IF YOU GO... A trip to Tuscany can begin and end in the beautiful cities of Florence and Venice. But do yourself a favor, get a map, preferably a really detailed Michelin map, a small but spritely car, and head west to the coast. The wines, the cuisine, the views are all sublime, and the best part is you will be off the beaten tourist track. Towns to look for include Bolgheri and Suveretto. And head to the enclaves and natural parks that are by the seaside. For accommodations, I recommend scouring the agriturismos, AirB&B, Homes Away and VRBO, and booking something simple in the confines of the hill towns or on the coast. It will be belisimo!

UNDER THE INFLUENCE 2015 CA’MARCANDA VISTA MARE Vermentino is a grape that sees its best days in its youth, when it is fresh, succulent and young. The result of these circumstances is that if blended they can provide a perfect foundation for a marriage of unbridled youth and maturity. Such is the case in this beautiful wine from Gaja. The notes are of fresh citrus fruits and peaches. The mouth is full and round and the finish lingers. Sip it, close your eyes and feel the breezes of the sea.

SUMMER TOMATOES SHINE IN SUPER-SIMPLE GAZPACHO “WAIT, HOW MUCH is the soup again?” I was standing at the counter of a small, family-owned deli in Aspen, and the cashier had just asked me to hand over $22.50 for soup and a sandwich. I knew that the Italian sub cost about ten bucks plus tax, but the soup, too? For lunch? No wonder workingclass locals are still pining over McDonald’s closing. AMANDA I pushed the gazpacho RAE — pre-packaged in a 16-ounce deli container that wasn’t even filled to the top, I might add — back across the counter and told the girl I’d stick with the sandwich. “That’s pretty steep for raw tomato soup,” I said, feeling compelled to offer up something in self-defense. The guy building my sandwich nodded. I mean, really? Gazpacho doesn’t require simmering for hours over a hot stove. All that’s needed to develop complex, garlicky flavors is a handful of raw vegetables and herbs, which are whizzed together in a blender and left to refrigerate overnight. Some versions call for a slice of stale bread or emulsification to a creamy consistency with olive oil, but other than that, gazpacho means minimal effort for maximum result. Gazpacho also takes advantage of summer produce at its peak. When chef José Andrés prepared his wife’s simple recipe at the Food & Wine Classic in Aspen a few years ago, he called it “the best salad in the history of mankind.”
Back in the market, the atmosphere turned awkward. Not only did I decline the $10 cup of soup, but I was shamed for it. “All of the prices are on the menu,” I heard a lady — presumably a manager —slicing prosciutto grumble. I couldn’t quite make out what else she said, but I got the gist. She was griping in response to my gripe: Why would gazpacho be priced on par with far more laborintensive chicken soup or white bean chili? This is a fine example of how contradictory dining out in this town can be: The same folks who whine about exorbitant, unfair prices in Aspen might be the same people serving overpriced, underwhelming dishes to the masses. I mean, really: Is the deli clerk OK with shelling out $22.50 on her lunch break? I wonder. I paid for my lunch and made a fast exit, more than mildly annoyed. Cold soups are popular on summer menus elsewhere in town. Spring Café serves gazpacho for $6/cup or $8/bowl; included in the price of admission is a relaxing atmosphere in which to sit. Ditto with the cool cantaloupe soup on special at La Creperie du Village: new executive chef Sebastien Chamaret’s pale orange fruit purée ($12) is velvety smooth, cut with a ribbon of acidic, sweet balsamic vinegar swirled into the bottom of the bowl. Slurped between sips of rosé beneath an umbrella on the shaded patio, it’s the ultimate pastel-colored liquid lunch. Similarly, I’ll gladly fork over $12 for chilled pea soup with buttermilk, mint, and toasted pumpernickel croutons at element 47 at The Little Nell — and I’m not even a big fan
MAKE IT of peas! Chef Matt Zubrod’s creamy green creation is a dream to taste while sitting on the hotel’s wellappointed poolside patio with living wall garden art. Determined to make gazpacho at home after that disheartening encounter at the deli, I found a recipe for creamy Gazpacho Andaluz — a signature of the Andalusia region of Spain, thought to boast ancient origins in the Roman Empire — via Cook’s Illustrated. The recipe requires a few additional steps — salting the vegetables and reserving half, cut in small dice, to add texture to the final product; soaking stale bread in the drained vegetable juice; pressing the puréed portion through a fine-mesh sieve for silky texture — but it left me with enough gazpacho (about 6 cups) to eat every night for almost a week and cost less than 10 bucks total. Even with the extra steps, I was out of the kitchen after approximately 25 minutes of hands-on prep. Chef Andrés’s super-easy version, at right, eschews bread (not to mention extra steps) but turns creamy thanks to olive oil. I combine elements from both recipes to create my own version; add a few dashes of Tabasco if you like it spicy. Best of all, like most cold soup, it only gets better the longer it chills.
EASY GAZPACHO Adapted from “Tapas: A Taste of Spain in America” by José Andrés with Richard Wolffe (Clarkson Potter, 2005). For extra texture, blend only half of the vegetables to start; dice remaining vegetables and add them to the puréed soup in Step 3. SERVES 4-6 1 small cucumber, peeled and chopped 1 green bell pepper, seeded and chopped 3 pounds ripe heirloom tomatoes, chopped 2 garlic cloves 2 Tablespoons sherry vinegar, more if desired ½ cup extra-virgin olive oil Sea salt French bread, warmed, for serving 1. Combine first six ingredients plus 2 cups water in a food processor or blender. 2. Purée until ingredients are well blended (mixture will be pink). Depending on the strength of your blender, this may need to be done in batches. 3. Pour gazpacho through a medium-hole strainer into a pitcher, and refrigerate an hour (overnight preferably). 4. Season with salt, and serve

Age makes no difference when it comes to friendships among those who embrace every moment.
FOREVER YOUNG
ADVENTURES FOR ALL OF THE YEARS YOUTH IS WASTED on the young. Or, at least, that’s how the saying goes. But in my time in Aspen, I have found that one doesn’t have to be young to use youth. People of all ages sport it well. All you really need is an idea, some enthusiasm to back it up and a solid group of friends to take it on. That’s always been my experience here. When it comes to considering BARBARA age, think of it as PLATTS nothing more than a number. In my post-college life in the Roaring Fork Valley, I’ve had the privilege to get to know people of all ages. I have friends from 14 years of age to 74. Some of my very best buds here are almost double my age. I’m not entirely sure how these friendships came to fruition. How when I plan to throw a party, go on an adventure or hit the slopes on a powder day, the first people I think to call are not those that would be considered “millennials.” They are a little further up on the generation alphabet. However these friendships became so strong over time, I’m certainly glad they did. They’re the best camping (and drinking) buddies I know. They always have the most pristine gear and are
always down for the next adventure. Last weekend, that adventure involved two rafts and four paddleboards. We set out on the Colorado River in the Ruby Horsethief Canyon stretch that, essentially, spans from Fruita, Colorado to somewhere west of the Utah border. There are camp spots throughout the canyon to post up at for the night. We chose a campground a bit past halfway
called Mee 2. There are four or five “Mee’s” total, plus several other gorgeous campgrounds. If you’ve never been on this part of the river, I highly recommend it. Oh, and make sure to bring sunscreen…and beer… and water helps too. The two-day trip was one for the books. There were nine of us total that ranged in age from our 20s to 50s and we floated close to 25 miles. Whether it came to cliff
jumping, drinking the lion’s share of the whiskey or being the last to fall asleep in the camping circle, us younglings got shown up almost every time. We finished the trip Sunday evening, entirely exhausted from the nearly 36-hour trip. As we drove home, I thought about the crew we had out there on the river. The weekend experience only drove home my theory about age and how little it matters in the scheme of things. My “older” friends have not just shared fun times with me. They’ve taught me a valuable lesson: Life is what you make of it. It’s better to embrace experiences and get out to try new things, whether that be taking the plunge into the river from a high point, strapping a lounge chair to the paddleboard and going down some rapids or floating down the river with nothing but a pink noodle water toy. It’s important to know what’s good in life and to live our time here to the fullest. It’s not how long you’ve lived; it’s how you use those years. That’s what counts. CATALINA ISLAND: CACTUS, BUFFALO, GOLF CARTS AND THE BEACH CATALINA ISLAND is just a ferry ride from Long Beach and other points on the coast of Southern California, but it feels like it’s a world away. Go for a swim, try a buffalo milk cocktail and maybe even take a tour to catch a glimpse of real buffalo in the island’s scrubby hills. Rent a golf cart to tool around in and visit the botanical garden. Whether you’re there for a day, an overnight or longer, there’s plenty to do. Or just lie on the beach, enjoy the scenery and do nothing at all.
ISLAND HISTORY Formally called Santa Catalina, the island was developed in the early 20th century as a resort by William Wrigley Jr., who made his fortune in Wrigley chewing gum and owned the Chicago Cubs baseball team. He even brought the players to Catalina for spring training for a number of years. The island also was used by Hollywood as a filming location. The buffalo that roam the island today are descended from animals brought to the island for a movie and left to run wild. One of the island’s biggest landmarks, the Catalina Casino, a round, white art deco building, was built in 1929 and hosted performers from the Big Band era, drawing thousands of guests to dance the night away in its ballroom. Today it’s the site of a movie theater. The Catalina Island Conservancy now owns 88 percent of the island, including more than 62 miles of undeveloped coastline.
THINGS TO DO Get off the ferry and everything you need for a fun day is right in front of you in the compact retail district: the beach, the water, shops, restaurants and bars. There’s great seafood at spots like the Bluewater Grill and the Descanso Beach Club, but there also are plenty of other dining options, from pizza to Mexican. Buffalo milk is a sweet local specialty, with milk, vodka, Kahlua, creme de
cacao and banana cream liqueur blended and served over ice. There’s a 14-year waiting list to own a car on Catalina, and the number of vehicles allowed there is strictly limited. But you can rent a golf cart at one of several businesses (one is cash only at $80 for three hours) and head up into the hills. You’ll get terrific views of boats in the harbor and the Pacific. An easy-to-follow route will take you up to the Wrigley Memorial & Botanical Garden, known for its cactus collection. (Wrigley himself was once interred at the memorial, a beautiful stone monument, but he’s now buried in Pasadena.) Catalina also offers numerous trails and is popular with overnight campers who can be seen lining up for ferries from the mainland with gear, food and water. For day-trippers, a popular short hike is the Garden to Sky Hike, a 2.4 mile round-trip from the Wrigley Memorial. That trail also connects to a longer route, the Garden to Sky Loop Trail. Other activities include zip lining, Segway and bike rentals, a golf course, and bus and Jeep tours of the island’s rugged hills and scrubby interior, where you might see a buffalo or two. Water activities include kayaking, snorkeling and glass-bottomed boat tours. Just don’t be surprised if you don’t get a free glass of water with your restaurant meals. The island, like much of Southern California, is suffering from drought conditions, but you can always buy a bottle.
From cacti at the Wrigley Memorial & Botanical Gardens to boats moored in the harbor to tourists enjoying the shoreline, Catalina Island is a quick escape from the California mainland.

ACES’ MIDVALLEY FARM AND RANCH IS INCREASING FOOD PRODUCTION AND EFFORTS TO EDUCATE PEOPLE BY SCOTT CONDON
A lot of folks in the Aspen area have gone whole hog for the locavore food movement and are rightfully proud of the Roaring Fork Valley’s agricultural heritage. But that support and pride can’t hide the fact that there isn’t extensive knowledge or skill in local food production, said Jason Smith, director of Rock Bottom Ranch. The midvalley farm and ranch owned by Aspen Center for Environmental Studies is on a mission to show how agriculture can be sustainable and replicable. To be truly successful, Rock Bottom wants to inspire more people to dive into fruit and vegetable production and animal husbandry. They want the Roaring Fork Valley to be more self-sustainable in feeding itself.

Smith and his staff are leading by example at the 113-acre ranch nestled between the Roaring Fork River and the base of the Crown, public lands at the foot of Mount Sopris. It’s situated along the Rio Grande Trail, between Basalt and Carbondale. Smith took the helm of Rock Bottom on Jan. 1, 2013, with a background both as a chef at Aspen’s Little Nell Hotel and a farmer in North Carolina. He was brought on by ACES’ Executive Director Chris Lane to help Rock Bottom reach its full potential. That meant going big. “For me, the first couple of years were about getting established and getting the infrastructure in place,” Smith said.

8,000 DOZEN EGGS Now that infrastructure is in place, Rock Bottom is ramping up the food production. The ranch has gone from 150 laying hens a couple of years ago to 525 this year. Egg production will soar from 4,000 dozen in 2015 to between 7,000 and 8,000 dozen this year. “Compared to 2014, we’ve tripled production,” Smith said. The number of broiler chickens also was increased so that the amount of meat will soar from 800 pounds last year to an estimated 2,100 pounds from 600 birds this year. They try to maintain about 50 pigs, though the numbers vary because the six sows have liters of varying sizes. Rock Bottom will sell between 8,000 and 9,000 pounds of bacon, chops and other pork products. The ranch has entered the beef business in partnership with Cap K Ranch up the Fryingpan Valley. They have six cow-calf pairs, a few heifers and a bull.
THREE SEASONS OF VEGGIES Vegetable production also is skyrocketing. Rock Bottom has vast gardens but also relies on two traditional greenhouses and a state-of-the-art seedstarting house. There were 100 frost-free days in 2015 at Rock Bottom, which is along the cool river bottom at about 6,400 feet in elevation. With a little ingenuity and a lot of hard work, Smith and the agricultural staff of four workers can stretch the growing season from February into November. “We’re pretty comfortable with a three-season harvest,” he said. One greenhouse is currently packed with rows of heirloom tomatoes, cucumbers and basil. A second, mobile greenhouse called Rolling Thunder provides versatility with a frame perched on wheels that follow a track. Two people can move it in about 10 minutes. It covers cool weather plants to help them get started in late winter, then in April it’s
shifted to start tomatoes and other crops. It’s moved again during the heat of summer and fitted with shade cloth to stretch the productive season of coolweather plans, then moved yet again in fall to extend the harvest from tomatoes.
A FINAL PIECE OF INFRASTRUCTURE Smith’s latest and, based on the excitement in his voice, greatest addition to the Rock Bottom infrastructure is a seed-starting house. In a nutshell, the structure is a highly insulated blockhouse with glazed, triple-wall polycarbonate, south-facing windows to take full advantage of the sun. The entire structure is slightly oriented to the east to capture morning rays. The structure features a ground-to-air heat transfer system that uses tubing underground and fans to suck heat out of the house and store it underground CONTINUED ON PAGE 28

‘BACK TO ROOTS OF COOKING’ FOR CHEF IN RESIDENCE Matthew White has assembled an impressive resume as a chef since coming to Aspen in 1999, first working at The Little Nell and, for the last eight years, as kitchen manager at Matsuhisa. But now he’s getting an eye-opening experience. He was selected as the first Chef in Residence, a new program at Rock Bottom Ranch. The seasonal, educated-based position was created to immerse chefs in the complete food production system — from harvest and processing to kitchen. It’s one of the new directions Rock Bottom Ranch Manager Jason Smith is taking the sustainable ranch and education center as it enters a new phase in maturity. Smith, also a top-notch chef who worked with White at The Little Nell, said chefs often have little knowledge of or contact with food before it gets delivered to the kitchen. The Chef in Residence will work with the Rock Bottom’s agriculture staff to

plan and plant crops in spring and raise livestock and have a hand in harvests and butchering. White also is working with kids’ workshops where the young participants harvest foods and use them in a meal they prepare. There is a “freedom and fun” to working as the Chef in Residence, White said. “This is getting back to the roots of cooking,” he said. He participated last week in the processing of 180 broiler chickens raised on the ranch. Smith said part of the challenge for White is coming up with creative ways to use everything raised or grown on the ranch — from turnips so plentiful that they don’t all sell at the market to the feet, livers and hearts from the chickens. “It just makes me think more as a chef,” White said. Smith said that’s the desired outcome. “Now he’s in there and can almost use that kitchen as a laboratory,” he said. The position comes with plenty of challenges. White is helping prepare the food for roughly a dozen events — from Farm to Table dinners at Rock Bottom to a $500 per plate fundraiser for Aspen Center for Environmental Studies, Rock Bottom’s parent organization. Smith is enthralled by the thought of the potential influence the resident chef program can have on cooking in the Roaring Fork Valley — and using more of the food that’s brought to their kitchens.

“If we move a few chefs through here in the coming years, what kind of influence will that have?” he asked.

on warm days, and circulate the heated air when needed on cool nights. Phase Change Material, a revolutionary insulator, will be added to a north interior wall and also will transfer heat as needed. As a result, the seed starter house will maintain a temperature of 40 or more year-round without supplemental heat. The structure has the ability to hold more than 15,000 seedlings at a time. Given the short number of days without frost, it’s critical to get vegetables going from seedlings rather than seeds to get a decent harvest period, Smith said.
WHAT‘S NEXT? So, now that the infrastructure has largely been established, what’s next? Education, offered in various forms. On the small scale, Rock Bottom is trying to influence and inspire potentially future farmers and established chefs. Smith launched a Chef in Residence program this year to give chefs a glimpse of what’s happening with their food, long before it arrives at the kitchen (see related story, previous page). Every summer, Rock Bottom hires four young adults for its agricultural staff. Alyssa Barsant is back for a second summer this year and says she’s considering a future in farming. Hannah Itzler is pretty certain she won’t be a farmer, but she said the experience this summer has been invaluable. She said she’s gained an appreciation for how hard farmers work. “Weeding and seeding is a full-time job,” Itzler said. Kevin Newland, a Roaring Fork Valley native, and Chris Dominick are the other members of this summer’s crew. On the larger scale, thousands of adults and kids are circulating through Rock Bottom and learning about sustainable agriculture. Smith, Chef in Residence Matthew White and helpers will prepare five ACES Farm-to-Table Events at Rock Bottom Ranch for 115 people over the course of the summer. Rock Bottom also provides food and catering for ACES’ Picnic on the Preserve, which attracts about 300 people, and An Evening on the Lake, a major fundraiser for ACES that attracts 200 people. All told, there were 749 Farm to Table meals served by Rock Bottom in 2015. While the emphasis is on eating and drinking, it also gets the customers thinking about where their food comes from. ACES’ Executive Director Chris Lane always has been passionate about educating kids about the food supply. He often laments how kids don’t realize that food comes from somewhere prior to the grocery store. He wants Rock Bottom to educate Roaring Fork Valley kids about the food supply. Rock Bottom certainly gets the opportunity through kids’ summer camps, classrooms visits and class field trips during the school year. Last year, Rock Bottom had 12,416 education contacts, both kids and adults. In the future, expect Rock Bottom to get involved to an even greater degree than normal on eliminating food waste.

THE ROARING FORK CONSERVANCY’S annual summer benefit took place July 13, alongside the banks of the Frying Pan River, on a picture-perfect evening in Basalt. Wally and Peppy Dallenbach generously provided their ranch for the festivities. The Dallenbachs have owned 175 acres in the Upper Frying Pan region for the past 42 years. “We love to share it,” said Peppy. “And, this is the best half-mile stretch on the river,” Wally proudly added. In addition to the River Rendezvous, they also host two Colorado 500 charity rides each summer on their property. All enjoyed cocktails from Woody Creek Distillers and dinner from ASC
Catering. Chefs Jim Butchart and Andrew Helsley also welcomed budding chefs from YouthEntity who served up “bruschetta three ways” in the silent auction tent. A favorite activity and fundraising endeavor at the event takes place during cocktail hour. Guests get an opportunity to release trout from a tank into the river, assisted by staff from the Roaring Fork Conservancy and Colorado Parks and Wildlife. Since 2000, the River Rendezvous has helped sustain the organization’s programs to address water quantity, water quality and riparian habitat issues within the Roaring Fork Watershed. ART CRITIC JERRY SALTZ TELLS IT LIKE IT IS AT ANDERSON RANCH JERRY SALTZ IS NOT SHY about his opinions or his passions, and in his speech at Anderson Ranch Arts Center in mid-July, the art critic held forth for more than an hour on both. By turns inspiring and excoriating, Saltz spoke to the boldness of working artists, the absurdity of big money in the art world and, surprisingly, the greatness of a popup show in a local ski shop. “They’re doing a show in a stupid ski shop,” Saltz said with a laugh, referring to “Mount Analogue,” a group show with works by 28 artists reflecting on mountains that has been curated by Neville Wakefield. “And you know what, it’s one of the better group shows I’ve seen — I hate them for this, but it’s one of the better group shows I’ve seen in a long time. It fit. And it just clicked.” Saltz is an Everyman art critic — incisive, divisive, uncompromisingly honest and dependably brilliant in communicating the awe of great art and, occasionally, the awfulness of awful art. With no formal training, no degrees and boasting work experience as a truck driver, Saltz simply read all he could about art and began going to as many as 50 shows per week to hone his critical skills. As chief art critic for New York magazine and, previously, at the Village Voice, he’s become the bestknown art critic in the country (and the only critic who also can be called a social media star). Saltz ripped the exorbitant pricing and the primacy of sales numbers in today’s art market, declaring, “I’d drop a zero off of the whole art world if I were president.” But rather than simply blame gallerists or one-perenter collectors for the trend, he pointed a finger at all of us for caring so much about how much art sells for. “We’re thinking about the one thing that really has nothing to do with the work, which is money,” he said. He recalled cursing out students who told him they were selling paintings for upwards of $4,000 and detailed his small personal effort to

undercut the market: Saltz collects exact replicas of art that he likes, paying $55 per copy and accepting solicitations through social media. Saltz mocked conceptual artists who insist on waiting to make work until they can get grants or other funding. Instead, he encouraged artists like those working at Anderson Ranch to find ways to get their work done and get it shown — again praising the artists in the Performance Ski show as exemplary of this can-do ideal. “There were all these artists — really good work — finding really direct ways to do this work,” he said. Throughout the address at Schermer Meeting Hall, he urged artists to be bold (repeatedly telling them to “grow a pair of whatever”) to accept that they will not get rich (in solidarity, Saltz posted a photo of his bank statement on INstagram last fall, showing he had $3,300 to his name) and to not fall into the trap of envying other artists or growing cynical of the art world. “You’re going to be poor all your lives, get over it,” he told the artists in the crowd. “Grow a pair of whatever, this is an all volunteer army. Get over it or change it.” Other high points from the quotable Mr. Saltz: On how good art affects him: “What art really wants to do is hang on the wall and go like this: ‘I saw you looking at me. I want to come home with you. I want to live in your bedroom.’” On why he doesn’t do interviews or write about what artists have to say about their own work: “Have you ever tried to talk to an artist? They’re psychotic.” On mega-gallerist Larry Gagosian: “Don’t boo him. He’s a master of the universe. He may be the Death Star.” On the subjectivity of evaluating art: “No one in the art world can prove that Vermeer is better than Norman Rockwell.
