FESTIVAL TAKE FLIGHT this weekend at the 40th annual Snowmass Balloon Festival. The traditional gathering of hot-air ballooning above the mountains as the autumn leaves change is complemented by the Snowmass Wine Festival; it’s a weekend-long feast for the senses in the village. The balloon festivities kick off early the morning of Friday, Sept. 18 with the Carter Memorial Colorado Rat Race, pitting pilots against one another to see who can get farthest downvalley over the course of three hours. Saturday morning includes the group ascension from Snowmass Town Park, featuring dozens of balloons flying high and battling one another in the “X Marks the Spot” competition, featuring pilots dropping weighted bags on “X” targets and activities for kids. Saturday night the balloons line up on Fanny Hill for the “Evening Glow,” where you can get up close to the litup balloons. Balloon festivities finish up Sunday morning with another ascension and “Balloon Dance,” pairing pilots each holding one end of tape — the two balloons who can hang on the longest win. In addition to becoming a tradition for locals and visitors alike, over the decades the festival has become a must-do for a collective group of pilots, mostly from Colorado and New Mexico, who make the annual trek up to Snowmass. “Balloonists as a group are some of the most fun-loving people,” says Shan Stuart, a Snowmass Balloon Festival judge since 1992, who has been involved with the event since 1983 when he crewed for Unicorn Balloon Company. “They come from all walks of life with a shared passion, and there’s a lot of camaraderie. They work together, look after each other and play fair. If not, they’re not invited back.” Tickets and more information at www.snowmassballoon.com.

FESTIVAL THE WYLY ART CENTER in Basalt is hosting a solo exhibition of work by local artist John Bozza, opening Sept. 18 with a reception from 5 to 7 p.m. Bozza’s work has most recently been exhibited locally in the Aspen Chapel Gallery’s springtime mixed-media show. The Aspenite is a self-taught artist-sculptor, wood carver, painter and fine-tuned observer of details. Drawing from his upbringing in New York during the raw art movement, combined with his “Mad Men” advertising broker experience there, Bozza developed a keen sense of observation. CARBONDALE’S SUSTAINABLE SETTINGS is partnering with the Boulder-based nonprofit Slow Money for a weekend of events at the ranch’s annual Harvest Festival, running Saturday and Sunday, Sept. 19 and 20. The festivities will begin Saturday with a day-long Master Class in Snowmass Village led by Slow Money. It brings together investors, donors, food entrepreneurs and other stakeholders who are actively collaborating to build local food systems in Colorado. Sunday is the traditional on-farm day at Sustainable Settings, with public talks, workshops, tours, music, dancing and the ranch’s annual dinner and fundraiser. A ‘gloomy’ GOP? Why change now? THE NEW YORK TIMES noted snarkily over the weekend that Republican candidates for president have gotten “gloomy” about the state of the Union, so much so that they “leave behind Reagan Cheer.” If you ask me (or don’t, I’ll tell you anyway), Republicans have been gloomy about nearly everything for decades, and even when Ronald Reagan was in the White House in the 1980s, his “cheer” was little more than fantasy dressed up as political rhetoric, aimed at deceiving voters about the true nature of things. When Reagan the candidate proclaimed in 1984 that we were experiencing “Morning in America,” he clearly wasn’t talking about the middle class, since his policies and actions are broadly seen as the beginning of the end for that ephemeral economic grouping. No, he was talking about his wealthy patrons, the people who had cheerfully bankrolled his entry onto the national political stage. And, actually, he was mouthing the words of ad man Hal Riney, who wrote a lot of what Reagan spouted during his campaign for re-election. If you’ll recall, all he had to do during his first campaign was point out that his predecessor, one-term president Jimmy Carter, failed to bring home the 52 hostages held captive in the U.S. Embassy to Iran. Even Carter, at a later date, cited the failed hostage rescue attempt, known as Operation Eagle Claw, as the main reason he lost to Reagan. Anyways, back to today’s gloomy Republican Party, as identified by the NYT. News writer Jeremy Peters opened his article with the observation that, “To listen to the way some Republicans tell it, America is a pretty awful place these days.” Peters quoted Donald Trump as calling the U.S. “a hell hole” and accusing our current leadership of being “stupid” and engineering our conversion into “a third world country.” I find that assessment very interesting, particularly since Republicans have been essentially driving national policy ever since 2000, when George “The Shrub” Bush stole the presidency from Al Gore. Even following the election of our first black president, Barack Obama, the Republicans have played a counterinsurgency role, undermining everything Obama tried to do while feeding the simmering racist tendencies of this nation’s illiterati. In fact, it appeared to me at one point that the Republican politicians of this country had taken a page from the Republican Guards of Iraq. After we wrecked Iraq in the name of mythical weapons of mass destruction, the former military elite there (the Republican Guard) looted the country’s wealth and

turned themselves into an insurgent army determined to prevent Iraq from putting itself back together. See the parallel here? After Obama wrecked the Republicans’ presidential hopes in 2008 (not to mention Hillary Clinton’s), the former political elite of the Republican party concluded that they, too, needed to wage a guerilla war against their enemy. It was a war of nasty words and evil lies, of course, rather than bombs and bullets, but just as effective in derailing or crippling just about any good initiative that came out of the Obama White House. And now, this same bunch wants you, the voter, to put them back in complete charge of the country. But interestingly, their rhetoric has been dragged downward, largely by their being Trumped. To do battle with a hog, you’ve got to get muddy, seems to be their thinking. Republican operatives such as David Gergen trumpet their belief that the U.S. faces “a serious risk of decline” thanks to Obama — ignoring the fact that Obama pulled us out of The Shrub’s recession, put a band-aid on our health care system and put together a nuclear deal with Iran that is about as good as we could hope. The GOP’s strategists have finally noticed that the American electorate is deeply disturbed, not to say manically enraged by what has been done to their standard of living, their jobs, their children’s ability to get any kind of good higher education, the list is endless. And the Republicans are blaming it all on the Democrats, with rhetoric that a former strategist for The Shrub’s political campaigns called “more mean-spirited, angry, not optimistic and much more viscerally divisive” than political rhetoric was in the past. In truth, though, this is just more of the same. It is a kind of political déja vu from the past eight years of divisive, obstructionist and nationally destructive crap that Republicans have used to undermine Obama, regardless of the harm such actions represented for the nation as a whole. That’s because Republicans really have no core to their political philosophy, other than a rabid need to win at any cost. Of course, it could be that once Trump is gone from the presidential race (and I firmly believe he will self-destruct at some point), the Republican party will try to remake itself into the party of optimism, wearing the same fake grin and spouting the same retrograde, 1950s style of pablum that voters gobbled up from Reagan’s machine in the 1980s. Then we’ll truly be back to the good ol’ days, eh?

It has a warm and cozy atmosphere, friendly owners and patrons, great home-style cooking (especially their famous pies), and live music in the evenings. The outdoor patio is also wonderful in summer. Q: What is one thing people may be surprised to learn about you? A: There are no surprises when it comes to me. Ask anyone—what you see is what you get. I love life and I love to laugh!

YUKON KING, A TV STAR FROM ASPEN Imagine what it would be like to attend a film screening with a movie

star when you were in fourth grade. Doing so formed an unforgettable childhood memory for me, although the star had doggie breath. Aspen was abuzz in the summer of 1955. A new television series was being filmed in the area. Sites on Difficult Creek, but mostly at Ashcroft, provided the backdrop scenery for “Sergeant Preston of The Yukon.” The site choice was not merely a matter of scenery. At the time, Stuart Mace bred huskies and ran sled dog trips from Ashcroft. The producer, Charles Skinner, used Mace’s sleds and dogs for the series. Several locals landed parts as extras. Lynne Mace remembers the excitement of being filmed, and getting paid for it. Alan Mace recalls that Toklat turned into a staging area for dressing and makeup. They each remember communication with Richard Simmons, the man who played Preston, for years after the filming. Other scenes of the series were filmed in Hollywood. Mace accompanied 18 Toklat dogs on an airplane for filming there. It was common in Hollywood those days to use ice to simulate snow, but for these shows they used crushed marble. It was whiter and sparkly like real snow.

Mace took two teams of dogs by plane again in 1956 to complete more of the two years of weekly shows for CBS. But on that final trip his dogs picked up distemper. After they returned home, almost half of the 80 dogs at Toklat died. Richard Simmons was the headliner human in the series, and his horse

a lead dog in the front. Picking an effective team required experience and tremendous detailed knowledge of each dog. The dogs lived to pull sleds and would, in their way, beg to be chosen for each trip. Although the dogs seemingly shared a common goal, it was important to match personalities

THERE WAS NEVER A QUESTION AS TO WHICH DOG WOULD LEAD. KING WAS THE KING OF LEAD DOGS. WELL-TRAINED, SMART, AND INSTINCTUAL, KING FOLLOWED COMMANDS AND COMMANDED RESPECT FROM THE OTHER DOGS. Rex was certainly a co-star. As far as Aspen’s residents were concerned, however, the star of the series was King, Mace’s Siberian husky. You may have seen photos of sled dogs working in the snow. But unless you have ridden on the sled, you might not appreciate the finer points of the motive power. Mace’s teams were composed of 13 dogs. The paired canines did the pulling and there was

and avoid pairing dogs that did not like each other. Even walking a dog through the kennel required choosing a path that avoided placing the dog too close to rival dogs. There was never a question as to which dog would lead. King was the king of lead dogs. Well-trained, smart and instinctual, King followed commands and commanded respect from the other dogs.

Charles Skinner, the producer, arranged a special screening of the first four episodes at the Isis Theatre, as a fundraiser for local causes. I had spent a number of nights at Toklat as Alan Mace’s guest. We were classmates and spent many hours together exploring Ashcroft. The family invited me to attend the screening with them. I was surprised that King came with us. I shouldn’t have been — he was the star — but I had never seen a dog go to a movie before. We sat in the front row of the theater. King did not settle on the floor. Instead, he sat up high on the center seat. I watched that astounding dog and noticed he was not as restless as boys like me in the audience. My only memory from the movie itself was of cheering King and the other sled dogs as they dashed through Ashcroft. Tim Willoughby’s family story parallels Aspen’s. He began sharing folklore while teaching for Aspen Country Day School and Colorado Mountain College. Now a tourist in his native town, he views it with historical perspective. Foutz and Mr. and Mrs. Charles Dalley left in the Foutz car for the Shield-O ranch, there to enjoy a day viewing the scenery to be seen from the rolling divide between Snowmass and Capitol Creeks. It took just one hour and fifteen minutes to make the trip with Mrs. Foutz at the wheel. That is going some. Tying the car securely to a post the party strolled over a portion of the big ranch that was a barren wilderness of sagebrush and rocks until ‘Billy’ Foutz took it in charge about fifteen years ago. Today it is one of the best cultivated and equipped ranches on the Western Slope with Clarence M. Reed in charge. Six years ago Mr. Reed entered into a partnership in the Shield-O and Clarence as the farmer and Billy as the business head (a splendid combination) they have made it a big thing which will become bigger as the years roll by under their management. It is sure perfect and Sunday furnished a most wonderful and industrious sight as we stood on the divide and looked down in all directions on green valleys abounding in ripening grains and grasses which the men were harvesting and stacking in stacks. Acre after acre of farm land and stack after stack of hay greeted the eyes of the viewers, and to top it all hundreds of fat, sleek cattle and horses roamed over the pasture lands. The Shield-O is making a specialty of purebred White Faces and thoroughbred horses. It is sure some ranch is the Shield-O.” The image above shows the Shield-O Ranch in 1919. DRINK IT IN: ELECTROLYTIC WATER PURIFIER

SALT AND WATER fizzle in an electrical bath, a white froth bubbling up. I’m holding a purifying device, my container of lake water ready for treatment on the ground. A chemical reaction takes place before my eyes, molecules swirling, colliding, creating a new compound inside a tiny slot on the handheld unit. New this year, the PURE Electrolytic Water Purifier ($119) is distributed by Potable Aqua and sold as the “smallest and most cost effective water-purification device” available. Its base technology, an electricallyregulated chamber that converts briny water into a microbe-killing solution, has been around for years. But the Potable Aqua device offers a new design and upgrades to a product with roots in municipal water treatment as well as military-backed labs. Years ago, funding for development of the technology came from sources including the U.S. Defense Advanced Research Projects Agency (DARPA). In the outdoors industry, Mountain Safety Research of Seattle brought to market the Miox Water Purifier, a similar device, beginning over a decade ago. The Miox product is no longer for sale. But with the PURE Electrolytic Water Purifier you get the same result — a small, battery-enabled unit that manipulates the molecules in water and table salt to create a mixed-oxidant disinfectant of sodium hypochlorite with trace amounts of hydrogen peroxide. Sounds complex, I know. But in use the device is easy — you pour in a few drips of salt water, press a button to select quantity, then hold the same button to begin the reaction. It takes a few seconds for the salt water to fizz and change. Pour that solution into suspect water and Potable Aqua claims it disables viruses, bacteria, and protozoa,

including giardia and cryptosporidium. Like chemical tablets, you must wait to drink. The solution takes a minimum of 30 minutes to work, and you need to wait four hours if cryptosporidium is a concern. Over the summer, I tested the device camping and backpacking with water from lakes and streams. A chlorine smell rises from the device as salt water is converted to its microbe-disabling state. You charge the PURE unit at home, and its internal battery is cited to provide power for 150 liters of water-purification work. On back, the company built a tiny solar panel capable of recharging the device in the field. Potable Aqua claims the PURE will treat more than 60,000 liters of water over its lifetime without replacement parts. It weighs a scant 3.8 ounces and is durable enough to toss in a pack. As far as the competition, pump-based filters offer a faster way to get water, and they can cost less. However, in most cases, filters do not disable viruses, which may be a concern when traveling overseas. Filters are also not great if you need large quantities of water, as they require a lot of pumping to get a few liters of drinkable water. The main appeal to the PURE might be that with just a little salt you can make drinkable water nearly indefinitely. Its solar panel makes the PURE self-sustaining, and, once fully charged, the little unit will treat large quantities of water, up to 20 liters at once. Look into the PURE if you need a way to obtain lots of drinkable water from a suspect source, or if you need an emergency backup that will make nearly unlimited water from a shaker of salt.

A TOUR DE WINE WITH TUCKER TAYLOR “HERE. TRY THIS.” I took the leaf that Tucker Taylor just picked from the plant at our feet and placed it on my tongue. While half expecting a psychedelic reaction, as the exchange was slightly reminiscent of a Carlos Castaneda moment, I was delighted when my taste buds detonated with the flavor of raw oysters — without the slime or brine of course. KELLY J. Had I closed my HAYES eyes I would have been certain I was at the Hog Island Oyster Company, just a few miles away as the seagull flies, on Tomales Bay. Instead, I stood in the earthbound garden outside the French-style Chateau at the Kendall-Jackson Wine Estate and Gardens, surrounded not by oyster beds, but by lilacs, rosemary, buzzing bees and some of the most amazing herbs and vegetables on the planet ... including the Oyster Leaf I had just been turned on to. Wine lovers know well the wonders of Kendall-Jackson. From their Vintner’s Reserve Chardonnay, the best-selling American Chardonnay in the world and a gateway to quality wine for many since its first vintage in 1982, to the small lot productions of their estategrown Pinot Noir, Cabernet, and a host of other varietals, KJ and its family of brands have established themselves amongst the pantheon of the world’s most significant wine producers. What you may not know about is the extraordinary gardens and the education center at their flagship Bordeaux-style Chateau just outside of Santa Rosa in the Sonoma Valley. For those who are passionate about vines, gardens and all things that grow, Kendall- Jackson offers what may be the most comprehensive and engaging experience of any wine country tasting room found anywhere. On a recent visit I took a public tour through the estate and gardens with the aforementioned Tucker Taylor. Even Castaneda would have been blown away. The Garden Tour begins on a brick walkway honoring those restaurants and wine retailers who

first took a chance on Jess Jackson and the early vintages of his fledging wines. The “Foundation of Friends,” as the path is billed, is as simple in its design as it is powerful in its effect. The bricks tell the tale of humble origins and massive growth. They thank, in stone, those who participated in that growth. But most importantly, the bricks resonate with visitors who recognize the names of restaurants around the country where they have dined. Everyone who walks through, points to a brick and names a place they know and love. A place where they may even had a bottle of Kendall-Jackson. Today over 100,000 retailers sell Kendall-Jackson’s wines, but the first 600 are recognized with bricks bearing their names and the year they began to carry the wines. Brick No. 1 is for the Grand Central Oyster Bar in Manhattan, where Jackson walked in in 1983 and hand sold his inaugural release. At the end of the path lies a wonder of the wine world. Surrounding a gazebo is a “tasting vineyard” that features vines planted with 23 different grape varieties. You can pick and taste berries from clean green Chardonnay, a cluster of dark Syrah or from a head pruned Zinfandel vine, and taste the differences in their flavor profiles. It is an amazing, palate-pleasing, educational experience and one could spend hours ruffling through the canopies, popping berries into the mouth. Adjacent to the vines are red and white wine “Sensory Gardens” planted to herbs and veggies corresponding to the flavor profiles of the different grape varieties that you have just tasted. These gardens are divided amongst “descriptors” and “affinities.” So, for example, the section of the garden devoted to Sangiovese, has cherries, red plums and roses planted to help “describe” the flavors found in the wines made from the grape. Beside them you’ll find zucchini, sweet peppers, garlic and tomatoes to demonstrate the produce that pairs well with wines made from Sangiovese. Again, so simple, but such a powerful tool for edification. It was here that Tucker Taylor

came over to say hello and take us through the culinary gardens he oversees. If ever a man found his correct calling it is Taylor. A business graduate from the University of Florida, Taylor moved to Chicago to trod the tried and true path of a professional life. But nature got in the way. “I would grow herbs outside my window in Chicago,” he says with the gentle but direct voice that parallels his persona. “I began to see that this was something simple that I could do to enhance my cooking. I wasn’t a farmer, or even a gardener, but I realized that by just growing herbs in pots I could connect with nature and make my food taste better.” Recharged he found his way to California where he eventually took a position tending the culinary

gardens for Thomas Keller’s restaurant, The French Laundry. For serious culinary enthusiasts this small plot of land across the street from the restaurant in Yountville, California, is mecca. A veritable Garden of Eden, where wondrous, delectable discoveries are made. Including that Oyster Leaf. “Thomas was in France a few years ago and someone gave him an Oyster Leaf,” Taylor said in

recounting how the Mertensia maritime found its way to the kitchens of Northern California. “He took a photo on his phone of the leaf and sent me a text that said ‘we need this. ‘When Thomas says he needs something it means he needs it now,” Tucker chuckled. “So I began to research it. Finding it had origins in Scotland. I knew it would grow well in the Napa Valley so I contacted a grower in France. By the time Thomas returned from his trip it was in the garden.” Taylor moved to take charge of Kendall-Jackson’s 3.5-acre culinary gardens three years ago. Leaving such a high-profile position at the French Laundry may seem questionable to some, but Tucker had his reasons. “At the Laundry we had just a select few diners each night,” he explained, “and, as we all know, it is an expensive meal (the nine-course menu at the French Laundry is currently $295 per person). I feel like here I can make a bigger impact, as the program allows me to reach out to many more people and spread both the

message about organic gardening and great foods to a much more diverse audience.” The “program” has a number of different elements. “First, it’s an educational garden,” Taylor says, in reiterating the garden’s origins as defined by the late Jess Jackson who passed away in 2011. But it is much more than that. The garden also serves as a source for the onsite kitchens run by chef Justin Wrangler. And there is a growing business selling fresh produce and herbs from the gardens to Bay Area restaurants including Chez Panisse, Quince and Rich Table. But perhaps most importantly to Taylor is that the gardens can serve as an organic incubator for the other properties owned by the sustainability-obsessed KendallJackson that range from California

to Oregon, here in the States and from Australia to Chile and Italy abroad. “There is an opportunity here to work with our internal organic task force and Julia Jackson (Jess’s youngest daughter) to take the lessons learned from our gardens and apply them to the other win-e-growing regions we are in.” Taylor says with conviction, “We can push the envelope throughout the world.” A visit to a tasting room can be great fun. But a visit to the KendallJackson Estate and Gardens can be a mind alternating experience. Be sure to ask to try the Oyster Leaf

SACRED FEAST

ENJOYING A NATURAL BUZZ OFF HIGH-PRANA FOOD MIDWAY THROUGH the fourth course and nary a wineglass in sight: I’m giddy. Set before each of us at the long table for twenty is a plate of manicotti Bolognese, fragrant with rich heirloom tomato sauce and sprinkled with vibrant green herbs. Diners ooh and aah between bites of this tidy Italian tableau, decorated with dots of lavender-rose-hibiscus gastrique and which the menu indicates carries a unique vibration: LA 852 Hz. The numbers AMANDA RAE printed above each course description are the first clues that this is no ordinary tasting. Closer inspection reveals that the classic pasta dish isn’t made with pasta at all — nor cheese or slow-simmered sauce. Instead, paper-thin slices of zucchini roll around a fluffy mousse of cultured cashew cream studded with earthy oyster and shiitake mushrooms. The sauce only tastes like it’s been bubbling on the stovetop for hours. In fact, it’s entirely raw: a purée of red bell pepper and vine-ripened tomatoes, beefed up not with pork or veal but cubes of candy-like chioggia and golden beets. “We want you to understand that this food vibrates at a very high frequency,” announces chef Pam Davis, who runs True Nature Kitchen with chef David Avalos. “It’s the most alive food.” To kick off the second annual True Nature Healing Arts Sacred Fest, an anniversary celebration at the holistic wellness sanctuary in Carbondale, Davis and Avalos have prepared a seven-course meal of high-prana food. (Prana is Sanskrit for “life force” or “vital energy.”) As such, nearly everything on the menu is raw and all of it is vegan. Ceviche on the Oaxacan platter is made with young coconut meat; the sweet chile relleno with poblano mole is stuffed with “chorizo” made of beet pulp left over from the kitchen’s fresh, cold-pressed juices (which are sold in the True Nature café and at kiosks at the Aspen Club & Spa, in the Ute City Building, and at Roxy’s Market in Aspen). “We try to be as sustainable

as possible,” says Avalos, a selfdescribed science geek wearing a funky, feathered cap made of mushrooms. (Yep, his hat is sewn of fungi.) “Our food is 98 percent raw — you won’t know that, and we don’t want that to scare you. We go to great lengths to make the food taste great. The supplemental aspect is that it’s really good for you.” Indeed, each plate is rainbow of color, with bold, concentrated flavors to match. But instead of coming across as obnoxiously virtuous in their healthfulness, the creations are decidedly playful. The second course is a riff on a crabcake: it’s made with jackfruit, an ingredient indigenous to India that has a sweet flavor and meaty texture. Accompanied by a sweet purée of fennel and Olathe corn, local pear marmalade, sugar snap peas, and curried cashew remoulade, the dish is a revelation for most of the wide-eyed guests here, few of whom have ever tasted jackfruit before. In place of sparkling wine, we toast to the chefs with flutes of effervescent jun — an ancient fermented beverage made with green tea, local raw honey, and probiotic cultures. “It has more of a yin flavor to it,” Avalos tells us, adding that the fizzy health tonic is thought to have originated in northern China and Tibet even before kombucha. The beverage is twice-fermented with chamomile, rooibos, and vanilla; the jun yeast culture is also used to prepare kimchi with bamboo salt imported from some far-flung land. I suspected that the dinner might provide a deep holistic experience even before the first course was served, when Davis passed a vial around the table: spruce oil, which we were instructed to daub on our hands, forehead, and throat. “When we all put on the spruce, we all come into the same frequency,” explained Deva Shantay, True Nature Healing Arts co-founder with her husband, Eaden. “When we eat the food, we’re experiencing it together.” Indeed, from the first bites of mini pizzettas — topped with cashew “cheese” made with live kefir cultures and local ingredients

including pear, tomato, spinach, and basil — diners seem to be in sync. We’re grooving on food so flavorful and nutritious that it is uplifting; our conversation is surprisingly animated despite no booze being served. In a way, our energy at the table mirrors the synergy of Davis, Avalos, and a crew of about a dozen at the True Nature Kitchen located just a few blocks down the street. “We’re been working together about 18 months, and in that time they’ve created more than 30 unique items — from cheeseless cheeses, entrées, desserts, jun,” Eaden Shantay tells us. “They take things from the outside world and reverse-engineer them to make them better [for us]. It’s energy: If you go into the production kitchen, there’s a vibration and an intentionality that goes into everything that they make. They are culinary alchemists.” Not only does the True Nature Kitchen prepare a range of raw foods, smoothies, and packaged meals and soups—all of which is vegan, organic, gluten-free, dairyfree, non-GMO, and as local as possible — but soon the company will sell a line of cold-pressed beverages and raw desserts and snacks in Whole Foods Markets across the Rocky Mountain region. “We put a high level of importance on our selection of

ingredients,” Avalos says. “We spend a lot of time getting to know the people we get our foods from. Everything we do in our kitchen has tonalities. We’ve got sacred geometry on the walls and crystals buried in the ceiling. That’s important to us because we know our gift to the world is the passion we put into our food.” When Deva mentions that a gong in the True Nature Kitchen facilitates workplace meditation, I can’t help but think it all sounds so…hippy-dippy. And perhaps it is. But true enlightenment arrives with the final course: Davis’s dessert trio, comprised of matchacashew “cheesecake” with crumbly miso crust; fudgy dehydrated cacao cake with maple crème fraîche, orange marmalade, and pistachio brittle; and an apple lollipop coated in raw caramel and crunchy pumpkin seeds. Despite being dairy- and glutenfree, made without refined sugars, and with nothing heated above a hundred degrees, each bite is sinfully sweet and decadent. At once I realize what high-prana food is all about: The true nature of each ingredient honored. JUST BECAUSE EVERYONE LEFT DOESN’T MEAN THE FUN HAS TO END I’M NOT SURE if you’ve noticed yet, but things around here have gotten oddly quiet. Suddenly, we can park in town. We can leave our office building without feeling like we are going to be trampled by a herd of angry tourists. We can actually get in the BARBARA front door at Peach’s PLATTS Corner Cafe and, sometimes, even order. We can breathe a bit easier. We can enjoy offseason discounts. We can even walk down the street without being yelled at by a glamorous French woman who thought we cut her off even though we were just trying to control our dog amongst a huge crowd of people in a small area...wait, sorry…that was probably just me. Anyway, my point is that offseason has arrived once again and, instead of feeling sad about it, we should embrace this tranquil time. It’s not always easy to see a place this popular lose all prestige with the seamless drop of an Aspen leaf. But try to look at the glass as being half full on this one.

Before dinner, try a yoga class or book an Ayurvedic massage at True Nature, possibly one of the most relaxing places in all of Colorado. Make the venture more than a day trip by shacking up at the Marble Distillery Inn for the night. But don’t hit the hay

I’ve said it before and I shall say it again: Offseason is the best time to dine out in Aspen. Just about every restaurant that stays open has some deal on drinks and/or food. Mezzaluna and Rustique are two favorites of mine. Those fried chicken Thursdays at Rob Ittner’s joint are hard to resist. And Mezz almost always has some kind of discount on a bottle of vino. Even if your restaurant of choice doesn’t have a deal, it certainly won’t be hard to get a reservation.

HONE YOUR SKILLS Let’s face it, during the hectic

summer and winter seasons we rarely have time to take up a new hobby or learn a new skill. When there are less events and demands on our time, it’s a good chance to try something new. Get lost in the rows of shelves at Explore Booksellers for an afternoon, finding some new books to take home. Call up Rosetta Stone and practice some language skills for your next international trip. Or just hang out in the gaming section of Ryno’s and perfect your foosball craft. Maybe even take up Big Buck Hunter to prepare for a future hunting trip. These are just a few ideas for you to consider as you wander the quiet streets in town wondering what you’ll do with so much spare time. Enjoy it while you can. CLOSE TO HOME: TRIP TO DIP AT THE NEW IRON MOUNTAIN HOT SPRINGS I’VE SEEN A FEW hot springs in my time. I’ve stopped on roadsides, scrambling down hillsides in the dark toward the smell of sulfur along the riverbank. I’ve lowered myself into craters by ladder where mineral rich waters bubbled from the earth’s core, feeling the iron and lithium relax my nerves. I’m a believer in hot springs’ therapeutic ways. So when I heard about a new set of hot springs AMIEE WHITE that just opened on the BEAZLEY banks of the Colorado River in Glenwood Springs, I beelined my way downvalley. Opened just last month, Iron Mountain Hot Springs is a collection of 16 individual mineral hot springs pools at varying degrees from 98 to 108, as well as a larger, warm freshwater family pool with a jetted spa. Standing from the bathhouse, which holds lockers, showers and a small shopping area — the hot springs below looks like a collection of hot tub-and larger-sized pools, dotted along the landscape, big enough for a dozen or more people in almost every one. From the pools you have views of Iron Mountain, Red Mountain, the

peaks of Mount Sopris, or watch as rafters float by along the Colorado River; or see if your neighbor is finally making that trip downvalley to Lowe’s. But the views are not why people are day-tripping it to the Iron Mountain Hot Springs. It’s the waters. There are more than 14 natural minerals found in the waters here, including iron, magnesium, potassium, silica, and zinc. The five most abundant minerals in the soaking pools are iron, sulfate, chloride, sodium and calcium. Iron and sulfate are known for their relaxing qualities, but all revitalize the skin, calm the nerves, detoxify the body and refresh the oxygen levels. Some find that thermal mineral waters helps with issues such as arthritis, fibromyalgia, skin conditions, depression, respiratory illnesses (including asthma), and locomotor and circulatory diseases. I had no idea there were hot springs in this area, but according to the company, the history of property dates back to 1896 when Sheriff Bob Ware purchased the land and opened the West Glenwood Health Spa. Guests staying in the upper floors of the brick mansion could stroll along the river bank, go fishing, enjoy views of Mount Sopris and Red Mountain and take a mineral bath, all with a

glass of ice-cold buttermilk, for 25 cents. Ware sold the spa to George “Wash” Allen and his wife Gertie in 1908, and they ran the Wash Allen Bathhouse until 1938. It reportedly thrived, even during the Great Depression. In 1938, the Allens sold the place to Louis Nicholson, a machinist from Leadville who’d been coming to Glenwood Springs for several years to bathe in the mineral waters to improve his health. As the economy improved, Nicholson added five cabins to house guests on the grounds. He sold the resort in 1943 to the Gamba family from Kansas, who was visiting the area for its therapeutic hot springs mineral waters. The Gamba Mineral Springs operated for about 30 years. Dr. Charles A. Graves announced in 1963 that a chiropractic center would operate in conjunction with the Gamba Mineral Springs in West Glenwood. Four years later, Dr. Graves purchased the resort from the Gambas. A bathhouse divided into six units for private bathing in natural hot water, five cottages with complete housekeeping facilities, a family residence and several acres of wide, well-shaded land were included in the deal. The following year, he changed

the name to the Glenwood Health Spa. In 1992, the bathhouse was remodeled and refurbished as the Fort Defiance Bathhouse by Roy Marker and Mike Retelsdorf. Then, 100 years after it first opened, the spa closed and the remaining structures were torn down to make way for a water park project that did not come to fruition. It sat vacant until construction of the Iron Mountain Hot Springs started in late 2014. Now, the new Iron Mountain Hot Springs is open adding to the legacy of Glenwood Springs as a hot springs destination. In addition to the mineral baths, there is the small Sopris Café on site that sells beer, wine and mixed drinks, in addition to pizza, ice cream and salads. And coming soon is the The Sand Bar, located near the soaking pools, that will serve beverages and smoothies, as well as a viewing tower, reminiscent of one located on the site in the early 1900s, that will offer guests another way to enjoy the views of the Colorado River, the Roaring Fork Valley and Glenwood Springs while reflecting on the site’s rich history. T

he Aspen Saturday Market has been a crux of the weekend’s activities in town for 17 years now. Begun as a small agricultural market filling out just Conner Park, it has grown to include artisans of jewelry, hats, clothing and skin care products and expanded first to East Hyman Avenue, then South Hunter Street, and now all the way around the block to Hopkins Avenue. “That’s as big as it’s going to get,” said Kathy Strickland, who manages the market for the city. Strickland, who’s also the staff liaison for the Commercial Core and Lodging Commission, said committees decide which agricultural stands and

which artisan vendors get to participate every year. They base their decisions on a few different factors — for instance, this year they decided not to accept as many jewelry makers because they felt there had become a surplus of those. For the food court, which now occupies Conner Park, the committee members try to choose vendors that offer dishes that can’t be found in the downtown core, so as to not compete with nearby restaurants. But there is one baseline condition that all vendors must meet. “Everything is Colorado made, grown and

produced,” Strickland said. More than just an opportunity to shop, the market is also a “community event,” Strickland noted — a part of the weekend routine for many locals, a chance to find a unique souvenir for visitors, a reunion with the community for second-home owners. The final Aspen Saturday Market will be Oct. 11 this year. As we enter into the last few weeks of the market, we thought we’d share a small sampling of the 108 vendors — many alternate weeks — at the 17th annual Aspen Saturday Market.

FORTÉ A family orchard for four generations, Forté in Palisade is best known for their peaches, said employee Daniel Peci. Forté grows 18 varieties of the Colorado favorite so that they can offer them all summer long. In addition, the orchard also produces 10 varieties of apples, plums and Bartlett pears. Peci is an intern for the orchard, which regularly hires European students like him for a summer work/travel program. TAYLOR & TESSIER Taylor Tessier has been making jewelry most of her life. Ruth Phippeny knows her sweets. “I started out with toffee, and that’s what I sell the most of,” said Phippeny, who makes her treats out of a shop in Nucla, near Telluride. “But not everyone likes toffee, so I make fudge and turtles too.” Phippeny has been commuting to the Aspen Saturday Market for several years now. She said she has found quite a following here, although she also finds new customers every year. REFLECTING ON A FUN-FILLED Labor Day weekend, I’d like to give Jazz Aspen Snowmass a round of applause for creating a 25th anniversary celebration with a line-up with legs. After a quartercentury of presenting the festival in all of its incarnations — with more of a Jazz slant in the early days, drawing inspiration from its sister festival in Mariac, France, to the five-day long fete in the years with Widespread Panic and when there was the traditional reggae Monday to the 2015

edition, it’s been an interesting journey. Personally, I feel fulfilled from this year’s festival, having caught two acts on my live act bucket list. As a longtime Gwen Stefani fan, seeing the singer/ songwriter, fashionista, reggae loving, punk rock princess backed by her band No Doubt was a highlight, boosted by her energetic performance that commanded the crowd’s enthusiasm and participation. Lenny Kravitz’s rousing show Sunday night touched on the myriad musical styles he

embraces from rock to soul to R&B to pop. As JAS’ executive director Jim Horowitz mentioned to me over the weekend, this will be a tough act to follow, but I’d say we can have faith they’ll keep things interesting as they’ve continued to do all this time. NEW ORLEANS FUNK STALWARTS RETURN TO BELLY UP ASPEN GALACTIC has made regular stops in Aspen through the years, playing festivals and gigs at Belly Up Aspen, where the New Orleans funk stalwarts return on Sunday, Sept. 20. No matter how many times you see the band, they never seem to repeat themselves and seem to always be discovering some rich new creative vein — be it hip-hop, loops, or an unexplored piece of Crescent City culture. The band is currently touring in support of the new album, “Into the Deep,” released in July and featuring the high caliber of guest talent we’ve come to expect from Galactic records. In this case, guests include vocalists Macy Gray, who leads on vocals on the title single, and Mavis Staples. The open-minded, open-eared New Orleans funk stalwarts and jam band circuit regulars have consistently surprised audiences in their nearly 20 years as a band. The live Galactic show is never the same twice, full of free funk jams and dance-friendly experimentation. The band’s albums have steadily expanded Galactic’s musical boundaries — from the techno-influenced, loop-heavy sound of 2003’s “Ruckus” to the hip-hop of 2007’s “From the Corner to the Block” to the 2012 Mardi Gras concept album “Carnivale Electricos.” On “Into the Deep,” the band offers tight dance rock, soul and funk in songs that no doubt will expand and mutate on the road, along with insta-classic Galactic jazz-funk instrumental tracks. The creative gap between Galactic’s records and its live shows is a key to its progression. “We play so many live shows, and we let people tape our shows,” bassist Robert Mercurio told The Aspen Times on one of the band’s many runs through town. “To go in and form an album that is like our live shows is a futile effort. We’re trying to do something more than our live shows, more than what we have been doing.” The band — made up of Mercurio, saxophonist Ben Ellman, drummer Stanton Moore, guitarist Jeff Raines and keyboardist Rich Vogel – doesn’t have a full-time singer. Instead

they venture out to find different collaborators from album to album and tour to tour. Galactic looked to collaborators they knew from the road for “Into the Deep.” Album contributors like JJ Grey, David Shaw and Maggie Koerner had toured with Galactic, while Mavis Staples sat in with them a few years ago and stayed in touch. Jamaican singer-songwriter Brush One-String they heard at the New Orleans Jazz and Heritage Festival and decided to record a version of his “Chicken in the Corn” for the new record, then bring him on tour. Galactic has collaborated over the years with the Lil’ Rascals Brass Band, Rebirth Brass Band, the Soul Rebels and various Mardi Gras Indians, while sometime Treme Brass Band trombonist Corey Henry has become a near-constant presence on Galactic records and tours. The band’s reverence for the New Orleans brass band tradition blares across in the album opener, “Sugar Doosie.” “We write [those songs] with the idea of how awesome it would be to hear the Rebirth going down doing

‘A MANUAL FOR CLEANING WOMEN’ LUCIA BERLIN was a Western writer of rare brilliance. When she died in Marina del Rey, California, in 2004, her fans were ardent, but few in number, perhaps because she wrote short stories and published her six collections with small presses. Her final three books appeared under the imprint of Black Sparrow Press, a California publisher known for featuring legendary outsiders like Charles Bukowski and John Fante. Berlin’s work is at least the equal of theirs. Berlin’s admirers have long worked to keep her writing in front of readers, and now, Farrar, Straus and Giroux has published a posthumous selection of her work, “A Manual for Cleaning Women,” that demonstrates her mastery of the short story form.

Berlin’s stories, many of them semiautobiographical, create indelible portraits of 20th-century Western communities, generally seen from the bottom up, through the eyes of people on the margins — neglected children in mining camps, alcoholics on the streets of Oakland, and Mexican immigrant patients at subsidized medical clinics. Describing the subjects of Berlin’s stories can make her sound like a connoisseur of misery — but in fact, beauty, grace and humor are the resonant notes in her work, no matter how many minor chords she plays to achieve them. Take, for example, this scene from “Emergency Room Notebook 1977,” in which the narrator sits on a bus with a blind man whose wife has just died. “He was very
