No tar-sands oil here, please Close to 1500 people from around the Northeast and Canada gathered in downtown Portland on Saturday to protest a potential project that would pipe tar-sands oil from western Canada through New England to Portland Harbor. While corporate energy officials continue to insist there is no such project in the works, protesters remain wary; beyond that, the demonstration signaled the further coalescing of a legitimate climate change movement — one focused not just on battling tar sands, but on pressing for real policy solutions.

On what US Congresswoman Chellie Pingree described as a “beautiful, brisk Maine day” (Saturday’s high was 22 degrees), the rally-goers met in Monument Square, then noisily snaked through Portland down to the Maine State Pier, a parade of banners and chanting and drums and horns. “We don’t want your dirty oil,” they yelled.

“Leave the tar sands in the soil.”

Tar sands, a/k/a bitumen, is a naturally occurring mixture of sand, clay, water, and an extremely viscous, tar-like form of petroleum, which can be isolated and extracted by injecting steam and chemicals deep into the ground. To transport diluted bitumen requires high temperatures and pressure. Local environmenalists are particularly concerned that oil giants are hatching a plan to pump and ship tar-sands oil from western Canada to

refineries on the Gulf Coast via existing, old pipelines that run between Montreal and Portland (see “Tar Sands Disaster?” by Deirdre Fulton, August 17, 2012).

At the pier, with enormous oil tanks in the background and an energetic, sign-wielding crowd before her, Pingree vowed to “ask the Obama administration to do a full environmental review of any attempt to bring tar-sands oil through that pipeline.”

She also said that if the proposal were to move forward, she would call for President Barack Obama to issue a new presidential permit that reflects the shift in pipeline contents — from traditional crude oil to tar-sands oil.

“And I don’t believe the facts will support one,” she said.

Meanwhile, the petroleum powers-that-be maintain that all this hubbub is unfounded. “[C]ontrary to recent reports and claims by some environmental and protest groups in the region, Enbridge has no plans or proposals whatsoever to transport any crude products, including diluted bitumen, through the pipelines of the Portland Montreal Pipe Line company that runs from Portland, Maine to Montreal, Quebec,” the company said in a statement released late last week.

More ominously, on its website, the Portland-Montreal Pipe Line corporation said: “While we do not have an active project to reverse the flow in either of our pipe-

lines, if there is a demand for doing so in the future, we will consider it.”

It’s difficult to see such demand not rising. According to the research consulting group Ecofys, which recently completed the “Point of No Return” report for Greenpeace, “production of oil from the tar sands in Alberta will triple from 1.5 to 4.5 million barrels a day by 2035, adding 706 million tons of CO2 to global emissions a year. By 2020, the tar sands expansion would add annual emissions of 420 million tons of CO2, equal to those of Saudi Arabia.” All that product has to go somewhere. (To that end, activists are also battling tar sands giants on the West Coast.)

“Big oil is all-in on the Alberta tar sands and they’re desperate to reach the coast,” said Vermont resident David Stember, an organizer of the 350.org Tar Sands Free New England campaign. The question is, what will it take to stop them?

Many who were in attendance on Saturday will reprise their signs and slogans in Washington DC next month, at the #ForwardOnClimate rally scheduled to take place on the National Mall from noon to 4 pm on Sunday, February 17. The Maine chapter of the Sierra Club plans to charter a bus to transport interested activists. Visit maine.sierraclub.org for more information.

politics + other mistakes Behind the mask Republican Governor Paul LePage has been called some nasty names — arrogant boor, insensitive clod, Paul — but none has accurately described his real inclinations. Although hints of the genuine LePage have occasionally slipped out, the governor has proved to be a master of political disguise, a wise move because the truth would be such a shock to his supporters that they’d probably spill hot tea all over their private parts.

Paul LePage is a liberal.

Ow, you ought to have a doctor look at that burn right away, or you’re never going to be able to have children.

Meanwhile, swallow a couple of Oxys and maybe some Viagra, and consider the evidence.

There are a few things every redblooded conservative knows about liberals: 1) They like to raise taxes.

2) They like to spend all the money they have and lots they don’t.

3) They leave their debts for other people to pay.

4) They lack the courage to defy special interests by eliminating inefficient and/or ineffective state programs.

All of which describe LePage.

Let’s start with taxes. In the last legislative session, the governor supported a health-insurance reform bill that imposed a new tax on everybody who already has coverage. In order to avoid burdening insurance companies with the cost of covering poor people with pre-existing conditions, LePage and GOP legislators required anyone who could afford a policy to pay an extra four bucks a month to reimburse those financial corporations for their compassionate service to the impoverished.

Call that a fee. Call that a contribution. Call it a way to pay for repairing your damaged genitals. But the

law says you have to cough it up — and that’s the definition of a tax.

There’s more. Hidden in LePage’s budget proposal for the next two years is an item that calls for imposing a sales tax on newspapers. The governor says newsprint containing venomous attacks on his job performance shouldn’t be entitled to an exemption because, unlike other tax-free products such as blueberry pies and granola bars, it’s not a “necessity.”

Good point. Of course, it would be a stronger one if LePage weren’t also calling for repealing the sales tax on airplanes, which are a necessity only until they invent flying cars.

Moving on to spending money we don’t have. The governor, who’s planning to empty the state’s Rainy Day Fund to cover the shortfall in his current budget, also wants to settle Maine’s debt to the state’s hospitals for unpaid Medicaid claims. That amounts to $186 million, which is exactly $186 million more than is available. Not a problem for Red Paul. He plans to borrow the money and pay it back with future revenue from liquor sales.

In other words, he’ll retire an old debt by creating a new one that’ll be covered by money the state doesn’t have yet, but its expert revenue forecasters (zero correct predictions in the last decade) promise will show up as soon as we stop buying all our booze in New Hampshire.

If there were some sap named Peter involved in this scheme, it would be a classic case of robbing him to pay Paul.

The drink-a-cocktail-to-save-ahospital program is such an extreme case of liberal economic thinking that I suspect even Democratic state Senate President Justin Alfond will find it too radical.

a new prison in Windham. But he fears voters might reject those bonds, so he’s planning to employ an obscure method — created years ago by liberals — to avoid the need for public approval of that new debt.

Then there’s reducing the size of government. LePage claims he’s doing that . . . by not doing that. He’s eliminated a few jobs, most of them already vacant. He’s tried unsuccessfully to kick some marginally needy folks off Medicaid. He failed to cut off funding for the Maine Public Broadcasting Network (maybe he could impose a sales tax on them, too).

But all those bureaucracies that conservatives are so fond of railing against are still intact. The Department of Education is as big an obstruction to learning as ever. The Department of Economic and Community Development is still not developing anything. The Department of Health and Human Services keeps on behaving inhumanely.

Right-wingers might take consolation in LePage’s plan to shut off municipal revenue sharing, depriving cities and towns of $200 million in state aid over the next two years.

Surely, that’s not the work of a closet liberal. Except there’s nothing an undercover leftist relishes more than letting someone else take the blame for soaking the taxpayers. When higher property-tax bills start arriving, LePage can hide behind his John Boehner mask — it cries real tears — while pointing out that local officials approved the increases.

The mask is also useful for covering his pain if he spills hot liquid you know where. Unlike his tea-slopping supporters, the governor can’t suddenly start shouting, “Great balls of fire!” ^

i love pork. but i hate pigs. oK, maybe “hate” is too strong, but i don’t trust them. i recall a story in fall 2012 about a farmer in oregon, terry Vance Garner, who failed to return after going out to feed his animals. hours later, a family member found the man’s dentures and pieces of his body in the hog pen. he’d been eaten by the pigs. tell me all you want about irony and animal justice, since they were probably destined to be eaten themselves, but the whole story makes me give pigs the side-eye. can’t be trusted. but boy do they taste good. bacon. Fried pork chops with gravy. Sautéed pork chops with spinach. Slow-cooked pork with mandarin and apricot sauce. barbecue pork ribs. mmmmmmm. but if you aren’t Wilbur from Charlotte’s Web, i’ve got no trust for you.

So many pigs to eat, but i can’t do it all. oh, i don’t just mean the lack of stomach capacity to do so. i mean that it’s socially unacceptable to consume some of the many pigs around me. male chauvinist pigs, pigheaded racists, and swine-hearted corporate leaders who care naught for their employees’ ability to survive day to day. i probably wouldn’t like the taste of them anyway, even if cannibalism was the answer. but i do like cooking, so let me share some fanciful porcine fare with you. cabeza de puerco this is actually a recently introduced maine dish called pork lepage, but as its namesake is pig-headed in the extreme, i thought i’d honor the 10 or 15 percent of me that’s latina and rename it appropriately from its original French-canadian. this is a slightly spicy dish, extremely flavorful but not very tasty, since the palette of seasonings and textures mesh together poorly. it’s an entrée, therefore, that is hard to swallow in the first place and often hard to keep down. there are sometimes adverse effects from consuming too much cabeza de puerco, the foremost being that the dish is extremely fatty and that fat goes straight to your head.

Some who eat cabeza de puerco have reported uncontrollable urges to spout nonsense in public; temporary bouts of tourette’s syndrome, especially when addressing democrats; and sudden urges to tear down works of art in the maine department of labor.

Gunpowder pork ribs While the gunpowder was actually removed from “gunpowder seasoning” blends years ago due to concerns about toxicity, this dish with its spicy rub reminiscent of charcoal cooking honors those pig-headed individuals who have made such a fuss lately that somehow, making military-grade assault weapons hard to get means the exact same thing as banning all guns and rescinding the Second amendment. if you’re a fan of this pork rib recipe, no doubt your own ribs are straining as you puff out your chest and declare all gun regulations illegal and insist that you are competent to own a rocket launcher, too. because we all know that the only way to combat violence is to make sure every man, woman, and child is armed to the teeth. What could possibly go wrong? pork barrel Soufflé We all know how touchy soufflés are; prone to collapse or burn if you don’t cook them just right. and nothing gets cooked right these days in Washington dc. perhaps it’s the bad mixture of racists coming out of the political closet, some of them actually uttering the n-word (or almost doing so, at least) in public because somehow, a black president means we’ve given up on america and the terrorists have won. but boy do they want government aid from that same black man when their districts experience a huge natural disaster. Still, i can’t let the other side off the hook for porcine sins, trying to reform a healthcare system when they’re still paying out tons of money in a medicare system rife with fraud. bon appétit! ^

GoinG whole hoG Embracing EvErything but thE squEal in Porkland _b y la ur a m c can d l i sh | Ph o t os by michaE l s . n ichols Bacon is so 2010 — no one is surprised to find cured and candied pork belly in cocktails and chocolate bars anymore. We make our own bacon (and even guanciale), grind our meat, and stuff our own sausages now. Charcuterie plates are ubiquitous on restaurant menus, though some have argued the fine art of climate-controlled, drycured salumi is better left to the pros. We now know to ask for heritage hogs and pastured pork. And we’re over nose-to-tail dining as macho, competitive sport, where more offal (the “odd bits”) is always better.

Still, for many, pork remains the king of meats. It’s the world’s most widely consumed meat, with poultry ranking a close second. Pork looms large here in New England, especially with our salt-pork-based Franco-American and Yankee culinary traditions. Farmers find pigs relatively

sustainable to raise, especially free-range ones that forage for acorns. Grain feed, especially organic, is expensive. Some, such as Mike Brooks of Bowdoin, fatten their hogs up on food waste, the tons of free scraps discarded by college dining halls and food banks, or the whey that’s a byproduct of Maine’s vibrant cheese-making scene.

Our best chefs in Maine are ever enchanted by these most human-like beasts (though swine brains are substantially smaller than ours; they use their gray matter more efficiently). Chad Conley learned to slaughter and butcher pigs while working on Eliot Coleman’s Harborside farm. He then raised pigs while managing Masa Miyake’s Freeport farm before opening the acclaimed Gather in Yarmouth last fall. Conley gets all his pastured pork — mostly unpopular cheap cuts to keep Gather’s menu prices down — from

butcher Ben Slayton of Farmers’ Gate Market in Wales. Jay Villani (of Local 188 and Sonny’s) pigged out in North Carolina and soon goes to Austin, to collect the best recipes for his forthcoming Salvage BBQ and Smoke House.

Finally, though he sold Hugo’s (where pork belly once had to be billed as “fresh bacon”), Rob Evans is raising rare black American Guinea Hogs, which take three years instead of six months to fatten up. Evans also hopes to unveil a new charcuterie menu at Duckfat, perhaps as soon as later this year.

For juicy, flavorful pork, we embrace bones and fat, not discard them. In Oregon, I learned to love Red Wattle hogs for, not despite, their unctuous fat-cap. The fat better absorbs a marinade and melts off, self-basting the meat, during grilling or searing. So we seek out bone-in chops, bone-in ham roasts and bone-in shoulder or Boston

Butt for prime pulled pork. The “other white meat” is dry no more, and the bones remain for a second meal of stews, beans, or stock.

Fortunately, variety packs of sirloin-end chops are less expensive, due to increased fat and connective tissue, but also much tastier than center- or loin-cut pork chops. (Thanks to Michael S. Sanders for sharing that tip on the food radio show we’ve just launched together — see Table Arts Media on Facebook.)

Maybe you’ve resolved to eat less meat in 2013, for your own health’s sake — or the planet’s — or just to save money. Pork, more than any other meat, lends itself to frugal meat-as-a-condiment scenarios, where just a bit of rendered pancetta or lardons imbues a vegetable-forward dish with umami. Salting and curing those cuts yields maximum “flavor per calorie,” as “hamthropologist” Peter Kaminsky prods us to do in his latest book, Culinary Intelligence: The Art of Eating Healthy (And Really Well). Baking or frying with lard, in moderation, is another cheap way to capitalize on a pig’s distinct flavor. Lard, after all, is the new olive oil, as the butcher case at Rosemont Market on Brighton Avenue reminds us. It would be wasteful to discard the leaf lard, lacey caul fat, and ample fatback.

A recent whole-hog butchery and curing weekend workshop in South Portland made one thing clear: pigs are literally lined with fat. On Saturday, Nate “Iggy” Brimmer led a hands-on demonstration of how to butcher the organic pig (with teeth and lymph nodes intact) he raised at Giant’s Belly Farm in Greene. Brimmer emphasized Italian seam butchery’s whole-muscle cuts over, say, baby back ribs. Then on Sunday, Resilient Roots’ Andrew Lindberg, who makes charcuterie for Nosh Kitchen Bar in Portland, got the dozen participants started dry-curing filetto, spalla, coppa (the whole neck, also known as capocollo), lonza, and of course, legs of prosciutto.

Local Sprouts Cooperative caterers prepared a pork spleen with apples and sage appetizer (not appetizing), baked stuffed pork heart and surprisingly delicious pork lung tempura (fried in lard), which tasted like exotic mushrooms, with an addictive spongy texture. They’ll do another session in April. And every fall, the Maine Organic Farmers and Gardeners Association (MOFGA) also runs a popular nose-to-tail pork processing workshop at its headquarters in Unity that includes the humane slaughter, evisceration, and scalding or skinning of the pig.

So you know by now to think outside the pork tenderloin: the cheapest, often neglected parts can also be the tastiest, as British chef and nose-to-tail champion Fergus Henderson reminds us. When veteran butcher Robert Bisson of Bisson and Sons Meat Market and Farm in Topsham reminisced to me that “the only thing on the pig that you don’t take and eat is the squeal,” he wasn’t kidding. Bisson’s mother fed her large family creamy pig brains, pig tongue, and pork liver fried with bacon grease and onions. He laments that the younger generation eats less variety meats — and even the old standby salt pork — these days. But you wouldn’t know it in and around Portland. So let’s break down the whole hog. Here’s a look at the most inventive dishes (plus some old standbys) local chefs are creating, often with those unloved, nasty bits.

HEADS UP

Chefs swear boiling down a pig’s head (sawed in half, perhaps, to better fit the pot) makes a superior soup stock. The meat and gelatinous collagen make creamy head cheese (really a terrine or meat jelly — dairy

The pig jowl or cheeks are best cured as guanciale, an unsmoked bacon required for pasta all’ amatriciana and the best pasta carbonara. Micucci Grocery sometimes sells the imported stuff (and affordable prosciutto and salami, including delicious Tuscan finocchiona, a fennel-flavored one) and Rosemont sells La Quercia acorn-finished guanciale and Spangler’s house version. Conley at Gather is also putting up jowls. But it isn’t hard to make your own. Participants in Lindberg’s curing workshop did so, and I once had a salted jowl hanging from a rack in my fridge for weeks, with great results, thanks to a Mario Batali recipe.

The New York Times just declared crispy pig ears a 2011 bar snack trend that’s come and gone. But we’re a little behind the times here in Maine, and in fact, we like it that way. I tried cartilaginous ear strips for the first time in Brimmer and Lindberg’s workshop and found them pleasantly chewy. Then I saw Gryffon Ridge Farm of Dresden selling ears from their Red Wattle heritage hogs at my Fort Andross farmers’ market in Brunswick.

I salted them with Chinese five-spice powder and then confited them, as charcuterie guru Michael Ruhlman recommends. Now I understand why pig’s ears are for dogs. It was gross to shave them of unappetizing hairs. I hear Pai Men Miyake ramen bar occasionally serves a special pig’s ear appetizer. The problem is restaurants are limited to two servings of ear per pig.

Think outside the tenderloin. There’s much more to a pig than just the basics; a good butcher or chef can make magic of any part.

Lardo, fatback cured with rosemary and other spices, is a fine incarnation of this waste cut. It’s creamy and spreadable like butter.

Try Spangler’s version at Rosemont Market, or his mortadella that emulsifies the fat with meat. Or make your own, as Andy Lindberg instructed in his curing workshop. This winter, use salt pork for comfort in a pot of baked beans. I’m enjoying the recipes in the Cooking Down East and Dishing Up Maine cookbooks. Or drop in on one of the many mainline churches (with declining congregations, no doubt) that host those true New England baked bean — and chowder — suppers. Salt pork is the base of a good chowder, too. And don’t forget chicharrones, a/k/a pork rinds or cracklins. At the French-Canadian Pocket Brunch, Fore Street’s Nate Nadeau topped his yellow pea soup with crunchy pork croutons from those Yorkshire hogs from South Berwick his restaurant favors. Cantina El Rayo serves a vegetarian chicharrones de harina bar snack for those who don’t eat pork.

Why wouldn’t pig ones be so? At tony Primo in Rockland, Melissa Kelly even serves pork heart raw, puttanesca tartare-style for her “La Ringrazio” nose-to-tail feast. Primo is closed for the season, until May, but have heart.

Its coppas and prosciuttos (for perennial pork saltimbocca) are drying over winter. Red Wattle piglets arrive on Primo’s farm each spring to fatten up for fall slaughter.

to watch Brimmer pick tracheal tubes out of the tissue, but the effort is worth it. Unfortunately, you won’t find lung on any restaurant menus. The US bans its commercial consumption due to fears of disease and contamination. Lung must be served ultra-fresh.

THE PORK BELLY PIT

The pigstrami (pork belly prepared pastramistyle) I tasted at David Siegel’s now-defunct Belly Timber in the other Portland was magic.

Can we say “kosher-style”? Someone should make pigstrami here. Pai Men Miyake maybe, with their belly-centric soup bowls?

Didn’t I have pastrami in my ramen at David Chang’s Momofuku Noodle Bar in New York?

Miyake also makes yummy Chang-inspired pork belly buns. They’re elevated at Tao in Brunswick as Grandma Tang’s roast pork buns, where the meat (actually from the shoulder) is first tenderized in a sous vide bath. Also in Brunswick, El Camino braises pork belly in apple cider for tacos, so soothing when it’s cold. Kushiya Benkay’s new yakitori outpost in Portland also grills Berkshire pork belly (Kurobuta) on a stick, though it’s not local, but from the Midwest. Braised belly also gives a boost to Johnny’s Tri-Pork Cuban Sandwich at Sonny’s.

And is anyone selling or preparing secreto, the little-known thin steak popular on the Iberian Peninsula? You’d think diners on this peninsula would embrace this juicy, red cut of pork belly, similar to beef skirt steak.

Standout newcomer Gather is already famous for its country pork terrine, served with pickles and crusty bread. Most might not realize the ground pork from the leg and shoulder is bound together with a bit of soft liver. It adds background flavor that doesn’t overwhelm the dish. Straight pork liver can be strong.

Some authentic Chinese restaurants serve stir-fried pork liver (you have to ask for it).

Old-time butchers like Bob Bisson in Topsham and Ray Tetreault of Vegetable Corner in Harpswell grew up on pork liver pan-fried with onions, a preparation we’re more accustomed to now with calves’ or chickens’ livers.

TROT, TROT TO BOSTON

Pigs’ feet, which have graced haute-cuisine menus for years now, are also made for stock, which Fergus Henderson calls “trotter gear,” a sauce amplifier that turns quite gelatinous when refrigerated. What about crispy pig trotters, served with Maine lobster relish and lobster aioli on a fancy menu a few years back in San Francisco? Primo in Rockland serves zampone, a boned-out trotter, stuffed with sausage and sewn up, and braised, often with lentils, like cotechino. In his new book Salumi, Ruhlman calls zampone “one of the coolest hog dishes ever created.”

HAMS ARE FOR ROASTING

Most Americans get their hams from Smithfield (or the equivalent), pre-cured and cooked, and often pre-sliced. But what about treating a bone-in leg cut as a roast? You’ll get the added gift of bone marrow, delicious when roasted and spread on toast. Squire Tarbox Farm of Westport Island raises those coveted Red Wattle pigs on all-organic feed and pasture. Owner Kyle De Pietro sold me on a small ham roast at the Brunswick market. I brined it with molasses and cooked it according to Tamar Adler’s instructions in her lyrical An Everlasting Meal: Cooking with Economy and Grace. (See my blog at baltimoregon. com for the details.)

And more people are hanging hind legs in their basement for DIY prosciutto. Harriet Fasenfest, again from the other Portland, is a great resource on dry-curing your own hams in her A Householder’s Guide to the Universe.

TAILGATE

The New York Times calls pig tails (and chicharrones) a top dining trend to look out for in 2013. Though small, it’s bony and rich, like more prevalent oxtail. Pai Men Miyake has experimented with pig tail as an appetizer.

And let’s hope the urban legend a recent This American Life program described, that breaded and fried pork rectum (bung) rings is passed off as imitation calamari, isn’t true. ^

The Black Birch in Kittery serves a braised pork shank with parsnip puree, bacon, and Brussels sprouts. And Vignola shares a recipe for braised pork shanks in the new edition of Sanders’s Fresh From Maine cookbook. Chad Conley would like to put pork shanks on his menu at Gather. But his butcher Ben Slayton only processes two to three pigs a week, yielding too few shanks to supply the restaurant for dinner plates.

Drawing encyclopeDia astrid bowlby opeNs the black box _by Nicholas s chr oed er To consider “Everything,” the new installation by artist Astrid Bowlby, consider what the sausage maker.

But first, let’s back up a bit — a few generations’ worth — to the introduction of the engineering concept of the black box.

Presently defined by Wikipedia as a “device, system, or object which can be viewed solely in terms of its input, output, and transfer characteristics without any knowledge of its internal workings,” the black box was a useful way for industrialists to conceal the nasty, brutish, or confusing process by which something gets made.

Today, there are all sorts of black boxes — computers, credit analysis reports, Uzbeki sweatshops — but one of the most robust early examples was the sausage maker. In you place the mysterious miscellaneous offal, and presto, out comes a perfectly packaged sausage link.

The concept is useful in thinking about “Everything” — and Bowlby’s work in particular — because though it may be the most uniquely labor-intensive show I’ve ever seen in Portland, it completely turns the black box on its head.

Bowlby, a distinguished artist and sculptor known mainly for her ink works of abstract and impenetrably dense black fields, is devoting the next six weeks to the task of producing a countless number of representational drawings within the USM gallery.

Working in-residence from a small studio in the vestibule, she draws the images plainly, in black ink on large unfurled spools of white cotton paper, which she affixes in animated patterns throughout the gallery.

Not yet one week in, she has easily drawn over a thousand discrete images, all by hand.

Objects, animals, artifacts — she applies them to paper in no discernible order. Not a hint of narrative; aesthetic detail bare minimum. Besides medium, and the fact that there are no second takes, their only criterion seems to be that they be representational. Indeed, anything that has a name, Bowlby will draw it. She has taped handwritten lists of hundreds of things (supplied by her students)

to the walls of the studio, and placed a bowl for visitors’ suggestions in the hall (I submitted Russian tortoise, parade float, and record stylus . . . fingers crossed!).

This is particularly significant for those familiar with Bowlby’s past body of work, where, often, canvases or cut-paper accumulations of crawling, disarticulate lines would become collected into densely unified masses of blackness. They weren’t violent; they were cold, machinic, and inscrutable, and their final form always seemed to amount to more than the sum of their parts. In other words, they both conceptually functioned and appeared to the eye like a black box.

In “Everything,” by stark, liberating contrast, the entire process is visible all the way through the production chain, making the radical, often impossible step of rendering the artistic process both noncommercial and completely transparent.

Line drawing, especially how Bowlby practices it here, is one of the most basic and accessible forms of visual art. It takes a certain knack to employ it conceptually, and Bowlby quite impressively does so here. Of course, her project has benefited from some inspiration. In her studio, she keeps a copy of the influential children’s book Harold and the Purple Crayon (among others by Silverstein and Dr. Seuss), and texts by the artists Claes Oldenburg, Pierre Alechinsky, and Jean Dubuffet, each influential in 20th century pop and “low” art movements. Depending on your perspective, “Everything” might also provide insights into practice, imagination, differentiation, or visual language. But with such ambitious vision and plainly accessible terms, there are simply tons things this work could be about, and doubtless more will emerge this infinite catalogue of things takes a greater life of its own. ^

PLAYING FOR EFFECT The Public Theatre’s Hounding cast.

A certain kind of farce distinguishes itself among theatrical forms much as pigs distinguish themselves among the farm animals: by its fondness for playing in the mud, by its grinning, no-nonsense intelligence, and by the tasty saltiness with which it is often served. To be clear, no actual hogs make an appearance in the farcified remake of The Hound of the Baskervilles, playing at the Public Theatre. However, the show frolics in rich comic muck of puns, farts, men in drag, and men mouthing long sequences of squishy sounds; it cannily and gleefully sends up its own theatrical conventions; and it salts the mood liberally with myriad boob sight-gags and fellatedpony jokes. In short, this adaptation, by Steven Canny and John Nicholson, is not your Basil Rathbone’s Sherlock Holmes mystery, nor even your Robert Downey Jr.’s. Rather, this Hound serves its tale of murder on the moors firmly in the spirit of Monty Python, and under the direction of Janet Mitchko, it wallows in that spirit with gusto.

The mystery itself hasn’t changed much: When Sir Charles Baskerville is found dead on the moor outside his estate, Holmes (Michael Frederic) and Watson (J. T. O’Connor) have to figure out whether the culprit was indeed the spectral hound of gory Baskerville lore, or a more mortal killer — and whether that killer now threatens the heir to the estate, Sir Henry (Dan Matisa). Possible suspects include the strange house servant, Barrymore, played by Frederic; Barrymore’s wife, played by Frederic plus balloon breasts; the eye-patched naturalist Stapleton (Frederic once again); and his oddly Brazilian sister Cecille, played by a Frederic now ravishing in red.

As these casting notes suggest, this Hound is a careening romp of quick changes, as in the style of The Complete Wks of Wllm Shakespeare (abridged) or The Mystery of Irma Vep, and it also includes the meta-theatrical mugging that usually accompanies such shows. First of all, the actors are playing actors, and in fact they are introduced as such right at the top; we are watching a play within a play.

Their set is a simple one of gray stones, one of which rolls around to stand in as sauna bench, carriage, bed, and other items; at the back is a screen for projecting decidedly non-Victorian pop references, and scenesetting shadow puppet cut-outs of first Big Ben, then Baskerville Hall. The show they put on is of high groundling quality and mood: Cobbling the plot together with bad wigs and hand puppets, the actors slip in and out of character to berate each other, have a laugh, look around for botched sound cue, or draw extra special attention to their impressive balloon breasts.

They seem to be having a high time of it as they do. All three actors pull off the fast-paced comedy with skill, great energy, and clear relish. Frederic and Matisa, the two who play multiple characters, are often breathless from their quick-changes, and they pull out the stops with their over-thetop accents and postures to distinguish between them. As Sir Henry, Matisa has a rugged, man’s-man joviality that can melt instantly into tickle-party giggling with O’Connor’s Watson, who also has a killer deadpan. His priceless expression, after hearing a malapropism involving the words “pony” and “sucking,” was one of my favorite single moments of the show.

For the theater-goer who’s leery (or weary) of bestiality jokes, make no mistake: this Hound is not for you. Another point of contention for audiences might be what some might call an over-reliance on homoerotic innuendo as fodder for humor — Oh my God! Two men in a compromising position! — which feels a little dated. But the show is goodspirited and tireless in its silliness, and its three actors pull it off with dashing, giddy lunacy. So if your theatrical tastes run to the groundling, check out the Hound. You’ll be as happy as a pig in — well, you know. ^

books Crossing the divide roorbach’s newest book tastes oF envy, mystery _by D eir D r e Fu lton Secrets and food and celebrity and bodies.

These are the subjects of Maine author Bill Roorbach’s new novel, Life Among Giants, a literary mystery with a tinge of soap-opera sudsiness.

“I have a thing about last meals,” our narrator announces, the first line of the book, a conversational opener that invites the reader to sit down and dig in. “My folks, for example.

They did pretty well in the last-meal department, beautiful restaurant, family all around them, perfect sandwiches made by someone who really cared about food . . . The point is, I like to eat every meal as if it were the last, as if I knew it were the last: savor every bite, be there with the food, make sure it’s good, really worthy.

And though it’s an impossible proposition, I try to take life that way, too: every bite my last.” (The sandwiches were BLTs, in case you’re wondering.)

Roorbach, an award-winning writer who previously taught at the University of Maine at Farmington and still lives in that college town, weaves a whirling tapestry — the strands sometimes just too flimsy to grab hold of — centered on David “Lizard” Hochmeyer, a strikingly tall, athletic man, his flawed family, and their neighbors across the pond at the High Side mansion. Namely, Sylphide, a world-famous and incredibly alluring ballerina.

There’s a comparison to Gatsby to made here (and many have made it, including Publisher’s Weekly). Lizard is naturally drawn to the wealthy, glittering people across the way — they are just as damaged as everyone else, of course, maybe more so — and sucked into their scintillating, dangerous vortex. Even as they years go by and Lizard makes a life of his own, his thoughts and desires return again and again to Sylphide and the High Side. “She’s my mainstay,” he says.

Eventually he heeds those desires, drawn back to his roots for a final showdown, an unraveling of the lingering mystery: Who killed his parents, shot them point-blank right in front of him?

And why? Secrets. Celebrity.

Other mysteries go unsolved. The mysteries of the human condition — how to deal with grief, how to discover your true calling, how to help loved ones who are struggling. Lizard copes with the help of food, and bodies. Cooking and sex. Roorbach’s descriptions of both are simultaneously sensuous and matter-of-fact. We read about “fresh pickles and cornbread

and actual chitterlings and thick pork chops, mashed potatoes and gravy, collard greens with pig’s feet, sweet potato pie with a ginger-pecan crust.” Lizard admits that he believes “the food would shield me, and not in some vague way.”

As for the women in this book, they are muscular and powerful.

One gets the sense that Lizard is constantly seeking redemption, never able to find it because he is unable to fully articulate what he wants or needs from the people around him. Roorbach’s choice to make frequent chronological leaps back and forth in time underscores Lizard’s own inability to get the events of his own life to make sense. (It also serves, occasionally, to confuse the reader.)

But secrets are not meant to be easily uncovered. As Lizard reflects, midway through his own journey: “Our secrets gave us power.

And then they took our power away.

From whom had we learned that?”

Roorbach’s answer seems to be: Celebrities or not, we learn from the giants all around us. ^

Eating up A Severe Joy

a four-Song eP, and Some b-SideS, come out of nowhere On stage a couple Fridays back, opening for Paranoid Social Club (who also have new work on the way shortly), 6gig frontman Walt Craven was as relaxed as I’ve ever seen him. “It’s hot up here,” he said at one point. “I’d take off my sweatshirt, but then you’d see how fat I am. So I’m just going to keep it on and sweat.”

The man is not fat. But the band, which has tentatively been getting back together for gigs after nearly a decade apart, still sound huge. Jim Begley was running sound. He looked over at one point, just after a harmony-filled and quickly delivered chorus of “what I found I found myself,” and said, “No one else does that.”

It’s a mix of heavy and melody that is, indeed, rare, and not just around here. There was a rather embarrassing time when I would have called it “nü-metal,” but it’s really just a combination of the down-tuned sound of hardcore, a sharp industrial distortion, and ’90s-rock vocals. They keep grunge’s sing-along qualities, but with a meaner bottom end.

And now, 10 years since their second full-length, Mind over Mind, they’ve dropped the surprise Dogs EP, with four new songs that again explore these mixes of heavy, driving rhythm and bright melody (they’ve also unexpectedly released four B-sides from Mind over Mind, including an alternative version of the excellent “Free”).

Why not? Post-6gig projects like Ruler of the Raging Main and Lost on Liftoff have come and gone, and we know Craven and drummer Jason Stewart don’t have Sidecar Radio rehearsal to worry about anymore (and you want to talk pigs? Former Sidecar frontman Christian Hayes likes nothing better than a full-on pig roast).

FWAX TABLET F as the landscape of listenable music gets bigger and bigger, the simple question — what to listen to? — becomes harder every day. it’s like we’re standing in an enormous supermarket, hungry for dinner, as workers tirelessly add shelves of products to the ends of every aisle. indeed, such a bottomless well of choices can be paralyzing to the listener, and stultifying to an attempt at an enjoying an experience of music. if aggressive freedom of choice is bumming you out, you might make for yourself a trap to help keep focused. how convenient, then, that the forward-thinking FlAsk lounge debuts the new monthly series trap night, a more beat-driven offshoot of the Big eAsy’s long-running Wednesday series rap night. managed by mcs pensivv and el shupACABRA, the evening is a much-needed next step for area hip hop, collecting beatmakers and producers for official sets rather than the open mic’d free-for-all of the big easy. cleverly, the trap folks whittle your options down even more by staging their event Sunday nights, while most other cultural producers are asleep or plotting their next moves. let them apprehend you February 10, look for other Sunday entrapments throughout the winter, and

and precise pace, with Craven classically at the very top of his range, his voice breaking with the effort: “I think I am one of the lucky ones.” The ultra-quiet bridge building into the screamo finish is just the kind of dynamic this band have always done right, bassist Weave and guitarist Steve Marquis in lock-step and willing them forward.

If you want to listen for it, too, you can even hear pontification of the band’s return in relationship lyrics from the likes of “Sleeping Dogs.” What would it feel like, Craven wonders, to spend one more night together, “or maybe more?” So good you decided to write songs together again? If they can keep pumping out choruses that punch you in the gut like this, let’s hope so.

Regardless of whether this is a short dalliance or a true rekindling, you’ll still love them in the morning. ^

Freedom can be taxing Pensivv

For a record collecting five singles released over the past year, a Severe Joy’s second full-length, cinematesque, pt. 1, sure does feel like an “album.” the 10 songs here simmer with a similar passion, digital beats and loops paired with electric guitar and bass parts, all beneath Jose ayerve’s varied vocals.

While it would be overstating things to call any of these singles “catchy,” they are each memorable, whether laced with dubstep wobbles, like the opening “if i ever Find you” or more along the lines of the postal Service, the production supporting melancholy moodiness. a Severe Joy continues the lyrical directness of the last album, too, with frank admissions like “i want a boyfriend who doesn’t have a boyfriend . . . who likes to smoke some pot/takes his clothes off when hot.” above all else, this album is incredibly tasteful. it’s blunt without being overbearing, playful without being silly, and there’s always a headbobbing verse around every corner. like much of ayerve’s work, there’s a hint of ’80s undercurrent, like the album could be the soundtrack to a remake of less than Zero, updated to get rid of the sport coats with the rolled up sleeves. “(meet me in your) helicopter,” especially, features the cleanest vocal delivery, straightforward like the Simple minds: “is this heaven? you ask/i think we’re close.” this album is also quite a bit more polished than the debut aSJ record from november 2011. ayerve seems to have both better mastered this new all-digital medium (all of the sounds here are his; chris Watkinson provided mastering for this release) and decided to be a little less combative with his listeners. this is a record with which it’s much easier to cohabitate.

Safer? possibly. but ayerve still pulls off a super-low dropbeat to open “liver in the Summertime,” his voice arching up at the end of verse lines in contrast, and doesn’t have any issues recounting that time “when my lips hit the edge of your thighs.” it’s delightfully moody. he’s also becoming something of a master of the fadeout. the last 15 seconds of a song here can be the most telling, as the beats and sparkle tend to fade away and leave a naked guitar part, or a bouncy bass, as the fleeting memory you’ll take with you. a close listen with the headphones will be rewarded. ayerve calls a Severe Joy an alter ego, and you can hear that desire in lyrics like “don’t tell me that i/am nothing but a really nice guy.” but there is so much recognizable about this record for any Spouse/ayerve fan, from his signature song in Spanish to his vocal lilts. it’s just more proof that no costume, no new skin, can mask a soul that burns this brightly. ^

F then again, freedom rules too. Four local celebrants, wriggled out from the shackles of their primary groups, have revived the experimental, original jazz group pAstel sound explosion. the act has been on again/off again since 2008 while its members have built the legacies of such local rock institutions as theodore treehouse, the milkman’s union, butcher boy, and the Waldos, but they’ve managed recently to slip away in the name of this invigorating project. at one time purported to be a 33-member collective, the pSe perform as a four-piece at local Sprouts cooperative, Saturday at 7 pm.

F it has been irrefutably proven that ladies love cool James, but recently released footage suggests that as far back as 1985, maine loved ll Cool J, too. a recently uploaded video made it all the way to Slate’s culture blog this week, showing the rapper, just 17 years old and anticipating the release of his first record, showcasing the art of scratching and beatboxing to a Waterville audience at colby college, who, all things considered, might have had their hands full understanding the art of rapping alone. it’s a beautiful, 24-minute piece of maine cultural history, and we suggest you look it up.

rock Guitar takes a back seat cuss’s thuNderous, visceral HigH gravity _by Nicholas s chr oed er The majority of people who listen to Cuss will invariably remember one thing.

Men are pigs.

In the abstract, they’re right, of course.

But everyone knows there’s more to it than that. On High Gravity, the singular Portland rock band take up the uneasy task of unpacking that claim like so many packages of processed sausage links.

Their eight-song album is a visceral, largely disgusting document, often of questionable digestibility. Yet it’s also a remarkable, strangely compelling piece of work. And like hungry bros in a breakfast line, many adventurous rock fans might inevitably find themselves craving it.

With guitar, bass, drums, and vocals, Cuss doesn’t have any formal tricks up its sleeve, yet no one would fail to identify their most active, distinctive force. The group’s core is the churning, grinding, tightly coiled rhythm section of bassist Sean Ferrante and drummer Elijah True, and the various ways singer Alex Merrill can think to deploy it for his immodest and tortured ministrations.

The meaty, 6/8 measures of opener “One Off” feel like the noise of a perilous factory, in which a stuck Merrill, easily one of Portland’s most physical and theatrical singers, emits actual squeals amid various missives of agony. “Bad Idea Beer” is a seasick waltz over which we’re treated to the thought process of a discharged laborer during a particularly afflicted evening. And though they smooth out the madness of “Vampire, Cancer” — and I can’t even tell you what time signature that’s in — it’s Merrill again who compels our attention, matching the intensity of the final refrain at every measure.

No slight to the guitar, but it’s clearly a second fiddle on High Gravity. The band was formed as a guitarless three-piece — even playing as a duo for a while — before landing former Whip Hands guitarist Thom Cote for this recording. He’s already left the band (and the country), but his input aids several tracks here, particularly in “Kid Poet,” a slowly mutating ballad in 11/8 that achieves moments of climactic trebly beauty before ceding to Merrill’s throaty dismissals.

Though music like this is uncommon these days, it’s not without its history.

sider Cuss to be bastard antecedents of a uniquely interesting — if a little maledominated — period of Midwestern underground rock. Architectural, laborious, repetitious, and chaotic, this style failed to catapult even its most tireless groups to prolonged success, which is one of the reasons why it’s captivating to see those same qualities revived in this band today. It makes them more interesting and deserving of trust. Call it stylistically passé, but nobody’s making music like this in Maine — at least not this good.

Seen another way, there’s an equally valid argument that this sort of music is so poached in its era that it’s become impossible to evolve, and so musicians have left it for dead.

Though this particular writer has never seen them, one gets the impression that Cuss are, first and foremost, a live band. Big as they are here, the highly kinetic qualities of Merrill and the pummeling rhythm section are almost surely more effective in person. And despite its many merits, High Gravity is a tough listen, especially all the way through. Even the hardiest, most masochistic listeners could bristle at the eight-and-a-half-minute litmus test of the miserable confessional “Life Problem.”

Look again at the men in most rock groups. By and large, they are cads, fops, brosteaks, meatheads, precious sensitivos, trustfunded lotharios, fantasy lumberjacks, and drunks. For better or worse, Cuss are none of these.

Their band is something special, and if you choose to interpret that claim not strictly as a superlative, we might probably all agree. Men are pigs, but sometimes they can kick up some beautiful shit. ^

CATHERINE O’HARA I don’t talk about things I truly love enough with you here. Week in, week out: “This movie’s bad and I’m funny because I noticed. FART! Laugh please!” Or even more common: “This person is famous and makes more money than I could ever comprehend, seems like a good time to mention their physical imperfections!” Enough! Well, not really, I’ll be back to that next week, but you know who I really love?

Catherine O’Hara. She’s funny, she’s beautiful, and she’s supertalented. I’d put in her everything if it were up to me. This week she’s in “Frankenweenie”, Tim Burton’s animated retooling of his original 1984 short film, but why not enjoy her excellence in the following as well?

SCTV – Once you become indoctrinated to its Canadian nature, nonexistent budget, and general disregard for pacing and convention, this beloved 70’s-80’s era late-night sketch show soon reveals itself as one of the pioneers and finest examples of its form. O’Hara joined fellow soon-to-be stars John Candy, Eugene Levy, Rick Moranis, and more in zillions of awesome sketches that ranged from surprisingly highbrow to anything but, often within the course of a single sketch.

O’Hara made an indelible impression as fading Vegas entertainer and general trainwreck Lola Heatherton, whose catchphrase of “I want to bear your children!” handily trumps anything SNL could come up with.

For Your Consideration – After three consecutive hilarious improvbased comedies, Christopher Guest and his “Waiting for Guffman” gang went out with a relative whimper with this somewhat uninspired mockumentary about a not great-looking movie generating awards buzz and the deluded cast and crew involved, but it’s worth checking out for O’Hara’s performance (which generated actual awards buzz at the time) as a washed-up actress concerned about looking haggard on camera despite playing a character who happens to be dying.

“Consideration” turned out to be more sobering character study than uproarious comedy, but if you know that going in, O’Hara’s brilliant work can be better appreciated. FART!

Jews wrestle with pork preferaBly pastured, it’s no longer treif for many locavores _By l au ra mc ca n dl ish Rabbi Jared Saks, of Maine’s largest Jewish congregation, no longer subscribes to his religion’s most well-known taboo. An erstwhile vegetarian, Saks kept strictly kosher in Israel for his first year of rabbinical school. Then, upon moving back to New York, he read Eric Schlosser’s Fast Food Nation, and everything changed. He could no longer stomach industrial (even if kosher) meat. At the time, Saks couldn’t find any certified kosher, ethically raised beef.

“What really is at the core of kashrut is that G-d makes things holy by separating things,” says Saks, of Congregation Bet Ha’am in South Portland. “So I don’t say that I keep kosher, but for me there’s still an essence of kashrut at play every time I sit down to a meal.”

For Saks, and a growing number of progressive Jews, that means he only consumes meat from sustainable sources.

This movement catalyzed after the 2008 immigration raid that revealed abhorrent labor practices at the largest US kosher meatpacking plant, in Postville, Iowa. Saks initially ate “kosher-style.” But a locally sourced meat entrée became preferable to vegetables shipped in from overseas. Now,

After all, pigs thrive here in Maine.

They’re more sustainable than cows, devouring all our scraps except coffee grinds and citrus peels. For many (including this reporter), kosher is more about whether the animal lived in a holy way than how it died. Our tribe takes our cues less from the Torah, and more from nature.

David Levi, who plans to open Vinland, a hyper-local restaurant in Portland, teaches cooking classes on everything from pork salumi to the Italian-Jewish cuisine of his heritage (he grew up around a lot of prosciutto). On his blog, he calls for embracing food that embodies the Jewish social-justice concept of tikkun olam (see davidscottlevi. blogspot.com/2011/10/my-kind-of-kosher. html).

Maina Handmaker would agree with that view. She loved pork as a child in Hong Kong, then went vegetarian in high school in Kentucky and for most of her time at Bowdoin College. Apprenticing as a student on Milkweed Farm in Brunswick, she experienced the magic of bacon raised on-site.

“As a Jew and just as a person, I feel more connected to the ethical principles of

sustainable agriculture than I ever did to the isolated, ancient rules of kashrut,” says Handmaker, who works for Six River Farm in Bowdoinham.

“Following a law in the Torah is pretty esoteric in comparison to what I can watch on these farms and know and feel good about.”

Previous generations of Jews in Maine first embraced lobster while still shunning pork. “Both lobster and pork are equally forbidden,” says David Freidenreich, a Jewish studies professor at Colby College, who, despite keeping traditionally kosher, chose to live in Portland to be near the city’s excellent restaurants. “Even when Jews abandoned other Jewish food practices, they would refrain from eating pork. At the same time, by eating lobster, Jews were affirming their identity as Mainers.”

Rachel Connelly, a professor of economics at Bowdoin College (full disclosure: a colleague of my husband), occupies a complex middle path. Her family (including son Martin of Little Red Cup Tea Co.) keeps

“modified kosher.” Shellfish is in, but pork is out; no exceptions. They consume no leavening or forbidden grains during Passover, but a shrimp sandwich without bread would be fine then. These food choices remind Connelly she is Jewish and “that brings with it a set of obligations and joys.” For many still, abstaining from pork (like fasting on Yom Kippur) is the clearest way to mark to the world they are Jews. It’s about staying connected to the traditions of your ancestors, something larger than yourself. ^

Through the glass wall of an aquarium tank, a killer whale emerges with its giant cartoon face, imitating playfully the movements of its former trainer Stéphanie (Marion Cotillard). You almost forget that a little earlier the creature had

ripped her legs off. That accident is just the start of a litany of calamities. On the bright side, Stéphanie emerges from her post-accident depression, forms an unlikely liaison with troubled martial-arts fighter Ali (Matthias Schoenaerts), and adjusts to mobility with her new prosthetics. But then people get fired, love is betrayed, families are broken up — so that when a

little kid is standing on an icecovered pond, you pretty much know what's going to happen next.

114 minutes | railroad square In J.A. Bayona's neo-disasterfilm, everything but the carnage is cheap. Appropriating a "true story" about a family torn apart

by the 2004 Thailand tsunami — the Spanish clan who inspired it have been Anglicized in the form of Naomi Watts and Ewan McGregor — he alternates between intense set pieces and sub-Spielbergian drivel. The tsunami scenes that bookend the picture achieve a visceral splendor; disconcerting sound design and brutal gore effects make them painful to watch.

For those few minutes, The Impossible feels like a new type of survivalist movie, one that puts you through the same hell as its characters. But the only thing filling time between those two heart-pounding scenes is fauxinspirational melodrama, with every emotional moment — lives being saved, families being reunited — backed by an ingratiating musical score and crass camera movements. The hokum can wear you down worse than the tsunami.

In the January 11 Portland Phoenix, book reviewer Charles Taylor lauds Kate Moss — the notoriously waifish model — as the “most extraordinary photographic muse of our era.” He takes great pains to chide the “moralists” (don’t you just hate moralists?) who objected to her well-paid gig (about $9 million a year) as the icon of ultra-skinny female beauty, concluding that it’s “cheering” how she’s “outlasted the moralists.”

Meaning, I suppose, those stolid folks who dared to observe and report that super-skinniness could have a deleterious effect on impressionable girls and young women?

What’s up with the Phoenix for running this review? Thankfully, the Huffington Post

commenters ran roughshod over the book, especially her comment that she “didn’t really have to write anything” for it. Good on ya, HuffPo. If Taylor was a journalist worth reading, he would have given some even-handed time to the issue of women and body image. Yes, the photos are artfully striking, but there’s a huge social conundrum at issue here. You can’t just blow it off as the screechings of those damned moralists.

Anyway, ask Mr. Taylor to give me a call the very minute he advises his teenage daughter to look just like Kate Moss. But I kinda think some of that reprehensible moralism might be catching up to him by then.
