Green Goddess Crunch Sandwich ¼ cup finely chopped chives ¼ cup mayonnaise ¼ cup tarragon ¼ cup Greek yogurt 1 lemon, halved 2 tablespoons olive oil, plus more for drizzling Kosher salt, freshly ground pepper ½ head of butter or Bibb lettuce (about 2 ounces), large leaves torn ¼ English cucumber, thinly sliced

Ultimate Caprese Salad

1 avocado, thinly sliced 4 slices grainy bread 8 ounces fresh mozzarella, sliced ¼ inch thick 2 cups sprouts (such as broccoli sprouts or alfalfa)

Place chives, mayonnaise, tarragon, and yogurt in a blender. Add zest and juice of 1 lemon half, then add the oil; season with salt and pepper. Purée until smooth. Squeeze juice from remaining lemon half over lettuce and cucumbers, drizzle with oil; season with salt/pepper, and toss. Smash avocado between 2 slices of bread; season with salt/ pepper. Add lettuce and cucumbers and top with mozzarella and sprouts. Spread remaining 2 slices of bread with ¼ cup green goddess dressing and close sandwiches.

1 pint mixed cherry tomatoes, preferably heirloom, halved 7 tablespoons olive oil, divided Flaky sea salt 2 pounds tomatoes, preferably heirloom, cut into thin slices or wedges 8 ounces mozzarella, room temperature, torn into pieces Coarsely ground black pepper Small basil leaves and toasted country bread & balsalmic vinegar (for serving) Toss cherry tomatoes with 1 Tbsp. oil in a bowl and season with salt. Arrange tomato slices on a platter, season with salt. Arrange mozzarella over tomatoes; lightly season mozzarella with salt. Spoon cherry tomatoes over salad and drizzle with 6 Tbsp. oil; season with pepper. Let stand 30 minutes to let flavors meld. Top salad with basil and additional salt and oil, if desired. Serve with bread and balsalmic vinegar.

Bring guajillo and morita chiles and 1½ cups water to a boil in a medium saucepan. Cover, remove from heat, and let sit 30 minutes to let chiles soften. Place fish in a large bowl or baking dish. Transfer chile mixture and soaking liquid to a blender. Add orange juice, achiote paste, 4 garlic cloves, ¼ cup lime juice, and 1 Tbsp. salt and purée until smooth, about 2 minutes. Reserve 1 cup chile sauce for serving; leave uncovered at room temperature. Pour remaining purée over fish; toss to coat. Cover and chill 1–3 hours.

Fish Tacos al Pastor 10 guajillo chiles 3 morita chiles 3 pounds skinless striped bass, cut into 1-inch strips ½ cup fresh orange juice ¼ cup achiote paste 5 garlic cloves, divided ¼ cup plus 3 tablespoons fresh lime juice 1 tablespoon plus 1½ teaspoons salt

Meanwhile, mix onion, habanero chile, pineapple, 3 Tbsp. cilantro, and remaining garlic clove, 3 Tbsp. lime juice, and 1½ tsp. salt in a medium bowl. Cover and chill until ready to use. Prepare a grill for medium-high heat; grill fish, leaving a few inches of space between each piece, until marinade is dried and begins to caramelize and char, 2–3 minutes. Using a fish spatula, turn, and continue to grill until charred on second side, 2–3 minutes more. Transfer to a cutting board and let rest 10 minutes.

Grill tortillas until just beginning to char, 30 seconds per side. Top each tortilla with a piece of fish, some reserved chile purée, and a spoonful of pineapple salsa. Top with cilantro. Serve with lime wedges.

Kosher salt 1 lime wheel 3 oz. Salted Watermelon Juice or fresh watermelon juice 1½ oz. tequila blanco ¾ oz. fresh lime juice Place some salt on a small plate. Rub rim of an old-fashioned or rocks glass; dip in salt. Combine watermelon juice, tequila, and lime juice in a cocktail shaker. Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold, about 20 seconds. Strain cocktail through a Hawthorne strainer or a slotted spoon into prepared glass. Garnish with reserved lime wheel.

Salted Watermelon Margarita


DOUGH

FILLING

3½ cups all-purpose flour

4 pints fresh blueberries, rinsed, drained

2 tablespoons granulated sugar 1½ teaspoons salt 1½ cups (3 sticks) chilled unsalted butter, cut into pieces

5 tablespoons cornstarch 1 teaspoon finely grated lemon zest 2 tablespoons fresh lemon juice

¼ cup chilled vodka

¼ teaspoon salt

2 tablespoons fresh lemon juice

¾ cup sugar, plus more for crust 1 large egg

Prepare a grill for medium-high heat. Cut each squash & score cut sides. Toss squash and 1 tsp. salt and let sit 10 minutes, then pat dry with paper towels.

4 medium summer squash or zucchini (about 1½ lb. total) Kosher salt ⅓ cup honey ⅓ cup unseasoned rice vinegar ¼ cup low-sodium soy sauce 3 Tbsp. hot chili paste (such as sambal oelek) 2 Tbsp. vegetable or sunflower oil, divided 1 lime, halved ½ small shallot, thinly sliced into rounds ¼ cup coarsely chopped cilantro leaves with tender stems 1 tsp. toasted sesame seeds

Meanwhile, combine honey, vinegar, soy sauce, and chili paste in a small saucepan. Bring to a simmer over medium-high heat and cook, stirring occasionally, 5–7 minutes. Remove from heat. Stir in 1 Tbsp. oil. Toss squash with remaining 1 Tbsp. oil in a large baking dish or plate. Turn squash cut side up, then brush with glaze. Grill squash cut side, about 3 minutes. Continue to grill, turning every minute or so and brushing squash with glaze on cut sides, until just tender, 6–8 minutes total. Transfer squash to a platter. Squeeze juice from 1 lime half into a medium bowl and add shallot and cilantro; season with salt and toss to combine. Drizzle squash with any leftover glaze.
