For the Cajun seasoning (will make enough for future meals)

• 1 tbsp fi ne sea salt • 1 tsp caster sugar • 2 tbsp smoked paprika • 1 tbsp garlic powder • 1 tbsp dried oregano • 1 tsp turmeric

1. Preheat the oven to 180°C and arrange the chips in a single layer on a baking tray (you may need to use 2) - pop them in the oven for 40 minutes turning half way through

2. Heat some oil in a large, lidded pan. Cook the onion, pepper, carrot and courgette for 5 minutes

3. Add a splash of water and give everything a stir. Turn down the heat and cook for a further 10 minutes with the lid on

4. Add 1tbsp of the Cajun seasoning and cook out for a minute until fragrant.

5. Add the tomatoes, beans and marmite and simmer for 20 minutes

6. Serve the beans ontop of the chips – fi nish off with a sprinkling of grated cheese

Sweat the onion and pepper in oil for 5 minutes

Add a splash of water, turn down the heat and cook for a further 10 minutes. Add 1tbsp of the Cajun seasoning and cook out for a minute until fragrant.

Add the tomatoes, beans and marmite

Simmer for 20 minutes
