RESIDENTIAL MARKET OUTLOOK REMAINS STEADY AND STABLE

A

s we head into the cooler months, it is a good time to pause and reflect on where the residential market is heading for the remainder of this year given the prevailing weak economic outlook. The good news is that we continue observing a market that is holding up well. While there has been an expected slowing in activity and an easing in the national house price inflation since late last year, the first few months of this year have been better than anticipated. Our branches continue reporting plenty of activity, not just in the major metropolitan areas, but almost nationwide. We have still not seen any flooding of the market with property listings. In fact, most areas are still reporting tight stock levels and fairly good sales cycles. Buyers and investors are still keen to get into the market and the banks are still lending. A review of cash sales in the Cape metro for example reveals that some 60%–80% of sales in the top end areas are still full cash transactions and

mostly to South African buyers. We are also still seeing plenty of high value transactions in the luxury areas. While business confidence is at the lowest levels in decades, we are still seeing plenty of confidence in the property market. While by no means immune, there is an underlying resilience that seems to be carrying the market during this challenging phase. There is no doubt, though, that the challenges are mounting and affordability is a growing concern for buyers in the middle to lower sectors of the market. These are market realities that sellers need to take cognisance of. The key for buyers and sellers right now is to be aware of the economic influences and to expect further interest rate and cost hikes and to factor these into their buying and selling decisions. For serious sellers, there is still plenty of demand with well-priced properties still selling fairly quickly. Sellers will need to adjust to the slowing demand and price growth, though, and be cautious of what prices buyers are prepared

to pay, else they may risk losing out on a sale. Now, perhaps more than ever, working with a credible real estate agent will stand you in good stead. And, remember, if you are serious about selling, then a sole mandate is the way to go. The better-thanexpected inflation data and signs of stability returning to the currency give us hope that our economy can stabilise.

o far, 2016 has proven to be an economically challenging year. Despite this, statistics have indicated that the property market continues to be stable. Our City Bowl and Atlantic Seaboard agents have reported many qualified buyers looking to invest in property in these areas. This trend indicates that demand still outweighs the current property supply and shows continued confidence in the real estate market. The Atlantic Seaboard will always be one of South Africa’s most desirable locations for its Mediterranean feel and cosmopolitan lifestyle. Our Summer and Autumn editions of the Seeff Property Pages have focused on the Atlantic Seaboard, so going in to winter we will be exploring the unique energy that the City Bowl has to offer. There seems to be something for everyone in the City Bowl. I have seen just how socially positive, creative and community-spirited the City Bowl has become through events such as the Lions Head Full Moon Hike, First Thursdays and the Oranjezicht Market, to name a few. Neighbourhoods such as Oranjezicht, Tamboerskloof and Higgovale hold some of Cape Town’s true property gems. These green, leafy suburbs are close to the hustle and bustle of Kloof Street’s shopping district yet also offer beautiful parks and tranquil recreational areas. There are also many epicurean eateries, cafes and bars along this famous road

which have become popular with tourists as well as locals. The areas are also close to top schools, such as the Deutsche Internationale Schule Kapstadt in Tamboerskloof, Herzlia Highlands Primary School in Highlands Estate and St Cyprians in Oranjezicht. Considering the higher prices on the Atlantic Seaboard, the City Bowl offers exceptional value for young professionals and families looking to find the perfect home. Based on this, the demand for property in the City Bowl has increased due to fewer available properties on the market currently. We have seen a sharp increase over the last quarter in the average sales price of sectional title and full title property of between 21% and 22%. n the world of specialist safe manufacturers, it is the Döttling family that has set the industry standard for over four generations. Their products grace the insides of the world’s most expensive superyachts as well as the homes and villas of only the most well-todo across the globe. Karl Lagerfeld once collaborated with Döttling to conceptualise a personalised room installation safe, which is sheathed in high-gloss, chrome-plated aluminium, fully automatic, and aptly named “Narcissus”. Döttling technicians and artisans collaborate on restoring antique safes that date back to the days of the De Medici family in early Renaissance Europe. In fact, they have restored safes that belonged to the family itself. Each safe has a story to tell, such as the tale of “The Skeleton”. The specialists at Döttling are familiar with only the best that this fine craft has ever produced. So, when they purchased an antique safe from one of their regular clients, a well-known German private banker, and laid their hands on a safe originally made for the Prussian Emperor, they knew it would be something absolutely exceptional. Says Markus Döttling: “When we first opened the six-seamed door of this 120-year-old masterpiece, the view on display took the breath of even long-time staff members away. The most sumptuous chasings and engravings decorated the four-sided bolt work featuring no less than 14 locking bolts. We have seldom seen a more impressive example of Prussian forged art from the time of Emperor Wilhelm II.” Markus explains how, in their specialist circle, a revolutionary idea began to take shape: What if they were to make the inner workings of this safe visible, even when the doors were locked? In a unique feat of precision, the steel components of the doors were extracted and replaced with double-walled, 25mm-thick special Silatec bulletproof glass. In this manner, the world’s first “Skeleton” safe was born. Even when closed it allows a glimpse of its high-gloss, chrome-plated locking bolts and luxurious interior, consisting of the finest grained poplar and 15 Döttling watch-winders. A

hand-polished grand piano lacquer finish and cognac-coloured goat suede coverings round off the overall impression of an antique luxury safe that is no less than majestic. The customer who bought the first Skeleton is one of Döttling’s best clients. He already owns three “Legends” safes, yet he wanted the craftsmen at Döttling to make him something where his precious luxury watch collection would be more visible, while retaining a high standard of security. It was suggested that the bulletproof glass would be able to offer both visibility and safety, and he loved the idea. Markus emphasises that both the technical and aesthetic aspects of blending modern materials with an antique mechanical system are something no one has ever done before. Döttling has since received several orders for similar designs, but given the limited availability of antique safes, they are considering building the concept from scratch and giving it a vintage look. At 600 kilograms and €275,000 for an original, only a select few individuals will ever own one of these beauties. Security has never looked this good.

A CENTURY IN EACH GLASS

LOUIS XIII COGNAC "LOUIS XIII is the result of human genius, nature, and time", believes cellar master Baptiste Loiseau. Each decanter takes four generations of cellar masters over 100 years to craft, using a blend of up to 1 200 eaux-de-vie, the youngest of which is at least 40 years old. The result is a firework of aromas made possible by the successive layering of the eaux-de-vie.

N

o money in the world can recreate the tradition, heritage and rarity that has firmly established the iconic Louis XIII cognac as one of the ultimate luxury products to own, now available in the Cape through a white-glove delivery service for R48 499 a bottle. It was as fierce a battle as religious fervour alone can inspire. At the end of the Battle of Jarnac in 1569, pitched between two cousins, the Protestant Prince de Condé and the Catholic Duke d’Anjou, a metal gourd from which one of them sought relief during the fighting remained on the bloody battleground. Only the encrusted fleurs-de-lis testified to its connection to the throne. In 1850, Paul-Émile Rémy Martin I, landowner in the Cognac region of France, bought this gourd from a peasant in a nearby village who had found it on the battlefield, and the inspiration for the now-famous Louis XIII carafe was born. It would take another 24 years before it was finally put to use in glass form, and another 62 years for this carafe to be transformed into the fine crystal from which we pour this

liquid gold today. The Cognac region is a regal landscape, and no other place on earth is better suited for growing grapes. Under the effect of a perfect balance of influences from the ocean and inland, with a soil characterised by a high limestone content, this terroir allows the roots of the vine to become deeply embedded in the heart of the earth. Among these finest vineyards, the most prestigious of the six crus are classed as Grande Champagne, and every batch used to blend Louis XIII comes exclusively from these pristine, chalky lands. Yet, their selection marks but the start of a centurylong journey. The journey of the grapes for the next century is the combination of two exceptional lines of heritage. The Rémy Martin family has contributed 10 generations, in an unbroken line since 1724, of diligent Company Heads who have lived and prospered on these fertile soils, and built the most respectable cognac brand in the world. At their side through these ages have been the masters of their craft, the distillers and Cellar Masters who


have been the vigilant guardians of the treasures kept in the reserves. Today, the House of Rémy Martin has a large team of the world’s best-schooled and tenured distillers, from among which only the most talented will rise to become Cellar Master, the custodian of the next generation of Louis XIII. Passed down from generation to generation, the secrets of distillation involve searching for subtle flavours and controlling the heating process from which more than a thousand eaux-de-vie will be selected each year for presentation to the current Cellar Master, Baptiste Loiseau and the Rémy Martin tasting commitee. The Master will select the rarest components, lay them to slumber in tierçons barrels with incredibly thin walls, which encourage an exchange between the air outside and the eaux-de-vie inside. In silence, aging in these Limousin oak barrels, the eaux-de-vie begin their mysterious alchemy far from the gaze of humans, and wait patiently for the sacred moment of blending with the generations before. The Cellar Master is tasked to bring their own vision to the fore

in their generation’s blend, yet to remain committed to the tradition of Louis XIII. For this, the Master can draw on a treasure trove of extremely old eaux-de-vie in the art of blending, and in the final result, more than 1 200 eaux-de-vie may be included, some as young as 40 years. The result is always a firework of aromas and flavours on the palate. From its mahogany colour emanates a rich floral aroma with spicy fragrances. Jasmine dominates with a saffron tone. The good nose will detect five Chinese spices and the scents of Havana, followed by perfumes of flowers and exotic fruits and nuances of dried fruit and frankincense. The tongue detects fig and sandalwood and, in the words of former Cellar Master, Georges Clot, “When you discover Louis XIII, you become a different man.” Louis XIII has travelled the four corners of the world, always only in the best company, as the true ambassador for the French way of life. It was served at the Royal Courts of Europe in previous epochs, and later embodied the emotions of great historic moments by being present on the

iconic cruise liners of the 1920s, the maiden voyage of the Orient Express in 1929, and in 1984 on the first trans-Atlantic Concorde flight. As the world’s most famous hotels adopted Louis XIII, Charlie Chaplin, Roosevelt, Churchill and Cocteau rubbed shoulders in the company of this fine cognac. From 1938 Versailles to Josephine Baker in a rainy Paris, to Puff Daddy, Placido Domingo and Oscar de la Hoya; the history of Louis XIII has run parallel to the great names of every era. Perhaps its finest moment was De Gaulle celebrating Free France’s first Christmas in December 1944, toasting with Louis XIII. The creation of Louis XIII cognac in 1874 represents the absolute mastery of time, a succession of daring initiatives and commitment, and an unceasing quest for quality. Louis XIII ties a prestigious bond between the past and the future with an art that will transmit into future centuries, not quite unlike the cathedral builders of grand Europe who never saw the completion of their work, yet played their part in bringing the best of each generation to the fore.

1 SUPERYACHT OCTOPUS Greg was lying in bed with tick bite fever from a recent wildlife shoot when he received a call from the skipper of one of the world’s largest privately-owned power yachts, the Octopus. They were leaving Cape Town in an hour and were looking for images of the departure. Greg managed to charter a helicopter and be in the air before the boat left her mooring. 2 TWO OCEANS “I am a self confessed silhouette addict,” admits Greg. In true Cape Town style, the South Easter wind was howling from early in the morning for the Two Oceans Marathon. While following the leaders along the 56-kilometre route Greg captured this image near Lakeside. 3 SLACKLINE Cape Union Mart was looking for an iconic image for the BANFF mountain film festival. Greg managed to co-ordinate a shoot on a perfect Cape Town day with two slackliners. Set up across Union Ravine on Table Mountain, Warren Gans succeeded in walking the 150-metre line on his first attempt. 4 SCHOOLYARD BOOK While on an aerial shoot for a property developer, Greg captured a few art images as they were flying between sites. This vertical view of one of the schools on the Cape Flats resembles a book opened up, telling a different story to each reader. 5 BURRY Beloved Burry Stander, one of the world’s best mountain bikers, was killed in a tragic road accident in 2013. “Burry always made time to chat and made it all about you”, says Greg, “never about him. He gave life everything and will always be a legend.” This image was taken after a long day in and around Ceres during the Cape Epic MTB race. 6 CYCLE TOUR Cape Town is fortunate to host this world-class event on an annual basis. Greg follows the leaders around the circuit before heading out to

There are few photographers who have captured as many diverse aspects of life in Cape Town as has Greg Beadle. But, Greg’s talents and photographic excursions stretch way beyond our city limits.

G 5 capture more emotion through the course of the day. “Around every corner is another amazing scene to capture,” he says, “and every year those of us photographing the event try to find new angles.” 7 MOUNT AMA DABLAM This is a 6 812m peak in the Himalayas, evident on the trek to Mount Everest. The challenge on this expedition, explains Greg, was which photographic gear to take along as every extra piece of clothing or lens effects your performance at such high altitude. “Basically, you feel like you need a zimmer frame every time you reach even a slight incline.” 8 ÉCURIE 25 SUPERCAR CLUB Cape Town makes for one of the most photogenic backdrops in the world. reg Beadle is what you may call a serial entrepreneur, having published two books on motorcycle travelling in and around Southern Africa as well as owning and managing two other business interests, all of which is in addition to his work as a professional photographer. Born in Johannesburg but having made the Mother City his home, Greg has been capturing emotive images as a professional photographer since 1997. You may have seen his work hanging in the halls at Cape Town International Airport’s arrival area, and his sporting images have been showcased worldwide in newspapers and magazines. Currently, Greg is focusing on motoring manufacturers and private car collectors. He also spends a healthy dose of time in a helicopter documenting property portfolios for clients. In 2012, Greg founded The Bureaux – a flexible work habitat which offers clients services that range from a monthly desk to an executive private office suite. The service now has locations including Woodstock, Cape Town CBD, Sea Point and, most recently, the Water Club alongside the V&A Waterfront. Always open to new ideas, and having owned his own art gallery, Greg's latest entrepreneurial foray is the invention of a good-looking, re-usable framing solution for everyday art. Along with a friend, Greg is focused on launching the ArtGrip worldwide. While Greg has a busy work schedule, his priorities revolve around his family, including his wife Megan, newborn daughter Anna and his two dogs.

THE BEST HOLE IN THE WALL

NELSON'S EYE We stood in the doorway of the old Health & Racquet Club in Green Point, looked at one another, and all three of us turned around and bundled our gym bags right back into the boot of the car. Instead, we headed to the Nelson’s Eye for the best steak in town.

T

hat dinner was almost 20 years ago. The old Health & Racquet has since become a Virgin Active, and Green Point has undergone a complete metamorphosis, courtesy of the 2010 FIFA World Cup. But in a fast-changing world, the

Nelson’s Eye has stood still in time and continues to serve the very best steak in the country. That we have on good authority from friends in Pretoria with deep roots in the meat industry. The old portrait of Admiral Horatio Lord Nelson, with its cracked glass, still

hangs in the very same place and very little has changed at this Hof Street landmark adjacent to the Mount Nelson Hotel. The trees that grow in the road have grown taller and thicker and there are more tables at the back and upstairs. Like before, you cannot walk within a


mile radius at night without smelling the intoxicating aroma coming off a grill that churns over 150 steaks each night. In fact, more than a ton of the finest A-grade meat finds its way across the Nelson’s Eye grill each month. The secret to this place, in our view, is the combination of its absolutely unpretentious approach with a serious attention to food quality. Twenty-three years after he opened his doors, owner Steve Alberts is still in the house every night and jumps at greeting everyone who arrives or leaves – always with some quip. The place oozes character and care. Go look for glitz elsewhere. Steve grew up in Green Point in the 1960s. His dad, Arty Alberts (not the Lithuanian name with which he arrived on local soil), ran a restaurant down on the old foreshore for many years. Fishermen offered their catch for sale directly off the boats on Friday, just around the corner from Arty’s Hungry Eye. Arty's became a regular city hang-out where lawyers, politicians, business men and the working class would mingle and enjoyed a hearty meal and a good time between friends and strangers alike. The foreshore had a life of its own When not away at Boys’ High in the Paarl, Steve would learn his trade under the keen eye of his dad. Arty and his friend Jan, who owned the Cattleman steakhouse in Sea Point, were the first to ditch the greasy griddle when preparing their steaks, and introduced the char-grilled method to the city. Way up on Wale Street, broad enough for horses and carriages of old, the blacksmiths that sent the wagons down to Adderley Street used their skills to make those first wrought-iron grills. Nelson’s Eye was started in the 1960s by a larger-than-life character, Willey Kingsley. Willey dabbled in motorsports and repaired the traffic department’s Harley Davidsons. He rose to infamy when he was taken to court by a well-off Wellington family whose progeny practised as a medical doctor in town. Willey’s sins? He sold them a Porsche that he welded together from two old Porsche chassis; front of the one, back of the other. A bad welding job it was, and everyone in town knew of the Porsche that ran like a crab. A couple of equally colourful characters owned the place through the years until Steve bought it in 1993. Long paid for, along with everything in it, you can feel the generosity in the atmosphere.

You want more of something? It is there before you ask, on the house. Keeping his customers happy seems more important to Steve than squeezing a penny out of them. Steve says that he cannot complain, because his regular clientele and the international tourists from next door are more interested in quality than in price and it allows him to offer them only the best and to be generous to boot. We talk to Steve about the secret of his steaks. It is not in some mysterious sauce or spice, locked up in a safe in case the owner dies in an aeroplane crash. It is a simpler, yet diligent approach. After many years in the business, Steve buys only the best grade meat from the four or so most reliable and quality suppliers. He then ages his meat at 0 degrees for four to five weeks with a careful rotation system. The final touch is introduced by Tony, the master meat cutter for the past twenty years and the first face you see when you enter the house. This Rock of Gibraltar, Tony does no advance weighing or cutting in anticipation of trade later in the day. As Steve explains, restaurants that cut their six fillets and ten rumps individually early in the day and place the meat back in the freezer unfortunately allow the meat to dry out and lose its taste. Tony stands with the chef at night and cuts each piece individually as the order comes in. And because a well-done steak shrinks more than a rare steak, he considers not only the cut, but also the preparation method to ensure that every customer gets good value. A wide range of sauces, interesting salads and some hearty vegetables and fries or potatoes create a punch of a meal, washed down with a pretty decent set of choices on the wine list, catering for pockets of different depth. The dear Admiral Nelson would have given his (remaining) left arm for a chance to eat here if he was still alive. We recommend you book and ask for the front of the house, where you can see the performance behind the grill. Once you have eaten here and met Steve and his crew, you will want to bring your clients and friends back for any excuse.

Remember your infatuation with your first coffee percolator that woke you up with the perfect cup of java? Sci-fi promised a better future, and science has delivered. The smart home of the future has arrived and is popping up all over your neighbourhood.

S

mart home automation means being able to finetune the status of your house, whether at home or away. It gives you the ability to manage all the critical elements that make a house more than just a shelter. The scope of home automation services now available in Cape Town is quite remarkable. Programmable functions typically include: climate control, light and ambience, security and surveillance, networking and data, and entertainment. Several climate control features can now operate centrally, such as the thermostat, humidity monitor and timer system. Weather getting chillier? Gas fireplaces can be started on cue and blinds can be set to open at critical times of the day to let the sunshine through. Even under-floor heating systems and heated towel racks that may be considered as winter niceties can be set to operate at certain times. In summer, de rigeur air-conditioning units and air vents allowing for upward and outward drafts of hot air

can be programmed for ultimate comfort. Misting systems tied into the irrigation system offer relief on the patio. Too much electricity being consumed? In kicks the solar system’s stand-by power unit. Light and ambience features are perhaps the best known smart home technology to date. From a main control panel, or from a mobile clone, lights can be set to turn on and off, as can dimmers and combinations for mood lighting. More interesting is the automation of shutters, which allows for the play of sun through the house at different times of the day. When it comes to security and surveillance, upmarket South African homes demand state-ofthe-art technology. Of growing interest is the remote nanny-cam, allowing working parents to keep a watchful eye on their home and their offspring while still at the office, or the option of screening and granting long-distance access on a case-by-case basis to those who ring the doorbell. The biggest boom has come in the wireless and entertainment areas, now allowing a home theatre to screen a streaming movie for the

kids while other family members are enjoying their Apple music in a different part of the house, all while Dad is in his home office adding his final comments to a virtual project he needs to complete with his partners in Singapore. Perhaps it is the ease with which we have made touchphones and iPads part of our daily routine that has helped catapult this category of home investment forward at a

phenomenal rate. There will come a time, surely, when this level of direct control over the home will be as essential to the upmarket property as is the kitchen. Speaking to Walter Blersch, Sales Manager at Nuru Intelligent Buildings, a recent project in the City Bowl managed to include all of these features in their home automation solution for just over R750 000, yet he also mentions a similar kind of installation in Sandhurst, Johannesburg, where the client invested in absolute cuttingedge options, which totalled just under R7 million. Savour the Okavango Delta and its unparalleled wildlife population on horseback. The annual flooding of the area leaves vast swathes of the Delta inaccessible to vehicles, making horses the most natural and exciting mode of transport with which to explore.

U

p early morning at Camp Macatoo, we set off at a gentle pace. Around us, 450,000 acres of the untouched African bush is busy waking up with its trills, squeaks and smells. Moisture hangs in the air and we are wired after the exhilaration of our first day. Late afternoon yesterday, we had watched in awe as a dazzle of zebra interspersed with Red Lechwe galloped through the shallow water. It was a first for us to ride out into the wild with abandon, and we were wet to the bone from the water that splashed from the hooves of everybody’s horses. Sekongo, our guide, is quiet this morning. Yesterday he was full of stories; telling tales of the ever-changing landscape and the trees and the plants; and recounting one or two funny things that have happened to tourists through the years. He spotted the giraffe first, at a distance we could not believe as they were so well-camouflaged. Nature’s colouring book at work. I am getting a better feel for my horse today. Maybe my city smells have worn off by now. Yesterday, I could sense his excitement with the run and its freedom. Once, they too roamed these areas without bridles, I remember being told. Then Sekongo slows down… The finely-tuned senses of our horses have alerted him to some big game in the area.

Their ears help him to look ahead in the right direction and to find where the game is hiding. We see the elephant almost simultaneously and I can hear my heart go ‘thump’ in my throat. Fight or flight is as deeply embedded in my DNA as in that of my horse. Yet, she has now calmly dropped her head to graze. She is sending the other animals in the area a signal that they can relax and go about their normal daily routine. It is this kind of behaviour of the horses that allows us to get really close to the elephant – it is the prize of my trip and a moment never to forget. Why did we not book the longer excursion, I silently swear under my breath. That evening, back at the tented camp Macatoo, I take a few minutes to make notes in my diary about the photos I have taken that day. My partner has decided to go for a quick dip in the pool, and I find her there sipping cocktails and looking out over the vast floodplains in front of us. Today was big game day. Tomorrow, we will take the binoculars and indulge our love for birding. As we walk down for dinner, we cannot help but chuckle at the antics of some of the little baboons trying to catch a lift on the backs of their elders as they leave the watering hole. It may be a quiet dinner tonight. The other guests in our group are on honeymoon and have chosen to spend the night in


the magical treetop platform. As the sun begins to set, we are already discussing our next visit with John, the managing director. He explains how varied the experience may be based on the time of year and the flood levels. We were lucky getting early rains, so tomorrow he wants to exchange the truck with mokoros, a type of canoe commonly used in the Okavango Delta, to send us around the flood plains. John also tells us a bit about the history of Macatoo. A Cornwall native, he grew

up close to animals and has ridden horses as long as he can remember. Having been part of the team that originally set up African Horseback Safaris in 1995, John returned to Macatoo in 2007 after a three-year break guiding trips in Kenya and Tanzania. Katie, the camp manager, is an engineer who spent many years in investment banking before she stumbled across Macatoo about six years ago as a guest. They are an interesting pair who have clearly found a way to live their passions. The guides are all locals who

grew up with a love for the Botswana wildlife. Each has walked a different path before coming together as one happy crew here in the Delta. The night has grown quieter as the sun’s last rays have disappeared. We can hear some activity from where Modley, the horse manager, is still seeing to the care of our equine companions and making sure that tomorrow, when we are out on horseback again, they are at their very best. This is a classic hot cocktail that will warm the cockles of your heart as Winter sets in. It’s reminiscent of sunsets, silhouettes, and crackling campfires. The drink is made by blending a spiced butter batter with rum.

INGREDIENTS • 3/4 cup rum • 2 cups boiling water

FOR THE GARNISH • 4 sticks cinnamon • 4 star anise

FOR THE BUTTER BATTER • 1/2 cup unsalted butter, room temperature • 2/3 cup light brown sugar • 1/2 teaspoon ground cinnamon • 1/4 teaspoon ground nutmeg • 1/8 teaspoon ground cloves • Pinch salt

METHOD Mix together the butter batter ingredients in a large bowl and refrigerate until almost firm. Add boiling water and stir well until dissolved. Add rum and stir again. Divide among four hot beverage mugs. Garnish with star anise and cinnamon.

INGREDIENTS FOR THE DUCK BREAST • 4 duck breasts, scored on the skin, seasoned with salt and black pepper • 1 cup rice • 80g sugar • 4 rooibos teabags, tea leaves only FOR THE APPLE CHUTNEY • 2 Granny Smith apples, peeled and diced • 20g sugar • 20g glucose • 20ml water • 1 star anise • 2 juniper berries • 1 clove • 20ml sherry vinegar

FOR THE BRAISED LEEKS • 16 baby leeks • 5 sprigs of thyme • 100ml pale dry sherry • 100ml water • salt to taste FOR THE CARROT PURÉE • 2 carrots, peeled and sliced • ½ onion, sliced • 30g butter • 100ml cream FOR THE SHERRY FOAM • braising liquid from leeks • 80ml cream • 1 egg yolk • 50ml water

METHOD

PREPARE THE DUCK: Mix rice, sugar and rooibos tea leaves together and transfer to a square of aluminium foil. Fold up tight and flat, leaving no gaps in the foil. Using a fork, poke a few holes in the top part of the parcel and place in a pot on medium heat. Cover with a lid. Once this has started smoking, place the duck breasts onto a perforated oven tray small enough to fit into the pot. Controlling the heat so that it’s just smoky and not hot, smoke the duck for 4 minutes; remove and set aside. MAKE THE CHUTNEY: Place all ingredients except the vinegar and apple in a small saucepan. Heat until caramelised before removing spices with a slotted spoon. Add the vinegar and then the apples, together with a pinch of salt. Cook until brown, stirring to avoid the chutney sticking to the pan. Allow to cool.

Liquidise until smooth. PREPARE THE SHERRY FOAM: Reduce braising liquid and cream until sauce thickens; season to taste. In a mixing bowl, place egg yolk and water, and whisk over heat until fluffy. Fold a ladle of foam into the sauce to form the sherry foam. COOK THE DUCK BREASTS: Place duck skin-side down in a cold pan. Bring pan to medium heat to render fat. Once the skin is crispy, turn each piece and brown off the other side before transferring to a pre-heated oven of 180 ºC to bake for 6 minutes.

BRAISE THE LEEKS: Wash off the leeks under cold running water to ensure they are properly clean. Brown the leeks in a saucepan before deglazing the pan with sherry. Reduce by half and add the water, salt and thyme. Cover with a lid and cook until soft.

TO SERVE: Warm 4 plates. Place 4 leeks in the centre of each plate and spoon 2 dollops of purée onto opposite sides of each plate. Carve each duck breast into thin slices and place on top of leeks. Using two spoons, shape chutney into quenelles and lay on top of duck. Drizzle foam around the duck, garnish with chervil or a sprig of thyme and enjoy.
