Cheese and Tomato Tart 400g of puff pastry, thawed 1/2 cup of soft goat's cheese 1/2 cup of light ricotta 1/4 cup of whipping cream 3 eggs, beaten saving 2 teaspoons in a separate bowl 1/4 tsp of cracked black pepper A handful of cherry tomatoes 1 tbs of chopped coriander or basil 11 inch x 7 Inch quiche pan Preheat oven to 165°C. Lightly flour a working surface and place the block of thawed puff pastry dough in the centre. Roll the dough until it's 1/8 inch thick. Lightly butter the quiche pan and gently transfer the dough to the pan. Trim dough as necessary. In a large bowl, add the goat's cheese, ricotta and cream. Whisk until smooth and creamy. Add the beaten eggs and whisk again, add the pepper and mix. Pour the mixture on top of the dough. Top with the cherry tomatoes. Brush the sides of the pastry with egg or butter and bake for 30 minutes.

Pumpkin and Cheddar Muffins 250g plain flour 2 1/2 tsps baking powder 1/2 tsp salt 2 eggs
250ml milk 100g butter, melted 1 1/2 cups pumpkin, cubed and cooked 150g cheddar cheese, grated
Preheat oven to 180°c. Place disposable muffin cups/cupcake cups in a standard 12 hole muffin tray. Sift the cake flour, baking powder and salt into a bowl. Combine the eggs, milk and melted butter and mix into the dry ingredients. Fold in the pumpkin and cheese and spoon the mixture into the muffin cases. Bake for 20-25 minutes until a skewer inserted comes out clean. Remove from the baking tray and allow to cool.

CAFÉ BOHEME Walter and Sally Kaskonas of Jack’s Bakeries - the friendly faces behind Café Boheme - have one of those stories that make you proud of being part of this local community. Scottish immigrants, they’ve been working hard since they arrived in Mandurah, and a decade on, it’s a thriving business that employs over fifty locals. You can imagine our delight when they decided to set up shop at Mandurah Forum over eighteen months ago – all those freshly baked cakes and slices in walking distance!
“We make everything ourselves. We’re local and a family run, family supplied business,” Walter explains. If you’ve got a special occasion coming up, it’s the perfect time to pop down and see them – they also offer made-to-order celebration cakes.
MATSU SUSHI Australians have embraced Japanese food – its fine balance of flavours ensures it's popularity from school children to pensioners alike. Matsu Sushi is no exception, and manager Maryanne Corcolon can attest to the cuisines popularity.
“Our sushi is made fresh daily, all our ingredients are from local producers and we have a great range of sushi from vegetarian, chicken and seafood plus we cater to customers’ special requests,” she said. A former teacher in the Philippines, Maryanne has a degree in Home Economics that she utilises to train staff. It’s attention to detail that really sets them apart. “We make our own sauce and often receive requests for our signature teriyaki sauce, made to the owner – Simon Chen’s - recipe,” said Maryanne. While their Teriyaki sauce is a sure-fire winner, we’re also sure their new range of Katsu, Seafood and Chicken salads will be a hit amongst customers as well.
BELLA ITALIA You could be forgiven for thinking the menu is all spaghetti and pizza as it’s namesake might suggest, but Bella Italia is even more than this. Next time you’re in, you simply must try one of owner Jared Bramley’s pies. Having taken over the business in June 2013, Bella Italia is your go-to place for some of the best value and range in town – from chicken parma to fish & chips, Jared’s interest in food is evident on every plate.
“I use my own signature recipes and all the food is made on the premises,” he said. And then there’s the coffee. Once you try one made with quality Grinders Crema by a fully trained barista, you get the distinct impression this is someone who cares about what they’re doing. With a whole career in hospitality and customer service under his belt, Jared is even willing to put a money back guarantee on the table for any food or coffee purchased in April – now that’s putting your money where your mouth is.

Orange and Cranberry Bundt Cake
If our lineup of talented and dedicated food retailers hasn’t already whet your appetite, then have we got a tastebud tingling treat for you.
2 cups flour, sifted
1/4 cup vegetable oil
3/4 cup sugar
2 eggs large
1 1/2 tsp baking powder 1/2 tsp baking soda
Rind and juice of 1 medium orange
1/2 tsp salt
1 tsp vanilla extract
1 cup plain greek yogurt
1 cup cranberries, dried or frozen
1/2 cup milk Preheat oven to 350F/180C. Grease your bundt pan then lightly dust it with flour. In large bowl combine flour, sugar, baking powder, baking soda and salt. In a smaller bowl whisk yogurt, milk, oil, vanilla and eggs. Pour the wet mixture into the dry mixture and combine until blended, then gently fold in cranberries.
Pour the mixture into the bundt pan, it shouldn’t be more than 2/3 full and bake for 60-65 minutes until the cake tester comes out clean. Cool until safe to touch and remove from the pan. Cool completely and dust with some icing sugar.
Lunch Box Muesli Bar 50g butter
90g (1/2 cup) sultanas
110g (1/2 cup) raw sugar
50g (1/2 cup) rolled oats
60ml (1/4 cup) honey
75g (1/2 cup) self-raising flour
200g pepitas (pumpkin seeds) 1 Sanitarium Weetbix, crushed
We’ve got a weekend for two at renowned luxury getaway, Cape Lodge, to give away. Cape Lodge needs little introduction – this multi award winning, five star luxury boutique hotel in the heart of Margaret River’s wine region has led the way in destination travel in Western Australia for many years.
Preheat oven to 170°C. Line a 20cm (base measurement) square cake pan with non-stick baking paper. Place the butter, sugar and honey in a saucepan over medium-low heat. Cook, stirring, for 2-3 minutes or until the mixture is smooth and the sugar has dissolved. Set aside to cool slightly.
Combine the pepitas, Weetbix, sultanas, oats and flour in a large bowl. Add the butter mixture and stir until combined. Spoon the mixture into the lined pan and use the back of a spoon to smooth the surface. Bake in oven for 25 minutes or until golden. Set aside in the pan for 30 minutes to cool completely. Cut into slices to serve.

1 small onion, finely chopped 3 frozen puff pastry sheets, thawed 100g sliced ham, finely chopped 4 eggs 3/4 cup milk Preheat oven to 200ºC. Lightly grease a 12 cup muffin pan. In a small non-stick frying pan heat oil over medium heat. Cook onion for 3 minutes and set aside. Cut 4 x 10cm (diameter) circles from each sheet of pastry. Use to line muffin holes.

Combine onion, ham and cheese. Divide between pastry shells. Combine eggs and milk in a jug. Whisk with a fork. Pour over ham mixture. Bake for 20 minutes, stand for 5 minutes then transfer to a wire rack to cool.
Owl Sandwich Pimp your kids sandwiches using cookie cutters of any shapes. Decorate with fruits and vegetables to make those plain looking sandwiches something to get excited about.
Cannellini Bean and Tuna Dip (for the veggies)

400g tin cannellini beans, rinsed and drained
2 tbs lemon juice
180g tin tuna, drained
2 tbs plain yoghurt
2 tbs olive oil
Chopped veggies to serve
2-3 tbs fresh parsley or chives, chopped
1 garlic clove
