SOUTH DAKOTA STATE FAIR 2015
SOUTH DAKOTA STATE FAIR 2015
Come sew it, grow it, show it at South Dakota State Fair
Make memories and start new traditions By LUCAS LENTSCH SD Secretary of Agriculture
Our theme for the 2015 South Dakota State Fair is “Sew it. Grow it. Show it.” The theme will mean many things to many people, but is meant to highlight everything the fair has to offer, from the various static exhibits, to the livestock shows, to the variety of entertainment we have to offer. “Sew it. Grow it. LENTSCH Show it.” is also intended to remind fair goers of the memories they are making and the traditions they are starting. Sewing and growing memories and showing traditions — that’s what makes the South Dakota State Fair so special. A word that comes to mind when thinking of this year’s fair is “exceptional.” From the world-class livestock that will be paraded around the show rings by the state’s finest show men and women to the “just like Grandma did it” entries in the Women’s Building, fairgoers will be treated to the most exceptional exhibits on display. The entertainment is also exceptional. Our grandstand concert headliners, Kenny Rogers, The Band Perry and Huey Lewis and the News, will give fairgoers a superb concert

experience with the State Fair twist. On the free stages, close your eyes while listening to groups like Abbey Road, Landslide and Sherwin and Pam Linton and the Cotton Kings and for a few moments be whisked away to the Beatles, Fleetwood Mac and Johnny Cash live, in concert. The State Fair attracts exceptional vendors, so be prepared to do a little (or a lot) of shopping. Who can resist those exceptional State Fair favorites like corn dogs, cotton candy, funnel cakes and fresh-squeezed lemonade? Of course, there will be those new foods you just have to try, like gourmet flavored cheese curds or bratwursts that come in flavors like rattlesnake or alligator. Taking in all the exceptional things the South Dakota State Fair has to offer can easily take more than one day. For those who are going to stay around overnight, the State Fair also offers exceptional camping opportunities just a stone’s throw from all the action. Families have been camping at the State Fair for decades, coming back year after year to relive those traditions and make new memories. I invite you to take a day or two, or better yet five, and join me at the South Dakota State Fair. There is no better place for South Dakotans to shine than at the State Fair. Come sew it, grow it and show it at the South Dakota State Fair.

Birds and bananas and alligator brats Australian wildlife, exotic foods among the new attractions for 2015 State Fair By CAITLYNN PEETZ
HURON — The South Dakota State Fair in Huron is coming off a successful 2014 event and looking to grow and improve for this year’s fair. To do that, the fair has brought in various new attractions and vendors, in an attempt to draw in more than the 1,700 campers from the previous year. Candi Briley, marketing and events coordinator for the fair, said this year’s event is on pace to eclipse that number with more than 1,500 campers already reserving space for the event. The fair kicks off on Sept. 2 with a 4-H bake sale beginning at 12:30 p.m. at the National Guard Armory and the Red Wilk Construction Championship Bull Riding Bull Bash at 8 p.m. at the grandstand. 4-H buildings open to the public on Sept. 3 at 8 a.m. One of the new attractions at the State Fair is the addition of the Aussie Kingdom, sponsored by American Bank and Trust, displaying native Australian wildlife. The attraction will provide three shows each weekday during the fair and four shows on Saturdays and Sundays. Aussie Kingdom will also have kangaroos, wallabies, wallaroos and other wildlife on display for fairgoers to view the majority of each day. The monkey jockeys of the Banana Derby will run four races each day of the fair. In addition, more than 414 vendors will fill 500 locations across the fairgrounds.

“America’s favorite monkey jockeys” will run four races each day of the fair.
Available at food vendors sprinkled across the grounds will be new options for fairgoers to test, ranging from chicken jalapeno bacon bites to Dutch apple funnel cakes. Also notable, Briley said, are rattlesnake, wild boar, elk, buffalo samplings and alligator brats. Other vendors will host ag-specific exhibits and specialty shopping, along with face painting, caricatures and opportunities for oldtime photos to be taken. 4-H exhibits will be available in the poultry barn for the length of the fair, but because of the avian influenza outbreak across the country, live poultry shows have been suspended. The poultry barn will still host events throughout the fair,
including presentations on poultry health, updates on the avian flu and the Ag Heritage museum will hold an old-time poultry exhibit. Sept. 7 is Poultry Party Day: Poultry Education at the State Fair and will feature a “calling all redheads” contest at the NorthWestern Energy Freedom Stage. The redhaired person to most closely match the color of a Rhode Island Red Chicken will win a prize from the South Dakota Poultry Fanciers Association. Other activities include a “Something to Crow About: Bird Calling Contest” and the “State’s Largest Chicken Dance.”

SOUTH DAKOTA STATE FAIR 2015
Chili Challenge, Pork Butt Battle, Heirloom Recipe Contest accepting entries HURON — The South Dakota State Fair will host three separate food competitions at the 2015 State Fair: Jack’s Campers Chili Challenge, the Pork Butt Battle and the Greater Midwest Foodways Alliance Heirloom Recipe Contest. Jack’s Campers Chili Challenge is Sept. 4 at Horticulture Park. Registrations are now being taken. Participants from all over come to compete for the title of best chili. Cooking begins at 8 a.m. with the People’s Choice Tasting and judging beginning at 1 p.m. The first place team will receive $225, with $150 going to second place and $75 for third place. People’s Choice winner will receive $50. The Pork Butt Battle, spon-
sored by South Dakota Pork Producers and Advanced BioEnergy, will also take place Sept. 4. Competitors square off to see whose pork butt will come out on top. Cooking begins at 6 p.m. on Sept. 3 and competitors will cook through the night and the following morning to be prepared for People’s Choice Tasting and judging at 3 p.m. on Sept. 4. Top prize is $500, with $225 for second place and $125 for third place. People’s Choice Winner will receive $100. All winners will receive a trophy. The Greater Midwest Foodways Alliance Heirloom Recipe Contest takes place Sept. 6, in the Women’s Building Kitchen. The 2015 theme is “Family Favorites Never Served to Guests.” The
Family Heirloom Recipe competition seeks the state’s best made-from-scratch heirloom recipe of a family favorite never served to guests; can be a reuse of leftovers, something cobbled together on a busy night or just anything you can think of. Recipes must be from prior to 1950. Entrants will be judged based on history, the prepared recipe and display and appearance. First-place winner will receive $150, with $100 going to second place and $50 to third place. Rules and entry forms for all three challenges can be found on the State Fair website, www. sdstatefair.com, under the Special Events section. — Source: S.D. Dept. of Agriculture
Build A Bird contest added after avian flu ousts live poultry HURON — The South Dakota State Fair will host its first Build A Bird contest at this year’s fair. Sponsored by the South Dakota Poultry Industries Association, competitors will test their creative talents utilizing any materials to create a poultry or fowl exhibit in the contest. The exhibits will be on display in the Poultry Barn for the length of the fair. Judging categories include Most Creative and Most Lifelike and will be broken down to ages 17 and younger and ages 18 and older. A $100 prize will be awarded to the top winner in each category, with a $50 prize for second place. Entries will be judged on Sept. 4, and must pre-register prior to Aug. 29. Registration forms can be found at http://www.sdstatefair.com/special-events/all/builda-bird. Due to recent avian influenza
outbreaks across the Midwest, the live poultry shows have been suspended at the South Dakota State Fair. Live poultry may be absent from the 2015 South Dakota State Fair, but the poultry barn will still host plenty of events throughout the fair including several presentations on poultry health, updates on the Avian Flu, Ag Heritage Museum old time poultry exhibit and a lunch sponsored by Dakota Provisions. Sept. 7 is Poultry Party Day: Poultry Education at the State Fair and will feature a Calling all Redheads contest at the NorthWestern Energy Freedom Stage. Other activities include a “Something to Crow About: Bird Calling Contest” and “State’s Largest Chicken Dance.” — Source: S.D. Dept. of Agriculture

Bulls, bands and monster trucks Kenny Rogers, Band Perry among 2015 State Fair grandstand acts By KELLA RODIEK
HURON — Country and rock music have been the South Dakota State Fair’s success story — and they’re sticking to it. “We always aim to throw in a variety for people to enjoy, focusing on the classics, some sort of newer country and something along the classic rock lines, and this year we’ve done so again with Kenny Rogers and The Band Perry and Huey Lewis and the News,” Candi Briley, marketing and events coordinator for the fair, said. She hopes the main grandstand entertainers and the acts opening for them will provide something to satisfy everyone, but if not, she said the bull bash, monster trucks and demo derby, along with the multitude of free enter-
tainment available throughout the course of the fair, should certainly fill in the gaps. Briley said the Red Wilk Construction CBR Bull Bash has been a mainstay with the fair for 10 years now, longer than the demo derby and trucks, but added that the latter have become contenders for popularity. “People wanted monster trucks, so we gave them monster trucks,” Briley said. “It’s been very popular.”
Grandstand Wednesday/Thursday, Sept. 2-3: The Red Wilk Construction CBR Bull Bash will once again light the entertainment fuse for fair week, starting at 8 p.m. on Sept. 2, a Wednesday. See SHOWS, Page 20

The second evening of bull riding will start at 8 p.m. on Sept. 3. “The other cool thing is if you buy your grandstand tickets before Wednesday you receive free gate admission,” Briley said. All tickets purchased prior to Sept. 2 automatically include free admission to the fair on the specific night for which the grandstand tickets were purchased, according to Briley. Tickets for all events can be purchased online at sdstatefair.com, by calling the ticket office at 866-605-FAIR (3247), or in person at the State Fair Administration Office in Huron. Friday, Sept. 4: The John Conlee Show will open the stage at 7 p.m. Friday, followed by Kenny Rogers at 8 p.m. Legendary songs from Rogers, such as “The Gambler,” “Lady,” “Islands in the Stream” and others from his Diamond, Platinum and Gold albums will give concert goers a steady night of hits, which Briley said is exciting to bring to the fairgrounds. Sunday, Sept. 6: ZZ-3, hailed as “the baddest ZZ Top tribute band in the land,” will open Sunday’s grandstand show at 7 p.m. At 8 p.m. Huey Lewis and the News will take the stage with its blend of rock, blues and soul that has been popular for more than 30 years. During the show, audiences can expect to hear a capella versions of rock classics, as well as famous harmonica solos. Tickets are $35 for reserved seating and $30 for standing/general admission. Monday, Sept. 7: Grandstand entertainment finishes out in style with loud engines and lots of metal, Briley said. The Monster Trucks and Soccer Ball Demo Derby will start at 1 p.m. on Monday as a special Labor Day event. Besides the high-flying, powerful monster trucks, such as Menace, Bounty Hunter, Freedom Keeper and Iron Outlaw, the popular soccer demolition derby will feature teams of demo cars trying to push a large metal “soccer ball” into the opposing team’s goal. Tickets are all general admission at a rate of $15 for adults, $10 for youth ages 6 to 15, and free for kids 5 and under.

extremely popular,” Briley said. “And of course we’ll have Sherwin Linton and the Cotton Kings, who is a State Fair legend you could say, so we’re always glad to have them back.” New acts are Landslide: Tribute to Fleetwood Mac, The Potter Family, The Lugnuts and World Record Balloon Stunt
Show. Briley said that between the six stages of free entertainment, as well as the roving acts such as the balloon stunt show, there are many options of things to do and see. — Caitlynn Peetz contributed to this report.

South Dakota State Fair manager embracing new role in organization By CAITLYNN PEETZ
HURON — As the South Dakota State Fair in Huron creeps closer to its opening day, there is much anticipation among 4-H participants and community members. But for Peggy Besch, it’s much more. Besch, who took over the State Fair manager position in February, says the most time-consuming aspects of the event she is now in charge of are details she
never thought to consider. “I had a general idea of what the position would entail, but I think as is with any new job, you’re on the outside looking in,” Besch said. “So, now that I’m in, there’s a lot of moving parts that I never even thought of or took into consideration. It’s a learning process.” Originally from Minneapolis, Besch now calls home the place she raised her kids, established
a career and planted her roots. After living in Huron for 33 years, she is happy to call the town her home and have the opportunity to continue her career and broaden her horizons professionally. “This is home. After living here so long and raising my kids here, it grows on you. There are so many memories and positive things, it’s just gradually became where I want to be,” she said.

Duties Besch has undertaken include overseeing the entire fairgrounds from groundskeeping to infrastructures of the facilities. She also is in charge of the State Fair event as a whole, and all that it entails, along with all of the fairgrounds’ offseason events like Wheel Jam and 4-H events. Prior to taking over the State Fair manager position, Besch worked for the Huron Chamber and Visitor’s Bureau for 23 years, and for the last 14, she served as its chief executive officer. During her tenure at the visitor’s bureau, Besch coordinated with State Fair officials to recruit events to
the city. Being a worker at the visitor’s bureau, especially during fair time, she was tasked with being knowledgeable of the information fair-goers unfamiliar to the area might seek. “I think that was one of the values that I brought to the fairgrounds — I am familiar with the fairgrounds and I am familiar with the community and resources that are available here,” Besch said. Although having the experience and know-how to be a viable candidate for the position, Besch said her decision to leave her position at the chamber — a career she enjoyed — wasn’t one that came
easily. Besch said it took a lot of thought, weighing the positives against the negatives and self-convincing to get over the initial intimidation of such a drastic career change. “I was approached and asked if I would consider it, and my first reaction was ‘no’ because I liked my previous job and enjoyed what I was doing,” Besch said. “But once you get beyond that fear factor of change, and start seriously thinking and talking about it, it just made sense.” Besch also became a state entity in the field of agriculture when she took See BESCH, Page 29

SOUTH DAKOTA STATE FAIR 2015
Listen to the music of the fair
Remembering great acts of the past from the Freedom Stage, grandstand Terry Woster Republic columnist wostert@yahoo.com
my obituary, maybe even in the lead. “Terry Woster, 99, whose dance band once opened for George Strait at South Dakota’s State Fair … ’’ and you can fill in the rest, hopefully not too long before that age 99 can be used. What we actually did was, we played some music on the Freedom Stage one morning during the fair week, and that evening at the grandstand, George Strait did his show. I think he had a bigger crowd, although the guys in the band were surprised by the number
of people in the seats at the Freedom Stage at 8 o’clock in the morning. (On reflection, it seems to me that the morning crowd maybe had more to do with the fact that the band was backing my big brother, Jim, and he had laid in a solid supply of coffee and doughnuts, free for all takers. I’m not saying the band wasn’t great, but the band without free food might have been, um, less of a draw.) For the fairgoers, the best part of the Standbys at the Freedom Stage was that if they didn’t like our music, they could walk down the street a ways and find another group doing another kind of music. In those days, they might have wandered off and happened on the Great Pretenders. Not a bad choice at all. Or, maybe they went the other way and picked up the swinging sounds of Sherwin Linton and his Cotton Kings. A
person couldn’t do much better than spend an hour under the tent listening to Sherwin. I came this close to singing “Folsom Prison’’ with him one year. Point is, there’s something for everyone at the State Fair. Just the other day, I was in a conversation with several people about flag poles. One of the folks had to get a new flag pole. I told them there used to be a guy down the row from the main gate who sold flag poles. “Are they any good?’’ one of my friends asked. “I’m no expert on flag poles, but they looked pretty impressive,’’ I said. “And he was selling them right there at the fair. That has to mean something.’’ When I worked a regular beat for the newspaper, I drew the fair assignment several years running. Sometimes I’d go for two or three days running. Other times I’d just
pop over in the morning and back home at night. It was a couple of hours each way, but that’s not a big distance in South Dakota. I recall a couple of years when I got to write reviews of grandstand acts. I didn’t know much about musicianship, but I knew what I liked. I remember opining that this George Strait guy was pretty good. I also did a pretty favorable review of Pat Boone one year. Hey, who could knock that guy? I’ve owned white bucks since I was 14. The newspaper used to pay me to go to the fair. My brother, Jim, paid me and the band, too, for backing him on the Freedom Stage. I can’t recall exactly how much we earned that morning. I do recall that I needed every penny. I, ahem, paid a modest fine along Highway 14 in my haste to get to the fair.

Another reason to like the South Dakota State Fair is that it sometimes allows bands like the Sensational Standbys to make an appearance. Never heard of the Standbys? You haven’t been paying attention. The dance band pretty much had it going on in a big area of central South Dakota for several years back in the 1980s and 1990s. I was one of the four members (not necessarily called musicians, although the other guys were pretty solid at their craft). I was along mostly because I knew the words to all the songs and could help set up and tear down the equipment. We played mostly old favorites, and before we broke up (well, isn’t that what the Beatles did?) we opened for George Strait at the State Fair. OK, OK. Opened for Strait is a bit of a stretch, although I wouldn’t mind if it were a line in

SOUTH DAKOTA STATE FAIR 2015
Foundation nears funding goal for Nordby Hall $4 million raised so far, approximately $700,000 left on capital campaign By EVAN HENDERSHOT
HURON — The next time the South Dakota State Fair comes to Huron in 2016, there will be a new addition to the fairgrounds. Construction began in early August to build the new statewide home to the South Dakota 4-H organization. Contractors began turning the dirt and preparing foundations for the Nordby Exhibit Hall for 4-H, Youth, and Community with the hope that the building will be constructed by the summer of 2016. The S.D. State Fair Foundation hit the $4 million dollar mark on its first major capital campaign to replace Clover Hall, which was torn down after the 2013 State Fair. As of Aug. 5, the campaign had $700,000 left to raise. “It would be great to have the money raised by the end of the year,” said Kathryn Henning, of the S.D. State Fair Foundation. “With our past fundraising rates and the growth of our account, I think we can definitely
get that to happen.” Henning’s optimism about the the capital campaign comes from the statewide support received for an exhibit hall in Huron. She said about $1 million has come from the Huron community, but most of the donations have come from S.D. business owners, the general public and the families and alumni of the 4-H club. “It’s been great to see so many people pitch in and either help to raise money or donate, sometimes both,” Henning said. “I think that really shows how much people love the fair and would like to see it sustained.” The $4.7 million dollar facility features 47,000 available square footage for exhibits, a kitchen, three large classrooms, a conference room, office space and a performance stage. Although the building will be the state’s home for the 4-H, it will also be available for conventions and community events. Henning said the Nordby Exhibit Hall will include

more than two times the exhibit space of any facility in Huron, providing additional revenue to the fairgrounds through rental fees and a larger space for community events. “This will really expand the opportunities for the Huron community to host larger events, which they a lot of times lose out on because they don’t have a big enough facility,”

Henning said. With about $700,000 left to raise in the funding campaign, Henning said now is the time to donate. In late July, the Burlington Northern Santa Fe Railway Foundation took the opportunity to offer a $50,000 gift for the capital campaign and the building’s namesake has contributed a total of $1.5 million to the project. Earl Nordby, a retired Huron businessman whose name will grace the new facility, was in attendance at the May groundbreaking for the building that is expected to receive heavy use from the state’s 4-H organization. On that sunny day in May, Nordby was excited about the possibilities the exhibit hall will offer and the potential of the 4-H club.
“This will be a place that will be theirs to use, rentfree, for whatever their needs are,” Henning said. “We expect that 4-H will be using that quite a bit, and it will be nice for them to have a central location

” where they don’t have to pay to use something and that really boosts the 4-H program.” Those interested in donating to the cause have a chance to get something in return, too. Thanks to Iverson
Chrysler of Huron and Mitchell, a 2015 Ram 1500 truck and a 2015 Featherlite Stock Combo trailer have been donated for a raffle to raise additional funds. Henning said tickets can be purchased at local 4-H offices, on Iverson Chrysler’s website and at various financial organizations until the final drawing on Sept. 6 at the fair’s 4-H Leaders’ Association’s Barbecue. At the barbecue, donors will be honored and an update of the fundraising total will be announced. With the success of the first major capital campaign by the S.D. State Fair Foundation, Henning said they could be more active in the future. “There’s lots and lots of buildings on the fairgrounds, so there’s not a shortage of buildings to repair or renovate,” said Henning.

over the position. Other organizations look to her for information and knowledge pertaining to 4-H, the State Fair and agriculture as a whole. Besch noted that being such a highly looked upon figure is humbling, but also carries a load of pressure. “There’s just a lot to
take in,” Besch said. “Quite frankly, getting acquainted to being a state agriculture figure means you really have to understand the policies and procedures and correct processes for everything because people are relying on you to know those things.” So far, Besch said she most of what she has done, she has learned on the job. She credits her ability

to do that to the competence of the people she works with. She said her coworkers have been knowledgable and extremely helpful when she has needed help adjusting. “Fortunately, we have a good staff on hand with a lot of knowledge and history,” Besch said. “You tend to rely a lot on their expertise and experience and those kinds of things.”

Our unique process is based on actual soil, not an approximation of the soil from satellite data; a field attribute or a soil property. We have developed a proprietary system that allows us to tell you exactly what’s happening in your field, why and what to do.
Step 2: Soil Analysis Step 3: Writing the Prescription
If your fields have variability, Precision Soil Management can delineate it accurately and develop a prescription that will help you maximize profit for a crop in that field.
