Sweet Recipe Chocolate Fondant Puddings Don’t overcook these divine chocolate puds or the centres will set and you’ll lose the gooey molten middle. You can prepare them a couple of hours in advance and bake them just before serving.
Ingredients: • 175g unsalted butter, plus extra for greasing • 175g caster sugar • 175g good quality plain chocolate, broken into pieces • 3 large eggs • 50g plain flour • Cocoa powder and icing sugar, to dust • Whipped cream and strawberries, to serve
Serves 4 Ready in 45 minutes
TIP
If you don’t have ovenproof ramekin dishes, you can use small metal pudding basins or ovenproof teacups. 6
1. Preheat the oven to 190C/fan 170C/gas mark 5.
Lightly butter four 300ml capacity ramekin dishes (see Tip) and sprinkle with a little of the caster sugar.
2. Place the chocolate and butter in a heatproof
bowl set over a pan of simmering water and leave until melted. Remove from the heat and stir until smooth. Cool for 5 minutes.
3. In a large bowl whisk the eggs and remaining
caster sugar together for 5 minutes until very thick, pale and creamy, then whisk in the chocolate mixture. Sift over the flour and gently fold in using a metal spoon.
4. Divide the mixture between the four dishes. Place on a baking sheet and bake in the preheated oven for 15-20 minutes until the puddings have risen and are just set on the outside – the tops should still wobble when pressed lightly. Run a knife around the edge of the puddings and turn out onto plates. Dust with cocoa powder and icing sugar and serve immediately with whipped cream and strawberries.

Auction Anecdote Smiths’ April sale featured a special section for stamps and postcards and while stamps leave me cold, I am rather interested in the collection of old postcards and always enjoy having a look through the albums although we employ a specialist to catalogue and value them. Postcards are actually rather in vogue at present and the key to value is understanding the different themes which collectors are looking for. People often like to collect postcards according to their own interests and so one finds enthusiasts looking for subjects ranging from dogs and cats to railway stations and old post offices. Of course, some of the most sought-after cards are those showing local history scenes and most people are very interested to see photographic postcards of their local area from ‘times gone by’. A group of five Hereford town centre postcards in the April sale depicted two charitable sponsored walks in 1909, a marathon race in 1908 and street scenes from an early election day. The five cards sold for £170, which is not a bad return for five little bits of cardboard when you think about it. Of course, it is the fact that most of these postcards would have been thrown away over the years which makes them so rare and desirable. Another interesting lot in the sale was a oneowner mixed album of postcards which included a Glastonbury 1909 carnival scene and a hatters shop front from Stroud. The album which sold for £210 also included my favourite card in the sale – a very cute looking Louis Wain cat smiling sweetly accompanied by the words ‘With warm Wishes for a Happy Christmas’. It is only after one looks closely at the card that one realises with a shock that the cat is actually pouring a kettle of boiling water into a bowl of goldfish! Short Story Paws for Comfort By Jackie Brewster “Are you Ian, the bellboy?” An elegant lady in a tweed cape strode into the hotel ballroom, startling Ian, who’d been busy admiring his hair from every angle in the mirrored walls. Behind her another lady in an anorak, wrestling a nylon men’s suit carrier in her arms, struggled to keep up. Ian nodded warily. He’d already carried one old lady’s luggage to the second floor and that seemed like quite enough work for one day. “You’ll do perfectly,” she said, and turned to her companion. “Dolly, don’t you think he has the look of a young Liberace?” “Very handsome, Val,” the lady nodded emphatically. Ian instinctively smoothed his hair. “So that’s settled,” Val said. “You’ll do it.” “Do what?” Ian was alarmed. As a rule, he tried to do as little as possible. “We’re holding a fashion show in the hall and our model has let us down.” She smiled demurely. “I assume you have catwalk experience?” “A bit.” Ian’s gran had once entered him into a beautiful baby contest, so he knew that the world of fashion was just waiting to discover him. He frowned. “I’ll have to ask my manager.” “Don’t worry yourself about that,” Val said. “I’ve already cleared it with Mr Fulsome; he’s delighted with the arrangement.” Ian was surprised to hear this 14

Dolly shuffled forward and awkwardly shook Ian’s hand, while trying not to lose control of the suit carrier.
“You want me to change here?” Ian asked; this was all happening very fast.
“You’re just perfect for my outfit.” She grinned as though unable to take her eyes off him. Ian had seen fashion designers in magazines but none of them looked like Dolly Cramp. He hoped the grubby anorak she was wearing wasn’t one of her designs. “The local TV station is here already,” Val added, “so you’ll get lots of exposure.” “What?” Ian suddenly felt excited. “Where?” Val pointed to the ballroom exit. “Just through those doors.” “Have I got time to let my friends know?” Ian pulled out his phone. We love May for its heady change of pace. This is the month of frantic activity. There are beautiful new flowers, sights and sensations every day. With the month of May, we all enjoy being out in the garden after the long cold winter. Warm sunny days enable us to enjoy planting and weeding and let us cut back and tidy up the garden ready for the summer. The best part is buying the plants! The garden begins to fill with colour as the weather warms up, spring shrubs and bulbs are all in flower. A tip to make the most of your garden is to plan what you want to do and how you want to use it as a space. There is a lot you can do now including creating a new lawn from turf or seed. In late spring, most perennial flowers are suitable for dividing to make more plants and in the summer they will benefit from pruning, regular dead-heading and staking to look their best later in the season. You can now start gardening under cover; sowing tender vegetables for the kitchen garden, sowing seeds and preparing your seed beds outdoors - remember to protect your crops! Plant of the month: The brightest stars of the season are tulips with shades of pink and splashes of purple and orange glowing amid green foliage. Top tip: Plant garlic around roses and fruit trees as it is good to use against pests like codling moths, snails and root maggots.
