Dear Reader, If you set yourself a New Year’s resolution, chances are that 4 out of 5 people gave up on theirs by the 21st of January, so fingers crossed if you pledged to lose weight, give up smoking or even took part in Dry January, that you made it through the month.

January threw a lot of strange weather at us.

One day it was stunning and then we had rain, sleet, more sunshine, more rain, snow, icy roads, black ice and Gale force winds. That Indian summer we had seems years ago…

LEWIS Car Insurance Car insurance prices have fallen 40% over the past two years, according to the AA. But with a rise in fraudulent claims, its latest index predicts an increase of up to 8% in 2015; others think 10% is possible. So to help you drive down costs, let me answer your most common questions…

Q. Is this only something you can do if you’re at renewal?

A. No, everyone should be checking their price right now, even if you only signed up to a new deal a few months ago. Unless you’ve claimed, you can usually cancel a policy for a fee of around £50 and get a refund for the rest of the year (though you won’t earn no claims for that year). It’s worth checking if it’s worth it.

Q. My renewal’s only six weeks away, should I just wait?

A. It’s likely if you did try and cancel and get a new policy now, the cancellation fee will diminish any savings – so that’s a bit futile. Yet there is another trick – www.aviva.co.uk, www.postoffice.co.uk and www.lv.com quotes last 60 days, so why not grab them now and you’re effectively locking in those prices in case they rise in the meantime.

Q. Are the savings that great? Can’t you just auto-renew?

A. Never just auto-renew without checking elsewhere, often it just lets insurers smack a price rise on you, as it knows apathy means many will keep paying more and more.

I’m not saying auto-renewing will never be your cheapest option, just that it should never be done without checking and comparing elsewhere first.

Q. So it’s just a question of getting on a comparison site?

A. That’s the route many use, but there are steps to really kick it up. It’s important to understand that there’s no one cheapest provider, so it’s a case of following a system.

Never just do one comparison, you need a benchmark of a few comparisons to find out where’s cheapest. There’s a system to follow fully explained at www.mse.me/ carinsurance. In a nutshell…

Combine comparison sites. They don’t all cover the same insurers, so combining a number of sites is the best way to really make a meaningful saving. My current top picks for a typical driver are www.moneysupermarket.com, www.confused.com, and www.comparethemarket.com Check insurers that comparisons miss. Comparison sites let you compare 100s of insurers quickly but they don’t capture the entire market. The biggies, including Aviva, www.directline.com and www.zurich.co.uk only offer their products directly.

with one car at once so don’t include multi-car discounts. Therefore you should always manually check those that offer it. The big one is www.admiral.com multi-car, but www.churchill.com, www.directline.com and www.privilege.com also offer it. I’m not saying they’ll win, but that you should check.

Difficult to insure? Use a broker. If you’ve difficult circumstances (eg, past bans or big accidents) that make getting insurance difficult, a comparison site is less likely to help as these are mainly focused on ‘normal’ policies.

You may be better off finding a local broker - see the British Insurance Brokers’ Association website (www.biba.org.uk), as these can sometimes find a cheaper deal for you.

Q. So it’s all pretty straightforward?

A. Ah if only. Common-sense doesn't always do the job…

- Third party's not always cheapest. Merely selecting comprehensive makes some insurers see you as a lower risk.

So always check both.

- Adding a responsible second driver can cut your costs. This can bring down your risk average and price ― of course, it must be someone who may drive your car. As Mazzyb5 tweeted: "Took your advice and added mum ― saved £500."

- Tweaking your job description can cut costs. I'm not saying lap dancers should call themselves cabinet ministers (or vice versa, heaven forbid). But these days many people have such specific job descriptions car insurers don't list them, as Fabsternation tweeted: "Thanks. Changing from creative director to marketing manager saved £300." - Beware paying monthly. A monthly payment plan for your insurance is essentially a high-interest loan. For example, if your premium is £1,000 but you’re paying an APR of 25%, your insurance will actually cost £1,140 once you factor in the interest. So either pay in full, or if you can't afford it, use a credit card with a lower APR or better still, a 0% credit card for spending, ensuring your repayments are big enough to clear it within a year.

Q. And any special tips for young drivers?

A. With the average premium for a 17-22-year-old at an eyewatering £1,194 per year, young car drivers can be priced out ― all the techniques above will help, but if you’re not getting there, check ‘pay how you drive’ (telematics) this involves a device being fitted inside your car that monitors your actions behind the wheel. Community Sponsorship Roof of your scout hut falling in? Club strip seen decidedly better days? Can’t send teams to tournaments because the coach hire’s too expensive?

Whatever field you’re in, if you’re the organiser of any sort of club or voluntary group you’ll know one thing: money’s too tight to mention.

Of course you fund-raise like mad, and all the members pay their subs, and that’s usually enough to keep you ticking over. But often there’ll be an emergency – or, for that matter, an opportunity – that your normal income won’t cover. That’s why a regular sponsor can be extremely welcome.

But why would anyone want to give your club money?

What’s in it for them? This is where you have to get one thing straight in your mind. Sponsorship isn’t the same as charity. You’re not begging. What you’re proposing is a business arrangement with benefits for both parties: investment for you; high visibility and positive associations for your sponsor.

In brand-building terms, sponsorship is good value. It’s closely targeted to a particular customer base, and a one-off

investment in (say) a club strip buys multiple outings. It also creates good ongoing PR for the sponsor as a business that gives back to the community.

So you’re not going to local businesses cap in hand; you’re offering them a strong marketing proposition.

As with all sales, the best way of convincing a potential sponsor is face-to-face. But unless you happen to know the boss personally, you’ll need to bait your hook with a letter. This will be your first point of contact with your potential sponsor, so make sure your letter is formally laid out, addressed to the right person (check the recipient’s name and correct title first with a helpful receptionist), and completely free of spelling, punctuation, and grammatical errors. And get it checked unless you are certain you know the difference between its and it’s and your and you’re.

In your letter, first introduce your organisation and outline why you are looking for sponsorship.

Show the relevance of your club or organisation to the company’s target market and detail the benefits to the

sponsor. Keep it brief, though: too long and it won’t get read.

The main point of the letter is to arrange a meeting, and end by saying that if you don’t hear back in a week or so you’ll call back – and make sure that you DO call back!

If the company agrees to a meeting, send a brief but formal proposal (no more than two pages), restating what you’ve said in the letter in more detail. The proposal should be laid out in distinct sections with bullet-points that can easily be referred to during the meeting.

Before the meeting, research into the company’s operations.

Look at its sales material. Get to know all you can about it.

Then you can think from its point of view.

At the meeting itself, go through the same points you made in your letter and your formal proposal. Be enthusiastic, but don’t rant.

Don’t just talk – listen too. If your proposal is rejected, find out why. It may be that there’s a flaw in your presentation that you can put right.

Afterwards, get everything in writing. A sponsorship deal is a contract, so be businesslike!

Hello and a happy NewYear to you all, it feels a long time ago that we were eating turkey although the 2015 weather seems more suited to Christmas scenes. The frost, and even snow, certainly makes for some beautiful scenes as Jack Boskett’s picture of the Abbey shows. We don’t always realise what a beautiful area we live in, with the walks around town, along the rivers, up Bredon Hill, I could go on. Personally I wish I could get more time to enjoy the scenery but like many of you I find there is too much work and not enough week. I am looking forward to the Jack Boskett Photography Exhibition at The Roses Theatre, showcasing a selection of his work including Tewkesbury landmarks amongst other things. Jack supplies us with postcards so I know how good his pictures are.

The exhibition opens on Sunday 1st February, and runs until Sunday 15th March.

Another local artist – Sam Morris is in training for a cycle ride in early May in aid of the Motor Neurones Disease Association (MNDA). She is part of a team of 7, cycling from John O Groats to Land’s End – approximately 1000 miles over 10 days – a friend of theirs was diagnosed with this cruel disease last year and is the inspiration for the ride, donations can be made at Charity boxes in the Village Inn

You might think that February and March are quiet months, but far from it. On Monday 2 February 3.45pm the Town Mayor, Mrs Christine Danter has organised an open house at the Town Hall as a thank you to Betty Ealand for 40 years of service as the much loved Lollypop Lady patrolling the school crossing at the junction of Chance Street and Barton Street. All those past and present ‘crossees’ are welcome to join in tea and biscuits for Betty, Gloucestershire’s longest serving lollypop person.

For the men, the recently formed Tewkesbury Men’s social group is going well with a small and friendly collective that is growing every week. It’s open to any men wanting time with likeminded people for a chat, drink or game of say pool, darts or skittles. They meet every Thursday from 11 am – 1 pm at the YMCA in Church Street, Tewkesbury, for more information call Sam Couldrey on 07767 425762.

Raising Funds for the Stroke Foundation, ELL Hair Studio, based in Barton Street on 6 February are offering new clients a cut and blow-dry for a £20 donation to The British Heart Foundation, to book call 01684 275005 and quote red. Whilst there is a Ladies Pamper Night taking place at Holy Trinity Church Hall on Friday 6 February, 7 pm – 10 pm with stalls ranging from clothing and lingerie, to cakes, crafts and pamper treatments. Funds raised are in aid of Marie Curie Cancer Care, with tickets costing £5 each available from Retro Attire, Bredon Post Office or CGT Lettings.

for heart filled Valentine cards so I have had little time to get out and about in town. However, I am pleased to see two new shops open – Jack & Jills, a lovely boutique selling preowned designer children’s clothes and accessories, and Curios and Equestrian selling pre-loved furniture and curios etc. It is great to get a variety of independent shops in the town and makes it a much more interesting place for visitors, and locals alike. It is very sad to see Merlins closing down after many years trading, I am sure they will be sorely missed I know someone who is already looking for a new supplier of ‘Elbow Grease’.

It is not just Valentine Cards hitting the shops, but also the dreaded, but delicious Easter Eggs. Easter Sunday is on 5 April this year and Mrs Anita Haycock BEM is once again organising the sale of Cadbury’s Cream Egg filled knitted Easter animals to raise funds for the Acorns Children’s Hospice. The wool is donated, and the knitters give their time for free – any volunteers for knitting or supplying the cream eggs would be very welcome (they have enough wool at the moment). Last year over £2,000 was raised.

The lady who knitted the gorgeous animals pictured did not want to be named but we think she is absolutely amazing for knitting these 50 all in one week!

Don’t forget Tewkesbury’s Big Weekend – 2 and 3 May – lots more going on this year get in touch if you want to be part of it – the theme for the parade is Musicals.

And finally, Tewkesbury has been getting a few mentions on TV lately, with the ever so emotional last ever Miranda episode starting the ball rolling, followed by the appearance of Tewkesbury boy David Ballard as Captain of Oxford Brookes on University Challenge, the screening of the Father Brown Mysteries episode which was shot in Tewkesbury last year and Tewkesbury Mustard being used by James Martin in his Home Comforts programme. We will all have to make sure we wear our Sunday best when out and about, who knows when the TV cameras will be here next – and not a puddle to be seen.

Council secures £225,000 to support flood-affected businesses Flood-affected businesses based in Tewkesbury and along the River Severn are set to benefit from £225,000 of funding.

Tewkesbury Borough Council secured the pot of money as part of its £475,000 share of the government’s Business Support Flood Grant - which was originally introduced following the floods in February 2014 and enabled businesses to apply for grants to help provide future flood resilience.

Since the grant scheme was introduced, the council has so far facilitated 122 grants, totalling £177,000.

To enable the remaining money to be used more flexibly, the council submitted a proposal to the government for it to be used to deliver an extensive programme of business flood support.

A promotional campaign to support riverside pubs and tourism businesses along the River Severn.

Increased promotion of Tewkesbury as open for business and as a destination to visit.

Business resilience training including mentorsto work directly with affected businesses on a one to one basis.

With the go-ahead given, the plans - which were developed together with local business organisations - include: Tewkesbury Borough Council’s Lead Member for Economic Development and Promotion Cllr Dave Waters said: “We are really pleased to be able to offer our flood-affected businesses in Tewkesbury and along the River Severn this extra boost of financial support.

“We received one of the largest amounts of funding from the government through our application to its Business Support Flood Grant and we wanted to see if we could push for us to be able to use the remaining money in a more flexible way - and I am delighted that we have been successful in this.

“The details of the schemes will now be worked through and we will be providing more detail as soon as we can. Importantly, if a business has not yet applied for a flood support grant, that option is still available too.”

landmarks so we are delighted the trident has been found safe.We’d like to thank everyone for their help in assisting with its safe return.

“Although the perpetrators have apologised in their note, unfortunately they do not seem to realise the considerable repair costs of around £5k.The top fork section of the trident has come away from the staff and also Neptune will need a new arm as it was badly damaged during the removal. A stonemason will then need to put it all back together again.

“We are hopeful of a repair being completed before the fountain switch-on in the spring.We will look into how we fix the trident back to negate any future attempt to remove it unlawfully.”

Trident’s return is triumphant NEPTUNE’S TRIDENT HAS BEEN FOUND! ‘’Please can you return this to Cheltenham Borough Council, or the police.We were drunk and there was no harm meant.We’re sincerely sorry.’’ Neptune’s trident has been found and returned to the borough council in January, along with an apologetic note and a costly repair bill.

Stroud police contacted the council on the 5th of January to say that the trident had been recovered from a garden in Painswick and was safe with them. An officer from the council collected it from the police and it is being stored in the Municipal Offices until it can be repaired and put back where it belongs, on the fountain.

The trident, which Neptune holds in his hand atop the famous fountain in the Promenade, was first noticed missing on the morning of 21 December 2014 and after being returned to the fountain by a member of the public, was taken again sometime during the same weekend.The council issued a press release asking the public to help in finding the missing trident.

Hobbies Get Ready For The Cycling Revolution

By Kate McLelland When Graham Flavell moved to rural Dorset to begin a new job, he decided to take up cycling as a way of exploring the countryside. For many years he continued to enjoy low-key, leisurely bike journeys: discovering more about the local area and enjoying the occasional family holiday on two wheels.

In recent months, however, Graham’s commitment to cycling has undergone something of a revolution. He is now one of the many thousands of people in the UK for whom cycling has become a serious hobby, and he currently cycles up to 140 miles each week with a few like-minded friends.

Graham says: “We meet twice a week and I enjoy the camaraderie of cycling in a group. It was hard when I started, but I’ve been amazed how my fitness has improved over the last six months.”

So where do you start if you have decided to take up cycling for the first time? It really depends on what kind of cycling appeals to you. Will you be using your bike for transport, for leisure or for competition?

Sport England claims that over 2.1 million people currently cycle on a weekly basis in the UK and in the autumn of last year the government published a draft version of its Cycling Delivery Plan for consultation, giving details of a 10-year strategy that includes the ambition to double the amount of cycling activity on Britain’s roads by the year 2025.

The government is keen to promote this plan because cycling not only benefits our mental and physical health, it also protects the environment by cutting down on carbon emissions.

New campaign set to tackle dog fouling in Tewkesbury Borough A new campaign will launch in Tewkesbury Borough this winter - in a fresh bid to stamp out dog fouling in the area.

Tewkesbury Borough Council will kickstart its new dog fouling campaign with the release of two powerful posters to catch the attention of dog walkers.

The campaign, which also includes its successful Paws on Patrol scheme and other local initiatives, aims to help support residents, and town and parish councils by encouraging dog walkers to pick up after their pets and local people to report ‘hot-spot’ areas.

The borough council is inviting residents and parish councils to display the new posters, which highlight the dangers of dog fouling for young children, on local noticeboards and in other prominent locations.

Toxocariasis is an infection caused by roundworm commonly found in dog mess and can easily be picked up by young children. The serious symptoms of toxocariasis include asthma, stomach upsets, headaches, breathing difficulties and in some cases, blindness.

Roundworm eggs can stay alive in soil for many years long after any dog mess has disappeared.

It is hoped that that the campaign will also help to grow its popular Paws on Patrol scheme. Nearly 100 dog walkers have already signed up to the scheme, which sees residents able to help reduce opportunities for anti-social behaviour and environmental crimes in their local areas.

Walkers can register to join while out and about in the neighbourhood, and are issued with all of the necessary contact numbers to help report suspected dog fouling, fly-tipping and anti-social behaviour to Tewkesbury Borough Council, the local police or Crimestoppers.

The borough council also carries out a local event four times a year, where its Enforcement and Environmental Health staff take to the streets of a ‘hot-spot’ area.

Over a week long period - at various times during the day and evening - borough council and town and parish council staff join forces and patrol areas which experience high levels of dog fouling.

Tewkesbury Borough Council’s Lead Member for Clean and Green Environment Jim Mason said: “Our new campaign is about two things - putting a stop to dog fouling and keeping people safe, and encouraging residents to come forward and report any hot-spot areas which may need some extra attention.

“It’s easy to contact your local town or parish council, or the borough council, if you’re seeing a growing problem in a particular area - the quicker we know about, the quicker we can do something about it and put some solutions in place.”

All public footpaths and open spaces are designated under the Dog Fouling of Land Act 1996 and if someone fails to pick up after their dog, the council can prosecute Page 16

The Better Life Make Do and Spend

by Derek Thompson www.alongthewritelines.blogspot.co.uk February isn’t quite spring, but there’s still plenty to celebrate because our local National Trust gardens are once again open for business. Forget the telly and the Internet, when you really want to get inspired

by Nature you need to be out there amongst it. Obviously, you also need to be dressed for the part, which was how Wellygate came about.

For those of a more rural disposition, wellies are a way of life. We pop to the shops in ours – you learn a lot about customer service by the reception your footwear receives. This time of year people are generally forgiving, unlike Anne’s wellies.

When she noticed a split along one boot, she wasn’t unduly concerned; she even took my suggestion of a bicycle repair kit well. She improvised for a while with a plastic bag (a tad sweaty, I gather) and finally, accepting that 10 years is a good innings for boots, we checked for replacements online. The same brand (no names no pack drill) is now manufactured overseas – a sign of the times and, apparently, terrible customer reviews. I was delighted though because this gave us

more reason to repair them, apart from my fondness for saving money.

We went into town for some sealant and on the way back we detoured to the National Trust, where I gallantly lent Anne my wellies and trusted to my weatherproof boots.

The sight of a few daffs, a smattering of cyclamen and a good show of snowdrops will gladden the heart of any gardener; it’s as if Nature is whispering that spring is definitely on its way, meantime here’s something to tide you over. Our walk completed, we bought some discounted cyclamen and retired to the tearoom, where I discovered my supposedly weatherproof boots had come out in sympathy. Luckily for us, we’d bought a large tube of sealant.

Back home, we learned that a couple were moving out of their rented cottage soon – something to do with the landlord, upcountry, ringing in the changes (and the till).

This was sad news indeed, as we’d bartered with them several times and our battered aluminium greenhouse was enjoying a new lease of life there. They grew the best rhubarb and, thanks to them,

I saw my first tayberry in their garden.

Villagers had been invited to pop up the following day if they wanted any cuttings and seeds, or to buy some of their stock. Next morning at 10 o’clock sharp we trundled up the lane (there are no proper roads), Anne carrying a tin of home baked scones.

As we rounded the bend we joined a trail of neighbours who had all decided to put in an appearance – an event somewhere between community spirit and plant envy, with a whiff of the Boxing Day sales about it. There were people already milling about in the garden, secateurs and plastic bags in hand.

Anne delivered the scones, while I went on a plant hunt worthy of the Bolithos.

February is not the ideal time to take cuttings, and I’m not sure I agree with one neighbour’s advice of, “If in doubt, plant out,” but I’m delighted to have 10 rosemary cuttings in the house. Thanks to the cineole compound in our Rosmarinus officinalis, and along with our new rhubarb plant, what better way to remember your neighbours?

Preparing for Warmer Weather

The combination of the poor weather in February and the very fact that gardens tend to be at their least appealing this month, means the chances are yours is receiving nothing much more than a fair helping of neglect at the moment. But spring isn’t far away so get your gardening gloves on for a bit of preparation.

Start by clearing up any remaining fallen leaves, broken twigs. Twigs and woody debris are best binned or burned or perhaps even heaped up in the corner of the garden to act as a sheltering spot for wildlife, but fallen leaves, and the top growth of herbaceous perennials, can be added to the compost heap.

When it comes to tackling herbaceous or flower borders, don’t make things look too clean and tidy, as you may well cut down on the protection that faded top-growth can provide.

I tend to leave most of the remains of herbaceous plants in place until spring, but the most ugly, straggly or unkempt bits could certainly be cleared up now. Keep a particular look out for slugs and snails and collect them up while they are Page 26

snoozing!

It is too early in the year to cut your lawn and indeed you should try to keep off it as far as possible, but you can clear twigs and leaves and cut back any weeds which have grown faster than the grass itself.

You can use any pots or other containers which have been left around the garden to create spots of colour and interest by clearing them out, using fresh compost and then replanting them. If you choose temporary winter plantings such as winter flowering pansies or pompom winter daisies, then these can simply be removed when it is time to replant with summer bedding. Scrubbing down the outer surfaces of pots and containers will also help to clean them up again, because by now they have invariably accumulated a good helping of algae and soil and can look quite a mess.

Check fruit trees for signs of any dead shrivelled fruit still on the branches and cut these out, as they often harbour brown rot disease and can cause a lot of problems in the future.

However these definitely

shouldn’t be composted - bin or burn any you find.

Use a stiff brush to clear off surface debris from your terrace or patio and then once it is clear, if it still looks in need of a bit of a facelift, use the stiff brush or yard broom to scrub it over thoroughly. Provided freezing weather is not forecast, wash it over with a few buckets of water.

A trip to your local garden centre is bound to give you plenty of ideas for what’s looking good this month. Some of my favourites include the small trees or shrubs which have a delicious fragrance during the winter months.

These include winter sweet, hamamelis (witch hazel) and sarcococca. You can now buy pots of snowdrop bulbs which are not far from flowering so ‘cheat’ a little and pop a few of these into the ground. Winter flowering heathers and winter flowering pansies can also be used to great effect right now.

Council backs national campaign encouraging residents to vote Residents of Tewkesbury Borough who have not yet registered to vote are being encouraged to do so - in line with a national campaign.

National Voter Registration Day takes place on 5, February 2015 as part of a nationwide week of action to encourage and inspire people to come out and register to vote.

In line with the campaign, and with local and national elections taking place this year for Tewkesbury Borough residents, the borough council is urging its residents to get involved by registering to vote by post or online which takes around five minutes to complete.

The Council will also, at the beginning of February, be sending letters to every household in the Borough stating who is currently listed to vote. Residents are urged to check that information and to contact the council on 01684 272025 or via email to elections@ tewkesbury.gov.uk if there are any changes.

National Voter Registration Day proved to be a success last year, with around 35,000 people registering to vote in just one day.

The campaign also aims tackle the lack of engagement in politics common across the UK particularly among those aged 18-24, as less than 25% of that age bracket turned-out to vote in the 2010 General Election.

Lead member for Corporate Governance Jude Perez said: “Tewkesbury Borough Council fully endorses the message of the campaign, as it highlights how important it is to register to vote.The message is that if you are not on the electoral register, you are not able to vote in elections and referendums.

“By registering to vote everyone has the opportunity to decide who represents them throughout all levels of government from local council to Westminster. A vote can influence a wide range of issues from local matters, like roads and recycling, to national ones such as education and climate change.

Memory clubs and cafés offer help and advice about mental health issues

People with mental health issues and their carers are being welcomed at memory clubs and cafes set up across the borough.

The free to attend clubs and cafes, which are located in Tewkesbury, Brockworth and Winchcombe, offer a place to go for anyone in need of mental health advice or support on a drop-in basis.

The support includes health professionals and mental health experts, including members of the Alzheimer’s Society,Village Agents and Dementia Nurses.

The memory clubs and cafes are available thanks to joint working from Tewkesbury Borough Council, Gloucestershire County Council, NHS Gloucestershire and the Alzheimer’s Society.

Tewkesbury Borough Council’s Lead member for Health and Wellbeing Cllr Claire Wright said: “The memory clubs and cafes truly are an asset to our community. A visit to them is a great opportunity to get some support, help and advice, and to chat to people who are in a similar situation to you.

“If you are finding it hard to cope, or feel as if you have no one to talk to, attending the memory clubs and cafes will remind you that you are not alone.

“As well as this, invaluable advice from health professionals and mental health experts is on hand if you have any worries or queries.”

Cake & Bake Red Velvet Cake Serves 8 Ready in 1 hour 30 minutes plus cooling and chilling

This luscious cake is an American classic and has a vibrant red coloured chocolate sponge filled with a tangy soft cheese frosting and dark chocolate icing.

THE CAKE • 300g plain flour • 2 tsp bicarbonate of soda • 4 tbsp cocoa powder • 235g butter, softened, plus extra for greasing • 300g caster sugar • 3 medium eggs, beaten • 200ml buttermilk • 1� tsp vanilla extract • 2 tbsp liquid red food colouring THE CHOCOLATE ICING • 140g plain chocolate, broken into pieces • 75g butter, diced • 75ml double cream THE FROSTING • 55g unsalted butter, softened • � tsp vanilla extract • 115g icing sugar, sifted • 115 g full-fat soft cheese • 1 tbsp mini chocolate chips, to decorate Page 34

1. Preheat the oven to 180°C/350°F/Gas Mark 4. Grease and line the bases of 3 x 20cm round sandwich tins. Sift the flour, bicarbonate of soda and cocoa powder into a bowl and set aside.

2. Place the butter and sugar in a large bowl and using an electric whisk beat together until pale and fluffy. Gradually beat in the eggs then beat in the buttermilk, vanilla extract and red food colouring. Fold in the sifted flour mixture.

3. Divide the mixture evenly between the prepared tins and level the surfaces. Bake in the preheated oven for 25-30 minutes, or until risen and just firm to the touch. Leave the sponges in the tins for 10 minutes then turn out onto a wire rack and leave to cool completely.

4. To make the chocolate icing, put the chocolate and butter in a large heatproof bowl set over a pan of simmering water. Leave until melted.

Remove the bowl from the heat and stir the mixture until smooth. Cool for 2-3 minutes then stir in the cream. Leave at room temperature for 20-30 minutes then chill in the refrigerator for 30-45 minutes, stirring occasionally until the icing is just thick enough to spread.

5. To make the frosting place the softened butter in a bowl and beat in the vanilla extract. Gradually beat in the sifted icing sugar until very smooth and thoroughly blended, then beat in the soft cheese. Don’t overbeat or the icing will start to go runny.

6. To assemble the cake, sandwich all three sponges together with twothirds of the frosting and nearly all of the chocolate icing (reserve 1-2 tbsp for decorating the top of the cake). Spread the rest of the frosting around the sides and over the top of the cake, smoothing it with a spatula.

7. Gently reheat the rest of the chocolate icing in the microwave on low setting for a few seconds – it needs to be just soft enough to pipe.

Spoon the icing into a paper piping bag and snip off the end. Pipe swirls of icing on top of the cake then sprinkle with chocolate chips. Chill in the fridge until ready to eat.

TIP - To add an extra sweetness and colour to the cake, place 2 tbsp granulated sugar in a bag with a little red food colouring paste. Rub the bag between your fingertips to colour the sugar. Use a palette knife to coat the coloured sugar around the side of the frosted cake. Only add this final touch just before serving the cake otherwise the sugar will dissolve into the frosting.

Cascades, which is run by Tewkesbury Borough Council, wishes to make health and fitness accessible to as many people as possibleand, in line with this, has agreed to keep its 2015 prices the same as 2013.

Local mustard drew in the crowds on BBC cookery show A famous, locally-produced mustard in Tewkesbury was showcased to thousands on a popular BBC 1 cookery programme last month.

The acclaimed ingredient,Tewkesbury Mustard, featured on series two of the crowd-pleasing programme James Martin’s Home Comforts onWednesday, 21 January on BBC 1.

During the episode - themed ‘hearty and wholesome’ - the fascinating history of Tewkesbury Mustard was explored and a batch of the condiment rustled up on screen and tasted.

Tewkesbury Mustard is an artisan product which originally dates back to before the 16th century, and has been recommended by both commentators and in recipe books for hundreds of years.

Originally produced in the form of mustard balls, the Tewkesbury Mustard Company now also continues the well-known tradition in jars using state-of-the-art development and, where possible, only the finest, local ingredients. By being sold in jars, the mustard can be easily transported and used in a variety of ways in the kitchen.

While legend has it that Tewkesbury Mustard was presented to King Henry VIII during his visit to

Tewkesbury in 1535, the condiment fit for a king has also been featured on BBC’s Escape to the Country, Great British Railway Journeys,The Great British Food Revival and on ITV’s Ade in Britain.
