Falafel burgers A healthy burger that's filling too. These are great for anyone who craves a big bite but doesn't want the calories.

1. Drain a 400g can chickpeas and pat dry with kitchen paper.

small roughly chopped red onion, 1 garlic clove, handful of flat-leaf parsley, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp harissa paste or chillli powder, 2 tbsp plain flour and a little salt.

3. Blend until fairly smooth, then shape into four patties with your hands.

4. Heat 2 tbsp sunflower oil in a non-stick frying pan, add the burgers, then quickly fry for 3 mins on each side until lightly golden.

5. Serve with toasted pitta bread, 200g tub tomato salsa and a green salad.

Chernobyl Children’s Lifeline (CCLL) is a local registered charity based near Alton, which support thousands of children and their families who are affected by the aftermath of the Chernobyl Nuclear Disaster in 1986.

Established in 1992, the charity works with Belarusian and Ukrainian partners and local groups throughout the UK to bring child victims to the UK for recuperative breaks at host families homes in areas such as Havant, Waterlooville and Chichester. These breaks allow for time away from the high radiation levels of Chernobyl, so that the children can enjoy uncontaminated food, breath clean air, and give their immune systems a chance to recharge. Since the charity began, nearly fifty thousand children and young adults have benefited from staying with host families.

But it doesn’t stop there. The charity also donates towards the child’s on-going needs and provide basic supplies and healthcare products including school uniforms, stationery, learning aids, special needs items, clothing, shoes and toiletries; ready for their return to Ukraine. For the children who are too sick to travel, the CCLL works with partners to provide help in regions throughout Ukraine, such as chemotherapy medicines to Children’s Cancer Hospitals.

Now more than ever, the people of Ukraine and the CCLL charity are asking for your help.

The 26th April 2020 saw the 34th Anniversary of the Chernobyl Nuclear Disaster, a catastrophe what has and will have devastating physical and psychological effects on the people of Belarus and Ukraine for hundreds, if not, thousands of years.

The extreme levels of contamination caused by the disaster has caused children to be particularly susceptible to radiation-induced illnesses such as leukaemia, other cancers and deformities. As well as this, the immune systems of most children have been severely compromised by living in this environment.

Now more than ever, the people of Ukraine and the CCLL charity are asking for your help. Since 4th April 2020, wildfires have burnt through woodlands, marshlands and villages throughout Ukraine, approximately four times the size of Hampshire, including within Chernobyl’s exclusion zone. wildfires have destroyed villages and medical units throughout the north of Ukraine. Locals have set up temporary beds to help house patients suffering from Coronavirus, however with minimal supplies, there is often just one piece of paediatric equipment to help treat the virus for every 120 patients.

Over the past months, it is no secret that people of the UK have shown an overwhelming sense of generosity, showing the amazing things we can do to help one another when we come together. Ingredients 1 small pineapple 1 scraped vanilla pod 1 English Breakfast tea bag 1 tbsp golden syrup Servings: 2-3 Glasses Prep Time: 5 minutes Cook time: 30 minutes plus soaking & chilling

Method Skin and core your pineapple, and add to a pan with your scraped vanilla pod.

Add 600ml of water - or just enough to cover the pineapple, and bring to the boil Simmer for 30 minutes, after which the fruit will be soft and the water reduced.

Remove from the heat and add the tea bag, leaving it to soak for 5 minutes, or longer if preffered.

Strain the juice and sweeten with 1 tablespoon of golden syrup.

Cool in the fridge, and serve over ice.
