February is somewhat unpredictable. It’s still cold (there’s maybe even a chance of snow), but there is also a handful of days which present that glorious beaming sun and crisp, chilly air. That being said, February can be a tricky month for the garden. The mix of winter and the start of spring is beginning to trigger the bulbs to emerge from the ground, with the longerlasting days also adding to the gardening equation. The team at The Directory Group, have put a small list together to show you how you can use this time to get your garden back up and running. Here are a few tips to get you set up for spring:

1. Make the beds: as long as the ground

isn’t frozen, you can start to cultivate your beds and warm up the soil with fleece, cloches or polythene, in preparation for the sowing season.

2. Maintenance inspection: be sure to

check all your garden tools and machinery are working and are in tip-top condition. Give a little TLC to the ones that need it!

• 250g pack of cold butter cut into cubes • 50g glacé cherries, finely chopped • ½ tsp extract • 8 tbsp cherry jam, sieved

Heat oven to 180C/160C fan/gas 4. Sift the icing sugar, flour and cornflour together into a bowl. Stir in the ground almonds and butter, then rub in the butter until smooth. Stir in the chopped glacé cherries and almond extract, and bring together to form a dough. Roll out on a lightly floured surface, then stamp out biscuits using a heartshaped cutter. Keep re-rolling the trimmings until all the dough is used. Carefully transfer the biscuits to baking trays lined with parchment and bake for just 8-10 mins until just pale golden. Using an upturned bottle top or similar, press gently into the centre of each biscuit to make a round indent. Spoon in a little jam and return to the oven for 2 mins. Remove and cool on a wire rack, before dusting with icing sugar to serve.

VEGETARIAN CURRY LENTIL & SWEET POTATO CURRY

Add 1 tsp cumin seeds, 1 tsp mustard seeds and 1 tbsp medium curry powder and cook for 1 min more, then stir in 100g red or green lentils (or a mixture), 2 medium sweet potatoes, cut into chunks, 500ml vegetable stock and a 400g can chopped tomatoes. Bring to the boil, then cover and simmer for 20 mins until the lentils and sweet potatoes are tender. Add a drained 400g can of chickpeas, then heat through. Season, sprinkle with ¼ small pack coriander, if you like, and serve with seasoned yogurt and naan bread.
