Bay All Day

Increasingly, we know that consumers are interested in the stories behind their fish, while some simply want to sink their forks into a tasty grilled meal. Bay Winds® Chilean Sea Bass just happens to satisfy both groups.

The sea bass is the result of an arduous journey south from the harbors of Punta Arenas in the Patagonia region of Chile, through the icy, stormy waters near the northern shelf of Antarctica. There, a crew of legacy fishermen harvest the wild, long-line caught, 100% all natural Chilean sea bass.

For the diners with a singular focus on food, the fish is incredibly rich, with large, ivory white, oil saturated flakes. This recipe combines South American sourcing with Mexican ingredients and a touch of Thai. Serve the sea bass alongside a fluffy mixture of Contigo® Black Beans and Asian Pride® Jasmine Rice, next to a flavor-soaked medley of birria-seasoned corn and jalapenos. The poblano queso sauce is a tangy, creamy complement to the sumptuous fish. Peruvian tear drop peppers pop with sparks of heat and color on this eyecatching canvas.

Hawaiian poke bowls, with their diced raw fish and fresh veggies, have made the move from the Pacific to menu mainstays. Our version is a grilled alternative, starring Empire’s Treasure® Ahi Tuna Steaks in lieu of sushi.

Here, we carefully sear the tuna on very high heat and slice into thin strips. Cherry wood is one of my favorites for this dish; the salmon loves it as you will taste in the final product. Teriyaki, honey, Sriracha, and ginger create a harmony of sweet, spicy, bright, and salty with the unctuous salmon for meal memory. Basting during the smoking process encases the salmon with a flavor-packed, gooey crust, creating the perfect bite.

The Fresh Catch® Spicy Sweet Salmon Burnt Ends

Servings: 8

Ingredients

4 lbs. The Fresh Catch Salmon Filet, 3-4 lbs. Skinless, large dice, 599728 | 12566 Wood of choice for smoking

2 c. Asian Pride® Teriyaki Sauce

½ c. West Creek® Honey

2 T. Peak® Ginger, minced

¼ c. Sriracha

¼ c. Black Sesame Seeds, for garnish

½ c. Peak Green Onions, finely chopped for garnish

Method

Whisk together teriyaki, Sriracha, and ginger. Pour this over salmon and marinate under refrigeration overnight.

Warm smoker to 250° F. Remove marinated salmon from the refrigerator. Spray a wire rack with pan spray then place salmon on the rack into the smoker for 1-2 hours. Baste the salmon with the marinade every 20 minutes during smoking process.

Remove salmon from smoker and portion, offering garnish with sesame seeds and green onions, then serve.
