The baking of a

breadwinner ..........

I

t was a moving trip to Thailand that set in motion a social enterprise project helping to change the lives of some of the many underprivileged newcomers to Sydney. The Bread & Butter Project, started by Paul Allam of Bourke Street Bakery with the help of business partner David McGuinness, offers selected refugees and asylum seekers a TAFEaccredited apprenticeship. The budding bakers also have English lessons with volunteers to help them settle in their new country. The scheme was inspired by Allam’s journey to Mae Sot on the Thai-Burma border in 2011. He travelled there after being contacted by an orphanage that had purchased an oven and wanted him to teach local Karen refugee women how to bake. The idea was to set up a social enterprise bakery to give mothers a skill so they could earn a living and provide for their children. It is tough going in Mae Sot, there are several hundred thousand refugees, with dozens of legal and illegal refugee camps. Human trafficking and child prostitution are rife. The transformation in the women was almost instant as they grew in confidence and skill every day. At the end of the training period several local cafes and restaurants,

which had been invited to come along and see what the women could do, placed orders and a small baking social enterprise was born. “The trip was really inspiring but we realised that to have the greatest possible impact we’d have to work on a project in our ‘own back yard’,” Allam says. So he and McGuinness used their expertise to establish the first social enterprise bakery in Australia. The Sydney operation reinvests 100 per cent of its profits in training and employment opportunities for refugees and asylum seekers. Working with not-for-profits and government agencies, the Bread & Butter Project currently chooses 12 trainees a year. “It is really rewarding to provide people with the skills and opportunity to support themselves and their families,” Allam says. The bakery prides itself on its delicious artisan breads and delivers the handmade loaves to food lovers, cafes, delis and department stores across the city. But most of all it is about helping make the lives of the refugees better by offering them a profession as they establish themselves in the community. 2062: Tell us a little about your job... Trevor: My job is to “add value” to everyone I come in contact with regarding the topic of real estate, whether it’s in person, on the phone or over email. Selling properties is a by-product of that one initiative. It’s that simple. Did you always know you would end up in real estate? No, I actually had plans for two prospective careers when I was younger. One was to be a professional rugby player, where I actually had some minor success but had to retire in my early 20s, and the other was to exercise my marketing degree in the corporate world. Three years after moving to Australia I fell into a sales role in a different industry and that’s where the love of adding value to buyers and sellers began, which led me to where I am today. Do you still play sport for a team? I play touch footy every Monday night at Primrose Park with a few mates but my days of playing sport seriously ended when I started in real estate.

What do you enjoy most about your job? Being valued and appreciated. I believe if you don’t have both either from within the business or externally from your customers/clients you won’t last long in that role. I measure both based on testimonials I receive from vendors or buyers wanting to share their experience in dealing with me. I strive to have a positive interaction with everyone I meet.

What is your favourite cafe in Cammeray? Has to be Maggio’s. It has been my favourite cafe since I started working in Cammeray more than six years ago. My go-to dish is the Cammeray Starter (fresh tomatoes, smashed avocado, feta on soy and linseed toast) although I can’t help but add two poached eggs and crispy bacon on the side. I could have it for breakfast, lunch and dinner.

Do you live in Cammeray? Not anymore due to a growing family but I did previously and loved every minute of it. I experienced firsthand why it’s such a desirable suburb to live in.

What is your favourite restaurant in Cammeray? Infusions. I haven’t once had a bad experience and the food and ambience is great.

What is it that you love about the area? The people. Doing what I do, a big part of my job is meeting people at certain stages in their lives where my services are of value. I’m welcomed into people’s homes every day, offered tea, coffee, cake and even the odd lunch or dinner. I never take the hospitality of home owners for granted.

Where did you grow up? I grew up on the home farm in County Leitrim, Ireland. At the time we had a lot of sheep and cattle, which one would consider to be a large farm in Ireland. I think my childhood upbringing on a farm setting influenced me in so many positive ways and every childhood memory I have is a happy one.

What do you remember as your proudest moment? I actually have three moments that are all joint first – getting married and the birth of both my boys. I’m sure my wife will read this so that’s what I’m sticking with. What do you consider your greatest achievement? Seriously… being a parent. It is an achievement that has no one measurement and is different for everyone, but I never really appreciated what my parents did for me until I had children of my own. Is there one person who has had a great influence on your life? My older brother would be that person. His influence on me as a child and teenager helped me reach so many goals and unforgettable milestones in my life. What sporting team do you support? The Waratahs. I love my rugby. Do you have a favourite movie? Senna. If you want to be moved, please watch it. As a child, my brothers and I would watch F1 on TV every Sunday with dad and Ayrton Senna was one of my favourite drivers. Do you have a favourite band? Audioslave. Their music got me through my college years. Are you a cat person or a dog person? Both actually. We had numerous cats and dogs on the homestead growing up.

T

here are so many wonderful places to holiday in Australia. We are blessed that no matter what you want to do, there is sure to be an option close to hand. If you’re looking for a relaxed time far from the hustle and bustle then Palm Cove is perfect. Around 25 minutes drive north of Cairns in Queensland, it is a delightful little beachside town in which to kickback and unwind. The small strip of bars, restaurants and shops are nestled along the picturesque seafront, and has everything from fine dining to cheap and cheerful noodles or fish and chips. There are several wonderful resorts you can choose to stay at, including the Pullman Sea Temple, located at the southern end of the beach about five minutes walk from the esplanade. A modern, family friendly hotel, it has wellappointed rooms and great facilities. There are three pools – a lap pool, kids’ pool and another for weary adults – and there is also easy access to the beach beyond the mangroves at the back. Looking along the sands you could be on a remote tropical island, with palm trees lining the shore as far as the eye can see. You’d be forgiven for forgetting you were on home soil were it not the gentle reminders from the currawong and the native eucalypts. The water is a striking, crystal clear blue and there are plenty of opportunities to enjoy it. Along the beach you can hire sea kayaks and jet skis to explore the coastline further or you can simply stroll along the sands at your own pace. While Palm Cove is small, there is a fantastic range of dining options on hand. For a lowkey, relaxed meal at any time of day, there is Chill Cafe at one end of Williams Esplanade, while on the opposite corner is the more up market Nu Nu, which offers a host of modern

Australian dishes. Further along the road Japanese restaurant Kushi is always popular and has lovely views out over the beach. But if you want something simpler, the generous helpings of golden, crispy battered fish and chips from Pete’s Place are delicious and Wok On has a great range of tasty Asian food at rock bottom prices. A further 30 minutes north of Palm Cove is Port Douglas, famous as a gateway to the breathtaking Great Barrier Reef and the nearby spectacular Daintree Rainforest, one of the few places in the world where rainforest meets reef. Situated on the long road into town, the QT is a relaxed, quirky, retro-inspired hotel whose sense of fun mirrors that of the area. There is a distinct sense of Mad Men meets Miami Beach to the place, in the whitewashed façade and the distinctive geometric black-andwhite striped motif that echoes throughout the resort, from the rooms to the restaurant awnings. Even the cute and casual outfits of the staff – think white plimsolls and skirts or shorts, and a coral or colourful patterned top – add to the playful vibe. Chilled out music drifts on the breeze around the lagoon-style pool and, cocktail in hand, it is a serene place to relax and soak up some sun. The QT’s bar and restaurants are all well worth a visit, in particular Bazaar, which is styled on a traditional marketplace but with a modern twist. With food on offer from every corner of the globe, your plate is your passport as you work your way around the world. Everything is perfectly executed – super fresh seafood, Sri Lankan curries, spicy Mexican meats, Japanese-style marinated sashimi, to name just a few. Your only problem will be knowing when to stop. and dining options, with Hemingway’s Brewery and Churrasco BBQ both worthy of a mention, but Watergate is not to be missed. Discreetly tucked away at the end of a lane off bustling Macrossan St, its modern Australian menu is filled with mouth-watering dishes – the chilli, lime and salt cuttlefish, and chargrilled kangaroo loin are standouts. Friendly and unpretentious, it may not be the cheapest eat but it is well worth the money. However, the main reason many people go to Port Douglas is to witness the majestic Great Barrier Reef first-hand. There are a variety of different tours and boats from which to choose. Quicksliver, for example, has two excellent offerings – one to the outer reef and a shorter journey on a catamaran to the low isles. But whatever you decide upon you are sure to enjoy an

unforgettable time at one of the wonders of the natural world. Scuba divers can explore the depths surrounded by the stunning array of vibrant, colourful sea life – a unique underwater world that is rightly revered. And even if you don’t scuba you are in no danger of missing out. There are guided snorkelling tours or, for the slightly less adventurous, trips on a semisubermissible or glass-bottomed boat to show what thrives around the coral beneath the ocean’s surface. On the low isles tour there are guided walks, with a marine biologist highlighting the idyllic tropical paradise’s natural delights as well as its history. And if all that seems a bit much you can just lie back under a palm-thatched umbrella enjoy the unspoilt white sands and drink in the unrivalled view.

We got three local favourites to each offer something that is sure to excite even the most discerning of partygoers. And remember, all are best enjoyed al fresco. The hot summer months are the perfect time for a cool, refreshing drink – and NORTHS’ Sailor Jerry’s cocktail is guaranteed to hit the spot. About Life’s super healthy raw kale pesto is fresh and tasty, and encapsulates what the providore is all about. Simple to prepare and delicious, it is great with pasta or as a dip. Harris Farm’s pulled pork burger offers a twist on a much-loved meal. As part of the curious cuts range, it uses a cut of meat, pork oyster shoulder, you’ve probably never heard of. Cooking with these rarely used cuts enables us to make the most of the whole animal. That means it’s good for the farmer, good for the planet

and, most of all, good for the customer, as these cuts are cheaper to buy. Alongside it is the imperfect apple slaw, which provides a lovely crunchy accompaniment. By using the store’s imperfect picks of fruit and veg, which might not look perfect but certainly taste it, you can make savings of up to 50% and help reduce food wastage.

6 lime pieces 1 spoon of sugar 45ml Sailor Jerry rum 4 pieces of apple 3 dashes old fashioned bitters 125ml Bundaberg ginger beer Crushed ice on top

1 cup raw cashews 4 cups filtered water 1 clove garlic (peeled) ¼ tsp Himalayan pink salt 1 pinch black pepper 1 tbsp lemon juice ½ cup extra virgin olive oil 1 cup fresh kale (chopped) 1 tbsp apple cider vinegar METHOD

1. Chop kale into strips removing the stalks 2. Soak the chopped kale in apple cider vinegar and warm water for 5 min 3. Remove & drain kale and add to blender with the rest of the ingredients 4. Blitz until smooth

Harris Farm’s PULLED PORK BURGER WITH A P P L E S L AW INGREDIENTS

1 pork oyster shoulder (rind scored) 2 tbsp salt 2 tbsp dark muscovado sugar 1 tbsp smoked paprika Bread rolls Slaw Mayonnaise or aioli METHOD

1. Preheat the oven to 220C 2. Line a roasting tin with sheets of foil big enough to fold over the top of the pork, then pat the meat dry with a paper towel and add to tin 3. Mix salt, sugar and paprika and rub into the meat

4. Put the pork into the hot oven for 40 mins until well browned & crackling is firm 5. Take out and reduce heat to 125C 6. Fold the foil over the top to make a sealed parcel and put back in the oven to cook for about 6-7 hrs, until the internal temperature measures 89C and it’s soft enough to spoon 7. Pour off the juices and reserve 8. Turn the heat back up to 220C and cook the pork, uncovered, for 10 mins to crisp up the crackling 9. Take out, cover with a foil tent and rest for 30 mins 10. Using two forks, pull pork into shreds, cut up the crackling too, add the rest of the seasoning, and any meat juices from the tin, and stir in

I

t was something that had gnawed at him for a long time, something he tried to ignore, something he couldn’t quite face head on. But it wasn’t working anymore. While to everyone else Terry Cornick seemed a successful, happy person things were not always as they seemed. He suffered through what he calls “a darker parallel world” of severe depression. This is what led him to start Mr. Perfect, an organisation working to raise awareness about men’s mental health. It is a grassroots support network for men like him; those who have suffered in silence and feel they have nowhere to turn. “Mr. Perfect officially started in mid-2015. It was inspired by my own battle with depression, anxiety and suicidal thoughts,” Terry says. “Everyone on the outside thought I was Superman and my best mate would tease me, unknowingly calling me ‘Mr. Perfect’. I figured if I am ‘coping’ then there will be a hell of a lot of other men out there that need help.” He suffered several traumatic events during his childhood in the UK and there was a history of depression in his family. At 21 he googled “depression” and matched six of the eight symptoms. But it wasn’t until 2014 that Terry first sought help, visiting his GP who then referred him to a psychologist – something Terry credits, alongside his wife and young son, with changing his life. Suicide is the leading cause of death among men aged 25-44, according to the Australian Institute of Health and Welfare. Many are embarrassed about what they perceive to

be a weakness, concerned about the unfortunate stigma attached to many areas of mental health or simply do not know where to turn. Mr. Perfect is helping to try and change this. It has informal meet-ups in central Sydney once a month for anyone who wants to get involved, and has events and talks at various organisations across the city in which Terry and others explain what Mr. Perfect is all about. There are also blog, vlogs, a newsletter and website, mrperfect.com.au, that address and discuss a range of topics relating to mental health and wellbeing. The organisation even has a football team, MRPFC, as exercise has been cited as a key factor in contributing to good mental health. “Our lofty vision is to change the face of, and improve, men’s mental health by making it a comfortable discussion for all. Mr. Perfect always attempts to be inclusive, supportive and approachable,” Terry says. “We facilitate conversation and connection through authentic personal stories, awareness, education and interaction.” He says that since it began, Mr. Perfect has received an extremely positive response. “It has been overwhelming,” Terry says. “From people extremely close to me including friends and family, to people I have never met or guys that have attended our meet-ups, everyone has a story on how mental illness has turned their world upside down. “Just by opening up the conversation there has been some real impact.”
