J

ust a few years ago the words “craft beer” would have conjured visions of dodgy home brew set ups producing drinks that would have been better as paint stripper. Thankfully those days are long gone. Now the shelves of bottle shops are lined with bottles of delicious craft beers, with even more on tap in pubs and bars. Sydney’s Endeavour is one of the labels toasting this rise to prominence. Founded in 2010 by Ben Kooyman along with Andrew Stewart and Dan Hastings, it has grown from producing two beers to brewing a variety of different ranges, is stocked up and down the east coast at venues such as the Opera House and even has its own pub. But Endeavour was a decade in the making. “The idea for the business started after I had a beer epiphany in the US in 1999, when I was handed a full-flavoured amber ale,” Ben, chair of the Independent Brewers Association, says. “After returning home, and being unable to find many flavoursome beers, the business was hatched and launched in August 2010 – with two beers and one customer.” And while it was a long-held dream to produce his own beer, Ben didn’t want to do it alone. “I ran the idea of a beer company by close mates Dan and Andy, and once we got some interest from potential customers, they rallied amongst mates to raise the capital required. To this day, the original shareholders still own over 80 per cent of the shares and are enjoying the journey,” he says. While the big mainstream multinational brands still dominate with more than 80 per cent of the market, the demand for independent brewers like Endeavour continues to grow. Craft brands currently enjoy approximately 9 per cent of total beer

sales and independently owned brewers account for one-third of that – but by 2025 these ambitious independent brewers hope to have 15 per cent of the total market. Endeavour produces eight beers on tap and five in bottles, with cans to come next summer. Each is brewed at one of four locations across NSW, with bigger batches put together at breweries in Caringbah, Narellan and Griffith, and everything else produced at its own Endeavour Tap Rooms pub in The Rocks, which opened in March last year. As a wholly Australian-owned business it prides itself on using only home-grown ingredients. “It’s essential for us. As one of only a few 100 per cent Australian beer companies, in both ownership and ingredients, we want to showcase home-grown beers nationally, and eventually internationally,” Ben says. “Our focus on using the best harvest ingredients every year is our core philosophy, letting Mother Nature play a huge role in our recipes that get tweaked every year for every style ... our beers do evolve continually.” And with so many to choose from, Ben says he finds it difficult to choose his favourite. “It’s like nominating which child is your favourite – impossible to say!” he says. “I love them all on different occasions, but with winter approaching, our reserve amber ale will come back to the front of the fridge.” The next few years promise to be prosperous for Endeavour – and there’s a chance they could look at a venue north of the bridge in the not too distant future. “We’ve got a few plans over the next five years and beyond, and we’d love to put a great venue in Sydney’s north,” Ben says. ammeray is still outperforming the Sydney market with an average auction clearance rate of 79 per cent over the past 12 months. The number of homes sold has marginally increased over this period, however, so has the number of days properties are staying on the market. You can’t get away from the media coverage about the softening market conditions in Sydney and most recently the lower north shore recording the highest percentage of price reductions since 2013. The precursor to price reductions is real estate agents overpricing properties to begin with. Having been overpriced, a property is more likely to sell for less than it otherwise could have if it was valued accurately from day one. The more this occurs, the more buyers perceive this as social proof that the market is in decline and they should expect further price reductions. Thankfully this doesn’t mean that properties aren’t still selling well. Recent sales such as 39 Carter St, Cammeray, and 2/5 East Ave, Cammeray,

demonstrate that quality properties – even with a compromise here or there – are still selling extremely well, with strong buyer competition and sales well in excess of price guides or auction reserves. Our office recently set a new suburb record for Cremorne with the sale of 8 Wonga Rd, published to be “about $19 million”, and 1/2E Mosman St, Mosman, recently set a new apartment record in the suburb at $10.22 million. Properties in the sub $3 million price point have been the most volatile of late. This is partly because buyers within this bracket are having a harder time securing the finance they require for the next move. This puts greater downward pressure on home prices as their budget or buying power isn’t what it used to be considering financial lenders now have a very keen eye on reducing risk. The buyer demographic that I feel is getting the best value out of this market seems to be the first-home buyers, as they aren’t having to unwillingly compete with as many investor, foreign and downsizer buyers as they used to.

ali is one of those places where people seem to have a lot of pre-conceived ideas of what they’ll find there – both good and bad – but the island still has the ability to surprise and delight. Seminyak, a 30-minute drive from the airport in Denpasar, is one of those locations. On the southwest coast, it is well known for its refined dining and has been a popular beach holiday with tourists for years – but there are still pockets of tranquility to be found hidden away among the warren-like streets. Villa Kubu, on Raya Seminyak Gang Plawa Rd just around the corner from all the hustle and bustle, is one of these havens. It is comprised of 17 luxurious villas ranging from one to five bedrooms, each with their own private pool. Every one is unique and finished in a timeless yet traditional style, and all to the highest possible specifications. The villas enjoy complete seclusion, hidden away behind high walls enclosing tropical gardens that complete the aura of relaxation and glorious solitude. The immaculately presented three-bedders at this luxury oasis are spread over two floors, with the large living areas open to the lush gardens, koi pond and swimming pool surrounded by wooden sun loungers with a shaded, cushion-filled daybed at one end. Each of the bedrooms has a spectacular indoor/outdoor bathroom and the master suite upstairs also enjoys its own private sitting room overlooking the pool and downstairs lounge. Villa Kubu also has a spa that offers a range of range of treatments to help you forget about the worries of everyday life and slip further into the inner peace you didn’t even know you were missing. Seminyak’s buzzing streets are always a hive of activity, busy with crowds of people

winding their way along the narrow footpaths and the occasional food stall filling the air with the smells of sizzling chicken satay. Chic boutiques and stylish furniture stores sit alongside up-market bars and restaurants. Cafe Bali, on Kayu Aya Rd, is a gem. With its whitewashed wooden beams, chandeliers, mismatched furniture and vintage décor the atmosphere is one of relaxed refinement. It offers a reasonably priced and extensive menu, but best of all the food is uniformly delicious. The gazpacho, salmon tartare and frites, and nasi goreng are all excellent. Bambu (on Petitenget Rd) looks a little mysterious, concealed by a discrete entrance, but as soon as you step inside you know you are somewhere special. The tables are either set around an architecturally designed pond or on an island in the middle, all accessed across a series of marble steps set into the water. The clean lines of the pool are juxtaposed with the more traditional style elsewhere (beams, pitched roof), adding to a truly breathtaking dining experience. Bambu offers a twist on traditional Indonesian favourites specially selected from all over the country and offers amazing flavours in a stunning setting with equally spectacular service. The menu changes regularly based on market availability but what can always be relied upon is the flavour. The up-scale Indonesian cuisine makes full use of local produce, and whether you choose the sticky, spicy pork ribs or chargrilled mushrooms, you are in for a treat. After Seminyak the altogether more sedate pace of life in Sanur on the southeast coast makes for nice change. A small seaside town, it hums with tourists during peak season but at other times is a refreshingly down-to-earth and laid-back destination. The narrow beach is protected by a reef and

breakwaters, making the blue waters a great spot for kids, with the manicured gardens of resorts only separated from the sand by a narrow winding path along the shore. One such resort is the Fairmont, which covers a large area stretching from the beach back towards the main street of Danau Tamblingan, where the majority of tourist shops, small boutiques and cafes, bars and restaurants can be found. It exudes sophistication. No expense has been spared, with even the smallest of the rooms encompassing a vast space, and it is the little details in each – an elegant wall recess, a beautiful enclosed balcony, the colonial-style bronze fans – that really set it apart. Driving north up into the foothills, you leave the beach behind as you venture through dense forest on the way to Ubud, along roads packed with shops selling stone work and finely crafted wooden furniture. Set among rice paddies and nestled amid the mountains, Ubud is in many ways the cultural heart of Bali, which is reflected in the number shops selling antiques, woodcarvings, textiles, paintings and jewellery throughout the town, as well as the popular market. Stylish shops and clothing stores rub shoulders with the galleries and arts and crafts stores, and there is something for even the most discerning of shoppers. Linen & Co on Monkey Forest Rd has a range of classic pieces, from T-shirts to dresses to Italian-designed leather bags, at very reasonable prices, while Tn Parrot – of which there are several dotted around Ubud – sells great T-shirts that are a cut above the usual souvenirs, as well as exceptional shirts, hats and tote bags. Popular with tourists, Ubud has accommodation and entertainment to suit every budget and though the busy streets can at times appear a little chaotic this is all part of the charm. As well as its arts and crafts,

the town is also well known for its monkey forest where you can interact with hundreds of primates. Buy bananas on the way in to feed the animals and pose for pictures with the usually amiable monkeys but be sure to pay attention to the signs dotted around – some of them are quite large and will be off with your bag if you’re not careful. A short walk up the hill is the centrally located The Ubud Village Hotel. It has well appointed rooms and a nice rooftop bar, perfect for a sunset drink, as well as a tranquil pool partially hidden among draped vines. Ubud also has a flourishing food scene, where everything from Indonesian to international, suckling pig to vegan is freely available. On the edge of a small rice field, Three Monkeys stretches from the busy Monkey Forest Rd back to a serene terrace beneath a canopy of frangipani trees. The setting is pure Bali but the menu is more globally inspired, with the delicate house-made pumpkin ravioli and pepes ikan – mahi-mahi coated in Balinese spices and grilled in banana leaf – standouts. Kismet, which has a sister boutique and cafe, offers mouth-watering vegetarian cuisine on South Goutama Rd deep within the criss-cross of narrow thoroughfares and lanes in the centre of town. Its trendy decor, with exposed light bulbs that you turn on to order hanging above each of the upstairs tables, and tucked away location create a cosy but classy atmosphere. Its variety of salad bowls and skewers are a firm favourite and its green curry poutine – a twist on the Canadian favourite of fries baked with cheese, this time doused in a delicious spicy curry sauce – is a decadent delight while the great list of wines and cocktails offer a perfect complement. Far from being just a beach retreat, Bali offers all manner of more sophisticated getaways – you just have to know where to look.

Roasted asparagus w/ lemon, garlic & parmesan

Gnocchi w/ broccoli cream sauce & almonds

A super easy roasted asparagus side dish or entree – sometimes it’s the simplest flavour combinations that are the best.

If you’ve never made gnocchi before, it’s definitely time to give it a try – it’s easier than you think and so satisfying. And this broccoli cream sauce is a match made in heaven.

INGREDIENTS

2-3 bunches of asparagus 8 garlic cloves (skin kept on) 1 lemon (halved and sliced) 1/4 cup of grated parmesan 1 tbsp of olive oil Salt METHOD

1. Preheat the oven to 180C/356F/gas mark 4. 2. Remove the very ends of the asparagus by slicing off 2cm or snapping the ends off using your fingers (if using young or smaller asparagus this isn’t necessary). 3. Place the asparagus onto a tray on baking paper along with the garlic cloves and sliced lemon, and top with olive oil and a sprinkle of salt. Roast for 25 minutes. 4. Remove the tray from the oven. 5. Serve the asparagus along with the garlic cloves and lemon as a side and sprinkle with freshly grated parmesan cheese.

INGREDIENTS

1.1kg potatoes (desiree or Dutch cream) 2 x eggs 250g plain flour + more for dusting 60g finely grated sharp parmesan 1tsp of salt 1tbsp of olive oil 1 whole broccoli (large broccoli stem removed) 1 large clove of garlic (diced) 250ml pure cream 1 cup of almond flakes METHOD

1. Start by preparing the potatoes for the gnocchi. Clean and rinse without peeling. Prepare a large pot of cold water and place the washed potatoes in the pot. Bring the pot to a boil then reduce the heat to a simmer for 20 minutes. Don’t over boil, as you don’t want the potatoes to be overcooked. 2. Once cooked remove the

potatoes from the pot and place them in a bowl to cool. They will be too hot to peel. After a couple of minutes, when the potatoes are still hot but not boiling hot, begin to peel the skin off using your fingers or a small knife. 3. Place the potatoes one by one into a potato crusher and squeeze them through to break up the potato. If you don’t have a crusher place the potatoes onto a board and use a fork to mash them roughly. Try to crush them as much as you can so there are no chunky parts left over. 4. On a well-floured surface place the roughly crushed potatoes into a heap and sift flour over the top then add the parmesan, salt and create a small dent. Place the eggs into the centre then use your fork to break the yolks in the mixture. Use your fork to start mixing the flour into the egg and other ingredients roughly. Then use your hands to bring all of the ingredients together, mixing everything as well as possible. Once mixed through well shape it into a ball – it should still be quite sticky. Sprinkle flour over the surface and gnocchi mixture so it’s coated. 5. Prepare a couple of trays that are lightly floured to place the cut gnocchi onto. 6. Cut the ball into 2 pieces

then cut again into 2 so that you have a total of 4 pieces. 7. Setting aside all but 1, shape it into a small round shape and place onto a floured surface. Using your palms, press down lightly and roll it into a thin and even as possible cylinder shape. 8. Using a knife cut the cylinder shape into small pieces 2cm in length. 9. Repeat with the rest of the gnocchi mixture. 10. For the sauce, chop the broccoli roughly and place it in a hot pan with olive oil. Sauté for a few minutes until lightly cooked along with the garlic.

11. Remove the broccoli from the hot pan temporarily and transfer it into a food processor. Add the cream and season well. Blend this for a few minutes then place it back into the pan and cook the creamy broccoli mixture for 10 minutes, stirring occasionally, tasting and adding any seasonings. 12. Meanwhile prepare a large pot of water and bring it to the boil. 13. A few minutes before the sauce is completely cooked start cooking the gnocchi. 14. Add it in a couple of batches into the simmering

pot of water and, using a large spoon, stir gently from the bottom of the pot. The gnocchi will be ready once they float on the surface. 15. As each batch of cooked gnocchi is ready transfer them into a large bowl. 16. Pour the creamy broccoli sauce over the top and gently stir through with a large spoon until the gnocchi is evenly coated. Top with parmesan and almond flakes. W

hen James Hoffmann was born in February 2010, it was bitter sweet. His overjoyed parents were elated at his arrival but emotionally drained from the tragic death of his two-year-old sister Sienna just five days earlier. Sienna had lost her fight with neuroblastoma, a complex childhood cancer that forms in immature nerve cells and while little is known about the aggressive disease it remains the biggest killer of children under five in Australia. “We lost our beautiful girl Sienna and our lives were totally shattered,” their mother Lucy Jones, who lives in Cammeray, says. “Losing your child is a mother’s worst nightmare, having Jamie helped me survive the tragedy as I had to look after him and love him, and over time he has helped us enjoy life again. “It is still distressing to think our little girl suffered at times and was too young to express how much pain she was in. While our world fell apart, Sienna loved life and, like all toddlers who fall gravely sick, she didn’t have the capacity to dwell on her sickness. She would have beaten it on personality alone but it was too aggressive – she didn’t stand a chance.” Her fighting spirit is the inspiration behind Neuroblastoma Australia, a registered charity set up by her parents, Lucy, and Oliver Hoffmann in 2010 to raise awareness and funds into research on the insidious cancer. Sienna was diagnosed with high-risk neuroblastoma at just nine months in 2007, prompting a long period of intensive chemotherapy followed by a stem cell transplant and radiotherapy at Sydney Children’s Hospital in Randwick. Doctors warned the effervescent, curly-haired toddler had a 40 per cent chance of beating the cancer and when she achieved initial remission after six months her parents prayed she had beaten the odds. “Sienna flourished and had a

zest for life,” Lucy says. “She loved going to the zoo, loved drawing and painting, dancing. She started to play with other children and often out-ran them. We were convinced our little girl would make it.” Sadly the joy was short lived. Within two months a routine scan shed light on a new tumour, prompting another gruelling round treatment. With just a 1 per cent chance of survival, oncologists scrambled to secure a new, potentially life-saving drug but supplies were limited and Sienna was not yet eligible to go on a clinical trial. Her cancer continued to progress, with five new tumours appearing shortly after her second birthday. Chemotherapy managed to reduce four of them but one was resistant and grew aggressively. She finally lost her brave fight on February 3, 2010. To date the charity her parents founded, and developed with the help of other families, has raised $1.5 million through donations and fund-raising events. For the past five years the annual Sienna Gala Dinner and Run2Cure Neuroblastoma fun run have raised money for the Children’s Cancer Institute and trials into the drug CBL137, a potentially promising new treatment with lower side affects. “I set up a charity to raise money for research into tackling the cancer; a voice that fights on in Sienna’s memory,” Lucy says. “There have only been marginal improvements in survival rates and treatments in the last 10 years. We know from our ongoing fight so much more is possible and the cure is definitely out there – it is just a matter of funding and research.
