ined up along the edge of the sea-lashed jetty at Balmoral Baths in an array of colourful swimsuits are cheery swimmers poised to take on their Saturday challenge. Plunging into the 50m ocean pool, members of the Spit Swimming Club will compete with people of all ages and capabilities in handicapped races, often for a coveted trophy. It has produced an impressive roll call of successful swimmers in its 102-year history. Olympic legend Murray Rose is just one of the famous products of a family club that has given generations the opportunity to race together in one of the most picturesque harbours in Sydney. Such is the camaraderie formed at the meetings – which typically end with a catch-up over tea and coffee – that Anna Torok, 40, who joined the club at the age of six and recently swam the English Channel, still travels from her home at Bronte in the eastern suburbs to swim. “People love it because Australia never really had indoor pools but we have the advantage of water,” says club secretary Kerrie Osbourne, 71, who joined as a four-year-old. The Spit Baths were opened in 1901 where Middle Harbour Yacht Club is now located and the club was founded there. The baths closed in 1962 when owner Sam Herford packed up and sold, so the club moved to its current home at Balmoral, where it has cultivated its reputation for amateur competitive swimming every Saturday morning from October to April.

“My grandson was probably the youngest member to join at 10 months, and the oldest is 75,” Kerrie says. “Brett Hill, my brother, became famous through the club, a lot of Australians did.” Indeed Hill, who competed in the men’s 200m butterfly at the 1964 Tokyo Olympics but sadly died of a heart attack at the age of just 57 in 2002, is just one of several esteemed swimmers to have dived in for the Spit Swimming Club. Six-time Olympic medallist Rose is probably the most famous. He began his swimming career with the club before making his Olympic debut at the 1956 Melbourne Games as a 17-year-old and won three medals, all gold. Four years later, as a 21-year-old, he won three more Olympic medals (one gold, one silver, one bronze) at the 1960 Rome Games. But while it is great to have such an eminent background, the club offers so much more. “We’re a small family club but we have a huge history,” says club president Mike Gribbin, a TV producer and cameraman. “Children love the competitive edge and, as a family, you can bring the kids and race against them, although I’ve now lost that race with my four-year-old daughter, who is now faster than me. The club is testament to our community’s love for swimming, cheerful competition and family time at the beach.” For more information on the club go to www.spitswimclub.org.

T

he south coast of NSW is well known for its wonderful beaches, but the serene surrounding countryside can be just as spellbinding, with its lush, green landscapes, abundant wildlife and relaxing atmosphere. Situated a little under three hours south of Sydney – and just 10 minutes from the magnificent Hyams Beach – in beautiful Jervis Bay, The Woods Farm is the perfect place to unwind. Located on 40 acres of tranquil bushland, there are eight well-appointed cottages as well as glamping options in which to stay, and whatever you choose you will not be disappointed. Each of the wonderfully furnished cottages has three bedrooms and its own unique country theme. We stayed in the Birdhouse, which is at the far end of the property next to the paddocks and an open stretch of land, which gave us plenty of chances to check out the local wildlife. From the outset it is clear that great thought and effort has been put into every element of the farm. As you make your way down the track into the property you pass the large fully equipped glamping tents and come across an old-fashioned truck welcoming you. Further along there are wooden signs clearly depicting the name of each cottage upon the backs of which are painted lines from Dorothea Mackellar’s evocative poem My Country, adding another layer of Australiana. Each of the cottages has a stencil painted on the outside of the building depicting the name of the cottage in which you are staying – for

example a hen for the Henhouse – offering a stylish and striking prelude of what’s to come. Inside everything has a slightly rustic yet stylish feel, with flourishes that show the great care and attention that has been put into the look and feel of the decor. From the hand-picked artworks on the walls, to the eye-catching adornments – such as the delicate bird cages and vintage objet d’art, and the luxurious bathroom that would not look out of place in the classiest of five-star hotels – nothing has been overlooked. This also applies to the sumptuous toiletries and beautiful perfumes on offer for guests to use. Outside there is a striking black-and-white striped porch, large outdoor dining table, comfortable furniture, a hammock and a fire pit – all overlooking the bush, a vintage fire truck and the many animals. It is a wonderful spot to sit back and drink in the atmosphere. At dusk – probably with a glass of something nice in hand – you are likely to see curious kangaroos hopping a short distance from you, checking out who has turned up now. They bound across the property regularly, providing another quintessential country touch for city visitors. Of course, the experience would not be complete without the more traditional farm animals, and there are lots of opportunities to get up close and personal with them here as you indulge your inner farmer, safe in the knowledge that all the hard work is being done by someone else. At The Woods Farm there is plenty of space to roam and the peacocks on site certainly

make the most of it. Our girls, aged one and three, were mesmerised as the vibrantly coloured birds continually popped up no matter where we were – by the pool, on a bush walk, or perched next to the sturdy outdoor dining table. But the thing the children were most excited about was patting and feeding the other animals by hand every morning and evening. There are goats, cows, alpacas – with names such as James and Kerry Paca – a horse and minihorses in the paddocks on the property and their familiar sounds can be heard throughout the day. There are also chickens to feed and they return the favour by providing eggs that every guest is welcome to collect and cook. There is plenty more to keep you occupied without leaving the farm. Next to the chicken coop is an extensive potager, or herb garden, behind some beautiful wrought iron gates. Within you will find everything you need to add the finishing touches to a beautiful meal, and there are also long tables as well as chairs for you to relax in if you simply want to take a load off and enjoy the tranquillity. For those who want to stretch their legs and minds, or who – like us – have energyfilled kids to entertain, there are a range of options available. Next to the potager is a children’s playground, complete with sandpit and row boat and even a tiny synthetic-grass football pitch. And, while the youngsters run themselves to a standstill, there are some garden games for the big kids, with a giant chess board, Jenga, a bocce court and skittles all on hand. Alongside this, safely fenced off, are the swimming pool and sun beds – showing it’s

definitely not all hard work on the farm – and behind is a great little bar and seating area that can be used by guests and is perfect for a party. The Woods Farm makes for a wonderful wedding or party venue and you can hire out the entire site for a special occasion. There is a huge area to explore, with bikes provided to help you seek out large parts of the property as well as the surrounding area, and there are a number of walks to tackle. Adding a little more mystery to the enchanting atmosphere is the “Secret Woods Walk”, which has been cut through the bush. Pointed along the way by signs featuring some inspirational and quirky quotes from the likes of Maya Angelou, you meander along, weaving your way through the tall grass and trees until you find the craft caravan hidden away on the path. There the kids can go wild with paints, brushes and pens – and add to the intriguing collection of messages and marks made by those who have previously found their way here. Dragging yourself away can be almost impossible but the stunning Hyams Beach is a must-see. Just a 10-minute drive away, its pristine white sand and crystal-clear aqua water are another reminder of why you don’t have to stray too far from home to find paradise. If you want to enjoy all the fun of the farm and also savour one of the world’s most beautiful beaches, The Woods Farm is the perfect place to stay.

W

hen James Hoffmann was born in February 2010, it was bittersweet. His parents were elated at his arrival but emotionally drained from the tragic death of his two-yearold sister Sienna just five days earlier. Sienna had lost her fight with neuroblastoma, a complex childhood cancer that forms in immature nerve cells. While little is known of the aggressive disease, it is the most deadly cancer for children under five in Australia. “We lost our beautiful girl and our lives were shattered,” mum Lucy Jones says. “It’s a mother’s worst nightmare, having Jamie helped me survive the tragedy as I had to look after and love him, and over time he has helped us enjoy life again. It is still distressing to think our little girl suffered at times and was too young to express how much pain she was in. While our world fell apart, Sienna loved life... she would have beaten it on personality alone but it was too aggressive – she didn’t stand a chance.” Sienna’s fighting spirit is the inspiration behind Neuroblastoma Australia, a registered charity set up by her parents Lucy and Oliver in Mosman in 2010 to raise awareness of and funds for research into the insidious cancer. Sienna was diagnosed with high-risk neuroblastoma at the age of just nine months in 2007, prompting a long period of intensive chemotherapy followed by a stem cell transplant and radiotherapy at Sydney Children’s Hospital, Randwick. Doctors warned the effervescent toddler had just a 40 per cent chance of surviving but when she achieved initial remission after six months her mum and dad prayed she had beaten the odds. “Sienna had a zest for life,” Lucy says. “She loved going to the zoo, drawing and painting, dancing. She started to play with other children and often out-ran them. We were convinced our little girl would make it.”

Sadly the joy was short-lived. After being in remission for nine months, just after Sienna turned two a scan shed light on a new tumour, prompting more gruelling treatment. With Sienna’s odds of survival down to a minuscule 1 per cent, doctors tried to access a new, potentially lifesaving drug for her. However, relapsed children were not given access to the drug because its supply was so limited and their chances of survival were so low.. Sienna’s cancer continued to progress, with five new tumours appearing. Chemotherapy reduced four but one was resistant. A clinical trial in the UK was found that she could go on but it was too late as the fifth tumour had started to grow out of control. She finally lost her brave fight on February 3, 2010. To date the charity her parents founded has raised more than $1.8 million through donations and fundraising events. For the past five years, the annual Sienna Gala Dinner and Run2Cure Neuroblastoma fun run – which this year takes place at The Domain on Sunday, June 2 – have raised money for the Children’s Cancer Institute and trials into the drug CBL137, a promising new treatment with fewer side effects. “I set up a charity to raise money for research into tackling the cancer; a voice that fights on in Sienna’s memory,” Lucy says. “There have only been marginal improvements in survival rates and treatments in the last 10 years. We know so much more is possible and the cure is out there – it is just a matter of funding and research. W

e could all do with eating a healthier diet, but sometimes it all seems a bit too hard or regimented. It doesn’t have to be. Nutritionist Laura Phongsavath provides a multitude of mouth-watering dishes on her website Wellness Within You and she has provided MOSS readers with a couple here. What started as a hobby turned into her passion when she “realised just how much I enjoyed cooking and creating recipes to share with others”. Laura credits her mother with inspiring her love of cooking. “(She was) my biggest inspiration growing up, she taught us the joy of cooking and the role that food plays in bringing family and friends together,” Laura says. And while she is committed to clean eating, Laura’s philosophy is all about balance and enjoyment. “I believe in nourishing yourself with good, quality food and ingredients… but I also think there’s room for enjoying dessert or a glass of wine. Creating a healthy relationship with food and making sure you find enjoyment in your meals are all important when it comes to healthy eating.”

Thai Satay Tofu Noodle Salad

METHOD

over the noodles, leave for 4-5 minutes to soften and cook. 3. In the meantime, dice tofu up into 2cm-sized cubes. 4. Heat oil in pan, cook tofu. Brown on each side for 1-2 minutes, adding in the tablespoon of soy sauce towards to the end. Set aside. 5. Drain the noodles, rinse with cold water and return to the mixing bowl. 6. Remove the core of the red cabbage and thinly slice. 7. Peel the carrots and then continue peeling to create carrot “noodles”. 8. Roughly chop the coriander leaves and stem. 9. Rinse and drain the bean shoots well. 10. Add the cabbage, carrot, coriander, bean shoots and cooked tofu into the mixing bowl with the noodles. 11. Make the dressing – add peanut butter, coconut milk, honey, soy sauce and juice of half a lime to a mixing bowl. Mince the garlic, peel and grate the ginger, and slice the chilli, add these to the bowl. Whisk together until creamy. 12. Pour dressing into mixing bowl with other ingredients. 13. Toss well to coat the salad evenly with the dressing. 14. Serve topped with garnishes.

Rice noodles, crunchy fresh veggies and crispy tofu tossed through a creamy satay dressing. It’s a perfect balance of sweet, sour, salty and spicy – exactly what you want from a Thai-inspired dish. INGREDIENTS

450g block of firm tofu 1 tbsp olive oil 1 tbsp gluten-free soy sauce 250g rice noodles 1/4 head red cabbage 2 carrots 1/2 bunch coriander 1 cup bean shoots DRESSING

1. Place dates in a bowl and cover with hot water. Set aside for 20 minutes. 2. Place oats, nuts, coconut, cacao and cinnamon into a food processor and pulse together until oats and nuts have roughly broken down and ingredients are well combined. 3. Drain the soaked dates and add them to the food processor, along with the peanut butter and coconut oil. 4. Blend until mixture
