I

t was a moving trip to Thailand that set in motion a social enterprise project that has helped to change the lives of some of the many underprivileged newcomers to Sydney. The Bread & Butter Project, started by Paul Allam of Bourke Street Bakery with the help of business partner David McGuinness, offers selected refugees and asylum-seekers a TAFE-accredited apprenticeship. The budding bakers also have English lessons with volunteers to help them settle in their new country. The scheme was inspired by Allam’s journey to Mae Sot on the Thai-Burma border in 2011. He travelled there after being contacted by an orphanage that had purchased an oven and wanted him to teach some of the local Karen refugee women how to bake. The idea was to set up a bakery to give mothers a skill so they could earn a living and provide for their children. The transformation in the women was almost instant as they grew in confidence and skill every day. At the end of the training period several local cafes and restaurants, invited to come along to see what the women could do, placed orders and a small social enterprise was born. “The trip was really inspiring but we realised that to have the greatest possible impact we’d have to work on a project in our own backyard,” Allam says. So he and McGuinness used their expertise to establish the first social enterprise bakery in Australia. The Sydney operation reinvests 100 per cent of its profits in training and employment opportunities for refugees and asylum-seekers. Bread and pastry sales fund 90 per cent of the training and operation costs,

with donations covering the other 10 per cent. Working with not-for-profits and government agencies, the Bread & Butter Project currently chooses eight trainees a year. “It is really rewarding to provide people with the skills and opportunity to support themselves and their families,” Allam says. The scheme is growing all the time as more and more people get involved. The Bread & Butter Project holds “Master Classes” at its Marrickville premises for corporate team building, in which each of the participants is given the identity and back story of a refugee as they learn the intricacies of sourdough and pastry making. Working alongside the refugee apprentices, this offers them an insight into the hardships and heartaches asylum seekers are forced to endure. And the Bread & Butter Project has also set up shop at Harris Farm Markets in Bondi Junction, staffed by its refugee bakers (opposite page bottom right). The Bread & Butter Project prides itself on its delicious artisan breads and delivers the handmade loaves to food lovers, venues, cafes, delis and department stores across the city, including Vito Gelato & Caffe in Neutral Bay. But most of all it is about helping make the lives of refugees better by offering them a profession as they establish themselves in the community.

THE PENTHOUSE At Cremorne Point Manor ..........

Roasted asparagus w/ lemon, garlic & parmesan

Gnocchi w/ broccoli cream sauce & almonds

A super-easy roasted asparagus side dish or entree – sometimes it’s the simplest flavour combinations that are the best.

If you’ve never made gnocchi before, it’s definitely time to give it a try – it’s easier than you think and so satisfying. Match it with this broccoli cream sauce and it’s a match made in heaven.

INGREDIENTS

2-3 bunches of asparagus 8 garlic cloves (skin kept on) 1 lemon (halved and sliced) 1/4 cup of grated parmesan 1 tbsp of olive oil Salt METHOD

1. Preheat the oven to 180C/356F/gas mark 4. 2. Remove the very ends of the asparagus by slicing off 2cm or snapping the ends off using your fingers (if using young or smaller asparagus this isn’t necessary). 3. Place the asparagus onto baking paper-lined tray along with the garlic cloves and sliced lemon, and top with olive oil and a sprinkle of salt. Roast for 25 minutes. 4. Remove the tray from the oven. 5. Serve the asparagus along with the garlic cloves and lemon as a side and sprinkle with freshly grated parmesan cheese.

INGREDIENTS

1.1kg potatoes (desiree or Dutch cream) 2 eggs 250g plain flour + more for dusting 60g finely grated sharp parmesan 1tsp of salt 1tbsp of olive oil 1 whole broccoli (large broccoli stem removed) 1 large clove of garlic (diced) 250ml pure cream 1 cup of almond flakes METHOD

1. Start by preparing the potatoes for the gnocchi. Clean and rinse without peeling. Prepare a large pot of cold water and place the washed potatoes in the pot. Bring the pot to a boil then reduce the heat to a simmer for 20 minutes. Don’t over boil, you don’t want the potatoes to be overcooked.

2. Once cooked, remove the potatoes from the pot and place them in a bowl to cool. They will be too hot to peel. After a couple of minutes, when the potatoes are still hot but not boiling, begin to peel the skin off using your fingers or a small knife. 3. Place the potatoes one by one into a potato crusher and squeeze them through to break up. If you don’t have a crusher place the potatoes onto a board and use a fork to mash them roughly. Try to crush them as much as you can so there are no chunky parts left. 4. On a well-floured surface place the roughly crushed potatoes into a heap and sift flour over the top, then add the parmesan and salt, and create a small dent. Place the eggs into the centre and use your fork to break the yolks in the mixture. Use your fork to start roughly mixing the flour into the egg and other ingredients. Use your hands to bring all of the ingredients together, mixing everything as well as possible. Once mixed well shape it into a ball – it should still be quite sticky. Sprinkle flour over the surface and coat the gnocchi mixture. 5. Place the cut gnocchi onto a couple of lightly floured trays.

6. Cut the ball into two pieces then cut again into two so that you have a total of four pieces. 7. Taking one, mould it into a small round shape and place onto a floured surface. Using your palms, press down lightly and roll it into a thin and even cylinder. 8. Using a knife, cut the cylinder shape into small pieces 2cm in length. 9. Repeat with the rest of the gnocchi mixture. 10. For the sauce, chop the broccoli roughly and place it in a hot pan with olive oil alongside the garlic. Sauté for

a few minutes until lightly cooked. 11. Remove the broccoli from the hot pan temporarily and transfer it into a food processor. Add the cream and season well. Blend this for a few minutes then place it back into the pan and cook the creamy broccoli mixture for 10 minutes, stirring occasionally, seasoning to taste. 12. Meanwhile, prepare a large pot of water and bring it to the boil. 13. A few minutes before the sauce is completely cooked start cooking the gnocchi.

14. Add it in a couple of batches into the simmering pot of water and, using a large spoon, stir gently from the bottom of the pot. The gnocchi will be ready once they float on the surface. 15. As each batch of cooked gnocchi is ready transfer them into a large bowl. 16. Pour the creamy broccoli sauce over the top and gently stir through with a large spoon until the gnocchi is evenly coated. Top with extra parmesan and almond flakes. ali is one of those places where people seem to have a lot of preconceived ideas of what they’ll find – both good and bad – but the island still has the ability to surprise and delight. Seminyak, a 30-minute drive from the airport in Denpasar, is one of those locations. On the southwest coast, it is well known for its refined dining and has been a popular beach destination for tourists for years – but there are still pockets of tranquility to be found hidden away among the warren of streets. Villa Kubu, on Raya Seminyak Gang Plawa Rd, just around the corner from all the hustle and bustle, is one of these havens. It is comprised of 17 luxurious villas ranging from one to five bedrooms, each with their own private pool. Every one is unique and finished in a timeless yet traditional style, and all to the highest possible specifications. The villas enjoy complete seclusion, hidden away behind high walls enclosing tropical gardens that complete the aura of relaxation and glorious solitude. The immaculately presented three-bedders at this luxury oasis are spread over two floors, with the large living areas opening to the lush gardens, koi pond and swimming pool surrounded by wooden sun loungers and a shaded, cushion-filled daybed at one end. Each of the bedrooms has a spectacular indoor/outdoor bathroom, and the master suite upstairs also enjoys its own private sitting room overlooking the pool and downstairs lounge. Villa Kubu also has a spa that offers a range of treatments to help you forget about the worries of everyday life and slip further into the inner peace you didn’t even know you were missing. Seminyak’s buzzing streets are always a hive of activity, busy with crowds of people winding

their way along the narrow footpaths, the occasional food stall filling the air with the smells of sizzling chicken satay, and chic boutiques and furniture stores sitting alongside all manner of bars and restaurants. Cafe Bali, on Kayu Aya Rd, is a gem. With its whitewashed wooden beams, chandeliers, mismatched furniture and vintage décor the atmosphere is one of relaxed refinement. It offers a reasonably priced and extensive menu, but best of all the food is uniformly delicious. The gazpacho, salmon tartare and frites, and nasi goreng are all excellent. Bambu (on Petitenget Rd) looks a little mysterious, concealed by a discrete entrance, but as soon as you step inside you know you are in for something special. The tables are either set around the architecturally designed pond or on an island in the middle of it, all accessed via a series of marble steps set into the water. The clean lines of the pool are juxtaposed with the more traditional style elsewhere (beams, pitched roof), adding to a truly breathtaking dining experience. Bambu offers a twist on traditional Indonesian favourites specially selected from all over the country, and offers amazing food in a stunning setting with equally spectacular service. The menu changes regularly based on market availability, but what can always be relied upon is the flavour. The upscale Indonesian cuisine makes full use of local produce, and whether you choose the sticky, spicy pork ribs or chargrilled mushrooms, you are in for a treat. After Seminyak the altogether more sedate pace of life in Sanur on the southeast coast makes for nice change. A small seaside town, it hums with tourists during peak season but at other times offers a refreshingly down-toearth and laidback destination. The narrow beach is protected by a reef and

breakwaters, making the crystal-clear ocean a great spot for kids, with the manicured gardens of resorts only separated from the sand by a narrow winding path along the shore. One such resort is the Fairmont, which covers a large area stretching from the beach back towards the main street of Danau Tamblingan, where the majority of tourist shops, small boutiques and cafes, bars and restaurants can be found. It exudes sophistication. No expense has been spared, with even the smallest of the rooms encompassing a vast space, and it is the little details in each – an elegant wall recess, a beautiful enclosed balcony, the colonial-style bronze fans – that really set them apart. Driving north up into the foothills, you leave the beach behind as you venture through dense forest on the way to Ubud, along roads packed with shops selling stone work and finely crafted wooden furniture. Set among rice paddies and nestled amid the mountains, Ubud is in many ways the cultural heart of Bali, reflected in the number of shops selling antiques, wood carvings, textiles, paintings and jewellery, as well as the popular market. Stylish shops and clothing stores rub shoulders with galleries and arts and crafts stores, and there is something for even the most discerning of shoppers. Linen & Co on Monkey Forest Rd has a range of classic pieces, from T-shirts to dresses to Italian-designed leather bags, all at very reasonable prices, while Tn. Parrot – there are several dotted around Ubud – sells great T-shirts that are a cut above the usual souvenirs, as well as shirts, hats and tote bags. Popular with tourists, Ubud has accommodation to suit every budget, and though the busy streets can at times appear a little chaotic this is all part of the charm. As well as its arts and crafts, the town is also well known for its monkey forest, where you can interact with hundreds of primates. Buy

bananas on the way in to feed the animals and pose for pictures with the usually amiable primates, but be sure to pay attention – some of them are quite large and will be off with your bag if you’re not careful. A short walk up the hill is the centrally located The Ubud Village Hotel. It has wellappointed rooms and a nice rooftop bar, perfect for a sunset drink, as well as a tranquil pool partially hidden among draped vines. Ubud also has a flourishing food scene, where everything from suckling pig to vegan delights are available. On the edge of a small rice field, Three Monkeys stretches from the busy Monkey Forest Rd back to a serene terrace beneath a canopy of frangipanis. The setting is pure Bali but the menu is globally inspired, with the delicate house-made pumpkin ravioli and pepes ikan – mahi-mahi coated in Balinese spices and grilled in banana leaf – standouts. Kismet, which has a sister boutique and cafe, offers mouth-watering vegetarian cuisine on South Goutama Rd within the criss-cross of narrow thoroughfares and lanes in the centre of town. The restaurant’s trendy decor – exposed lightbulbs hanging above each of the upstairs tables, which you turn on to order – and tucked-away location all add to the atmosphere. Its variety of salad bowls and skewers are a firm favourite, and its green curry poutine – a twist on the Canadian favourite of fries baked with cheese, this time doused in a delicious spicy curry sauce – is a decadent delight, while the great list of wines and cocktails offer a perfect complement. I

t was something that had gnawed at him for a long time, something he couldn’t quite face head on, something he tried to ignore. But it just wasn’t working any more. To everyone else Terry Cornick seemed a successful, happy person but things were not always that way as he suffered through what he calls “a darker parallel world” of severe depression. This is what led him to found Mr. Perfect, an organisation working to raise awareness about men’s mental health. It is a grassroots support network for men like him – those who have suffered in silence and feel they have nowhere to turn. “Mr. Perfect officially started in mid-2015. It was inspired by my own battle with depression, anxiety and suicidal thoughts,” Terry says. “Everyone on the outside thought I was Superman and my best mate would tease me, unknowingly calling me ‘Mr. Perfect’. I figured if I am ‘coping’ then there will be a hell of a lot of other men out there that need help.” Terry suffered several traumatic events during his childhood in the UK and there was a history of depression in his family. At 21 he googled “depression” and matched six of the eight symptoms. But it wasn’t until 2014 that Terry first sought help, visiting his GP who then referred him to a psychologist – something Terry credits, alongside his wife and young sons, with changing his life. Suicide is the leading cause of death among men aged 25-44, according to the Australian Institute of Health and Welfare. Many are embarrassed about what they perceive to

be a weakness, concerned about the unfortunate stigma attached to many areas of mental health, or they simply do not know where to turn. Mr. Perfect is helping to try to change this. It hosts informal meet-up BBQs for anyone who wants to drop in, and has events and talks at various organisations during which Terry and others explain what Mr. Perfect is all about. In total there are now 20 meetups across Australia – in NSW, Victoria, Queensland and Western Australia – as well as online offerings at mrperfect.org.au where people can log in for a chat. There are also blogs and vlogs on the site that address and discuss a range of topics relating to mental health and wellbeing, as well as a newsletter. Forums on the site are provided by national mental health charity SANE Australia. “Our lofty vision is to change the face of, and improve, men’s mental health by making it a comfortable discussion for all. Mr. Perfect always attempts to be inclusive, supportive and approachable,” Terry says. “We facilitate conversation and connection.” And he says he has been absolutely delighted with the response to Mr. Perfect over the past few years. “It has been overwhelming,” Terry says. “From people extremely close to me to people I have never met or guys that have attended our meet-ups, everyone has a story on how mental illness has turned their world upside down. Just by opening up the conversation there has been some real impact.”

The Orpheum, Cremorne By the time this picture was taken Cremorne Orpheum had been entertaining audiences for more than two decades. Opening in 1935 as a grand 1735-seat cinema and theatre, it boasted for years it was “Sydney’s only suburban city movie theatre”, but by the 1980s the building had fallen into disrepair. Property developers had turned it into a shopping arcade before TV personality Mike Walsh stepped in to lovingly restore its art deco heritage, ensuring that today the Hayden Orpheum Picture Palace, as it is now known, stands proudly as a tribute to a golden age of cinema. Neutral Bay Chamber of Commerce The Neutral Bay Chamber of Commerce is dedicated to raising the profile of local businesses and this wonderful part of the city.
