Lemon Herb Orzo with Asparagus and Feta

Cook Time: 20 minutes Serves: 4 3 tbsp extra virgin olive oil 3 tbsp fresh mint, roughly chopped 2 tbsp fresh dill, roughly chopped 2 tbsp fresh lemon juice 1 garlic clove, minced ½ tsp kosher salt 1 c De Cecco Orzo ½ bunch asparagus ¼ c The Fresh Market Feta Crumbles Freshly ground pepper Add olive oil, mint, dill, lemon juice, garlic and salt to a large serving bowl and set aside. Cook orzo according to package instructions. While orzo is cooking, prepare asparagus. Trim and discard woody ends and cut spears into 1-2-inch pieces (about 4 pieces per spear). Fill a medium saucepan with water and bring to a boil. Once boiling, add asparagus and boil until just tender, about 3-4 minutes. Quickly drain and add to serving bowl. Add cooked orzo to bowl with asparagus. Add feta and toss everything well to combine. Taste and add more salt and pepper if desired.

Jo Ann Whitley The Fresh Market Floral Director

Jo Ann has been in the floral industry for 30 years. Half of that time, she’s worked at The Fresh Market, curating the finest flowers and plants. While she loves flowers from every season, springtime is her favorite. “I love tulips, hyacinths, crocus and daffodils in the spring,” Jo Ann said. “This is my favorite time of year in our Floral Department because we have an amazing array of freshcut and potted plants.” She’s a fount of floral knowledge, faithfully answering our questions (“How do I plant a potted hyacinth?” “What’s the best way to remove lily pollen?”) We’ve included some of her tips here, so you, too, can celebrate the season of all things blooming.

Jo Ann’s Tip: Remove the pollen with a tissue before placing them on your table. If the pollen finds its way to your table linen, gently brush it off with a pipe cleaner or dab with sticky tape. $

Jo Ann’s Tip: Did you know tulips continue to grow after they’re cut? Trim stems prior to placing them in a vase with cold water and watch them grow. They also naturally bend towards sunlight, so rotate your vase daily to keep the stems upright.

Planting Potted Bulbs

Depending on which zone you live in (check online), potted bulbs purchased in late spring can be planted in your yard. After planting, water them and add a little fertilizer. Brunch with

Gale Gand

Nationally acclaimed, James Beard award-winning pastry chef, Food Network star and cookbook author Gale Gand is no stranger to whipping up a stellar brunch. In fact, she’s dedicated one of her eight cookbooks to the subject! We were excited to chat with Gale about her career, favorite spring brunch dishes, baking shortcuts and more. We’re also obsessed with her recipe for Sheet Pan Spring Hash with Fried Eggs—and we think you will be, too. @chefgalegand

How did you decide you wanted to become a chef?

Do you have any Easter baking traditions or a favorite Easter dessert?

I was waitressing in a restaurant in Cleveland, and one day one of the line cooks didn’t show up for his shift. My manager looked at me and said, “Can you cook?” I assured her I couldn’t, but she threw an apron at me and said, “Get in the kitchen.” So I did. I was terrified for about six seconds, but then I felt a strange sense of calm come over me like I’d found my home.

We always make my mother-in-law Vita’s Ricotta Doughnuts. The kids stir the batter together while my husband hides the eggs outside—I mean, the Easter bunny hides the eggs outside—and then while they go outside to hunt for them, I heat up the oil and fry. Then they come in to hot doughnut holes dredged in powdered sugar.

What was it like being on the Food Network during the early days (back when it was more cooking shows versus competitions)?

Are there any baking tips or shortcuts you swear by?

I loved taping my show at Food Network. It was fast-paced and exciting, teaching so much in so little time. And it built a community of viewers who now are better bakers and some even professional pastry chefs with baking businesses. I get notes, cards and emails from them all the time. Imagine what you love to do influences others to find what they love to do. It’s just the best.

Freeze leftover egg whites. They thaw out great for crispy meringues, buttercream, angel food cake and pavlova. Use parchment paper on your sheet pans (and cake pan bottoms) for easier release and clean up. The paper is reusable, so save it for next time if it doesn’t have much goo on it. Use unsalted butter when baking to control the amount of salt in your recipe. Not European style butter—that’s for spreading on bread, and the higher fat content may throw off your recipe.

What are your favorite spring brunch dishes? Eggs Benedict. I also love salami and eggs, something my mom made on Sundays. And my mother-in-law’s go-to quick dish, eggs poached in tomato sauce, which she called “Cucurumao.” The name is from some remote Sicilian dialect she spoke and is pronounced goo-guh-di-ma-ow. Pair with slices of crusty Italian bread, and that’s a meal! Could you tell us about the Sheet Pan Spring Hash with Fried Eggs? I love mixing cut vegetables with only olive oil and some seasonings, then roasting them to get all their natural flavors and textures. And we’ve all learned that everything is better with a fried egg on top. Since I have backyard chickens who lay a few a day, we put eggs on everything!
