Heritage Cooking with

Marcus Samuelsson is an award-winning chef, restaurateur, author and philanthropist. His culinary journey is rich and layered—born in Ethiopia, Marcus grew up in Sweden cooking alongside his grandmother. Later, he emigrated to America and eventually opened his first restaurant, Red Rooster Harlem. We were honored to chat with Chef Marcus about his heritage, the importance of celebrating Juneteeth and his fundraising campaign, Black Businesses Matter Matching Fund.

How have your heritage and upbringing influenced your cooking? Having been influenced by so many places while growing up, is there a particular country’s traditional flavors that you lean into most?

I spent a lot of time in nature, from fishing to walking in the woods.

I like being outdoors and I continue to draw inspiration from that. I don't remember my childhood being indoors except my memories with my grandma Helga in her kitchen. I think I balance a lot between Ethiopian and Swedish heritage, and I'm

constantly putting my own spin on it.

It's refreshing to build new dishes based off of those you already know.

Juneteenth is a celebration that commemorates June 19, 1865 and the abolition of slavery in America. As a naturalized American, do you celebrate Juneteenth? How can we celebrate Juneteenth through food?

Since we pull so much from our history, it's important for us to know as much of it as possible and for what we know to be accurate.

Through the rich stories of Black cooks profiled in The Rise and your travels during the show, “No Passport Required,” where have you seen examples of traditional Black dishes influencing modern American cuisine?

It'd be hard to think about a city like New Orleans without thinking about Black cooking. I think about modern versions of shrimp and grits in low countries and of course BBQ as traditional dishes that influence modern American food.

Tell us about the Black Businesses Matter Matching Fund you recently created. How can people get involved, and how will the funds be distributed?

We created the Black Businesses Matter Matching Fund to easily provide grants to Black-owned restaurants and local small businesses who have been both disproportionately affected by the pandemic and historically under-capitalized due to systemic racism. We hope people will get involved by heading to the website, bbmmf.org. There, you can help provide assistance to these individual businesses and donate to nonprofit funds supporting Black-owned businesses who currently need financial stability.

BBMMF has created a multi-step process to determine which businesses will receive these grants, including a nationwide nomination process led by renowned Black chefs and tastemakers in their respective communities, as well as local BIPOC small business advocate nonprofits who help recommend, vet and advise. From there, BBMMF uses their best-in-class platform to certify eligibility, receive funds and help businesses build their public pages on the BBMMF hub.

Papa Ed’s Shrimp and Grits

Ed Brumfield is the executive chef at the Red Rooster in Harlem.

Here, we share his ultimate soul food recipe for shrimp and grits, from THE RISE cookbook by Marcus Samuelsson with Osayi Endolyn.

Cook Time: 1 hour 15 minutes | Serves: 4–6 Grits: 1 c heavy cream 2 oz unsalted butter 1 c stone-ground grits 4 oz white cheddar cheese, shredded kosher salt Gumbo Sauce & Shrimp: 3 tbsp vegetable oil 1/4 c celery, diced small 1/4 c red onion, diced small 1/4 c red bell pepper, diced small 4 garlic cloves, minced 1 tsp kosher salt 1/2 tsp freshly ground pepper 4 oz ground chorizo 14 oz crushed tomatoes 8 oz okra, diced small 1 tbsp smoked paprika 1 tsp cayenne pepper 2 c fish broth 2 tbsp apple cider vinegar 12 large, peeled and deveined,

tail-on shrimp For the Grits: Place 2 c water, heavy cream and butter into a medium saucepan and set over medium-high heat. Once the liquid comes to a simmer, add the grits and whisk to combine. Decrease heat to low and cook, stirring frequently, until grits are tender and creamy, 20–25 minutes.

Remove from heat and stir in cheese until melted. Taste and adjust seasoning with salt as desired.

For the Sauce: Place vegetable oil in a large saucepan or Dutch oven and set over medium-high heat. Once oil shimmers, add celery, onion, peppers, garlic, salt and pepper and cook, stirring frequently, until onions are translucent, 3–4minutes. Add chorizo and cook 4–5 minutes, stirring frequently. Add tomatoes, okra, paprika and cayenne and continue cooking 4–5 minutes, stirring frequently. Add fish stock and apple cider and bring to a simmer.

Decrease heat to low, cover and cook for 20–25 minutes, stirring occasionally. Add shrimp and stir to combine. Continue to cook 4–5 minutes or until the shrimp are cooked through. Serve over warm grits.

“I read a lot about wine, cornered any wine salesperson that I could,” Don says. “I bought different wines to try and went to tastings. After a while, I could recommend wines to the guests comfortably, and when they came back in raving about the selections, I was hooked.”

If you’re interested in expanding your wine knowledge, Don recommends trying all the main varietals, as well as wines from different regions and countries. Here are some of his current favorites:
