How to Carve Your Bird A whole roasted turkey is a sight to behold. So is a beautifully arranged platter loaded with succulent slices of meat. Our method involves removing all the meat from the bird and then slicing it, rather than cutting pieces straight off the turkey. This sweet and aromatic herb butter is a welcome change from the traditional Thanksgiving turkey. Spread this over and under the skin of your bird before roasting for amazing flavor and color.

5 hours, 30 minutes | serves 10–12 1 (~20 lb) fresh turkey Kosher salt, to taste 16 tbsp (2 sticks) salted butter, softened 1 tbsp The Fresh Market Ground Turmeric 1 tsp The Fresh Market Dried Rosemary 1 tsp The Fresh Market Smoked Paprika 2 tsp The Fresh Market Ground Coriander 2 tbsp honey Preheat oven to 325°F. Remove giblets and neck from turkey and discard. Place turkey on a roasting rack set in a roasting pan. Tie ends of drumsticks together with kitchen twine. Lift wing tips up and over back and tuck them under bird. Pat turkey dry with paper towels and generously season inside and out with kosher salt.

Our spices are sourced from a family-owned and women-led business that has won over 50 product awards since 2012.
Add butter and remaining ingredients to a large bowl and stir until well combined. Store at room temperature if using within a day; otherwise refrigerate. Gently loosen the skin from the turkey and generously spread about half the butter mixture evenly under the skin. Liberally spread the remaining butter over the skin. Cover turkey breasts (not wings) with aluminum foil. Add 2 c water to pan. Bake, basting every 45 minutes or so (including area under foil) until an instant-read thermometer inserted in meaty part of thigh (not touching bone) registers 180°F, about 4 hours and 45 minutes. During last hour of roasting, remove and discard foil. Add water as needed to keep drippings from scorching. Transfer turkey to a large serving platter. Let turkey stand uncovered for at least 30 minutes before carving.

This made-in-store entrée consists of a boneless duck breast, tucked inside a boneless chicken breast, tucked inside a boneless turkey breast. We’ve layered garlic herb dressing and andouille sausage throughout for even more flavor. (Requires cooking)

with bourbon and thyme gravy 2 hours, 30 minutes | serves 4–6 1 (~4 lb) turducken 6 tbsp (3/4 stick) unsalted butter, softened Kosher salt and freshly ground pepper 1 ½ c chicken broth or stock + ½ c if needed ½c rendered fat from turducken (or melted butter, if needed) ½c flour 5 ½ c chicken broth or stock 1/3 c bourbon (see note) 2 tsp fresh thyme, finely chopped Preheat oven to 350°F with rack in lower third of oven. Rub turducken with softened butter and season with salt and pepper. Place turducken on rack in medium roasting pan. Add 1 ½ cups stock to pan. Cover with foil and roast for about 1 hour and 45 minutes. Uncover and cook additional 15 minutes or until an instantread thermometer into center of turducken registers 165°F. The broth in the pan will reduce to a dark brown glaze. If it seems too dark, pour in ½ c more stock or water. Transfer turducken to cutting board to rest. Pour pan juices into large heatproof glass bowl, leaving browned bits in pan. Skim off fat from top, reserving ½ c fat in liquid measuring cup (add melted butter if needed to measure ½ c), set aside. Add chicken stock to bowl with pan juices to make 6 c total liquid. Place roasting pan over two burners over medium heat. Add reserved fat and flour, whisking to make a paste, about 1 minute. Add pan juice/stock mixture, bourbon and thyme. Whisk until smooth and bring to a boil, scraping up browned bits in pan. Reduce heat to medium low and simmer, whisking often, until gravy is smooth and lightly thickened, 5-10 minutes. Season to taste with salt and pepper. To serve, remove netting from turducken and cut crosswise into ½-in slices. Serve with gravy. Note: For a non-alcoholic version, substitute additional broth for the bourbon.

Craving a little something different for your holiday feast? This vibrant, Thai-inspired sweet potato dish is sweet and spicy, for a creative twist on traditional ingredients. Just don’t skimp on the toppings! They add brightness and crunch to every bite. 1 hour, 30 minutes | serves 6 ¼ c red curry paste 1 c coconut milk 1 c chicken stock 2 tbsp brown sugar ½ tsp kosher salt 2 lb The Fresh Market Cubed Sweet Potatoes 6 garlic cloves, peeled 3 shallots, peeled keeping roots intact, quartered lengthwise 1 c mint leaves, chopped 1 c cilantro leaves, chopped ½ c roasted salted peanuts, roughly chopped 3 limes, cut into wedges
Preheat oven to 425°F. In a large bowl, whisk curry paste, coconut milk, chicken stock, brown sugar and salt until well combined. Place sweet potato cubes, garlic cloves and shallots in a large roasting dish and pour over curry mixture, stirring to distribute evenly. Cover with aluminum foil and roast for 40 minutes. Remove foil and cook an additional 40 minutes or until sweet potatoes are fork tender and curry sauce has reduced slightly. Serve warm topped with mint, cilantro, peanuts and lime.

Crispy Duck Fat Smashed Potatoes
with lemon gremolata 30 minutes | serves 8 2 lb One-Bite Potatoes 2 tbsp flat-leaf parsley, finely chopped ½ large lemon, finely zested 2 garlic cloves, minced 3 tbsp extra virgin olive oil, plus more for serving 6 tbsp Aux Délices des Bois Duck Fat, divided Kosher salt and freshly ground pepper Put the potatoes in a large saucepan and add enough water to cover by 1 inch. Season liberally with salt and bring to a boil over high heat. Reduce heat to medium and simmer, with the lid askew, until just tender, about 15-20 minutes, depending on the size of the potatoes. Drain, but do not rinse. While potatoes are cooking, make the gremolata. Mix the parsley, lemon zest, garlic and olive oil together in small bowl. Set aside. On work surface, use your palm to gently smash/flatten each potato under a flat spatula to about ½-inch thickness, without breaking the potato into pieces. Heat 3 tbsp duck fat in a 12-inch heavy skillet over medium-high heat until sizzling. Using the spatula, carefully slide half the potatoes in the skillet; do not crowd them. Cook until the edges are golden brown, 2-3 minutes. Carefully flip the potatoes and crisp the undersides, 2-3 minutes more.

Triple Ginger Chocolate Chunk Cookies 30 minutes/1 hour | serves 12–18 12 tbsp 1c 1 ¼c 2 tsp 2½c 2 tsp 2 tsp 2 tsp ¼ tsp ¾c 2 oz ½c
(1 1/2 sticks) unsalted butter, at room temperature packed Wholesome! Organic Light Brown Sugar egg, at room temperature Wholesome Organic Molasses fresh ginger, very finely chopped all-purpose flour baking soda ground ginger pumpkin pie spice kosher salt semisweet chocolate chips crystallized ginger, chopped granulated sugar
Beat butter in a large bowl with a mixer set to high speed for 1 minute. Scrape the bowl with a rubber spatula. Add brown sugar and beat on high speed for 5 minutes. Scrape the bowl. Add the egg, molasses and fresh ginger and beat on high speed for 1 minute. Scrape the bowl. In a separate bowl, sift together flour, baking soda, ground ginger, pumpkin pie spice and salt. Add to butter mixture in thirds, beating on low speed only until blended each time. Scrape the bowl with each addition. Mix in chocolate chips and crystallized ginger on low speed. Pour the granulated sugar into a small, shallow bowl. Shape the dough into balls about the size of a walnut. Coat in the granulated sugar. Arrange on two sheet pans lined with parchment paper or a silicone baking mat, spacing them 2 inches apart. Cover and refrigerate until the dough is firm, at least 1 hour. Preheat the oven to 350°F. Position racks in the upper and lower third of the oven. Bake cookies until their tops crack and their edges are firm, but are still slightly soft in the center, about 15 minutes. Place the pans on wire racks and let cookies cool to room temperature.

Curry Turkey Pot Pie
Madras curry and garam masala give this classic comfort dish a unique spin. 1 hour, 10 minutes | serves: 8 5 tbsp unsalted butter, divided 1 large yellow onion, finely chopped Kosher salt 1 tbsp extra virgin olive oil 1¼c Yukon gold potatoes (about 3 small), diced small 1¼c cauliflower, cut into ½-inch florets 2 garlic cloves, minced 1 ½ tsp madras curry powder 1 tsp garam masala 3c cooked leftover turkey, chopped 1¼c frozen peas, thawed ½c all-purpose flour 1½c low-sodium chicken stock ½ c + 1 tbsp whole milk, divided 1 pkg puff pastry, thawed 1 egg Preheat oven to 400°F. In a large skillet, melt 1 tbsp butter over medium heat. Add onion, season with salt to taste and sauté, until it starts to brown, about 10 minutes. Melt 1 tbsp butter and olive oil in the same skillet and add the potato and cauliflower. Increase heat to medium high, season with salt to taste and sauté until tender, about 10 minutes. Add garlic, curry powder and garam masala, stir to combine and sauté one minute more. Remove from heat. Add turkey and peas to veggie mixture, then transfer to a 9x13 baking dish. Heat the same skillet over medium and melt remaining 3 tbsp butter. Whisk in flour and cook for 1 minute, whisking constantly. Gradually whisk in chicken stock and ½ c milk, whisking until mixture is smooth and thick, about 2 minutes. Add more salt if desired. Remove from heat and pour over veggie-turkey mixture in the baking dish, tossing with a spatula to fully coat everything in the gravy.

Chinese Heritage Cooking Shirley Chung Born and raised in Beijing, China, Shirley was exposed to international cuisine at an early age by her grandmother. Shirley immigrated to America at age 17 for college and left her career in high tech to follow her passion for food. She is trained in classic French and Italian cuisine and has worked and opened restaurants for Thomas Keller, Guy Savoy and Mario Batali. The California-based restaurateur was a two-time finalist on BravoTV's Top Chef, and now showcases her Chinese heritage and personality in a modern fast casual, Ms Chi Cafe. We were thrilled to chat with Shirley about her cookbook, Chinese Heritage Cooking from My American Kitchen, along with her experience immigrating to America, her favorite Thanksgiving recipe and more.
You grew up in Beijing. What are some dishes you loved from your childhood and how has your culture helped shape your cooking today? Northern Chinese cuisine is filled with dumplings, noodles and bings (round flatbreads, scallion pancakes, etc.). We eat a lot less rice than the southerners, and we always celebrate seasonal changes with food. As soon as kids can pick up chopsticks on their own (around age 4 or 5), they start learning how to fold dumplings with their mothers and grandmothers. I was classically trained in French cuisine, and I live and breathe Chinese cuisine and culture. I would describe my way of cooking as a modern American cuisine with a Chinese soul. I incorporate Chinese and western techniques with local, seasonal ingredients, creating elevated dishes that when you eat them, you feel like getting a hug from me. What was the biggest surprise to you about American food once you moved to the United States?

When I first arrived in America, I was shocked that everything in the supermarket from vegetables, fruit to every single portion of everything—was giant. I used to roam around in the supermarket, reading all the labels (which is one of the ways that I learned English). Both of my parents were working in Silicon Valley and they always came home really late, so I started to cook dinner for my parents every night, using the new ingredients that I could purchase from an American supermarket. What was it like attending culinary school in San Francisco at such a young age? How did you realize you wanted to become a chef? I went to culinary school at age 27, after spending 5 years working in the semiconductor sector in the Silicon Valley. I always loved food, started to make simple noodles and fried rice in elementary school, and hosted my classmates of more than 20 kids at my house and fed them noodles as young as 8! But growing up, becoming a chef was never an option in my parents’ eyes.

My family has four generations of doctors, and I was supposed to follow their footsteps and become a surgeon. I had a great career in the high tech world but always felt unfulfilled. Things I looked forward to the most were dining at all the best restaurants in the Bay Area and hosting parties on the weekends so I could recreate all the dishes I liked and feed my friends. When the market crashed in the early 2000s, my boyfriend (now husband), Jimmy, pushed me to rethink what I wanted and pursue my dream. I saw a commercial for California Culinary Academy, so I went to take a tour of the school. The moment I stepped into the building, the sound of chopping and bustling, the aroma of all the baked goods—hair on the back of my neck stood up. I knew this was my calling. I officially started my culinary career at 28. Do you have any cooking tips that you swear by? Butter makes soy sauce better. Some of my soy glazed dishes are finished with butter. So, so good.
You were a finalist on Top Chef! What was it like competing on the series and what did you learn from that experience? Everything you see on Top Chef is real! I am a competitive person and I perform better under stress. I realized 90% of the time that I was going back to the flavors and textures of my childhood in China even though I was using western techniques and American southern ingredients. I found my Chinese American self on Top Chef.

Where did you draw inspiration for your cookbook Chinese Heritage Cooking from My American Kitchen? My cookbook is my journey of growth and discovery as a Chinese American and a Chinese American chef. It has a collection of traditional Chinese dishes as well as my Chinese American creations. My goal is to get people to be less intimidated about cooking Chinese food at home. Do you celebrate Thanksgiving and if so, is there a favorite dish you love to make for your family? Thanksgiving is my family’s favorite holiday to celebrate together. As chefs, we normally work through all of the holidays. When I became a head chef, I would take turns with my chef team to take one holiday off per chef, and Thanksgiving was always the holiday I chose. My go-to meal is a whole roasted duck with Chinese sausage and forbidden rice stuffing as the centerpiece, caramel chicken with chestnuts, and a small prime rib on the side. Could you tell us about your recipe for Caramel Chicken with Chestnuts? One of my favorite things in the fall and winter is roasted chestnuts. They remind me of my childhood and holiday family time. When I make this dish, I love the sweet and savory aroma of caramel and soy sauce, the bubbling sound of chicken, chestnuts and mushrooms simmering together, the slow and low braising style of cooking. This dish always gives me a warm and fuzzy feeling of the holidays with "The Christmas Song"—chestnuts roasting on an open fire—in my head.
