1 Open the Wine

Pop open your favorite bottle of red—be sure to reserve a half cup for your pan sauce.

2 Season Early

Generously season both sides of your ribeye with coarse salt and pepper and let it sit at room temperature until ready to cook, at least 30 minutes. While steak sits, thinly slice 1 small shallot and cut 8 oz of baby bella mushrooms into quarters

3 Keep It Hot

For a nice sear, heat a skillet over medium-high until almost smoking. Add 1 tbsp olive oil and cook undisturbed about 3 to 4 minutes per side for a 1-inch thick steak. Remove ribeye to plate and set aside.

4 Make a Pan Sauce

Follow our easy and impressive recipe below and serve it over your cooked steak. FROM OUR CHEF'S KITCHEN

Red Wine Mushroom Sauce 1 tbsp unsalted butter 1 small shallot, thinly sliced 8 oz baby bella mushrooms, quartered 2 sprigs fresh thyme ½ c cabernet sauvignon 1/4 c beef stock 1/3 c heavy cream Kosher salt and freshly ground black pepper, to taste Melt butter in skillet over medium heat. Add shallot, mushrooms and the leaves from 2 sprigs of fresh thyme. Sauté until mushrooms are brown and tender, stirring occasionally, about 8 minutes. Add red wine, beef stock and accumulated juices from the steak, stirring to scrape browned bits from the pan. Simmer until liquid is reduced by half. Turn off heat, stir in heavy cream and season with salt and pepper to taste.

Nadiya Hussain

Nadiya Hussain wrote Nadiya Bakes as the cookbook companion to her Netflix series of the same name. After winning The Great British Baking Show in 2015, she went on to host several cooking shows on the BBC including Nadiya's Time To Eat, Nadiya's British Food Adventure and Nadiya’s Family Favourites. Nadiya makes regular appearances at food events throughout the U.K. and abroad and has been featured in the BBC’s 100 Most Influential Women list. She writes regular columns for The Times and lives in the U.K. with her husband and three children. @nadiyajhussain

What are your most loved dishes from childhood and how have they influenced you? We grew up eating Bangladeshi food, which consists of rice as a staple, fish and fruit. Some of my favorite recipes growing up would have to be my mum's chicken korma. Simply cooked with ginger, garlic and onions, whole spices, chicken on the bone, boiled eggs, cooked slowly. Sweet and fragrant. As a cook it has given me a huge appreciation for the food culture I grew up around, but as a British Bangladeshi, it has given me a thirst for experimenting as I straddle both worlds, in terms of culture and food. What’s your food philosophy and how has it evolved? Never ever waste. If it's edible, eat it. A philosophy like that does not need to evolve. It's timeless and is a great way to live as a cook.

Who has had the biggest influence on your career? My nan influences my love of authentic Bangladeshi cooking. I have a love for travel and reading, and that has influenced my need to cook from other cultures. I’m experimental by nature, and those curiosities have helped me to be inventive and create new and exciting things. Your cookbook, Nadiya Bakes, is filled with over 100 “Americanized” recipes. What were some of the considerations you needed to account for in this transition of your recipes? I had to think about the ingredients that are readily available here that may not be available in the U.S. and change them accordingly without losing the integrity of the recipe.

Baking appears to be your love language and really comes through when you talk about it. What fuels your inspiration and passion? Baking is something I used to do to help to ease my anxiety. It's still what I do to ease my anxiety. It helps me to focus my mind and concentrate on the ingredients and at the end of it all, I have cake. I am often inspired by what I want to eat and make, but what really provides me inspiration and excitement is new ingredients, things that I have never tried before. Will you be baking anything special for your husband and kids for Valentine’s Day? I like to give my kids little hidden messages of love, like chocolate hearts in their porridge, heart-shaped lunches or red velvet cake. Now that they are older they don't appreciate it as much, but my little girl still loves all of that.


Caramel Crunch Rocky Road 30 minutes + chilling | makes 12 bars unsalted butter, for greasing the pan 14 oz chocolate-covered caramels 5 ¼ oz dark chocolate, chopped (or chips) ¼c unsalted butter 2 tbsp light corn syrup 2 ½ oz crunchy Italian-style breadsticks, lightly broken into small pieces 1c plain or roasted pistachios, roughly chopped a good pinch of sea salt flakes for the white layer 5 ¼ oz white chocolate, chopped (or chips) ¼c unsalted butter 2 tbsp light corn syrup ½c dried cherries and berries ½c dried apricots, chopped Begin by lining with parchment paper and lightly greasing a 7 x 10-inch rectangular cake pan or an 8-inch square cake pan.

We’ve got to know, was competing inside the tent on The Great British Baking Show as stressful as it seemed? And some! It is a stressful situation, because it's baking under pressure in an unfamiliar surrounding with cameras in your face. I found it easy to concentrate if i just thought about the bake and nothing else. Ignorance is bliss. From books to TV shows, traveling, cookbooks and children how do you find balance? I don't work weekends. That means I work really hard all week and then take rest and recoup. Also, I get the kids to unload the dishwasher and do the laundry. Meal planning and cooking during a busy week can be daunting. Do you have a go-to, easy weeknight dinner?

Shepherd's pies for dinner and crumbles for dessert. I also prep veggies in advance and do a lot of double-batch cooking, making one for dinner and the freezer. What drives your positivity, your energy and your zest for life? Sleeping well and eating good, wholesome foods is very important to me. I also make time for being outdoors and enjoying my family.

Line caramels on the bottom of the pan until you have no more spaces. It’s okay to have some gaps; when you put on the next layer, it seeps through to hold it together. Combine dark chocolate, butter and syrup in a microwaveable bowl and heat for 1 minute. Stir until smooth. Let cool for 10 minutes. Add breadsticks to the mixture and stir to combine. Spread evenly on top of caramels. Top chocolate layer with pistachios until covered. Use the back of a spoon to pat the mixture down and sprinkle with sea salt flakes. Refrigerate for 30 minutes to set. For the white layer: Combine white chocolate, butter and syrup in a microwaveable bowl and heat for 1 minute. Stir until smooth. If it looks like it's starting to separate, add a little hot water one spoonful at a time, stirring after each addition until it comes back together and is smooth and glossy. Add the cherries, berries and chopped apricots and mix well. Take the pan out of the fridge and add white layer, making sure to spread evenly, then refrigerate again for at least a few hours. Take out and slice, then refrigerate until ready to eat.

Karla, Burnice Jr. and Cardale Winfrey As children, sibling partners Karla, Burnice Jr. and Cardale Winfrey were raised with hospitality at the center of their upbringing. Their favorite memories from growing up are visions of their mother, Miss Judy, carefully hand-grinding baskets of fresh, colorful late summer vegetables and blending her secret spices. Dreamsicle Pie with meyer lemon cookie crust

30 minutes + overnight | serves 6 crust 1

box Dewey’s Meyer Lemon Cookie Thins ¼c sugar 8 tbsp unsalted butter, melted

filling 4 5 1½c

eggs egg yolks freshly squeezed tangerine juice (from 6–7 tangerines) ¾c granulated sugar 6 tbsp salted butter

Noble Juicy Crunch Tangerines, peeled and segmented 2 tbsp fresh mint, chopped 1c heavy cream 1 tbsp confectioner’s sugar ½ tsp vanilla extract Preheat oven to 350°F. Crust: In a food processor, add 1 ½ sleeves of cookies and sugar; pulse until fine. While running, pour in melted butter and process about 30 seconds more. Place in 9-inch pie plate and press crumbs evenly into bottom and sides. Bake 10 minutes. Filling: In a medium saucepan, add first four ingredients and whisk constantly over medium heat until mixture becomes thick (just enough to coat the back of a spoon, but not as thick as pudding), about 10 minutes. Remove from heat and gradually stir in butter, 1 tbsp at a time. Pour mixture onto crust and return to oven for 10 minutes. Remove from oven and allow to cool completely. Refrigerate for 2 hours or until set. Topping: In a small bowl, combine tangerine segments and fresh mint. Set aside. In a chilled, stainless steel bowl, combine heavy cream, sugar and vanilla. Beat with an electric hand mixer on high speed until the cream begins to thicken and stiff peaks form. To serve, spoon whipped cream over pie and top with fresh tangerine segments and mint.

Follow these simple steps for dinner in 30 minutes. 1

Bake Chicken Preheat oven to 400°F. Line a baking sheet with foil. Place the chicken cutlets on the baking sheet and bake for 20–25 minutes, until cutlets are golden brown and internal temperature reaches 165°F.

Add Asparagus While chicken bakes, place asparagus on another baking sheet and roast in oven with the chicken for 12–15 minutes, or until asparagus are tender. Remove from oven and cover with foil to keep warm until ready to serve.

Warm the Sauce While veggies roast, add the sauce to a medium saucepan and bring to a low simmer to warm through. Once chicken is cooked through, remove from oven and top each chicken cutlet with a spoonful of sauce followed by an even layer of cheese. Reserve remaining sauce.
