farro, cooked according to package directions and cooled cherries, pitted and chopped shallot, finely chopped good quality sherry vinegar extra virgin olive oil, divided kosher salt, divided freshly ground pepper wild salmon fillet fresh lemon juice arugula (or baby kale) roasted salted pistachios, finely chopped

In a medium bowl, stir cherries, shallot, vinegar, 2 tbsp oil, ¼ tsp each salt and pepper together and set aside. This can be made a day ahead, just allow time for it to come to room temperature before serving. Sprinkle salmon with ½ tsp each salt and pepper. In a large nonstick skillet, heat 2 tbsp oil over medium-high. Place salmon, skin-side up, in skillet and cook until deep golden, about 3 minutes. Flip fish and cook until skin is crisp and fish is cooked to desired degree of doneness, about 3 minutes. The internal temperature of the salmon should reach 145°F or higher on an instant-read thermometer. Transfer salmon to a platter. In a large bowl, combine farro, greens, lemon juice, remaining 2 tbsp oil, ½ tsp salt and ¼ tsp pepper and stir to combine. Spoon cherry sauce over salmon and sprinkle with pistachios and serve with farro salad.

These versatile stone fruits make flavorful additions to dinner (try our salmon recipe on page 3!), dessert or even drinks (see below!). They’re also packed with fiber, vitamins and antioxidants. Our cherries are grown in Washington State on land farmed by the same family for six generations. Hot summer days, cool nights, nutrient-rich soil and an abundance of natural water yield fruit that’s juicy, sweet and simply unbeatable.

fresh cherries, pitted and halved oranges, cut into wheels simple syrup brandy or orange juice cherry juice (750 ml) bottle white Albariño wine Chandon Brut Sparkling Wine, chilled

Combine fruit, simple syrup, brandy or orange juice, and cherry juice in a large bowl. Chill for 2–3 hours covered in the refrigerator, stirring a few times. Transfer fruit mixture to a large pitcher and pour white wine over. Refrigerate again until well chilled, at least two more hours, up to 8 hours. When ready to serve, pour the bottle of chilled sparkling wine into the pitcher, stir and serve over ice.

What inspired you to begin work as a culinary historian? After I finished my stint in the Clinton White House, I was browsing the cookbook section of a D.C. bookstore when I saw John Egerton’s Southern Food: At Home, On the Road, In History. Early in that book, Egerton wrote: “But the comprehensive history of black achievement in American cookery still waits to be written.” I was intrigued. Since the book was 14 years old, I emailed Egerton to see if he still believed that. He replied that the work had yet to be done. There’s always room for another voice; why not mine?

The Soul of Barbecue with Adrian Miller

Before launching his career as a culinary historian and James Beard awardwinning food writer, Adrian Miller served as a lawyer, public policy advisor and special assistant to President Bill Clinton with his Initiative for One America—the first free-standing office in the White House to address issues of racial, religious and ethnic reconciliation. Since then, Miller has devoted himself to researching, writing about and bringing attention to African American foodways. His newest book, Black Smoke, explores the oftenoverlooked contributions of Black barbecue chefs. @soulfoodscholar

Why is it important to highlight and uplift Black contributions to American cuisine? If we don’t make an effort to persistently celebrate Black contributions to American cuisine, Black excellence in cooking will go from underappreciated to unappreciated. We’ve already seen it happen—specifically with barbecue and the Creole cooking of New Orleans and with southern food in general. For quite a while, white chefs have gotten the most media love when it comes to those cuisines. How can we change the current narrative about the traditional cuisines in the American South to be more inclusive and acknowledge the tremendous debt owed to African American cooks? Having already written two books, Soul Food and The President’s Kitchen Cabinet, on the impact and influence of Blacks and their contributions to America’s culinary history, what inspired you to write Black Smoke, focused solely on Blacks’ contributions to barbecue? I got tired of the endless parade of media that fell softly, madly and deeply in love with white dudes who barbecue. I watched supposedly definitive hour-long television shows and read voluminous books about barbecue, and most didn’t have any Black people at all. Also, there were several barbecue halls of fame that had weak African American representation. None of this squared with my own experience. I knew how deeply barbecue was a part of Black culture and that if you were going to talk about American barbecue, you had to include African Americans. Black Smoke explains why. I’m so honored to share


the stories of the unheralded people who helped shape one of the most popular foods in the world. How has writing your books allowed you to build relationships with Ed and Ryan Mitchell, as well as other Black pitmasters across the nation? It was so much fun getting to know African American barbecuers and devouring their food as I ate my way across the country, all for the sake of “research.” Knowing how painstakingly hard it is to barbecue the old-school way, I was grateful for their time as I interviewed. I gained a deeper sense of how place and tradition had a symbiotic relationship. After Black Smoke was published, several barbecue people reached out to me to share how much they love the book and that they’re telling others about it. I was tremendously honored when Matt Horn, one of barbecue’s rising stars, asked me to write the foreword to his new cookbook. I get the feeling that African American barbecuers believe that I’ve given voice to their collective desire for respect. As we approach the Juneteenth holiday (celebrated on June 19), what role do you see food playing in those celebrations? Juneteenth has always been viewed as a communal holiday where people from all walks of life solemnly mark the occasion of enslaved African Americans getting the delayed news of freedom, celebrate our collective endurance and resiliency, and reinforce social ties. Red has become a significant color for the holiday because it symbolizes the blood shed by our enslaved African ancestors. Since Juneteenth is a summer holiday, it’s not surprising that “must-have” redcolored foods and drinks include barbecue (made red by slathering in sauce); cherry, fruit punch or strawberry beverages; and watermelon. In recent years, red velvet cake has also been added to the Juneteenth table.

Ed & Ryan Mitchell

Ed Mitchell has been cooking whole-hog barbecue the traditional way since he was a teenager in eastern North Carolina. Today, he’s a renowned pitmaster who’s been featured on Food Network and in The New York Times, Food & Wine, Bon Appétit and other national and international publications. He and his son, Ryan, founded True Made Foods to introduce their line of all-natural, better-for-you condiments. Was working together as a father and son duo always something you both envisioned? If not, how did you begin working together? Ryan: Not in the beginning, no. My father and grandfather had their ideas of building a family business for their offspring, but as a kid growing up, quite honestly, I rebelled against all of it. I had different dreams and wanted to be my own man. Once I graduated from college and began traveling and working in corporate America, I realized how important our family legacy was becoming. The visual of father and son doing business was something our culture really needed, and I couldn’t run from that any longer. What was the driving force behind building a father and son barbecue brand? Ed: Quite honestly, it was family and legacy. Ryan is my only child, so I know it was a lot of pressure on him to keep this going, but I saw something big

about to happen in barbecue and we needed to come together as a family to make it work. We couldn’t afford to let 50 years of work go down the drain. I’m old and technology was not my thing. Having appeared on documentaries, TV shows and in books, what’s next for the Mitchell family brand? Ed: Our story is that we’re bringing barbecue back to its roots. Ryan: We’re also creating awareness in our communities about better food choices, especially on the condiment aisle. After my father was diagnosed with diabetes five years ago, we decided enough was enough and we set out to develop a line of sugar-free, all-natural barbecue sauces, hot sauces, ketchups and mustards. Currently, we have ten products in distribution. We have rubs and spices that will hit shelves early next year. Our cookbook and life story will be published in summer 2023, and our docuseries on North Carolina barbecue is also in the works.
