Educator and entrepreneur, Vera Stewart created the VeryVera culinary brand known nationwide. Motherhood brought Vera out of the classroom and into the home, where her background in Home Economics helped catalyze her success as a caterer. The event that put her business on the map was the inaugural luncheon for Governor Joe Frank Harris in 1983, and in 1984, the VeryVera brand was born. But Stewart still had a passion for teaching, which led her to initiate a sold-out annual summer cooking camp and host The VeryVera Show, where she adds modern twists to favorite dishes of past generations. Stewart’s Southern recipes and collaborations with renowned chefs such as Tyler Florence and Nathalie Dupree, have expanded her reach to an even broader audience. Author of two cookbooks, Stewart’s work extends beyond the kitchen as she mentors young talent.
In a career that spans more than four decades, what are your biggest milestones? After 10 years of catering, I made a career change that led me to study under Martha Stewart. She brought glamour and creativity into home entertaining, turning it into an art form. I followed Martha’s lead and created several small, successful businesses. My next move was to challenge Bobby Flay on “Throwdown” and I beat him with my carrot cake recipe. That launched my TV show, “The VeryVera Show,” now in its 12th season. Building on the show’s growth, I wrote my first cookbook, The VeryVera Cookbook, Recipes from my Table, and my second book launched last Spring, The VeryVera Cookbook, Occasions.
What was your inspiration behind the Parmesan Squash Casserole recipe?
I distinctly remember when my mother started making this casserole. The aroma in the kitchen was amazing and the next thing I knew, I was hooked and it's been on every holiday table my entire married life!
With Mother’s Day next month, how influential were women in your family in shaping your culinary style and traditions?
I am the middle of five children and my dad passed away when I was seven. He was an only child and his mother was quite the hostess, seamstress, fashion icon and doting grandmother. Both of these women had strong will and determination that I adopted. I learned early from my grandmother, who I’m named after, that presentation is everything—even with something as simple as a peanut butter and jelly sandwich. From my mother, I learned that family traditions are sacred, including making traditional dishes during the holidays.
How would you describe your style of Southern cuisine?
My style is "old school with a twist" and I love to put a trending ingredient into something I've been making for years, and especially enjoy that I am attracting an audience of younger people that haven’t tried the wonderful dishes I grew up with.
Do you have any special kitchen hacks, tips or techniques you can share with us?
Yes! My top ones are:
• Measure out all the ingredients in a recipe before you get started.
• Save the butter wrappers for storing small pieces of butter for when you need to grease a pan or add just a tiny bit to a sauce or vegetable.
• Always have cake ingredients at room temperature before you begin.
• Don't substitute ingredients unless you are fine with changing the recipe.
• Put bacon in the pan to fry before you turn it on; it performs better from a cold state.
• Measure out all the ingredients in a recipe before you get started.
• Double the recipe so you have more for later and freeze it.

Are there new trends in Southern cuisine gaining prominence that you’re excited by?
The hamburger has become gourmet. There are exciting add-ons to the burger, like caramelized onions, and the sauces are more interesting than your typical mustard and ketchup. You even get to choose a bun! Really great hamburger meat loaded with flavor is the equivalent of the basic black dress in the culinary world right now.
With so many successes under your belt, what is your next venture?
I want to get started on a children's cookbook, which would be book number three for me. This would also be my passion work; I visualize it as a workbook and a keepsake for children of all ages.
PARMESAN SQUASH CASSEROLE
The delicious vegetarian recipe is perfect for spring with its vibrant yellow color that boasts nutritional benefits like folate, vitamin C and potassium. Make it as a side dish to complement the main course or feature it for a light dinner.

2 lb yellow squash
1 ¼ c Hellmann’s mayonnaise
3 large eggs, beaten
½ tsp kosher salt
½ tsp ground black pepper
¾ c panko bread crumbs
2 c The Fresh Market Parmigiano Reggiano, hand-shredded
¼ c green bell pepper, chopped (optional)
¾ c green onions, chopped
Preheat the oven to 325°F and grease a 7x11-inch baking dish with cooking spray.
Slice yellow squash into 1-inch pieces. Place a steam basket in a Dutch oven over boiling water and steam for about 10 minutes, until the squash is fork tender.
Mix together mayonnaise, eggs, salt, pepper, breadcrumbs and Parmesan. Stir in green peppers and green onions. Add yellow squash last and mix until well incorporated. Pour into prepared pan and place in the oven. Bake for 30 minutes or until the casserole bubbles and the top is lightly browned.
