How to Cook the Perfect Ribeye

Season Properly: Thirty minutes before cooking, pull the steak out of the refrigerator, pat it dry and season liberally on all sides.

Bone-In or Boneless: A bone-in ribeye takes longer to cook than a boneless ribeye. We recommend using a probe thermometer to check doneness.

Cooking Method: Use a castiron pan for stovetop or grill your ribeye. High heat is key.

Reverse Sear for Larger Cuts: Cook at a very low heat until the interior temperature reaches your desired doneness, then finish with a sear.

Temperature: Use a probe thermometer for the most accurate results.

Rare: 125°F

Medium-Rare: 130°F

Medium: 140°F

Medium-Well: 150°F

Well Done: 160°F+

Rest: Let the steak rest for at least 5-10 minutes before serving. This redistributes juices evenly throughout the steak. Exception: Reverse-seared steaks do not need to rest.

WAYS TO GRILL SALMON

Wild salmon season is here and so are some of our top grilling tips, courtesy of our in-house chef Ingrid Chen McCarthy.

Wild King Salmon

Our wild King Salmon has a rich, red flesh that’s firm and vibrant. The high oil content gives it a delicious, distinct flavor. When cooked, King Salmon tastes buttery and retains its moisture. Market Price, subject to availability

Directly on the Grill

Keep the skin on: The skin will protect your fish as it grills while rendering fat to help keep your salmon from sticking to the grill.

Get your grill HOT: High heat will cook your salmon quickly without drying it out. High heat also helps keep the salmon from sticking.

Dry your fish: Before you season or oil your fish, pat your fillets dry with a paper towel to remove any excess moisture. You want to grill your fish, not steam it.

Flip once near the end of cooking: Grill your salmon skin-side down for 6-8 minutes until the skin starts to release from the grill. Then, use a metal spatula to release the salmon from the grill and flip it over gently to finish cooking, 1-2 minutes. Pull when the internal temperature reaches 135°F and it will finish cooking up to 145°F. Let salmon rest a few minutes just as you would any other protein.

On a Plank

Soak your planks: Cedar planks are classic for grilling salmon. Soak them for 1-2 hours before grilling so the wood doesn’t catch fire. You can use water to soak, or get creative and immerse your planks in something fun like wine, hard cider or even sake.

Use medium heat: Plank grilling cooks the salmon lower and slower than direct grilling. This additional time will help impart more cedar plank flavor to your salmon.

Remove the skin: You’ll want to take the skin off for plank-grilled salmon, so the flesh can soak up more of the cedar aroma.

No need to flip: Cook your salmon with the cover on the grill for 16-20 minutes until cooked through.

Grilling Pan or Tray

Skip the mess: Don't want to bother with the risk of your salmon sticking to the grill? Use a non-stick grilling pan or tray. You can place your salmon on the tray and then place the tray directly on the grill to cook.

Skin on or off: You can leave the salmon skin on if you prefer, but with a grill tray you can easily grill your salmon with the skin off over high heat.

Celebrating AAPI HERITAGE MONTH

May is Asian American and Pacific Islander (AAPI) Heritage Month—a great time to add more globally inspired flavors to your weekly menu. The designation was originally created to honor the arrival of the first Japanese immigrants in May 1843, as well as the completion of the transcontinental railroad in 1869 by a large population of Chinese immigrants. Rather than referring to yourself as a chef, you say you’re a Filipina American community leader and organizer. How does that identity reveal itself in your culinary pursuits?

My cultural heritage is at the heart of my culinary style. Elements of storytelling and childhood memories are ingrained in my cooking. When you’re guest in a Filipino home, you will find that we’re all about hospitality. It’s a big part of why we have such a desire to share our food and our traditions beyond our families.

As someone with a deep awareness of Asian cuisine, do you see any ingredients or flavors from the region rising to prominence or trending?

One ingredient that’s taking center stage is Ube. The purple yam from the Philippines is being added to everything from savory selections to sweet treats and desserts.

What is unique about your approach to food?

I’ve always said that my food is based off experiences from my childhood. I’m not trying to recreate your lola’s (grandma’s) or mom’s cooking with the food I serve. Instead, I’m trying to share an experience of my own and, if I’m successful, the taste creates a positive new memory for you.

Another important distinction of the food at my restaurant is that we do our best to change our menus every season, and we’re deliberate in our use of ingredients that are available in the Pacific Northwest.

Chef Melissa Miranda is renowned for her deeply flavored and playful Filipino food, earning the attention of top culinary brass. She was chosen as one of Food & Wines’ Best New Chefs 2022 and has twice been named a James Beard Award semifinalist—most recently for Best Chef Northwest & Pacific 2023. Chef Miranda attended culinary school in Italy and worked in New York kitchens before resettling in Seattle as a sous chef. She opened Musang—a restaurant she calls a “community space”— where dishes that represent the landscape of traditional Filipino American cooking are served with modern twists.

What was the inspiration behind the featured recipe, Roasted Chicken Afritada, and when do you like to serve it?

Chicken Afritada is a traditional Filipino homecooked dish that I grew up eating. It’s a chicken and tomato stew with carrots, potatoes, green peas, red bell peppers and olives that are cooked together until tender and served over rice. I wanted to honor the traditional dish I loved with something new that reflected the time I spent cooking in Italy, so I made Roasted Chicken Afritada. It’s a hearty, comforting adaptation that has all the same ingredients as the original version, but they’re cooked in a different way. It’s the perfect dish to make for friends and family. Because you just need one sheet tray, and the meal is served in a cast iron pan, presentation and cleanup are easy. I love serving it in the fall, winter, and spring.

Where do you draw inspiration when developing sauces and recipes?

I’m a traveler who is inspired by the cuisines and ingredients from around the world. I love to create my own flavors by synthesizing those original flavors into something new. I’m taking a trip to Peru next week, and plan to familiarize myself with Peruvian cuisine.

With May being AAPI Heritage Month, can you share how your Asian heritage influenced your culinary style?

Yes, my Asian heritage influenced a lot of my recipes, especially Korean food that I grew up with. Using those flavors and developing a fusion recipe that people would enjoy, which are new to them yet not too foreign, has been my goal. I believe it works quite well.
