Bitter better How the once-maligned bitter is making waves in the B.C. brewery scene
“B
by Noelle Phillips ut how bitter is it?” is a question often overheard at craft brewery counters.
Even here in B.C., where hopheads and sour enthusiasts abound, no one wants to describe a good beer as just plain bitter. Instead, we often replace it with a euphemism because, as polite Canadians, the word seems just too harsh to say outright. “Bitter,” however, is a longstanding British beer style with an appealing flavour profile, making it an ideal choice for a brewery’s regular lineup — if the name wasn’t an issue. As late British beer writer Michael Jackson once put it, “no marketing man would ever have created a category called ‘bitter.’” The North American response to the word is why most B.C. breweries don’t regularly produce bitters. And, while the word may make us clench our teeth, that’s largely due to the fact many of us don’t know what a bitter is. Understanding bitter better (say that after three beers!) can help you appreciate this style when you do find it here in B.C.

Despite its name, bitter is a remarkably approachable beer. Jackson described it as “a sociable drink, ideally enjoyed in a pub in a plain pint glass.”

While flavours vary by region, most will be a clear amber or copper and have toasty, nutty or caramel notes balanced by a pronounced bitterness produced by adding English hops in the boil only. A traditional bitter should not be pressurized or chilled. Served at cellar temperature and hand-pumped fresh from the cask is what a bitter deserves.

Bitter is an English beer style defined as a cousin of British pale ale. Its three subcategories—Ordinary, Best, and Strong—are distinguished by their increasing alcohol content, but in practice there is some variation in the naming. So, if you see a bitter on tap, be aware that it might hit you harder than you think! The term “bitter” was first used in James Death’s, The Defects of Beer (1889) when he described “pale and bitter ales” as one style. Beer historians note the distinction between an English pale ale and a bitter has always been a bit fuzzy. However, by the 1950s, most pubs in England had a mild and a bitter on tap. Those were usually your two choices. How bitter was the bitter? More bitter than the mild, as Jackson explained. “Each term was defined by the other, like left and right in a political party.”

According to Jackson, Brits’ love for bitter was what fuelled the Campaign for Real Ale (CAMRA), which began in the 1970s and is still flourishing today. One famous bitter of that time was Fuller’s award-winning Extra Special Bitter (ESB). Fuller’s ESB remains one of the most popular bitters on record and they currently hold the trademark on the ESB style name in Britain. However, that trademark doesn’t apply outside the UK. The more innocuous name “ESB” smoothed the introduction of this style of beer to North Americans, who often balk at the name “bitter.” While the Brits embrace it, it’s harder sell to others. But make no mistake—it is indeed selling and, the bitter, (via ESB) has a devoted following in B.C.’s breweries.

While “Bitter” rarely appears on the menu board of a B.C. brewery, you may see “ESB” on offer. And, there’s often a story behind the creation of that ESB—a story connected to the brewery’s sense of identity and place. These versions may not be completely traditional ESBs, but they do often embody a brewery’s story—they become its tradition. Here are some B.C. bitters that have proven their worth: Spinnakers: Mitchell’s ESB/Cask ESB Spinnakers, one of B.C.’s oldest craft breweries, owes much to its British founder John Mitchell. Owner Paul Hadfield recalls an enlightening evening with Mitchell and others in 1982, when he tasted British ale for the first time. Spinnakers’ ESB recipe was conceived that evening. On their opening day in 1984, it was listed on the board as “Saanichton Bitter,” but Hadfield’s brother-in-law would have none of it. He erased it

and wrote, “Mitchell’s Extra Special Bitter” instead. It’s still packaged as “Mitchell’s ESB,” but in the bar it’s simply called “Cask ESB”—served unpressurized from the cask. John Mitchell would approve. Hoyne: Appleton’s Finest British Ale The man who helped Mitchell bring craft beer to B.C. was Frank Appleton, so it’s appropriate he gets his own ESB. However, even though the style is ESB, “British ale” is also included on the label. Driftwood Brewery: Naughty Hildegard ESB Named after a medieval nun famed for her hops, this popular ESB was released in 2010 under a label that spelled out “Extra Special Bitter.” A later rebranding included “ESB” only. Gary Lindsay of Driftwood emphasizes Hildegard is an ESB with a west coast flair. “If we can do a west coast IPA, why can’t we adapt the ESB to the west coast?” The beer’s malty backbone complements a strong dose of Mosaic hops, which give it untraditional, but tasty west coast flavours. Category 12: Pivotal ESB Owner Michael Kuzyk first scaled up his homebrew ESB recipe when a Victoria company wanted a special anniversary beer from Category 12. When the arrangement went sour—and he needed to stand his ground

Russell Brewing: Blood Alley ESB Named after the famous Gastown lane, this ESB combines west coast hops with an English-style grain bill. Russell uses the acronym to avoid the marketing difficulties that come with “bitter” and it worked — Blood Alley has been popular since its release 13 years ago. Five Roads Brewing: Jordy Mac With a rich malt profile and fruity floral hop notes, it’s no wonder this ESB was one of the brewery’s first four beers. It was named in honour of local man Jordan McIldoon, who was tragically killed in the 2017 Las Vegas shooting.

with the client—he ended up rebranding the would-be anniversary beer as Pivotal ESB. The “Pivotal” signals the brewery’s choice to value its own independence and creativity over profit. It is, however, a niche beer, Kuzyk admits wryly. “Our local clientele loves it, but store managers don’t buy it because it’s not a sexy style.” Container Brewing: Panamax ESB When Container Brewing sent their first beers into the world to the 2019 Squamish Beer Fest, one was their Panamax ESB. There was immediate market interest and Panamax was featured on opening day later that year. “Panamax” refers to shipping containers that exists in various sizes, including Post Panamax or Super Panamax, which, much like a bitter, can be special, ordinary or strong. It’s popular in the taproom, so try it in person at Container.
Foamer’s Folly: Lavender Earl Grey ESB The flavour combination of English hops, tea, and lavender make this caramelly and floral ESB a British-style treat! It is one of Foamer’s longest-standing beers for good reason. The Cannery: Regicide of the Star King Fresh Hop ESB A fresh-hop ESB is indeed a combination of old and new and, according to the Cannery, “old world style with new world hops.” As a seasonal release it wasn’t on tap long, but keep an eye out for future offerings. j

Since they first started popping up after finally becoming legal in 2012, tasting rooms have had a distinctly different vibe than bars, pubs and brewpubs. There are families, dogs, board games and, most importantly, conversations. Tasting rooms are the collective living rooms of the communities they represent. Many of this province’s drinking establishments have long been inspired by the UK’s ubiquitous pub culture. But having formerly tended bar in England, I can tell you our B.C. versions are but pale comparisons and are missing many of the key elements that make the pub such a cornerstone of British culture, namely, bar service.

Why does bar service matter, you ask? That’s a brilliant question—and you’re brilliant for asking it. Very good-looking, too. By being forced to order at the bar, we are compelled to get up and move around the room, instead of being chained to our chair or bar stool. This is important. This increases opportunities for social interaction, whether it’s chatting with someone in line at the bar or walking past a table and striking up a conversation with someone you recognize. Of all the social engineering tricks to force people to be more social (like communal tables and not having any TVs), bar service, in my opinion, has the biggest net positive impact on the atmosphere of a drinking establishment. In a table service situation, we’re confined to our seats and really only get up from the table to
pee or leave. Table service creates silos of social alienation—we don’t interact with anyone other than those we arrived with. This is also by design, of course. An archaic hold-out from the post-prohibition beer parlours of yore, table service was mandatory for many years in B.C. as it was believed that keeping patrons pinned to their seats would reduce violence, promiscuity and (gasp) even dancing. Even if you wanted to change tables, you weren’t allowed to take your drink with you—your server was required to move it for you. Thankfully, we live in slightly more enlightened times. Slightly. So why would any craft brewery opt for bar service, then? Surely, there are labour savings in not having to hire servers. While that’s true, more than one brewery owner has told me that switching to table service has increased their sales, as it allows them the ability to upsell the customer. Sadly, the mighty dollar wins out. But let’s not kid ourselves, these are businesses, not public institutions. Unfortunately, Covid has destroyed much of what makes craft brewery tasting rooms so special. Bar service has been replaced with table service to cut down on transmission. Communal seating is right out. And, understandably, parents and kids are opting to stay closer to home these days. At least they haven’t started installing TVs.
The pandemic will end and life will return to normal(-ish) and when it does, I sincerely hope craft breweries return to bar service. Tasting rooms are an important part of the cultural fabric of our community and bar service helps make them unique social spaces. Please don’t let bar service become another Covid casualty. j

elebrating milestones during the pandemic sucks. Typically, a brewery turning 10 or 20 years old might put on a big event, but during COVID, not so much. In 2021, two well-known Victoria breweries reached significant milestones with little fanfare: Phillips Brewing turned 20 in August and Hoyne Brewing celebrated 10 years of operation in December. What follows is part of a great conversation I had with Sean Hoyne and Matt Phillips during a Zoom session in late January (Omicron kept us from meeting up in person). While Phillips Brewing has been around twice as long as Hoyne Brewing, Sean Hoyne got his start brewing at Swans Brewpub in 1989, before moving over to Canoe Brewpub when it opened a few years later, so Hoyne has actually been in the business even longer than Matt Phillips.

Joe Wiebe: Maybe we’ll start off with you, Sean, since you’re the elder statesman here. Sean Hoyne: What a distinguished honour to be the oldest guy in the room! Well, a couple of months prior to COVID, I got dragged kicking and screaming into the present and I decided to finally put a down payment on a whole canning line. Then, along comes the pandemic. I gathered our entire team and said, “We have two goals. First goal: we all stay healthy. And the second goal is we all keep our jobs.” So we set to work doing that. The canning line began to arrive in bits and pieces. We had nobody to put this thing together—the technicians from Italy couldn’t travel—so we just started doing it ourselves. We did a bunch of Zoom calls. It took us a little while, but we finally got our cans up and running. That’s been a game changer for us because draft has been

Joe: Did you do anything to celebrate the anniversary? Sean: Yeah, we did, but it hasn’t come out yet. We call it “10 Good Reasons.” It’s a specialty beer along the lines of a Maibock. We brewed it in the beginning of October and it’s been hanging out in our cellar all this time. It’s a really beautiful beer. It’s complex and it’s been aging for a while. I like it a lot. Joe: Well, Matt, I can imagine how you feel about celebrating your 20th during a pandemic… Matt: [After much swearing] Ten years, which Sean just passed, was my most memorable anniversary. It was a big party—we invited everybody in, we gave ourselves the old still, we were still immature and stupid. I always thought if we ever made it to 20 it would be bigger, better, more silly… So it was really anticlimactic. That part wasn’t a celebration. The one part that was fun was the beer we put out: the Twenty Point Buck. Through lack of planning and luck, 20 months before turning 20, we had dumped our first barrels of whisky, so we filled them with Blue Buck. It just seemed like the right thing to do. And it aged really nicely. It checked all the boxes because it was made from Island barley that we malted, Blue Buck, which is our brand, and pulled the distillery in. Joe: OK, let’s go into the Way Way Back Machine and think back to the early days… Sean: You know, before Frank Appleton passed away we talked about those early days: could we ever have imagined where the industry would have gotten to? And honestly, we couldn’t. In those early days, the number of us microbreweries, as we were called back then, was very sparse so we all supported each other. It was all of us standing up on our soapboxes yelling about how great microbrewed

beer is to anybody who would listen. Could I have imagined where I am right now? Not really—I mean that was 33 years ago! I didn’t think I was going to make it to 40, let alone 50 or 60. Matt: When I look at what it is now, it certainly wasn’t the brewery I set out to make, but it’s better. The bigger you are, the more time you have and the more resources and the more skilled people and the better equipment to make better beer. I used to get that question all the time: how big is too big? And I don’t know, but every time we get bigger it’s better. The beer quality is better. We have more time to experiment with new beers, we can pull in better ingredients, we can get better equipment. I don’t know why we’d put a cap on this. Sean: I agree 100 per cent with that, Matt. The bigger you get, the more you can afford the right stuff. The amount of money we have invested just in our lab alone! But it allows you to do so much. It’s incredible. Joe: Is there something that you would say to your younger self? Sean: When I first started this brewery I had already been brewing for 21 years. We had no

IPAs were kind of crazy beers. Weird to think of it now. But there just wasn’t a big enough market for it at that point. It was only really when I hit the breakpoint… There's a long backstory to it, but I needed to get to the point where my business plan was a complete failure, I needed to rethink it. It was still OK to make these beers that I was really passionate about, but I needed to have a wider scope. That’s the reason we’re still here. If I was still pushing 650s I’d probably be pushing up daisies. Joe: And what are you going to be telling me ten years from now?

money to get started with so we leveraged everything we had. We were all in. So we needed this to work. Failure was absolutely not an option. Especially because when I opened the brewery I’m 50 years old. So, what I would say to my younger self is that it’s going to be tough, but you’re going to be OK. There’s no guarantees, of course. Honestly, it can fail, but if you’ve got the right ingredients— and I don’t mean brewing ingredients—business ingredients and the right people and the right attitude and the desire to do it, then you stand a pretty good chance of actually surviving those first few years. Matt: I started out with a business plan that was doomed to fail and, if I were to tell myself anything, it would be to be open to realizing that it wasn’t working earlier. My original plan was just to do 650s [650-ml bottles], and just boutique, less popular beers—I mean really exotic beers like IPAs, right?! Not so exotic now, but at that point,

Matt: Honestly, if you were to ask me ten years ago, I would never have guessed that the industry would look like it does now. It has changed so much. Back in 2012, 2013, there was such an explosion of new brewers, new interest in beer, regionality. I think the spirit of craft beer has really changed. I don’t think it’s necessarily still about the tangibility that it used to be. Not to say that it’s good, bad or otherwise, just that it’s really changed the lens of what craft beer is. Is it likely that things will change drastically in the next ten years? I’d be shocked if they didn’t. Sean: When I started in 2011, I remember someone put a microphone in front of my face and said, “Do we really need a new brewery?” I was kind of like, well, I hope so because here comes one. At that time I couldn’t have imagined—I mean how many breweries are there now? Joe: When you opened there were about 40 in B.C. and now there are about 225. Sean: That’s just mind boggling. So where is it going to go from here? I think the rate of growth will probably slow down. I think that anyone who’s starting one now will probably at least have a moment’s hesitation, whereas a few years ago there wasn’t even that. Matt: If we go back to when you and I started, every brewery basically had the same purpose, the same identity, the same beers for that matter. And then [in the last decade] you started to see breweries defining themselves based on regionality and locality. I think I’d be surprised if we don’t see segmentation and breweries really starting to line themselves up more on an identity basis as opposed to a regionality basis. I think as we get to a saturation point, marketing is going to become more and more important. j
B.C. brewers
bring home the gold Here are the B.C. gold medal winners at the 2021 Canadian Brewing Awards by Noelle Phillips

n September 2021, the Canadian Brewing Conference and blind tasting competition (sanctioned by the Beer Judge Certification Program) took place in Quebec City, drawing the interest of breweries from across the country. And, our province made us proud. B.C. breweries took home a total of 40 Canadian Brewing Award medals. You can check out all award recipients at CanadianBrewingAwards.com, but we wanted to shout out the 10 gold medal winners—and encourage beer lovers to look for these when they’re on their next beerventure! B.C. breweries performed well in the North American style categories, placing first in four of them. Permanent Resident IPA by Langley’s Five Roads Brewing won gold in the competitive category of North American IPA, with two other B.C. breweries, Powell and Ace, placing third and second, respectively. A classic west coast IPA with citrus and pine notes, Permanent Resident is bitter enough for hops fans, but still approachable. Five Roads was enthusiastic about the award, but not surprised—this is one of their four original beers and they were confident it would be the one to beat in competition.
Deep Cove Lager, a crisp, slightly citrusy beer by Deep Cove Brewing, received gold in the North American Style Premium Lager category, while the gold for North American Style Amber/ Red Ale went to Slackwater Brewing’s Idleback Amber, a favourite in the brewery’s home city of Penticton. Moving into darker beer, East Vancouver Brewing won gold in the Oatmeal Stout category for their Unholy One Nitro Stout —a creamy, sinfully delicious tipple. B.C. showed up for the international categories as well. All three medals for Belgian Style Abbey Ale/Pale Ale went to B.C. breweries—Howe Sound, Dageraad, and Dog Mountain, with

the latter taking home the gold for their BEES! Belgian Blonde Ale with Honey. East Van’s Strange Fellows Brewing received gold in the Belgian Style Wheat Beer category for their ever-popular Jongleur, and Potts Pilsner by Moon Under Water in Victoria was the winner for Kellerbier/Zwickelbier. Finally, the Scotch Ale category was awarded to Brave Liver Scotch Ale from Mt. Begbie Brewing in Revelstoke—not a surprising win, considering Brave Liver has six other beer competition medals to its credit. The final two golds were awarded for Gluten Free Beer (a newer category, but increasingly popular), won by Whistler Brewing’s Forager Pale Ale, and Session Ale, which was awarded to long time Victoria favourite Tiger Shark Pale Ale by Phillips Brewing. j

Back in 2014, it seemed like a quirky twist of fate when two breweries, Yellow Dog Brewing and Moody Ales, opened on the same street in what at the time was considered a sleepy suburb. When Twin Sails Brewing joined the original duo on Murray Street, now affectionately known as “Brewers Row and friends,” folks began to take notice. It began around the year 1000, in the salt-mining town of Goslar, Germany. Harnessing the town’s salty river water, brewers added lactobacillus (the bacteria that sours yogurt) for acidity, wheat for body, next-to-no hops and coriander seeds to spice it up. Nearly extinct, the style was popularized by American craft breweries in the early 2000s. These days goses are often fruited or dry-hopped.

CIDER STYLES Check out your local craft liquor store for an ever-expanding choice of ciders by Matt Cavers
C
onsumers are more knowledgeable about beer styles today than they’ve ever been. Seriously, is there anyone left who thinks “beer” is just one thing? These days, even the most craft-beer-casual drinker can tell a hazy IPA from a pilsner or refreshing fruited sour—and can tell you which one they like best.
But cider? That’s a different story. I’m a cider maker and can tell you first-hand, that when someone talks to me about my beverage of choice, they’ll almost always say they like it—as long as it’s not “too sweet.” Beyond preferring it dry, most people I meet can’t name the style of cider they like best, even if they know they’d choose a porter over a pale ale nine times out of ten. And that makes sense. There’s a simple reason we aren’t as familiar with different styles of cider. Until recently, if you wanted to drink anything other than North American-style modern cider (more on this below), you’d have to find a specialty liquor store and buy an imported bottle. Beer ingredients store well, so brewers have long been able to create recipes using malts and hops from all over and brew beers of every conceivable flavour and colour. But apples have to be used when they’re still fresh, so cider makers have traditionally had to make do with apples they could grow themselves or obtain locally. And, here in B.C., the provincial government gives cider makers strong financial incentives to only use fruit grown within the province. So, while brewers might mix and match malts from Germany and hops from Australia to reimagine regional beer styles from around the world, cider makers depend heavily on apples grown commercially nearby—think grocery-store varieties like Ambrosia and Golden Delicious—or the fruit they grow themselves. But, as more cideries open in B.C., more small, diverse orchards take

root and it’s in these orchards where you’ll find a wealth of apple varieties that bring unique characteristics to cider. These days, cideries are using an ever-expanding range of fruits, herbs, spices and techniques to create flavours that take cider past the constraints imposed by the humble apple.

The United States Association of Cider Makers has come up with a helpful list of style guidelines to help identify the cider in your glass. While there are too many styles and sub-styles to name here, this summary will give you an idea of what’s on offer in the cider section of your local, craft-focused liquor retailer. Happy tasting!
Perry
Modern cider
This is the stuff you’re most likely to be familiar with, because nearly every B.C. cidery makes one. Modern cider is made using table apples rather than cider-specific versions and the flavour profile is usually light, fruit-forward, acidic and low in tannins—those bitter or astringent compounds you find in grape skins and cider apples, among other places. It can be bone dry or fairly sweet, depending on whether the maker has blended fresh juice into the cider after fermentation or halted it with temperature control and pasteurization. It can be packaged hazy or, if it’s filtered, can be crystal clear. It may not be exotic, but don’t be put off—a clean, well-made modern cider can be as elegant as it is refreshing. Try: almost any B.C. cidery’s flagship cider.
Heritage cider
Heritage cider really represents several regional styles under one name. Their common denominator is the use of apple varieties originating from the primary cider-producing regions of Europe, the United Kingdom, France, Spain and Germany. Old World cider apples typically come with higher tannins and complexity than culinary apples, creating flavour profiles, which can evoke wood, earth or leather. Some heritage ciders are made through spontaneous fermentation, during which the cider maker allows the yeast and bacteria found naturally in the fruit to reproduce and ferment the juice, instead of adding lab-cultured wine yeast. This can create

Cider’s lighter, more delicate, often sweeter cousin, perry is made from pears instead of apples. Similar in many regards, pear juice differs from apple juice in that it contains sorbitol, a sweet-tasting sugar alcohol that yeast can’t ferment. As a result, perry usually has a subtle sweetness that complements the pears’ floral character. Modern perry, which encompasses most B.C. perries, is made from culinary pears (such as Bartlett or Bosc), while the much rarer heritage perry is made from specific pear varieties, which typically have significant concentrations of bitter tannins. Fun fact: sorbitol can have a mild laxative effect on some people, making large quantities of perry a bad choice for a date night. Try: Naramata Dry Pear Cider, Dominion Lost Generation Perry, Fraser Valley Perfect Perry.
Specialty cider
This umbrella category includes any apple cider made with the addition of non-apple fruit, botanicals (including hops) or spices, plus barrel-aged ciders and more. Fruit ciders can be made by adding fruit juice to apple cider after fermentation is complete or, for a different result, the fruit can be added at the beginning of the process and co-fermented with the apple juice. Infusing cider with hop flowers yields hopped ciders, which usually showcase the fruity and floral aroma of hops without the bitterness. And, when you age a cider in an oak barrel, it becomes a wood-aged cider, whether it’s a whisky or wine barrel. Often a specialty cider will span multiple categories, reminding us that style guidelines aren’t meant as limits, but only just that—guidelines. Try: Salt Spring Wild Hopped Apricot, Sea Cider Rumrunner, Sunday Cider Rosé. j

Hot Mess sandwich

ordan Braun, chef at Broken Hill in Nelson, B.C., describes the menu at the tap house as “barbecue joint.”
“It’s Texas style and we certainly take our inspiration from there, but we’re not stuck on that,” says Braun. “We do all things southern.” He notes brisket is a best seller at Broken Hill. “People from Texas and the Southern U.S. have said it’s the best they've had outside of their respective states and favorite local spots,” says Braun, who grew up in Langley, B.C. “Ribs are also a fan favourite. Everything is made in-house and smoked over hickory wood.” Braun joined owner Chad Hansen at the tap house in October, 2020—right in the middle of a global pandemic. Prior to that, Hansen had been looking

for the ideal location to build a brewery in Nelson when the former Redfish Grill, which was extensively damaged by fire in 2010, became available in 2015. The heritage building was fully restored and opened as Broken Hill in 2019, specializing in craft beer and whisky. The name of the tap house pays homage to Nelson’s history as a mining town and the Broken Hill mining company, which owned the block at the turn of the century. Braun adds Broken Hill has a whisky library boasting more than 100 varieties to choose from. “We have everything from Scotch to bourbon, ryes, Canadian, American, UK and Indian brands and Japanese whiskies.” But, of course, Broken Hill is even better known for its beer offerings, including 24 taps of craft beer (largely from B.C.) and one Nitro tap (think

stout). The tap house pours all styles of beer, including sours and hazy and several Ontario beers are also available, including Bellwoods Brewery's Jelly King. Braun recommends pairing Broken Hill’s Hot Mess sandwich—made up of sliced smoked Beretta Farms beef brisket, house-made Buffalo Trace Bourbon BBQ sauce, coleslaw, fried onions and pickle on Kootenay Bakery brioche—with a Colour and Shape beer from Superflux. Braun adds the barbecue sauce also goes great with meats like chicken and pork. “Use it to wet mop or finish smoked pork ribs and whole chicken or mix with pulled pork and load up a soft bun with pickles, onions and coleslaw for a classic pulled pork sandwich.” —Sandra Thomas
I N g r ed i ents Makes 2.5 L of BBQ sauce • 40 ml canola oil • 1 yellow onion, minced • 1 oz. garlic, minced • 1.5 tsp crushed black pepper • 1.5 tsp salt • 1.9 L ketchup • 130 ml tomato paste • 200 ml cider vinegar • 200 ml Worcestershire sauce • 425 g brown sugar • 1.5 tsp hot sauce of your choosing • 1 tbsp + 1 tsp mustard powder • 130 ml soy sauce • 1.5 tsp cayenne • 80 ml Buffalo Trace Bourbon (or your favorite bourbon)

2. Add all remaining ingredients. Bring to a boil. Reduce the heat to low and simmer for 20 more minutes. 3. Blend smooth in a blender. Be careful when blending hot liquid! Only fill the blender half way and use a towel to hold the lid on. Start at a low speed and gradually increase.
