A

s the Healthy Planet magazine embarks into our 20th year of service in the St. Louis area, we are so pleased to be your ongoing source for healthy and green resources. For me, there is no better job in the world and I am very fortunate to be doing what I love - publishing! With that in mind, I think it only appropriate that I write a testament to my mother, Mary Ann, in this month of Mother’s Day and our tribute to Women @ Work. My mother played a most important role in my publishing career. She believed in my writing, my creativity and my often odd and unconventional behavior -- even when it meant a trip or two down the rabbit hole. She took me back in and cared for me when I was hurting and lost as a young adult. She nurtured my fragile ego when it was tattered and torn. She never lost faith in me as I grew as an artist even though the growth was often slow and painful. And when it came time for me to poke my head from the rabbit hole, she was there

with a hug and a smile and the encouragement to get back in school and grow to be whatever my heart desired. I am sure she had her moments when she wished I would be a doctor or a corporate millionaire (after all she was a Republican), but in her heart she knew I was a writer, photographer and a publisher. So off I went to work on my college newspaper, graduated and started a community newspaper, and then The Healthy Planet magazine. I was lucky enough to have had the opportunity of strong loving women all around me along the way. Women who believed in me, even during moments of despair and darkness. Sometimes there is no quick fix to rabbit holes. Often it just takes time, and men usually want fast answers and speedy recoveries. We like to keep things moving. Even when we are stuck in the mud. The truth is, my mother was often a lost soul herself, so I think she understood me. She knew there was passion in pain. I suspect most mothers know more about pain than men can ever imagine. Coming from Mars we have our strengths but nothing like the strength it takes for a mother to juggle all of life’s obstacles. To all of you mothers out there, Happy Mother’s Day! You are the nurturers, the providers, the psychologists, the advocates for all of us children who need your love and guidance no matter how old we get. Today I believe in myself, because my mother believed in me years ago when I was just a frightened rabbit. I love and miss you mom! Happy mother’s d ay!

Whole School Sustainability: A Framework for Organizational Change

H

ow can we create sustainable educational institutions? Schools across the country are trying to answer this question. Some are approaching this pursuit by incorporating sustainable practices into their physical environment - composting and recycling, rainwater collection, green cleaning, and lights-out campaigns. Others are integrating sustainability into their educational programs and curriculum. However, truly integrating effective sustainability into a school system requires more than implementing single programs and initiatives. Researchers at Colorado State University’s

ocal food is rising in popularity as people learn to appreciate fresh, seasonal flavors. But how can we expand local food options beyond farmers markets and specialty displays at supermarkets? Food hubs are entities that help local producers get their products to various food purchasing institutions, such as grocery stores, restaurants, and schools. They provide a location for aggregation, processing, distribution, and promotion, expanding opportunities to market. For example, if a grocery store needs 300 pounds of tomatoes, and farmer Joe only has 25 pounds, typically he would be out of luck. But if Joe partners with several other tomato farmers, together they may be able to aggregate their produce and sell to the store. Often food hubs provide distribution, too. Rather than individual farmers each driving to a market with their products, food hubs allow for all of their products to be transported together, saving farmers time and decreasing their environmental footprint. Additionally, food hubs can provide processing, which is particularly important for schools wanting to buy local products. In many schools, cafeteria kitchens do not have the appliances necessary to prepare whole foods. Food hubs can process and prepare fresh local products for schools, such as making applesauce from local apples, helping to support good nutrition for local children. According to the U.S. Department of Agriculture “strong farm to school programs can increase the number of students purchasing school breakfast and lunch, improve consumption of healthier foods at school, and reduce plate waste.” Current aggregation, processing and distribution activities in the St. Louis region include St. Louis University’s commercial kitchen, Fair

Institute for the Built Environment have found that schools successful in this endeavor have one major component in common: they are engaging sustainability from a whole-system perspective. A whole-system approach requires individuals from across an organization to work together to integrate sustainability into a school’s longterm operational and educational practices. Organizational change (accepting a new vision for the organization, establishing new practices and policies, changing responsibilities and roles of members, etc.) is required, and can be challenging. To provide guidance in this endeavor, the Center for Green Schools produced and published The Whole-School Sustainability Framework. This report, authored by researchers at the Institute for the Built Environment, identifies key principles of integrating sustainability into a school organization and is supported by literature and case studies from social science, business, education, and building sciences perspectives. The framework is organized into three components: organizational culture, physical place, and educational program. Framework authors Stephanie Barr, Jennifer Cross, and Brian Dunbar define these as follows: OrgAnizA TiOnAL CuLTurE Organizational culture includes the shared values, social norms, and practices within an organization. Establishing sustainability programs and behaviors in a school requires aligning organizational culture with a vision for sustainability. To successfully integrate sustainability as a core component of organizational culture, it must align with the organization’s established mission, be supported by interdepartmental collaboration, and be communicated effectively. PHySiCAL PLACE A school’s physical place—including the built environment, surrounding natural environment, and the resources that flow through the school— provides both the context for an educational experience and a visible representation of school values. To best harness the power of physical place, it must be engaging and active, be progressively more efficient, and embody systems that enhance human, environmental, and economic health. EduCA TiOnAL PrOgrAm Connecting people, place, and purpose, a school’s educational program brings the vision and mission of a school to life. If the school’s vision for sustainability is aligned with its core education mission, then sustainability will be visible in the educational program through the leadership of staff, place-based connections, and the activities of students. The 6th Annual Sustainability Institute for Educators, taking place June 21-23, 2016, will guide participants through the Whole-School Sustainability Framework and help them to apply the framework to their own organizations. The institute is designed for educators from all roles and environments; K-12 school administrators, curriculum and facilities directors, teachers and student leaders from public, independent, and non-formal learning environments are invited to attend. 6th Annual Sustainable Backyard Tour Set For June 12

by Terry Winkelmann ou may have heard of --or even gone on -- a unique event in St. Louis called The Sustainable Backyard Tour. This year, June 12th will be the sixth year for the tour—a free open-house-style peek into private yards and gardens throughout the city and county. Why is it called a Backyard Tour instead of a Garden Tour? A home’s outdoor space has a great impact on the environment--from the energy consumed in mowing or transporting decorative stones from across the world to the way we manage water and dispose of waste. Many of our hosts are avid gardeners, but there’s much more to consider. A sustainable, or eco-friendly yard, at its most basic causes minimal harm to the environment in its creation and maintenance. Ideally, the Sustainable Backyard uses water wisely; encourages beneficial insects and soil microorganisms; eschews synthetic pesticides, transforms kitchen waste into compost; employs human- or solar-powered equipment to mow and trim; builds with sustainable or recycled materials; minimizes the use of resource-intensive lawns and nonnative plants and demonstrates responsible backyard abundance, organically growing or raising food. By showcaseing healthy examples of chemicalfree, organic landscapes, the tour sets out to encourage and inspire. It’s the “I can do that” tour! Self-nominating, hosts showcase best practices for plant selection, waste reduction, habitat protection, resource conservation and more. You’ll see it all: from lawn alternatives, imaginative uses for recycled materials, natural beekeeping, and growing fruit and vegies, to rainwater har-

vesting, renewable energy production, and of course, chickens! The number of hosts varies each year, but there are always more than 20 from which to choose. Experience levels and approaches vary, too, from those just getting started---where you can learn how to plan a layout or solarize a lawn—to well-established urban paradises. You can read the hosts’ descriptions online beginning in June, then design your own route and set your own pace, choosing addresses closest to you or to your interests. This year’s tour will take place from 11 a.m. to 4 p.m. on Sunday, June 12. Maps will be available at sponsors and select public library branches, as well as at the Green Homes Festival on June 4th at the Missouri Botanical Garden. The tour is free, but by registering to attend you will be entered into a drawing for prizes, including a solar gadget bag donated by local solar installer EFS Energy. A grassroots production, the tour is made possible in part by Slow Food St. Louis, St. Louis Earth Day, St. Louis Jefferson Solid Waste Management District and the Wm. A. Kerr Foundation with additional support from local businesses including Greenscape Gardens, Kitchen House Coffee, Larder & Cupboard and Rainwater Harvesting Supply Co., among others. ven as a child, Michelle “Mike” Ochonicky wanted to be an artist. Stone Hollow Studio began in 1979 when Ochonicky decided to pursue her love of art in a serious way. Although she works in drawing and photography, it is her award-winning scrimshaw that sets her apart as a rather unique artist. For 37 years, Ochonicky has specialized in the American folk art, using recycled antique ivory piano keys to create framed works of art and even bookmarks. Definitely a “green” art! Her scrimshaw has been chosen by museum curators from around the U.S. for Early American Life magazine’s prestigious Directory of Traditional Crafts for the 20th time this year. For five years, Ochonicky was selected to design Missouri’s ornaments for the National Christmas Tree ceremony in Washington, D.C. Her work has been exhibited in the White House Visitor Center, Missouri’s Capitol Rotunda, Missouri Governor’s Mansion, St. Louis Cathedral Basilica and as far away as the Dedalo Museum of Contemporary Art in Italy. rowing food for families provides me with a sense of purpose and a true interconnectedness with food, the common thread which sustains us in every culture across the globe. Witnessing these tiny miracles emerge from the rich dark earth never ceases to amaze me. The cycles of plants are so intricate and strategic. The spring peepers serenade us while we plant our early spring crops. The rivers of birds fly over us, making their great migrations. We witness the fields come to life; they are colorful and vibrant and the rows of vibrant greens resemble patchwork quilts. In the summer, the heat is borderline intolerable, but the tomatoes, peppers, eggplant and potatoes thrive. The insects swarm; the sun is brutal; the sweat pours; our bodies ache from the intensive labor of planting, weeding and harvesting. Just as the romance almost dissipates from organic farming, the gentle winds blow, the leaves turn gorgeous colors and the air becomes cool. Autumn is a beautiful time to be a farmer. The harvest is bountiful; the weather is beautiful; the hard work is rewarded by the overflowing baskets of stunning vegetables, fruits, flowers and herbs. Seeing our children run around barefoot against the backdrop of a curtain of sunflowers is one of the most profound visceral feelings of being a family on a farm. Their laughter seems to make the plants grow. In the winter, we find solace in hibernation. We catch up on unfinished projects, spend good quality family time, and plan and prepare for the season ahead. I thoroughly enjoy teaching and empowering others to grow their own food and medicine through workshops and lectures. One of the big ones, “only crazy people see a therapist”, unfortunately stops many people from seeking the help to make the changes they desire. Well, let me inform you that this is unequivocally untrue. Crazy is a term that people in my profession dislike intensely. And, if you came up through the social work route like I did, then you really dislike that punitive label. Most people who enter my office struggle with the same things that we all do. They struggle in knowing what to do with their life, in how to get a good relationship, in stopping an addiction involving themselves or a loved one, in facing the ending of a long marriage, in understanding how to cope with the loss of a loved one, in learning to set boundaries to take care of themselves, and in setting goals and acting on then. Mostly, we all come to find someone to help us rid ourselves of the negative thoughts and behaviors that are affecting our lives and keeping us stuck. We come to detangle and change many aspects of our lives that are causing us stress, thereby impacting our quality of life. But most importantly removing the stress allows us to feel excited, inspired & joyful about what lies ahead. The “Restoration of Hope” is what many come to seek. In my opinion, hope returns when you feel in charge of your life and in your ability to navigate it towards the direction you desire. We are a nation of overscheduled, over-stimulated and overly stressed out people. Too often we are paddling to keep our heads above water, rather

than swimming with a purpose towards some desired goal. Therapy and Coaching are all about clearing out the clutter of your mind, getting off your own back, forgiving yourself for “whatever”, learning to trust that you are deserving of all good things and getting the help and support to begin to make real changes. Relax. This is something everybody deals with on some level. It’s pretty straight forward. Therapy is your commitment to you. This is your commitment to once and for all to dump these heavy burdens, take a deep breath and then head out on a course to begin navigating the life your heart actually desires. “You Can Have That!”, is a belief I work to instill in all those I see in my office. I know because I have that too. I have a wonderful relationship for the past 10 years filled with all the love, security and support possible. I have a charming, character-ridden Arts & Crafts bungalow type home in the city, I have a terrific flower garden (for which I am very proud) and I now get to dabble in my craft of cooking, ever-surprised at my seemingly restaurant caliber dishes. It’s my painting. Life is finally centered, balanced and moving forward; for which all of these concepts create positive, anti-stress feelings of sweet restfulness. Well, I had to get there too. Fortunately, then, I understand the path to getting there as well. This is a very important qualification in my humble opinion. unctional Medicine provides a new way of thinking about chronic disorders like Irritable Bowel Syndrome (IBS) which can impact 1 in 6 people and is entirely correctable. Typical symptoms of IBS include: • Bloating • Gas • Distention • Constipation • Diarrhea that often comes on after a meal • Cramping • Each person with IBS may have a different cause even though the symptoms are the same. Common causes include: • Microbiome imbalance – “dysbiosis” • Allergens like gluten or dairy • Poor diet • Stress • Toxins The Functional Medicine approach treats each individual and identifies the root cause of symptoms. According to current research there are two main causes of IBS – food allergies and small intestine bacterial overgrowth (SIBO). Food Allergies and Sensitivities: In a landmark paper published in the British medical journal Gut, eliminating foods identified through IgG antibody testing resulted in dramatic improvement in IBS symptoms. The American Journal of Gastroenterology concluded “we must respect and recognize the role of food allergies and inflammation in IBS”. Clearly certain foods irritate your bowel and digestive system and can result in irrita-

ble bowel symptoms. Food sensitivities like gluten are very common and create a lot of aggravation for those who struggle with IBS. Dairy can create symptoms because of lactose intolerance or the proteins, casein or whey, can cause inflammation in the gut. Other likely possibilities include soy, corn, eggs or additives. A food elimination diet can be very helpful to identify the source of symptoms. The lining of the gut is only one cell layer thick and must protect you from invasion of many potential pathogens. It houses about 70 percent of the immune system and is extremely important to keep you healthy. If the lining is damaged it becomes “leaky” and foreign toxins, pathogens and undigested food can pass into the system setting off the immune response creating local and systemic inflammation. Stress, steroids, antibiotics, infections, alcohol and diets low in fiber and high in sugar can all damage the lining. The microbes in the gut have to be in balance for optimal health. If there is overgrowth of bacteria, yeast or parasites, IBS can result. SIBO results when there is overgrowth of bacteria in the small intestinal. Eliminating SIBO reduces IBS. When the microbiome is healthy, you are healthy. Identifying root causes allows for full resolution of IBS symptoms and a return to optimal health. IPT (Insulin Potentiation Therapy) as an Immune Support Therapy:

Scientific Basis of Fudge Factors Needs New Calculation

he 10:1 ratio of bacteria living in the human body to human cells has been promoted like the Gospel. Nobody had questioned this ratio until recently. Calculations of human microbiomes suggest a very different ratio (Science News, Feb 2016 by Tina Hesman Saey). This new research suggests the average person is composed of about 40 trillion bacteria and 30 trillion human cells for a 1.3:1 ratio of bacteria to human cells. In 2014 issue of Microbe, Judah Rosner, a molecular biologist at the National Institute of Diabetes and Digestive and Kidney Disease in Bethesda, MD, called the 10:1 ratio a “fake fact� with too many fudge factors. A breakdown of human cells in the body shows 84% Red Blood cells and 16% for all other human cells. By weight, muscle and fat are the heavy hitters, making up 75% of cell mass. But those cells tend to be big and represent only about 0.2% of the human cell numbers. Fake data and fudge factors in medical science are much more common problems than you may think. Physicians have to rely on their lifetime experiences for their clinical decisions and need an awareness of the hypes and artifacts in medical science. Other researchers point out that the old calculation considered only bacteria, while viruses, fungi, archaea, and other microbes, including parasites, are excluded. Let them argue. I am not interested in this fruitless academic intellectual squabble over fudge factors. This latest debunking of the current belief system about the human microbiome reminds me of what is happening with Insulin Potentiation Therapy (IPT). I wrote an article, Insulin Therapy for Other Than Diabetes, about five years ago describing IPT as a new promising forgotten therapy. Insulin Potentiation Therapy was developed in 1932 by a Mexican military surgeon, Donato Perez Garcia, Sr., M.D. Dr. Garcia was able to cure many medical conditions including asthma, psoriasis, migraines, neurosyphilis, lupus, multiple sclerosis, and even cancers. In 1944, Time magazine covered the story of Dr. Garcia’s therapy and called it Insulin Shock Therapy. Despite the coverage by the main media, his idea was never fully accepted in the United States. For more details of the history, do an internet search for Insulin Potentiation Therapy by Donato Perez Garcia, M.D. or read my article on my website (see below). IPT was brought to the United States by the Canadian-American physician Steven Ayer, M.D. in collaboration with Donato Perez Garcia, M.D., grandson of Donato Perez Garcia, Sr, M.D. There is a small group of American physicians who embrace Dr. Donato Perez Garcia’s IPT, independent of his updated protocol. They are using IPT with low dose chemo therapy (typically using 10% of the standard dose) for cancer treatment. They are promoting IPT as a safer, cheaper alternative to high dose chemo therapy. Although, I have been trained by an American IPT medical group on how to use IPT, I have been refusing to use any chemo agents, even a low dose of chemo agents, for a philosophical reason. I do not treat cancer. I treat the underlying medical problems. I believe cancer is a metabolic disease associated with unrecognized, infectious diseases, as if cancer is a metabolic parasite. Hidden dental infections and unresolved emotional conflicts may play an impor-

tant role for why these patients are not responding to standard or alternative therapies. I’ve written many articles on this subject of cancer and the parasite/dental infection/emotional conflict connection. IPT can be used as an independent Immune Support Therapy without chemo agents. You may add anti-viral, anti-bacterial, anti-fungal, and anti-parasitic medications with IPT to reduce the total body infectious burden and boost one’s immune system. I have seen some dramatic self-healing responses (Accidental Cure) regardless of the symptoms, syndromes, or diagnosis. Recently, I did visit Dr. Donato Perez Garcia, grandson of the original developer, at the Hospital Angeles in Tijuana, Mexico. I went to see him to pay my respect for the three generations of the Garcia family who developed and have been using IPT. They have over one hundred years of combined experiences using IPT. One of the new insights I gained from visiting and learning directly from Dr. Donato Garcia was that he has been using only about 10 % of the standard insulin dose as compared to what I learned five years ago. Smaller insulin doses induce gentler hypoglycemic reactions and milder adrenergic responses with less resistance to chemo therapy and better outcomes. Most American physicians using IPT with low dose chemo are not aware of this valuable information. My experience with IPT, and this new way of calculating insulin dose, reminds me of the story of the human microbiome. The latest microbiome data disputes the old held idea of a 10:1 ratio of bacterial cells to human cells as a true scientific fact. These are two examples of why old scientific “facts� sometimes need new calculations.

he school year is almost over and summer is right around the corner. Many families start thinking of all of the great food gatherings summer has in store — barbeques, picnics, food truck events, family dinners and trips to Ted Drewes — not worrying about getting enough to eat. For the nearly 173,000 local children at risk for hunger in our region, summer can’t go by quickly enough. One in six people in the St. Louis region face difficulties and stress caused by poverty, hunger and food insecurity every day. An alarming percentage of these people are children. Sadly, during the summer months, some children don’t always get enough to eat. With families and caretakers struggling to get by, it will cost an average low-income household an additional $300 per month to feed their children during the summer. Food insecurity can lead to health and behavioral problems. It can cause children to be at risk for childhood obesity, a complex issue often induced by low-cost, low-nutrient, calorie dense foods. Every child deserves an equal chance to thrive and achieve. Operation Food Search (OFS) is helping more kids get the nourishment they need through our sponsorship of free summer meals for children 18 years and under, under the Summer Food Service Program (SFSP), a resource of the USDA. We are helping to lessen the nutritional gap that extends from when school ends until it begins again in the fall by connecting thousands of children to healthy food, while they enjoy fun activities that stimulate their minds during the summer. Last year, OFS sponsored 72,000 lunchtime meals free to kids through innovative partnerships with several St. Louis County Library branches, boys and girls clubs, summer camp programs, low-income housing complexes and a host of our member agency sites. Operation Food Search is fostering well-balanced, nutritious lunchtime meals of colorful fruits and vegetables, lean protein, whole grains, and calcium-rich milk, in safe, comfortable environments. This summer, we are expanding meal opportunities at different times of the day – traditional and non-tra-

ditional meal times – to best meet the needs of the children in our community. Sweetgrass and Sweet Gardens

weet grass (hierochloe odorata) is a native perennial grass that grows in most areas of North America as far north as the artic and as south as Texas. The name, hierochloe odorata, comes from the Greek meaning “holy fragrant grass”. It has the sweetest vanilla scent, fresh or dried, where its long strands are made into braids and baskets. Native Americans use and honor its beauty and function. It is one of the four sacred medicines: tobacco, sage, cedar and sweetgrass. As a smudge it purifies and scents the air. Native Americans view sweet grass as the hair of mother earth. In our quest to be more “sustainable” including planting of native plants like sweetgrass, perhaps we too could view sweetgrass as mother earth’s hair. Sometimes just the doing of the right thing isn’t enough. There must be something deeper in our psyche, hearts and experiences that will save us and our world. We need a new, or very old, perspective of our earth. How can we love our mother earth more? In what ways can we honor both ancient and modern wisdom? What will bring us into closer communication and communion with all beings, animate and inanimate, of this world? This is the very quest of Native American

What can we do to view our gardens as sweet gardens, as part of the body of mother earth? One way is to not see the world as full of objects that we learn about, instead we learn from. In our gardens we see plants and call them “it”. In English we call things we are close to as “he”, “she”. Our family, friends, other humans, pets are “he” and “she”. Robin Kimmerer suggests a word “ki”, which derives from her native language. “Ki” carries the meaning of life force, intimacy, consciousness and animacy. Instead of

saying “it is” use the words “ki is” to acknowledge plants, stones, sky, waters and all parts of a garden. We can walk on the grass at our homes and public spaces and know that we are walking on the hair of mother earth. If we are lucky enough to have sweetgrass (hierochloe odorata) in our gardens or find it in our travels we can smell the sweetest fragrance and see “ki’s” long strands as the hair of mother earth, knowing “ki” loves to be braided and shared with humans. Let your garden be a place of sweetness and love for and from our amazing mother earth, in other words let “ki” be a sweet garden. he benefits of eating with the seasons are profound and can truly make a difference in your health, for the environment, for the lives of small family farmers, for the community and for the greater good. When you support local farmers, you are supporting their livelihood; you are supporting their family, you are offering them a fighting chance. You are reducing the food miles and in turn reducing your own carbon footprint! Local farmers often use environmentally friendly growing methods such as cover cropping, crop rotation, companion planting, composting, soil amendments, and more. When you support a local farmer, you can rest assured that you and your family are eating clean. You are helping to circulate funds back into the local economy. Eating with the seasons is crucial for the future of the planet. The importance of eating local is crucial to the future of food. With the rise in health and environmental concerns due to toxic pesticides, monoculture, and the many miles food travels, we are in dire need of a shift in the way humans hold reverence for food. Spring Time Conditioning for Your Active Dogs

ow! Even ole’ fellas like me feel invigorated with the warm, bright days of Spring. I often jump out in the garage to clean out junk, and begin working on my garden. Yikes, by evening, I can hardly stand up without wrenching in pain. Why am I sharing such personal information. Well, truth be told, the very same issues can impose on the well-being of your pets. They too, are coming out of relative inactivity of the recent winter months, and are excited to get out, run, jump and frolic around the yard and woodlands. They too, can be vulnerable to muscle and joint pain. Of course, breed, age and conformation can certainly play a role. Again, as we manage ourselves, so should we manage our pets. If your dog is older, overweight, or has a history of intermittent or chronic lameness, you need to visit your veterinarian and discuss a best plan to introduce Spring time activities and exercise. Be sure that if needed, your pet is provided appropriate medications to assist in pain management. There are medicines that provide glucosamine and chondroitin sulfate, alone or in combina-

tion. There are anti-inflammatory medicants, or others that attack pain centers more specifically. Don’t play veterinarian, because some of these meds can cause upset tummies, or impact kidney function. Let your doctor determine the best protocol for your pet’s unique needs. The other side of the argument is that covering pain or discomfort too effectively, can also threaten the well-being of your pet. If they feel too comfortable and pain free, they may try to play and move too much, and subsequently, they can hurt themselves. Obviously, whatever the pathology that exists in the body, at the spine, the hips, the limbs or wherever, be sure that these medications typically DO NOT provide 100% resolve. So, masking the symptoms and over activity will likely cause a flare-up. Start exercise slowly with controlled walks and short periods of play. If overweight from winter time inactivity and malaise, then be sure to institute a proper diet program. Gradually work up to more active events over several weeks and you will likely have a healthy pet, able to move, jump, run or swim without issue. If you do see any form of lameness or discomfort in your pet, be sure to stop all activities and get to your veterinarian for an exam- PRONTO!!! Nature’s Pantry of Flavorful Flowers and Luscious Weeds

T

he annual weed war is upon us. All too often, homeowners and gardeners battle against weeds in the landscape that are incredibly vibrant and offer tremendous health benefits. Edible weeds can play an important role in satisfying your body's daily vitamin and mineral requirements. These nutritious weeds can be a great homegrown addition to meals. Each year I watch for new plants arriving at my doorstep and make a special effort to greet them. We moved a year ago so it’s exciting to see which ones followed from our old home and which ones are new…. violets, dandelions, plantain, lemon balm. And purslane for the first time ever. I was so very happy to find the high-in-omega-3-fattyacid purslane growing in the cracks of the sidewalk at our new home. Check your landscape this month for violets, plantain, chickweed, dock, spring beauties, dandelions. In June look for wood sorrel, daisy, clover, rose petals, elder flowers, day lilies, grape leaves, purslane, lamb’s quarters. Our bodies are hungry for the sustenance and utilize every nutrient in wild edibles. Rich in vitamins and minerals, wild native plants tone and purify and are key to a robust immune system. How to eat: raw or cooked, juiced, added to salads, soups, eggs and baked goods. Parts to eat: leaves, flower petals, flower buds, and some roots. Railroad tracks, roadsides and vacant lots are good areas to practice your identification skills but never gather and consume plants from these areas due to high concentration of chemical pollution and pesticide use. Best to learn in the field and go hunt your own yard and garden for wild edibles. Harvest only what you need and leave the plants to recover and reseed for bounty in future seasons. Take a walk with a naturalist or herbalist familiar with wild plants for an in-depth experiential encounter which will awaken your wild palate. Most field guides are based on the color of the flower and the progression of the seasons. I recommend The Audubon Society Field Guide to North American Wildflowers Eastern Division; Missouri Wild Flowers by the MO Conservation Department; Peterson’s Field Guide to Edible Plants by Lee Allen Peterson. And, of course, any of Euell Gibbons books you can find. The Missouri Conservation Department is a significant resource. Wild Edibles of Missouri is out of print but is available on their website as a PDF. Go to mdc.mo.gov click on “Discover Nature”. Choose “Field Guide” from the dropdown menu and select “Edibles” at the bottom of the page. Also check out the link “Wildflowers, Grasses and Other Nonwoody Plants”. The MO Wildflowers book is available at www.mdcnatureshop.com. It’s the first field guide I used and still the first one I go to when I need an answer. Some of the new smart phone apps will identify plants by their leaves and not just flowers. Each have their limitations. I’ve tried Leafsnap, Garden Answers but Like That Garden is the one I use the most. If you are on Facebook, check out the Wild Edibles of Missouri group full of friendly helpful folks. I’ve tried several websites with identification keys and have yet to find one that is easy and accurate. I turn to the internet only if I can’t find the plant with my usual references. I google the flower color, leaf description, and the growth pattern of plant. For example: an unknown-to-me low mass of yellow flowers were growing out our back gate. I googled “yellow flower violet leaf low growing”. Then I looked carefully at all the images until I found a look-alike: lesser celandine. The description and growing location matched perfectly. It may take several different references to hone in on identification. A combination of books and other resources. It’s like following a treasure map. Keep searching until you’ve reached your goal - identifying flavorful flowers and luscious weeds to enjoy the bounty of health and nutrition that Nature’s pantry offers.
