Making and Baking Gluten-Free this Holiday Season

One of my favorite parts of the holiday season is creating crafts and cooking with my kids. It’s a tradition passed down from my grandmother to my mother and now from me to my two little girls. The smell of baking cookies, filling pies, and the joy of being together excites me every year! For families with food allergies, the holidays can have a little less joy and a little more stress.

About 14 years ago, my twin sister found out she had a gluten intolerance. Shortly after this, I was encouraged to go gluten-free to see if it might also help me, as I had dealt with some health issues that we could never figure out.

Over the years, I have developed some little tricks to still celebrate in the same way with my family, without the worry over getting sick.

My grandmother was from a Dutch family, and the “eat them before they are gone” item at every family gathering was her Dutch Butter Cookies.

Through much trial and error, I have learned that a gluten-free baking flour with xanthan gum and a 1-to-1 conversion (one of my favorite brands is Namaste) makes substituting your favorite reci pes incredibly quick and easy. Another place to look is the gluten-free section of your favorite grocery store.

Another trick I have found over the years is to bring my own food (or items) to our family gatherings. If we have sandwiches, I ask they leave out a few slices of the meat and cheese so I can bring bread. I will take my own dinner rolls if we are doing chili or stew (with no flour, barley, or oats in the preparation). One of my favorite things has become creating a gluten-free green bean casserole by using the gluten-free onions and gluten-free cream of mush room soup you can now find at many grocery stores around the holidays!

By being proactive for you and your children (if they have an intolerance or celiac disease), you can help create a lifestyle where you thankfully never feel left out or without the comforts that food brings to the holidays. You can focus on the family fun and the joy of the season! l

Making the Most of

a Quick Disney Trip

When I realized our family’s work and school calendars aligned to allow us to enjoy a quick getaway, I knew I wanted to advantage of going to Florida. I knew we needed to take our kids to Disney while they were all at an age they’d appreciate

As a Disney World novice, I was intimidated to tackle it. Another obstacle was planning the rides when our children ranged from four to 13 years old, each with different tastes in amusement park fun. But I set out on a mission to get to everything at Magic Kingdom in one day, strategically using Genie Plus reservations but not extra lightning lane purchases. For those looking to maximize your Disney experience, here’s how we enjoyed our trip.

First, let me explain the Genie Plus Ride Reservations. You can begin making ride reservations at 7:00 am the day of your park reservation. Do this right away and do not just wait until you get there because you can only make one every two hours, so waiting until 9:00 am means you miss an entire reservation opportunity, and some of the good ones might be gone.

At first, the Disney Genie Service was confusing, but once I figured it out, the nerd in me was excited to figure out how to “game the system” for the most reservations. You don’t get to pick your booking times; you have the op tion of the next available time, but it is a whole hour window, and if you need to change something, they will help you in the ticket office.

The app allows you to book different people in your party on various rides. I should have taken advantage of that by splitting my husband and me up between the kids and get ting separate reservations rather than just not using them on the rides too big for our youngest. But it can be a lot to manage and a lot of moving parts. l

Park opens - rope drop to Seven DwarfsMineTrain (65-minute wait in line but I watched it the rest of the day and thetimes were consistently 140-minute wait so it was a good one to “rope drop”.Check into Haunted Mansion reservation and immediately make next reserva-tion for It’s a Small World at 1:10 pm.Technically we had 10 min left to waitfor our 2-hour window to make a new reservation but since we checked into aride we were able to do it earlier. It helps to get ahead of people who were onthe same 7:00-9:00-11:00 reservation scheduling schedule you were on.15-minute wait to meet Mickey atTown Square Theatre, bathroom andStarbucks break

30-minute wait for MadTea Party

“it’s a small world” via reservation. Immediately book Jungle Cruise for8:20 pm. (This is where reserving a couple rides with earlier reservation slotshelps because I didn’t have to wait until 2:00 pm to book my next ride.)

Lunch at The Plaza Restaurant (reserved when we booked the trip)

Peter Pan’s Flight via reservation. Immediately make next reservation for BigThunder Mountain Railroad for 8:50 pm

Bite the bullet and stand in line for Space Mountain for 75 minutes. I shouldhave just paid the $9 each for the extra lightening pass.

Wait in line 35 minutes for Dumbo the Flying Elephant. It’s also been 2 hourssince the last reservation was made so book 8:30 PM Pirates of the Caribbean.Thisgives you 3 overlapping rides between 8-9 pm but with an hour window for each.

No plans until 8:00 pm fireworks and subsequent ride reservations so get a snack,do souvenir shopping and ride any rides with really low wait times that might befun. We hopped on the Liberty Square Riverboat just to relax and sit down for a bit!

Jungle Cruise, then immediately get on Pirates of the Caribbean and thenJungle Cruise again.

Rice CrispyTurkey Legs

Whip up a batch of rice crispy bars, but instead of spreading the mixture into a pan, shape them into turkey legs! If your mixture is really sticky, it works great to spray a little cooking spray on your hands before shaping. Lay your turkey legs on a piece of wax paper to set. Once they are set up enough to pick up, dip them into melted chocolate. Tip: you can make these with the regular marshmallow recipe or the scotcheroo version with peanut butter works great too!

VeteranCelebrating ’s Day

When Lisa Groon started her service with the South Dakota Army National Guard in 2000, she simply followed in her family’s footsteps. She recalls being a naïve teenager sitting at the dinner table with her recruiter and parents, dozing off as they droned on about retirement benefits.

Little did she know, she would meet her husband, Jason, and together they would have two little boys. She retired this past June after 22 years of service, more optimistic, determined, and openminded than when she joined, and eternally grateful for the experience.

As Veteran’s Day approaches, I wanted to share Lisa’s story and ask her about how to honor veterans – not just on the holiday, but every day.

“Getting support was the most important thing for us, especially after having children,” Lisa shared. Dual military duty, where both Lisa and Jason would leave for drills, demanded an all-handson-deck situation. In addition to childcare, they appreciated support in mowing the lawn or shoveling snow, helping with meals, and other household duties.

When I mentioned, somewhat embarrassed, that I never knew what to do when I saw someone in uniform on the street, she gave me advice. Lisa said, “just thanking them for their service is a great place to start, but you can also open up the

conversation to ask them about their service if it seems appropriate.” She mentioned that many Vietnam veterans didn’t get an opportunity to tell their stories, but they would love to. They wear their hats proudly, and most would happily share their experience. However, Lisa mentioned not to ask combat-type questions. Instead, the memories they like to share about their relationships with their buddies, funny things that happened when they served, the work they did, and the sacrifice of their time.

While Veteran’s Day to many of us looks like flags hanging from our porches, pancake feeds, and parades, there are many other ways to show appreciation for veterans year-round. Next time you encounter a veteran or service member, start with a simple “thank you for your service.” If your neighbor is on active duty, let them know how you can support them while they serve and sacrifice for us. A little support and appreciation can relieve a sometimes heavy burden for these families. Thank you to all our active and retired military men and women. Happy Veteran’s Day. l

The holiday season is around the corner, and “it’s the most wonderful time of the year” unless you have a child with Sensory Processing Disorder (SPD). While some families enjoy snowy mornings, days off from school, holiday parties, sweet treats, and less structure, parents of children with SPD know the holiday season can be a season of chaos, anger, frustration, and dysregulation.

Even the most compliant and focused child can be “off” with the excitement of the holidays, but a child with SPD may seem even more out of sorts.

Children with sensory processing challenges may seem more irritable, reactive, and less patient. Why? Routines are predictable, and the structure helps a child control their environment. An overstimulating, sensory-rich environment can be overwhelming for a child with a sensory processing disorder. An unexpected change in routine requiring your child to adapt quickly can be even more overwhelming, leading to an unexpected meltdown.

A familiar structure and routine will help your child know what sensory stimuli to expect in a particular setting. Keep certain components of your child’s schedule as consistent as possible through the holidays, like a consistent morning/ bedtime routine. Parents should also review the daily schedule with their child and highlight any changes. Creating a visual plan and talking about it that morning or the night before can be a very concrete way to help your child know what to expect. Well-defined expectations allow your child to know when they will have downtime,

breaks, and opportunities to re-regulate, which is key for a child with sensory processing challenges.

When it comes to public spaces, from long grocery lines to crowded malls, it can be overwhelming. If your child has sensory processing challenges, they might become overstimulated by the sights, sounds, smells, and movements. Large groups of people, loud noises, and unexpected touch can put an already oversensitive nervous system into overdrive and cause a fight or flight response, which can look like an outburst or tantrum. This reaction can easily be misconstrued as misbehavior, not listening, or poor parenting, as opposed to a reaction to sensory stimuli and overload.

If you expect to visit an overstimulating environment this holiday season, try to choose a time that is not as busy. Talk to your OT about tools that may be effective for your child to use in these environments. These can include calming music through headphones, a thick hat pulled over the ears, sunglasses, a visor or baseball cap, fidget toys, sequin slap bracelets, or sugar-free gum. Remember that not all tools work for all children, so check with your child’s OT to see which strategies will be the best option for your child. l

Food Allergies

Increasingly Common in Children

Food allergies in children continue to increase, with nearly five percent of children under five years old having a food allergy.

These allergies are the body’s negative immune reaction to food, generally occurring after eating a particular item the second time. Though similar symptoms may develop, food allergies are different than food intolerance. A true food allergy occurs when the immune system produces Immunoglobulin E antibodies to react with the food, releasing histamines into the bloodstream and causing allergic symptoms. Food intolerance generally results in less severe symptoms, often digestive.

Milk, eggs, wheat, soy, tree nuts, peanuts, fish, or shellfish are the cause of almost all food allergies. Children’s most common causes of food allergy are eggs, milk, and peanuts. Though each child experiences symptoms differently, shellfish, tree nuts, and peanuts are known to cause the most severe reactions. These reactions can appear minutes to an hour after consuming the food and can include vomiting, diarrhea, and cramps. Other

symptoms include difficulty breathing and lowered blood pressure. Skin can also be affected, from hives to itching, swelling, or tightness of the lips, tongue, mouth, or throat.

Allergies to milk and soy are often seen in infants and young children and can look like other health conditions. Symptoms from these food allergies include blood in the stool, colic or fussy behavior, and poor growth.

There is no proven medication to prevent food allergies in children. Health care providers perform a variety of tests along with a physical exam and health history to determine foods causing symptoms of allergy. Once identified, it is crucial to avoid those food items. Your health care provider may prescribe an emergency kit containing epinephrine if the allergy is severe. Many children often outgrow food allergies — though peanut, tree nut, and shellfish allergies can last a lifetime.

A DOG FRIENDLY Thanksgiving

Celebrating the holidays with family sometimes even including your four-legged friends. Your furry companion will love a taste of Thanksgiving, but you remember to only share foods that are safe for dogs. According to the American Kennel Club

1. Sweet potatoes are a great source of dietary fiber, vitamin B6, vita min C, and beta-carotene. Just remem ber not to give your pet sweet potatoes containing any added ingredients.

2. Potatoes. You get to enjoy both kinds of potatoes, and your dog can have that option, too. However, give only boiled or baked potatoes with no butter, sour cream, salt, or pepper, and serve in moderation.

3. Turkey meat (no bones, no skin). The main dish is okay to offer up in moderation but always avoid bones and the skin as the outer layer of the poultry is likely to have been prepared with but ter, spices, or other fatty ingredients that could cause issues for your dog.

4. Pumpkin itself is a very healthy snack and helps with digestive health and it’s great for a dog’s skin and coat. If feeding canned pumpkin, make sure it’s just plain pumpkin and not the pre-spiced pie mix.

• Approximately 1 lb of leftover shredded turkey

• 1 (15oz) can low-sodium cannellini beans, drained and rinsed

• 1 tbsp olive oil

• 1/2 large onion, diced (about 1 c)

• 2 carrots, diced (about 1/2 c)

• 2 stalks celery, diced, (about 1/2 c)

• 1 small zucchini, diced (about 1 1/2 c)

• 1 clove garlic, minced

• 1 tbsp chopped fresh thyme leaves (or 1 tsp dried)

• 2 tsp chopped fresh sage leaves (or 1/2 tsp dried)

• 1/2 tsp salt

• 1/4 tsp freshly ground black pepper

• 32oz low-sodium chicken broth or vegetable broth

• 1 (14.5oz) can no-salt added diced tomatoes

• 2 c chopped baby spinach leaves

• 1/3 c freshly grated Parmesan, optional

INGREDIENTS Looking for a new spin on those turkey leftovers? Give this soup a try!

DIRECTIONS

Heat the oil in a large soup pot over medium-high heat. Add the onion, carrots, celery, zucchini, garlic, thyme, sage, 1/2 teaspoon of salt and 1/4 teaspoon of pepper, and cook stirring occasionally until the vegetables are tender, about 5 minutes.

Add the broth and tomatoes with the juice and bring to a boil. Add the shredded turkey, beans and the spinach leaves and cook until the spinach is wilted, about 3 minutes more.

Serve topped with parmesan, if desired.
