hether it’s a quick bite, shared appetizers or a celebratory meal,

the Coeur d’Alene Casino has something for everyone, and at nearly any time. Start your morning at Jackpot Java & Creamery and for a casual-yet-tasty snack, Huckleberry Deli has hearty breakfasts, sandwiches, burgers, even pizza, which is one of many items available until 3 am. For sit-down dining, try Red Tail Bar & Grill for breakfast, lunch or dinner, including late night. The menu is a mix of Tex-Mex and burgers served in a casual atmosphere, with daily happy hour 3-6 pm. On weekends, look for the all-youcare-to-eat Frank’s Omelet bar.

Another new development is the

revamping of Chinook Crafted by Chef Adam Hegsted, as the former Chinook steakhouse is now called. Chinook blends new flavors with old favorites, like the ultra-popular nitrogen ice cream tableside experience and bone-in ribeye cooked over a mesquite grill.

New items include crispy, wild shrimp

with a garlic-pepper glaze and the rainbow-colored cauliflower appetizer, deep-fried and dressed in a honey butter sauce.

Don’t forget about Twisted Earth Grill,

serving breakfast through dinner inside or on the outdoor deck of the golf pro shop. “We are excited to have our golfers back,” says Spahn, who notes you don’t have to be a golfer to enjoy the great food and beautiful scenery at Twisted Earth.

MEET GREAT FOOD L

ow-key. Family-gathering. Island style. That’s what restaurant founder and

local entrepreneur Matt Goodwin had in mind for his latest venture: Hang 10 Hawaiian BBQ. Like many places that opened last year, Hang 10 did a quick pivot to offer takeout only, which may be one reason their catering business is riding a big wave. “I think as far as catering goes, our price per head is pretty reasonable compared to the competition and people are pretty excited to get something different,” says Goodwin. Their proximity to downtown — tucked into a pocket of businesses behind Sacred Heart — makes them the only Hawaiian food place on the South Hill. Now offering catering, takeout and dine-in, the Hang 10 menu covers all the classics: Kalua pork, assorted rice and

noodle bowls and, of course, SPAM served several ways. Try loco moco, a beef patty over rice topped with a rich brown gravy, fried egg and green onions. Or the steak tacos. And don’t forget the side salads like peas and water chestnuts or creamy macaroni. Their top sellers include teriyaki chicken and the crispy katsu chicken, says Goodwin, who brought back the inspiration for Hang 10 from many a family trip to our nation’s Aloha State. Family is important, says Goodwin, as is community, which is why they partnered with Path of Hope dog rescue to raise funds and awareness earlier this year. The plan, says Goodwin, is to collaborate with one local organization per month. That’s a vibe everyone can get into.

Either way, look for specials featuring local, seasonal ingredients, says Broesder. “Offering nightly specials makes it fun to see what our guests are interested in and if we should add it to our menus.” Take the in house dry-aged beef, for example, which is another new dining option only available at Masselow’s. What you get in the grocery store, explains Broesder, is wet-aged beef, but dry-aged is curated in a specialized humidity and temperature controlled environment giving the meat a more intense — some say beefier — taste. The longer the steak “ages,” the more concentrated and nuanced the flavor becomes, says Broesder, who knows that some guests are going to be over-the-moon for Masselow’s minimum 30-day dry-aged beef.

ood industry challenges: staffing, maintaining quality, sourcing ingredients, staying relevant in a competitive market. A worldwide pandemic and statewide shutdowns? Not on the radar. But over the past year many of our region’s local institutions proved why they’ve endured 10, 20, 30 years and longer through all manner of challenges, COVID included. For THE SWINGING DOORS, it wasn’t so much a “pivot” as spinning, says Lisa Emery, daughter of owners Bob and Barb Materne. The 40-year-old family-run restaurant went to great lengths to keep family and guests safe: installing ultraviolet units in their HVAC, adding glass dividers, and upping their to-go process, including family-style meals during the holidays. “The rules and regulations changed so many times and with such little notice that it made us dizzy at times, but thank goodness we have a great staff and generous customers that have kept us going,” says Emery. A venerable institution dating to 1974, CLINKERDAGGER also added meals-to-go, so you won’t have to miss out on favorites like their fabulous artichoke-and-crab dip. In addition to offering takeout and curbside pickup, EUROPA RESTAURANT & BAKERY is encouraging

reservations for dine-in service (at reduced seating capacity). Not knowing what changes might be coming has been challenging, says Asa Engels, owner of the nearly 40-year-old downtown restaurant. Yet, she says, it seems like everyone is turning the corner. The rules are different in Idaho, where the state not only had looser restrictions for gathering, they didn’t have a statewide mask mandate. Still, BEVERLY’S in Coeur d’Alene dialed back service out of an abundance of caution, and still hasn’t resumed lunch at the Coeur d’Alene Resort’s flagship fine-dining locale. Look for increased events from the resort, which celebrates 30 years this year, from specialty brunches to a lakeside clambake in May. Taking home the prize for one of the oldest local institutions is 56-year-old DICK’S HAMBURGERS. With only minor adjustments to outdoor picnic seating, Dick’s saw a brisk business for their counter-service-only joint. And as many a Yelp and Local Guide reviewer noted, there was something reassuring about how little the place has changed over the years, especially in a year marked by changes none of us ever want to revisit. n

O

pening a brand new restaurant during a global pandemic — an event that’s required ever-changing regulations on dining out, and spurred the permanent closure of eateries across the country — might seem like the opposite of a good idea. Yet the Inland Northwest saw several new restaurants open their doors for the first time in the last year, giving local foodies something to get excited about and look forward to sampling in person as the health crisis eases. One of the most notable recent newcomers to the region’s dining scene this past year has been Wooden

City Spokane, the second Pacific Northwest location for an eatery that first launched in Tacoma. The casual new American eatery opened last August in a historic downtown Spokane building. In some ways, there was no turning back for its trio of owners, Jon Green, Abe Fox and Eddie Gulberg, who’d signed their lease and hired an architect long before COVID-19 upended life. “We figured, let’s open, we’ll have less tables but can focus more on the experience and making sure every guest that comes in has an amazing first impression,” Green says. “I think it’s also a lot harder to change a


restaurant that is already open than to open a new one.” While the months since have doled out plenty of ups and downs to all restaurants, Wooden City included, its opening during last summer’s 50-percent indoor dining cap came with another unexpected positive. “Had we opened at full capacity in the space it might have actually been too crazy right out of the gate,” says Green, Wooden City co-owner and chef. “It almost had this built-in soft opening effect for us. The last thing you want to do is open and be slammed and have bad first impressions.”

A

nother newly opened restaurant in the last year is Pint House Burgers & Brews in Spokane’s Indian Trail neighborhood, which debuted late fall 2020. Owner Josh Blair says during Pint House’s first few weeks of operations, just before the second dine-in shutdown was issued in November, the restaurant reached capacity nearly every night. Customers continued to show their support after the pub had to switch back to takeout only, so much so that Blair had to install a second phone line to handle all the calls to place orders.

“The community has been so supportive of us,” Blair says. “This is such an underserviced area for familyowned restaurants and local restaurants, so the support has been great.” The pandemic’s slow-down also proved to be an opportune time for rebranding, as seen at Adam Hegsted’s Kendall Yards eatery Baba, the new Mediterranean-inspired comfort food spot that replaced Wandering Table this spring. “Wandering Table was put into a fine dining demographic, and that did not transition well into COVID times,” Hegsted says. “We wanted something that would travel well, and was also a place people could eat every day; that was how the idea came about.” There are also still several new restaurant projects set to debut later this year, including Seattle chef and restaurateur Ethan Stowell’s Tavolàta. Also expected in the coming months is People’s Waffle and Emma Rue’s, a connected cafe and bar in the old Observatory spot. n

hen Chandler Baird moved to Spokane in 2014, she often wished she knew someone to offer advice on where to find the best restaurants, shopping and services. Though her husband is from the area, Spokane at the time was vastly unfamiliar to Baird, a Texas native. She remembers spending her lunch breaks 66

exploring downtown, quickly discovering the charm and uniqueness of her new home. Now, seven years later, Baird is known as that go-to person she once hoped could guide her to the best local spots in the Inland Northwest as the face of Spokane Eats, a blog and social media brand. She regularly compiles “best of” and “where-to-find” food lists for


holidays, different cuisines, specific dishes and more. Recent posts include roundups on the best locally made chicken sandwiches and how to support women-owned restaurants. “I quickly fell in love with Spokane and realized it was a fantastic place to live,” Baird recalls. “That led me to wanting to share that with others. I wanted to be an advocate to the city that I wished I had when I moved here — a best friend you could go to and ask, ‘Where should I go to for this?’” Baird started out in 2015 writing blog posts about local restaurants that wowed her, a facet of Spokane Eats that continues to make up about half of its content. While the project began as a labor of love, Spokane Eats quickly grew to the point that Baird was able to transition in 2018 from a corporate job to running her

brand full time. That includes taking on paid clients for social media marketing as well as sponsored posts. “When I jumped in and started doing it full time, I was branching out to a lot more than food,” she says. “I do a lot of lifestyle content as well. My goal is to be that source to help people find all the wonderful things in Spokane.” Baird has also recently added the title of TV show host to her resume, working with chef Adam Hegsted on his Eat Like a Chef series (Saturdays, 9 pm, on Fox 28) that showcases local chefs sharing how to make favorite recipes inside restaurant kitchens across the region. “It’s been a great new, challenging and fun project to work on,” Baird says. “It’s fun to go back to the kitchens with these chefs and see how they run things and learn their tips and tricks and share these awesome recipes.” n
